Teachers can make a world of difference. For me, that was Dr. Gerald Grow. When I was in graduate school, he was my magazine journalism professor. After I graduated with my master’s, Dr. Grow arranged a meeting for me to meet with the executive editor of People magazine. That in-person get-together at our school’s job fair landed me an internship at People’s New York City headquarters followed by a full-time job offer less than three months later. One teacher believing in me played a major role in what I call a career of a lifetime!

How Fresh ‘N Fit Cuisine Delivers Delicious By Jennifer Colosimo Photography by Brian Reeves

he likelihood you’ve tried a meal delivery service is strong. Whether premade or cook-your-own, taking the prep work out of meal planning is the latest craze in making life more efficient. While the guarantees sound the same across the board, not all meal services are created equal. And with the options growing exponentially, how do you find the good apple?
Here’s a hint: Fresh ‘N Fit Cuisine was the first—Atlanta’s original, in fact—meal prep service. The company has been around for 15 years with a team who has spent those years honing in on exactly what consumers want, and need. Inside a vast commercial kitchen that’s manned by an executive chef with a full culinary support staff (including a pastry chef, production chef, and a garde-manger chef with background experience ranging from catering companies to high-end restaurants), they develop more than 300 meals each season for consumers to indulge in.

Each meal lives on one of seven macro-based menus that complement specific dietary needs—such as Keto, Low Carb, Paleo, Vegetarian, Gluten Free and more. They even have healthy snacks, low-calorie desserts and housemade protein bars. Every recipe is targeted around macronutrients so no matter what you’re craving, what your fitness goals look like or what medical restrictions your diet requires, you’re chowing down on clean, well-balanced, and perfectly portioned meals every single time. You won’t find that type of variety from the fly-by-night companies that seem to be popping up every week. In fact, Fresh ‘N Fit Cuisine has set the precedent for a level of food quality and integrity that

is unmatched in today’s industry. All of the food is prepared fresh and never frozen each week using locally sourced ingredients that are free from GMOs, antibiotics, preservatives or artificial sweeteners.

“People take eating clean and healthy food for granted,” says Elston Collins, president of Fresh ‘N Fit Cuisine. “We’re licensed and regularly inspected by the Georgia Department of Agriculture, so we are required to meet much more stringent food prep, handling and cooking requirements than your average restaurant. That’s something that you might not find with some of the smaller, less regulated companies. We’re transparent about what’s in our product and use our own refrigerated trucks and trained drivers to deliver it.” Customers can order online and pick up at more than 100 locations around Atlanta, have their meals delivered to their home and office or shipped overnight via FedEx.

Holly Hollingsworth FARMER • MARKET MASTERMIND • EDUCATOR By Annie Paschal
At 17, Holly Hollingsworth planted her first sunflower seed. Having grown up in a family that gardened regularly, you would think that made her a shoo-in to be a good farmer. However, Holly missed the memo on the importance of watering plants, so the seed never grew. She thought it might be time to learn a little more about the true art of gardening. Her pursuit of this knowledge took her from New York to Oregon getting her hands dirty learning the ins and outs of farming.

FALL 2018
After residing in Cabbagetown for the past 15 years, the fortysomething woman felt that something was missing. She reminisced about her days as a farmer, which made her call on other agriculturalists from Woodland Gardens Organic Farm, Riverview Farms, and Moore Farms. Together, they joined forces and set their sights on The Carter Center parking lot to start the Freedom Farmers Market. Now, every Saturday morning, as market manager, Holly pulls up to the lot towing her giant trailer. Inside? Essentials needed to facilitate the market. Freedom Farmers Market sets itself apart by maintaining its mission to help farmers make money by simply selling their crops without having to turn them into specialty products. Farmers are not obligated to turn strawberries into a sweet-selling jam. “We don’t have a lot of prepared food. So instead of filling the market with other items, we try to keep it focused on fresh ingredients and produce,” Holly says. After five years, the market has more than 25 vendors and almost all of them know Holly by name. Patrons strolling the aisles can ogle cooking demos that feature seasonal fruits and vegetables. Neighborhood shoppers aren’t the only ones that browse the nutritional offerings. Local chefs like Nick Melvin of Fox Bros. Bar-B-Q enjoys using the pork from Riverview Farms in the breakfast sausage patties at the restaurant’s Que-osk near SweetWater Brewing Company on Ottley Drive. Any items that don’t make it into the bags of shoppers are generously donated to Second Helpings Atlanta to provide healthy food options to those in need. At the Oct. 20 market, don’t miss the 9am pop-up demonstration by executive chef Andrew Peterson of La Tavola Trattoria on how to utilize winter squash. And when it comes to her own plate, you can find Holly at Wrecking Bar Brewpub and BoccaLupo with her hubby, Joey. The two also enjoy walks in Cabbagetown Park. FreedomFarmersMkt.org

Allan C. Vella TH EAT E R VISIONARY • HIS TO RY P RE S E RV E R • FATHE R By Alex McCray
Walking into the new Marquee Club Presented by Lexus at the Fox Theatre is everything you’d expect it to be and more. Amid the club’s 10,000 square feet are five bars, three rooftop sections, and multilevel main spaces to enjoy before, during, and after the show. The Moroccan and Middle Eastern influences of the theater seamlessly flow into the décor, from gold quatrefoil “walls” and plush jewel-toned couches to rich patterns. Each detail was carefully crafted to evoke the Rooftop theater’s grand sense of occasion, which is exactly what Fox Theatre, Inc. president and CEO, Allan C. Vella, envisioned for the space. Under his helm, the $10 million expansion has breathed new life into the iconic entertainment venue, which has not undergone a renovation this large since opening in 1929. “We’re always trying to create bigger and better memorable experiences for all of our guests,” Allan says.
[
Don’t miss a beat when faced with an unexpected phone call or fussy children. Flat-screen TVs broadcasting in the Marquee Club allow you to see every minute of the show even when you leave your seat. Accessible via an annual membership or single-event pass, visitors of the illustrious club can also sample a selection of premium hors d’oeuvres and cocktails crafted with spirits from local distilleries. The CEO’s favorite section of the new hot spot? “I love the rooftop,” Allan says. When going through old photos, his team discovered that there was once a terrace on the roof. “I love the fact that we revisited the original terrace. I think that makes it special.”
Main Level
Since 2006, Allan has been responsible for the 4,665-seat theater’s overall strategic planning and execution, programming, and interaction with the community and its board of directors. His 30-plus-year career has taken him around the country and awarded him the opportunity to work with prestigious brands such as SMG, the world’s largest facility management company. Today, he couldn’t be happier to call Atlanta and the Fox Theatre home. Outside the famed venue, the Decatur resident can be spotted with his wife and three children at South City Kitchen. “We’re big fans of the Atlanta Botanical Garden and we love going there during the holiday time for its light show,” he says. What's The Difference between Montessori & Traditional Education? Montessori emphasizes learning through all five senses, not just through listening, watching or reading. Children in Montessori classes learn at their own individual pace and according to their own choice of activities from hundreds of possibilities. Learning is an exciting process of discovery, leading to concentration, motivation, self-discipline and a love of learning. Montessori classes place children in three-year age groups (3-6, 6-9, 9-12 and so on), forming communities in which the older children spontaneously share their knowledge with the younger ones. I celebrate and despair about their triumphs and gaffes.” He laughs, “When I tell folks what grade I teach, their responses range from ‘bless your heart’ to ‘you must be insane!’” He says that, having worked as an engineer for 25 years, he can easily address his students’ perennial question about the subject of math: “What am I going to use this for?”

Mario Herrera
Mario Herrera doesn’t just want his students to succeed in debate competitions—he challenges them to remember that debates are about real people who face difficult issues. He gives an example: “I gave students the national debate topic suggesting that organ donations should be compulsory. Then I asked two colleagues to speak to the class. One was waiting for a kidney transplant and didn’t know if he would ever receive one. Another lost his wife, who wanted her organs donated, but her parents objected to the donation. He had to fight his in-laws to assure his wife’s wishes were granted, which they were.
