Healthy Cooking with Lindsay Rasure

I love all the vibrant colors that Christmas brings! I do not love all the artificial food colorings that are added during this time. Did you know they make dye free sprinkles? The brand Supernatural makes fun dye free sprinkles using quality clean ingredients. I bought the blend “Ugly Xmas Sweater” sprinkles for this bake! They use turmeric, spirulina, paprika, and vegetable juice to get the vibrant colors. Wouldn’t you rather consume that than Red 40, Blue 2, or Yellow 6? Enjoy making this super easy dessert for your Christmas celebration!

PEANUT BUTTER FUDGE CRUNCH BARS

12 BARS

INGREDIENTS:

• 3 c. Rice Chex cereal (It is difficult to find an organic version of this cereal) • 1 ½ c. any chocolate chips • 1 c. organic peanut butter (just peanuts & salt) • ¼ c. refined coconut oil • Optional: Dye free sprinkles (Supernatural is a great brand)

DIRECTIONS:

1. Line an 8x8 pan with parchment paper and set aside. 2. Add the cereal to a large mixing bowl and set aside. 3. In a medium size sauce pan combine chocolate chips, peanut butter, and coconut oil. Heat up mixture until it has melted. Whisk to make sure everything is combined. 4. Pour mixture over the cereal in the mixing bowl.

Gently stir to coat the cereal. 5. Pour the mixture into the 8x8 pan.

Decorate the top with sprinkles. 6. Refrigerate for 2-3 hours or until firm.

Cut into 12 bars and enjoy!
