This egg bake recipe is a great option to prep on the weekend and reheat throughout the week for a well-balanced breakfast. I love that you can personalize this simple recipe for a variety of flavor options. Not a fan of pork kielbasa, then try beef, chicken, or turkey. I have also made this recipe by pre-cooking my favorite breakfast style sausage. If you do not like broccoli, substitute with any vegetable(s) that you love! The possibilities are endless.

HEARTY EGG BAKE

INGREDIENTS:

• 18 large eggs (Vital Farms or Happy Egg for delicious pasture raised eggs) • 1 Pederson’s Farms Kielbasa sausage sliced • 1 c. chopped jar roasted red peppers • 1-2 c. chopped broccoli • Frank’s red hot sauce • Salt & pepper to taste

DIRECTIONS:

1. Preheat oven to 400 degrees F. Line a 9x13 pan with parchment paper. 2. Slice the kielbasa sausage link into ½ in. slices 3. Chop the broccoli and roasted red peppers into bite size pieces. 4. Crack 18 eggs into a pourable bowl. Add a couple dashes of hot sauce and salt and pepper into the eggs. Whisk everything together. 5. Pour the eggs into the lined 9x13 pan first. 6. Add in the kielbasa sausage, broccoli, and roasted red peppers. 7. Place into the oven and cook for 35-40 minutes or until the center does not jiggle.
