In fact, you may be a follower already. Born and bred right here in Austin, the term “flexitarian” was first used in an AustinAmerican Statesman article in 1992. The writer was reviewing the flexible fare offered at Acorn Café and learned of the word from the café’s owner who described their food as “flexitarian.” The exact definition is still debatable, perhaps due to the nature

ANOTHER YEAR…CAN YOU BELIEVE IT? It’s hard to imagine that in only three more years Stanley Kubrick’s screenplay of Arthur C. Clark’s stunning sci-fi thriller, “2010: A Space Odyssey,” will be history. Or that George Orwell’s 1949 classic “1984” depicts a utopia gone bad in a time almost a quarter century ago. Time certainly moves on relentlessly. And while none of us can stop the clock, we do have a lot of control about how we use it. Of course there’s no better time to take stock of this most precious commodity than the beginning of a new year. Enter that most dreaded exercise of broken promises, the infamous New Year’s Resolution. It’s no surprise that most of us don’t keep our New Year’s commitments. What’s even more alarming is that the most common resolutions we set (and eventually break) have to do with health and fitness. While we seem to recognize how important it is to change our behaviors and improve in this area, we don’t seem to be able to follow through. Why is this and what can we do about it? Rather than pontificate about the mysteries of this ritual, I’ll offer a more tongue-in-cheek, admittedly irreverent take on the subject. 1) Don’t Set Goals: For starters, it’s much easier to accomplish something that has no goal. How can anyone say you didn’t accomplish it? The real trick here is to do whatever you can and then after you’ve done it, just set that as the goal. You’ll be guaranteed success every time. 2) Set an enormous number of resolutions: This way you can pick those that you did and forget the rest. 3) Reward yourself: Pat yourself on the back no matter how you do. It’s a new year and you deserve enormous credit just for participating. 4) Don’t plan your resolutions, just wing them: This way you have a built-in excuse for your lack of progress. In a pinch, a good rule of thumb is to resolve to do things you’re already doing! 5) Keep your resolutions entirely to yourself: There’s no point in helping others understand your secret formula for success. All kidding aside, setting resolutions and goals is an integral part of forming new habits and ultimately undergoing positive behavior change. It’s often that extra push to keep you on track. gear Now it’s up to you. This is your year. No more excuses — make the most of this chance to start fresh and actually keep your new year’s resolutions. Here’s to a wonderful 2007! Happy New Year!

MISSABLE MENACE There are several ingredients found in popular snacks that aren’t exactly helping curb rising obesity rates, but trans fat has been singled out because it’s purportedly the most dangerous. Virtually ubiquitous in fried foods, baked goods and anything made with partially hydrogenated oil, trans fat has been shown to raise bad cholesterol, lower good cholesterol, and is blamed for at least 500 heart disease-related deaths in New York City each year. Because it has no known health benefits and food can be made without it, trans fat will soon be evicted from the Big Apple.

Ringing in the new year is a time for reinvention. Here are some resolution stats to keep you on the right path.
The tradition of making resolutions goes back to the year 153 B.C. About 1/2 of Americans make a New Year’s resolution each year. About 60% of these are centered on diet and/or exercise. Research suggests that only about 20% of resolutions are kept. Compared to people who don’t bother making resolutions, people who do are 10 times more likely to change a behavior or break a bad habit. Individuals over the age of 65 who make more than $75,000 a year are the least likely to make resolutions. Within 20 minutes of quitting smoking, a common New Year’s resolution, lungs and airways begin to heal and blood pressure returns to normal. Up to 70% of gym memberships are purchased within the first 3 months of the year. It takes about 21 days to build a habit and about 6 months to make a habit an accepted part of daily life.

Imagine walking into a room full of those you know most intimately. Your best friends, your family, even your co-workers. As you gaze around the room, you see faces and distinct features, yet no one is familiar — you can’t recognize anyone. Immediately you look in the mirror and shudder with fear. You don’t even recognize the visage staring back at you. What sounds like a nightmarish prank to most of us is the reality for millions of people with prosopagnosia. THE PHANTOM FACE They’re cosmetically enhanced and used to sell everything from jeans to cars. A French woman recently had a new one given to her, and by means of a certain popular online “book” everyone can display theirs for the rest of the world to see. Faces are usually the first indicator of emotion, the key to deciphering a person’s age, race and demeanor, and shallow as it may sound, they play a central role in determining who we’re attracted to. The face, because of its ubiquity, is easy to grow accustomed to, even to take for granted, but the role that these human masks play in deciphering relationships and understanding the world is worth more than a passing glance. Recognizing a single familiar face across a crowded room or gazing at the photograph of a loved one can banish feelings of loneliness and isolation in the blink of an eye. For an estimated 6 million Americans, however, this rush of recognition never occurs. The reason is a puzzling disorder called prosopagnosia, also known as face-blindness. It has nothing to do with forgetfulness or bad vision; people with this neurological condition simply cannot “see” other people, even themselves, from facial features alone. A mind-boggling phenomenon baffling researchers around the world, some fear it may never be fully understood, while others believe it to be hereditary. The real tragedy facing sufferers of prosopagnosia is that there’s no cure or medical treatment as of yet. People who have the condition learn to cope as best they can by relying on hair, voice and clothing to identify people they know; co-workers,

friends, spouses and children — even their own mirror image. The fact that some of us live in a sea of strangers adds further complexity to the already confusing world of interpersonal connections, but knowing this disorder exists and continuing to try and understand it will help to span the gap between those who recognize faces and those greeted with new ones around every corner.
THE SCIENCE OF SYMMETRY As opposed to drawing a blank at the sight of a face, many of us are inexplicably drawn to certain visages. Why do we take pleasure in some people’s features and recoil from others? The answer is multifaceted, but many experts believe it has something to do with symmetry. In nature, health and worthiness as a potential mate are thought to be expressed through a lack of irregularities. When measured with the objective tools of science, the people who society deems most beautiful are found to be blessed with faces that are nearly perfectly proportioned. Whether it’s because of a biological impulse to create superior offspring or a subconscious liking for balance, there’s no denying that Denzel Washington’s flawlessly even features are more pleasing to the eye than Dick Cheney’s crooked scowl. This is not to underscore the power of personality, but physical attributes clearly play a role in who we seek out as friends and partners and how we relate to one another. It might be a scary thought for privacy-seekers and micro-managers to contemplate, but faces display more than we realize and reveal more than we can control.

PLANTAR FASCIITIS FINICKY FEET: Along the bottom of the foot there’s a band of fibrous tissue that attaches the heel bone to the toes. This connector is called the plantar fascia, and when it gets overused a painful condition called plantar fasciitis can develop. Often making itself known during the first few steps out of bed or a prolonged period of sitting, this unwelcome visitor shoots ribbons of pain up through the heel.
POTENTIAL PROBLEMS: Plantar fasciitis commonly occurs in people who spend long hours walking and standing, are overweight, have very flat feet or unusually high arches. Runners with tight calves and women who choose stilettos over sensible shoes are also at risk. Fortunately, with proper treatment and regular care, plantar fasciitis can be conquered.

Energize different muscles individually; warm them
up, work them out and then move before monotony or exhaustion take over. Born and bred right here in Austin, the term “flexitarian” was first used in an Austin-American Statesman article in 1992. T he writer was reviewing the flexible fare offered at Acorn Café and learned of the word from the café’s owner who described their food as “flexitarian.” T he exact definition is still somewhat debatable, perhaps due to the nature of the diet itself, which allows for choice and variety within a larger context. Training Tips Look for foods that have a “meaty” texture. Mushrooms, particularly Portabellas are always a good option.
Be open to alternative forms of protein. If tofu isn’t your thing, then stick to what you know. Eggs, oatmeal, beans and nuts are all wonderful.
Experiment with ethnic recipes. They tend to be full of flavor so you won’t miss the meat.
Falafel is a Mediterranean staple made from chick peas. Once fried in olive oil, it’s one of the tastiest “veggie burgers” a person can eat. Wrap it in a whole wheat pita and top it with hummus for an even healthier, meat-free meal.
When making your favorite meat-filled dishes, try cutting the amount in half. Spaghetti and meat sauce, for example, tastes just as good with less meat. A little goes a long way to flavor the sauce.
Keep an open mind and explore some of the vegetarian restaurants around Austin. Nu Age Café, in particular, recognizes that nearly 80 percent of its regular customers follow a flexitarian diet. Ask the server to recommend his or her favorite dish and prepare to be amazed at what chef Ethel Liu can do without any animal products whatsoever.
Most importantly, keep a log of how many days a week you go without eating meat. Even if you indulge occasionally, you may be surprised and motivated to look back and see how far you’ve come.
Finally, don’t deprive yourself. If you’ve prepared healthy dishes all week, allow yourself to savor every bite of the burger you order when out with friends. After all, life is meant to be enjoyed, and it’s hard to do with a mouth full of guilt.

SOY MILK Nutritionally comparable to cow’s milk, this beverage is made from soybeans and can be made at home or bought in a number of different flavors. Chocolate, vanilla, unsweetened and vitaminenriched are a few possible variations, and milk-abstainers can even pick up a soy latte at most coffee shops these days. Some can’t stomach switching from cow to legumes, but lower saturated fat, an absence of antibiotics and hormones and no links to diabetes or cancer mean there’s something special about soy.
RICE MILK This sweeter, thinner non-dairy substitute naturally contains more carbohydrates and fewer nutrients than the real deal, but it’s often fortified with calcium, Vitamin A and Vitamin D by the time it reaches grocery store shelves. It never fully matches regular milk nutritionally but it contains no hormones or lactose either. Thus, if sipped as part of a balanced diet, rice milk makes an acceptable substitute and is often the preferred choice of picky people who don’t do dairy.

Ultimate Frisbee AT SOME POINT OVER THE LAST few years, passing a balmy afternoon in the park by tossing a Frisbee around has taken second place to something a bit more serious. Much like big-wig celebrities it only needs a single name, and that endorphin-inducing moniker is as intimidating, albeit simple as the game itself — Ultimate. From far away it looks like a game of football, with running, throwing and points scored when a pass is completed in the end zone. Up close it plays out a little differently of course, with a flying disc instead of a ball, no contact and an important component known as the “Spirit of the Game,” adding a fun-loving, joyous spin to this wildly popular diversion. Competition is important but in an ideal Ultimate face-off, aggression should never trump the ability to have a good time. On a local scale, clubs and pick-up games flourish in the fine Texas weather, especially on college campuses (students seem ever ready to “huck,” “kick-catch” and “sky” to burn off a little steam). Worth mentioning is a local team known as Dou-

ble Wide, who went as far as the World Ultimate Club Championships in Perth, Australia last November. Although this tightly knit 23-person lineup didn’t bring home the title, they did represent Austin with teamwork, style and passion. It may not be an Olympic event quite yet, but Ultimate has clearly earned a place in the hearts and minds of Frisbee lovers everywhere who feel the need for more than just a tame game on a Sunday afternoon.

MAKING TIME FOR HABITS
BOOKS BREAK IT DOWN INTO CHAPTERS, motivational speakers hold seminars that will tell you how to do it, and friends and relatives freely dispense their own sage words, but what does it really take to break bad habits and start good ones? Whether it’s watching too much TV (and eating too many carbs while you’re at it) or something more serious (like smoking cigarettes), we all do things we wish we didn’t and wish we did more things we don’t. As the calendar flips to 2007, it feels like the perfect time to change, so take a look at what you’re dealing with before rushing headlong into an overly ambitious scheme that fizzles out mid-February. Forget all the fancy lingo and focus on one indisputable idea: it takes time to build a habit. Some experts say 21 days, others make it 30 just for good measure, but the bottom line is that in order to lay down a new pathway in the brain it’ll require more than just a single happy thought. Think about it: turning on the television after walking in the door, tossing dirty clothes into a heap on the floor, or reaching for a bag of potato chips are actions that occur with little consciousness. You aren’t deciding to do these things, you’re just doing them, which makes it hard to stop. Let this frightening realization wash over you, but then take comfort in another fact: it’s actually possible to replace these behaviors with new ones. Believe it or not, there are people who wake up in the morning, lace up their running shoes and head out the door for a jog — not because they’ve thought long and hard about it, but because that’s just what they do. They’ve made it a habit by repeating the process over and over again until it sticks, and if they can do it, so can you. It may help to seek professional guidance or to craft a detailed plan, but simplicity also has its appeal. If change is what you really want, then accept that it will take a few weeks and do what you have to do to hang in there. It won’t be easy, it won’t be pretty, but in a month or so, you could be mindlessly doing something that’s actually good for you.

To give you that extra boost, we sought the advice of Stuart Gallop, personal trainer and author of “Strategic Fitness: Lessons from a Corporate Road Warrior,” someone who knows a lot about this stuff. Below are his tips for making your resolutions a reality.
1. Define Your Current Situation: Before you enter the goal-setting stage you’ll need to identify where you are. Express your situation in specific and measurable terms. 2. Establish Your Goals: Based on your current situation decide what you want your goals to be. Make sure to put your goals through the “SMART” filter — Specific, Measurable, Achievable, Relevant and Time-Based. 3. Identify Obstacles: If there are obstacles such as time, knowledge or facilities, identify them along with solutions to overcome the problem. Understand where and when you’re most likely to fall short, then plan ahead! 4. Make Actions Plans: List and schedule your key activities. Be specific, concise and establish a time for each action. Keep it simple and as convenient as possible to ensure implementation. 5. Implement: This is where it all happens. Actions repeatedly performed become habit. Concentrate on the actions which establish the habits that will make it possible to achieve and maintain your goals for a lifetime. 6. Plan Assessments: This is an extremely important step. As you progress toward your goals, plan assessment times to evaluate and record your current results. 7. Reward Yourself: For some, the progression to a goal is reward enough. If this is you, take pride in your accomplishments along the way. Otherwise, set up a reward system.

The legendary guitarist and songwriter from Fleetwood Mac returns with his first solo endeavor in more than a decade. Featuring cameos from bandmates Mick Fleetwood and John McVie, Under the Skin is an immensely pleasing pop album marked by transcendent harmonies and a heavy emphasis on acoustic guitars. One of the strongest lyricists of his generation, Buckingham infuses the record with earnest of soul-searching and coming to terms with growing older. As several of the tracks were reportedly laid down in hotel rooms during Fleetwood Mac’s tour last year, Under the Skin at times emanates a subtle lo-fi indie minimalism, which is a refreshing change for an artist accustomed to big-budget studio productions.

Hence, “Lady Madonna” adds the guitar riff from “Hey Bulldog,” while “Strawberry Fields Forever” samples parts of “Penny Lane,” “Sergeant Pepper’s Lonely Hearts Club Band,” and more.
