CELEBRATION TIME

We’re commemorating something special this month. THERE IS A decidedly relatable explanation as to why time—and, subsequently, life— seems to move at such a quick pace. The sentiment goes something like this: When you are a young child, your whole life consists of just a few years. As such, existence in general feels unhurried and steady. When you become an adult, life spans a multitude of years and sundry experiences. And because of all the maturity you’ve gathered, your days rocket by faster and faster. We’re finally celebrating the first AvidLifestyle milestone in that glorious slow stage, though with the adult years in my personal arsenal, I can hardly believe we’re at this point. This time last year, despite the fact that our staff sat amongst a treasure trove of captivating Derby hats, I daydreamed of the first moment I could utter the phrase “this time last year” in relation to this magazine. And here, it’s happened. AvidLifestyle is one! The gift of having such a short timespan feel like forever is that it becomes unfussy to see what’s worth raising a glass to. Keep Us Posted This month, we make sense of ZIP CODES. By Kendall Kostelic EVERY COMMUNITY has its quirks. Ours, most seasoned south suburbanites would say, come in the form of befuddling addresses. “Our ZIP codes make no sense at all!” says Brian Vogt, one of the “founding fathers” of the City of Centennial. From a resident perspective, the evidence is incriminating. According to ZIP code demarcations, The Village at Castle Pines is in Castle Rock and most of Cherry Hills Village is actually Englewood. Without a boundary map, no one quite knows where Centennial starts and stops because its six ZIP codes, none of which are exclusive to the substantial center, continue past jagged city lines. And so on ... How did things get so jumbled? The short answer, says the U.S. Postal Service, is they didn’t. This puzzle has less to do with ZIP codes and more with how modern-day neighborhoods define mailing addresses. “ZIP (or Zone Improvement Plan) codes were designed specifically for us to sort the mail as efficiently as possible,” explains Postal Service spokesperson James Boxrud. The U.S.P.S. assigned all of the country’s major ZIP codes by 1963 for this solitary purpose. Yet, somewhere along the way these sorting digits became an unofficial factor for sense of place. Officially, it’s city boundaries—not 57-year-old ZIP codes—that settle where home is. Consequently, when a majority of the burgs in

an area are younger than the ZIP code system (read: the south suburbs), the allocating efforts between the two run into less-than-ideal circumstances. For starters, a limited number of available ZIP codes means some new towns and cities cannot get their own postal route. Second, new municipality boundaries are typically formed from unincorporated or annexed land (already within decided ZIP codes), which can create unusual dividing lines. This is why Centennial’s ZIP codes also cover three other surrounding cities. “Most cities want to bring in commercial property to make money, which makes all dividing lines look crazy,” says Vogt. “But Centennial did kind of the opposite: We took all of those ragged edges—commercial or not—around this unincorporated area to decide our boundary.” This is also why letters that read, say, Greenwood Village, Colo. 80121 (officially a Littleton ZIP code) still reach the mailbox. “When municipalities let us know they are going to take over areas we have already designated, we add that information in our sorting databases,” Boxrud says. There are exceptions to this structure. Greenwood Village was incorporated in 1950, but still hasn’t been given a unique code. According to The Villager, this is because the village was founded after the Postal Service created its first temporary zoning system in 1943. The same applies to Cherry Hills 20

It is possible to have a ZIP code changed to better match city borders—though our area hasn’t had much success. “It’s usually based on population,” Boxrud says. “There’s a Postal Service committee that meets every year to discuss when new codes need to be created.” For now, take your mailing address with a grain of salt and, instead, determine “home” on a detailed local map.

Raising the Steaks Josh Mingus is SHANAHAN’S wrangler of beef, and his kitchen is no laughing stock. By Lori Midson FOR SOMEONE who’s about to get bombarded with a full dining room of highclass carnivores, Josh Mingus is remarkably composed. Then again, Mingus, the executive chef of Shanahan’s Steakhouse, is accustomed to doing 300— sometimes 400—dishes a night. Occasionally glancing down at his memo book, scribbled with handwritten notes, Mingus is a chef who takes his job more seriously than most. He’s the personification of professionalism, a trait that wasn’t lost on managing partner Marc Steron, who hired Mingus after a single interview. Mingus, who’s spent more than two decades working in kitchens and moved from Alaska to the Mile High City in the fall of 2017, had been in Denver all of one week before Steron offered him an executive sous-chef gig. Within a year, he was quarterbacking the kitchen inside former Denver Broncos (and Washington Redskins and the former Oakland Raiders) head coach Mike Shanahan’s shrine to steer. What makes the affable chef tick? We sat down with Mingus just before a Thursday night rush to pick his brain about perks, dog bones, his most embarrassing moment in the kitchen and the steakhouse’s insanely popular prime rib. THE PERKS ARE DEFINITELY COOL. “A guest invited me to his house to practice my targeting skills on his shooting range, and I’ve been taken to a lot of basketball, baseball and football games, including a Broncos vs. Cleveland Browns game where we had club-level seats. Overall, I’ve had quite a few ‘holy crap, that was

a memorable day’ experiences since working here—especially the first time I cooked for our concert series. We did around 700 covers [or orders]. Guests also ask to take home the Tomahawk bones. The kitchen should represent the same high expectations and attention to detail as the dining room and bar.” “I’M MOST PROUD OF THE FACT that we’ve had two perfect health inspections in a row since I’ve been executive chef. It’s not easy to achieve a perfect health score once, much less twice. That’s amazing. We also have the highest ranking on OpenTable for steakhouses in the Denver Tech Center area.” “I’VE COOKED FOR DREW BARRYMORE, Mike Shanahan, Peyton Manning and Jon Voight, but I would have loved to cook for the late and great Robin Williams. He was always an inspiration to me growing up, and I feel like he would’ve been truly fun to dine with.” “THE WILLINGNESS TO GO THE EXTRA MILE makes a great chef. If, for example, a guest wants to know what the Tomahawk looks like before they eat it, I’ll go into the walk-in, pick a beautiful steak, put it on a platter and present it at the table. I then always follow up with the guest—more than once—which really makes a difference.”

FRENCH ONION SOUP

While Shanahan’s is renowned for its unassailable steaks and service, the celebration isn’t for the faint of wallet—which is why the Sunday night prix fixe dinners, priced at $49 or $59 per person, are a steal. The menu’s magnum opus? Prime rib, a culinary cornerstone of yesteryear opulence. “Our Sunday night prix-fixe menu accounts for about 75 percent of why people come in and, on average, we sell about 75 orders of prime rib,” shares Mingus, adding that the kitchen goes through close to 100 pounds of whole rib roasts on any given Sunday night. Those roasts—crusted with salt, pepper, fresh garlic, dried thyme and rosemary— are tenderized and baked in a 275-degree oven for three hours. The hand-cut planks, delivered to tables on sizzling stark-white plates, are drizzled with clarified butter and paired with housemade creamy horseradish and herb-flecked jus. The prime rib is coupled with a choice of soup or salad, side dish (mashed potatoes, asparagus or steamed broccoli, depending on price bracket) and dessert.

“MY BIGGEST KITCHEN DISASTER happened when I was educating a couple of cooks on how to properly use the ‘claw’ knife technique which, when done correctly, means I can pick my head up and look around without cutting my fingers. Except, low and behold, I cut myself. Takeaway: It was a great way to completely embarrass myself in front of the people I was trying to show off to. And the moral of the story: Pay attention to what you’re doing, even if you’re doing it right.”

The New Ice Age

It’s Englewood ice artists who are taking craft cocktails to the next level. By John Lehndorff WITH THE EARLY SPRING sun setting over Cherry Hills Village, friends gather on the patio at Glenmoor Country Club. As you sit and sip an old fashioned in the pretty setting, you can’t help but comment: “This cocktail is great!” It’s not simply that the right glass or perfect amount of bitters, sugar, well-aged bourbon, fresh orange peel and a cherry have been used. This is an old fashioned you can linger over and appreciate to the last, undiluted drop. It seems to last forever. You attribute this delight to the bartender’s mixology skills, but there may be a secret ingredient in the glass. Tucked away in a huge Englewood facility is Colorado Ice Works, a burgeoning enterprise that is the region’s largest supplier of 300-pound ice blocks. For more than two decades, those hefty slabs were only carved into custom sculptures. Several years ago, bartenders gave company president Mike Bickelhaupt another purpose: gourmet cocktail ice.

cubes from Colorado Ice Works blocks, took notice of these merits. So, Bickelhaupt started supplying cocktail ice to bars and restaurants and for catered events. The company makes cubes, but its most eyegrabbing shape is the ice spheres. “I think they’re beautiful,” Bickelhaupt says. “You can hold a sphere up in the glass and see right through it. There are reflections on the surface that catch the light. “We are the only company registered with the state and the FDA to make this ice,” Bickelhaupt says. This artisan ice boom is very Colorado-centric. The company building the machines to craft the one-of-a-kind ice is Loveland’s Clinebell Equipment. The machinery, which is recognized worldwide, produces ice blocks by freezing water layer by layer. This forces out bubbles, air pockets, cloudiness and keeps away freezer smells. About 72 hours later, blocks are formed and ready to be carved and plunked into the nearest tumbler.

Water quality also makes a difference. “We use a filtration system with water softener because Colorado water is so hard,” Bickelhaupt says. “The idea is to have a neutral flavor.” Frasca Food and Wine in Boulder, El Five, Death and Co. Denver, The Brown Palace Hotel and Spa and a long list of other leading Denver destinations have made Bickelhaupt’s cocktail ice an in-demand item. Back here at home, Glenmoor Country Club and one of the largest area catering companies swear by it. “Colorado Ice Works makes a superior product. We use their cocktail ice at many off-site events at venues and private residences,” says Taryn Hohman, Senior Event Designer for Centennial-based Epicurean Group. Soon, the old fashioneds and other cocktails you craft for happy hour at home can be elevated too. Before summer hits, Bickelhaupt pledges, “we will start selling our cubes in local liquor stores.”

“The main difference in our ice is that it is crystal clear with no bubbles or cracks. It’s much more dense than regular ice and melts more slowly,” Bickelhaupt says. Denver mixologists, who were carving their own

WHEN THE proverbial they say to expect the unexpected when diving into a home remodel, the proverbial they are not wrong: permits can halt construction for weeks, cockeyed pipes can be discovered, paint colors can turn out all wrong and so on. This is not where things got interesting in this Cherry Hills Village cottage, though. The story for its new homeowners, who had been looking for a haven with enough space for visiting children and grandchildren, started after an unignorable roadblock came to light. The home’s original foundation could not support the remodel work they had planned, which meant they needed to rebuild from the ground up. Despite the fresh start, they changed almost nothing in their blueprint.

< In HIS OFFICE, also known as the DEN, the desk takes a back seat to the fireplace and its inviting sitting area. “We love to be in the den together in winter— it’s a cozy place where we can start a fire and read or watch television together,” the homeowner says.

< Examples of detailed craftsmanship from local artisans can be found all over the home, but there is no better example than the FRONT GATE, custom designed by Ashmore’s firm and then brought to life by Denver ironworker Max Brun.

> The 400-year-old English fireplace, dining chairs made specially by Mimi London and Lewis and Wood wallpaper make the DINING ROOM Ashmore’s favorite spot in the home. “The couple themselves are wonderfully connected, and the dining room is a beautiful balance of the masculine and feminine coming together,” she says.

The initial renovation strategy was kept nearly identical, with the original first-floor space not made much bigger. A bit of proof: The main level of the original structure measured 3,483 square feet. The main level of the new build is 4,184 square feet. They also didn’t move the home’s placement on their 2.2-acre property an inch. Nestled into the lot’s back corner, the previous owner had created “this oasis of different species of trees, at different ages, layered very nicely,” that the homeowners were determined to preserve, says KGA Studio Architects’ Paul Mahony.

> First impressions are about authenticity here. The ENTRYWAY exhibits historic details through the colored millwork pattern on the stairway walls (done by both Russ Douglas of Sierra Woodworks and Bud Wright from Restoring Concepts) and worn, aged limestone flooring.

The homeowners were looking to display authentic elements of old English country estates—keeping things as historically accurate as possible. They enlisted Mahony, Steve Diamond of Diamond Homes and interior designer Richelle Ashmore of Your Natural Home to bring the vision to life. “We wanted an old-world feel; a peaceful cottage that would feel like it had been on the site for years,” the homeowner says. Mahony hit the history books for genuine exterior essentials and emerged with swooping

eaves on the roof—constructed from imported slate—copper detailing on the downspouts, nearly full-stucco siding and towering (and skinny) red-brick chimneys, which lead to the estate’s most interesting indoor detail.

The interior features six fireplaces—three of which have antique surrounds and firebrick sourced from Europe—paying homage to a time when homes were heated solely through hearths. “The fireplaces were a key element for us,” says the homeowner. “Their character helped lend to the feeling of being rooted in the deep history of another time.” Ashmore accompanied the cozy centerpieces with antique furniture from Denver’s Eron Johnson Antiques and a diverse array of surfaces to create the essence of a “little haven nestled in the woods,” she says. Adds Mahony: “One of the things you find with these old English designs is that there is a lot of texture on the walls; a lot of times because the homes grow over years and generations, so you have different materials.”

The team did create a second floor (which was the initial reason for the renovation) to make room for two suites for visiting family. They also redesignated other areas per the homeowners’ strict intentions: “We wanted a comfortable home free of cavernous spaces—one where a single person could feel at ease in any room.” So, each living area was made to have a purpose, including his and her offices—his with a chest for fly-fishing rods and hers set up for yoga— a banquette for playing cards and even an archery range in the basement. The housewide mission was also, of course, to take advantage of those forested sight lines. Every room, except the master closet, has doors to a patio or outdoor path. In short, “our new home has an old English style with a cottage sensibility,” the homeowner says. “It’s the kind of home you might expect to find hidden in the trees in the English countryside, surrounded by lovely gardens.”

Smart Garden PLANT SELECT’S SMARTEST PLANTS OF THE YEAR lists give green thumbs a boost. By Laurel Thompson For horticulturist Hans Kaufenberg, spring is the best time of the year in Cherry Hills Village: “I love designing and planting the garden beds around town. It’s like painting with things that grow: You can create something new by combining different textures and colors and shapes. For example, I like to put fragrant things near paths so people can enjoy the scent, and if a flower looks really neat, I put it where it’ll be seen.” As Kaufenberg, Cherry Hills Village’s city gardener, welcomes the season with these displays, he is doing more than creating living works of art. Kaufenberg is one of several south suburban horticulturists who incorporates Plant Select’s “smartest plants” of the year into area flower beds. A nonprofit collaboration between Colorado State University, Denver Botanic Gardens and the region’s most renowned horticulturists, Plant Select determines top-performing perennials each year for intermountain and high-plains regions (and beyond) that will improve the surrounding environment for the plants and their gardeners. First, these plants are hand-selected by a board of experienced horticulturists for propagation in trial beds at CSU and for test-growing at Denver Botanic Gardens. If all goes well, they are grown in public and private demonstration gardens where people can learn about

Your narrative: The Chronofighter Vintage Aircraft collection is based off of large watches British fighter pilots used to strap to their legs instead of their wrists, for easy visibility without removing their hands from plane controls during missions. The watch’s movements were flipped upside down (with the crown on the opposite side from a conventional watch) to make it easier to push the trigger through flight gloves. This men’s modern stainless steel and black-plated version includes that same trigger detail along with a denim strap, aircraft rivet dial details and an ombré blue-to-black fade for an “aged” appearance. Your plot twist: Only 250 watches in this series were produced, and each one features its respective number on the dial.

WHEN HER KIDS’ suit company, Kindhuman, launched in early March, it wasn’t fashion industry veteran Autumn Kimball steering the ship. Instead, Kindhuman is being run by Guy, Everett, Lincoln and Severin Kimball—Autumn and husband Brett’s 13-year-old quadruplet sons. The suits are brightly colored—from shades they’ve coined “Tiger Pink” to “Jade Dragon” green—with custom linings that Autumn Kimball calls “really eccentric,” contrasting buttons and other fun details. “They’re the kind of suits my sons actually enjoy wearing,” says the mother of six (she also has two younger boys). Before children, Kimball worked in New York City for designers like Calvin Klein. She was in the middle of a burgeoning career as an award-winning creative director in the fashion industry when she got pregnant with the four boys. “One perspective is that getting pregnant imploded my career,” she explains from her

Castle Pines home, which also serves as Kindhuman HQ. “On the other hand, it directed me to the life I was supposed to live.” That life was one dedicated to her children. Kimball now works as a consultant to Asian fashion markets at night while parenting fulltime during the day. When the quadruplets were 9, the family had the idea to start a suit company. But having two more children, Tor (age 4) and Von (age 1), put launching a business on the back burner. With the older boys in sixth grade this year at Aspen Academy, a private school in Greenwood Village that focuses on leadership and entrepreneurial development, the Kimball family decided to go for it. Each boy brings a different strength, personality and style to the brand. “Guy is a phenomenal drawer. He has everything to do with design,” says Kimball. She says that Lincoln’s creativity has him always approaching things differently, and that Everett has incredible personal style. “And Sev64

erin just grounds the four of them,” says Kimball. “He’s more in the box, but is a great executor. … We have not moved forward on anything unless there are unanimous decisions.” With the boys doing everything from making design and financial choices to running the company’s social media campaigns, Kimball says that each one will move into the roles that suit them best. “I’m pushing them toward making those choices,” she says. “I want them to feel the results in living their lives.” What do the boys think? “I love working with my mom,” says Everett, who adds that he’s excited to see suggestions from customers and for new things to come. Continues Guy: “This really gives me a lot of experience and will help me later in life.” Autumn has found herself being inspired in new ways as well: “Starting the company has really been an exercise in motherhood, on how to stay tethered to your children and how to be part of it without being heavy-handed. It’s been about identifying their talents and pointing them in the right direction.”

DeBoer put out her first Bin Blessed tub when she was living in Littleton and involved with The Gathering Place, a day shelter for transgender individuals, women and children experiencing poverty. People who knew about her work there often asked what they could do, and she thought in-kind donations might appeal to people too busy to volunteer. So, she passed out flyers listing shelter-goers’ needs and where her neighbors could drop off the provisions. Almost immediately, her tub started filling with household supplies. People began asking about hosting tubs at their own homes.

Once a month, their contents are collected by women—golf partners, Bunco buddies, Bible study group members—known as Bin Babes. Besides collecting basic supplies for There With Care’s offices in Denver and Boulder, they assemble themed monthly surprise bags or backpacks for families in need, filled with gifts and treats that the Bin Babes personally provide. DeBoer estimates Bin Blessed has donated roughly $500,000 in goods and services over the past five years. “We think of the siblings and parents as well as the critically ill children because their lives are turned upside down, too,” DeBoer says.

“Bin Blessed has touched almost every family we serve in one way or another,” says Mellenie Goebel, Denver development director of There With Care. Goebel approximates that the organization provides at least 50 special bags or backpacks a month to families, rotating between 160 recipients. (Hospital support coordinators and social workers identify the families who most need the extra TLC.) She continues: “They’ve helped collect coats during November, and put together backpacks for school-aged kiddos. They really add a level of compassionate care. Families in medical crises need normalcy added to their lives, and the Bin Babes have a deep impact.”

with food and fashion. When I’m not at market, I like to eat and network with other buyers. We do a little thing called ‘inspiration shopping,’ where we go to local shops to see what they’re doing. My favorite places to shop in Paris are Le Bon Marché, a Parisian department store, and The Broken Arm, an amazing little avant-garde shop with a café inside.” Tillapaugh also likes to eat whatever Chef Enzo recommends (though he loves the sweetbread) at Vava, a cozy bistro, and stay at Hôtel Costes, where it’s not uncommon to see celebrities and models during fashion week.

Most recently, he schlepped a spring haul from Paris. Is a Parisian buying escapade as fun as it sounds? Let’s find out. WHAT DO YOU DO AT MARKET? “A majority of my job is planning out the logistics of getting luxury European brands to each shop,” Tillapaugh says. “I’m constantly traveling to Paris, Milan, New York City and Los Angeles to look for intriguing new pieces. Normally, I have between five to eight appointments per day—it’s kind of like power shopping, with top designers.” WHAT DO YOU LOOK FOR? “When I’m in Paris and Milan, I look for those really fun, one-of-a-kind pieces you can’t get anywhere else. Recently, I brought in a few beautiful cashmere cardigans from Alanui that are handmade in Italy. It takes about 12 hours to make those cardigans—I’m only ever able to get one or two because they’re that unique.” WHAT DO YOU DO IN PARIS WHEN YOU’RE NOT SHOPPING? “Most of the things I love in Paris have to do 72

lots of stripes and exotic patterns to create this distinctly disheveled-but-polished look, which I adore. Some of my favorite French brands are Chloé and Casablanca, an emerging Parisian brand that fits in perfectly with the Denver fashion scene.” WHAT SHOULD EVERY TRAVELER DO IN PARIS? “If there is one piece of advice I have for someone traveling to Paris, it’s to walk as much as you can. It’s a great way to fully experience the city, and it’d be a shame to waste it by taking an Uber everywhere. Walking is how you’re going to discover all the amazing cafés, bars and shops—you’ll also meet lots of amazing people who are excited to show you around. Also, try not to overbook yourself.”
