INGREDIENTS

4 oz. (½ cup) good quality rye whiskey
Fill a martini or coupe glass with ice water to quickly chill; let stand 1 to 2 minutes. Drain and dry.
2 oz. (¼ cup) sweet vermouth 1 oz. (2 tablespoons) dry vermouth Several shakes of bitters Garnish: maraschino cherries
Fill a cocktail shaker with ice cubes (large cubes won’t melt as quickly as small cubes in the spirits and/or liqueur). Add rye, vermouths and bitters. Shake well. Pour through a cocktail strainer into a chilled martini glass. Garnish with cherries, if desired, and serve.
Prosciutto, Fig and Goat Cheese Tarts Makes 6 dozen
INGREDIENTS
METHOD
1 17.3 oz. package (2 sheets) frozen puff pastry, thawed in refrigerator (see note below)
Preheat the oven to 400 degrees. Remove 1 sheet of puff pastry from refrigerator. On a lightly floured surface, roll puff pastry into a 12-inch square. Cut into 2-inch squares. Press pastry into small mini-muffin pans and prick with a fork. Spoon a scant ½ teaspoon of fig spread into center of each square. Top with chopped prosciutto and goat cheese.
1 8 to 8.5-oz. jar fig spread* 1 cup (6 oz.) chopped prosciutto 1 cup (4 oz.) crumbled goat cheese
Remove remaining puff pastry sheet from refrigerator; repeat procedure with second pastry sheet. Freeze in muffin pans.

Bake frozen tarts (in mini-muffin pans) 10 to 15 minutes or until hot and pastry is golden. Serve immediately. Make ahead: Tarts can be kept frozen for up to 3 months (any longer and they won’t bake properly). Remove frozen tarts from the muffin pans and place in heavy-duty freezer bags. To bake, place tarts back into mini-muffin pans. Note on using puff pastry: It is important when working with puff pastry to keep it cold. If it gets warm, it will be difficult to roll and cut, and won’t puff as much when baked. 20

Sweet Holidays Where to find the TRADITIONAL BAKED GOODS from Bûche de Noël to Pannetone By John Lehndorff
A TREE, LIGHTS AND TINSEL are certainly important, but the most anticipated preChristmas family tradition in my house has been our annual pastry run. We’d head out early to visit certain bakeries and markets that have the baked goods from pannetone to stollen that speak to our varied cultural roots. It’s like doing 23 & Me, except much tastier. We would jostle elbow-to-elbow eating pastries while immersed in a buttery sweet perfume. Sadly, the pandemic means that can’t happen this year. However, I’m not going to do without the authentic ethnic treats that make the holidays. Here is my short list of the essential goodies that are crafted at my favorite independent, family-run bakeries. Shopping 2020-style from Thanksgiving through New Year’s Day (and beyond) will require ordering (and picking up) these tasty treats in advance, and taking advantage of online ordering, delivery and curbside pickup options. When visiting, wear a mask and keep your distance — don’t forget to get some cookies to eat on the way home.

EVERY WINTER, from December 1 through January 1, The Broadmoor, one of Colorado’s most timeless resorts, adds an extra sprinkle of holiday merriment with its frosted, candied and elaborate gingerbread houses. The annual ritual has warmed the hearts of even the sulkiest Scrooges since 1964, when the Colorado Springs hotel displayed its first gingerbread house: a replica of Hansel and Gretel. “The fairytale house, created by sous

Chef Klaus Zander of the Penrose Room, was made completely of gingerbread and had a sugar wafer roof covered with snow icing,” recalls Krista Heinicke, public relations and communications manager of The Broadmoor. That first display, she adds, “even included a gingerbread oven where the old witch put the bad children.” Since that first candy confection, The Broadmoor’s gingerbread houses, which are always themed around an element of the resort, have enthralled guests and the public. and chocolatiers have created replicas of a steam engine, the Pauline Memorial Chapel, a community church and wedding venue across the street from The Broadmoor West entrance and, in 2018, a recreation of the resort to celebrate its centennial. And they’ve become increasingly larger, more ornamented and complex. “In 2013 our gingerbread creations became life-sized; that’s the year we got real,” says Heinicke, adding that under the direction of Thomas, the gingerbread houses have morphed into extravagant showpieces. “Adam was instrumental in elevating the experience by making the gingerbread houses life-sized and incorporating each aspect of pastry, chocolatier and baking. Everyone is involved and instrumental in creating an experience that’s not only pleasing to our guests but pure creative satisfaction for our team,” says Heinicke. But while there’s no shortage of legitimate pride, creating those gingerbread house masterpieces is a laborious and time-consuming endeavor. The process of conceiving and assembling the stunning confection spans four months, and it takes a village, admits Heinicke. More than 60 Broadmoor bakers, pastry chefs, chocolatiers and even carpenters finesse and festoon the house before it holds center court on the main mezzanine of the resort, where it’s protected by a rope and stanchion. Still, even the most rigorous enforcement isn’t always a deterrent for crashers. “We’ve had kids who lick it, break off pieces and try to eat it. You name it, it’s been done,” quips Heinicke. While many of the details of this year’s gingerbread house are still under wraps, Heinicke divulges that it’ll be a tribute to the rebuild of the $100 million investment of the Broadmoor Manitou and Pikes Peak Cog Railway, which has been three years in the making. “We’re doing a replica of our new cog trains that are being assembled and shipped from Switzerland in 2021. It’ll be eight-to-11

feet high and 12-to-14 feet in length, and there will be elves working on the train and Santa checking his list,” reveals Heinicke. Still, if the resort’s past gingerbread houses are any indication of this year’s sugar high and caloric content, Santa might very well combust.
Tips for building a gingerbread home of your own
Building a gingerbread house takes time, patience and planning. Face it: The last thing you want is a collapsing roof crushing your gingerbread man. Pastry Chef Liliana Myers, who worked in the kitchen of Thomas Keller’s Bouchon Bakery and Michelin-starred restaurants in France before becoming the pastry chef at Safta at the Source Hotel in River North, offers these tips and tricks to craft a memorable gingerbread house.
While guests of The Broadmoor will have easy viewing access to the sugar-saturated work of art, the public can view it, too. “This year, we’re broadcasting both a Broadmoor website and YouTube tour, most likely with a time lapse, to allow people who aren’t staying at the hotel to experience our gingerbread build,” says Heinicke. The virtual tours go live on December 1.
1. INVEST IN GOOD GINGERBREAD HOUSE CUTTERS. Myers recommends a Wilton’s kit, which includes a cutter for the front panel, side panels and roof.
“This tradition isn’t just important; it’s paramount,” insists Heinicke. “It’s a community tradition, and guests and family members of guests plan their holidays around our gingerbread build. While it’s only up temporarily, it’s week and months of planning, and the whole team works toward this special time. It just might very well be the most important and impactful thing we do all year,” says Heinicke.
2. USE ROYAL ICING. “It’s naturally white so it makes great snow and icicle embellishments, and since it’s mainly egg whites, it also dries really hard and strengthens the frosting,” shares Myers.

INGREDIENTS 3 oz. pasteurized egg whites 4 cups powdered sugar 1 tsp. peppermint or vanilla extract METHOD Place powdered sugar in a bowl and whisk in egg whites and extract until there are no lumps. Cover with plastic until ready to use.

Cream together softened butter and sugar until just combined. Beat in egg and molasses. Sift flour, baking soda, salt, ginger, nutmeg and cinnamon. Use your hands or a handheld mixture on low speed to combine dry mixture with creamed butter and sugar until it’s blended and smooth. Wrap dough in plastic and refrigerate for at least two hours and preferably overnight. When ready to roll out dough, preheat oven to 325 degrees. Liberally sprinkle some flour on a flat surface, roll out dough to ¼-inch thickness and cut into desired shapes. Work in small batches and keep excess dough in an airtight container so it doesn’t dry out. Bake for 20 to 25 minutes, or until the cookies are light brown and lift off the baking sheet. Let cool completely before assembling and icing.

4. DECIDE EARLY ON IF YOU INTEND TO EAT YOUR CREATION or just admire it. If you plan on eating it, do so within three days. No one wants to snack on stale cookies and icing. Myers recommends keeping your gingerbread house covered for “optimal delectability.” A cake stand cover is her preferred choice. If you’re simply going to stand in awe of your masterpiece, bake the cookies a little longer than normal to ensure they have no moisture, which results in better structural integrity. 5. WHEN CUTTING PIECES for a chimney, windows or door, always use refrigerated or frozen gingerbread dough; you want it cold! “You’ll get cleaner lines, and you can use a ruler to score them and keep them straight,” says Myers.

3. TO ICE YOUR GINGERBREAD HOUSE, use a piping bag, cornet or the end of a plastic bag. “A cornet — a little cone made from parchment paper — works best for small detail lines,” notes Myers, adding that you can find “how-to” tutorials on YouTube.

6. DECORATE THE MAJORITY OF YOUR PANELS BEFORE BUILDING the actual house. “It’s a lot easier to decorate panels when they’re flat on a table,” advises Myers. BONUS: You don’t have to worry about unwanted drips either. 7. USE ROLLING FONDANT to make snowmen. And gingerbread scraps, Myers shares, “make great spokes for a fence or gingerbread people.” 8. MINI MARSHMALLOWS, reveals Myers, make wonderful igloo blocks, while peppercorns are perfect for snowman eyes and little snips from a live pine tree results in a beautiful pine forest.”

Being quarantined from them was miserable. The entire team is really sticking together to build stronger relationships, stronger bonds and respect between all of us. As it has been said many times before however, tough times really show a person’s true character. It’s been tragic; however, without tourists visiting, there has been a gorilla ʻbaby boomʼ and more than 30 new babies were born in August and September alone. This is the largest increase in new births since the mountain gorillas were first identified back in 1902. Yeah! In my personal life, I’ve been able to enjoy more quality, family time with my wife and children this year.”
What have been the biggest gifts of 2020 for you? “We spent a lot of time racing sailboats at Dillon Reservoir, even winning 1st place in the Etchells Rocky Mountain Regional Championships, The J/24 District Championships and the Commodore’s Cup in Santana 20’s. These gifts are proudly displayed on the trophy shelf.”

THIS CHRISTMAS, Cherry Hills Country Club members Brian and Brook Griese will travel with their two children to Grand County’s richly laureled Devil’s Thumb Ranch Resort and Spa. But unlike other holiday travelers heading to the 6,500-acre, year-round haven east of Tabernash, the Grieses won’t need to check in as guests. They’ll be moving in as the owners of the first home built in Devil’s Thumb’s only residential community, The Ranches. For Brian, a former Broncos quarterback, the decision to break ground in the development was an easier call than some of the ones he now makes as an analyst on Monday Night Football. “Our family loves to be outdoors and we felt there was no better place to enjoy all four seasons than in the Fraser Valley,” explains the father of a son and a daughter who’ll respectively turn 12 and 15 next spring.
Their 5,000-square-foot residence perches on a ridge high above the main resort in The Ranches’ far southwestern corner. “Without question the most beautiful part of this property are the views of the Continental Divide to the east and Byers Peak to the southwest,” he says. “We picked our lot because it was situated to catch both those views.” That lot is one of only 24 homesites—ranging from 14 to 35 acres in size and between $750,000 to $1.8 million in price—in The Ranches’ 550-acre development. This low-populationdensity model conforms to the environmentally sustainable vision that Devil’s Thumb Ranch owners Bob and Suzanne Fanch have followed since 2001, when they purchased an erstwhile

Like hatchet throwing, which my wife Jo Anne and I signed up for last August. Ignoring my lame Lizzie Borden jokes, Jo Anne demonstrated her pioneer pedigree by sticking the target more times than her city-slicker spouse. We then hiked the endless matrix of trails crisscrossing the mountainside, imagining how we’d traverse them on cross-country skis or snowshoes when we returned in winter. Logging more than 25,000 steps each day required restorative plunges into the geothermal pool and adjacent hot tub before savoring a stellar meal appropriately served beneath a blanket of a million stars. By day, Devil’s Thumb Ranch guests can easily spot the distant outcropping that gives the resort its name. What they can’t see is The Ranches. The Dog Whisperer INFLUENCERS
Greenwood Village resident MARY DOWNS has a tail-waggingly fun extracurricular: helping rescue labradors in need. By Kathryn O’Shea-Evans THERE’S A REASON dogs are called man’s best friend: they’re loyal, loving and always there to greet you with a smile at the end of a long workday. Unfortunately, sometimes man isn’t dog’s best friend, and for those instances, there’s Colorado’s entirely volunteer-run Safe Harbor Lab Rescue. “Our mission statement says we focus primarily on rescuing dogs from Colorado, but more and more we’re getting dogs from surrounding states like Utah, Wyoming, Kansas, Arkansas and Texas,” says Mary Downs, who volunteers her time with the organization, doing everything from spearheading fundraising efforts (including Colorado Gives Day in December) to acting as secretary of the board. In addition to her work fostering dogs with her husband in their Greenwood Village home. Safe Harbor Lab Rescue saves “about 250 labs a year. The main way that we spend our money is on medica: last year we spent $200,000; we get a lot of dogs that need very serious medical care, and it can cost in the thousands.” Since the organization was founded in 2002, they’ve rescued over 4,000 Labradors; many are flown in from nearby states by Pilots N Paws. All dogs receive veterinary care at VCA Alameda East Veterinary Hospital, then wait for adoption in a volunteer-run foster home. “For income, we rely on donations, fundraisers, grants and finally adoption fees, but those don’t cover the average cost per dog.” Now retired, Downs was a Project Officer managing superfund cleanup contracts at Federal Facilities for the Environmental Protection Agency. She started volunteering
for Safe Harbor Lab Rescue in 2006, and has a special place in her heart for the Labrador breed. And no wonder: bred as fishing dogs in Newfoundland, they’re favorite therapy animals, thanks to their obedient, steadfast and calming vibes. Everyone from thousands of Americans to Presidents George H.W. Bush and Bill Clinton have owned them; and while Queen Elizabeth II famously loves her Corgis, she’s also kept dozens of working Labs at Sandringham House, her 20,000acre estate in Norfolk, England. “I just love their personality,” says Downs of why she loves Labs so much. “They’re characters. Most of them are super sweet. I love the way they look. I just love their disposition.” And unlike some members of the British Royal Family, she’s not after them for their hunting skills. Downs’ two kids are both philanthropists and dog lovers themselves; her daughter has a Safe Harbor rescue, a chocolate Lab named Lulu. “They’re just great companions,” she says. Case in point: the many, many dogs Safe Harbor has helped usher from hard situations into successful, happy lives. Take JJ, a black Lab who came from Amarillo, Texas, before being fostered by Downs and then adopted out. “I’m 99% sure he was a stray; most of our dogs are,” she recalls. “He had severe hip dysplasia, and my husband and I fostered him through two hip surgeries. He would give the cutest little howls of happiness when he’d see me in the morning; I fell in love with him. This awesome couple, both graduate students, came out from California and adopted him. 63

I get pictures now and then of him on the beach.” (Cue Oprah tears.) Another dog, Honey Bee, came to the organization from Grand Junction both diabetic and blind. “She was an old gray muzzled type dog; we took her to the eye doctor and he took cataracts off her and restored her eyes,” Downs says. As if by magic, Honey Bee quickly became more playful. “Her foster [mom] had no idea she could retrieve!” For those that are uninitiated to the Labrador breed, they’re not as easy as a pet goldfish. “I think a lot of people misunderstand the breed because they see pics of Labs just chilling. They absolutely need exercise.” And that can be an extra positive thing for their owners, especially in the midst of an international pandemic. As COVID-19 descended, dogs helped soften the blow of a changed world; adoptions of all kinds of canines soared. “[Dogs will get you] out of the house and get fresh air too,” says Downs, who loves to walk the High Line Canal Trail with her latest Safe Harbor rescue, a yellow Lab named Shelby. “When we lost our last dog this year I told my husband [I wanted another and] he said let’s just wait for a while. I said, ‘I need a wagging tail in the house! You’re gone all day at work; I need to see a tail wagging.’ People want the company; they want the cheerfulness. The dogs don’t really understand there’s a pandemic. They get you out of the house for your walks and they just provide comfort and joy.” Safe Harbor Lab Rescue safeharborlabrescue.org
