“Greek Spinach Pie=Spanakopita”



Ingredients •

1 large onion, chopped

1 bunch green onions, chopped

1 kg (two pounds) spinach leaves, rinsed/washed very carefully and chopped

1 large bunch of dill and half of parsley (I don’t like parsley actually in spinach pie..dill only is better… but most Greeks use it)

1 egg lightly beaten

At least 500gr Feta cheese( the more the better..usually 1 kg)

6 sheets fyllo (phyllo) dough

1 cup of olive oil

No salt at all (feta is salty) and pepper

How to: •

Preheat oven to 200 degrees C. Lightly oil a baking pan.

Heat 3 tablespoons olive oil in a large skillet over medium heat. Saute onion, green onions until soft and lightly browned. Stir in spinach and parsley, and continue to saute until spinach is limp, about 5 minutes. Remove from heat and set aside to cool.

In a medium bowl, mix together eggs and feta. Stir in spinach mixture.

Lay 1 sheet of phyllo dough in prepared baking pan, and brush lightly with olive oil. Lay another sheet of phyllo dough on top, brush with olive oil, and repeat process with two more sheets of phyllo. The sheets will overlap the pan. Spread spinach and cheese mixture into pan and fold overhanging dough over filling. Brush with oil, then layer remaining 2 sheets of phyllo dough, brushing each with oil. Tuck overhanging dough into pan to seal filling. Cut into squares.





Bake in preheated oven for 45 minutes, until golden brown and serve … hot or not I like it both
