AZTI is an expert technology centre in marine and food research, committed to social and economic development of the fisheries, marine and food sector, as well as to the study of the marine environment and natural resources in the context of sustainable development.

Food and health We work to define new components and ingredients that make an impact on health (obesity, cardiovascular diseases and antiinflammatory agents) improving their functionality through new technologies. We design and develop products with health and nutritional properties as well as food adapted for people with sensory disabilities to facilitate consumption.

Pleasure, convenience and sustainability We develop new products aimed at meeting market demands such as convenience, comfort, quality, ethics and environmental awareness, focusing on the consumer and adapting to consumer needs (wellbeing, sports, etc.). We improve ingredient properties through technology applications and processes.

Food Processing and Preservation Technology

We innovate with products which have better sensory properties, without additives, enriched, products for specific population niches (ethnic groups, senior population, organic, infant, food allergies, etc.).

We generate innovation which improves the quality, preservation and useful life of products resulting in improved food safety.

In any event, as we develop products oriented to industrial production we also take into account matters such as sustainability, eco-design and cost reduction (both regarding ingredients and processes).

Our researchers are experts in the use of predictive microbiology models oriented to the useful life of products and validating new food process technology from the quality point of view (physical-chemical characteristics, textures, organoleptic properties), nutritional composition (nutritional and healthy properties) and safety. We focus our knowledge and expertise in improving processes (wastage reduction, costs, etc.) and final product price to be much more attractive for consumers.

Efficient and sustainable production Our innovation guarantees competitiveness and sustainability (economic, environmental and social) for the food sector. We propose the following solutions: reducing process-related costs; optimising the use of raw materials, auxiliary materials, energy and water; reducing wastage, losses, waste and discharges; reducing associated environmental impact; and product recovery.

Assessment of food fractions We strive to transform wasted food fractions into ingredients, additives, raw materials or intermediate goods for human and animal consumption or bio-fuel generation to obtain compounds with higher commercial, economic and environmental value such as products, compounds, substances or molecules from wasted foods fractions such as excess and discarded food, by-products and coproducts. Food quality, safety and identity

Food safety We provide advice for industry or monitoring authorities, before future changes are introduced to applicable standards. We are experts in: research and application of technologies and processes to minimise food hazards (decontamination) and microbiological analysis; identification of commercial life of food products (maximum shelflife in optimal conditions).

Food control Quality markers and sensory analysis technology are used to improve product acceptance on the market.

Food identity We work with methodologies to ensure raw material and ingredient authenticity and origin, compliance with sustainability standards, and verification of processes, applicable labelling regulation: claims of origin, certifications, accreditations and identity stamps. We are specialist in controlling and minimising physical, chemical and biological food hazards; product acceptance on the market; sensory analysis; authenticity and origin of raw materials and ingredients; extended average shelf-life; sensory properties and smart control systems. Trend Identification and Application We observe the market and provide exclusive information on current and future trends through food R&D&I, which is transformed into products and/or innovation services.

Market Research with Consumers We integrate consumers in the initial phases of the development of new concept products. To do so, we have a panel of over 500 people with different profiles and features who enable us to design and carry out tailor-made studies for companies including: qualitative studies (habits, preferences, behaviour, factors impacting sensory perception and intent to purchase); and quantitative studies (sensory analysis for product tasting regarding acceptability, preferences or other parameters).

Collective intelligence Through our field work (direct market research) we identify and validate street trends. Our food watchers have direct access to sale outlets, analyse the environment where food products are consumed, identify consumers and their habits. Furthermore, our geographical research scope is adapted to the company’s needs: European environment, BRIC countries, others. AZTI |

Climatic change We are committed to one of the key future challenges: assessing the impact of climate change on the oceans, coasts and marine resources, to define adaptation strategies for the society, and to establish mitigation measures to reduce emissions We accompany marine renewable energy companies throughout the process of environmental impact studies. We advise public administrations on the preparation of climate change adaptation plans, focused on land planning and ecosystem preservation.

Sustainable fisheries management

“We carry out research work in co-operation with the main European and worldwide fishing research centres to establish the scientific basis for the sustainability of marine ecosystems and fishing resources. Our research work is conducted within the framework of international bodies such as ICCAT, IOTC, ICES/CIEM, NAFO, STEFC, etc., where AZTI researchers are actively involved.” Marina Santurtún. Monitoring and Data Through the Fish Sampling and Information Network we collect data regarding landings, discards and biological characteristics of catches. It is worth highlighting the major significance recently achieved by data related to fleet dynamics (ship location spatial data) which have started to be collected recently. Our experts obtain information from different biologic parameters (population structure, growth, reproduction, natural mortality, etc.); behaviour parameters (distribution and migration) from different commercial species.

Integrated assessment of living resources We create models to enable simulation of different management scenarios and different catching rules, using direct and indirect assessment tools which take into account space-time, species multiplicity and different fleets. We provide advice to public administrations on the performance of campaigns for direct assessment of stock biomass through different methods (ichthyoplanktonbased, acoustic, optical, etc.). We work hand-in-hand with companies in the sector performing joint research cruises.

Ecosystem approach to management We investigate on the impact of natural variability and climate change in the dynamics of fishing resources. We simulate the consequences of exploiting species at a certain level and how this could impact other species which are caught with them. We carry out fleet profitability studies and provide advice for optimal adaptation of fleets to the evolution of regulatory scenarios. AZTI |

Assessment of Ecological and Environmental Status of Marine Environment Our role is to determine ecological and environmental conditions of estuaries and coastal areas. Over 30 years experience in monitoring marine environments (environmental quality monitoring) enable us to provide extensive knowledge for decision making regarding shoreline and estuary waters and sustainable use of resources.

Environmental impact and quality We study the environmental quality evolution of coastal areas and develop new environmental indicators.

Preservation of Marine Ecosystems

We provide advice for the implementation of the Water Framework Directive (WFD), the Marine Strategy Framework Directive (MSFD), land-based discharge regulations, international agreements (e.g. OSPAR Convention) and other directives (e.g. Habitats, Bathing Water, Aquaculture and Shellfish Waters, etc.).

We investigate to preserve marine biodiversity (species, habitats and processes) and to achieve sustainable management of natural resources. We carry out studies for the declaration of marine protected areas and to preserve marine species at risk. We propose management measures and strategies to recover natural spaces.

Human Activities and Marine Spatial Planning We assess anthropogenic pressures and impacts on the natural environment, providing advice to public administrations to establish integrated management plans of coastal activities (such as dredging, aquaculture, discharges into the sea, etc.). AZTI |

Aquaculture and marine technologies

Aquaculture We look for alternatives to meet a growing demand for fish products. To do so, we boost transformation and sustainability of aquaculture through technology solutions in three fields: • Development of “new species” and new aquaculture products. • Design, development and optimisation of production systems, both onshore and offshore. • Environmental management of aquaculture activity.

Sustainable fishing technologies At AZTI we strive to find alternative technologies which allow us to minimise fishing impact on marine environment, improving on board operations, safety and occupational comfort on board. We do this in close co-operation with the fisheries sector through research projects focused on three fields: • Reducing environmental impact of extractive fishing • Optimisation of fishing gears • Energy efficiency in the maritime-fishing domain

Biotechnology Our researchers are committed to one of the major future challenges: finding solutions for the sustainable and productive management of the oceans. To do so, we make use molecular ecology and biotechnology focused on three application areas: • Molecular Ecology Knowledge Base. • Molecular Biology. • Biotechnology.

Operational oceanography Thanks to real-time monitoring and measuring systems of marine processes supplemented with numerical applications, we can forecast sea behaviour. Moreover, we have vast experience in assessing the anthropogenic impact on the marine environment and mitigating the impact of accidental events such as oil spills. We work in two research lines: • Forecast to estimate coastal risks. • Metocean information systems.

Marine transport We apply and develop technologies for maritime and port sectors. Using state-of-the-art monitoring systems, numerical simulation tools and geographical information management, we design solutions for the following lines: • Port environment: We implement environmental monitoring of dredging and waste discharges; port water renewal studies; harbour resonance; contingency plans; and risk assessments tools for accidental spills. • Navigation: We work with maritime safety and energy efficiency tools.

Marine energy We are committed to marine renewable energy as a way to contribute to sustainable economic growth and employment generation. We offer our marine environment knowledge and expertise to support initiatives in this developing sector, focusing on the following actions lines: • Marine Spatial Planning. • Assessment of Energy Resources. • Design Tools for Energy Capturing Structures. • Tools for Marine Park Operation Management for Energy Generation. • Environmental Impact Assessment (EIA) studies. • Environmental Monitoring.

Tourism and Leisure We apply state-of-the-art technologies for coastal management to the field of tourism and leisure: Agreed, integrated and sustainable management of the natural heritage requires improving knowledge of complex processes which regulate it, including interaction between anthropogenic activity and environment conditions. We work in the following three lines: • New forecast systems of storm impact on beaches. • Assessment of coastline tourism resources (user density of beaches, wave quality monitoring for surfing, etc.). • Innovation in the leisure sector.
