By Erin Roediger “Everyone says we are what we eat, so how does what we eat and drink effect our oral health”- Conscious Eater “What one eats is very important to one’s oral health. Lack of proper nutrients can hinder a patient’s immune system and their body’s ability to fight gum infection and neutralize acids. It can also weaken the bone that holds the teeth in place. I recommend staying away from highly acidic processed, refined foods. Especially those that tend to stick to the teeth such as candies and other processed carbohydrates like cereals and crackers, which turn into sugar in the mouth. When it comes to what not to drink, it is the acidity that matter most. Limit drinks such as sodas, energy and sports drinks - including flavored waters. Even beware of

bottled waters and teas that often have acidic additives and flavors. So, if you want a healthy immune system and your teeth to stay in place, eat a variety of REAL whole foods, think fruits, vegetables, legumes, and nuts. Plus, highly nutritious leafy greens, such as lettuce and broccoli, are a better source of calcium than acidic dairy products. As a bonus they often have more protein per calorie. Plain water is the best thing you can drink especially if you can find alkalinized water. As the saying goes, an apple a day keeps the doctor away, but in my line of work, an apple a day keeps the cavity at bay”- Jacqueline Huckabee, DDS.

USA hopes ‘Chrisley Knows Best’ After watching USA Network’s new unscripted series “Chrisley Knows Best,” premiering Tuesday, March 11, fans might think that Atlanta multimillionaire Todd Chrisley is the ultimate helicopter parent to his and wife Julie’s five children – 20-somethings Lindsie and Kyle, teens Chase and Savannah, and little Grayson. Chrisley says, “I did not have my children for the streets to raise. I’m going to raise my children. We’ve never had a nanny. No one’s ever changed their diapers except their mother and myself.” Todd Adds Julie, “Their Chrisley grandparents, that’s the only people they’ve ever been left with.” “That’s right,‘ says Chrisley. ‘That’s the way it is now, and that’s the way it’s going to stay.” Born in South Carolina, Chrisley owns Chrisley Asset Management, which handles foreclosed properties for sale. He also has a media company and is pursuing a longtime interest in fashion with a department store in Atlanta. His life is not without controversy, including an employee’s sexual harassment suit, which was picked up in the media in January after USA announced the show. According to Chrisley, he produced shopping receipts, airline itineraries and company records that refuted the plaintiff ’s account of events. “I can tell you it was dismissed,” he says. “We had no ramifications from it.” But he’s not claiming to be perfect, saying, “I don’t care what people know about me, because if I did it, I own it. It was my choice; it was my decisions.” He adds, “You’re only as sick as your secrets.” Last year, Chrisley lost his father to liver cancer but is thankful that his wife survived a bout with breast cancer. “You truly become acquainted with who you are when the Lord humbles you,” he says, “when he puts you on your knees.” Chrisley also values his children. In the show, he’s seen tossing an Apple laptop into the pool because Chase looked at a forbidden website after being warned. “Is he worth more to me than $2,500 to me?” says Chrisley. “Every day, all day.”

ABOUT THE FILM

‘The Bag Man’

‘Elaine Stritch: Shoot Me’

John Cusack plays a criminal who bides his time at a seedy motel, waiting for his boss (Robert De Niro) after killing several men and making away with a bag whose contents are to remain unknown to all - including himself. (R - 100 minutes)

Filmmaker Chiemi Karasawa showcases uncompromising Tony and Emmy Award-winner Elaine Stritch both on and off stage via rare archival footage and intimate cinema vérité. (NR - 80 minutes)

Stan: Dark, foreboding, and certainly disconcerting, co-writer/director David Grovic effectively uses sight (and often what one can’t quite see in the darkness of a scene) and sound (as gunshots ring out in the quiet of night) as the story of ‘The Bag Man’ unfolds. John Cusack excels in the title role as he sheds his ‘nice guy everyman persona’ as he delivers a shadowy mysterious character, with us wondering all the while, what’s in the bag that everyone wants.

Joseph: “Elaine Stritch: Shoot Me” is a rare documentary about a single celebrity that does not require viewers to like - or even be familiar with - said celebrity in order to enjoy the experience. That is because rather than simply celebrating who Tony and Emmy Award-winner Elaine Stritch is on stage, filmmaker Chiemi Karasawa reveals who she is off stage as well. And, frankly, Stritch may be even more abrasive off stage as she is on stage. But that only makes her more real and therefore also relatable.

Joseph: If it were not for Brazilian actress Rebecca Da Costa, “The Bag Man” may have actually been a halfway decent thriller. After all, stars John Cusack and Robert De Niro turn in powerfully peculiar performances and the plot is compelling enough to at the very least keep viewers interested if only to find out what’s in the bag. However, Brazilian actress Rebecca Da Costa uncanny inability to act completely demolishes any potential that the motion picture possesses.

Before shooting ‘The Dark Knight’ (2008) Director Christopher Nolan put cast & crew under a movie boot camp to watch eight films whose tone he wanted to emulate:King Kong, Citizen Kane, Cat People, Stalag 17, Black Sunday, A Clockwork Orange, Heat and Batman Begins.

The following quotes were pulled from interviews conducted by AZ Weekly Entertainment Magazine’s film columnists with talent speaking on behalf of movies recently released in theaters.

Writer/Director David Grovic (‘The Bag Man’) By Joseph J. Airdo

“I was so lucky because really everybody that we had was fantastic in front of the camera and also behind-the-scenes. They were all just a lot of fun, very involved and caring in what was going on. I think that the key to getting [Robert De Niro] and [John Cusack] was really that these characters had something different. John is the hero but his character has imperfections and flaws as well as a lot of upsides - like most of us. We have different characteristics and I think that John very much took to the core ingredients of his character.

“Where [Robert] is concerned, obviously everybody knows how many fantastic crime boss type figures he has played over the years. But, again, he really loved his dialogue and it gave him the chance to really sort of play against a typical stereotype. I think that it is very interesting because a lot of actors work from the inside out but [Robert’s] method is the exact opposite in that he concentrates on getting his look exactly the way he wants it - from his hair ... to even as far as his jewelry.

“It’s a great ride and I think that people will have a really good time. I hope that they like the humor. I think that [humor] is very important. We have a lot of tension and I hope that that fact that we have humor interwoven throughout the movie helps to release that tension and then lets it build up again. I think - and I really hope - that

people will walk away and say that everybody - but especially John Cusack, Robert De Niro and Rebecca De Costa - have given just wonderful performances.” - David Grovic

Behind-the-Scenes ‘Non-Stop’ By Stan Robinson In the action/thriller ‘Non-Stop’ Liam Neeson portrays an air marshal who springs into action during a transatlantic flight after receiving a series of text messages that put his fellow passengers at risk unless the airline transfers $150 million into an offshore account. (PG13 – 106 minutes) At 61 years old, actor Liam Neeson has glided into action-actor star status since the highly successful ‘Taken’ back in 2008, proving once again that there is life after 60 for all of us ‘boomers’ out there!

Goodguys 5th Spring Nationals set to Kickoff off the 2014 Goodguys season, March 7-9 at WestWorld of Scottsdale The Goodguys Rod & Custom Association is poised to kick off its 2014 event season March 7-9 in Scottsdale, Arizona setting the stage for another year of colorful automotive festivals geared towards classic American automobile enthusiasts. This event has become one of the “must attend” events on the Goodguys schedule and brings hot rodders from all over the US to the Valley of the Sun. Currently, the event showcases preregistered participants from Alberta, Canada, Arizona, British Columbia, California, Colorado, Iowa, Idaho, Illinois, Kansas, Manitoba, Canada, Michigan, Minnesota, Montana, Nebraska, New Hampshire, New Mexico, Nevada, Oklahoma, Ontario, Canada, Oregon, Texas, Virginia, Washing and Wisconsin. Northern California car nut Gary Meadors founded Goodguys back in the spring of ‘83 as a way to get car people and hot rod aficionados like him together to show off their cars, trade ideas, listen to some live music and have a little fun. Falling back on

though in spirit – the Goodguys core message is unchanged after 30 years – having fun with cars. Literally thousands of 1972 & earlier show cars glistening with candy colors will sprawl through the grass polo field of Westworld, each car owner taking extreme pride in polishing and showing their entry.

his early years as strictly a street rod show promoter (street rods are widely considered 1949 & earlier American cars) Meadors had the idea to welcome all genres of American car enthusiasts with a lean towards V8 powered, low-to-the-ground eye catchers like hot rods from the 30s & 40s, lead sled customs from the 50s, Muscle

Cars from the 70s as well as the new breed of American Muscle like 5.0 GT Mustangs, Z28 Camaros and more. At the season opening 5th Spring Nationals March 7-9 at WestWorld of Scottsdale, fans will get a close up glimpse of just how eclectic the modern day hot rodding scene is

The shrill sound of rubber meeting pavement will fill the air with excitement as competitors in the Goodguys AutoCross, a hi-adrenaline electronically timed vehicle speed & agility course, battle it out in a weekend long fastest-car-wins contest of speed & skill. Again this year, the Goodguys event season will showcase the AutoCross Shootout Finals qualifying at each event. The Final Shootout will take place at the Scottsdale show in November. Then there’s the midway featuring multi-million dollar custom big rig tractor trailers (a show in and of themselves) offering hi-performance parts and accessories to budding hot rodders and do-it-yourselfers. Having the chance to interact directly with manufacturers has long been an appealing aspect of Goodguys events. Throw in a giant used car parts swap meet and Auto Trader Classics car corral (turn-key classic cars for sale) and it’s literally auto-utopia for any red blooded American with motor oil in their veins. Goodguys takes their car-lovin’ customers so serious there’s even a model car program sponsored by Revell that sends the little one’s home with their very own model kit forging big dreams to one day come back to the show with a life sized version. Rounding it all out is the All American Sunday on March 9th where owners of American powered show cars and trucks of all years, makes and models can come inside the event to show off next to the 1972 and earlier iron. It’s also on Sunday’s that Goodguys displays all top award winning cars together as a group in the winner’s circle spawning endless clicks of amateur and season shutterbugs. And Continued on page 21

My midday meal made the list of a few new favorites including the Wood Grilled Artichoke Hearts starter and Heirloom Quinoa Tacos. I figure ordering the Warm Salmon salad made with grilled mushroom, roasted brussels, white bean, cauliflower & smoked onion vinaigrette, justified my choice of dessert, a decadent serving of chocolate cake. A bar list including signature cocktails like the Gin & Tonic No.8 made with grapefruit bitters, make my favorite pass time day-drinking, a dream. There is only one reason I can think of to venture onto South Phoenix’s Van Buren Street: food. The unscrupulous strip of blacktop known for its nefarious activity may be a vice’s haven, but it would take much more than a bad reputation to keep me away from Honey Bears Barbeque, just east of 50th St. on Van Buren. And, now that I think about it, it just wouldn’t be the same if the smoke pits were next to a Louis Vuitton store at the Biltmore. Sitting next to a dilapidated tire store and a saloon, yes, saloon, is the smoked bbq haven that makes me feel like I’m living in Texas or Oklahoma for the afternoon. Only an acceptable feeling, as I’m fully aware that after the flavors of the smoked meat leave my palate, I awaken in the Grand Canyon state. As I arrived at the barbeque delicatessen, the first thing I noticed was the lack of parking, anywhere. There wasn’t a single spot available for my car so I pulled up on the sidewalk and made it work. Saddened by the amount of cars in the lot, I figured the inside of the restaurant would be filled to the brim, therefore saddening me further by the time it would take for me to receive my food, and subsequently consume it. To my pleasant surprise, the cars outside were lying to me,

The bare-bones inside, as stated, is nothing of note, but what is of note is the menu. Now, you could order a sandwich and side, or you could order a whole or half chicken, but why would you? What you need to be looking at is the meat sold by the pound or half-pound. You have the option of chicken, pork, beef, or hot links, but why settle for only one? Order two or three and use a refrigerator to save the left overs—I mean, it is the twenty first century. The meat is all pulled from the bone and dry i.e. no bbq sauce on it, perfect for the traditional lover of smoked meats. But don’t fear, they supply more than enough of their tangy sauce, with a bit of a kick, in the bag with you to drizzle on your sandwich when you get home. Which reminds me, order some buns to take home if you want a sandwich (extra charge), or you’ll be stopping at another story when you get yelled at when you show up at home with a tub of meat and nothing more.

The meats are more than enough to keep you happy for an evening, and then breakfast and lunch the next day but, if for some reason, you still feel compelled to consume side dishes with your barbeque, you’re in luck. On the list are: Cole Slaw, Potato Salad, Collard Greens (my favorite!), Mac and Cheese, and Corn-on-the-cob. Also, available are desserts, but why not stop when things are good?

When you’re in the mood for authentic barbequed meets and some unbelievable sauce to accompany it, head on down to one of the three valley Honey Bears Barbeque locations and enjoy. You can check out Honey Bears full menu and location addresses at www.honeybearsbbq.com. And always, let me know where you’re eating via twitter @Tinodefranco.

F5VE FINE FACTS ON WINE 1. Countries that consume the most wine per year: Italy – 54 liters France – 47 liters Switzerland – 42 liters 2. Top wine-producing states in the US: California – 3.4 million tons of grapes Washington – 145,000 tons New York – 45,000 tons 3. It is a common misconception that all wines improve with age.

Zagat’s 100 Best Italian Restaurants

In fact, more than 90 percent of all wines should be consumed within one year. Generally, the three major collectibles that should age more than 10 years are: Châteaux of Bordeaux, California Cabernet Sauvignon and port wine.

4. Wine is good for your health: With 100 calories in a 5-oz glass, wine is a fat-free and cholesterolfree beverage that contains all 13 minerals necessary for human life. Perhaps this is why over half the hospitals in the metropolitan areas of the United States offer alcoholic beverages to their patients. Or why in the United States Pharmacopeia, alcohol is listed as a medicine. 5. The ancient philosophers were wine fans. Plato believed that when a man reaches 40, he may drink as much as he likes, to combat the “crabbedness of old age.” Hippocrates, the father of medicine, used wine in almost all of his remedies, from cooling fevers to its use as an antiseptic.

A NEW ERA OF DISTINCTION FOR SUN DEVIL BASEBALL When a program has produced five national championships, 18 50-win seasons, 102 Major League Baseball players and eight College Baseball Hall of Famers, the expectations are always high and the pressure is always on. But the spotlight is even hotter this year, which marks the 40th and final season the Sun Devil Baseball program will play at historic Packard Stadium, home to more than 1,400 games, nearly 100 All-Americans, 14 conference titles, two national championships and 350 Major League Draft picks. “I’ve had a wonderful life, and a big part of that took place in Packard Stadium, so it will be very sad to leave,” Pat Brock, wife of the late legendary Sun Devil Baseball head coach Jim Brock, says. “But I do believe they are upgrading and going to a better facility. And it’s always about the team and the fans, and that can be moved anywhere.”

newcomers will provide some of the best hitting and defense our fans have seen in a long time.” A trio of sophomore pitchers make up the team’s weekend rotation, including right-hander Ryan Burr, who set the school’s freshman single-season saves record last year, and left-hander Ryan Kellogg, who threw the program’s ninth no-hitter in March 2013 and became the first freshman in school history to begin his career 11-0. At the plate, All-Pac-12 redshirt junior outfielder Trever Allen headlines a core of returning Sun Devils that as a unit led the Pac-12 in six major statistical categories, including home runs, slugging percentage and runs scored. Joining Allen includes junior left fielder Jake Peevyhouse and junior shortstop

The 2014 edition of the Sun Devils, coming off their 30th NCAA postseason appearance and 51stconsecutive 30-win season, return three All-Americans and 22 letterwinners, and are ready to accept the challenge of closing out the final season at Packard Stadium on a high note. “This team is full of highcharacter young men dedicated to representing our program and university on the field, in the classroom and around the community,” head baseball coach Tim Esmay says. “We will have one of the deepest pitching staffs in the nation, and a great mix of veterans and

Devils to bat over .300 in their first year at ASU. The season-long “Tip Your Cap To Packard” celebration began on opening weekend and will continue throughout the year as every era of Sun Devil baseball will be honored, long-time season ticket holders will be recognized, and former players and moments will be remembered. “Packard Stadium is one of the most iconic and storied facilities in all of college baseball,” coach Esmay says. “We are looking forward to recognizing all of the great Sun Devils who contributed to its incredible legacy, as well thanking our loyal fans, who have supported us for more than 50 seasons.”

more than 30 former players and staff members from 2000-09 were recognized on Feb. 15, and athletics Director Ray Anderson presented Murphy with a commemorative Packard Stadium home plate prior to the game. The celebration continued with the 90s on March 7-9 against Tennessee as former Sun Devil center fielder and 1991 Golden Spikes Award winner Mike Kelly had his No. 24 jersey honored on March 8. The Arizona Republic and azcentral.com have partnered with Sun Devil Baseball to let the fans decide their top players from the Packard Era. Voting will run from Feb. 14 through the end of April on sundevils.azcentral.com and ballots will also be available at Packard on gamedays. The “All-Packard Stadium Team” will be celebrated on May 9 and a trading card set of the players selected to the All-Packard Team will be given to fans as they enter the gates. ASU will move into its new home, Phoenix Municipal Stadium, prior to the 2015 season. Muni, which has been the spring training home of the Oakland Athletics since 1982, has a seating capacity of nearly 8,000 and is located in Papago Park – a little more than 2 miles from ASU’s Tempe campus and .5 miles from the nearest Valley Metro Light Rail stop. “The new stadium is exciting for players, coaches, alumni and fans alike,” Tim Esmay says. “A long list of great players, a winning tradition and a rich history made Arizona State the preeminent program in the nation. Playing in Phoenix Muni will now steer Sun Devil baseball into a new era of distinction.”

Summer Training Camps and Exercise

Here are a few pointers to help your children achieve their athletic dreams By Jordan Fliegel, CoachUp.com Staying active during summer vacation is one of the most important determining factors in whether your child establishes healthy living habits and develops general athleticism or not. Summertime presents a prime opportunity for young athletes to catch up to their teammates and even surpass competitors in fitness, strength and skill. Parents have a number of options for helping their athletes make the most of summer training, and a popular choice is enlisting their children in sports camps. In fact, according to a recent survey by American Express, parents will spend more than $600 per child on summer activities like sports teams, pool memberships and camps. Camps offer several benefits since they provide consistent activity and sportspecific guidance. For young athletes, camps are not only an introduction to group training but are also a great way to get socially acclimated in organized sports. Unfortunately, camps often last just a few days and cannot replace

three months of consistent activity. Parents can help their athletes by making exercise a routine throughout the summer. Timing an athlete, counting reps, completing drills and taking them on bike rides, trail runs or to a local swimming pool are good ways to get children active. An active summer also means that when preseason arrives, the transition to regular practice will not be a shock to a child’s body. Athletes who stay active will begin their season in shape, which will lead to more confidence in play and reduced anxiety. Coaches will also take note — just ask former NFL player and CoachUp coach Izaan Cross. “For young players, especially, conditioning always serves as a giveaway for the type of work that a player has put in during the offseason,” Cross said. “You can also tell if a player has stayed active or partaken in summer training camp by questioning their knowledge of the game. If they can answer questions that they would not have been able to answer the prior season, or they do not make the same mistakes that they made the prior season, they most likely continued

their growth as an athlete during the offseason.” As for the perfect summer training blend, aim to be active every day with a few days off. Cross said that for a child who is 5-10 years old an hour of exercise a few days a week is sufficient. “That can be at a camp or clinic, private coaching, cross training with friends, training individually or with a parent, general exercising,” Cross clarified. He also added, “film study, speed training, flexibility work, and weight room availability become vital for an athlete especially once you get in the upper teenage years.” Potential star athletes often show high general athletic ability before learning the nuances of a sport; improving general fitness will make your child a contender for making top teams and starting positions down the road. Regardless of a child’s future career as an athlete, adopting a routine of exercise will help your child establish lifelong healthy habits.

Pros of camps: · · ·

·

They last just a few days or weeks. Children can practice with nearby athletes he/she might see at practice or in competition. Children will experience different coaching styles and training, especially in out-ofstate camps Children will meet athletes from other areas, improving their quality of training and potentially creating new friendships.

Cons of camps · · · ·

·

Each child is one of many and may not get individual attention. Children could learn bad habits from other athletes. If a child gets sick or injured at the beginning of camp, the value of the camp diminishes. Routines and regiments are tailored for the group; your child’s specific needs may be overlooked or not addressed. Camps can be expensive.

No one would deny Kevin Durant is having an MVP-caliber season. That he’s the league’s top scorer on the team with the NBA’s best record only serves to bolster the argument that he, not LeBron James, should be honored as its best player at season’s end. So it struck some as surprising when he recently chose the nickname “The Servant” for himself. But if you knew anything about the seventh-year Oklahoma City Thunder forward’s personality, it really isn’t. Understand that Durant is a humble man and devout Christian who has never allowed success to go to his head. Despite his gaudy stats (31.5 points, 7.8 rebounds, 5.5 assists per game as of mid-February), he’s a player who always put team goals ahead of his own. So when earlier this season the 6-foot-9-inch, 240-pound Durant was dubbed “The Slim Reaper,” he cringed. Despite his spirit-crushing dunks and intimidating play on the court, Durant never saw himself as a bringer of death, just a guy trying to help his team win games. So he proposed “The Servant,” reasoning that he’s someone who likes “to serve everybody – my teammates, ushers at the game, the fans.” He also wondered whether it was a bit narcissistic to make up his own nickname. That certainly is more characteristic of this modest man, who could very well find himself with yet another moniker, “NBA champion,” come June.

The High-End Beer Division of Crescent Crown”

SERVING BEER Proper Glassware – this is important but not critical. The use of glassware appropriate to the style of beer has to do with how the glass treats the beer, how it releases the aromatics and ultimately how the drinker perceives the beer. Try it yourself. Pour yourself a higher ABV beer like a Belgian Tripel in both a standard pint glass and a tulip glass (you can use a white wine glass if you don’t have a tulip). The pint glass will lose flavor quicker, while the tulip will allow the aromatics to concentrate and hit your nose just as you take a sip. Since aroma is so important to taste, the flavor will be enhanced and you will truly taste the beer. There are glasses for wheat beers, pilsners, nitrogen beers and more. You can have your higher gravity beers in tulips or goblets or snifters. It is not practical for most bars to carry a large assortment of beer glasses, but if they at least have one style like a tulip or snifter for more complex beer then they are on the right track. Serving Temperature – This is difficult to control at most bars, especially for draught beer, as it requires multiple coolers set at multiple temperatures. Most bars have one cooler for kegs and one for bottles, both set around 38 degrees. In an ideal world only the lightest flavored beers, such as American Premium Lagers and Lights would be served below 40 degrees. Craft and import pilsners, hefeweizens, and most other lagers and wheats should be served in the 40-45 degree range. The bulk of your American craft styles…Ambers, Pales, IPAs, Stouts,

etc…are best served in the 45-50 degree range. As you climb the ladder in ABV to Sour Ales, many Belgian Ales, English Bitters and Bock Beers so to should the temperature rise. Now we are in the cellar temperature area – 50-55 degrees is perfect for these beers. Finally, big Belgians, Old Ales, Barleywines and Imperial Stouts are best served in the 55-60 range. The reason for this is twofold. First, cold hides flavors and bigger, richer beers deserve to be presented at a temperature which allows the best possible taste experience. Secondly, at colder temperatures the dominant flavor tends to be alcohol which is not necessarily the way you want to enjoy your La Trappe Quad. So the rule of thumb is the higher the alcohol, the warmer you should serve it. It is not uncommon to see beer geeks sitting around cupping their beer with their hands in an effort to get it to warm up to an enjoyable temperature. Again, try it yourself. Pour a high ABV beer ice cold and sip it, let it sit for 10 minutes and try it again. Continue to sample it as it warms up. You will be amazed at the flavor differences. Clean Glassware – there is a certain method to cleaning glassware that should be followed. The best is a dedicated three compartment sink with special, sudsless soap, a cool rinse and sanitizer being used. Each sink should have brushes and glasses should be thoroughly scrubbed and allowed to air dry upside down. If a dishwasher is used, it should also be dedicated as other foodstuffs that may linger, especially dairy and fatty foods, can cause pour head retention and subsequent loss of carbonation. There are three very simple ways to tell if your beer was served in a beer clean glass. The easiest way is head retention, does the head stay appropriate for the style as you drink

it? If not, the glass was not beer clean. Next is Belgian Lacing. In a beer clean glass, each sip should leave a ring of foam around the glass serving as a sort of road map of how you drank that beer. Finally, there should be no bubbles emanating from the side or bottom of the glass. This is a sign that some debris is stuck on the glass and the beer is reacting to it by releasing carbonation at that point. The one exception to this are certain glassed by breweries such as New Belgium that are designed with a nucleation point at the bottom. This is to allow the carbonation to release slowly thereby enhancing the aroma release and improving the drinking experience. Glass Temperature – This is a hotly debated topic which we will resolve right here and now. Glassware should never, never, ever be frozen. This is true for every beer including American Light Lagers. There are multiple reasons for this. One reason is that frozen glassware destroys the carbonation level of the beer. Since

carbonation is important to mouthfeel and mouthfeel is a major component of enjoyment of the beer, it is not a good thing to lose carbonation. The beer becomes flat and watery very quickly. Frozen glassware also causes the beer to foam excessively. This is due to the glass being colder than the beer and contributes to the rapid loss of carbonation. As noted above, beer served too cold loses flavor. Frozen glassware contributes to that flavor loss. Ice chunks can break off of a frozen glass diluting the beer and interfering with the experience. Finally, Continued On Page 62... and this is the most important, think about what is actually freezing to the glassware. As noted above, the last thing that touches the glass during the cleaning process is sanitizer. When a beer glass is frozen that sanitizer is frozen to the sides of the glass. In essence, when you are drinking out of a frozen glass, you are drinking sanitizer. This is another easy one to try at home. Once you do, you will

I’ve seen a lot of buzz on the internet lately about bars that don’t serve beer properly. There are really only a few cardinal sins you can make when pouring beer, but in the interest of filling a column, let’s talk about the whole process.

...Continued from page 60 always make sure that a bar is serving you a beer in anything other than a frozen glass. If all they have are frozen glasses, ask them to give it a quick rinse with warm water to thaw it and clean out the sanitizer residue. Pouring a Beer – How a beer is poured makes all the difference in the world. Let’s start with draught beer. The server should take a clean, room temperature glass and ideally give it a little cold water spritz from a glass rinser if they have one. This does several things – it cleans out any sanitizer residue, removes any dust that may have accumulated while the glass sat, and it cools the glass down slightly to make for a better pour.To dispense the beer, hold the glass at a 45-degree angle about one inch below the beer faucet. Place a hand low on the tap, near the faucet, and quickly snap the handle towards you with one motion, until it stops and the faucet is open and pouring beer. This is important as opening the tap slowly will cause the beer to foam. As the glass fills, straighten the glass to an upright position, and close the faucet by snapping it back to the closed position. A properly poured beer will

always have at least an inch of foam on the top, depending on the style. This foam is important to the enjoyment of the beer as it allows the aromatics to release slowly and keeps the beer from going flat. As Americans, we have been trained to expect beer to come right to the top of the glass. This is not a good thing so don’t worry about sacrificing a little bit of beer to improve your enjoyment. There is a picture somewhere on one of these pages of what a perfect pour should look like. Another thing to beware of is bartenders who stick the tap faucet into the beer. This can lead to metallic taste at best. At worst, it allows bacteria to grow on the faucet as the old beer sits. This can get transferred to the next beer and create some truly horrible flavors. There is so much to know about the proper method of serving beer and this just scratches the surface. It does give you some ideas of what you are looking for in a good beer bar. Feel free to cut this out and keep it with you as a check list to see if your bar is handling your beer properly. Until next time, Cheers.

LIVE! SECTION LIQUID SOL MUSIC FESTIVAL / A CHAT WITH BUCKCHERRY Liquid Sol Music Festival is an all-ages event featuring three stages of live music performances by local and national artists including California natives, Buckcherry. The festival will feature a beer pavilion, live charity auction, over 25 vendors, fundraising activities, vehicle extrication demo and kids corner. Liquid Sol Entertainment Group has partnered with The 100 Club of Arizona and Glendale Firefighters Charities and their local beneficiaries, including Hope for Hunger, in memory of the Yarnell Hill Fire Tragedy in June 2013.

What is the most meaningful song off the album and what is the meaning behind it?

We had the opportunity to interview Keith Nelson from Buckcherry before they perform live at the Liquid Sol Music Festival. You won’t want to miss their performance on March 15!

What can we expect from Buckcherry in the future?

What band/musician influenced you the most when you were first starting out? Great live bands with long careers like ACDC, Aerosmith and The Rolling Stones. What advice can you give an aspiring musician/band? Always stick to your guns, go with your gut. It’s cliché but it’s true. Why did you use the seven deadly sins as inspiration for your latest album,“Confessions?” It was a concept Josh and myself had been discussing for a few years. We both were keenly aware of how those “sins” were present in our daily lives. We all have experience with them and we thought most people could relate in their own unique way.

68

I would say “Sloth” is probably that song. It’s not a fictitious tale. Josh directly addresses the loss of someone very important to him. Any band goals that you want to accomplish for the future? Keep making records people want to hear.

We just finished an EP we plan to put out this spring, it was a fun, quick record. We will be all over the world this summer supporting “Confessions” and the new EP. Come out to see Buckcherry Saturday, March 15 at Liquid Sol Music Festival located at Sportsman’s Park, outside the Phoenix Stadium. The lineup will also include: Train, The All-American Rejects, Authority Zero, Blind Melon, BoDeans, Cracker, Ed Kowalczyk, Everclear, Fuel, Gin Blossoms, Lovehammers, Royal Bliss, The White Buffalo, Tonic, Vertical Horizon, 28 North, 7Horse and Kelley James. General admission tickets are available at $89 and VIP packages are available starting at $189. Children 10 and under are free in GA with the purchase of an adult ticket.
