It was the fall of 1988…the year of my re-birth…the year I finally decided to accept complete responsibility for my life. I remember the day as if it were yesterday. I was faced with a major decision, a gut-wrenching decision…a life-changing decision. It involved my car. It wasn’t just any car, it was a 1973 Corvette Stingray. The first car I had ever purchased brand new. Even though, at the time, it was over 15 years old, it was still like brand new. It was my pride and joy. I didn’t own a home…I owned my Corvette. It was the only thing of real value I owned and I had taken really good care of it over the years. But now, my life was taking some drastic turns and I facing life as I had never faced it before. My left hip had been replaced in August of 1987 and it had taken every cent I had and all I could borrow to pay for the surgery since I had no insurance. I was facing severe financial pressure like nothing I’d ever faced before and my small martial arts center in downtown Phoenix had failed (again) and I was broke (again).Nonetheless, I was still responsible for thousands of dollars due to vendors and other creditors and fully intended to fulfill this responsibility. I had only one choice, sell my beloved Corvette, pay off my debts and attempt to start over again, hopefully smarter this time. So,

I sacrificed my Corvette Stingray…my pride and joy…for a chance to save my career and put myself on the road to success, happiness and fulfillment. But how would I get around now without a car? Well… I had to ride my bike to and from the new studio I opened with the money I received from selling my Corvette. I rode that bike to and from the studio for almost 2 years, summer and winter. That decision became the defining moment in my life. I can trace every success I’ve had since that time back to that decision. It finally convinced me that I was willing and capable of sacrificing for my future. I was convinced that I was willing to do without…that I was willing to put off immediate gratification for the possibility of future success and happiness. So many of us want things…but very few have asked that critical question of ourselves; “what am I willing to give up in order to get what I want?” I mean…are we willing to do without… to suffer short-term pain for the prospect of long-term gain? I have encountered many people with tremendous potential performing at a level far below their possibilities simply because they’re not willing to make the sacrifices that will put them into a completely different orbit of achievement. Very little consistent success is possible without having sacrificed early and often. By the way…one of the biggest obstacles to success is our unwillingness to sacrifice our attachment to negative people and negative situations… especially negative people. Little Things Can Build a Relationship – Or End One Last year I ended a two year relationship with my live-in boyfriend on Thanksgiving night. The reason? A honey baked ham. The shortened story is I planned a huge Thanksgiving dinner for all of our friends to come over. I cleaned up my home and prepared everything for the meal all day long. My boyfriend at the time had requested that a honey baked ham be prepared on top of the turkey. I said it would be fine just so long as he was responsible for it and the ham did not affect my turkey preparations or dinner time. I gave him an opening of when the oven would be available and went on my way. Unfortunately, he did not listen to me and instead put the ham into the oven next to my turkey so they would bake side by side. My fellow chefs reading this will know right away – this affected the turkey. Now the oven had to work twice as hard and long to cook both the items. My dinner guests were standing around waiting for food and I was a nervous wreck while I cooked and entertained. At the end of the night, I was cleaning up the dishes myself and my boyfriend had fallen asleep on the couch without a care in the world. I kicked him out that night. Of course, there’s always more to the story. Obviously the relationship was on the rocks before hand – but in the end it was a honey baked ham that finally showed me, this person doesn’t care about me the same amount I care about him. This realization was so upsetting and strong that he had to be out of my home that night! The fact is when you choose a partner, really wonderful highs and awful lows will occur from time to time. That’s simply life. I argue that it’s the person who can get through the challenge of average, every-day life that is a real partner. It’s the little things that matter and add up into a relationship.

you ask a man, he will say that if his girlfriend let him watch sports all day, alone or with friends, and she didn’t complain or nag him at all – she would be the best catch out there! Simply because she’s letting him relax and understands this time is important to him, even if she doesn’t get it completely! On the flip side, a woman usually feels if her man surprises her by turning the sports off one day and just spends the evening taking her out or maybe just spending time watching TV on the couch with her – it would mean the world to her! This is because the boyfriend is showing: yes these sports are important to me, but you’re always more important. It sounds silly, but sometimes it’s just our daily lives of going to work and maintaining our homes that can be the hardest thing to endure. We all look forward to weekends and trips of course, but sometimes that small gesture to show: “I thought about you today and I thought you would appreciate if I cooked dinner AND did the dishes tonight!” Sure, in hindsight a honey baked ham isn’t that big of deal and the dinner wasn’t a complete disaster. At the time though, I thought it was blatantly obvious that my boyfriend didn’t care because he didn’t listen to how important I felt the dinner was and that I wanted things on schedule. He wanted his ham! Who knows, maybe now he feels like he deserves to be with someone who doesn’t make a big deal about dinners and will make sure that when he wants ham, he gets it! In this case obviously we were wrong for each other. Sometimes you do need to ask yourself, am I thinking about my partner? Am I willing to do these small things to show I care? If not – it’s possible you’re with the wrong person. If you are – then maybe tonight you should surprise your significant other with something small. I promise it won’t go unnoticed!

‘Grabbers’ Richard Coyle and Ruth Bradley play a pair of police officers in an idyllic fishing village off the coast of Ireland who discovers that the only way to fend off the bloodsucking aliens that have invaded their island is to get drunk - very, very drunk. (NR - 94 minutes) Joseph: Anyone who grew up on the B-movie charm of “Tremors” will see the initial appeal in “Grabbers.” Unfortunately, the film fails to deliver schlocky entertainment and comes across as slightly too serious.

Nils d’Aulaire plays a decorated soldier from the planet Hondo who is sent to Earth to wipe out its current inhabitants with a flesh-eating virus. However, shortly after landing, he is enchanted by the mystical human invention known as “music,” abandons his mission to eradicate the human race and launches a one-alien bluegrass act instead. (NR - 85 minutes) Stan:Accentuating the theme of music as the ‘universal language’ that literally saves planet Earth, although highly admirable at the onset, boarder’s on being redundant as the freshness of the concept play’s out. Joseph: Although “The History of Future Folk’s” endearment remains potent from beginning to end, the novelty of its plot wears off rather quickly and what was once charming grows slightly annoying.

There are a total of 15 minutes of dinosaurs throughout the movie ‘Jurassic Park’ (1993).

‘The Hunt’ Mads Mikkelsen plays a former school teacher who has been forced to start over having overcome a tough divorce and the loss of his job. Just as things are starting to go his way, his life is shattered when an untruthful remark throws his small community into a collective state of hysteria. (R - 115 minutes) Randy: Mads Mikkelsen is one of my favorite actors and he is absolutely fantastic here. Hollywood rarely delivers this much emotion. So much so, you may feel physically exhausted by the time the end credits roll. Mikkelsen’s character may not always say or do what you want him to, but that is what partially makes this a phenomenal piece of cinema. You will feel anger, you will feel pity and you will be put on an emotional roller coaster. Joseph: Destined to provoke compelling conversations born from elevated emotions, “The Hunt” demonstrates that we are all just one little white lie away from eternal and universal condemnation.

(NR - 79 minutes) Stan: Presenting the stark reality of the impact and privacy issues of the common usage of Facebook, Google, my cell phone among a host of others, I’ll never use or think of any of them in the same way ever again… Joseph: The information in “Terms & Conditions May Apply” could have been presented with a bit more pizazz, but there is no denying that the new documentary is a dynamic and eye-opening experience.


The film focuses on some universal human desires, such as the importance of connecting with like-minded friends and the ability to create new memories as adults reminiscent of the carefree days of our adolescence. Highlights Springfield’s unique connection

“They are extremely charming onstage and I thought, ‘We have to make a movie about these guys!’ One of them is an actor on Broadway here in New York but the other is actually a graphic designer and a creative director at an ad agency so he took a big leap of faith and let us make a movie about him. And it turned out great! “The challenge was to make a film that could be enjoyed by all audiences of all ages. It has got a good heart and I think that that is a kind of filmmaking that is close to my own heart.

Nowadays, everything is about the niche audience. But we set out to make a film that was endearing and had the kind of story that could relate to a variety of different people.

In 1997, she won the Emmy and the prestigious Peabody Award for co-writing the “coming out” episode of Ellen. In 2001 she co-created the ABC comedy, According to Jim which ran for eight seasons. Tracy has been a songwriter throughout her TV career and in 2007

Poppy Montgomery is grateful that enough people didn’t forget her latest series. When CBS’ 2011-12 schedule was announced, one of the big surprises was that “Unforgettable” wasn’t on it. In its freshman season, the mystery series about a New York police detective with heightened recall averaged more than 12 million viewers per week ... an audience most shows don’t come close to drawing these days. Two years later, though, “Unforgettable” lives again: It returns to CBS with new episodes Sunday, July 28. Soon after the CBS cancellation. Lifetime and TNT were mentioned as networks “Unforgettable” might be shopped to. In the end, though, CBS made the very rare decision to retract the pink slip and continue the show. “Nothing surprises me anymore,” star Poppy Montgomery says with a laugh about resuming the central role of Carrie Wells. “Television has become extraordinarily competitive, so when shows get canceled, I almost understand. There’s just so much out there to choose from. “I trusted what CBS was doing, both when they decided not to pick up the show and then when they decided to bring it back. I’m just along for the ride. And I had a baby in between, so it worked out great for me!” With that said, Montgomery adds she’s pleased “to be back with this revamp. The great thing about doing a summer show is that you get to have more fun. We were a little heavier in tone in Season 1, and we’re kind of brightening things up. I actually get to show my teeth and smile every now and then! So think twice before tossing one of these items. If you’ve been handling it correctly, chances are it’s just fine. 1. HONEY Pure honey is as durable as it is delicious; it keeps safe indefinitely. Honey may change color or crystallize over time, but that won’t make it unsafe. Keep it fresh: Store in a cool area and keep tightly closed. Revive crystallized honey by placing the opened jar in warm water and stirring until dissolved. 2. RICE White, wild, arborio, jasmine and basmati rice all have an indefinite shelf life, when kept free from contaminants. The exception: brown rice. Thanks to its higher oil content, it won’t keep nearly as long. Keep it fresh: Store in a cool, dry area. By now just about everybody who watches television understands that Miller Lite is triple hop brewed, which is great because it brings to the forefront one of the four key ingredients in beer, the hop. Periodically over the next few weeks we will examine the ingredients of beer, so Miller Lite has given us the start we need to discuss hops. By the way, “periodically over the next few weeks…” means whenever I am pushing deadline and have no idea what to write about, so bear with me. What are hops? Great question, hops may be the most misunderstood of beer ingredients. They are a vital part of most beers as they provide flavor and aroma, as well as a certain stability to our favorite beverage. They are the female flower cone of the plant known as Humulus Lupulus. This plant is an aggressive growing, climbing vine which is usually trained to climb up strings attached to trellises in the hop field, or hop yard. With the right amount of sunshine, a hop plant can potentially reach 40 feet high, although 25 feet is more common. They are also heavy with an average plant coming in at 20 plus pounds, so the string they grow on must be fairly strong. The first known instance of hop cultivation was in the Eighth Century in Hallertau Germany, however they were not used in beer making, to the best of anyone’s knowledge, until somewhere

around 1079 AD. Even then it took a while for hops to catch on and replace other flavoring agents, most notably gruit, as a regular ingredient in beer. Gruit was an herbal mixture which contained a large variety of herbs no longer in regular use today, some of them narcotic in nature. It took until the Sixteenth Century for hops to fully replace other herbs as the flavoring choice in beer. In fact,

for a while in England, “Ale” was considered to be an unhopped beverage and “Beer” was hopped. This may have given rise to modern day misconceptions that ale is somehow different from beer, rather than a subset of the drink.

Hops begin their life as rhizomes. Rhizomes appear to be nothing more than root cuttings with buds growing from them, but also contain stored nutrients to provide initial energy for growth. It usually takes hops two to three years to grow to full maturity and produce a good output of hop flowers for harvest. Hop blossoms start out looking like large sand burrs and then take on a characteristic cone

shape and grow in size. The size of a fully developed cone depends on the variety, varying from one to two inches long by one half to one inch in diameter. The hops are fully mature and ready for picking when two

changes take place. First, immature hops have a damp, soft feel and when squeezed slightly tend to stay compressed. Mature hops feel more like paper, spring back when squeezed and feel noticeably lighter. The second key test is to pick an average example hop and cut it lengthwise down the center with a knife. When ready to pick the yellow powder, the lupulin sacs containing the essential oils and bitter substances, will be a dark shade of yellow, like the stripes on a highway, and it will be pungent. Hops are about 80% water when initially picked. Keep that number in mind as we will discuss the importance of that a little later. Commercial hops are typically harvested by pulling the entire vine and taking it to an area where the hop vines are hung and dried. The cones are then harvested and usually processed into pellets. Although sometimes hops are sold as dry whole flowers or processed into hop oils. Different types of hops have different properties; some are used for bittering, some are used for flavor, and some are used for aroma. Depending on when they are added, hops can theoretically be used for any of these desired results. Bittering is important even though you may think you don’t like a bitter characteristic in beer. Without bittering hops, beer would be nothing but an incredibly sweet beverage that would be almost too cloying to drink. This comes from the starches in the

On the American side, as with many things, bigger and bolder is better. Americans like bold flavors and the dominant hop varietals here certainly support that statement. The best known hop is the Cascade. Cascade hops are usually responsible for the grapefruit and other citrus notes found in many American Pale Ales and IPAs. Centennial hops are super-

charged Cascades and are frequently used in conjunction with them. Centennials are notably used as the exclusive hop in Bell’s Two Hearted Ale. Other American hops include Amarillo (a hybrid of Cascades with a spicy twist to the citrus notes), Chinook (with a piney, resinous character), Nugget (a strong bittering hop used in a variety of American beer styles), and Simcoe (a spicy/floral mix of flavors which is appropriate in just about any ale that has a hoppy component.) Hops are often used together to provide a combination of flavors and aromas and beers are sometimes dry-hopped. Dry hopping involves adding hops to the beer during the fermentation process to provide an additional burst of aroma to a beer, usually a pale ale or IPA. There has been a recent trend towards single hop beers. With a single hop beer each batch is produced with a single variety of hop which changes every time it is brewed. This really illustrates the different flavors and aromas hops can bring to beer.

There are literally hundreds of varieties of hops so going into them all in detail is a bit much, but we can touch on a few of the key hops. Noble Hops are perhaps the only sub-category of hops that are well known. They are central European varietals named for the region they are grown in: Hallertau, Saaz, Spalt and Tetnang. These hops have very low bitterness and come off as more herbal and spicy than anything else. They are typically used for the aromas they provide more than anything else. Look for these hops in traditional European lagers.

General Marsh spends his winters in Arizona and sometimes stays even longer. Since he plays Powerball on a regular basis, he’s sure to purchase his tickets when he’s here. As is his usual practice, early Saturday morning, he goes to the store to buy his tickets. He never has a set amount that he spends; it just depends on his mood. On March 16, he only wanted two tickets for that night’s drawing, so he grabbed a selection slip and randomly chose six numbers for each of the tickets he intended to buy. He then put the tickets away and didn’t check them until Sunday when he had time to read the paper.

He then went to another store to see if they could cash it, but the customer service counter wasn’t open, so he decided to wait. To keep himself occupied while he waited, he purchased one Arizona Black Exclusive from the Lottery vending machine.

Robert is considering purchasing a new home with some of his winnings and investing the rest. The winning ticket was purchased at Smith’s Food and Drug, 3490 N. Stockton Hill Road in Kingman, AZ.

Robert scratched the ticket while he was in the store, and as soon as the customer service counter opened and the people waiting in line had left, he quietly took the ticket over to the clerk to be validated. For the first time ever, the famed magazine has awarded 90 points to not only one but two Arizona wines, making them the highest scored wines to come from the state. The twothat broke this barrier are Page Springs Cellars 2010 Colibri Syrah Clone 174 and the 2010Colibri Vineyard Syrah from Burning Tree Cellars. The Arizona wine industry has been continuously expanding, and the tight community has been hard at work growing grapes and making wine, while educating and sharingit all with the rest of the world. Mitch Levy, co-owner of Burning Tree Cellars, feels that the score was earned by the entire community. “It’s quite an honor and we’re honored to share it with Eric [Glomski]. This is everyone’s 90. So many people in the industry here in Arizona had their hand in that wine. It’s an honor for the whole industry.” Corey Turnbull, also co-owner

A lot of people in the industry support Burning Tree and deserve credit.” Turnbull went on to note the vineyard as well.“We’re a small producer and make most of our wine from California fruit. Colibri is one of the few sources of Arizona fruit we use, and we’re honored to make wine with it.” Colibri Vineyard was planted in 2000 and resideseast of Whitetail Canyon, on the northeast slopes of the Chiricahua Mountains.It is a unique place, not only because all other vineyards are on the west side of this mountain range, but because of the challenges that come with it. Its varying attributes and conditions play a tug of war, making it a struggle at times to grow grapes. Glomski, Page Spring Cellars owner, manages the vineyard and recognizes that the 90-point scores were born out of these

ALBUM REVIEWS Seabird Offer Compelling Troubled Days, Cherry Poppin’ Daddies Have White Teeth, Black Thoughts Seabird’s latest full-length album is arguably their best. Piano pop rock tracks like “Please, Please” prove they can still entertain even when the mood is more somber, and “Love Will Be Enough” is one of their most anthemic tracks yet. The stomp rocker of a title track plays one side of the prominent thematic coin on this record, but it is not all about struggling and suffering. The driving rocker “Find a Way” represents the other half of the coin with its never-give-up attitude towards a difficult situation, while the album’s standout track, “Golden Skies,” is the sort of uplifting, dreamy, ethereal rock song that mirrors the proverbial the-sunwill-rise-on-your-darkest-moment experience we all have at some point. Troubled Days is an absolutely beautiful, soul-stirring record.

Though the Cherry Poppin’ Daddies have been at it for almost 25 years, White Teeth, Black Thoughts, is their first swing record since their 1997 breakout release, Zoot Suit Riot, and it’s a good one. “The Babooch” seamlessly pairs a swinging rhythm with politically-charged lyrics about the world of the One Percent without being part of that world himself, “Whiskey Jack” is a simultaneously sad and lively update on the Jack & Jill children’s rhyme, and the title track’s romantic, straight-ahead jazz sound is juxtaposed against lyrics about deception and mind games. “Doug the Jitterbug” is a rip-roaring good time and “I Love American Music” plays like a semi-sequel to “Zoot Suit Riot,” so the album has its fun moments. White Teeth, Black Thoughts is one hell of a good time.

After more than a quarter of a century into his career, Chris Isaak finally created the album he’s always wanted to make, Beyond the Sun, Isaak’s first release on Vanguard Records (Oct. 18, 2011).
