All of my life I’ve been taught to try and get things right. Get the right answer. Be right. Like most people, I’d been taught to be uncomfortable with wrong answers. In fact, our educational system is based on the ‘right answer’ belief and from an early age, we are taught that right answers are good and incorrect answers are bad. If you are right over 90% of the time, you get an “A” and that progresses downward to if you’re only right less than 60% of the time… you fail. From these beliefs, we learn to be right as often as possible and that to make a mistake is wrong. When this attitude is developed, one thing is for sure…you won’t be taking many chances. You’ve learned that by failing even a little penalizes you a lot. For example, being wrong only 25% of the time gets you only a “C” grade and with that knowledge, you’ve now learned not to put yourself in situations where you might fail. Eventually, this leads to more and more conservative thought patterns proven to avoid failure. Being right is largely based on knowledge and experience and is often provable. This knowledge of what’s right and wrong usually

comes from the past… so, it’s safe and generally not to be called into question. But, it’s also usually out of date and is the exact opposite of originality. This experience is created from solutions to past circumstances and problems and most times, greatly different from the situations and problems we’re facing today. So, rather than risk failure with initiative and creativity, why not just use all that experience we have to save time, effort and…of course…increase our chances of being right. Experience is the opposite of being creative. With all my past attachments to being right, I noticed that I wasn’t in harmony with the times or with other people because I was so rigid in my thinking. My mind was closed. I was boring. No, I wasn’t just boring to other people…I was boring to myself! It was extremely hard for me to deal with anything new and different. And my answer was always the same; “…But, I’m right!” This feeling of righteousness was coming off as arrogance and even though arrogance can be helpful to the hard-charging professional… it’s best used in small doses. At this point, I don’t worry about being right all the time. Now, I’m more interested in being effective. I want to be in the now…in the present and come up with new ideas that work. I no longer spend all my time in the past trying to be right. REVIEWERS ROUNDTABLE The following are reactions from each of AZ Weekly Entertainment Magazine’s film commentators in an effort to generate a wellrounded overview of this weekend’s new releases.

‘The Time Being’ ‘The Act of Killing’ A documentary that challenges former Indonesian death squad leaders to reenact their real life mass-killings in whichever cinematic genres they wish including classic Hollywood crime scenarios and lavish musical numbers. (NR - 115 minutes) Exclusively at the Harkins Camelview Theatre. Stan: Disturbingly shocking on seeing the fervor and boasting of the death squad leaders as they reenacted their atrocities of long ago, director Joshua Oppenheimer sets a new high bar for documentary presentations to follow. Randy: Director Joshua Oppenheimer had created a fascinating and unique piece of documentary cinema that is unmatched in execution, reality and delivers a shock value unlike any other. The message about violence is clear and the horrors committed by these animalistic criminals shall never be forgotten. Despite this being award-worthy, one cannot help feel a wee bit of exploitation on behalf of the original victims.

Wes Bentley plays a struggling young artist who is approached by a reclusive millionaire (Frank Langella) to complete a series of increasingly bizarre surveillance assignments. As he starts to unravel the secrets behind the requests, he must determine if the old man is out to further his career or ruin his life. (NR - 88 minutes) Exclusively at the Harkins Shea Theatre. Randy: Stiff performances by both Wes Bentley and Frank Langella stop you from connecting with either character. This is a major problem in a movie with a storyline such as this. By the time the film ends, I found myself not caring about the outcome. One cannot really blame the actors for a dull script that put no emotion into the mix. On the other hand, if you see just one movie this summer based on its beautiful cinematography, here’s your contender. Joseph: What begins as a monopolizing mystery quickly reveals itself to be a story that we have seen time and time again in “The Time Being.” Still, stars Wes Bentley and Frank Langella turn in terrific performances.

She said that she thought that one of the men killed her mother and asked if I would go film him and see if he will tell me.

He has a much more profound one. I guess what I took away from him is that I am just so happy and grateful to have a family. I could not be a good actor without my family. I would just not have it in

“I first went to Indonesia in 2001 to make a film about plantation workers who were struggling to organize a union in the aftermath of the Suharto dictatorship when the unions had been illegal. They were spraying a herbicide that was destroying their livers and killing the women workers in their 40s. They were being forced to poison themselves by a big Belgium plantation company, and the film was dealing with globalization and exploitation. It turned out that the biggest obstacle of organizing a union was fear because there had been a strong plantation workers union until 1965. Their parents, aunts, uncles, grandparents, had been in the union and arrested for being communist sympathizers by virtue of being in the union and put in concentration camps, and then dispatched out to local death squads by the army to be killed.

MALT Last week we looked at the importance of hops in beer. Next up in our series of beer ingredients is malt. Malt is the backbone of beer and the term typically refers to malted barley, although other grains can be malted and used in beer. Malt also provides a good bit of the flavor in beer, and will usually be noticed as sweetness or roast. Malt is also responsible for the color in beer.

Malt is created, conveniently enough, by malting the grain. Malting is a process applied to cereal grains, in which the grains are made to germinate by soaking in water and are then quickly halted from germinating further by drying with hot air. Malting grains develops the enzymes that are required to modify the grain’s starches into sugars. It also develops other enzymes, such as proteases, which break down the proteins in the grain into forms which can be utilized by yeast. It is these enzymes, later used to convert starch in to sugar, that allows beer to be produced. Malting is a combination of two processes: the sprouting process and the kiln-drying process. A malthouse, or malting floor, is a building that houses the process of converting barley into malt, for use in the brewing or distilling process (almost forgot to tell you, malt

is also used in making certain whiskies). This is done by kilndrying the sprouted barley. This is usually done by spreading the sprouted barley on a perforated wooden floor. Smoke, coming from an oasting fireplace (via smoke channels) is then used to heat the wooden floor (and

thus, the sprouted grain with it). The temperature employed is usually around 130 degrees. A typical floor malthouse is a long, single-story building with a floor that slopes slightly from one end of the building to the other. Floor malthouses began to be phased out in the 1940s in favor of ‘pneumatic plants’. Here

large industrial fans are used to blow air through the germinating grain beds and to pass hot air through the malt being kilned. The difference being that the pneumatic version allow for up to 100 ton batches of malt while the floor process is usually limited to 20 tons.

Barley is primarily malted because the grain’s husk remains intact during the germination process, which protects the developing plant from damage which can lead to mold or other forms or rot. It also provides for a filter bed during the lautering process (we will get in to the whole act

of brewing some other time). Malt is often divided into two categories by brewers: base malts and specialty malts. Base malts are able to convert their own starch and usually that of some amount of starch from unmalted grain, called adjuncts. Specialty malts have little ability to do so; they are used to provide flavor, color, or “body” to the finished beer. Caramel or crystal malts are specialty malts that have been subjected to heat treatment that converts their starches to sugars without enzymes. Within these categories are a variety of types distinguished largely by the kilning temperature. In addition, malts are distinguished by the two major species of barley used for malting, two-row and six-row. Two row is typically considered the higher quality barley due to its lower protein content which provides for more fermentable sugar content.

Malt can be whole grain or extract (liquid or powder), however commercial breweries will use whole grain almost exclusively. Extracts are more commonly used by homebrewers since they are easier to use and take up less space. Of course, most of the better homebrewers (such as our friends at Arizona Society of Homebrewers and Brewmeisters Anonymous) will use the whole

grain version since it allows the brewer to do more with the finished product. Here are the main types of malts and the characteristics of each:

Base Malt - Used as a base. Has a subtle, delicately sweet maltiness, with floury accents, and creamy body. Caramel – Gives the candylike sweetness of toffee and caramel. Imparts flavors of raisins and prunes. Produces colors of golden sunshine to burnished sunset-red to beer. (Used in higher concentrations for porters and stouts) Carapil – Adds body. Aids in foam retention. Gives beer stability without influencing color or flavor. Certified Organic Malts – Can be just about any type of malt and is used in certified organic beers like Eel River. Chocolate – This is not chocolate. Imparts a moderately roasted flavor. Produces a rich walnut color in beer. Crystal – Contains a tiny crumb of crystallized malt sugar. Imparts a unique caramel flavor and reddish color to beer. Dark Roasted – Imparts flavors of rich roasted coffee. It is neutralizing, and is generally used for color adjustment and just a hint of flavor. High Temp Kilned Malts – Produces malty, clean flavors. sunrise orange. Roasted Barley – Produces intense bitterness, coffee aromas, and a dry finish. Also known as “Roasted or Black Barley.” Used for Nut Brown Ales, Porter and Stout. Rye – Gives mild rye flavor which typically comes off a little spicy. Special Processed – Three different subsets: Victory– Imparts flavor and aroma of baking bread and biscuit. Used in Nut Ales and Brown Beer / Extra Special – Imparts flavors of burnt sugar, prune, and woody tones. Produces very distinctive flavors. Used for dark, high gravity beers / Special – Imparts toasty flavors of citrus and biscuit, as well as sour tones. Used for Porters and other dark beers. As noted above, other grains such as rye, wheat, oats and rice can be used, at least partially, to supplement barley and each provide their own impact on the beer. Any non-malted addition, besides hops, water and yeast, is considered and Adjunct. Adjuncts are not necessarily a bad thing. The Belgians use sugar and spice additions to many of their beers with a positive result. The Brewers Association has perhaps the best description of proper use of adjuncts. Amaranth, Buckwheat, Quinoa and other ingredients are also commonly used. In fact, prior to New Grist, barley was a mandatory ingredient in order to call a product beer. Lakefront literally redefined the word “beer.”

We could go on and on about the use of malt and other grains in beer, but all good things must come to an end…and this article too. Hopefully this has helped you to understand a little more about the flavors in beer and the importance of the main ingredient, malted barley, in its production. In future weeks we will look at yeast and even water’s importance in producing beer.

That’s actually the point, though.The restaurant has been going through a complete renovation, from design to food and beverage to the overall feel. Just recently, they released the name of their fresh new bar concept, The Mix Up Bar, that will debut with the re-opening of the revitalized T. Cook’s in September. The restaurant opened its doors in 1998 and has come to be a well-known staple of the Phoenix dining scene. For quite some time, diners have thought of T. Cook’s as a place to go for special occasions, but the Royal Palms felt it was time to move away from that identity and, as

The name “The Mix Up Bar” was chosen for a few different reasons: It’s a good representation of what they are aiming for, it honors the legacy of T. Cooks while mixing things up a bit and gives a new and fresh feel.The mix up continues right into the glass with garden-to-glass cocktails using an unexpected mix of fresh, local ingredients. Kim Haasarud, founder of nationally acclaimed beverage consulting company Liquid Architecture, has created a bar program with inventive, yet approachable cocktails. “The cocktails are created with products from the surrounding areas, including AZ Bitters Lab’s flavored bitters, La Bella Terre’s botanical sprays and vinegars from Outrageous Olive Oil & Vinegars, to name a few,” Haasarud says.“We will also heavily incorporate fresh produce and herbs grown in the new T. Cook’s garden.” Executive Chef Paul McCabe,

known for his eight-year contribution as Executive Chef of L’Auberge Del Mar Resort and Spa, recently joined T. Cook’s and is excited to carry this new concept through to the kitchen.The menu, a fusion of new American and Mediterranean cuisine, is set up in a way that tailors to diners looking for something more traditional but also to those looking to mix it up a bit, changing the sequencing. McCabe explains, “The menu before was very traditional— starters, entrees, desserts. You can still come and order that way, for example salmon and a salad. But now you can also choose from a mixture of various small plates in any order, visiting numerous times without having the same thing.” Seasonal, homegrown ingredients will also be the focus of the kitchen, taking pure and simple flavors and mixing up the flavor profiles a bit more. Chef McCabe is known for his playful and outof-the-box techniques, because as he says, “Complacency is the death of a chef.” He is especially excited to be joining T. Cook’s at this time, as there certainly is no room for complacency. In equal measure with the new menu is the reinvention of the

space, both in the lounge and dining room. Haley Balzano of Bar Napkin Productions focused on evoking a sense of Mediterranean living by bringing the outdoors in and designing a space that makes one feel like they are dining at a private estate. New additions to the dining room are a chef’s table, a community table and tequila and wine tasting rooms. The original backsplash of the bar remains the same but that’s it. An additional area has been added to the lounge, and what used to be the cigar room will be utilized as a private lounge space that guests can reserve. The changes continue outside with two new alfresco dining options, appealing to those looking for a modern flare or Tuscan countryside dining. In speaking with the team involved in this transformation, one can feel their excitement. This undertaking began over a year ago with the belief that, while it was important to honor T. Cook’s legacy, there was so much more it could offer. Their vision has now come to life, and it is definitely something to experience come September. Lavender & Wine Festival Comes to Four Seasons Resort Scottsdale at Troon North The Lavender & Wine Festival will offer a weekend of sensory exploration as well as scheduled seminars and special weekend packages.

SHOWDOWN IN THE SNAKE PIT Road to the ArenaBowl Runs through the Desert Beginning August 4th as the Arizona Rattlers do Battle with Longtime Rival San Jose SaberCats game as their next test and working toward the end goal.

The 2013 Arizona Rattlers have continued the long standing tradition of excellence the organization is known for. After starting off the season with a franchise best 13-1 record, the Rattlers have gone on to win the West Division Championship and clinch home field throughout the playoffs. Along the way Arizona has seen numerous Arena Football League and franchise records fall. From fullback Odie Armstrong moving into the top ten in career rushing touchdowns, to kicker Garrett Lindholm breaking multiple League records, including successful points after touchdown, to defensive back Virgil Gray setting a franchise record for interceptions, it has been a solid season thus far.

Rattler quarterback Nick Davila has shown why he is an AFL and ArenaBowl MVP. Davila is in the top three in the League in all major quarterback categories. He has recorded over 100 touchdowns for more than 4600 yards so far this season. Davila has had no shortage of targets with a receiving corps that not only includes the last three Arena Football League Rookie of the Year winners in Rod Windsor, Maurice Purify and Jared Perry, but also receivers Kerry Reed, Tysson Poots and Trandon Harvey. Not to be outdone, the Arizona defense has been nothing but trouble for opposing teams. With a +33 turnover margin and a Leaguehigh 41 interceptions, the Rattlers have stifled opposing offenses. Defensive back Virgil Gray leads the AFL with 15 interceptions while Marquis Floyd and Arkeith Brown have picked nine and eight respectively. From the offensive line, to the defensive line, to the coaching staff, to the ownership, the Arizona Rattlers worked hard to ensure they didn’t become complacent and never settled for good enough. That strategy has paid off as they head into the playoffs.

At 15-3, Arizona holds the best record in the League and boasts the top offense averaging 66.8 points per game while the defense has done just as well holding opponents to only 48.1 points a game. Arizona finds itself in the toughest division in the League against foes like the Spokane Shock and San Jose SaberCats, both of whom have also clinched playoff berths, and are responsible for two of the only blemishes on the Rattlers record this season. As the Rattlers head into the playoffs they undoubtedly look to avenge the losses to their rivals. At the helm of the ship is General Manager and Head Coach Kevin Guy. Guy, who is in his fifth season with the Arizona, led the Rattlers to their first ArenaBowl championship in more than a decade in the 2012 season. The Rattlers posted 16 wins, earning back-toback West Division and National Conference Championships. Under Guy’s leadership, six Rattlers players received All-League honors.

Fans of The Joy Formidable should enjoy their new EP, Silent Treatment despite its mostly down-tempo vibe. This relationship-centric EP features two versions of the lone acoustic track from the band’s 2013’s release, Wolf’s Law: the original, which offers an introspective look at a broken relationship, and the William Orbit remix, which adds ethereal layers to Ritzy Bryan’s already great vocals and whose electronic layers make the track more chilled out. The swelling piano ballad “All this Promise” features telling lyrics like “All this promise/Going to waste,” and the live version of “Tendons”—which ironically is about when Bryan was in a relationship with bandmate Rhydian Dafydd, whom she has since split with—is as spellbinding as the album version. Silent Treatment is a real treat.

Aussie band San Cisco’s self-titled album is going to wow you if you like energetic dream pop, synths, upbeat vocals and melodies and sun-drenched awesomeness. The romantic, dreamy synth pop of “Beach” sounds like it was time warped out of the ‘80s and dropped into the present, and the jangly, hand-clap filled dance rock of “Fred Astaire” is destined to be one of this summer’s most memorable tracks. The happygo-lucky low-fi garage rock of “Metaphors” is augmented by the band calling out melodically and manically while also singing the phrase “I know-ow-ow-ow-owow it’s a metaphor” in a ridiculously catchy way. “Awkward” and “Mission Failed” demonstrate the band’s witty side as they write about unfortunate situations, so they keep things light when they need to. San Cisco is a low-fi dance pop extravaganza.
