I remember a long conversation I had with author, lecturer and all-around good guy, Brian Tracy, circa 1989, about raising what he called ‘super kids’. At the time I had no children of my own, but I had a large peewee Tae Kwon-Do class of children aged 6-12. So many of them were high achievers not only in Tae Kwon-Do, but also in school and at home, so Brian and I were exchanging ideas on how I could get even better results. He believed, as I did and do, that raising high achieving children requires parents that have very specific attitudes towards doing THEIR homework. In other words, parents must do their work at home as true role models and also by setting good examples for their children to follow in order for them to grow up feeling empowered to excel at school and in their relationships. Whether as a Tae Kwon-Do instructor or a parent, if you want to raise happy, high-performing and self-confident children, you need to set a good example… you need to model the behavior, the actions, the thinking, the words, the attitudes… literally, the person you want them to become. It really isn’t just do as I say…it’s do as I do. Why? Because children learn mainly by imitating behavior they see, especially during their formative years. They learn by watching you and listening to you and then imitating

Now that I’ve become a parent, I’ve set myself up as a role model for my son, Nelson. I no longer have the luxury of doing and saying whatever I want. I must be much more aware of my behavior and the impact my behavior has on Nelson. Nelson watches EVERYTHING I do! I believe if we want our children to grow up with good habits, we must first be an example of those good habits. For example, if you want your children to grow up with good health habits, you must first set the example by eating the right foods yourself. You must make sure the child has plenty of good healthy food available to them in the home. Children are always looking to their parents for who they are and what they should do, and by being a good role model you will be amazed by the impact and the influence you’ll have in and on the lives of your children. Some of us have been brought up by parents who were unaware of some of these things and may have unintentionally made mistakes with you. Your natural tendency now as a parent is to do the same things to your children that your parents did to you. Keep this in mind… it’s never too late to change. Don’t feel too badly about it…it’s never too late. Little Things Can Build a Relationship – Or End One Last year I ended a two year relationship with my live-in boyfriend on Thanksgiving night. The reason? A honey baked ham. The shortened story is I planned a huge Thanksgiving dinner for all of our friends to come over. I cleaned up my home and prepared everything for the meal all day long. My boyfriend at the time had requested that a honey baked ham be prepared on top of the turkey. I said it would be fine just so long as he was responsible for it and the ham did not affect my turkey preparations or dinner time. I gave him an opening of when the oven would be available and went on my way. Unfortunately, he did not listen to me and instead put the ham into the oven next to my turkey so they would bake side by side. My fellow chefs reading this will know right away – this affected the turkey. Now the oven had to work twice as hard and long to cook both the items. My dinner guests were standing around waiting for food and I was a nervous wreck while I cooked and entertained. At the end of the night, I was cleaning up the dishes myself and my boyfriend had fallen asleep on the couch without a care in the world. I kicked him out that night. Of course, there’s always more to the story. Obviously the relationship was on the rocks before hand – but in the end it was a honey baked ham that finally showed me, this person doesn’t care about me the same amount I care about him. This realization was so upsetting and strong that he had to be out of my home that night! The fact is when you choose a partner, really wonderful highs and awful lows will occur from time to time. That’s simply life. I argue that it’s the person who can get through the challenge of average, every-day life that is a real partner. It’s the little things that matter and add up into a relationship.

his girlfriend let him watch sports all day, alone or with friends, and she didn’t complain or nag him at all – she would be the best catch out there! Simply because she’s letting him relax and understands this time is important to him, even if she doesn’t get it completely! On the flip side, a woman usually feels if her man surprises her by turning the sports off one day and just spends the evening taking her out or maybe just spending time watching TV on the couch with her – it would mean the world to her! This is because the boyfriend is showing: yes these sports are important to me, but you’re always more important. It sounds silly, but sometimes it’s just our daily lives of going to work and maintaining our homes that can be the hardest thing to endure. We all look forward to weekends and trips of course, but sometimes that small gesture to show: “I thought about you today and I thought you would appreciate if I cooked dinner AND did the dishes tonight!” Sure, in hindsight a honey baked ham isn’t that big of deal and the dinner wasn’t a complete disaster. At the time though, I thought it was blatantly obvious that my boyfriend didn’t care because he didn’t listen to how important I felt the dinner was and that I wanted things on schedule. He wanted his ham! Who knows, maybe now he feels like he deserves to be with someone who doesn’t make a big deal about dinners and will make sure that when he wants ham, he gets it! In this case obviously we were wrong for each other. Sometimes you do need to ask yourself, am I thinking about my partner? Am I willing to do these small things to show I care? If not – it’s possible you’re with the wrong person. If you are – then maybe tonight you should surprise your significant other with something small. I promise it won’t go unnoticed!

Joseph: There really is not much of a plot to “Prince Avalanche.” And what meaning - if any - its title possesses is anybody’s guess as the movie is merely a meanderingly idiosyncratic exercise in the effects of loneliness and isolation.

‘Prince Avalanche’ Paul Rudd and Emile Hirsch play highway road workers who spend the summer of 1988 away from

‘We’re the Millers’ Jason Sudeikis plays a veteran pot dealer who creates a fake family as part of his plan to move a huge shipment of weed into the U.S. from Mexico. Jennifer Aniston, Emma Roberts, Will Poulter, Ed Helms and Nick Offerman also star. (R - 109 minutes) Stan: Clever spins on two primary themes, very talented ensemble acting, and down to earth dialogue treatment on adult maturity along with adolescent lessons. Beware, the ‘R-Rated’ language although scandalous for some, realistically enjoyable for this reviewer! Joseph: “We’re the Millers” succeeds thanks to the unconventional juxtaposition of its crass sense of humor with a surprisingly sweet message about different dysfunctional people coming together to somehow form a family that is far more functional than most.

‘The Spectacular Now’ Miles Teller plays a high school senior who unexpectedly falls in love with a young woman (Shailene Woodley). What starts, as an unlikely romance becomes a sharp-eyed, straight-up snapshot of the heady confusion and haunting passion of youth - one that doesn’t look for tidy truths. (R - 95 minutes) Stan: Broadening the familiar cliché approaches for ‘comingof-stories, the frank treatment by presenting the very human flawed actions of ordinary persons is a stark reminder that living life in the ‘now’ is what realistically sets the stage for tomorrow. Randy: The performances by Teller and Woodley are as real as it gets. You feel as if you are spying on the private lives of two real American teenagers. I sense a slew of Oscar nods. Joseph: “The Spectacular Now” is a deeply felt film that redefines the comingof-age experience, extracting emotional resonance out of the insecurities of its characters and reminding us that there is always another “now” tomorrow.

“Von Ryan’s Express” (1965) This World War II tale stars Frank Sinatra as American Col. Joseph Ryan, who is shot down over Nazi-occupied Italy. When Italy surrenders, he and 400 British prisoners of war have a chance at freedom, but the Nazis recapture them and load them aboard a train. Ryan then must hatch a plan to take control of the train before Frank Sinatra it reaches Germany. “Unstoppable” (2010) In this thriller from the late director Tony Scott, a veteran railroad engineer (Denzel Washington) teams with a rookie operator (Chris Pine) to stop a runaway locomotive carrying loads of dangerous chemicals, which is headed straight for the younger man’s hometown and family. Also starring are Kevin Dunn and Rosario Dawson.

Johnny Depp’s Top Movies “Alice in Wonderland” (2010): Depp proved an inspired choice as the Mad Hatter in frequent collaborator Tim Burton’s take on the classic tale. “Sweeney Todd: The Demon Barber of Fleet Street” (2007): In an adaptation of the stage

musical, Depp yielded another superbly macabre portrayal via director Burton.

“Pirates of the Caribbean: The Curse of the Black Pearl” (2003): If Depp didn’t seem to

have the makings of a Disney character, his first outing as Capt. Jack Sparrow proved otherwise.

By Joseph J. Airdo “[My character] is very annoying and sort of controlling - but in a funny way. She is very protective of Shailene Woodley’s character. She was a really fun character to play because I felt like it was sort of a comedic character. And I love going back and forth from drama to comedy so I really loved the opportunity to play her. That is pretty much why I wanted to do the film. I really liked the character. And also the script in and of itself was awesome.

“And Shailene Woodley’s character is also worrying about what she wants to do with her life. She is going to move on to college while [Miles’s character] is living in the now. So I feel like what you learn from it is basically to just follow your instincts. That is the one thing that I took away from it. And when I saw the finished product at Sundance, I really did learn a lot. It was just amazing.” – Kaitlyn Dever

“I think that the main thing that you can learn from watching ‘The Spectacular Now’ is just learning about growing up and moving on. Miles Teller plays a high school senior and comingof-age stories are usually about 14 to 16 year-olds, but I feel like this is still a coming-of-age film because he is worrying about what he wants to do with the rest of his life.

YEAST As we move on in our occasional articles on beer ingredients, it is now time to talk about yeast. While yeast is probably the least sexy of the ingredients in beer, it is without question the most important. Without yeast, there is no beer. If malt is the body of beer and hops are its soul, then yeast is the brain. Yeast controls what the other ingredients do, how they change to produce beer, how much alcohol ends up in the beer, what kind of phenols and esters show up in the finished product, and much more. First off, yeast is classified as a fungus. It is a single cell organism of which there are over 1,500 species. The main one we are concerned with is Saccharomyces cerevisiae…there are others that can be involved in making beer, but this is one of the key ones. It is perhaps the most useful yeast owing to its use since ancient times in baking and brewing. It is believed that it was originally isolated from the skins of grapes. It is the microorganism behind the most common type of fermentation. All strains of this yeast work particularly well on maltose which is the primary sugar component of malt. It does not work well on lactose, which provides something interesting to discuss a few paragraphs down.

beer, or wort, is left exposed to its surroundings so that the yeasts and other organisms in the air can act on it to ferment the beer.

For many years the role of yeast in fermentation was not understood. It was all thought to be naturally occurring and any consistency was derived from the standardization of the brewing process. The Roman armies in the middle ages would carry beer with them and to make sure they were getting the same quality every time, they would use some of the beer to inoculate a new batch, thereby introducing the yeast from the old beer to the new, achieving consistency without understanding why. Even the German Beer Purity Law, the Reinheitsgebot, didn’t originally acknowledge the role of yeast in fermentation. It limited beer production to three ingredients, water, malted barley and hops. Even after the discovery of yeast in the fermentation process it wasn’t accepted as an active ingredient. Finally, Louis Pasteur was asked by a spirits distiller to look for the cause of an off flavor. During his research in to this he discovered the role that yeast plays in active fermentation. This was in the mid 1800s. Because of this work, the importance of yeast in the consistency of beer is now known. Today, some breweries spend millions of dollars to recover and propagate their house strain of yeast to ensure this consistency.

Within the two many yeast categories, there are a variety of strains, each of which produce unique flavors and aroma components. Take for example, a true Bavarian Hefeweizen. The complex layers of banana and clove are created by the yeast, there are no flavor additions. Belgian tripels which have a spicy flavor also rely on the yeast to produce the phenolic compounds that provide this characteristic. Although, the Belgians are perfectly willing to help the process by adding sugars and other spices to push flavors in the direction they want. Even within beers where the yeast isn’t particularly noticeable, there are different strains at work. For instance, an IPA may use a different yeast strain than would a porter. This is because the brewer is looking for different things in each beer. An IPA is looking to provide a nice malt backbone, while emphasizing the aromas and the flavors of the hops. There is also a higher alcohol content in an IPA. All of this comes, at least in part, from the yeast choices. And what happens

when yeast strains are used in different situations? Crispin Cider examines that with several of their beers, most noticeably The Saint which is brewed with Trappist Ale yeast. The result is a unique take on hard cider. And what of the lactose referenced earlier? Milk stouts rely on the inability of S. cerivisiae to work on lactose. The resulting unfermented lactic (or milk) sugar provides the sweetness found in these beers. Once again, this column provides you with homework. Try a milk stout or a hefeweizen and try to pick up the unique flavors from the yeast. Then try some other beers and look for the fruity aromatics of top fermenting yeast or the clean, crisp finish of a bottom fermenting yeast. And if you want to play around with the whole sediment thing, look for a bottle conditioned beer with an accumulation on the bottom. Swirl it in the bottle and pour it with your beer. Just don’t blame me if it you overdo the experiment and the next morning isn’t pleasant.

Remington’s Steakhouse & Lounge, long lauded by so many for its “relaxed atmosphere and award-winning, American and International cuisine,” has something new on the menu this summer – sure to make wine lover’s pulses race! This August, in addition to offering its signature grilled Sonoran crab cakes with chipotle remoulade, steaks, lamb, seasonal fish and home-baked pretzel rolls, the venue has gone mad – well, more “Stark Raving” than “mad” to be exact. Through August 31, Remington’s has partnered with Stark Raving Wines to offer guests a specialty, three-course menu and their choice of Stark Raving Red or Stark Raving White wine for just $99 per couple. As part of this “Stark Raving

Dinner for Two” program, each guest will choose from a selection of soups and salads as well as summer-themed menu features including: •

Barbecue-spice rubbed and grilled prime rib, served with a warm southwestern black bean and corn relish

PHOENIX SUNS TO REVEAL NEW UNIFORMS ON THURSDAY, AUGUST 15th DURING RUNWAY SHOW AT SCOTTSDALE FASHION SQUARE Suns players and legends to participate in unveiling of #NewLookSuns The Phoenix Suns will add some style to an action-packed summer when the team unveils new uniforms during a runway show at Scottsdale Fashion Square on Thursday, August 15, at 7 p.m. The public reveal will take place inside Fashion Square on the east end of the first level, just outside of Barneys. Suns players Eric Bledsoe, Alex Len, Archie Goodwin and P.J. Tucker will reveal the new look, with Suns Ring of Honor members Alvan Adams, Tom Chambers, Walter Davis and Dick Van Arsdale, as well as alumni Eddie Johnson, Steven Hunter and Tim Kempton all scheduled to participate. Legendary radio play-by-play broadcaster, Al McCoy, as well as Suns President, Jason Rowley, will also play a role in the highly-

anticipated event. The Suns have given fans a glimpse of the #NewLookSuns in recent weeks through a number of teasers on the team’s social media channels (Twitter, Facebook, Instagram, Pinterest and Tumblr). The new uniforms will be available for pre-order immediately following the reveal. Fans will also have the opportunity to purchase team merchandise that features new Suns logos that the club unveiled in June. The new uniforms represent yet another exciting change for the Suns in a summer that has already featured the hiring of general manager Ryan McDonough in May, as well as former Suns fanfavorite and new head coach, Jeff Hornacek, shortly thereafter. The team drafted Len (5th overall) and Goodwin (29th overall) in June’s NBA Draft, and acquired the highly-sought Bledsoe, as well

as veteran forward, Caron Butler, from the Los Angeles Clippers on July 10. Last Saturday, the Suns added to a busy offseason by acquiring second-year center Miles Plumlee and athletic swingman Gerald Green, as well as a lottery protected first-round draft pick, from Indiana. The Suns now have the potential for three first-round picks in the 2014 NBA Draft, and five total over the course of the next two drafts combined. The new look will mark only the fourth time in franchise history that the Suns have undergone a major redesign of their uniforms. Fans can

D-BACKS POST-GAME CONCERT TO FEATURE ROGER CLYNE & THE PEACEMAKERS

The Arizona Diamondbacks (@ Dbacks) will host a post-game concert featuring Roger Clyne & The Peacemakers, presented by Miller Lite. The Sept. 1 concert is free to all fans in attendance at the 1:10 p.m. game against the San Francisco Giants. Clyne has enjoyed a longstanding relationship with the D-backs since his band has played numerous post-game concerts at Chase Field and has written “D-backs Swing,” a song the club has played following every home win since 2007. Roger Clyne & The Peacemakers continued their baseball tradition by playing the inaugural concert at Salt River Fields at Talking Stick on April 16, 2011 to celebrate the release of the band’s sixth studio album, Unida Cantina. Last season, the band held a post-game concert at a D-backs game in August and in 2011, Clyne sang the national anthem on Opening Night at Chase Field. The D-backs’ current comprehensive marketing campaign focuses on the lyrics of

ALBUM REVIEWS The Civil Wars’ Self-Titled Album is Great, KT Tunstall’s Invisible Empire/ Crescent Moon is Spellbinding If The Civil Wars is indeed the last album Joy Williams and John Paul White release it will be a painfully beautiful way for them to go out. The sense of longing and regret is palpable in the gritty, Americana rock single “The One that Got Away,” while the emotional country track “Same Old, Same Old” could very well be an autobiographical take on their strained professional relationship. “I Had Me a Girl” and “Devil’s Backbone” play like raw, sinister outtakes from Barton Hollow, and the way they carry a tune is still spine-tingling. The album’s most difficult moment comes with the happy-sounding closer, “D’Arline,” because this duo doesn’t sound like they are at odds with each other at all. The Civil Wars is a rapturous and bittersweet release.

KT Tunstall’s latest could be 2013’s biggest surprise. You won’t believe your ears when she starts combining country and folk sounds (“How You Kill Me”) or when she sings a soft, romantic piano ballad like “Yellow Flower,” but this is just part of the creative reimagining of the woman who gave “Black Horse and the Cherry Tree.” There are no pop gems on here, but Tunstall still grabs you when she sings “I want to jump into the fire/I’ve got to tear them down/The pinnacles of my invisible empire,” on the Americanatinged opener, “Invisible Empire.” And “Crescent Moon,” with its plaintive, gorgeous piano strains and lush orchestration might be her best track yet. Invisible Empire/Crescent Moon is a very different release for Tunstall and it’s a good one.
