Circumstances and events are both altered by your desires…your dreams… the things you want more than anything else. So what is it that you want? Do you know? Really? I think for some it’s easier to question their limits than to figure out what it is they want. Many people have no idea want they want. I have a brilliant, talented friend who is clueless about what he wants and is adrift in life. He ricochets from disaster to disaster without any clear purpose. The psychologist William Marsten polled over 3,000 people with the question “What do you have to live for?” Only 6 percent responded that they had a definite purpose for their life…94 percent DID NOT! Are you kidding me?!

Maybe you’ve tried before and failed…maybe others have told you it can’t be done…maybe you’ve just given up on your dreams because of fear. Whatever. You have within you, right now, all the talents and abilities that you would probably ever need to achieve that dream of yours. There are only two questions to be answered; “What do you want? And, how badly do you want it?” If you don’t know what you want out of life, you must simply open your heart and mind and the answer will come to you and probably at the most unexpected moment. So, once you ask that question, you must be ready for the answer to appear. Don’t let the past hold you back when it comes time to unveiling your dreams and setting your goals. The past has a very clear purpose. Learn from it and let it go. Resolve to keep yourself firmly grounded in the present, preparing for the future. You must keep in mind that since the future is limited only by your imagination, there is absolutely no limit on what you can achieve in the months and years ahead. The only real limits on what you can have, be or do are the limits you accept in your own mind and impose on your life. If there is anything you need to learn…you can learn it. Human beings are learning machines…that’s what we do. We make mistakes and we learn from them. As long as we never lose sight of what we really want, keep the fires of passion burning brightly, you can develop any skill and acquire any knowledge you need to rise to the top. You know why? REVIEWERS ROUNDTABLE The following are reactions from each of AZ Weekly Entertainment Magazine’s film commentators in an effort to generate a wellrounded overview of this weekend’s new releases.

‘The Canyons’

‘Dealin’ with Idiots’

James Deen plays a calculating young movie producer who discovers that his actress girlfriend (Lindsay Lohan) has been hiding an affair with an actor from her past, leading the young Angelenos into a violent, sexually charged tour through the dark side of human nature. (NR - 100 minutes)

Jeff Garlin plays a famous comedian who, faced with the absurd competitiveness surrounding his son’s youth league baseball team, decides to get to know the colorful parents and coaches of the team better in an attempt to find the inspiration for his next movie. (NR - 86 minutes)

Joseph: Some of the best movies of all time have been adapted from Bret Easton Ellis’ novels, including “American Psycho” and “The Rules of Attraction.” Therefore, it is somewhat surprising that the author has not had the same success upon penning his own screenplays. 2009’s “The Informers” was exceptionally shallow; but at least it starred several skilled actors, which is more than one can say about “The Canyons” - an original feature from Ellis that is plastic, pretentious and unpleasant. The new cinematic castigation against Hollywood’s only claim to fame is casting Lindsay Lohan in a lead role, where she overdramatizes every line as if her parole depended on it.

Joseph: Aside from a small handful of inspired moments that mirror the deadpan sense of humor of “Curb Your Enthusiasm,” “Dealin’ with Idiots” is mostly unfunny and annoying. After all, the thing that makes “Curb Your Enthusiasm” work so well is its relatability. Yet writer/director/star Jeff Garlin instead injects this feature-length comedy with characters and situations that are so extreme that viewers cannot possibly identify with any of it. Everything is exaggerated even though the natural altitude of absurdity in circumstances surrounding socalled soccer moms and dads is already astonishing enough.

‘In a World’

‘Drug War’

Lake Bell plays an underachieving vocal coach who is motivated by her father, the king of movie trailer voiceovers, to pursue her aspirations of becoming a voiceover star. Amidst pride, sexism and family dysfunction, she sets out to change the voice of a generation. (R - 93 minutes)

Louis Koo plays a drug cartel boss who is arrested in a raid and coerced into betraying his former accomplices as part of an undercover operation. (NR - 107 minutes)

Stan: In my twenty-five plus years of media production, and having worked on numerous documentaries where voiceover talents are frequently used, the voice is a key factor in setting the tone for the presentation. Writer/Director and star, Lake Bell, more than aptly gives us a story with so much emotional resonance that we the viewer are drawn by what we are hearing as the three most spoken words in movie trailers, ‘In a World…’ becomes the most sought after goal for excellence in the voice talent category of the arts. Well done director Lake Bell. Randy: Lake Bell’s romantic comedy manages to be the surprise of the season. Bell delivers a witty, fast-paced script that pokes fun at the movie trailer/voiceover industry. It is a unique take on an otherwise predictable plot. Bell not only shines on camera, but behind the scenes as well and is helped by a supporting cast filled with talent equally as likable.

Stan: Providing a view of the war on drugs that mirrors this country’s efforts by law enforcement, director Johnnie To presents a glimpse of a police department’s efforts to win the drug war in an Asian part of the world. Although in Mandarin with English subtitles and excessively violent, nothing is lost in translation as the essence of the story of just how far those on either side of the ‘Drug War’ will go to ultimately win.

Red Rocks Music Festival presents four sizzling summer concerts on August 23rd, 29th, 30th and September 7th. The festival will kickoff on Friday, August 23rd -7pm, at the ASU Kerr Cultural Center with the program “From Bach to Blues” featuring concert violinist Elmira Darvarova. Ms. Darvarova was the

ConcertMaster of the Metropolitan Orchestra of New York and currently is President and Artistic Director of the New York Chamber Music Festival. The program will include works by Bach and Piazzolla, six Arizona, three world and one American premiere. On Thursday, August 29th - 7pm, at the Tempe Center for the Arts, festival artists will collaborate with Desert Dance Theatre in a performance of “Transfigured Night” by A. Schoenberg. This romantic work is based on a poem by Richard Dehmel, which will be read by popular entertainer and actress Shondra Jepperson. Jazz Suite by C. Bolling will create a contrast in this very special presentation. Other musicians in the program include: cellists, Thomas Landschoot, - ASU professor and Jan Simiz - assistant principal, Phoenix Symphony, Concert Violist, Nokuthula Ngwenyama who

performed solo with the Phoenix Symphony, Andria Fennig - piano and Christina Steffen – flute, faculty of Mesa Community College, Fred Marderness - percussion, Phoenix Symphony and Steve Anderson - bass, Symphony of the Southwest.

In its early seasons, Food Network’s “The Great Food Truck Race” went to existing operations for its contestants, making it a competition among those who already had a level of success. Last season, the show changed the ingredients, and the new recipe worked out so well that the producers decided to turn to it again in the new season, premiering Sunday, Aug. 18, on Food Network. THE ORIGINAL CRAFT BEER (Town brewery, Měšťanskýpivovar in Czech), and commissioned Josef Groll, a Bavarian brewer, to develop a better beer. On October 5, 1842, Groll had an entirely new mash ready and on November 11, 1842, the new beer was first served at the feast of Saint Martin markets.

We’ve had conversations recently about getting back to basics, getting back to the beers that made beer great. When you want to talk about one of the beers responsible for fuller flavors in beer, you need only look back about 170 years or so and cast your eyes to a town called Pilsen in what is now known as the Czech Republic. Produced at Plzeňský Prazdroj the name literally means the Ancient Source. Why, you might ask, is this beer so important? Simply because

it was the very first pilsner and very first pale lager brewed in the world. Now before you start knocking pale lagers and pilsners, realize that nine out of ten beers consumed in the world are derived from this beer. Before 1840, the standard beer in Bohemia was top-fermented and characterized by a dark color, turbidity, and inconsistent quality. Pilsen citizens had not found this satisfying and the Pilsen city council ordered 36 casks to be dumped. They invested in a new, state-of-the art brewery, the Bürgerbrauerei

This beer instantly captured the imagination of the Pilsen drinkers and soon spread. By 1853, pubs in Prague were carrying the beer. Three years later it spread to Vienna and by the early 1860’s the folks in Paris were drinking this beer. As it spread throughout Europe, other brewers copied the style which led the town of Pilsen to register the brand name Pilsner and ultimately by the turn of the century, Pilsner Urquell to emphasize the importance of being the original brewery. Lager beers require an extended period of very cold storage to allow the beer to rest and develop its trademark clean finish. Since refrigeration was not readily available in the mid-19th century,

these beers were aged in caves in the cellar of the brewery. However, the late 19th century brought modern refrigeration to much of Europe allowing the bottom-fermenting lager beers to be brewed in many locations. Pilsner Urquell continued to be brewed exclusively in open barrels using the consistent temperature of the caves until 1993 when they added large cylindrical tanks. They still brew some beer in the traditional method…and that will become important later in this article. As the Pilsner style spread, especially to Germany, substyles developed. The German version is lighter in color, a little drier with a bit of an earthy taste to it, while the original Czech style remains golden with higher carbonation and a hint more sweetness. Both versions contain a strong hop profile. In fact, part of the inspiration for the style was the availability of Saaz hops near Pilsen. mean the same thing as it does in the United States, as we tend to prefer bigger, bolder hops while European hops tend to be more delicate, still complex, but delicate.

Granted, Pilsner Urquell begat German Pilsners which in turn begat many of the domestic beers that craft brewers were trying to escape, but everything must be looked at in context. Pilsner Urquell was the first beer to create clean, crisp flavors; to provide a consistency in the finished quality and to be truly adopted as a local beer. Josef Groll was a

a general dissatisfaction with the beers that were currently available. In both cases, people went out on a limb and created new flavors. And, in both cases these beers prompted a revolution in brewing.

In todays over the top flavor craft beer world, we sometimes hesitate to look at Pilsner Urquell as anything special. But the truth is that Pilsner Urquell is arguably the world’s first craft beer. If you look at what prompted the American craft movement, you will see parallels with the founding of Urquell. In both cases there was

In fact, it is the interest generated by the craft trend that is driving this brand into new territory, the company says. “What plays in our favor is the expectations through the craft movement, where the consumer is being educated to understand different tastes,” Pilsner Urquell global marketing manager Robert Lobovsky told just-drinks last week. “This is perhaps the state Pilsner Urquell can benefit from the desire to learn more about the brand, the craftsmanship of the brand. That can only play well for us.”

Pilsner Urquell continues to be a driving force in the beer world. For years they had a reputation in the United States for delivering a dated, skunked product. Part of this is the necessities of overseas shipping of beer and many, if not most, of the beers that come from Europe are a little dated. The skunk aroma is a function of certain wavelengths of light (sunlight and fluorescent) acting on the hops in the beer. Green glass does not effectively filter that wavelength making it more likely that a beer in a green bottle will skunk faster than one in a brown bottle. Brown bottle will skunk also, but at a much slower rate. The best overall bottle color to prevent that is cobalt blue, but that glass is expensive so it is

not used. This, of course, creates much of the argument in favor of canning beers, especially hoppy ones. But, I digress…the real point of the last paragraph is to illustrate what the response from the folks that make Pilsner Urqell was. Faced with declining United States sales for three consecutive years in 2012, the company decided to change its shipping system in a bid to keep the beer fresh. It is now transported in fully- enclosed, temperature-controlled containers to protect it from light and heat. They call it “Express-Cold Shipping.” “We’ve always struggled on long distances, on how to get it out to the US,” Lobovsky said. “How do we keep the product fresh?” The results have been beyond the company’s expectations. “Whereas in the past, our sales team in the US that wanted to get into craft bars would have been rejected, today bars are actually asking for us. That’s an enormous success.” Of course, the fully enclosed containers protect the beer from harmful light as well. What does all this have to do with Arizona? Great question. On

RUBY RED PALE ALE, HELL YEA! Hello beer lovers, today I’d like to take a minute to tell you about Ruby Red Pale Ale, a beer I brewed in collaboration with my trusty partners Andrew Bauman, Landon Evans and Grand Canyon Brewing Company. As you might expect, we had a few too many beers the night before at Hops on Birch in Flagstaff and showed up feeling just a bit under the weather. Well, Grand Canyon’s Head Brewer Jeff wasn’t having any of it and put us straight to work. Nothing like mashing in with a huge hangover! We set to work by mashing in the agreed malt bill and pulling the hops out of cold storage. Cascade, Centennial and Columbus were the order of the day. An early addition of Columbus for bittering and a blend of Centennial and Cascade in later additions for aroma and flavour really balanced the brew.
