There’s no question about it… sports matter! I recommend all kids participate in sports while growing up. Children who take part in sports when they’re young are not only physically healthier, but they’re also mentally and psychologically healthier as well. Consider this: most people quit. It’s as simple as that…most people quit. But, it’s no secret that successful people never quit. It frequently comes down to being just that simple…success or failure hinges on simply never giving up. One of the first things that all young people learn in sports is to never give up on a game. They learn it early and it’s reinforced often to never quit. In every sport there are numerous examples of teams trailing in the late stages of a contest only to respond with a rally to win in the final seconds. They grow up, not just thinking, but knowing that it’s never too late to win if they just don’t quit. Calvin Coolidge said: “Nothing in the world can take the place of persistence. Talent will not; nothing is more common than unsuccessful men with talent. Genius will not; unrewarded genius is almost a proverb. Education will not; the world is full of educated derelicts. Persistence and determination alone are omnipotent. The slogan “Press On” has solved and always will solve the

But…there’s more. In sports we learn to make the first move, not just stand around on the fringe, afraid to make a move and jump in. When you hesitate in life, it’s like the universe takes the attitude, “It doesn’t appear that you’re very serious about this. Once you develop some commitment and make a decision, maybe then you will get some help.” It appears that whether we’re talking about relationships or jobs, one of the major problems in life is a lack of commitment. And, in other areas of life, when one person makes a commitment, sometimes it gives another the courage to commit as well. Yes, sports matter. It really doesn’t matter whether one has great talent or any talent at all, for that matter, it only matters that one plays. And, in fact, once one starts to play, a vein of talent buried deep inside can be revealed. Another lesson learned…not all talent lies on the surface, sometimes we have to dig deep to find it. And finally, certainly sports teach how to take risks. It certainly takes risks to succeed in sports and in life. Sports also teach how to deal with failure. It teaches that it often takes many failures to eventually succeed. Sports also teaches that when we take that risk and go out on a limb, sometimes it breaks… but, more often than not we land on our feet. MDA telethon gets new start In an era when change seems inevitable, so it is for a Labor Day weekend television tradition. The Muscular Dystrophy Association’s annual telethon already has undergone considerable change in recent years, ending its long association with Jerry Lewis ... and also going to a much shorter format rather than remaining an almost 24-hour event. And this year, one network is generating another change. After being shown on an ad-hoc collection of local stations across the country for decades, the fundraiser will air exclusively on one network – ABC – for the first time as a two-hour program in prime time Sunday, Sept. 1. The newly renamed MDA Show of Strength Telethon will feature the usual mix of celebrity appearances, musical performances and informational segments, but in a package more tightly organized than ever. That’s appropriate in the view of the show’s executive producer: R.A. “Rac” Clark, son of the late, legendary television personality and producer Dick Clark. He also had that job last year when the MDA Telethon still was syndicated, and while it also was presented then in a vastly shortened form (three hours, after going down to six hours in 2011), he sees room for even more innovation this time. “I went to the MDA when they were looking for producers,” Clark says, “and I deconstructed what I thought were some of the issues around the telethon’s format, even

at its six-hour length. That (viewing commitment) is just not what people do anymore. We live in a 140-character world, and I said, ‘We’ve got to make it more contemporary.’ “I grew up in Youngstown, Ohio, with my mom, and I used to stay up all night watching the telethon, because that was the moment before school was starting. And I loved it, but that was back in the ’60s and ’70s, and times have changed. Based on what we did last year, we were able to go to ABC and say, ‘This is what the show is evolving into. We need the carriage. We need the viewership. We need a network behind it.’ ” Clark reports he and the MDA also went to “the other majors,” but ABC ultimately was the network that stepped up. “After last year,” he says, “I went back to the MDA and told them, ‘You have a network-quality show that can now be pitched there,’ with the production value and the name value and a cause behind it. When you look at all the other cause-based entertainment programs, the MDA Telethon now stands up to them in this new arena.” The names of the included celebrities support that. Among those slated to appear at this writing were Ryan Seacrest (“who’s going to kick off the evening for us,” Clark notes), Paula Abdul, Backstreet Boys, Matthew Morrison (“Glee”), Enrique Iglesias, Darius Rucker and Florence Henderson. “The more entertainment you put in, the better off you are,” Clark reasons.

Randy: Zombies being all the rage these days. It’s refreshing to see a light-hearted and touching take on the genre. Unlike the romantic zombie film we saw earlier this year, this one is quicker paced.

Stan: Tragically inspiring as the stark realities tug at your heart, “Short Term 12” under the sure handed guidance of writer/ director Destin Daniel Cretton and outstanding performances by the cast, reminds us of that basic human element for optimism called, ‘Hope’. Randy: Emotionally draining, but worth every minute. Shortlist Bree Larson for Best Actress now, as she is a surefire contender. The supporting staff of teens are all just as impressive. Joseph: “Short Term 12” is a deeply affecting film that earns each and every one of the emotions felt by its viewers in an exceptionally genuine way, demonstrating how hope always exists - even when it appears as though all hope is lost.

Stan: Director/writer Anaïs Barbeau-Lavalette’s powerful film on the Israeli-Palestinian conflict through the eyes of a Canadian doctor working in the West Bank while living in Jerusalem, left feelings of extreme fortunateness to have been born in the US... Randy: A winner at this year’s Phoenix Film Festival; the story tackles the Middle East crisis through the eyes of an obstetrician. While a unique perspective, the film is quite forgettable minus the tough subject matter. Joseph: “Inch’Allah” is beautifully shot and incredibly well intentioned but its pace is somewhat too slow and its story too loose to leave viewers feeling as emotionally impacted as the serious subject matters suggests they should be.

since there are already so many zombie movies out there - and a lot of them quite generic with nothing new to say. So we really just tried to take a different spin on it.

“If you look at the film’s theme, it is about someone who is becoming ill. One of the driving factors of the story was this idea of aging and dementia. I had a grandparent who suffered from dementia so that idea of slowly losing someone is something that is definitely in the film. The zombie element represents the progression of that disease. And I think that is kind of a universal thing that everybody can sort of relate to - people getting ill around them and having to deal with that.” - Keith Wright

“Basically, I was looking for an interesting project. I was really interested in making a zombie film. But there are so many zombie films out there. In fact, if you go to something like IMDB and put in the word ‘zombie,’ there are like thousands of results. So I was really interested in trying to come up with a different spin on the zombie film. I wanted to try to do something that had a little more depth to it that wasn’t sort of like just a slasher movie.

able to do that because I had never really done anything like it. I feel like Jayden has so much going on.

“It was such a deep and beautiful script. Destin Cretton wrote and directed it. I feel like it was his. He knew the backstory. He knew everything. And it just came out on paper. To be able to bring it to life with [Brie Larson] and the whole cast was just so awesome. And then for us to win the Grand Jury Prize at SXSW was so amazing.

WATER! We have already talked about Hops, Malt and Yeast when it comes to beer. There is just one other key ingredient remaining… water. Water, it sounds fairly simple, but variations in water from location to location can have a major impact on the drinking experience. We have talked about applying the concept of terroir to beer before, but water is the one ingredient where terroir can be absolutely critical. Nothing is a more fundamental and obvious beer ingredient than water. At up to 97% and always over 90%, water simply is the largest percentage ingredient of any beer. It accounts for much of the flavor and perceptions of any beer when it is finished. Entire styles are accountable to the profile of water, from the hardest water from Burton-On-Trent which is perfect for hoppy pale ales to the roundness and malty character of Bohemian Pilsner which comes from relatively fresh snow melt in Pilzen. It is a safe bet that the water source for a brewery can make or break any effort at quality. A now defunct major brewer named Olympia used to claim, “It’s the Water....” For years Coors has told us how important the Rocky Mountain Water is to their original Banquet beer. So why is it so important and yet so casually thought of by most consumers, and even some brewers? The answer is simple; it is easily available and just seems to do its job of making barley and hops turn into beer.

There are several things brewers must consider about their water source when brewing a beer. First, water must be clean from biological, physical and chemical contamination in order to be suitable for brewing. Second the mineral content is going to have an effect on pH, enzyme activity, hop perception and clarity of finished beer. Direct well, river or lake sources can have wild variation in suitability for brewing. At any time of year, the mineral content of both brewing friendly and beer shattering compounds will fluctuate. Sulfur and iron are the two most common minerals to find, which will ruin beer if present in large enough quantities. While most municipal sources are free of biological and physical contamination, the chemical purity can be more suspect. Most municipal sources are treated chemically with either chlorine or chloramines to maintain biological cleanliness. It is a necessary tradeoff to have a safe to drink supply, but brewers still must address it. Chlorine can be eliminated in simple ways, such as simply letting it gas out of the water over time (usually overnight) or by pre-boiling the water. Chloramines are not as easily degraded. Chloramines will breakdown with the use of campden tablets, which will break the chloramines into calcium, water and bicarbonate. Failure to deal with chlorine or chloramines can result in yeast metabolizing these into harsh medicinal notes called chlorophenols.

Fortunately for large scale brewing operations there is another method, filtering, but more about that later. Minerals in beer are numerous and many are flavor or stability neutral. When we look at our water supply, we tend to concern ourselves with salts, calcium, carbonate, sulfate and certain trace minerals, such as zinc. Some of these trace minerals can be a very critical factor in the beer. While they typically serve as nutrients for the yeast, in high amounts, many minerals can have a detrimental effect on beer such as actually inhibiting yeast or producing metallic flavors or haziness. Most water supplies have some mineral content and do not need to be treated in order to make beer. Unless, the brewer is going for a particular characteristic, in which case changes might be made. The initial solution seems simple, just used distilled water. Distilled water, however is not suitable for brewing because it lacks any supporting minerals and therefore inhibits enzymes and yeast. Some understanding of water minerals helps in understanding beer production and flavor. Calcium is a necessary yeast nutrient and is abundant in most waters. Brewers add calcium in the form or gypsum and calcium carbonate. While we cannot directly measure the level of these in water, we can find their individual parts in the form of ions. It is these ions that react with the other ingredients to form flavor, chemical

and biologic reactions within beer. Calcium is a major force in these reactions, reacting with malt phosphates to lower pH throughout the brewing process, helping protein coagulation, and even preventing or slowing some color changes in wort. Besides a yeast nutrient, calcium also helps with yeast flocculation and beer maturation. Some of those words may sound a little technical, but trust me, they are important to the process. Every water district can tell you what sources are used for a given area and can provide a water profile, which shows yearly averages of the minerals. Watch for high levels of iron, which can give a coin-like or metallic flavor or high levels of zinc, which is a haze inducer and can be toxic to yeast. Brewers carefully analyze their local water to determine how to treat it in order to maximize the positive impact on their product. As touched on earlier, it is not uncommon to use a filtering system to achieve specific water results. These filters are produced for two purposes, to filter out any undesirable impurities in the local water, and to add in desirable elements to create the exact water profile the brewer wishes for. In some instances, different beers produced by the same brewery will require different profiles for the water, so different minerals will be added back in to produce the desired effect. A survey of beer production around the world will find that softer waters tend to favor the production of lagers and darker ales while harder waters favor the production of paler ale styles with more hop presence. Here are just a few of the major brewing centers: Burton-on Trent: This is perhaps the most well known of water profiles for brewing beer. For centuries, Burton has been associated with the brewing industry. This is due to the quality of the local water, which contains a high proportion of dissolved salts, predominantly caused by the gypsum in the surrounding hills. shipped further afield. It is no surprise that at least five breweries, including two fairly major ones, choose to produce their beer using this towns water. Pilzen: With an average of just 7 mg/l of calcium, this is the softest water on earth. The Bohemian Pilsner style tastes very malty, in spite of the higher hopping rates than it’s sister, German Pilsner. Widely copied, this style is the gold standard and originator of the whole pilsner family. Dortmund: The style of Dortmunder is widely misunderstood by brewers and judges alike. After a year of potential struggles, battling early frost in the fall before the vines have gone dormant for the winter, late frosts in the spring after bud break and then all the nature and weather-related hazards throughout the summer growing season, if the bunches of grapes have come to fruition, then harvest is the ultimate prize. During the summer, Arizona provides a unique environment for potential disaster, and it’s not the heat as most would think. Grapes actually love hot days as long as there’s sufficient protection from direct sunlight by a canopy of leaves. The reason Arizona wine country is generally located in high country is because they also love the cooler nighttime temperatures that are achieved in locations such as the Verde Valley, Sonoita and Willcox. The problems occur when monsoons begin to roll in. Although the rain is appreciated by the thirsty vine, too

much moisture can create rot in a tightly bundled grape bunch. Hail storms can destroy an entire vineyard, killing more than just the crop for that year. These storms can kill the whole vine, requiring it to be replaced and another two to three years of growth before it provides grapes that can be used for wine. Alcantara experienced this kind of an event after a microburst four years ago. Three years ago, many of the Sonoita vineyards experienced such a violent hailstorm that it looked like someone came through the vineyards with a machine gun… that year there was no harvest for many of those businesses. And then there are the pests, birds, deer and other predators that love to feast on the grapes. Oh, and wildfires. Here in Arizona we haven’t lost any vines to fire but wine has had to be destroyed due to nearby flames producing smoke taint. The good news is that most of the grapes will make it through this cycle and produce beautiful fruit contributing to wonderful wines. And

the celebration that occurs when this happens is the magic of harvest. Without struggle, the appreciation of the harvest would be lost and the celebration lessened. Join your favorite vineyards this year for their harvest celebrations!

Votto puts the ‘O’ in the Reds offense When Brandon Phillips recently said he was “still scarred” by the 10-year, $225 million contract extension given to Joey Votto last year, it not only set off media speculation over a possible schism between the two Cincinnati Reds teammates, but also debate among fans over whether the sixth-year first baseman was deserving of it. Votto was quick to dispense with the first issue verbally, by applauding the second baseman’s candor and being understanding of his cohort’s frustration with his own contract situation, and the second with his bat, by being an offensive force over his entire six-year career. Indeed, as of mid-August the 29-year-old Toronto native was batting .322 (fourth in the National League) with 17 home runs (tied for 12th), an on-base percentage of .436 (first), a .507 slugging percentage (ninth) and a .943 OPS (second). Those are pretty much in line with his career stats: 150 homers, .317 average, .418 OBP, .546 slugging percentage and .964 OPS. In fact no active NL player over the past six seasons can match any of those numbers, save the .553 slugging percentage belonging to Carlos Gonzalez of the Colorado Rockies. In terms of offensive worth to a team, Votto has few peers.

Carrier is a solid piece of shoegazestyle indie rock, but it could have been more. Dreamy guitars and a handful of neat progressions keep things interesting, but Carrier suffers from the misguided belief that you can’t have too much of a good thing. “Substance” is a great track because it juxtaposes gorgeous electric guitar strains with an unusual drum beat, “Transformer” is a nice piece of progressive rock that sounds like something out of the Explosions in the Sky catalog and “Confidence” starts small before growing into an out-of-control rocker that produces the album’s best moments. Unfortunately, Meric Long and Logan Kroeber don’t do much, vocally, to draw you in and most of the rest of the album employs an otherworldly, moody aesthetic that, while oddly beautiful at first, becomes too familiar by the end.

Portland-based band Fruition consistently offers a beguiling mix of Americana, folks, bluegrass and roots rock, and their latest album is no exception. “Broken Hearted” marries acoustic sensibilities with pleasing vocal harmonies and light percussion, sometimes singer Mimi Naja grabs your attention on the mid-tempo shuffling love song “Whippoorwill,” and the lightningfast bluegrass of “The Wanter” will dazzle you with its speed, lively sound and Naja’s gleeful tale of not wanting to settle down. Whether crooning about their love for someone (“Blue Light”) or for their hometown (“Portland Bound”), the band infuses many of their songs with an engaging energy, even if the songs themselves are sometimes a bit subdued. Just One of Them Nights is a nice little release.
