Zombie Walk Phoenix Heritage Square, downtown Phoenix Zombie Walk is a gathering of the undead. The festival before the walk offers a full day of family friendly events including live music, Lil’ Zombie Zone (2 p.m. to 8 p.m.), makeup artists, fortune tellers. 10,000 zombies are expected to line up at dusk (about 6 p.m.) for a slow-paced shuffle through Downtown Phoenix. Structured as a fake newscast, it fooled quite a few people who missed the disclaimer and took it for the real thing. The event is revisited via interviews with Welles’ daughter Chris Welles Feder, filmmaker Peter Bogdanovich and others.

“With her head tucked underneath her arm, she walks the bloody Tower.” Legend has it that the ghost of Anne Boleyn haunts the Tower of London, where she was beheaded in 1536. That’s one of the tales – not all of them legends – told in this new special, which takes viewers into rarely seen parts of the thousand-year-old landmark, site of many infamous executions.

Jason Hawes and the TAPS team are in the Cooperstown, N.Y., area in this new episode, but they’re not looking for the ghosts of baseball seasons past. They’re visiting Hyde Hall, an imposing 19th-century mansion reputed to have been cursed by its former owners during a family feud. They get what they came for – some thoroughly chilling evidence of paranormal activity – in “Hyde and Seek.”

The Flying Dutchman, composed in the earlier stages of Wagner’s career is known for its theatricality, displaying hints of the orchestral genius that evolved throughout his lifetime. 2013 is the 200th Anniversary of Richard Wagner’s birth, and Arizona Opera joins companies around the world in celebrating his life through performances. The Flying Dutchman is based on the legend of a Dutch sea captain condemned by the devil to roam the ocean. Once every seven years the Dutchman comes ashore to search for the woman who will be his only salvation.

Tucson: Nov 23 & 24 in Tucson Music Hall Arizona Opera brings the monumental opera, The Flying Dutchman to the stage in November, with lead cast members hailing from the top opera houses of the world. Mark Delavan, considered the foremost baritone interpreter of Wagner on the scene today, takes the role of the Dutchman, following his recent appearance as Wotan with New York’s famed Metropolitan Opera. I was young, we were all hoping that our parts in the movie would lead to other jobs and it was an exciting time - the beginning of all of our careers. And just the chance to work in such a creative atmosphere I think is what delights me the most. When I recall having worked on many other movies since then, there is nothing that compares to the ambience. It was pure fun. “I totally appreciate the experience. I felt like I was a major player and

wasn’t just some hired actress to be the director’s puppet. I was actually a contributor on the film. That is how John Carpenter made us all feel. We were collaborators. And there is nothing more special than that. On ‘Carrie,’ we were all sort of pawns in Brian de Palma’s game. That is how we felt and we would all laugh about it. That is really the way that it is supposed to be, though. It is very unusual for a director to have his set feel like you are really a collaborator. “It seems like just yesterday. I can recall the memories at the drop of a hat. It was such a fun time. It is astounding to me that it has been 35 years and the interest continues to grow. It is totally amazing. People have tuned into it and get a good feeling from watching it. It is a scary movie, but it is also

You are watching these two characters that are really alone in the world and are trying to find themselves and find some sort of friendship.

MACK NEWTON ON… You Can’t Do That! Why do so many people let their dreams die unlived? I think I know the answer. I’m sure that are many different opinions on this subject, but I think the biggest reason is all the discouraging remarks from other people. It’s all the negative and cynical attitudes from others that undermine the brightest of possibilities. So, these people must be enemies, right? No. They are friends. Your friends. Yep…friends…even family members that try to dissuade you from taking this great chance…to talk you out of making the most of a wonderful opportunity. Our enemies never really give us too much trouble because they don’t really know very much of what’s going on in our lives. Not only that, but we keep enemies at arms length and we can handle them fairly easily. It’s the put-downs from your friends and family members… always punching holes in your dreams with all the “what ifs” and the doubting glances and smirks. A constant stream of negative vibes coming your way and it all says “You can’t do that!” I remember when I had my first interview with the Oakland A’s to convince them they not only did they need a conditioning coach, but they needed ME to be that coach. I was so-o-o-o excited that I called a really good friend back in Chicago to tell him the good news and get some positive encouragement. The first thing out of his mouth was “Are you kidding me? You don’t know ANYTHING about working with a professional baseball team.” Just a few

moments before, my heart was pounding with excitement and I was looking forward to maybe taking my life in an entirely new and exciting direction. But now…all I could hear was the smirking in his voice over the phone, as he listed all the problems and obstacles I would encounter. Naturally, I hadn’t thought of any of those things, I just wanted this opportunity to do some real, challenging, meaningful work…work that while maybe outside my experience level at this moment, certainly would expose what I thought was my real talents and abilities. It’s like someone turned on a faucet and I could feel the enthusiasm flow out of my body. My tone changed and my confidence dropped as I began to second-guess myself. I thought “Maybe he’s right…maybe I’m just too far over my head with this thing. Maybe I should call them and cancel the appointment. Well, I didn’t call and cancel… the next sound my friend heard was a dial tone as I hung up the phone. One of the easiest things to find on God’s beautiful green earth is someone to tell you what you can’t do. Don’t listen to them! Turn them off! Hang up the phone! My Great-Grandmother was a great believer in individual effort and taught me to believe in myself, as well. Even now, every time I hear someone say the words “I can’t”, I remind them that if they will just believe in themselves and give it a serious effort, they’ll be surprised how many good things can happen. For those of you who may not know… I spent 9 years as the conditioning coach of the Oakland A’s , earned 3 World Series rings, gained an international reputation as a fitness guru and still attract athletes and executives from all walks of life and from all over the world to my training hall in Phoenix. You can’t blame the 80s punk band The Dead Milkmen for writing a song called “Bitchin’ Camaro.” For almost half a century the Chevrolet Camaro has been at the head of the field in American pony cars. Whether you’re looking at the legendary Z28 or the iconic IROC-Z, Camaro has been able to reinvent itself more times than Madonna without going Mickey Rourke on us. Take the latest incarnation that blew plenty of minds after Transformers hit theatres in 2007 and Bumblebee introduced the fifth generation Camaro to the masses. Who didn’t want to sport that fine lined beauty? Now in its third year the fifth-gen is going yard on the competition. It’s got a bigger engine more and horsepower

than the Mustang and costs almost $10,000 less than the Challenger SRT8. While keeping things stock the Camaro is a safe bet — in more ways than one. The 2013 Chevrolet Camaro received a five-star safety rating in every facet of the National Highway Traffic Safety Administration’s New Car Assessment Program. This marks the first time a car has scored that well. Chevy has taken preemptive measures to keep drivers safe before, during and after a collision. A traction control system powered by StabiliTrak Electronic Stability Control System keeps the car maneuverable in worst-case scenarios. Complementing this system are some seriously hardcore brakes that I tried out at a full gallop. “I think I need to put on my seatbelt,” were AZSAL publisher Joe Orr’s exact words as he sat shotgun with me on the ride. standard airbags were at the ready had I felt a little too cavalier, while OnStar was on standby prepared to put me in contact with emergency help responders. Fortunately, I’m not as rash as I used to be. The relatively fuel-efficient 6.2-liter V8 engine offers a combined 18 miles per gallon. Not bad for a car that rocks a zero to 60 time of 4.2 seconds. The Camaro handles great. I turned off the traction control and floored it around a 90 degree turn getting a little sideways, but the quick and responsive steering made holding my line seamless. From the outside, the Camaro has some of the sexiest lines you could ask for. The front end alone gives a confident grin from fender to fender. Sleek side skirts compliment the ample back end. I like my cars with a little more on the inside. The interior of the SS is unabashed in its aesthetic appeal, with leather trim, deep bolstered seats, and an absolutely bad-ass heads-up display that projects your tac and speedometer directly on the windshield in front of you. Unfortunately, the cockpit is small and the designers had to choose looks over visibility, which is apparent when checking blind spots and reversing — though the back-up cam does help out a bit. Then again, what do we buy these muscle- bound titans of the road for anyway? To hang out in and relax? Of course not. It’s all about the image baby. POURING AND TASTING BEER There are a number of factors that influence the beer drinking experience, including choice of glassware, temperature of the beer, and your individual palate. Anyone can drink a beer, but to be able to really taste it and distinguish it from others, takes practice and skill. Glassware Like wine, beer can be enhanced or degraded by the type of glassware used. The shape of the vessel allows the carbonation to escape and the nose of the beer to enjoy fully. Of course, you can drink a beer out of any glass, but it wouldn’t have the same aesthetics.

Clean glasses are a big factor in the beer world. “Beer Clean” is a term that is used to make sure glasses are not only clean, but beer clean - meaning it won’t change the taste or head of the beer. Soap is a no-no when cleaning beer glasses. It leaves a film on the glass that you cannot see, but you may taste and you can observe the results in the lack of head you would otherwise get. There are commercial products for cleaning glasses to get them beer clean or you can use baking soda. Air-dry the glasses. If you see water spots after it is dry, clean them again. Do not freeze the glasses. This adds water to your brew and the cold glass can change the temperature of your brew.

Chalice These are typically for Belgian abbey and Trappist style beer. They can have a look of royalty about them. Sometimes they are more “V” shaped with either straight or an inward curving top, sometimes rimmed with a precious metal. The stem is thick and the length is usually rather short. Flute Typically seen with champagne, beer flutes have shorter stems than champagne flutes. The mouth has a smaller diameter than the mid-section to hold in carbonation.

Typically they have a round bowl and come in various sizes. They are somewhat like a brandy or cognac snifter. Use these for high alcohol sipping beers. Kolsch Looks like a cylinder. The kolsch glass has straight sides and is tall. These glasses typically hold 10- 12 oz. Mug, krug, seidel The only beer glass with a handle. Typically very heavy and sturdy. They can have different textures and come in different sizes.

Goblet Goblets can resemble a fishbowl.

...CONTINUED FROM 50 Pilsner glass These also are tall, somewhat thin walled, sloped glasses with a solid base. Their capacity is usually 12 oz. Pokal Apokal is a European pilsner glass with a stem. Can look similar to a tulip without the flare at the top or similar to a chalice with a smaller less angular bowl.Holds 12 oz. Pub glass or Pint glass Probably the most common beer glass. Straight, thick sides at a slight angle making the mouth of the glass larger than the base, typically holds 16 oz. You may also come across an Imperial Pint glass. These hold 20 oz. have somewhat thinner sides and a bulge about 3/4 of the way up the glass. These also come in 10 oz. half pint sizes. Stick or stange This is a taller, thinner version of the pilsner glass, very similar to the Kolsch glass. Holds 12 oz. Tulip glass The tulip glass looks somewhat like a tulip, hence the name. It can have a stemmed base and roundish bowl, which thins out about 1/2 way up the glass then flares out slightly. It can also be similar in style to a pint glass, but has the tulip flare. Holds 16 oz. Wheat beer glass These are tall, somewhat thin walled, sloped glasses with a solid base. They are typically 1/2 liter in capacity. They resemble a pilsner glass, only taller and usually wider at the bottom. Willibecher or becher Similar to a pub glass, but thinner walls and they stop angling out about 2/3 of the way up the glass and become straight at this point. Yard As the name suggests - it is about 3 feet long. They are awkward and can be quite fragile. They hold almost 3 pints. They also come in half yards. Pouring Pouring is the next step in enhancing the flavor of your beer. The proper pour releases the aromatics just right and sets up the taste of the beer. 1.

Get a “beer clean” glass of your choice. See the glass guide for the proper glass.

2. Open the bottle. 3. Tilt the glass about 45 degrees and pour the beer in the glass first making contact along the side starting about 1/2 way from the bottom. 4. As the bottle gets half way empty, turn the glass upright and continue pouring into the center of the glass. 5. You can increase the amount of head by putting more distance between the glass and the bottle or decrease it by pouring more beer in the glass before you tilt it back up. There is a swirling technique that can be used for wheat beers or other beers when having the sediment in the glass is desired. To do this pour 2/3 or so into the glass. Then with the remaining 1/3 in the bottle,

hold the bottle upright and gently swirl the bottle in small circles for a few seconds. Pour the remaining beer into the glass. This can also be done to increase the head volume. Note: If the beer is too cold the head will not form properly. If it is too warm you will get too much foam and the beer will go flat quickly. Depending on the beer, anywhere from 38 to 55 degrees may be appropriate. Tasting and evaluating Tasting beer is not only done with your tongue. A proper tasting or evaluation involves sight, taste, sound, smell and touch. In order to properly taste beer, first of all you need a suitable environment. A loud bar is not necessarily the ideal place for this. You should be in a quiet, relaxed, odor free atmosphere with

good light. You should have white walls, tablecloth, or placemat available to properly judge color. You should also have your tasting journal, writing utensil, “beer clean” glasses and bottle opening devices. If you are doing a session with multiple beers, you should also have a palate cleanser such as water and bread or salt-less crackers. It is a good idea to get a notebook or a journal of some type and keep notes on the beers you taste. This can be a good way to compare beer or evaluate how your palate is improving or deteriorating. For home brewers it is good way to check your brewing progress, see how well your beer ages, and get ideas for future recipes. Now that you have everything set up, have a seat and get ready. Open the beer and pour it into the glass. Observe the head, the consistency, the color, the clarity, the aroma. Hold the beer up to the CONTINUED ON 54...

TASTE OF CHANDLER FOR BEER! Hello again beer lovers, today let’s chat about Taste of Chandler, a culinary festival held this last weekend. What is special about this annual celebration are the ample opportunities to pair many local beers with small plate dishes from restaurants all over the city and all in one place. This year the festival was moved from the downtown area to Queen Creek and Price roads in South Chandler. Just like everything else that moves away from the downtown area the differences were amazing. This year festival promoters Landon Evans and company really got it right.Parking was a breeze, the lines were short, live entertainment was perfect and the beer and food selections were amazing. Food favorites included El Palacio’s traditional tacos, San Tan Brewing Company’s Mr. Pineapple Pulled Pork, The Keg with its twice baked potato, everything from Floridinos and newcomers H&H City Pizza with their all meat masterpiece. The Keg won the overall award this year for the best dishes which is not difficult to fathom once you try those potatoes.

Tasting beer with all of the dishes provided on this fine evening was a blast. What I love more than anything about festivals of this nature is the opportunity to learn and experience more about pairing. A little nibble here, a little sip there, amazing stuff. As a matter of fact, some were bloody terrible but it was fun finding that out first hand and even more satisfying when one came together beautifully. If the beer is too cold you may need to warm it by holding the glass in your hands for a bit. You may also cover the mouth of the glass with your hand for a few seconds then as you remove your hand, smell the beer. Make notes about what you smelled. Pay attention to the hops, malt, fruit, yeast, off aromas and so on. Finally, taste the beer. Take a sip and allow the beer to come in contact with all parts of your mouth. Gently swish it around or “chew” it to help distribute it better. Now, swallow the beer and exhale through your nose. Make notes as to what you have tasted. Pay attention to mouthfeel, initial taste, mid taste, aftertaste, body, and flavors. You can repeat the smelling and tasting parts to catch anything you may have missed. As the beer warms up you can make further notes, as the flavor and aroma may change slightly.

It is a good idea to know your palate. If you have been ill, burnt you mouth on spicy or super-hot food, smoke, have palate fatigue from tasting other items, are exposed to chemicals or otherwise have impaired your sense of smell or taste, keep this in mind when evaluating. It is best to wait until your palate has recovered before doing any serious tasting. It takes about 10 days or so to recover from a burnt palate. To really get into it, there is a chart or tasting wheel put together by Morten Meilgaard in the 1970’s. The beer flavor wheel has 14 categories broken down into 44 flavors. Beer has been found to have over 1000 identifiable flavors. An experienced taster can pick out maybe 100. I recommend doing some research in taste science or flavor chemistry to learn how the different flavors are perceived. There are a number of good publications available to help get you going down the right path.

But the steps above will help you enjoy beer a little more when you do want to delve in to exactly what makes beer wonderful, and help you determine what you like best in a beer.
