Nick@ Night By Nick Connell This weeks meanderings include dancing, singing, big bands, fun at the fair, vibrators (yes, electrical ones), and MegaMinds .Thank God for the beautiful weather and the multitude of arts available! 42ND STREET

At Arizona Broadway Theatre in Peoria.

Welcome to Arizona Broadway Theatre’s opening show of their sixth season, 42ND STREET. And what a marvelous show it is! This may be the best all singing and dancing show the valley has ever seen. After an opening curtain sneak-this show commences to blow the top off 42ND Street and bring to life the dreams and loves of some NY show biz people who never took no for an answer! This story parallels the Klaphake family too, who produce and direct at the theatre (Kiel directs this production), waited for their chance to shine with ABT-and the rest is history. Loaded with a top notch cast of dancers, led by Kelly Moran as Peggy Sawyer and Matthew Alexander as Billy Lawlor, starring Phillip Peterson as Director Julian Marsh and Morgan Springer as Dorothy Brock, with great choreography by Curtis Overby, a hot keyboardist and conductor in Adam Burger and Bill Moore, and you have the hottest show in town! I can’t wait to see this show again-and you will too! Through Nov.21st Tickets 623-776-8400 or AzBroadway.org IN THE MOOD

At the Herberger Theater Center

Let me first say Kudos to Bud Forrest and his production company for bringing his touring production of IN THE MOOD to the east valley for an encore production of this 1940’s Musical Review. Forget all the intellectual trappings and euphemisms to describe this grand show-this is pure and simple, a labor of love to present some of the greatest big band music ever written in American history! Bud and his big band, with a darling cast of dancers and singers, have hit a nerve in this country that brings back the truth and memories of a victory that needs to be celebrated now more than ever. What a wonderful and grand show he’s produced! Utilizing the musical talents of Michael O’Dell and The String of Pearl’s Orchestra, with the talented and funny In The Mood Singers and Dancers, led by Elizabeth Baumgartner, this is pure bliss with over forty songs and dances made for enjoyment! If you missed the shows, go online at InTheMoodLive.com and you can order this spectacular soundtrack. IN THE NEXT ROOM (or the Vibrator Play) At Actors Theatre in Stage West at The Herberger Theater Center. Are you ready to laugh out loud-even uncontrollably-without rhyme or reason? Then get over to see Actors Theatre’s production of The Vibrator Play. This quirky look at the spoils of prudish America back in the day is pure Edison electric and fun! You’ll get to peek in on the Dr. Givings family(Francis Jue as the good doctor and Angelica Howland as his frustrated wife Catherine), the Daldry’s(with Erica Connell as the relieved wife and Cale Epps as her unfaithful husband), a most peculiar artist Leo Irving(played with zeal by Zac Yorkovic), and a deprived nurse, Annie(played by sensual Lauren Dykes).Don’t forget you’ll get to hear and feel the great “mechanical devise” of the new century- the vibratorwhich by now has replaced many a meaningful relationships and made millions for the porn industry. Ah, the progress of technology and the internet. But there’s nothing like a live performance-just ask the audience. Through Nov. 14th Tix.602-252-8497 ActorsTheatrePhx.org Finally, for good pure fun head to the Arizona State Fair, where they give away t-shirts, have free concerts, exhibits to explore and rides for the whole family! Oh, and don’t miss MegaMind opening this week-maybe there is a cure for the bullying mentality troubling the country? BREAK A LEG!

ARIZONA BROADWAY THEATRE SET TO CELEBRATE 5TH ANNIVERSARY IN STYLE

8

On November 4, 2010, Arizona Broadway Theatre will celebrate its fifth anniversary. The vision and goal of Arizona Broadway Theatre has always been to offer a total entertainment experience – a one-of-a-kind venue combining quality dining and professional theatre – at a great value. However, as the axiom goes, nothing worthwhile comes easy.

When construction began in late fall 2004, ABT’s founders – Kiel, Cassandra, Ronald and Penelope Klaphake – expected the theatre to be completed by September 2005. Construction delays, however, caused a slight detour on the theatre’s way to settling in at 7701 W. Paradise Lane. “We forged ahead and opened our first show, Anything Goes, in a large pavilion (okay… tent) at the Peoria Sports Complex,” Klaphake commented. “Our patrons experienced food prepared in a dug-

out kitchen, an array of daytime and nighttime temperatures, baseballs landing on the roof, and street sounds at the most inopportune times. (Not to mention one heck of a show!) But, our customers endured (as did our employees) and we finally opened in our new facility on January 3, 2006.” Now, in five short years, ABT, a notfor-profit organization, has hired 322 actors (many for multiple contracts) and has produced 37 mainstage shows culminating in nearly 2,000 performances with 416,664 tickets sold. ABT has worked tirelessly not only to raise the level of professional theatre in the Northwest Valley but also to be at the heart of a culturally rich community. Currently at ABT is the synchronized tap-dance celebration of New York City, 42nd Street. Even before its opening performance, 42nd Street had to be extended due to audience demand. It will now run through December 4. “This is quite a gift,” mentioned Brad York, ABT’s Audience Development Associate. “It’s been a pretty good couple of months for us, first with Phoenix Magazine naming Arizona Broadway Theatre the ‘Best Playhouse’ in the Valley, and then with the ariZoni Awards ABT won for this past season. Now to be able to extend our production of 42nd Street is quite a thrill,” York continued. “The exten-

sion allows us to open up more seats to this already popular show. We had many performances with very limited seating, so now we are able to accommodate those who were unable to find tickets to the more popular nights of the run. Also, this gives us the chance to work with some of the communities that were interested in bringing groups to this production that we just didn’t have room for. It’s a win-win situation for everyone,” York added. This sparkling song-and-dance extravaganza is directed by ABT Executive Producer Kiel Klaphake, fresh from his successful turn directing ABT’s first non-musical, Lend Me a Tenor, and features original choreography by Kurtis W. Overby, ABT’s Artistic Associate and 2010 ariZoni Winner for Best Choreography. Inspired by Busby Berkeley’s 1933 classic movie, 42nd Street tells the

story of a humble chorus girl who becomes an overnight success when she steps into the limelight on short notice to replace the injured leading lady. “Broadway of the 1930s was much different from Broadway now,” Klaphake commented. “Today, if you visit New York City to see a Broadway show, you go to Midtown--the heart of the city. Back in the 30s, 42nd Street was way uptown,” Klaphake continued. “After dark, anything was possible and available for sale; crime was everywhere, and it was a very unsafe place to be. The whole scenario is depicted in the musical number ‘42nd Street’.” Following 42nd Street, the season includes: My Fair Lady (January 7–30, 2011), The Drowsy Chaperone (March 4-27, 2011), The Full Monty (April 22-May 15, 2011), All Shook Up (June 3-26, 2011) Baby (July 22-August 14, 2011) and Steel Magnolias (September 2-25, 2011).

Recently, Nick Connell with AZ Weekly was able to interview Penny Smith Umbertino, granddaughter of Dr. Bob Smith from AA fame, and the current production Dr.Bob and Bill W playing its final weekend at the Broadway Palm in Mesa. Jon Sweeney, Editor of Spiritual Innovators, has stated that “Dr.Bob and AA, may just be the most important spiritual organization founded in the past century.” AW: What was it like growing up with your grandfather Dr. Bob? Penny: He was a brilliant man of few words. He was from Vermont, and if it was left to Dr. Bob, then the original hospital with 12 beds would still be curing the disease-if it was left up to Bill W-it would have been franchised. So they met in the middle and that’s how AA came about. AW: How did it help your own family? Penny: My mom and my mom’s father were both alcoholics. Penny: There were many- conferences and gatherings-but one that I’ll never forget was a gentleman that came to Grandpa’s funeral. He was very kind and spoke highly of Grandpa. He finally disclosed he was Eddie, the first one that Dr. Bob and Bill W saved. I still remember how much love they had for him- and what he meant to them. AW: Were there any funny stories about Dr. Bob? Penny: He was very witty and smart in Bridge. One day, my dad asked him to explain what sex was about? He took my dad to the study, closed the door, and told him one thing; “Flies spread germs, so keep yours closed.” That was the end of the story. AW: What would be the lasting legacy of Dr. Bob and Bill W and AA? Silver Screen Scoop! By Joseph J. Airdo Warner Bros. Pictures is developing a major motion picture centered on ACME, the fictional manufacturer of the outlandish devices used by the studio’s “Looney Tunes” characters. The movie, which will combine live-action and computer-generated animation, is said to be reminiscent of the 1980’s Amblin Entertainment films. Be among the first to get the latest scoop from Joseph J. Airdo at Examiner.com.

Reviewers’ Roundup: ‘Tamera Drewe’ In “Tamera Drewe,” Gemma Arterton stars as the titular character, an attractive journalist who sashays back to the bucolic village of her youth - home to pompous writers, rich weekenders, bourgeois bohemians, a horny rock star and a great many Buff Orpington chickens and Belted Galloway cows. Using her newfound sex appeal, the once ugly duckling Tamera throws life for the locals upside down, causing infatuations, jealousies, love affairs and career ambitions to collide. “Tamera Drewe” (R - 111 minutes), based on Posey Simmonds’s graphic novel, opens Friday, Nov. 5. The following quotes were pulled from reviews written by AZ Weekly’s Film! contributors to present readers with a wider perspective about this new release. Read Stan Robinson’s and Joseph J. Airdo’s full reviews exclusively online.

Frears’s picturesque presentation of the movie’s English countryside setting and screenwriter Moira Buffini’s terrifically tangled web, free-spirited fun wins out in the end.” Grade: C

A Director with a Megamind By Randy Montgomery Megamind (voiced by Will Ferrell) is a super villain and “the master of all villainy.” His parents with nothing more than a minion and a binky sent him to earth. His destination once arriving on our planet as a baby; Metro City’s prison for the criminally gifted. While raised in prison he began building objects of mayhem. Megamind’s arch nemesis is Metro Man (voiced by Brad Pitt), a crime stopper who always thwarts Megamind’s evil plans. The two battle it out for years and enjoy a glorious rivalry. But, when Megamind finally rids Metro City of the do-gooder and is left to bring havoc upon the community, he finds himself down in the dumps with no one to play with. By accident, an even more devious character is born (Jonah Hill) and it’s up to Megamind to fight evil himself. Without Metro Man, he enlists the help of a local reporter named Roxanne Ritchi (Tina Fey). This laugh-out-loud funny animated comedy with quite a bit of heart from DreamWorks Animation is directed by Tom McGrath, who also has Madagascar and Madagascar 2 on his credit list.

Stan Robinson (ScreenScene.org): “English director Stephen Frears continues to demonstrate his expertise with interlaced stories, whether he’s presenting a living view of upscale English life as the Oscar® winning ‘The Queen’ (2006) or this ‘slice of life’ view of intertwining lives at an English countryside retreat. ‘Tamara Drewe’ is a lot of fun with the English subtleties of humor cleverly interwoven throughout the movie!” Grade: C+

In celebration for the release of Megamind, the studio held an event in Downtown Los Angeles a few weeks ago in the hopes of creating the largest gathering of superheroes on record. “The event was really cool,” says McGrath. “I wasn’t sure what to expect, but 1,500 people showed up in costume. It was amazing to see the variety. There were kids in Megamind costumes. It’s the ultimate compliment… kids dress up in their own homemade costumes (based on the film’s characters). We broke the record. It was great!”

Joseph J. Airdo (Examiner.com): “At times, ‘Tamera Drewe’ becomes a bit too tedious, resembling a convoluted British soap opera with its large ensemble cast of mostly unlikeable characters. However, thanks to the cast’s august acting, director Stephen

The L.A. Live event was a celebration of sorts, seeing as how it took McGrath, the cast and animators over two years and thirty recording sessions to create the final product. McGrath explains the process, “You find a story that is inter-

esting and develop the characters. Then we think about casting. Fortunately for us, everyone that we wanted agreed to do the movie. We record all of the actors before we do a frame of animation. That inspires the animators. The story always evolves as we go, in order to make it the best we can.” Not every line that made it into the final cut was scripted says McGrath. The cast was free to improvise a bit. “It’s fun to play around. It capitalizes on their talents when you go off the page and try things. Usually, it ends up being better than you thought. We can record hours of tape. For example, Will would improvise a scene one week and then we would record David Cross or Tina and they would improvise off that improvisation. We would go back and forth for a number of months with a scene until it was just right.” It took another year and a half and 400 people to complete the film and animation. “It’s a big production with a lot of artists. Even though I am the director, there is an insane amount of talent contributed to this movie.” After years of hard work, the reward for McGrath? “Watch kids and parents laugh and be moved.”

‘For Colored Girls’ Kerry Washington ecstatic about the opportunity! Interview by Stan Robinson One can feel the excitement and exuberance in the voice of actress Kerry Washington who’s starring with a very talented cast in director Tyler Perry’s latest ‘For Colored Girls’! Based on Ntozake Shange’s play “For Colored Girls Who Have Considered Suicide When the Rainbow Is Enuf”, each of the women portray one of the characters represented in the collection of twenty poems, revealing different issues that impact women in general and women of color in particular. Actress Kerry Washington shares insight on her role of Kelly, one of the women whose dealing with the impact of ‘sibling issues’ in the film! Kerry first became interested quite a while before she was cast in cast in the film, Kerry: “I heard a rumor over a year before he (director Tyler Perry)

Kerry’s character in the film is dealing with an age old family issue, siblings, Kerry: “Before we started the movie, I was doing a play on Broadway and that character was so harsh, she was very hard, and when I read this role I thought that Kelly would be the opposite of that, so soft, so caring, so fragile, and forced to witness so much.” With that thought of drawing on her character in a play and using the opposite for the role in ‘For Colored Girls’ I asked her which type of actor is she, one who stay’s in character all day on a shoot, or one who sheds it at each call of ‘Action’ and ‘cut’, Kerry: Wow, it changes for me! I tend to work in both ways, depending on what scene it is, depending on what character it is, and especially the type of emotions called for within a sequence!” On why everyone should see ‘For Colored Girls’ Kerry say’s “The film is a great emotional journey about a group of women who don’t know each other but become completely intertwined. And more importantly, it’s the kind of movie that makes one feel hopeful about life because its filled with truth, and the willingness to ultimately do the right thing, which really takes courage while facing the adversities that life sometimes, quite often in fact, sends our way!” ‘For Colored Girls’ is that film that will certainly give one the thought of pausing for a moment as it presents key issues that relate to the female characters in the movie, yet do cross the lines of gender for all of us who are a part of society today… It’s a powerful presentation that should not be missed!

WWE’s Big Show talks ‘Knucklehead’ on DVD By Joseph J. Airdo A ceiling fan is just one of a long list of things Paul “The Big Show” Wight bumps his head on in “Knucklehead,” due on DVD Nov. 9. And the 7-foot,

440-pound WWE personality performed all of his own stunts in the film. After all, it is not easy to find a stuntdouble for an actor of Wight’s particular build. “Every time I fell down or bumped my head, it was really me doing it,” laughs Wight, noting that “Knucklehead” provides audiences of all ages an opportunity to take a break from life’s many stressors and have a great laugh. “But maybe next time I’ll do some kind of action movie or something so I can take it easy. Comedy is hard work.” Read more from Joseph J. Airdo’s interview with Paul “The Big Show” Wight exclusively online at Examiner.com.

Tron Night hints at operatic ‘Legacy’s’ greatness By Joseph J. Airdo Moviegoers across the country last week had an opportunity to see a sneak-peek of “Tron: Legacy,” slated for release Dec. 17 in Disney Digital 3D and IMAX 3D. The exclusive event, dubbed “Tron Night 2010,” featured a selection of scenes from the first half of the film, which is a high-tech follow-up to Walt Disney Pictures’ 1982 classic starring Jeff Bridges. If this early sneak-peek is any indication, director Joseph Kosinski has created an operatic masterpiece, choreographed with outstandingly detailed precision, taking awe-struck audiences on an amazing adventure through a digital world that is beyond their wildest imagination. Best of all, “Tron: Legacy” features a seemingly timeless tale, complete with genuinely promising emotion, told through a hyperfuturistic filter generating an extremely unique entertainment experience. Stan Robinson’s ‘Capsule Reviews!’ ‘Due Date’ ~ Robert Downey Jr. & Zach Galifianakis, a likable unlikely pairing! The first thought of how could this

paring possibly work, slowly reveals poignant and insightful revelations for this road trip adventure as high-strung father-to-be Peter Highman (Robert Downey Jr.) is forced to hitch a ride after a TSA mix up at the airport that puts him on the ‘No Fly’ list, with aspiring actor Ethan Tremblay (Zach Galifianakis) in order to make it back to LA for his child’s birth on time. ‘Due Date’ is a pleasant surprise as the ‘night & date’ personality differences provide comedic and serious insight on the acceptance of the individuality that defines each of our own personalities! 3 ½ of 5 stars

‘Fair Game’ ~ Behind the scenes of a true event The true story of Valerie Plame (Naomi Watts) whose status was leaked to the public by the White House, allegedly out to discredit her husband (Sean Penn) after he wrote a 2003 New York Times commentary that the Bush administration had manipulated intelligence about weapons of mass destruction to justify the invasion of Iraq. This view of the ‘inside events’ that we all followed during prominent news coverage delivers exceptional drama by director Doug Liman, who is one of the forces behind the highly successful Bourne films! 4 ½ of 5 stars

‘For Colored Girls’ ~ Addresses issues for all women Based on Ntozake Shange’s play “For Colored Girls Who Have Considered Suicide When the Rainbow Is Enuf”, each of the women portray one of the characters represented in the collection of twenty poems, revealing different issues that impact women in general and women of color in particular. Directory Tyler Perry’s screen version of the play with an all-star cast, if one sets aside the title and the Black cast factor for “For Colored Girls’, the overall themes that are addressed in the film are highly reflective of issues that society as a whole is dealing, namely ‘the gay-lesbian issues’, ‘date rape issues’, ‘spousal abuse issues’, ‘soldiers returning from war’, ‘parent-child relationships’, ’sibling issues’, and a few more…

‘Megamind’ ~ Good fun with the ‘hero vs. nemesis’ theme After super-villain Megamind (Will Ferrell) defeats his good-guy nemesis, Metro Man (Brad Pitt), he becomes bored since there is no one left to fight, so he creates a new hero Titan (Jonah Hill), who instead of using his powers for good, sets out to destroy the world, which prompts Megamind to save the day for the first time in his life!

was going to be doing it and I wanted to be involved, its such a special piece of dramatic literature and the way that people responded to it on Broadway at the time! An interesting aspect is that it’s such a special piece of literature that is adapted to appeal to a wider audience really excites me about the film!”

With the additional 3D effect, ‘Megamind’ is fun family entertainment with a delightful spin on the old theme of the hero and the nemesis theme! 3 of 5 stars

‘Who Else To Blame?’ ~ Phoenix director’s feature film debut Deuandra Brown, who just received her B.A. degree in film & video production, spent months shooting and editing her first feature film while attending school! In the suspense thriller, the search for a missing girl deepens as the clues to her last moments only serve to complicate the investigation rather than help to find her. It’s a gallant effort by the first-time feature film director, her style reminds me of early Quentin Tarrantino with a wonderfully bazaar use of camera angles! Some Shows Not To Miss This Week...

Spike TV’s ‘Auction Hunters’ finds its drama in storage The publicity material for Spike TV’s “Auction Hunters,” premiering Tuesday, Nov. 9, asks, “Ever wanted to live your life like Indiana Jones?” But it’s unlikely anyone will mistake the buying and selling of the abandoned contents of rental storage units for the search for the Holy Grail. Still, the show, in which Allen Haff and Clinton “Ton” Jones size up, purchase and sell off said contents – hopefully for a tidy profit – isn’t without its drama and can be quite fascinating. Prior to each auction, they and other potential bidders have seconds to poke their heads in each unit and look through – but not touch – the merchandise, evaluate the competition, and then Allen Haff (left) and bid. Clinton “Ton” Jones

A man (Jason Ritter) searching for his missing fiancee stumbles onto a government cover-up in “The Event” Mondays on NBC.

Hosts Tom Bergeron and Brooke Burke preside as contestants trip the light fantastic on “Dancing With the Stars” Tuesdays on ABC.

“GROWN UPS” Adam Sandler leads a force of current comedy all-stars in this tale of several longtime friends reunited by the death of their high-school basketball coach. Chris Rock, Kevin James, David Spade and Rob Schneider play the other pals, and all the men use the Fourth of July gathering to reassess what they have – or haven’t – made of their lives and where they want to go from here. Serious as that may sound, those steeped in the Sandler brand of humor won’t be disappointed. ››› (PG-13: AS, P) (Also on Blu-ray)

Reunited with “17 Again” director Burr Steers, Zac Efron has a dramatic showcase in this emotional adaptation of Ben Sherwood’s novel. Destined for a bright future that includes a scholarship, Charlie changes his path after a car accident results in personal tragedy. The pain is reinforced by visions of his younger brother (Charlie Tahan), the accident’s victim, but new hope presents itself in the form of an ex-classmate (Amanda Crew). Kim Basinger and Ray Liotta also star. ››› (PG-13: AS, P) (Also on Blu-ray) “RAMONA AND BEEZUS” Beverly Cleary’s long-popular sister characters come to life agreeably via Joey King and Disney Channel staple Selena Gomez in a comedy that’s very family-friendly but best suited to the youngest household members. Ramona (King) comes to the rescue when her clan faces some big and unexpected challenges, as Beezus (Gomez) is struggling to adjust to high school. The adult cast includes John Corbett, Bridget Moynahan, Josh Duhamel, Ginnifer Goodwin (“Big Love”) and Sandra Oh (“Grey’s Anatomy”). Anna Kendrick and Mae Whitman also appear. ››› (PG-13: AS, P, V) (Also on Blu-ray)

Gina Gershon, Bai Ling and three-time “Breaking Bad” Emmy winner Bryan Cranston are featured. ››› (R: AS, P, V) (Also on Blu-ray)

T

Tootsie ›››› ’82 Dustin Hoffman, Jessica Lange. The Oscar-winning tale of a temperamental actor who becomes a sensation while posing as a woman on a hit TV soap opera. Directed by Sydney Pollack. (PG) (240) SHOW Wed. 8:30 a.m.; Sat. 7:15 a.m.

It’s no lie: Kelli Williams is hoping big returns will result from the third round of “Lie to Me.” The actress’s Fox drama series returned sooner than expected last month, upon the quick demise of the fall entry “Lone Star.” Williams takes that as a sign of confidence in the network’s faith in the show about experts in reading microexpressions, the slightest facial indicators of whether someone is telling the truth. “It feels great in a way,” she says, ”but at the same time, you feel bad for all the work they put into ‘Lone Star.’ It’s sort of a mixed bag to come back and take their spot. ”We didn’t have a lot of time to prepare, and we thought, ‘How will people find us?’ There’s all that (ratings) numbers stuff, and I’ve decided, ‘There’s nothing I can do about those. I’m just going to go to work and do my thing.’ ” A veteran of those wars thanks to her earlier shows “The Practice” and “Medical Investigation,” Williams admits that the central theme of “Lie to Me” – in which she stars with Tim Roth – has had a certain effect on her in real life. “I’ve always been fascinated by people and behavior,” she says. “As an actor, watching people was a sort of the way I studied. “Though I have more information now, I don’t get the tiny, tiny things, but my ability to see what’s what is a little richer than it was. For me, more than whether someone is lying or not, it’s that interesting sort of life that’s there under the surface ... the things people don’t talk about, or how they’re feeling, or what’s happening in their day. I can get more glimpses of that than I used to.”

Originally pronounced “granula”, Granola is a coarse whole graham flour and water mixture which appeared on the market in 1863. Creator James Caleb of Dansville, NY intended it to be eaten as a health food. The mixture was baked in loaves, then broken into little pieces and served with milk.

Here are the main types of malts and the characteristics of each: Base Malt - Used as a base. Has a subtle, delicately sweet maltiness, with floury accents, and creamy body. Caramel – Gives the candylike sweetness of toffee and caramel. Imparts flavors of raisins and prunes. Produces colors of golden sunshine to burnished sunset-red to beer. (Used in higher concentrations for porters and stouts) Carapil – Adds body. Aids in foam retention. Gives beer stability without influencing color or flavor. Certified Organic Malts – Can be just about any type of malt and is used in certified organic beers like Eel River.

Malt can be whole grain or extract (liquid or powder), however commercial breweries will use whole grain almost exclusively. Extracts are more commonly used by homebrewers since they are easier to use and take up less space. Of course, most of the better homebrewers (such as our friends at Arizona Society of Homebrewers and Brewmeisters Anonymous) will use the whole grain version since it allows the brewer to do

more with the finished product.

Hardy Dr.

Barley is primarily malted because the grain’s husk remains intact during the germination process, which protects the developing plant from damage which can lead to mold or other forms or rot. It also provides for a filter bed during the lautering process (we will get in to the whole act of brewing some other time). Malt is often divided into two categories by brewers: base malts and specialty malts. Base malts are able to convert their own starch and usually that of some amount of starch from unmalted grain, called adjuncts. Specialty malts have little ability to do so; they are used to provide flavor, color, or “body” to the finished beer. Caramel or crystal malts are specialty malts that have been subjected to heat treatment

that converts their starches to sugars without enzymes. Within these categories are a variety of types distinguished largely by the kilning temperature. In addition, malts are distinguished by the two major species of barley used for malting, two-row and six-row. Two row is typically considered the higher quality barley due to its lower protein content which provides for more fermentable sugar content.

ow

Malt is created, conveniently enough, by malting the grain. Malting is a process applied to cereal grains, in which the grains are made to germinate by soaking in water and are then quickly halted from germinating further by drying with hot air. Malting grains develops the enzymes that are required to modify

the grain’s starches into sugars. It also develops other enzymes, such as proteases, which break down the proteins in the grain into forms which can be utilized by yeast. It is these enzymes, later used to convert starch in to sugar, that allows beer to be produced. Malting is a combination of two processes: the sprouting process and the kiln-drying process. A malthouse, or malting floor, is a building that houses the process of converting barley into malt, for use in the brewing or distilling process (almost forgot to tell you, malt is also used in making certain whiskies). This is done by kiln-drying the sprouted barley. This is usually done by spreading the sprouted barley on a perforated wooden floor. Smoke, coming from an oasting fireplace (via smoke channels) is then used to heat the wooden floor (and thus, the sprouted grain with it). The temperature employed is usually around 130 degrees. A typical floor malthouse is a long, single-story building with a floor that slopes slightly from one end of the building to the other. Floor malthouses began to be phased out in the 1940s in favor of ‘pneumatic plants’. Here large industrial fans are used to blow air through the germinating grain beds and to pass hot air through the malt being kilned. The difference being that the pneumatic version allow for up to 100 ton batches of malt while the floor process is usually limited to 20 tons.

N

A couple of weeks ago, we looked at the importance of hops in beer. Next up in our series of beer ingredients is malt. Malt is the backbone of beer and the term typically refers to malted barley, although other grains can be malted and used in beer. Malt also provides a good bit of the flavor in beer, and will usually be noticed as sweetness or roast. Malt is also responsible for the color in beer.

tion, besides hops, water and yeast, is considered and Adjunct. Adjuncts are not necessarily a bad thing. The Belgians use sugar and spice additions to many of their beers with a positive result. The Brewers Association has perhaps the best description of proper use of adjuncts. Simply stated, adjuncts must enhance rather than lighten flavor in order to be considered “acceptable.” Gluten-Free beers avoid the use of barley and other common beer grains because the contain gluten, a protein that many people have a sensitivity towards. Beers brewed gluten-free, like Lakefront’s New Grist, often use Sorghum as their base fermentable. Amaranth, Buckwheat, Quinoa and other ingredients are also commonly used. In fact, prior to New Grist, barley

was a mandatory ingredient in order to call a product beer. Lakefront literally redefined the word “beer.” We could go on and on about the use of malt and other grains in beer, but all good things must come to an end… and this article too. Hopefully this has helped you to understand a little more about the flavors in beer and the importance of the main ingredient, malted barley, in its production. In future weeks we will look at yeast and even water’s importance in producing beer.

BEER! SECTION

It’s Almost Time for Barleywine! By Maureen Basenberg, Founder, AZ Girls’ Pint Out With Arizona’s version of winter coming closer it’s time to look to bigger styles of beer. One of my favorites is American style Barleywine. It is a style that does everything big, and has a little something for everyone. They can range from intense sweetness to a noticeable bitterness. In choosing a Barleywine I opt for a more balanced brew, one that is as big in the malt profile as it is in the hoppy bitterness. While it is typical to note the presence of the high alcohol content it is within a context of a caramel malt and a usually citrus hop. The mouthfeel of Barleywines can be described as voluptuous. They are velvety and full bodied though with aging some of the weight tends to decrease. When served on tap it is typically in a snifter glass and poured in 10 ounce servings. Many local breweries offer Barleywines throughout the year or at special release times. I encourage you to be adventurous and realize there is a large range of flavors within this style so if you haven’t found one that knocks your socks off, keep looking. As the weather cools, it becomes a great time to savor some local breweries Barleywine offerings. Cheers!

Though they didn’t exist at the time, the Oklahoma City Thunder stormed through the NBA draft on the night of June 28, 2007. That early summer evening in New York paved the way for the Thunder’s future when, picking second overall, the franchise then known as the Seattle SuperSonics chose University of Texas freshman Kevin Durant. The selection was a nobrainer, given that Durant and Ohio State’s Greg Oden were easily the draft’s two best players, and after the Portland Trail Blazers tabbed Oden, the Sonics happily called Durant’s name. Now, with three years to judge the results of those two historical picks, it’s fair to say the Blazers made the wrong one. Durant has developed into one of the five best players in the league, while Oden’s growth as a pro has been severely hampered because of a host of injuries. He may never become the dominant center most talent evaluators thought he would coming out of college.

THE BEST TEQUILA BARS! Sponsored by Cruz Tequila

TEQUILA WISDOM Tequila history lie with the indigenous Aztec peoples of Mexico, the Chichimecans, Otomies, Toltecans and Nahuatls who made a beverage from the agave plant long before the Spaniards arrived in a village called Tequila in the shade of a dormant volcano named Tequila in a land they called Techinchan. Tequila was first distilled in the 1500-1600’s in the state of Jalisco, Mexico. Guadalajara is the capital of Jalisco and the city of Tequila was established in about 1656. This is where the agave plant grows best. The agave is not a cactus as rumored, but belongs to the lily family and has long spiny leaves (pincas). The specific plant that is used to make tequila is the Weber blue agave. It takes 8-12 years for the agave to reach maturity. During harvest, the leaves are cut off leaving the heart of the plant or pina which looks like a large pineapple when the jimadors are done. The harvested pina may weigh 200 pounds or more and is chopped into smaller pieces for cooking at the distillery.

Plan B Seeks US Solitude

DAN EMREY TO PERFORM AT GOODYEAR GARDENS

Plan B doesn’t want to crack America - because he wants to be able to go somewhere to escape his fame.

Friday, November 5th

The singer/rapper is planning to tour the US in January but isn’t bothered if he is a success because he doesn’t want to get any more famous. Plan B - whose second album ‘The Defamation of Strickland Banks’ has been a hit across Europe, said: “I’m going to America in January. We’re gonna do some live shows and just do what we did in the UK and see if they like it. But if they do like it, then I’m worried it could ruin my film.” He added, “It’s like, am I going to go to America and work this record for another year at the expense of all the

new fresh stuff I want to be doing? I’m about as big as I’m gonna be right now. I don’t want to get any bigger really, at least America is one place I can go if I don’t want to be recognized if I just want to be normal. I suppose there’s always China.”

Acoustic Entertainer DAN EMREYwill perform on the grand A Z WEEKLY STAGE at GOODYEAR GARDENS on Friday, November 5th, beginning at 7 p.m. Dan has been writing songs and performing for over 15 years. He performs weekly at various venues, throughout the Phoenix area. His November 5th concert at GOODYEAR GARDENS will be his first appearance there. Jeff Royer for FLY MAGAZINE describes Dan’s performance as follows: “Emrey delivers balladheavy acoustic songs that sound reminiscent of Staind’s Aaron Lewis’ solo material channeled through Howie Day or Gavin DeGraw-- sincere and emotional . . .” To listen DAN EMREY’S music, visit his website: www.danemrey.com GOODYEAR GARDENS is located at the Quality Inn & Suites on the southwest corner of I-10 and Dysart Road in Goodyear, AZ 85338. Concert Admission is free. Parking on

site is also free, but limited. Concert attendees are encouraged to bring folding chairs or blankets for “festival style” lawn seating and are invited to arrive early, to obtain most desired locations. Food and beverages are available for purchase on site. For more information about GOODYEAR GARDENS visit www.goodyeargardens.com or telephone Jay Patel at (623) 932-9191.

Eminem and Dre Back in the Studio Eminem is back in the studio with Dr. Dre. The ‘Love The Way You Lie’ singer confirmed he was in the studio and working on a track with the hip hop producer, with whom he kick started his career in the 90s. He revealed in an interview with Sirius radio in the US yesterday, “I’m in the studio right now, still working. I would just say I’m in the studio with Dre right now, I’ll just say that.”

42

Although he wasn’t clear what project he was working on, it is thought he is contributing to Dr. Dre’s long delayed ‘Detox’ album, which has been speculated to be released this year, but was pulled for last minute revisions by Dre after tracks were leaked on the internet. Although the album is shrouded in mystery, one of the producers who has worked on it, Nottz, said some of the tracks are so good, they made him want to quit making music. Dr. Dre has previously said he hopes to release new material before the end of the year.

Politely debating which is better, “Halo” or “Call of Duty,” has become as difficult as discussing politics or religion. Both sides have their scripted arguments and feverishly fling about phrases such as “lack of story” or “immature fan base.” While both franchises possess their pros and cons, both have a firm grip on the gaming community and manage to sell millions of copies with each incarnation. Now, just after the successful release of Bungie’s “Halo: Reach,” Activision is forced to answer back with the gunslinging realism of “Call of Duty: Black Ops.” Black Ops soldiers operate within the shadows of the world, completing the jobs that nobody will ever hear about. They prevent war, end suffering and protect the innocent but never truly exist. Now travel behind enemy lines as one of these elite warriors as they infiltrate, assassinate and incinerate the bad guys without thanks or praise. “Call of Duty: Black Ops” follows the same gameplay as its blockbuster brethren by combining perfect first-person shooter controls into its deep single-player and addictive multiplayer experiences. While many will enjoy the character and plot forged by the single- player campaign, it’s the heated and highly competitive multiplayer that keeps the masses coming back again and again. The first noteworthy addition to the online gameplay is the updated killstreaks such as napalm strikes and the cute but deadly exploding RC car. These over-the-top means of destruction act as rewards for obtaining a predefined number of kills without dying yourself.

BY BEVERLY FOSTER SEINBERG ALL MY CHILDREN Caleb and Krystal realized AJ was missing and assumed JR was responsible. Annie found a handcuffed JR and released him, then returned AJ to Marissa and said she had taken him. Erica found a file that revealed Caleb was Asher’s father and told Caleb, who pushed Asher away, causing him to fall down the stairs. THE BOLD AND THE BEAUTIFUL Amber flirted with Oliver and plied him with more alcohol so she could steal more of Hope’s designs. Liam and Hope caught them, and Hope insisted that her Hope for the Future fashion show must be held immediately because of Amber’s theft. DAYS OF OUR LIVES Victor tried to stall Philip and Melanie’s move into the mansion so they wouldn’t discover Vivian in the sarcophagus. Philip did find her and decided not to let her out. Later, Gus freed Vivian, who called Maggie to the mausoleum and locked her in the sarcophagus.

GENERAL HOSPITAL Dante rescued Brenda from the clutches of the Balkan’s henchman just as Jason, Sam and Lucky arrived. Brenda collapsed into Jason’s arms as Sam watched. Patrick accused Lisa of disguising herself as a witch and misplacing Emma to scare Robin. Jax stood Carly up. Another Balkan henchman abducted Siobhan, and Lucky received an e-mail with a photo of her tied to a chair. ONE LIFE TO LIVE Marty was incensed to learn that the girl she vouched for tried to hurt her family. She slapped Natalie and vowed revenge. THE YOUNG AND THE RESTLESS After Michael and Lauren filled Ronan in on seeing Daisy at Jimmy’s, he and Michael set out to look for her. Jana asked Noah to spend the night with her, but when she got a text from Kevin saying he was on his way, she kicked Noah out. Kevin arrived and saw the room had been trashed. Jana told him Daisy was there. Victor told Kay about Nikki’s relapse and admitted he wasn’t sure he wanted to marry her.

Selena Gomez refuses to splash out on expensive clothes. The Disney starlet is very sensible when it comes to her money and doesn’t see the point of paying out for designer items when she can get something similar for much less. She said: “When it comes to shopping I love a bargain. I don’t usually spend over the $20 mark. I feel

There’s a scene in HBO’s Sunday series “Eastbound & Down” when Ana de la Reguera, as the chanteuse Vida, gyrates in a second-skin red dress that could pretty much make a dead man want sex. Oh, they wear far less on “Jersey Shore,” and far more is shown in this and other HBO shows, but de la Reguera knows how to rock this dress, a simple scoopneck mini in front with a zipper running its length in the back. It is a dangerous dress and can only be worn by a woman who knows her seductive powers. “She thinks she is a pop star,” costume designer Jill Newell says. “We definitely wanted to have her feel like one. They’re in Mexico, she is very Latina, and we wanted to really show off her butt. It is sort of the plot, but we really wanted to make sure that was her best asset.” “The fashion of my character is really particular,” de la Reguera says. “It is a lot about her looks, Kenny in the first season, he calls himself a t-- man. He is a breast man, and here he knows I am Latina and a very curvy woman, and he changes his mind as a butt man. My clothing is very tight. I am showing a lot of my body, and she wants to be a pop singer.” Ana de la Newell bought Vida’s dresses at Reguera Bebe.
