‘Chernobyl Diaries’* Six young vacationers hire an extreme tour guide who takes them to the abandoned city Pripyat, the former home to the workers of the Chernobyl nuclear reactor. During their exploration, they soon find themselves stranded and discover that they are not alone. (R – 90 minutes) *Screened after deadline.

‘Headhunters’ When the wife (Synnøve Macody Lund) of Norway’s most accomplished headhunter (Aksel Hennie) introduces him to a former mercenary (Nikolaj Coster-Waldau) in the possession of an extremely valuable painting, he decides to risk it all to get his hands on it and, in doing so, discovers something which makes him a hunted man. (R – 100 minutes)

Randy: “I smell an English remake in the works. Hollywood will no doubt butcher this edge-of-your-seat Norwegian thriller; so enjoy it while you can. Stylish, well-acted and a nail-biter, ‘Headhunters’ is one of the best of its genre this decade. The storyline kept me guessing and the performances rival that of any American counterpart. Once again, Norway proves a contender in the filmmaking market.” Grade: A Joseph: “‘Headhunters’ is an intense and often gruesome cat-and-mouse thriller. The new Norwegian film, which director Morton Tyldum adapted from Jo Nesbø’s novel by the same name, catches the viewer off-guard, at first appearing as though it is a simple heist flick. However, just when said viewer least expects it, the flick essentially explodes into a fit of nonstop action during which its protagonist is put through not only the ringer but also a metaphorical meat-grinder.” Grade: B

‘Hide Away’ Entering an idyllic harbor as a broken and haunted man, a successful businessman (Josh Lucas) buys and boards a dilapidated sailboat.

Disturbed at night by unsettling dreams of his past, the boat becomes a beacon of hope as he begins the challenge of bringing back the shine to the tarnished vessel – and to his life. (PG-13 – 83 minutes) Stan: “With minimal dialogue, an intuitive screenplay by Peter Vanderwall, and the sure creative directorial hand of Chris Eyre, he guides the character with an exceptional portrayal by Josh Lucas through a spiritually mystical journey of redefining the purposes of living life, triggering remembrances of those defining moments in our own lives as we reflect on the outcomes of those choices.” Grade: B Joseph: “‘Hide Away’ is the epitome of an actor’s film – a quality that will enhance the experience for some while depreciating it for others. In other words, the new drama from director Chris Eyre and screenwriter Peter Vanderwall is not for everyone. Its storytelling approach is less about communicating a narrative to the viewer and more about taking said viewer on an intensely meditative journey. Thanks to star Josh Lucas, that journey is well worth taking, if only to witness one of the most inspired acting accomplishments of the year.” Grade: B

Joseph: “Who knew that a movie about the invention of a sex toy could be so sophisticated? Granted, the typical art house patron may hesitate when faced with the proposition of seeing director Tanya Wexler’s period comedy ‘Hysteria.’ After all, all indications point to the new motion picture being incredibly improper, to say the least. However, as it turns out, save for a rather uninteresting romantic subplot, the movie is actually quite cultured on top of being positively pleasurable.” Grade: C

‘Hit So Hard’* Follows the journey of Patty Schemel – the openly gay drummer of Courtney Love’s seminal rock band Hole and true survivor of what we now know was the disaffected slacker generation – who found herself, like her friend Kurt Cobain, embraced by the dark side. ‘Monsieur Lazhar’ At a Montréal public grade school, an Algerian immigrant (Mohamed Fellag) is hired to replace a popular teacher who committed suicide in her classroom. While helping his students deal with their grief, his own recent loss is revealed. (PG-13 – 94 minutes) Randy: “‘Monsieur Lazhar’ is a touching film that is by far one of the best of the year. Touching, funny and all around enjoyable, this FrenchCanadian import introduces us to a likable Algerian refugee living in Montreal who saves the day when tragedy strikes. It’s a man’s redemption, and a man’s journey into himself and back out the other side as a new person, and a catharsis that everyone in life takes at some point. It literally presents the acclamation of a person becoming human, and we do that through these times in our lives when we have massive struggle, or massive trial, and in the case of this man, he looses his family. In sports they say you have to learn to loose in order to learn how to win, in life you really have to learn how to mourn in order to learn how to live, and that’s basically his journey. He’s doing what everybody has to do at some point in his or herlife; they have to learn the process of mourning so one can go forward again. “We discovered this project in a documentary 10 years ago. It was a shock for us. We felt that this story deserved a movie. So, we met with Philippe Pozzo di Borgo and spoke with him for 2 days. That was enough for us. We did not meet with Abdel (“Driss”) Yasmin until after shooting the film. François Cluzet met with Philippe but Omar Sy did not meet with Abdel either. Omar wanted to create his own character. “Philippe and Abdel followed the process of the movie and, of course, the first screening was for them. That was a great day for us. They supported the movie and we were all terribly moved. Our capital point was to stay light because, with this story, it is very easy to be cheesy. We wanted to use a special tone – cynical humor – and surprise the audience with love. We wanted to make it a like a roller coaster of emotion. “Eric Toledano and I have become brothers because we have worked together for 15 years. But are totally different people but somehow it works. I do not know how but the chemistry works. We are terribly complimentary. And the important point is that we like to write together. I cannot imagine writing alone. We thought we had touched on something special with this movie from the beginning and its success has made me feel even stronger about it. “It is amazing. We thought that the movie was typically French but, as it

turns out, the movie is very universal. We have had a lot of surprises and I hope we have a big surprise in the U.S., too. Harvey Weinstein wants to remake the movie. Paul Feig is interested in directing with Colin Firth attached as an actor. My only advice is not to be cheesy and to stay true to the spirit of the story of these two men.” – Olivier Nakache

Eric Toledano By Stan Robinson “We [Oliver Nakache] saw a documentary on French TV about five years ago about this unlikely friendship between these two extremely opposite people. One was a billionaire, a very rich guy, very smart, and the other guy was from the middle of the high-rise projects. We felt we had a special story to present of life. We approached them for the rights to the story, and the central person on whom the story is based authorized us to do the story, he just wanted to make people laugh not cry. It was an extremely challenging shooting schedule of about three months, and about the same for preparation because François Cluzet [actor] had to learn the aspects of being aquadriplegic and in being in a wheel chair and Omar Sy [actor] had to learn the aspects of providing that kind of care for a person. They spent time at a treatment center to learn how to move, act, and react. As you say, it was quite challenging for François who conveyed a wide range of emotions because his character was paralyzed from the neck down. Our film presents an unlikely friendship, and if you look beyond the stations in life as the two central characters did on which the film is based, one from the upper class and one from the ghetto, there is the common ground of living life and friendship.

Me,” which opens June 1 exclusively at Harkins Shea 14, documentary filmmakers Ami Horowitz and Matthew Groff set out to expose the incompetence and corruption at the heart of the United Nations, showing how an organization created to ennoble mankind now actually enables evil and sows global chaos. “I didn’t set out to be a filmmaker, I was a banker my entire career with no interest in making movies what so ever despite the fact that I grew up in L.A. so I guess there was a latent film gene in me that only appeared late in life! What it was is the topic, and all I wanted to do was yell to the whole world of what I thought about this place [the United Nations] and I what I decided was the best way to do it was through the medium of film. With a movie, people want to be entertained, and having said that, I fell in love with the medium, now there is nothing I want to do other than make movies! I would have to say that I was pretty well versed on the U.N. and as you say, it is the most powerful entity on the planet, and I knew it [U.N.] was bad, I just didn’t realize how deep the rat hole went. From our screenings the reaction has been phenomenallygood and I’m constantly surprised at the different things that people laugh at, and

we get people who are upset and muttering to themselves and furious at some of the things they are seeing about the U.N. on screen!

Contractor Selected For New West Valley Casino On Wednesday, May 2, 2012 the Gila River Indian Community’s (the “Community”) Council awarded the contractor bid to construct the Gila River Gaming Enterprise’s new Vee Quiva Casino to Tutor Perini Building Corporation, a firm based out of Las Vegas, Nevada. This award winning construction corporation was the general contractor for Seminole’s Hard Rock Casino, Mohegan Sun Expansion, MGM Grand at Foxwoods, and The Cosmopolitan of Las Vegas to name a few. According to ENR Southwest magazine, Tutor Perini Building Corp. is the leading general contractor in the Southwest. The Chairman of the Community’s gaming development entity charged with construction of all of the tribe’s gaming operations, the Casino Expansion Owners Team (CEOT), Anthony Villareal, said this of the Council’s decision, “the quality of projects Tutor Perini Building Corp. constructs is unparalleled, they are truly one of the industry’s best construction companies,” he continued with, “a new Vee Quiva Casino with a hotel and better dining options has been a project on Gila River’s books for years, we are very pleased to see it come to fruition.” The new Vee Quiva Casino & Hotel is expected to cost approximately $135 million and will feature an expansive 70,000 square foot casino; over 900 slot machines; 50 table games, including a poker room; 750 seat bingo hall; 3 story hotel with 90 tastefully appointed rooms that will boast a May 24th, 2012 - May 30th, 2012 AZWeeklyMagazine.com

Finding the next “Food Network Star” is a new game for Giada De Laurentiis. The chef who hosts “Giada at Home” and “Everyday Italian” now has more of a contest to choose an aspiring cooking personality for his or her own show, as the Food Network competition continues its eighth season Sundays. As are fellow returnee Bobby Flay and new cast addition Alton Brown, she’s coaching a group in culinary challenges that will winnow the contenders down to one. “It has really upped the stakes for us and made us emotionally invested in these people,” De Laurentiis says of the new format. “Whoever wins, that mentor will produce that winner’s show, so we have a lot involved in this.” And that’s fine with De Laurentiis. “Actually, I had asked Food Network at the end of last season to change the game a bit,” she reports. “I really felt like I was a talking head, in the sense that I was hosting with Bobby, but I didn’t feel a big connection to each finalist. I wasn’t spending enough time with them, and I wasn’t able to mentor them enough.”

BEER! BEER AND FOOD A short while back, we looked at food dinners, but we didn’t really look at the pairing aspect of it. Since we’re in the middle of Spring Restaurant Week, let’s fix that right now. As you already know, one of the hottest trends in the restaurant world is the pairing of food and beer. But, it’s not really a new thing. For centuries, beer and food have been enjoyed together as part of the good life. Being grainbased, beer can be considered a food. Trappist Monks have long considered it to be liquid bread. Beer’s broad range of flavors, aromas and textures makes it a perfect match for nearly any kind of food, from handmade sausages to the most luxurious gourmet dishes. Wine has long been thought to be the best beverage to pair with food, but more and more we discover that beer is at least the equal to wine when it comes to food.

Wine yeasts are primarily designed to complement the grape, accentuating already existing flavors. The variety of water types also can impact everything in a beer from flavor to mouthfeel. Many brewers use filtering systems to change the makeup of their local water to provide a different experience. Finally, brewers can add other ingredients to produce a desired result. It is not uncommon to see Belgian sugar, licorice root, coriander or orange peel in a beer. And has anyone ever tried a pumpkin beer? There are almost limitless options for pairing food and beer. Of course matching strength with strength is number one. Look for qualities in the food and beer that are similar, for example delicate foods require delicate beers just as high intensity foods should be paired with high intensity beers. However, a variety of things can create intensity. With beer, flavor intensity involves a variety of qualities such as alcoholic strength, malt character, hop bitterness, sweetness, richness and roastiness. Next, look for harmonies. When food and beverage share a common element, pairings are typically better. Look at the nutty flavor of an English Brown Ale and a nice artisanal cheddar cheese; or the rich flavor of an Imperial Stout along with chocolate. Consider sweetness, bitterness, carbonation and richness. It sounds like a complicated process but in reality it is fairly simple. Specific qualities of food and beer pair together in predictable ways. Also, look at classic cuisines. There are reasons why cuisines of countries known for beer match so well. Of course bratwurst with a German lager is obvious, but look at less obvious pairings such as shellfish with Belgian

ales (think mussels with something like Tripel Karmeliet) or perhaps the best pairing you would never think of, oysters with stout. Compare and contrast. All beer and food combinations should involve both of these principles. Some pairings will be more dependent on contrast, others on complementary flavors. All should strive for some kind of balance. Last but not least…experiment. Practice makes perfect and not everything is going to go together perfectly, but at least its fun eating (and drinking) the mistakes.

There are specific ingredients in beer that pair with specific food characteristics. The sweetness of malt helps to smooth out spicy foods. Intensely spiced foods, which have become a popular component of today’s American diet, are complemented by craft beer’s ability to diminish heat. In comparison, wine’s higher alcohol actually accentuates the warmth from many spices which can be undesirable. The flavors of malt also harmonize very well with grilled, roasted and smoked foods.

A related trend that is really starting to get popular is cooking with beer. The same things that make beer a great pairing beverage also make it a great cooking beverage. It just makes sense to cook with beer. Beer has more in common with a lot of the food that we eat than does that other popular cooking beverage. It contains grain (barley), herbs (hops), water and yeast. Wine contains grapes. Adding beer to a recipe can really change the character of the dish. It can enhance particular ingredients, help blend the flavors of the dish, or just add that little zing that your meal might be lacking.

Hops tend to contrast with rich foods and can offset the lingering aftertaste of cream sauces resulting in pleasant results. Hops bitterness cuts through the fat in food thus lessening the dense heavy feeing in your mouth. This is pleasurable as it allows you to more fully taste the ingredients of your dish and enjoy the true flavors of both your craft beer and the food. They also complement the malt in beer very well. If malt provides the body of the beer, then hops are certainly the soul. There are also many people who prefer hoppy beers with spicy foods as the hop resins can cut through the spicy flavors. Carbonation is another key factor in pairing beer and food. It is also a component that wine can not match. The bubbles from the carbonation

The tartness of lambics provide a nice tongue cleanser and makes for a perfect replacement for a sorbet or Proseco as an intermezzo. These spontaneously fermented ales have a nice refreshing flavor and are frequently used by Belgians in just that capacity. One caveat with lambics, stay away from the artificially sweetened ones as they will only serve to weigh the palate down with cloying sweetness.

Certainly everybody is familiar with using a beer batter to coat fish or French fries, and many have even made beer can chicken (a unique recipe which provides great flavor and moistness to a chicken, but still seems somewhat undignified, not that the chicken cares anymore), but there are a variety of dishes that benefit from beer. There are recipes for everything from salads to desserts that include beer as a key ingredient. Some things to think about are using a Belgian Wit beer such as Wittekereke in a vinaigrette, the citrus flavor from the orange peel can really enhance the salad and help to bring out flavors that may be lying dormant. in beef stew and let the malt add to the richness of the gravy. How about deglazing with beer? It works great and provides just that extra flavor that a dish may be lacking. Once you understand the principle of food and beer pairing, cooking with beer becomes simple. There are a few things to remember when experimenting with beer. As with any other liquid, when you cook with beer you will almost always reduce some or most of the liquid away which will magnify its flavors. For instance, if you were to make a brown gravy using beer instead of broth or water you might want to opt for something like a sweet stout with little or no hop presence otherwise you may end up with bitter gravy. Another consideration is that aroma is lost during the cooking process, so if you are using an ingredient that you want to have present in the aroma of the dish, splash a little extra towards the end of the process, or for a liquid dish, after cooking. Beer is also an outstanding after dinner drink, at least certain beers are. Barleywines and Olde Ales are great stand-alone beers served in a snifter at 55-60 degrees. Belgian Quadrupels and German Eisbocks

also work as an aperitif. Any rich, higher alcohol beer works in this role. Something that has become popular across the country are Beer vs. Wine dinners. In these dinners a chef prepares the meal and each course is paired with a wine and a beer. Typically these pairings are made by experts in the chosen beverage, perhaps a Sommelier or a Cicerone, who then discuss with the audience their reasons for choosing a particular wine or beer. The diners then vote on which pairing they preferred for each course. In just about every dinner, beer comes out victorious. But, in reality, the real victor is the person who learned a little more about what they like and how to enjoy food a differently. There are countless variations on pairing and recipes and concepts for food and beer. The real way to handle it is to experiment with the beers and food, use it while cooking and determine what works best for you. Anything that opens up the mind, and the palate, to new experiences and opportunities can’t be a bad thing. So go ahead, put down that corkscrew before dinner tonight and pick up a bottle opener. You will be glad you did.

I’d like to take a moment to point out that every brewer I have interviewed during this series began the same way, the “old reliable” Mr.Beer kit. Who would have guessed that three of the best home brewers in Arizona all began in the same simple fashion? I chose to interview John because not only is he a great brewer but also a great teacher of the craft. He has a Facebook group called “Rudy’s Brew” that is quite popular in the local home brewing community and hosts Brew Outs at his home on a regular basis where everyone is welcome. Most importantly, John is big on family and finds that he can manage his love of brewing while keeping a balance with his home and work lives. “I don’t always go to happy hour…. who am I kidding?” My cousin and I have been trying to venture out of our usual routine and visit other cities. I know Glendale is not foreign, but we just don’t really go there! Calico Jacks Cantina is a real awesome spot to go to for some fun. The whole vibe of the Westgate area just makes me want to DRINK, and this is a great location for it! Ha! Monday-Friday from 3pm-7pm you can receive things such as: $2 Dos Equis, Tecates, Sol bottles and house margaritas. Grey Goose, Bombay Sapphire, Bacardi, Gentlemen Jack, Corzo, and Dewar’s beverages are only $4!!! That is the deal that hooked me in, I am about some Goose and pink grapefruit all day! This is a real casual place, but what cantina isn’t? I suggest coming during happy hour on a game day and rockin your jersey! The food is not on the happy hour menu but it is really good. Nerd, geek, freak, quiet weird girl… you were one or you knew one and as the years have passed you’ve come to no longer give an eff about what others think. Good for you, Geek. Be proud. Come celebrate your obsessions with Cosplay and Star Wars with the other geeks at the Phoenix Comicon and Bookman’s Geek Prom. This year, there are two themes: Geek and Space. Come as yourself if you’re already geektified on daily basis or be a poser. Have a little more fun and dress like the aliens you are convinced to exist somewhere out in the universe or steal George Lucas’s ideas. Whatever theme you choose your costume to be, make it good enough to keep you in the running for prom king or queen—this may be your last chance for the crown! The Geek Prom does have a cover charge, however, all proceeds will go toward the Kids Need to Read Foundation. Also, you must truly be a geek at heart to attend this event, which means you must have a Comicon membership. If you’ve ever dreamt of soaring through the air like a superhero, you’re not alone. Dreams of flying­ have captivated human imagination since prehistoric times. Even with the advent of aircraft and the increasing availability of air travel, the ancient question stays with us: What if we could simply spread our arms ­and fly like a bird? Well, turns out now we can, as dreams of human flight have become a reality.
