New shows to watch for this fall It’s a quandary every fall, as new shows come rushing at viewers: Which ones should I watch? With a few weeks left until the 2012-13 season officially begins, here’s some early help. Watson hit the streets of New York in this sharp take on the oft-adapted tale with British actor Jonny Lee Miller as a drug-addicted Holmes, and Lucy Liu gender-switches Watson – now named Joan – who’s Holmes’ sober-living companion. The U.S. series doesn’t go for the whiz-bang visual effects of the U.K. show, but Holmes is just as irascible here, while Watson is prettier and grumpier. (Kate O’Hare) “Last Resort” (ABC, Thursdays, premieres Sept. 27): In a world on the brink of war, a U.S. nuclear

submarine receives orders to fire at Pakistan. After its captain (Andre Braugher, “Men of a Certain Age”) questions the command, the sub is attacked by a U.S. warship. Crippled, the vessel crawls to a rustic island, where the crew find themselves at odds with the corrupt mayor and at war with their own country. “Last Resort” is an addictive thriller with a hint of island whimsy, an at-times odd mix. “Nashville” (ABC, Wednesdays, premieres Oct. 10): It’s too easy to call this a country version of “All About Eve” or “A Star Is Born.” The drama – starring Connie Britton as a country star on the fall and Hayden Panettiere as one on the rise – is its own show. Unlike in the Bette Davis classic, Rayna (Britton) never takes the younger Juliette (Panettiere) under her wing, knowing how dangerous she is and not wanting to abdicate her crown so easily. The Herberger Theater Center Art Gallery is seeking Arizona artists to apply for the current Call to Artists Prospectus for two upcoming art exhibits in early 2013. The postmark deadline for applicants is October 8, 2012.

Work is selected using a blind jurying process, and the selection jury consists of artists from various disciplines. Themes for this Call to Artists were created by the Guest Curator for 2013, Peter Bugg. The themes include: In Case of Emergency and Entitled. Artists may apply by mailing in the entry form along with the $20 entry fee and digital images of up

Their last hope is an expert in the supernatural (Tom Felton) – but even with his help they may already be too late to save themselves from this terrifying force. ‘Cosmopolis’ Robert Pattinson plays a 28-yearold billionaire asset manager whose day devolves into an odyssey with a cast of characters that start to tear his world apart while riding across Manhattan in a stretch limo in order to get a haircut. (R – 108 minutes)

The new futuristic drama from writer/director David Cronenberg is so bad that there was not a single, solitary moment of it that went by when I was thinking about anything other than leaving the theater and running as far as I possibly could from it. The motion picture is pretentious and hollow, confusing viewers with a parade of meaningless monologues from actors who should have known better than to participate in this monotonous nonsense.” Grade: F

sites and came across this story about the Philip Experiment. A group of parapsychologists in the 70’s set out to create a ghost simply by believing in it enough. In the following decades, other people did their own versions of the Philip Experiment, adding new ideas onto it and using new types of technology and gear. I thought that this stuff was just so fascinating and it triggered in me a fresh way into a horror film. And so then it sort of evolved from there. “The film is very much part ‘Poltergeist,’ part ‘Flatliners’ and part ‘The Strangers.’ It was inspired and influenced by all decades and styles of horror films along with those real studies and events. We even brought in this paranormal expert as a consultant on the film. It was really important to me that it be as authentic and accurate as possible. “I just tried to bring some authenticity and logic to the story. It was my mission to stay away from all of the go-to horror stuff and keep the crew away from the habits that they had formed in this genre. I think that the stuff that is the most relateable makes for the best horror. Airdo In “The Awakening,” which opened last weekend, Rebecca Hall plays an author in 1921 London who is approached by a teacher (Dominic West) to investigate the recent death of a student at his all-boys boarding school and finds her reliance on science to be insufficient to explain the strange phenomenon going on around her. “Even though I do not believe in the supernatural, I would still scare myself while writing ‘The Awakening.’ There is a scene in the film when [Hall’s character] finds dolls arranged to depict her recent past. That actually freaked me out when I was writing it late one night. A great deal of horror films simply establish that spooks and specters exist. It was important to me that I in some way address not just that – the fact that ghosts exist – but to really try and look at the notion of why they exist. I placed the story in 1921 because there was an enormous loss of life in Britain during World War I. “There was this howling sense of grief that was in everybody’s ears. The look of the film was speaking about that grief. We are used to seeing Britain’s rolling hills full of greenery. I wanted to make that country sick with grief so that the colors are mis-recorded. The greens are slightly bluer and the whites are slightly yellower. The composition of the imagery also contains a lot of empty space. A sense of loss is the backbone of this film.” – Nick Murphy

life and embark on a road trip that may lead them towards the opportunity of a lifetime only to be chased by a federal marshal (Tom Arnold), an ex-boyfriend (Michael Rosenbaum) and a very dangerous criminal (Bradley Cooper). “’Hit and Run’ is truly an independent film, and as you say, cast and crew poured our hearts and souls into the project. Everybody got paid scale on a low budget scale movie, everybody came out to play and just had a ball. We were just cracking up and working hard, and I think that’s what really comes across on screen, at least I hope it does. The sweat and also the love of all of us, more like a troop than a bunch of actors who came together just to do a project. We initially went around town with our pitch and held off with the writing of the script, and pitched it to a couple of the studios, and of course they wanted to see a script, so we ended up writing the script at the same time. We got a lady out of Palm Springs who loved the package and she literally wrote a check so it was a very small window, and we were in production. We had about 4 weeks of prep, that was it, because a lot of it had to do with the actors and their shooting schedules on their other projects, we shot ‘Hit and Run’ in about 29 days, and it all happened very quickly!

My son is introducing the topic of murdering my ex-wife yet I am too distracted by women in a strip club. I act a little like, ‘Woah, wait a minute,’ but literally in the next scene I roll over to the idea. It is like I have already robotically moved on to whatever insignificant ritual that I go through the next day.

Your suspicions are correct. Sometimes I sweep excess food under the seats. Movies often end every few minutes. Sometimes, three or more screenings end at the same time. I don’t always have time to clean everything up.

Brian:“These days with stadium seating you cannot sweep the popcorn under the seats because with stadium seating you’re eye-level and you can see any popcorn under seats so that is totally an absurd statement! Even if the auditorium is not stadium seating you can certainly see any popcorn under seats. At our theaters we allow ample time between each movie to be sure that the auditorium is clean. Year after year, that’s the number one complaint from the general public is ‘I won’t go to that theater because it’s dirty!’ And, a customer has every right to walk into a clean theater.” David: “That is the dumbest statement on the list. It is so false it hardly deserves my attention. Suffice it to say that theatres are considered food-vending establishments (similar to restaurants) by the state Health Departments and are inspected accordingly. If the theatre you attend is dirty report it just as you would a filthy restaurant. Theatre managers co-ordinate the start and end time of films and schedule accordingly. I know the theatres I attend always

have a small crew of people cleaning every theatre after every screening.” Stan: “On this one I’d have to say that the statement is absolutely totally false. Although some may be a lot cleaner than others, as a whole the auditoriums are generally clean for each showing. By Marlene P. Baumann I’m about to enter this great debate about winemaking.

Winemakers who say they make their wines in the vineyard start with the belief that the most excellent grapevines are necessary to begin the winemaking journey. They often talk about “terroir” and their love for the soil, exposures and the tender care they take in the vineyard is impressive. Generally the “made in the vineyard” folks believe a wine’s style and characteristics have sprung forth from a top quality ingredient—the result of careful oversight through nature’s influences onthe growing season. Their decisions focus on vine stock of varying ages, pruning techniques that exploit the fruit differently, mechanized farming versus hands-only field work and more. I need only look at my herb pots of basil to see how nature runs its course– one is strong and fragrant; the other is yellowing and weak. Simply put: start with excellent stock, use minimal intervention, and with cooperation from Mother Nature the result will be a high quality product. Winemakers who focus more on the cellar aspects of the winemaking process believe in the strength of their talents in cellar activities and often use the term “hand-crafted” to describe their wines. Give them good grapes and let their cellar skills carry them away—and it is indeed a skill. They promote their abilities in the cellar itself, because that is where major decisions are made about the grapes. Access to a modern wine-making facility, outstanding new equipment and technology, even the space in the cellar room itself can impact the choices they face. Some winemakers feel more like farmers; others feel more like scientists. No matter which philosophy a winemaker follows, the strict selection of the grapes going from the vineyard into the cellar is by far where the greatest impact in making a high-quality wine comes into play. A watchful eye over the grape selection process provides the winemaker with only the best of the harvest. The acidic, mediocre, or unripe grapes are cast aside. My personal belief is there is a lot more opportunity to influence the wine’s character during its time in the cellar. The choices are many: fermentation, tanks, temperature, barrel type and size, old/new, aging time, blending, and on and on. The actions taken by a skilled winemaker in the cellar shouldn’t be thought of as manipulations—it really is a talent. I like to remind myself of a bad weather vintage (say, 1992 in Bordeaux), yet great wines were still made by some. The weather conditions gave them tricky grapes to work with, they chose the best and used their winemaking prowess in the cellar to produce an exceptional wine, which I had the pleasure of drinking.

What does all this mean when the wine is in your glass? Are you a person who appreciates a sense of the weather and growing conditions the year the wine was made—a feeling that you were there? Then look for wines described as terroir-based. Are you more of a scientist at heart that thrives on what we humans can do with what Mother Nature and technology give us? Then a hand-crafted in the cellar wine may be just for you. I’m generalizing quite a bit and the debate will go on far beyond this column. And if you find a bottle that displays both the nature and nurture of winemaking, sing its praises and enjoy!

Next up in our brewery profile series is Alaskan Brewing. Alaskan is a major believer in the power of food and beer combinations, as well as a sponsor of the Upcoming Phoenix Cooks! Event scheduled this year for September 1st at the Westin Kierland.

Marcy and Geoff were drawn to the beauty and adventure of Alaska, but finding a livelihood that would allow them to stay was a challenge. “Why not start a brewery?” a friend suggested. Other than the extreme financial and logistical challenges of brewing beer in the Last Frontier, they couldn’t think of why not.Maybe the idea wasn’t so far-fetched. After all, Geoff was a chemical engineer and a homebrewer and was married to Marcy, an adventure-seeking accountant and aspiring bush pilot.

Alaska has a rich history of brewing. From the explorers of the 1700s through the Gold Rush, many a thirsty Alaskan, or visitor, has been able to enjoy locally made beers.In 1986, 28-year-olds Marcy and Geoff Larson reignited that tradition when they opened the Alaskan Brewing Company, the 67th brewery in the country and the first brewery in Juneau since Prohibition. Alaskan beers reflect many of the same

Together they brought a unique skill set to the task of opening a brewery in Alaska.While researching brewing in Alaska, Marcy unearthed shipping records from Douglas City Brewing Co. (1899-1907) that listed ingredients for its popular beers and a newspaper article that described the way it was brewed. Geoff homebrewed a batch of the Gold Rush-era brew and they could see what made it so popular. That beer is now known as Alaskan Amber. In December 1986, Alaskan Brewing Co. officially began operations when Geoff, Marcy and 10 volunteers spent 12 hours hand packaging the first 253 cases of Alaskan Amber for distribution in Juneau, Alaska. From that very humble beginning, Alaskan Brewing Co. has grown to become the most award-winning craft brewery in the history of the Great American Beer Festival and expanded distribution to 12 western states. Alaskan is most known for their flagship Amber Ale. Amber has always been a bit of a catch all name for beers of a certain color, and that is certainly true with this one. The actual style is an Alt beer. The name of this beer style comes from the German word “alt” meaning “old”. This refers to the aging that alts undergo since they ferment more slowly and at colder temperatures than most ales. Slow fermentation helps condition the flavors in Alaskan Amber, contributing to its overall balance and smoothness. Alaskan’s version of this classic German style is richly malty and long on the palate, with just enough hop backing to make this beautiful amber colored “alt”

style beer notably well balanced. Amber is not the only brand they are known for as they make an outstanding IPA and as well as their own take on the classic Belgian Wit, called simply Alaskan White. Seasonal releases are another highlight for this brewery. Summer Ale is based on another German style, Kolsch, which originated in Cologne. Alaskan Summer Ale balances a softly malted palate with the clean freshness of hops. In the tradition of the style, neither overpowers the other. Both hops and malt come together to refresh and renew the palate. The straw-gold color and easy drinkability are an enjoyable way to celebrate summer. Winter Ale is anxiously awaited each year. Brewed in the style of an English Olde Ale, this ale balances the sweet heady aroma of spruce tips with the clean crisp finish of noble hops. Its malty richness is complemented by the warming sensation of alcohol. That’s right, spruce tips. In a tradition of Alaskan brewing that dates back to the seafaring adventurers of the 1700s, Alaskan adds spruce tips to this beer. The unique flavor the spruce provides is one of the things that make this a special beer. Recently Alaskan has added a third seasonal. Brewed for the spring, Black IPA is a new beer experience created from a combination of traditional beer styles. Alaskan Black IPA has the appearance of a porter or stout but combines the roasted malty characters with the refreshing flavor and bright aroma of an American IPA. Alaskan also offers specialty beers.


So, what does all this have to do with Phoenix Cooks!? Well, these guys are located in a state that has some of the most amazing culinary opportunities around. Think of big Alaskan King Crab, or amazing Salmon, or Halibut, or any of the multitude of amazing foods that are associated with this state. Alaskans enjoy their food, and they enjoy good beer with their food. The brewery is no different, embracing food paired

with beer, and cooked with beer. They offer their very own cookbook as well as hundreds of recipes using their beers on their web site. They have partnered in the past with The Deadliest Catch, a reality television show focused on the life of Alaskan crabbers. This isn’t about going down to the beach and throwing a chicken neck on a string in the water…this is the real thing.

Perhaps one of the most collected and cellared beers in the country is Alaskan Smoked Porter. Based on the German Rauchbier, smoked beers were virtually unheard of in the United States until Alaskan released this style in 1988. Using select malts carefully smoked over Alaskan Alder wood, this beer is hearty and bold, yet smooth and highly drinkable. This is a beer to buy a case of, and enjoy one each year to see how the flavor matures. Other specialty beers in the Alaskan arsenal include the Pilot Series. This series gives the brewers a chance to really spread their wings and get creative. Past entries have included Raspberry Wheat, Birch Bock, Baltic Porter, Perseverance Russian Imperial Stout and Barley Wine. Alaskan has also created their Rough Draft series of beers brewed on their 10 barrel system and offered only in Alaska…until now. Alaskan has decided to brew bigger batches of certain favorites in the Rough Draft series for draft only releases in the rest of their distribution territories. The first of these, Free Ride American Pale Ale is in our market now…and its spectacular.

Arizona Craft Beer Lovers Group ONE Year Anniversary

Hello again craft beer lovers and friends. This week was going to get us back into reviewing beer but I must tell of an event that took place over the weekend. The Arizona Craft Beer Lovers FaceBook Group held their one year anniversary party on Saturday and boy what a night! First off there was plenty of great beer with five different Cask ales on offer including Hazed & Infused ale, dry hopped with heather tips and Mojo IPA, dry hopped with Simcoe hops to name just two. Beer Representatives from Lagunitas, Boulder Beer, SanTan Brewing, Sonoran Brewing, Hof Brau & TAP IT Brewing were all on hand to chat, hand out tons of SWAG and have a beer or three themselves. We were even blessed with appearances from Jess Harter of Mouth by South West and Rob Fulmer, President of the Arizona Society of Home Brewers.

Having said this, my favorite part of the evening was just watching the people. The turnout for this event was huge yet everybody was relaxed, chatting, laughing and having fun. A TRUE PUB ATMOSPHERE, the likes of which I have never seen here before in Arizona. No elbow to elbow uncomfortableness, no loud music, no bad attitudes and no headaches. Instead, a large group of likeminded people very much into the matters, conversations and beer at hand were getting along like family. I saw many familiar faces welcoming new ones into the fold and heard conversations covering everything from recent events and new beers to home brewing and new local craft brewery openings. Gentle cheers, glasses clinking together, laughing, talking and all smiles were the order of the day. Me, I was all smiles too. Until next week, Cheers!

“Let It Come To You” I tried out a new sushi place, which I have not done for a while now. Sushi Station Revolving Sushi Bar is actually really awesome. The sushi is on colored plates with a top on it and rotates the entire restaurant. It does not matter where you are sitting in the restaurant, the sushi will make its way to you, and you can choose whatever you like that comes your way. The plates are black, yellow, blue, purple, or white, which indicates the price. Everything is 5 dollars or less, not on happy hour. The sushi on happy hour starts at $1 and goes up to $4.50. The plates are fifty cents cheaper than usual during the happy hour, which is Sunday through Thursday from 3pm-5pm and 3pm6pm for drinks. I went there and had a caterpillar roll, a vegas roll, a seaweed salad, glass of wine, AND a beer and it was only $12!!!! The rolls are constantly being prepared to refill the empty spots from you grabbing whichever plate you would like. At the end they add up your plates with the color and there is your bill. BIG-TIME COLLEGE FOOTBALL…IT’S TIME TO “THINK RIZONA”

T

he University of Arizona is committed to changing the way people “think” about Arizona football. It started with the hiring of Rich Rodriguez, a proven winner and one of the true innovators in college football. Known as the inventor of the spread offense, Rodriguez has a philosophy that “huddles are a waste of time” which will be demonstrated with an uptempo style of play. Rodriguez is changing the culture of the program and getting Wildcat fans to believe isn’t not a matter of “if” Arizona will win a Rose Bowl and National Championship, it’s a matter of “when.” This cultural shift is a process, and won’t happen overnight, but one thing is for sure, the journey is going to be an entertaining ride!

INVEST IN SUCCESS

The time is now for all Arizona Wildcats fans, especially those in the Phoenix area, to invest in future success. In addition to the new coaching staff, the University of Arizona is showing their commitment to building a championship football program with a major upgrade in facilities. Construction on the Lowell-Stevens Football Facility, a state-of-the-art football complex, is underway. This facility will greatly enhance fan amenities, and will improve the ability to recruit and train elite student-athletes. Set to open in 2013, reservations for Club Seating at LowellStevens Football Facility and new lower-bowl north end zone seats are already being accepted for current Wildcat Club members and season ticket holders.

Continuing the Summer Shenanigans Bus Trips started last year, two 55-passenger charter buses will be making a pickup at the southeast corner of Mill Avenue and Southern (in the LA Fitness parking lot) on Saturday August 25th at 5pm. The bus will be headed up to Lyzzards Lounge (120 N. Cortez St.) in Prescott where Phoenix bands Japhy’s Descent, Darkness Dear Boy, Sasquanaut, Banana Gun and Headroom will be performing (and you get to travel with the bands too!)
