WORDS FROM THE WISE

To suffering there is a limit; to fearing, none. Sir Francis Bacon

For as children tremble and fear everything in the blind darkness, so we in the light sometimes fear what is no more to be feared than the things children in the dark hold in terror and imagine will come true. Titus Lucretius Carus

There is nothing funny about Halloween. This sarcastic festival reflects, rather, an internal demand for revenge by children on the adult world. Jean Baudrillard

Where there is no imagination there is no horror. Sir Arthur Conan Doyle

Ghosts, like ladies, never speak till spoke to. Richard Harris Barham

Deep into the darkness peering, long I stood there, wondering, fearing, Doubting, dreaming dreams no mortal ever dared to dream before. Edgar Allan Poe ‘Tis now the very witching time of night, When churchyards yawn and hell itself breathes out contagion to this world. William Shakespeare

Halloween was once also called “The Night of Witches.” Halloween spending in 2012 is predicted to reach $5.77 billion despite the financial crisis.

About 99% of all pumpkins sold are used as Jack o’ Lanterns for Halloween.

Bobbing for apples started with a Roman harvest festival honoring Pamona, the goddess of fruit trees.

BET YOU DIDN’T KNOW

Those who truly fear Halloween suffer from a condition known as Samhainophobia.

Black cats get a bad rap on Halloween because they were once believed to be witch’s subordinates who protected their master’s dark powers.

On Halloween, more people prefer Snickers to any other candy.

Halloween candy sales average roughly $2 billion dollars annually in the United States.

Orange and Black are traditional Halloween colors in that they represent the colors of Fall Harvest and Darkness. Studies show that more than half of the Nation’s Haunted House attractions are staged on or inside properties that have documented paranormal activity. AZWeeklyMagazine.com

Knock Life,” and laugh out loud as Miss Hannigan’s fellow gold-diggers dream of life on “Easy Street.” Ultimately, though, it’s Annie’s visions of “N.Y.C.” and her ever-optimistic vision of “Tomorrow” that sets the tone of this fun family musical.

running solo show in Broadway history, comes to Phoenix Theatre. This hilariously insightful play by Rob Becker about the ways men and women struggle to relate to each other has become a worldwide favorite and won the hearts of more than 8 million people in more than 30 countries. Defending the Caveman wittily catalogues the instantly recognizable traits that differentiate the sexes, but its underlying message is that from these differences spring the potential for bridge-building rather than all-out warfare. Part standup comedy, part therapy session and completely funny, the show provides insight on contemporary feminism, masculine sensitivity and the erogenous zones -- it mines the

common themes in relationships that go straight to the funny bone while warming the heart. Veteran cavemen Ben Tedder and Paul Perroni take turns tackling the role for Phoenix Theatre’s limited engagement. Both guys use their 90 minutes to deliver clever, accurate observations with impeccable comedic timing and unprecedented sympathy toward the opposite sex. Community Rallies and The Show WILL Go On!

Copperstar Repertory Company Opens The Wizard of Oz at HCPA

In the heat of the afternoon of September 4th, a house fire in Chandler destroyed the scene shop, offices and costume shop of Copperstar Repertory Co. With the East Valley Community’s support, Copperstar was able to continue on with the show and is thrilled to announce the opening of The Wizard of Oz, now playing at the Higley Center for the Performing Arts. Because of amazing press coverage, Copperstar received many calls, emails and donations and even a donated shop space from Michael Pollack Real Estate

Investments to build their sets for the show! Mr. Pollack was gracious, kind and generous in his donation of shop space for OZ and all are extremely grateful! Also a huge factor in their ability to persevere was the receipt of substantial donations from several individuals. After losing nearly everything in the September fire, the Okawas say that The Wizard of Oz has been a true blessing and the support of the community has been uplifting. “We do not know how or if we could have gone on.” The show will take the efforts of dozens of crew members and scores of actors, hundreds of costumes and beautiful sets and props, many which were loaned to Copperstar by several of the Valley’s theatre companies including Arizona Broadway Theatre, Theater Works, Valley Youth Theatre, Themers Events Planning, Spotlight Youth Theatre and Queen Creek Community Theatre. “We were contacted by the Artistic Directors of so many wonderful companies that simply opened their doors to us to help. I have been doing theatre my whole life and I have never seen anything like it. It completely restored my faith in the kindness and generosity of the theatre

community! We will be eternally grateful.” said Okawa. See Monkeys fly and much more at Copperstar’s The Wizard of Oz: October 26 at 7:30pm and 27 at 2pm and 7:30pm. Tickets are $15- $19 and available at www. copperstarrep.org

Reviewers’ Roundtable The following are reactions from each of AZ Weekly Entertainment Magazine’s film commentators in an effort to generate a well-rounded overview of this weekend’s new releases.

Randy Montgomery, AZ Weekly Film Critic

Listen to Joseph J. Airdo’s “Movie Maverick” radio segment, every Friday morning at 8:30 a.m. during “The Daily Blender with Jeffry O’Brien” on KBSZ - NBC 1260 AM and 96.1 FM

About the Film Columnists Stan Robinson, 66, is a retired first assistant director with more than 22 years of experience in film and media production. Read his full features and reviews exclusively online at ScreenScene.org. Randy Montgomery, 34, works in media and marketing and holds a master’s degree in counseling and education. ‘Chasing Mavericks’* Jonny Weston plays a teenager who discovers that the mythic Mavericks surf break, one of the biggest waves on Earth, exists just miles from his Santa Cruz home and enlists the help of a local legend (Gerard Butler) to train him to survive it. (PG – 100 minutes) *Screened after deadline.

‘Cloud Atlas’ An exploration of how the actions and consequences of individual lives impact one another throughout the past, the present and the future as one soul is shaped from a killer into a hero and a single act of kindness ripples across centuries to inspire a revolution. (R – 173 minutes) Stan: If there is a movie to see twice, it’s’Cloud Atlas’ with multi-layered

themes, moving between the past, present, and future, with multiple roles by the principal actors. Although it’s basically a sci-fi action/adventure story, the cerebral factor is high as aspects of ‘one’s spirit is eternal’, ‘the chain reaction of our actions’, and the ‘interconnectedness’ of living life are presented. At almost 3 hours long it seemed to be over in an instant, and don’t leave before the end credits as various multiple characterizations are revealed and are a sure bet for Oscar® consideration.(Grade: B+) Joseph: While watching “Cloud Atlas,” one feels as though they have fallen victim to a serial channel surfer who, being the sole possessor of the remote control, frequently flips between six different films. That is to say that although those with Attention Deficit Hyperactivity Disorder may enjoy the new overly ambitious epic science-fiction saga from the Wachowski Siblings – excuse me, the Wachowski Starship – most moviegoers will come close to complete insanity trying to connect the copious dots. Having said that, the infinite number of characters that are portrayed by each of its stars make it at least an interesting effort. (Grade: D)

‘Fun Size’ Victoria Justice plays a high school senior who gets distracted by an invitation to a Halloween party and loses her little brother in a sea of trick-or-treaters. She and three of her friends embark on an all-night adventure to find the boy, crossing paths with outrageous characters every step of the way. (PG-13 – 100 minutes) Stan: The directorial debut ofJosh Schwartzis an ambitious film as it aims to be ‘all things to all people’ and manages to straddle that fine line of mass appeal with a Halloween theme madcap adventure. The glue that holds it all together is child actor Jackson Nicollas the little brother and the focal point of the searchis fun to watch. (Grade: C) Joseph: “Fun Size” is, at the very least, an entertaining film thanks to its high-energy spirit – in particular, its high-energy Halloween spirit. However, the directorial debut from Josh Schwartz – co-creator of the late/great television series “Chuck” - cannot decide between dual demographics. Its themes are too mature for children yet its jokes are often too juvenile for older teens,

‘It is No Dream: The Life of Theodor Herzl’ Filmmaker Richard Trank examines how well known journalist and playwright Israeltook upon himself the task of attempting to create a Jewish homeland in Palestine against all odds. (NR – 97 minutes) Stan: Expecting the usual ‘high and dryness’ of a documentary, filmmaker Richard Trankpresents a highly credible visual history lesson and turnscommonly heard names like Palestine, Israel, and homeland, intomeaningful, insightful history, and the profile of Theodor Herzl, leaves onewith the feeling of the father of a nation, a term used to describe our own George Washington and the United States.(Grade: B)

insights into their own selves. (NR – 104 minutes) Joseph: “Madrid, 1987” is an exceptionally unique film and the fact that it features the beautiful María Valverde is certainly enough of an incentive to see it, but one cannot help but feel a bit alienated by the monologue that spans the majority of its runtime. Set during a year of social and political transition in Spain, the generally one-sided conversation that evolves over the course of writer/ director David Trueba’s drama is unlikely to be of interest to anyone other than hardcore historyphiles. Moreover, its very verbose nature makes it more appealing as a novel than as a subtitled motion picture. (Grade: F)

‘Silent Hill: Revelation 3D’*

*Not made available for review.

‘Pusher’ Richard Coyle plays a drug dealer who grows increasingly desperate over the course of a week after a botched deal lands him in the merciless clutches of a ruthless crime lord (Zlatko Buric). (R – 87 minutes)

José Sacristán plays a celebrated journalist who meets a coy journalism student (María Valverde) to give an interview but becomes intent upon seducing her. They end up spending time discussing literature and career trajectories, gradually divulging little

As a consequence of failing to milk the movie’s transitional sequences, director James Ponsoldt – who cowrote the dramedy’s screenplay with Susan Burke – is forced to tack on an extra ending just to extend a stillshort runtime even though it does not add any enlightenment. In working on that, we looked at Churchill’s long support of Zionism and his close relationship with the Jewish people and it got me thinking about the roots of political Zionism and where they came from. The following quotes were pulled from interviews conducted by AZ Weekly Entertainment Magazine’s film columnists with talent speaking on behalf of movies recently released or about to be released in theaters.

Actor Dylan O’Brien (‘The First Time’) By Joseph J. Airdo In “The First Time,” which opened last weekend, Dylan O’Brien plays a high school senior who spends most of his time pining away over a girl he cannot have. Britt Robertson plays a junior who has artistic aspirations and a boyfriend who does not quite understand her. A casual conversation sparks an instant connection and, over the course of a weekend, things turn magical, romantic and complicated. “I was 19 years old when we shot this. I was really only a year or two removed from all of this myself so it was all so fresh in my mind. For me, it was about taking myself apart, seeing how I would be in this situation and really reflecting on my own experience. I would also have conversations with [writer/director Jon Kasdan] about how we both are with girls, how we both were in high school, the things that we thought were romantic and the things that we thought were so important for the rest of our lives. “Unfortunately, you cannot realize this until you are through it and past it, but you eventually realize that it is all just a learning that you are supposed to through. For me, I was

very shy around girls. I was very much into girls, though. They occupied a lot of my brain space. It is just kind of about not knowing what to do and not knowing how to finally act on it all. I just dove into myself a little bit and picked out what I thought was the portrayal of a high school senior in love. “It is sometimes hard to play something that is so personal and while playing something so honest you become vulnerable. That is a difficult thing to tackle as an actor – especially as a male actor. I think that a lot of guys are afraid to be vulnerable – and I will not take myself out of that group. It is tough. You are putting yourself out there and opening up. I am a person who, in real life, does not open up easily. I am very internal. So it was challenging from that perspective.” – Dylan O’Brien

Writer/Director Richard Trank (‘It is No Dream’) By Stan Robinson “I run the film division of the Simon Wiesenthal center and our mandate is to produce a new theatrical documentary dealing with some aspect of the Jewish experience or something that fits into that subject matter. We did a film the year before called ‘Walking With Destiny’ which looked at Winton Churchill when he

“The reaction to the film has been really great. You always expect when you do a ‘Q & A’ that somebody is going to stand up and be critical, it just part of how it is, and strangely, its not happened with this movie! Whether it’s me doing the ‘Q & A’ or Rabbi Hier, or my editor, none of us have encountered anybody who’s been critical of the movie. “The press for the most part, and I would say for about 80% of the reviews, have been very, very positive. I wasn’t sure how well this would do theatrically because it’s a film that is probably more of interest to the Jewish community than to the nonJewish community. However, it’s done exceptionally well. It was extended for six weeks in L.A.; it’s into its sixth or seventh week in Boston. Every week we keep adding theaters and theaters keep extending the film, and we’re very, very pleased and gratified by the response thus far. “Here’s a story about a man, you’ve seen his face, he was responsible for the founding of a country that’s in the news practically every single day, but he’s somebody that you know almost nothing about. It’s a story of high drama, taking you from one end of the European continent to the other, and the change that occurred in Europe from the 19th to the 20th century.” – Richard Trank

Writer/Director Michael J. Bassett (‘Silent Hill: Revelation 3D’) By Joseph J. Airdo “I really loved the look of the first movie and felt that there were no compelling reasons to change it up

“I like movies where characters are ultimately searching for themselves in some way or have a very strong and compelling mission to fight through obstacles. I like mission movies. It is generally for a sense of love or a sort of moral purpose. [Adelaide Clemens’] character certainly has an objective and she will literally go through hell to achieve her goal.

mythology is so powerful that it is easy to jump into that and hopefully make a movie which the audience is really going to enjoy. “The first job of ‘Silent Hill’ is to scare the pants off of you and it does that. So it is a great Friday night entertainment movie. But then you have these multiple layers. It is not torture porn. It is not a slasher picture. It is an intense fantasyhorror movie. But there is no doubt about it that the core production team all have a little shard of darkness in our hearts, which comes through no matter what we do. Let’s put it this way – I am not making a romantic comedy anytime soon.” – Michael J. Bassett

“The thing about ‘Silent Hill’ is that it is a game franchise as well, so you have to adhere to the visuals of the game. But the cool thing about ‘Silent Hill’ is that the game visuals are so extraordinary and the

HOMESTYLE Staying home? Here’s a recipe to brighten your day!

1. Place all the strawberries in a large pot with a little more than half of the sugar (about 4 cups). Add the pectin and turn the heat to high. Stir until the mixture comes to a rolling boil. 2. While continuing to stir, add the remain sugar and let the mixture return to a boil.

HOMEMADE STRAWBERRY JAM INGREDIENTS

• 2 quarts of fresh strawberries • 7 cups sugar • 1 package pectin

3. Remove from heat and allow it to set for at least five minutes. Skim any foam off of the top and discard. 4. Ladle into sterilized canning jars. Process in a hot water bath for 5 to 10 minutes. (All jams must be “processed” (submerged) in a boiling water bath to prevent mold growth.) 5. Let jam set for at least 12 hours before using. Store in a cool, dry place. ***Important Note: Pectin is a naturally occurring substance found in fruits. When heated together with sugar, it causes a thickening that is characteristic of jams and jellies. Most packages are between 1 and 1.5 ounces. Please consult your package for its recommended sugar to pectin ration.

Sara Rue, Lily Tomlin, Reba McEntire, Justin Prentice, Jai Rodriguez and Juliette Angelo (l-r)

Reba’s back, and ABC’s got her. It’s hard, if not downright impossible, to challenge country music icon McEntire’s sense of what her loyal and large fan base wants: She had a six-season run with her WB/CW comedy “Reba” (still seen in repeats on both ABC Family and Country Music Television), and as she returns to weekly television, she’s adopting a familiar-feeling character and premise.

Premiering Friday, Nov. 2, “Malibu Country” casts her as a once-major singing star who decides to relocate from Nashville to Southern California and salvage her career after her marriage falls apart. As on “Reba,” the central figure has teen children (Justin Prentice, Juliette Angelo) ... with added concerns posed by her own sassy mother, appropriately played by perennially saucy comedy legend Lily Tomlin. Melissa Peterman was an ever-upbeat presence McEntire played off on “Reba”; now that slot is

filled by Sara Rue (“Less Than Perfect”) as an enthusiastic neighbor who constantly shares too much information. And the unfaithful ex-husband of the fictional Reba again stays in the picture, played now by Jeffrey Nordling (“Once and Again”). That the Reba of “Malibu Country” has fallen on hard career times is something McEntire can relate to, though she certainly isn’t inviting such a situation for herself. “It sure will keep you humble real quick,” she reflects, ”by somebody saying, ‘Nope, you’re not young. You’re not sexy. Go do something else.’ I’m sure that would be very humiliating and hurtful, but the character has to embrace that and work harder. McEntire believes “Malibu Country” makes a good companion to ABC’s (and Tim Allen’s) relocatedfrom-Tuesdays “Last Man Standing.” She’s also a “Malibu Country” executive producer, as is her husband and longtime manager, Narvel Blackstock. “I didn’t want to leave television when (‘Reba’) got canceled,” she maintains. “I was having so much fun, and we still had so many stories to tell, I was looking for a new show all this time. Then, the funniest thing happened. “Dave Stewart, of (the music act) Eurythmics, was on an airplane to L.A. from Nashville with my oldest son Brandon. They were asking each other what they do, and Dave told Brandon that he had a sitcom idea. He told it to him, and Brandon said, ‘Why don’t you get Reba McEntire to do it?’ Dave said, ‘Oh, she’s already got a TV show.’ Brandon said, ‘No, that got canceled in 2006.’ And Dave said, ‘Well, email this idea to her!’ And I fell in love with it.”

To get a vision of what may become of these areas in the next decade or three, here is a list of some must-see winegrowing regions. ●● Sonoma County, California: Home of the famed Russian River Valley AVA (American Viticultural Area), Sonoma is home to some megawine producers, including B. R. Cohn and Kendall-Jackson. ●● Napa Valley, California: Hosts over 400 wineries that produce exceptional Cabernet Sauvignon and Chardonnay. ●● Finger Lakes, New York: This region boasts over 100 wineries, producing German-style wines like Riesling and Gewürztraminer,

two sweet, aromatic white wines. ●● Willamette Valley, Oregon: The long, cold growing season in this valley is prime territory for growing the delicate Pinot Noir grape.

Authentic. Fresh. Local.

●● Paso Robles, California: More than 170 wineries exist along this central-California, coastal mountain range. Many innovative red blends are emerging from this area, most of which including Zinfandel and Syrah.

30 Wines for $30 Mon-Sat 11 am to Midnight, Sunday 10-2 brunch, 2 to Midnight.

●● Palisade, Colorado: This oncethriving wine area was put out of commission during prohibition, but recent efforts have made Palisade the leading grape producing region in Colorado.

4221 North 7th Ave, (602) 234-0333

In each of these areas, the wine industry attracts other businesses such as restaurants, B & B’s, hotels, and tourism. Imagine what Arizona will look like in the coming years…

The grape harvest season continues and by now the grapes are either actively fermenting or resting peacefully. The harvest festivals go on and the vineyard workers can now begin to enjoy a bountiful meal to celebrate their labors. Harvest reports are quite varied from region to region this year. Most of Europe had to work extra hard to get high quality grapes due to drought and hail storms. Fear not, because countries such as Italy, Spain, and France have been producing quality wines for so long, their years of history will help them step up and make the best wine possible. In California, 2012 has been a banner grape harvest – Mother Nature was more generous to the vineyards there, providing a classic growing season. I believe, due to the abundance of quality grapes there, you will see a lot of winemaker creativity in the California 2012’s when they hit the market. As you live and breathe in this year of 2012, the contrasting grape harvests take place. The world of wine is a big one and it speaks to the importance of not over-generalizing a particular wine year. Think of the cries of: “Wow, 2000 was such an awesome wine year” or “Ewww 2003 was a terrible year”. When it comes to grapes, it’s almost always a good year somewhere! And what Mother Nature didn’t give the growing season, the skilled winemaker can overcome.

A lot of people ask me if a particular year is a good vintage– mostly people who are celebrating a special occasion– births, weddings, graduations, and they want to celebrate with a bottle from that year. I believe you can find a nice wine from nearly any year. In fact, you will likely find excellent value in so-called “off years”. One rule of thumb I use when selecting from these trying years is to stay with reputable producers and wines familiar to me. For example, I was born in an outstanding wine year (thank you, my parents!) but my college graduation year – not so great. Therefore I’m more flexible on wine for my birthday…and prefer only the top producers when I’m celebrating my graduation year. AZWeeklyMagazine.com

Del Frisco’s Grille: Where wine is not an afterthought By Tim Hilcove, www.weeklywinejournal.com

Del Frisco’s Grille is a new concept based on Del Frisco’s original “Double Eagle” Prime Steakhouse and Wine bar which opened in Dallas over 20 years ago. Arizona is the 3rd “Grille” location. The concept is an extension of the prime steak theme, mixed with a contemporary feel and lighter food fare. When I heard there was a new winecentric restaurant in the Biltmore

district, I was skeptical. Another place to buy overpriced Napa Valley wine and eat steak? My skepticism vanished quickly upon entering Del Frisco’s Grille. The first thing I noticed was the interesting interior design. The restaurant’s central design consists of floor-to-ceiling glass walls that have wine bottles behind them. Deeper into the restaurant, I found the private all glass dining room. I inspected the bottles behind the walls a little closer and found a Methuselah (6-liter) bottle of Caymus Special Selection. A little farther along, I saw a tall stack of bottles: 2007 Dunn Vineyards Cabernet Sauvignon, Howell Mountain, Napa. I have been on a

huge Howell Mountain kick ever since visiting Robert Craig’s vineyard “above the fog” back in 2011. I put the Dunn in my memory bank for later use. I continued on my tour led by general manager Tony Brunetti and he opened up the storage area for me. The majority of Del Frisco’s 500+ selections of wines are stored behind the glass walls in a temperature and humidity controlled and quite narrow cellar! After some pre-dinner drinks, my party was seated for dinner and we were in for a treat! Not only was the food great, but we enjoyed a bottle of that Dunn Howell Mountain Cabernet. The wine was still young, quite tannic, but delicious. Given five more years of aging this wine will really be absolutely amazing. The wine was brought out cool but not cold and our server brought a decanter and appropriate stemware. Small sports bar glasses are not the way to enjoy a $125 bottle of wine. Del Frisco’s Grille is really a wine bar with an excellent menu. A lot of restaurants have wine as an afterthought; whereas Del Frisco’s really paid attention to what kind of food would go with some of the greatest wines in the world and built their menu around an impressive wine list. One last thing to note: Del Frisco’s has an upstairs patio featuring a view of Camelback Mountain!

Yes indeed, the sights and sounds of Halloween are once again upon us. That time of year to get your eyes and ears ready for anything and everything you could possibly imagine. You know, those crazy costume creations that stop you dead in your tracks, left only with thoughts of “wow, just ….. Wow!” In other words, Halloween in Phoenix is a special time of year. One can expect endless and epic days and nights (yes, plural) of uninhibited, over the top, noholds-barred gatherings, where naughty rebellion meets madness and mayhem. Droves of enthusiastic, highly-spirited, costumed party-goers will flood the streets, bars, clubs, casinos… (you get the point… all the cool spots, hence the guide below). From Glendale to Globe, Cave Creek to Casa Grande, you can expect to encounter a little, (scratch that…A LOT) of everything. From Honey Boo Boos and Pregnant Snookies to Niki Manaj and raging Mitt Romneys… it’s an “anything goes free for all” the last few days of October. In short, Halloween parties are a special breed of social gathering – and as far as we’re concerned, the coolest Halloween hangouts are the places that are cool all year round. Therefore, we proudly recommend any of the following can’t miss hot spots, each perfectly ideal to let loose, unwind and be whatever the heck you choose to be… for Halloween 2012 in the Valley of the Sun.

POURING AND TASTING BEER There are a number of factors that influence the beer drinking experience, including choice of glassware, temperature of the beer, and your individual palate. Anyone can drink a beer, but to be able to really taste it and distinguish it from others, takes practice and skill. Glassware Like wine, beer can be enhanced or degraded by the type of glassware used. The shape of the vessel allows the carbonation to escape and the nose of the beer to enjoyed fully. Of course, you can drink a beer out of any glass, but it wouldn’t have the same aesthetics.

Clean glasses are a big factor in the beer world. “Beer Clean” is a term that is used to make sure glasses are not only clean, but beer clean meaning it won’t change the taste or head of the beer. Soap is a no-no when cleaning beer glasses. It leaves a film on the glass that you cannot see, but you may taste and you can observe the results in the lack of head you would otherwise get. There are commercial products for cleaning glasses to get them beer clean or you can use baking soda. Air-dry the glasses. If you see water spots after it is dry, clean them again. Do not freeze the glasses. This adds water to your brew and the cold glass can change the temperature of your brew.

Chalice These are typically for Belgian abbey and Trappist style beer. They can have a look of royalty about them. Sometimes they are more “V” shaped with either straight or an inward curving top, sometimes rimmed with a precious metal. The stem is thick and the length is usually rather short. Flute Typically seen with champagne, beer flutes have shorter stems than champagne flutes. The mouth has a smaller diameter than the midsection to hold in carbonation. Goblet Goblets can resemble a fishbowl. Typically they have a round bowl and come in various sizes. They are somewhat like a brandy or cognac snifter. Use these for high alcohol sipping beers. Kolsch Looks like a cylinder. The kolsch glass has straight sides and is tall. These glasses typically hold 10- 12 oz.

NIMBUS AMERICAN BISTRO

Mug, krug, seidel The only beer glass with a handle. Typically very heavy and sturdy. They can have different textures and come in different sizes. Pilsner glass These also are tall, somewhat thin walled, sloped glasses with a solid base. Their capacity is usually 12 oz. Pokal Apokal is a European pilsner glass with a stem. Can look similar to a tulip without the flare at the top or similar to a chalice with a smaller less angular bowl. Holds 12 oz.

Pub glass or Pint glass Probably the most common beer glass. Straight, thick sides at a slight angle making the mouth of the glass larger than the base, typically holds 16 oz. You may also come across an Imperial Pint glass. These hold 20 oz. have somewhat thinner sides and a bulge about 3/4 of the way up the glass. These also come in 10 oz. half pint sizes. Stick or stange This is a taller, thinner version of the pilsner glass, very similar to the

Kolsch glass. Holds 12 oz. Tulip glass The tulip glass looks somewhat like a tulip, hence the name. It can have a stemmed base and roundish bowl, which thins out about 1/2 way up the glass then flares out slightly. It can also be similar in style to a pint glass, but has the tulip flare. Holds 16 oz. Wheat beer glass These are tall, somewhat thin walled, sloped glasses with a solid base. They are typically 1/2 liter in capacity. They resemble a pilsner glass, only taller and usually wider at the bottom. Willibecher or becher Similar to a pub glass, but thinner walls and they stop angling out about 2/3 of the way up the glass and become straight at this point. Yard As the name suggests - it is about 3 feet long. They are awkward and can be quite fragile. They hold almost 3 pints. They also come in half yards. Pouring Pouring is the next step in enhancing the flavor of your beer. The proper pour releases the aromatics just right and sets up the taste of the beer. 1. Get a “beer clean” glass of your choice. See the glass guide for the proper glass. 2. Open the bottle. 3. Tilt the glass about 45 degrees and pour the beer in the glass first making contact along the side starting about 1/2 way from the bottom. 4. As the bottle gets half way empty, turn the glass upright and continue pouring into the center of the glass. 5. You can increase the amount of head by putting more distance between the glass and the bottle or decrease it by pouring more beer in the glass before you tilt it back up. swirling technique that can be used for wheat beers or other beers when having the sediment in the glass is desired. To do this pour 2/3 or so into the glass. Then with the remaining 1/3 in the bottle, hold the bottle upright and gently swirl the bottle in small circles for a few seconds. Pour the remaining beer into the glass. This can also be done to increase the head volume. Note: If the beer is too cold the head will not form properly. If it is too warm you will get too much foam and the beer will go flat quickly. Depending on the beer, anywhere from 38 to 55 degrees may be appropriate. Tasting and evaluating Tasting beer is not only done with your tongue. A proper tasting or evaluation involves sight, taste, sound, smell and touch. In order to properly taste beer, first of all you need a suitable environment.

A loud bar is not necessarily the ideal place for this. You should be in a quiet, relaxed, odor free atmosphere with good light. You should have white walls, tablecloth, or placemat available to properly judge color. You should also have your tasting journal, writing utensil, “beer clean” glasses and bottle opening devices. If you are doing a session with multiple beers, you should also have a palate cleanser such as water and bread or salt-less crackers. It is a good idea to get a notebook or a journal of some type and keep notes on the beers you taste. This can be a good way to compare beer or Continued On Page 56

GABF It’s Not the BY “KING” JAMES SWANN

Hello again friends, thank for all the emails last week concerning my absence. Although being stuck in Denver for two days after the Great American Beer Festival has its advantages, I truly missed my trusty laptop and the mental outlet writing this weekly article gives me. This week I’d like to tell you a bit about Denver during GABF. As I understand there were fifty thousand people in town for this shindig but I must say, the festival was just a back drop for what is arguably the best craft beer scene in the country. Did I go to the festival? Of course I did. Was the best it the best experience of the trip? Not by a long shot! Let’s begin by mentioning some of the breweries. Wynkoop Brewing, Hog’s Head and River North were definite favorites. Wynkoop and Hog’s Head brew very traditional English style beers with an American twist while River North is very focused on Belgian styles. In addition, we visited Great Divide, Breckenridge, Renegade, Denver Brewing, Prost and Crooked Stave. A few short jaunts in our faithful Hyundai rental car got us to New Belgium, Boulder Beer, Avery and Oskar Blues. I was fortunate enough while at Boulder Brewing to spend the afternoon filling firkins and making Real Ale with the brewers. What a day!

Check out where to enjoy and purchase these local brands on “Beer Spy” at www.worldclassbeer.com AZWeeklyMagazine.com

Next up, the Bars were just as awesome. The Cheeky Monk, a true Belgian style cafe was our favorite by far. Drinking with Geoff owner of Brewery VanSteenberg, makers of Gulden Draak was quite the experience. Other great places included Falling Rock, The Ale House @ Amato’s, Ghost Plate & Tap and Fresh Craft. All staples of the Denver Craft scene. As you can see, it was a busy week in Denver and one I’ll never forget. Until next week, Cheers!

Open the beer and pour it into the glass. Observe the head, the consistency, the color, the clarity, the aroma. Hold the beer up to the white background (not direct light) and observe. Make your notes in the journal. Swirl the beer in the glass. Smell the beer several times. If the beer is too cold you may need to warm it by holding the glass in your hands for a bit. You may also cover the mouth of the glass with your hand for a few seconds then as you remove your hand, smell the beer. Make notes about what you smelled. Pay attention to the hops, malt, fruit, yeast, off aromas and so on. Finally, taste the beer. Take a sip and allow the beer to come in contact with all parts of your mouth. Gently swish it around or “chew” it to help distribute it better. Now, swallow the beer and exhale through your nose. Make notes as to what you have tasted. Pay attention to mouthfeel,

It is a good idea to know your palate. If you have been ill, burnt you mouth on spicy or super hot food, smoke, have palate fatigue from tasting other items, are exposed to chemicals or otherwise have impaired your sense of smell or taste, keep this in mind when evaluating. It is best to wait until your palate has recovered before doing any serious tasting. It takes about 10 days or so to recover from a burnt palate. To really get into it, there is a chart or tasting wheel put together by Morten Meilgaard in the 1970’s. The beer flavor wheel has 14 categories broken down into 44 flavors. Beer has been found to have over 1000 identifiable flavors. An experienced taster can pick out maybe 100. I recommend doing some research in taste science or flavor chemistry to learn how the different flavors are perceived. There are a number of good publications available to help get you going down the right path. All that said, sometimes, it’s best to just enjoy a beer without deconstructing it. By all means go ahead and have fun. But the steps above will help you enjoy beer a little more when you do want to delve in to exactly what makes beer wonderful, and help you determine what you like best in a beer.

Firewater released their first album in four years last week. International Orange!, mixed by Tamir Muksat of Balkan Beat Box, carries on from where their previous collaboration, The Golden Hour, took off, slipping across new borders into uncharted territory. Created in Istanbul and Tel Aviv during the 2011 Arab Spring, their latest release captures the frenetic pulse of a world in the state of flux. The songs tap into grooves as disparate as Turkish maqsoum, Punjabi bhangra, Jamaican ska, Greek rebetiko, classic punk and old-school mambo. Firewater will be at the Crescent Ballroom (308 N. 2nd Ave) on Thursday September 27th. Visit www.crescentphx.com for more details.

MUSIC ON TV

REVIEWS by Brian Palmer

Muse’s latest album, The 2nd Law, plays like a rock ‘n roll opera from start to finish. Singer Matthew Bellamy acts like he wants to make his vocal cords explode on tracks like “Supremacy,” “Animals” represents some of the album’s best lyrical content as Bellamy lampoons mankind’s baser tendencies, and “Survival” will instantly make you think of Queen’s “Another One Bites the Dust.” “Isolated System”’s swelling dance rock beats, ethereal keys and atmospherics marry with a throbbing heartbeat bass line and a number of news sound bites about a world in crisis to produce the album’s most haunting song. It’s not Origin of Symmetry or Black Holes & Revelations, but The 2nd Law is still a grand production. Ukulele virtuoso Jake Shimabukuro’s latest album, Grand Ukulele, however, is a grand production of a markedly different kind. The upbeat pop number “Ukulele Five-O”—one of several songs to have appeared on the hit TV show Hawaii Five-O— and the laid back quality of “Gone Fishing” showcase Shimabukuro’s ability to engage you with a wide variety of moods and rhythms. “More Ukulele” will have you clapping your hands and dancing in no time flat, “Missing Three”— which was written on only three strings despite being recorded with a twenty-ninepiece orchestra—would fit perfectly as part of a dramatic film score, and his cover of the classic “Somewhere Over the Rainbow” will bring you to tears it’s so good. This is one amazing album. AZWeeklyMagazine.com

Musical Instrument Museum (MIM) Presents A CELEBRATION OF HIP-HOP CULTURE Featuring World-Champion DJ QBert Saturday, November 3rd

Now open through Oct 31st Thursday through Sunday and the 30th and 31st Fearfarm.com for more info and discount coupons

On Saturday, November 3, MIM will celebrate the opening of its updated Hip-Hop exhibit with a day dedicated to the popular genre featuring worldchampion DJ QBert. Guests can immerse themselves in Hip-Hop culture through rhythmic sounds, beats, and B-boy movements for the masses. The event will be hosted by Johnny Castro, cofounder of ILL-PHONIX (a collective of MCs, musicians, and artists), member of Furious Styles Crew, and instructor of Hip-Hop at Paradise Valley Community College. One of the most exciting parts of the event will be a live performance by DJ QBert. Often referred to as the “Jimi Hendrix of Turntables,” QBert is the winner of America’s Best DJ 2010 and a two-time DMC World DJ champion. He is also credited for being the world

ambassador of “DJs-as-musicians” and has transformed the turntable into a respected musical instrument. In fact, QBert even donated a Vestax QFO (the instrument he designed) for display at MIM. MIM’s Hip-Hop exhibit offers an exciting look at this influential American musical genre. Two video monitors feature such notable innovators as Grandmaster Flash, Grand Mixer D.ST., Mix Master Mike, and DJ QBert as well as break-dancers and MCs. Instruments include two Technics turntables, a Gemini mixer, a Roland drum machine, an E-MU sampler, and a Vestax QFO. Important “break beat” records are presented alongside a B-boy outfit complete with Kangol hat, Adidas track suit and shoes, rope chains, and JVC boom box. Photography by Martha Cooper and art by Justin Bua complement the display, while a custom graffiti backdrop by local aerosol artists Such and Champ Styles colorfully recalls the New York City subway system as a key part of Hip-Hop’s early days. Visit www.themim. org for more information. Experience Hip-Hop at MIM Saturday, November 3 | 9 a.m. to 5 p.m. Tickets: Free with museum admission
