yle Stanley, 2012 Tournament Champion, is back to defend his title after an exciting come-from-behind victory over 54-hole leader Spencer Levin. In fact, much of the golf world called it, “the comeback of the year.” Stanley is coming off the best year of his short professional career having earned his first PGA TOUR victory at the 2012 Waste Management Phoenix Open and claiming two top-10 finishes. He finished 32nd on the 2012 PGA TOUR money list with $2,351,857 in earnings. At the 2013 Waste Management Phoenix Open, look for Stanley to defend his title against several PGA TOUR stars such as Phil Mickelson, Rickie Fowler, Bubba Watson and many others as they battle it out for their share of the $6.1M purse. While the actual Waste Management Phoenix Open golf tournament will be played Thursday – Sunday (January 31-February 3), there will
still be plenty of things to see and do at TPC Scottsdale all week long. Many of the PGA TOUR pros will play morning practice rounds on Monday and Tuesday of tournament week. There are also other special activities that will feature PGA TOUR professionals, including the R.S. Hoyt Jr. Family Foundation Dream Day on Tuesday and the ever-popular Annexus Pro-Am (formerly the Silver Pro-Am) on Wednesday. On Saturday, February 2nd, the tournament is inviting everyone to participate in the third annual GREEN OUT. GRAMMY AWARD-WINNING VANCOUVER SYMPHONY ORCHESTRA PERFORMS IN SCOTTSDALE Bramwell Tovey, Music Director and Conductor Jon Kimura Parker, Piano Thursday, January 31, 2013, 7:30 p.m. Scottsdale Center for the Performing Arts Scottsdale Center for the Performing Arts will present the Vancouver Symphony Orchestra conducted by Bramwell Tovey with guest pianist Jon Kimura Parker on Thursday, Jan. 31, at 7:30 p.m. Founded in 1919, the Vancouver Symphony Orchestra features a roster of 73 musicians performing more than 140 concerts each season
to an annual audience exceeding 200,000 people in the historic Orpheum Theatre in downtown Vancouver and throughout British Columbia. The Orchestra’s conductor and music director, Bramwell Tovey, is acknowledged around the world for his artistic depth and his warm, charismatic personality on the podium.
In 2008, the Vancouver Symphony Orchestra won a Grammy Award for its recording of violin concertos by Samuel Barber, Erich Wolfgang Korngold and William Walton, performed with violinist James Ehnes and conducted by Tovey. The concert will open with Totem, a newly commissioned work by Vancouver Symphony Orchestra Composer-in-Residence Edward Top, followed by the beloved Piano
Concerto in A minor, Op. 16, by Edvard Grieg (1843–1907) featuring internationally acclaimed Canadian pianist Jon Kimura Parker. January 18 through February 3 at Theatre Artists Studio Hilarity ensues when two sets of loving, but overbearing, ItalianAmerican grandparents become determined to keep their grandson from moving to Seattle. Theatre Artists Studio captures all of the love, pain and laughter of “Tengo Familia The Family” in Joe DiPietro’s Over the River and Through the Woods. Set in Hoboken, New Jersey, Over the River depicts the inevitable conflicts that occur between generations and proves that family life can be chaotic, compassionate, but most of all - funny! When 29-year-old Nick announces that he’s been offered a job promotion out of state, his grandparents are stunned. While other close family members have left New Jersey, up to now Nick has remained close by and devoted to his grandparents. Why would he want to leave his family now? With each elaborate and hysterical scheme they concoct to keep him close, Nick’s decision becomes more complicated . . . and comical. The cast all agree that family is at the heart of the story. “Over the River is about family loyalty and devotion and how those values can become obstacles when a family member needs to break away. I think everyone
who sees this show will be touched by how close it hits to home,” observed Scott Hyder, who takes on the role of the conflicted Nick. Shana Rebilas Bousard (Caitlin) remarked that “this family is so close that they drive each other crazy, but all is said and done in the name of love, and that’s the kind of family you want on your side. It’s Moonstruck, My Big Fat Greek Wedding and All in the Family rolled into one!” Judy Rollings (Grandma Emma) reflects that “Over the River speaks to me as the young woman I once was, and as the Grandmother I am today.” Bob Barr, Michael Fleck and Dolores D’Amore Goldsmith round out the cast as the remaining grandparents. Theatre Artists Studio presents Over the River and Through the Woods, a family show suitable for all ages, from January 18 through February 3. ‘Amour’ Jean-Louis Trintignant and Emmanuelle Riva play retired music teachers who are in their eighties. When one of them has an attack, the couple’s bond of love is severely tested. (PG-13 - 127 minutes) Stan: With a story that supersedes language (French with English subtitles) and elicits strong emotional attachment to the central characters, Emmanuelle Riva delivers a poignant award caliber performance of a senior nearing life’s end while Jean-Louis Trintignant presents that special person in her life we would all like to think or hope we are when faced with that critical path in life. And, as a senior, I was once again reminded of my mortality and the realization that for me, it’s sooner rather than later, and I should certainly stop to smell the roses while I can… (Grade: B+)

Randy: Director Michael Haneke’s drama is film to admire, not necessarily like. The performances are so natural, that they are uncomfortable to watch. Emmanuelle Riva’s performance is the best I have seen in any film. Please, give her the Academy Award now. JeanLouis Trintignant turns in an equally impressive performance. Having gone through a similar situation a few years ago with my mother, every minute detail I remember of the dying process was recreated on screen. While extremely difficult to watch, out of admiration for the actors, I stuck with it. Note: the studio decided to screen this film after our voting deadlines for our ‘Best of 2012’ issue. Sadly, it would have landed in my “Top 5.” (Grade: A+) Joseph: “Amour” is the cinematic equivalent of spending an afternoon in a stranger’s room at a hospice facility. That is to say that writer/ director Michael Haneke’s new French film is an excruciating experience to endure in that nobody wants to watch someone slowly be slipped away by death’s graceless grip - especially when that someone’s spouse is there, too, struggling with losing their loved one. Granted, the flick features a pair of powerful performances but it lacks the necessary insight - be it emotional or intellectual - that would have made such a sickening sight worth sitting through. (Grade: D)

the kids from Glee wrote a script, do you want to read it’ [with a chuckle!], I read it, and thought it was pretty intuitive from someone that age. Chris (Colfer) wrote it and it was unlike any other teen movie that I had ever been sent! I met with Chris, thought he was great, and we actually started shooting probably within 6 months which is really fast to move on a project. “It’s an interesting story about a kid who’s in high school and is really focused on getting out of school, out
of the town, and getting on with his life. He spent all of his time focusing on that and missing the life that was in front of him. The thing that is really interesting is, it’s about the journey, which one doesn’t see very often in a high school movie. “You mention loving Rebel Wilson’s work, here’s one of my favorite casting stories! We were about a week into the shoot, when my casting agent Michael Nicolo had a dream about her the night before, called her, and the next morning she was on set! As you say, she is so very talented and wonderful to work with. “You asked about test screenings, our first test screening we scored in the 80s which is huge, and, at advance screenings I’ve never had people that were that demonstrative. There were people in the audience crying, holding each other, and it’s a very rewarding reaction especially for a movie that we made in a very short time, with a limited budget, a first script for Chris and playing a character he never played before! He wrote the script when he was 19 and it has an authenticity that you just can’t fake.” - Brian Dannelly

at first. In the beginning of the film, she is sort of a darker character but a pretty normal girl. And then she finds out that she comes from a different family than she thought she did and finds out that she is Leatherface’s cousin. The way that she deals with that information and the evolution of her character was really interesting and makes this film a little bit different than other conventional horror films. “I am horror fan in that I think that they are very effective on me. I get scared very easily. I am a scaredy cat. When I was younger, my mom used to rent Alfred Hitchock films, so I saw a couple of those and they terrified me. But I am so bad with gore. I was familiar with the ‘Texas Chainsaw Massacre’ movies but I had not seen any of them. When I was watching the ‘Texas Chainsaw Massacre’ movies to prepare for this one, I would sometimes have to pause my DVD and take a break.

SOUR IS THE NEW HOPPY In case you haven’t noticed it, sour beers are becoming increasingly popular. In fact, just last week, we labeled sour beers as one of the big trends in craft beer. People are discovering that, once you get past the first couple of sips, sour beers can be refreshing and adventurous. For that reason, I always refer to them as “three-sip” beers. The first sip you want to spit out, the second sip is a little more palatable…and finally by the third sip you are starting to appreciate the simple complexity of the beer. the envelope by creating increasingly hoppy (bitter) beers that have challenged the taste receptors and been part of the backbone of the Extreme Beer movement. By now they have created all sorts of new flavors whether through dry hopping, wet hopping, continuous hopping, single hopping (let’s leave triple hopping out of this…makes me think of domestic light beers) or whatever other type of hopping exists. Bitter is great and there is probably plenty more to discover, but people looking for extreme flavor are looking to be challenged with something other than bitter. And that’s where sour beers are starting to make their move. Not that creating sour beers is a new concept…as we will see a couple of paragraphs down, it is old as beer itself. It’s also not brand new to

craft brewers either. Tomme Arthur created a beer called Mo BettaBretta sometime around 2004 when he was at Pizza Port and I am sure that wasn’t the first of the American Wild Ales as they have come to be known. However this one sticks with me in particular because of a symposium I attended in 2005 at Papago Brewing Company in Scottsdale Arizona. The event was a brewers’ roundtable featuring Tomme, Sam Calagione of Dogfish Head, Adam Avery of Avery Brewing, Derek Osborne from BJ’s Brewery, Andy Ingram from Four Peaks and Jim Scussel from Oak Creek Brewing. Hello again craft beer lovers, I have been writing this weekly article now for the better part of two years and it’s not often that I toot my own horn, but today is that day. Back in late October of 2012, I was fortunate enough to be invited to brew with award winning brewer Lon Weatherson at College Street Brewing Co. in Lake Havasu City, Arizona. Many of you may remember that Lon & his second brewery Barley Brothers won a Gold Medal at the Great American Beer Festival two years ago with their Chocolate Stout.

TOOTIN’ MY OWN HORN IN HAVASU
I traveled to Havasu with my new brew partner Keith Koch and formulated a recipe along the way. The beer would be called Brother Dewey’s Date Night. Beginning with a standard American Amber recipe, we added about one hundred and eighty pounds of extra dark specialty grain along with sixty pounds of Arizona dates and another sixty pounds of dark Belgian candy sugar. Throw in a bit of coriander and fresh cracked nutmeg with a few secret ingredients as well and there you are. A strong, warm, spiced winter ale with a slightly sweet flavour and just enough noble hop character to balance. Coming in at 8.1% ABV. with a beautiful dark red hue, I promise this brew is going to warm all of your chilly parts! Brother Dewey is a man that has been at the center of Lake Havasu’s craft beer community for some time and it’s only fitting that we named the beer for him and the dates that make this brew special. and made the point that extreme beers didn’t need to be high ABV hop bombs. A simple 6% ABV beer could still be considered extreme because extreme is about flavor and nothing else. The beer was mouth puckering sour and it was refreshing and it was perfect. I had tried sour beers before, but after this one, I was hooked. As a side note, this beer was brewed collaboratively with Peter Bouckaert of New Belgium Brewing in Colorado. Peter had come to New Belgium by way of Rodenbach, perhaps one of the best producers of sour style beers. Anyway, let’s see if we can’t dig in to the history of sour beer just a little, figure out where the styles came from and then end on a high note. Not likely, but here we go. There are a variety of styles that get rolled up under the term “sour” and it may not be entirely fair to stick them all with the same label, but at some level the similarities in these styles outweigh the differences. There is so much going on with these beers that perhaps the descriptor sour may not even be appropriate. Jeff Sparrow, author of a book called Wild Brews, had originally titled it “Sour Beers.” But as he explored the Belgian brewing traditions that have contributed so much to the topic, he changed his mind. “I always say that this beer isn’t sour—it’s wild. I say that because, if all a beer was, was sour, who’s going to like it? There’s so much more going on.” What styles fall in to this category? There

To understand these beers it helps to understand a little about the “bugs” that make them. There are four basic types and hundreds of variations. Brettanomyces is wild yeast that produces flavors and aromas that are best described as funky. Other descriptors like horse blanket, bandaid and sweat don’t sound quite as appealing…but they are accurate. The other three most common bugs are lactobacillus, pediococcus and acetobacter. But wait you say, struggling to recall your high school biology, aren’t those last three some kind of bacteria? Of course they are and they provide absolutely wonderful flavors to these amazing beers. The first two produce lactic acid which is the same thing in sour milk, but in beer, lactic acid takes on more of a sweet and sour characteristic. The latter produces acetic acid which is responsible for the vinegar like flavors in some beers. These can all combine to produce esters, which is a complicated chemical compound. All you need to know is that they provide some incredible complexity in a beer. Lambics are produced in very few parts of Belgium and are typically done in a cobweb filled, dirty appearing brewery, sometimes with windows to throw open to the fields outside. The reason for all this is to capture the natural wild yeasts surrounding the area in an open fermentation process allowing them to bring the unique flavors of that particular region to the beer. Young and old lambics can be blended to produce gueuze and fruit can be added to produce a fruit lambic. In the case of fruit lambics, raspberry (Framboise) and cherry (Kriek) are the most common, but other fruits can be used. Beware of certain lambics that don’t have the funk you would

expect from this process. These “coca cola” lambics, as they are called typically add Acesulfame-K, a type of saccharine, to artificially sweeten the beer to make it more appealing to mass consumption. This is loosely based on an old Belgian tradition of serving the lambic with two sugar cubes, allowing the consumer to determine whether or not to sweeten the beer and exactly how much. The Flemish Sour Reds are wonderfully complex beers that rely on the accumulation of bugs in the wooden vessels they are stored in to produce both lactic and acetic notes to the beer. At renowned Rodenbach, brewmaster Rudi Ghequire defines the acidification of the beer as “a late Middle Ages conservation method” that prevented spoilage by pushing pH levels too low for dangerous bacteria to thrive, as older, more acidic beer was mixed with younger batches. Foeders, the giant oaken tuns where the beer matures, vary enough from one to another that several different foeders are tapped for the final blend.

Oud Bruin beers rely on the introduction of the bugs directly and are fermented in stainless steel to help control the final product a little better. These beers tend to be sweeter than their red counterparts with flavors of caramel, toffee and dark fruit. The final product is very malty with undertones of sherry. Berliner Weisses are different in that they are typically made from unboiledwort (unfermented beer) which is even more conducive to the lactic acid producing bugs. Berliner Weisses can be out of this world tart and have been compared to incredibly tart lemonade. These beers can be absolutely refreshing on a hot day. The Berlin brewers took notice of
some people’s aversion to too sour of a beer, but instead of sugar cubes as with the lambics, Berliner Weisses are frequently served with one of two syrups. A himbeer or raspberry syrup to provide a sweeter fruit counterpart to the sour beer, or a woodruff syrup which is an herb grown in Germany. The woodruff syrup is more woodsy, but takes advantage of the natural sweetness of woodruff. Finally, the Belgian Wit…Pierre Celis, who recently passed away in his late eighties, is credited with reviving this style at a number of breweries both in Belgium and the United States. But most people think of this beer as just a nice unfiltered wheat beer with a little orange peel and coriander.
In reality, according to legendary beer author, Randy Mosher…well let him tell you in his own words. “Pierre Celis was pretty generous with details about his beer, but I understand he had a locked room in the brewery in Texas where only he had the key, and he did some sort of lactic fermentation in there. It’s a minor detail, but it’s an important part of the overall flavor profile of those white beers to have a kind of a bright, palate-cleansing acidity that helps balance the creamy, milkshaky texture.” Well there you have it, a not so brief primer on sour beers. One final thought, we spoke earlier of hoppy beers and the bitterness that has

pushed the boundaries for the past ten years or so and the trend towards other flavors, like sour. Well the best example that I know of that blends these two concepts is a beer from New Belgium Brewing called Le Terroir. This is a traditionally brewed sour ale right up to the point where they dry hop it (adding hops during the fermentation process) giving it a flavor like no other beer you have had before. I think I might even have one lurking in my beer cellar… and I deserve something special for finishing this article. Until next time…
