6th Annual Arizona State Ladies Championship The prize pool for the Arizona Sate Ladies Championship is equally significant. The top 50 winners will share in $100,000, based on a sold out event. Poker’s new queen will walk with nearly $26,000, a championship bracelet and trophy. The second place winner will win $15,000 and the third will get more than $11,000. The tournament will begin at 10 am on Saturday, Sept. 10 and Sunday, Sept. 11 with 250 players each day. The remaining players will compete in the finals on Monday Sept. 12 for the championship. To enter the Ladies State Championship buy-in is $200 plus a $25 service fee. Each participant will $8500 in chips and for $10, they will have the opportunity to purchase an additional $2500 in staff appreciation ships. Talking Stick Resort’s poker room is one of

For only the second time since its inception, the Arizona State Poker Championship will have a prize pool of $1 million. Prize pool is based on 975 entries or more. Buy-in is $1,000 plus a $70 service fee. For that amount, players receive $15,000 starting tournament chips, as well as the opportunity to purchase an additional $5,000 in staff appreciation bonus chips for just $15. Play in the tournament begins at 9am August 12, 13 and 14 with 300 players each day. If a player is eliminated one of those days, they will have the one-time opportunity to re-buy for $1,070 on the following day or days. “I don’t know what happened but I couldn’t sleep one Sunday night and somehow somebody getting decapitated by a trunk popped into my mind,” says Walker, who serves as creative services manager for U-Haul’s contact center while making short films that can be viewed on YouTube under the username PHXPRO.

Walker is one of several filmmakers who is vying to receive a $5,000 cash prize and have their short included in “The ABC’s of Death,” a 26-chapter horror anthology. Twenty-five established directors and emerging new stars from all over the world are participating, each interpreting a different letter of the alphabet that represents a word to act as a springboard for a short story about death. The 26th director will be chosen as part of a worldwide competition to find a new filmmaking talent. Walker is hoping to make Phoenix proud by winning said competition with his entry “T is for Trunk” - a tale of a man’s wrath in response to his wife’s cheating. However, before you jump to conclusions, know that not everything is what it seems. “It would be really great for me to win because it would be a chance to have my work seen by people who love the horror genre,” adds Walker, noting that he looks up to and aspires to one day join the ranks of such filmmakers as Joel and Ethan Coen and Robert Rodriguez, who are involved in as many areas of the production process as possible. ‘The Devil’s Double’ A chilling vision of the House of Saddam Hussein comes to life through the eyes of the man who was forced to become the double of Hussein’s sadistic son. Starring Dominic Cooper. The horror Uday Hussein created is so realistically depicted on screen that it takes an emotional toll, but in a good way (if there is such a thing). ‘The Help’ A look at what happens when a southern town’s unspoken code of rules and behavior, is shattered by three courageous women (Emma Stone, Viola Davis and Octavia Spencer) who strike up an unlikely friendship. (PG-13 – 137 minutes) Joseph: “Awards season started earlier than usual this year with the release of ‘The Help.’ Granted, writer/director Tate Taylor’s film based on Kathryn Stockett’s novel is inherently flawed – especially thanks to some superfluous subplots that never quite pan out. However, everything else about ‘The Help’ – from its first-rate cast right down to its authentic set design – makes for a movie that is kind, smart and important.” Grade: B Randy: “You’ll laugh, you’ll cry, you’ll cheer. ‘The Help’ successfully manages to make you do all of these things while reminding us of a time in recent history many of us have forgotten, or never knew. Hysterically funny and equally as poignant, the cast makes the film. Performances by Octavia Spencer and Jessica Chastain are a highlight. Dominic Cooper in “The Devil’s Double” By Randy Montgomery

The star of “The Devil’s Double” is no stranger to the acting world. Dominic Cooper has appeared in numerous television shows, miniseries and feature films. You may remember him from “Mamma Mia!” (2008) or “An Education” (2009). Currently, Cooper plays Howard Stark in “Captain America: First Avenger.” What could easily be his toughest project, the courageous actor takes on two roles in “The Devil’s Double,” playing not only Saddam Hussein’s son Uday, but Latif Yahia, Uday’s “fiday,” or “body double.” Known around the globe as a madman, Uday was feared most by citizens of his own country. His reign of terror on the public led to unspeakable acts amongst the most innocent of victims, including teenage girls and acquaintances. Having it all, the one thing Uday longed for was a body double; one who could stand in for him at places he needed to be and in dangerous situations. He forcibly recruited childhood friend Latif, altered him physically and forced him to become “Uday.” “He (Saddam) gave him too much power. He (Uday) was too spoiled. He failed as a father,” remarks Cooper. Tackling two characters that look alike, with such different personalities and mannerisms in the same film could pose a challenge. “The priority was to make sure that the audience knew exactly what character they were watching,” says Cooper. “With Director Lee Tamahori… we discussed how we could make them as clearly different as we could; physically, vocally, with structure of sentences, the use of words…”

humiliating for a man from that culture for that to happen. You could start to understand the anger, the resentment. Then you look at the extreme scenes of torture which his father exposed him to as a young man.” Reflecting back on filming, Cooper goes on to say, “I hated every minute of it… looking through the eyes of this monster. But, it was extraordinarily liberating as an actor to be as limitless and fearless as Uday was.” Filming was no easy task. “Uday was the driving force… he would create the geography of the scene.” Filming of the Uday character was done first. After that filming completed, “I would rush out, get into a different costume, rush back to the set to do the same shot with a motion control camera that would replicate the scene exactly with computers,” explains Cooper. “Then I would have to guess, or remember where I was with Uday.” Gritty and realistic in its depiction of Uday’s actions, the film presents “…an excellent peak into the inner psychology of a gangster regime that ran a country. Lee was relentless in reminding the audience on how these people were… vicious, malicious gangsters.” Were the scenes as intense to film as they are to watch? “They were as intense,” says Cooper. “As an actor, you can’t halfheartedly do it. You have to immerse yourself. He was vicious. I had to somehow get into that mindset and let go.” The actor was able to watch the finished project while sitting next to Latif at a screening in Berlin. The experience, according to Cooper was “Incredible. You could tell he was reliving some of those nightmarish experiences. It was moving to see his reaction and to gauge the audience’s reaction.” “The Devils Double” will remind or inform audiences of how “people were affected by this hideous man.”

Octavia Spencer Talks About “The Help” By Randy Montgomery

“The Help” is based on the novel of the same name by Kathryn Stockett and is set in Jackson, Mississippi during the 1960’s. The story follows Skeeter (Emma Stone), a recent college grad as she interviews housekeepers about the racism they endure from their white bosses. After a series of devastating events, some of the maids begin to open up; actions which cross-racial lines and brake local taboos. The first to do so is Aibileen Clark (Viola Davis), followed by her close friend Minny Jackson (Octavia Spencer). A highlight of the “The Help” is the standout performance by Octavia Spencer. Starring alongside such great actresses as Sissy Spaeck and Cicely Tyson, Spencer manages to capture the audience and becomes a character to laugh with, cry for and cheer on. Spencer’s credits include a recurring role on “Ugly Betty” and the hilarious sequence in “Dinner for Schmucks.” This role is her shining moment. “How often do we get these opportunities? A lot of the roles I have done have been small parts in big movies or big parts in small movies. Now I get a big part in a studio movie. I feel very grateful.” says Spencer. The humble actress is thankful for the praise she receives, but is quick to point out the work of others on the film. “It’s so easy to talk about ourselves as actors, but the filmmaking process is one that is very involved and I feel that every department was represented beautifully in this movie; costumes, makeup, hair and set direction. I’m a pretty excited for everyone; the cast and crew.”

Born in the 1970’s in Alabama, Spencer is familiar with the South, but not the South that is portrayed in the film. “I realize how fortunate my generation and subsequent generations are. Hopefully audiences will see that as well; just how different it was for their mothers and grandmothers.” The racism that existed will be a “…blemish that the South will always endure. But that is the beauty of this project… it shows the humanity. We have always seen the brutality, but we have never seen this humanity. I think it is a testament of where we are today.” “The Help” should appeal to a wide audience. As Spencer suggests, “First and foremost, I think women should go see this film. I think men should go see this film. It’s not a chick-flick. It is a movie with social relevance. The message is one that transcends age, race and gender. It’s really about empowerment and finding your voice and having the courage to stand on principle.” Could there be recognition from the Academy this award season for the cast and crew? “Right now we want to show the world this great film and if that happens, we would all be excited. Right now everyone is happy to live in the moment.” What should one take away from a viewing of “The Help?” Spencer sums it up nicely, “Those of us that are enlightened look back at our actions and learn from them, and those of us that aren’t continue the pattern.”

“We are very proud of Tate Taylor, the writer/director. We are very proud of Brunson Green, the producer, Allison Janney who is already a huge star. These are people I know and love. I am very proud of Viola Davis and Jessica Chastain. Emma, Bryce (Dallas-Howard)… it is the most amazing group of people. Just to be a part of this, has with it is a sense of pride.”

Having known Spencer, Stockett based many of Minny’s physical attributes on her. “Those attributes are the things Early screenings have already garnered that are inherently me. The other ninety much praise. Ask any adult about his Little League experience, and he’ll talk about the life lessons he took away from the diamond as much as the runs, hits and errors he committed on it. Teamwork, maintaining composure, handling success, adversity and pressure – these are lessons learned early that have served generations of Little Leaguers later in life. And those themes will again be on display for 11 days beginning Thursday, Aug. 18, when ESPN, ESPN2 and ABC air the Little League World Series. Over the years, probably the most enduring images from these games are of young players falling into tears after striking out or giving up a home run in a crucial situation. Commentators will talk about the very adult pressures these 4.5” preteens are under, but Karl Ravech, who will do play-by-play this week and next, doesn’t necessarily agree. “I think it’s the parents who feel an exorbitant amount of pressure that the kids may not necessarily feel,” Ravech says.

They’re not broke anymore. But that doesn’t mean life has gotten easier for Todd and Laura Bruce, the once-wealthy Arizona couple whose inspiring battle against the effects of the economic downturn on their blended family of nine is the subject of the WE: Women’s Entertainment reality series “Downsized,” which returns for a second season Tuesday, Aug. 16. “In season one, when you have nothing, and you come together and become creative and make that a positive experience – in some ways it’s easier than in season two, when we have decisions to make because we have a little bit of leverage,” Laura explains. “Not very much – but that’s where some of the conflicts happen.”

THE DELICIOUS “DOUBLE BASS” FROM BELLS By “King” James Swann

On Guard! Biere de Garde that is… today I’d like to tell you about a fantastic little brew from Bells Brewing called Le Contrebassiste. This is the last of Bell’s three part series based on the French Farmhouse or Biere de Garde style. As usual, let’s chat for a moment about the brewery. Bell’s began life in Kalamazoo Michigan in 1985 as a two man operation, a two man quest for artistically creative unfiltered craft beer. As you might guess, they met with some success and in 1993 became the first Michigan brewery to serve beer by the glass to the public. Who’s Thirsty? They now operate in 18 states and distribute more than 20 beers across that realm. Not bad for a couple of lonely Michigan (almost Canadian) boys eh? Now on to the beer in question…Le Contrebassiste, meaning “The Double Bass” in the French language blends deep roasted and lightly smoked malts and is fermented with a special French Ale Yeast which lends it distinctive, almost Belgian aromatic notes and flavors. One aspect that caught me by surprise was the colour. Farm House or Biere de Gardestyles are mostly characterized by pale to deep golden hues, so this beer’s deep brown tint is a tad unusual. Aromas include faint hints of summer fruit and caramel. Peach and fig tickle your senses then carry through on the pallet with an ever so slight hint of pecan & bread. Oddly enough, the earthy flavors I would expect to encounter in a Farm House ale of this colour are nowhere to be found. I like it. At 7% ABV, the beer is just a bit strong for the style but right on target for the flavour profile.

Perfect pairings for such a brew would include soft double crème brie with a fig spread or salty dark olives and sausage served together with roasted red peppers. The High-End Beer Division of Crescent Crown” and the nose of the beer to be enjoyed fully. Of course, you can drink a beer out of any glass, but it wouldn’t have the same aesthetics. Clean glasses are a big factor in the beer world. “Beer Clean” is a term that is used to make sure glasses are not only clean, but beer clean - meaning it won’t change the taste or head of the beer. Soap is a no-no when cleaning beer glasses. It leaves a film on the glass that you cannot see, but you may taste and you can observe the results in the lack of head you would otherwise get. There are commercial products for cleaning glasses to get them beer clean or you can use baking soda. Air-dry the glasses. If you see water spots after it is dry, clean them again. Do not freeze the glasses. This adds water to your brew and the cold glass can change the temperature of your brew.

individual palate. Anyone can drink a beer, but to be able to really taste it and distinguish it from others, takes practice and skill. Glassware Like wine, beer can be enhanced or degraded by the type of glassware used. The shape of the vessel allows the carbonation to escape

Chalice These are typically for Belgian abbey and Trappist style beer. They can have a look of royalty about them. Sometimes they are more “V” shaped with either straight or an inward curving top, sometimes rimmed with a precious metal. The stem is thick and the length is usually rather short. Flute Typically seen with champagne, beer flutes have shorter stems than champagne flutes. The mouth has a smaller diameter than the mid-

section to hold in carbonation. Goblet Goblets can resemble a fishbowl. Typically they have a round bowl and come in various sizes. They are somewhat like a brandy or cognac snifter. Use these for high alcohol sipping beers. Kolsch Looks like a cylinder. The kolsch glass has straight sides and is tall. These glasses typically hold 10- 12 oz. Mug, krug, seidel The only beer glass with a handle. Typically very heavy and sturdy. They can have different textures and come in different sizes. Pilsner glass These also are tall, somewhat thin walled, sloped glasses with a solid base. Their capacity is usually 12 oz. Pokal Apokal is a European pilsner glass with a stem. It can look similar to a tulip without the flare at the top or similar to a chalice with a smaller less angular bowl.Holds 12 oz. Pub glass or Pint glass

Probably the most common beer glass. Straight, thick sides at a slight angle making the mouth of the glass larger than the base, typically holds 16 oz. You may also come across an Imperial Pint glass. These hold 20 oz. have somewhat thinner sides and a bulge about 3/4 of the way up the glass. These also come in 10 oz. half pint sizes.

back up. There is a swirling technique that can be used for wheat beers or other beers when having the sediment in the glass is desired. To do this pour 2/3 or so into the glass. Then with the remaining 1/3 in the bottle, hold the bottle upright and gently swirl the bottle in small circles for a few seconds. Pour the remaining beer into the glass. This can also be done to increase the head volume.

Stick or stange This is a taller, thinner version of the pilsner glass, very similar to the Kolsch glass. Holds 12 oz.

Note: If the beer is too cold the head will not form properly. If it is too warm you will get too much foam and the beer will go flat quickly. Depending on the beer, anywhere from 38 to 55 degrees may be appropriate.

Tulip glass The tulip glass looks somewhat like a tulip, hence the name. It can have a stemmed base and roundish bowl, which thins out about 1/2 way up the glass then flares out slightly. It can also be similar in style to a pint glass, but has the tulip flare. Holds 16 oz.

Tasting and evaluating

Wheat beer glass These are tall, somewhat thin walled, sloped glasses with a solid base. They are typically 1/2 liter in capacity. They resemble a pilsner glass, only taller and usually wider at the bottom. Willibecher or becher Similar to a pub glass, but thinner walls and they stop angling out about 2/3 of the way up the glass and become straight at this point. Yard As the name suggests - it is about 3 feet long. They are awkward and can be quite fragile. They hold almost 3 pints. They also come in half yards.

To really get into it, there is a chart or tasting wheel put together by Morten Meilgaard in the 1970’s. The beer flavor wheel has 14 categories broken down into 44 flavors. Beer has been found to have over 1000 identifiable flavors. An experienced taster can pick out maybe 100. I recommend doing some research in taste science or flavor chemistry to learn how the different flavors are perceived. There are a number of good publications available to help get you going down the right path. All that said, sometimes, its best to just enjoy a beer without deconstructing it. By all means go ahead and have fun. But the steps above will help you enjoy beer a little more when you do want to delve in to exactly what makes beer wonderful, and help you determine what you like best in a beer.

Tasting beer is not only done with your tongue. A proper tasting or evaluation involves sight, taste, sound, smell and touch. In order to properly taste beer, first of all you need a suitable environment. A loud bar is not necessarily the ideal place for this. You should be in a quiet, relaxed, odor free atmosphere with good light. You should have white walls, tablecloth, or placemat available to properly judge color. You should also have your tasting journal, writing utensil, “beer clean” glasses and bottle opening devices. If you are doing a session with multiple beers, you should also have a palate cleanser such as water and bread or salt-less crackers. It is a good idea to get a notebook or a journal of some type and keep notes on the beers you taste. This can be a good way to compare beer or evaluate how your palate is improving or deteriorating. For home brewers it is good way to check your brewing progress, see how well your beer ages, and get ideas for future recipes.

Now that you have everything set up, have a seat and get ready. Open the beer and pour it into the glass. Observe the head, the consistency, the color, the clarity, the aroma. Hold the beer up to the white background (not direct light) and observe. Make your notes in the journal.

Pouring Pouring is the next step in enhancing the flavor of your beer. The proper pour releases the aromatics just right and sets up the taste of the beer. 1. Get a “beer clean” glass of your choice. See the glass guide for the proper glass. 2. Open the bottle. 3. Tilt the glass about 45 degrees and pour the beer in the glass first making contact along the side starting about 1/2 way from the bottom. 4. As the bottle gets half way empty, turn the glass upright and continue pouring into the center of the glass. 5. You can increase the amount of head by putting more distance between the glass and the bottle or decrease it by pouring more beer in the glass before you tilt it

Swirl the beer in the glass. Smell the beer several times. If the beer is too cold you may need to warm it by holding the glass in your hands for a bit. You may also cover the mouth of the glass with your hand for a few seconds then as you remove your hand, smell the beer. Make notes about what you smelled. Pay attention to the hops, malt, fruit, yeast, off aromas and so on. Finally, taste the beer. Take a sip and allow the beer to come in contact with all parts of your mouth. Gently swish it around or “chew” it to help distribute it better. Now, swallow the beer and exhale through your nose. Make notes as to what you have tasted. Pay attention to mouthfeel, initial taste, mid taste, aftertaste, body, and flavors. You can repeat the smelling and tasting parts to catch anything you may have missed. As the beer warms up you can make further notes, as the flavor and aroma may change slightly. It is a good idea to know your palate. If you have been ill, burnt you mouth on spicy or super hot food, smoke, have palate fatigue from tasting other items, are exposed to chemicals or otherwise have impaired your sense of smell or taste, keep this in mind when evaluating. It is best to wait until your palate has recovered before doing any serious tasting. It takes about 10 days or so to recover from a burnt palate.

Last month I attended this event at the San Carlos hotel and was blown away by the local talent and the passion reflected in their works. A diverse crowd attended, but the entire event had an intimate feel to it. The artists were down to earth and were ready to discuss the themes conveyed in their pieces to any onlooker, giving insight to their own unique view of life and the world. Talking with that many artists was an interesting experience for me. I’m sure the alcohol helped lubricate my opinions on their art but nevertheless, it was fun gaining insight from passionate people.

“Simplicity can be tasty” Big Eye is the kind of “hole in the wall” sushi place that not many know about, but it is perfect to grab a bite. There are few tables and a sushi bar, but I find it quite charming. I went the other day for their happy hour from 430 -630 MonFriday. Edamame for an appetizer, a california roll, and a tootsie roll for my main course all came out to $12! LeSean McCoy got his nickname “Shady” from his mother as an infant for his tendency to be smiling one minute, quiet and shy the next. But there has been nothing shy, quiet or shady about the running back’s play since he entered the league in 2009. And that has the Philadelphia Eagles smiling. A shifty runner with good vision and big-play ability, McCoy led the NFC East champs in both rushing yards (1,080) and receptions (78) in 2010, the only back in the NFL to do so. His 5.2 yards per carry was second in the league to the Kansas City Chiefs’ Jamaal Charles and was the highest mark in team history among players with at least 200 carries. He’s also reliable, as his 120 touches per fumble over his career indicate. A second-round pick in ’09 out of Pittsburgh following his sophomore year, McCoy made an immediate impact in Philly in Week 3, when veteran Brian Westbrook went down with an ankle injury, rushing for 84 yards in a win over Kansas City.

A field that includes Luke Donald, Lee Westwood, Phil Mickelson and Graeme McDowell will vie for the title won last year by Martin Kaymer. The 26-year-old German won the 2010 tourney in a playoff against Bubba Watson, but the big story was Dustin Johnson grounding his club in a bunker, which cost him a two-stroke penalty and a spot in the playoff.
