ARTS! Michael Flatley’s Lord of the Dance Taps Its Way Into Mesa Arts Center

Jan. 26-27 and the Phoenix Orpheum Jan. 28-29

Lord of the Dance (www. lordofthedance.com) has announced its next lineup of tour dates including Mesa Arts Center on January 26-27 and Phoenix Orpheum on January 28-29. Doherty and McHugh beat out more than 6000 dancers representing five continents over the eightday competition. In 2009, the championships took place in Philadelphia, PA, the first time the competitions were hosted

outside of Ireland and Scotland in its 39-year history. Flatley, who was in attendance, received an award acknowledging his special achievements in Irish Dance such as producing and choreographing multiple Irish dance shows including Lord of the Dance. “We are so happy for Scott and Michael. Their dedication to Irish dance and exceptional abilities are just some of the reasons they are part of the Lord of the Dance team”, says Flatley. He adds, “I was just ecstatic to see them both crowned as world champions and we are very fortunate to have them as part of our cast. Doherty and McHugh are in a cast made up of Irish dance phenoms from around the globe. Each one is a superstar.” Flatley, Lord of the Dances creator and artistic director, was the first guest judge to appear on ABC’s hit reality television program Dancing With The Stars. In November 2007, he and cast members from Lord of the Dance performed on the show.

The thrilled studio audience clapped throughout and gave a standing ovation as Flatley and his hypnotizing dancers completed the routine. “That kind of reaction speaks directly to the quality of dancers who I have had the privilege to bring to the stage”, Flatley says. “They give of themselves in a way that is unique alone to Irish dancing, stretching a form of dance that has evolved over more than 2,000 years. The dancers average age is 22, and each one has achieved individual recognition

as a national or worldwide dance champion.” Lord of the Dance, produced by Magic Arts & Entertainment, a subsidiary of Tix Corporation (Nasdaq: TIXC), and touring the country regularly since 1996, will perform six shows between the two venues on January 26-29. Nick@ Night By Nick Connell MY FAIR LADY at the Arizona Broadway Theatre in Peoria. Back in 1956, before many of us were born, there was a stunning hit musical called My Fair Lady, starring Rex Harrison and Julie Andrews that captured the hearts of Broadway. That same hit musical can now be seen at Arizona Broadway Theatre in Peoria. Although lacking star power or a hungry audience, this ABT production is quite fair indeed. Led by the perfect Jeannie Schubitz (as Eliza Doolittle), and her antagonist teacher Philip Peterson (playing the stuffy Henry Higgins), this ying yang yolk of English posturing and musical theatre is well done. Eliza and Henry set out to woo us into their “Lovely” story and woo us they did! With the hit songs “Why Can’t the English”, “Just You Wait”, “The Rain in Spain” and “I Could Have Danced All Night”, this musical showcase was splendid! Leave it to Roy Hunt to make a grand entrance as Eliza’s dad Alfred, and make fun of the English singing “With A Little Bit of Luck” and “Get Me to the Church on Time”. Roy was the humor these English so badly needed and kept the fun moving all night. Throw in a quite nice Colonel Pickering (MJJ Cashman), and the lovely Mrs. Higgins, (Jacqueline Gaston), with a beautiful ensemble, sets and costumes - and you have a most enjoyable production! Only this audienceparticipation comedy musical murder mystery is a true “cloak and dagger” affair. Set in Pharaoh’s Casino in Las Vegas, this whodunit mystery revolves around a land deal, past due payments, competing casinos, a mobster, a new female governor, a rich heiress, Johnny B. Goode, and of course Miss Diva Divine. All are part of an organic and original show every night to catch the dirty rat who murders for power, greed or lust. But there’s law’s to uphold here, which is where Officer Captain Mark Morgan arrives to solve the mystery. Gather your pens and notepads and you too can be a gumshoe while following a group of edgy characters bent on doing something wrong. This is pure fun and laughter with Andi Watson, Jeffry Skiba, Jillyn Jacobs, Sandra Umber, George Spelvin, Sarah Ghotir, Barbara Ellis Como, M.Shannon, Andy Jacobs, Michael Snyder, and that mystery man Mr. Jackson - playing all the parts to the hilt! There was a party atmosphere this past weekend at the MIM as VISHTEN rode a wave of Acadian spiritual roots into a two hour concert. This talented group of musicians led by the twin sisters Pastelle and Emmanuelle LeBlanc threw a “kitchen party” as they say in eastern Canada, with an exciting and energetic hand clapping mix of Acadian, Irish, and Scottish roots. They were joined by the hot fiddle and guitar of Pascal Miousse who helped the audience to their feet for two encores! Kudos to Vishten for sharing their step dancing, hand clapping, and original music. This was a genuine celebratory evening of music for everyone. www.Vishten.net A CHORUS LINE The Theater League at The Orpheum Theatre, Phoenix. If you were lucky enough to catch the touring production of A CHORUS LINE at the Orpheum Theatre last week, you were treated to a top notch show with a new cast of actors and actresses waiting to show you “What I Did For Love”. Kudos to the Theater League for continuing to bring these great shows to the valley. The production was well received and brought this hit show back to life in a fresh and entertaining show! Intriguing plot, huh… what makes it even more intriguing is that the story is non-fiction. Kevin Spacey plays the infamous Jack Abramoff whose life unfolds on screen. Spacey can do no wrong as an actor and he turns in a stellar performance is this otherwise low-budget feeling piece that has been released shortly after, yet no related to the documentary of the same name. Something tells me the documentary was a bit more entertaining”. There is just one other key ingredient remaining…water. Water, it sounds fairly simple, but variations in water from location to location can

have a major impact on the drinking experience. We have talked about applying the concept of terroir to beer before, but water is the one ingredient where terroir can be absolutely critical. Nothing is a more fundamental and obvious beer ingredient than water. At up to 97% and always over 90%, water simply is the largest percentage ingredient of any beer. It accounts for much of the flavor and perceptions of any beer when it is finished. Entire styles are accountable to the profile of water, from the hardest water from Burton-On-Trent which is perfect for hoppy pale ales to the roundness and malty character of Bohemian Pilsner which comes from relatively fresh snow melt in Pilzen. It is a safe bet that the water source for a brewery can make or break any effort at quality. A now defunct major brewer named Olympia used to claim, “It’s the Water....” For years Coors

has told us how important the Rocky Mountain Water is to their original Banquet beer. So why is it so important and yet so casually thought of by most consumers, and even some brewers? The answer is simple; it is easily available and just seems to do its job of making barley and hops turn into beer. There are several things brewers must consider about their water source when brewing a beer. First, water must be clean from biological, physical and chemical contamination in order to be suitable for brewing. Second the mineral content is going to have an effect on pH, enzyme activity, hop perception and clarity of finished beer. Direct well, river or lake sources can have wild variation in suitability for brewing. At any time of year, the mineral content of both brewing friendly and beer shattering compounds will fluctuate. Sulfur and iron are the two most common minerals to

find, which will ruin beer if present in large enough quantities. While most municipal sources are free of biological and physical contamination, the chemical purity can be more suspect. Most municipal sources are treated chemically with either chlorine or chloramines to maintain biological cleanliness. It is a necessary tradeoff to have a safe to drink supply, but brewers still must address it. Chlorine can be eliminated in simple ways, such as simply letting it gas out of the water over time (usually overnight) or by pre-boiling the water. Chloramines are not as easily degraded. Chloramines will breakdown with the use of campden tablets, which will break the chloramines into calcium, water and bicarbonate. Failure to deal with chlorine or chloramines can result in yeast metabolizing these into harsh medicinal notes called chlorophenols. The initial solution seems simple, just used distilled water. Distilled water however is not suitable for brewing because it lacks any supporting minerals and therefore inhibits enzymes and yeast. Some understanding of water minerals helps in understanding beer production and flavor. Calcium is a necessary yeast nutrient and is abundant in most waters. Brewers add calcium in the form or gypsum and calcium carbonate. While we cannot directly measure the level of these in water, we can find their individual parts in the form of ions. It is these ions that react with the other ingredients to form flavor, chemical

Watch for high levels of iron, which can give a coin-like or metallic flavor or high levels of zinc, which is a haze inducer and can be toxic to yeast. Brewers carefully analyze their local water to determine how to treat it in order to maximize the positive impact on their product. As touched on earlier, it is not uncommon to use a filtering system to achieve specific water results. These filters are produced for two purposes, to filter out any undesirable impurities in the local water, and to add in desirable elements to create the exact water profile the brewer wishes for. In some instances, different beers produced by the same brewery will require different profiles for the water, so different minerals will be added back in to produce the desired effect. Minerals in beer are numerous and many are flavor or stability neutral. When we look at our water supply, we tend to concern ourselves with salts, calcium, carbonate, sulfate and certain trace minerals, such as zinc. Some of these trace minerals can be a very critical factor in the beer. While they typically serve as nutrients for the yeast, in high amounts, many minerals can have a detrimental effect on beer such as actually inhibiting yeast or producing metallic flavors or haziness. Most water supplies have some mineral content and do not need to be treated in order to make beer. Unless, the brewer is going for a particular characteristic, in which case changes might be made.

around the world will find that softer waters tend to favor the production of lagers and darker ales while harder waters favor the production of paler ale styles with more hop presence.

dry maltiness so prized in the Dortmunder style for its balance. Lingering hop bitterness, despite very low IBU’s can be directly attributed to the mineral content of the water.

Here are just a few of the major brewing centers:

Vienna: While Vienna lager is prized for its malty character, it is also supposed to have a relatively dry finish with a balance of hops. This city also has very hard water similar to Dortmund. As it turns out, nearly the same water profile is available in Mexico, especially Mexico City, which is why many of the Mexican brewers continue choose to make incredibly good versions of this style.

Burton-on Trent: This is perhaps the most well known of water profiles for brewing beer. For centuries, Burton has been associated with the brewing industry. This is due to the quality of the local water, which contains a high proportion of dissolved salts, predominantly caused by the gypsum in the surrounding hills. This allowed a greater proportion of hops, a natural preservative, to be included in the beer, thereby allowing the beer to be shipped further afield. It’s no surprise that at least five breweries, including two fairly major ones, choose to produce their beer using this town’s water. Pilzen: With an average of just 7 mg/l of calcium, this is the softest water on earth. The Bohemian Pilsner style tastes very malty, in spite of the higher hopping rates than its sister, German Pilsner. Widely copied, this style is the gold standard and originator of the whole pilsner family. Dortmund: The style of Dortmunder is widely misunderstood by brewers and judges alike. With calcium levels second only to Burton-on-Trent this water accents hops and presents a

With calcium levels at about 52 mg/l it has a profile that lowers the acidity of dark malts, leaving porter very round and drinkable. When geographic differences are lined up, the major factor in brewing styles is water. While this may seem like it wraps up our series on beer ingredients, it only covers the four major ones. As we will see in future issues, “Adjunct” is not necessarily a bad word when it comes to beer. The Party is Back Arizona’s largest golf tournament and party return to the TPC Scottsdale January 31 through February 6. Yes, the Greatest Show on Grass, a.k.a. the Waste Management Phoenix Open is just weeks away. Known worldwide for its huge galleries and locally as the social event of the year, the Waste Management Phoenix Open is truly a special “golf tournament.” 2010 Tournament Champion Hunter Mahan will return to defend his exciting one-stroke victory over rising PGA TOUR star and 2010 Rookie of the Year, Rickie Fowler. Mahan, 28, is coming off one his best seasons as a professional with two victories (WM Phoenix Open and the World Golf Championships Bridgestone Invitational), three top 10s and eight top 25 finishes. At the 2011 Waste Management Phoenix Open, look for Mahan and Fowler to be joined by other top PGA TOUR stars, such as Phil Mickelson, Kenny Perry, Camilo Villegas and many others. While the actual Waste Management Phoenix Open golf tournament will be played Thursday – Sunday (February 3-6), there will still be plenty of things to see and do at the TPC Scottsdale all week long.

Hoyt Jr. Family Foundation Dream Day on Monday, the CBS Outdoor Special Olympics Open on Tuesday, the ever-popular FBR/ Xerox Silver Pro-Am on Wednesday. Also Wednesday, at 3:30 p.m., the TriWest Healthcare Alliance Shot at Glory will take place on the 16th hole and will feature national and local celebrities, sponsors and two lucky fans in one of the coolest closest-to-the-pin contests in the game of golf. On Saturday, February 5th, the tournament is inviting everyone to participate in the first ever GREEN OUT. You too can participate simply by wearing green (shirts, hats, pants, etc.) to the tournament. The Green Out will illustrate to the world the green/eco-sensitive efforts of the tournament.

And to add to the mix, they have twin cousins born 13 days and 30 minutes apart, a family of miracles to say the least. Both brothers are loving, passionate fathers as Derek has 3 beautiful little girls in Kaidence Leigh(5) Tatiana Renee(7) and Taylyn Odessa(20 Mo) as well as Mike’s little gem in daughter Nevaeh Marie (21 Mo). The unique dynamics within their family have molded the two brothers into extremely caring, creative and nurturing individuals. In the skate park however, the two are hell on wheels. They’re fast, durable, innovative and relentless in their undying quest to land the next near impossible trick. Two decades of skating, dueling it out, brother against brother has made them extremely good at what they do, to say the least. At age 27, the twins have a unique and inseparable bond that can quite often drive their girlfriends nuts. And now, after many years of training together and going head to head in heated rivalry, the twin pair have decided to showcase another set of skills, utilizing their life experience, interpersonal skills and business sense to achieve a higher goal in a class all its own. In doing so, the two are reaching out to the community, extremely excited to introduce a commendable and worldclass service to benefit us all here in the valley of the sun. And the motivation is simple. On February 8th 2006 at 3:30am Derek was found trapped in his car bleeding and intoxicated until he was officially saved by officers. After receiving 40+ staples in his legs which were shattered alongside a broken jaw, he was extremely lucky to say the least to have survived such a horrific accident. Derek today still suffers from extreme back pain as well as the painful memories that nearly robbed him of a life with his beautiful children, family and friends. He is now paying it forward and using what he knows to share a lesson learned with every last one of his peers. The Veronicas Singer Stranded The Veronicas’ Jessica Origliasso is caught up in the current Australian floods. The singer, who fronts the band with her twin sister Lisa who is currently out of the country, explained she is with her parents in Brisbane, which has seen some 30,000 homes flooded leaving at least 14 dead and many stranded in their homes without access to electricity. Jessica recently stated: “We headed out yesterday and stocked up as much as we could. We were actually told that our area wasn’t going to lose power so we prepared a little, but it suddenly went out, and we’re not sure if it will get turned back on. It probably won’t for a fair few days.” The flood waters are now receding, but leaving large amounts of mud, and a huge clean-up operation for Australia’s third largest city, and Jessica is worried she and her sister’s instruments and gear could be lost to the flood waters. She added: “We have a warehouse with a lot of musical equipment that’s going to go under. It’s a bit unfortunate we weren’t able to move it in time. Possessions however can be replaced - it’s people that can’t. We have to do everything we can to keep everyone safe - it’s just really hard times at the moment.”

The ‘Hot In Herre’ hitmaker has never matched the success of his first two albums, 2000’s ‘Country Grammer’ and ‘Nellyville’ in 2002 but insists he will never give up because he knows he can regain his popularity one day. He said: “Look at Mariah Carey. She took a little break. People look at it like it’s over. They have to throw dirt on her. Then all of a sudden, she’s the biggest thing to hit the stage again. Even bigger. You see what I’m saying, and I think that happens. So when you look at it like that, you’ve got to apply yourself.” The 36-year-old star even wants to use the negative comments of his
