It’s the Party of the Centennial at this year’s State Fair! Pre-Centennial celebrations include amazing spectacles, acrobatic comedy, and aerial show Get your party hats ready! The Arizona State Fair is starting the state’s centennial birthday party early. It’s the only party in town where you can take a gripping ride, watch thrilling spectacles and win a huge stuffed animal all while eating almost anything on a stick. Fairgoers will be treated to Arizonathemed events, including Passport to Culture and Celebrate the Arizona Experience. As part of Arizona’s Fair-time Birthday Bash, these events will take place in the Arizona Lottery Backyard on Saturday, Oct. 22 and Sunday, Oct. 23. The 2-day celebration of 100 years of Arizona’s heritage and history will include festivities such as An Afternoon with the Wallace & Ladmo Show on the 22nd where the first 1,000 people get Ladmo Bags! The weekend also features VIP appearances, historical and educational exhibits, and exciting entertainment. During the same weekend, fairgoers of legal age can also sample some of the finest Arizona wines, try their “feet” at a grape stomp, and watch the blind taste competition at the 2011 Arizona State Fair Wine Competition and Tasting. This is one party that no one will want to miss! In addition, The Band Perry (Oct. 19), Snoop Dogg (Oct. 20), Bret Michaels (Oct. 28), Los Temerarios (Oct. 29), and Big Time Rush are five of the entertainers taking the stage at the Coliseum – which will be green powered by APS. The City of Phoenix purchased 125,000 kilowatt-hours of clean, renewable energy, enough to power the Coliseum through the length of the Fair (Oct. 14 – Nov. 6). This year’s list of new attractions includes: OUR BODY: The Universe Within exhibit, presented by Maryvale Hospital and Phoenix Baptist

Hospital, educationally and artfully displays approximately 200 organs, human bodies and other anatomical specimens that reveal an enlightening understanding of the human body. Visitors can explore the wonders of the human body and ultimately learn how to take better care of their health and make positive lifestyle choices. Open daily, admission is just $5 and children 5 and under are FREE when accompanied by a paid adult. A separate Fair admission is required. The exhibit does contain actual human bodies, and is recommended for children age 12 and older and parental discretion is advised.

Valentine’s Performing Pigs showcases Nellie, “The World’s Smartest Pig”, and her friends performing amazing and athletic feats three times daily at the Fair. The swiners will dance, jump in the air, play catch with the audience, run up teeter totters, slam dunk basketballs, pop balloons, roll barrels and madly roar across the stage on scooters and skateboards! head-spinning acrobatics and all out break-dancing performed up close and at eye level. Procrastinators – These outrageous drummers turn five-gallon water bottles, barstools and pots & pans into legitimate musical instruments while jumping, sliding, twisting and stomping their way through fast and furious rhythmic fun. Thrill The World - Thriller Dance – Fairgoers can watch as zombies attempt a world record for the Largest Simultaneous Worldwide Dance to Michael Jackson’s “Thriller” on Saturday. Oct. 29 at 7:00pm on the North Box Office Plaza. Brought to you by the Phoenix Valley Thrill The World group and HOT 97.5! New Caribbean Village presented by Landshark Lager – Located in the green Wesley Bolin Building, this relaxing locale features Reggae and Calypso music, and offers food and exotic cocktails at the cowboy beach bar. Butterfly Adventure – Fairgoers can surround themselves with hundreds of colorful free-flying butterflies that create a magical experience for children and adults of all ages. This exhibit will be open daily during the fair, and a professional butterfly wrangler will be on hand to educate visitors about the butterflies. The Big Aerial Show features juggling, hand balancing, and trapeze, with a jaw dropping performance atop an 80 foot high sway pole. Slack-wire Sam’s one man acrobatic comedy show is family friendly entertainment at its best. Unicycling, juggling, and hand balancing are all done on a slack-wire while providing clever commentary that entertains audiences of all ages.

Sherlock Holmes Triumphs Again! By Professor Moriarty

As the primary nemesis to Mr. Sherlock Holmes, and arch villain of unequivocal merit, it pains me to set to ink, anything that gives my rival more fame. But alas, one must give proper credence to this landmark theatrical triumph, if for no other reason than to remind the reader of an adversary no less brilliant but for the time being, who avoids the spotlight of The Arizona Theatre Company’s famed stage. I should be glad to inform you that if you miss Sherlock Holmes and The Adventure of the Suicide Club, now playing at the Herberger Theater Center, you will have unwittingly engaged in the heinous crime of theatricide, for which the punishment should be no less twisted than the diabolical plot

the production reveals. Masterful performances are delivered with ease by Remi Sandri, who stars as the detective-sleuth and Jeff Steitzer as the affable Dr. Watson. The supporting cast is no less brilliant and the plot is - well, delightfully wicked and worthy of something I might easily have devised…had I been consulted.

The game afoot is murder and I daresay, so ingeniously crafted that only the mind of Sherlock Holmes would have a chance of figuring it out, even if it might kill him. Those who attend will have to settle for being thoroughly entertained as Holmes dazzles and stuns his peers with powers of incredible deduction, rivaled only by the dramatic flair in which they are delivered.

Of course, I do not mean that in the usual sense of the word because – let’s face it – ‘Johnny English Reborn’ is utterly ridiculous on almost every level imaginable. However, when it comes to making people laugh, the movie is spy-tacularly hilarious. If nothing else, it proves without a reasonable doubt that Rowan Atkinson – best known for his ‘Mr. Bean’ character – is the physicalcomedy king.” Grade: B

As a solid film with admirable values, ‘The Mighty Macs’ certainly scores. However, viewers – especially those who, like myself, are less than enthusiastic about sports – may often catch writer/director Tim Chambers traveling (i.e. relying too heavily on genre clichés) whereas the

I mean mind. Not to be confused with the 2008 romantic comedy ‘The Women’ boasting an all-female cast, ‘The Woman’ is unsettling in both its storytelling and its aesthetics. If the twisted tale is not enough to nauseate you, then the strange sights and sounds certainly will be. While it could have benefited from a faintly faster pace, this piece of exploitation cinema with a moral (imagine that) is as smart as it is savage.” Grade: B

We shot the film in 32 days, and there wasn’t a single shooting day when we didn’t have somebody on fire, or a car chase, or someone being shot, or stabbed. With the exception of the last 3 days of production, we were never at a location with high air conditioning so every day had its own challenges and yet, I was so thrilled with the locations and what we were capturing on film, and the crew did such an amazing job and were so tenacious in going to the locations and getting what we could out of them. Those challenges had definite cinematic rewards.In the back of all of our minds was the fact that we were only presenting one case, while there are numerous that are unsolved to this day. – Ami Canaan Mann

‘Robocop’ (1987) is the only movie to receive an X rating before they made NC17 for violence, the movie had to be re-edited to get the R rating! Stan: “With the thought that it’s based on true events with many still unsolved crimes, ‘Texas Filling Fields’ in a ‘film noir’ style presentation by director Ami Canaan Mann, has a gritty docudrama style for each of the two detectives representative of their diverse backgrounds. One from the big city of New York, the other from the rural area of Texas, with their investigative styles clashing as they collectively work the case of the missing girl, we’re drawn into a fact-based psychological thriller as physical evidence is discovered in a race against time…” Grade: B Joseph: “‘Texas Killing Fields’ is certainly a decent thriller but it all just seems so... generic. That is not to say that the atmosphere that director Ami Canaan Mann – yes, daughter of acclaimed filmmaker Michael Mann – drums up is even remotely uninspired. Quite the contrary. However, writer Don Ferrarone’s screenplay is another story, passing off other superior movies’ characters and plot devices as its own and insulting the viewer’s intelligence and investment with a ridiculous red herring.” Grade: C

Sam (Worthington) and Jeffrey(Dean Morgan) spent time with them as well. It’s funny because this kind of ‘mix / match’ cop is absolutely a trope, but in this case it’s absolutely authentic, that’s the way they really are! One case had found them both and they would just go at each other in terms of their differing philosophies in life and how that also affects the way they approach the work that they do, specifically the killing fields themselves. Sam and Jeffery did a fantastic job of capturing the essence of both those men as they really are!

Director Ami Canaan Mann (‘Texas Killing Fields’) By Stan Robinson “The script came to me with no budget, no cast, and the slimmest of hope that I would be on set shooting it, let alone having finished it! It came with a bit of research, which I read before I read the screenplay, which I found incredibly compelling, I would say the script kind of found me. We had the terrific good fortune of having access to the real people who inspired the true story. I spent time with the real detectives in Texas City,

“Porthos is a sexy hedonist – with a tendency toward violence – who likes his cougars because they have got a bit of money and are more experienced women. When I took the part, I thought, ‘Maybe Porthos is not actually from Paris. Maybe he is from Marseille, which is where the Foreign Legions are. Maybe he has had a naughty nautical past and has been on ships.’ “He has got a pearl drop earring on one side, a shaven head, no floppy hair and no floppy hat. He has got this world-traveled mercenary look about him. But, obviously in his heart, his path has drawn him to be a Musketeer. That is his spirit and that is what resonates through. Big Butte Burger Binge - Enormously Exciting Event! The first annual Big Butte Burger Eating Contest at Lone Butte Casino was a terrific success. Guests were treated to quite a show as contestants were split into two heats and the competition to crown the biggest burger eater began. FASTEST BURGER EATER The first heat pitted the contestants against one another to see who could consume the massive 10” Big Butte Burger in the fastest time. As the beef and buns began to fly, the eaters raced to chew down each bite. As the time ticked away, several competitors began to separate themselves from the pack. In the end Stephanie proved too fast for the rest of the field of burger eaters. The deceptively diminutive five foot Stephanie took home the title of fastest Big Butte Burger eater. She put away the entire sandwich in a stunning time of just 5 minutes and 20 seconds. EAT THE MOST BURGERS The second heat of the competition provided thirty minutes of timed eating to see who could consume the most Big Butte Burgers. For the entire thirty minutes a field of more than twenty-five competitors battled bite for bite as each struggled to conquer as many Big Butte Burgers as possible. When the final bell tolled three competitors had qualified by eating more than one Big Butte Burger. The winner was determined by weighing the remnants of the second Big Butte Burger with the title headed to the contestant who ate the most. With the weights tallied and the damage assessed - Naader Ali Reda was awarded the belt. Reda had finished off 126.95 ounces of Big Butte Burgers, which was just shy of two complete sandwiches. Amazingly, the second place prize in the most consumed competition went to the aforementioned Stephanie. A little over an hour after eating in the fastest time competition - Stephanie was able to put away an additional 126.70 ounces of burger in the second heat. Stephanie proved that big eaters can come in small packages. The winners for each competition were awarded $1,000 and the title of Big Butte Burger eating champion. If you want to compete in next year’s event, you can start practicing now at the Café 24/7 location inside Lone Butte Casino. The 10” burger is available all year long. It is a great way to feed a party of four or one very hungry future competitor in the Big Butte Burger eating contest. Local Food Bank in Need of Turkeys This Holiday Season United Food Bank is asking the community for help to feed tens of thousands of people in need this holiday season. Donations of turkeys, other holiday food and cash are desperately needed. “We did not come close to meeting the demand we had last year,” said Bob Evans, United Food Bank President and CEO. “We’re hoping to improve that this year and we’re stepping up our efforts to make it easier for people to make a donation.” United Food Bank will extend its hours for incoming donations at their facility at 245 S Nina Drive in Mesa on the following days for anyone to make a donation of a frozen turkey, other traditional holiday food

THE GAMECHANGERS After spending 30+ years on Wall Street I am neither hopelessly naïve nor impractical, I am one, however, of many who believe there is prospect for change. An attainable idea that values can be put back into capitalism.

I do not believe capitalism will ever achieve the perfect balance, or that we can eliminate the side of human nature which for some leads their judgment. The crash of 2008 and all that has unfolded ever since has shown us that the short-termism “greed is good” capitalism that dominated the past 30 years has failed. It has failed society, our children and our shareholders. The never~ending pursuit of shortterm profits and a higher share price has driven capitalism right off the cliff. Business leaders and investors alike were seduced by the idea -- known in academia as the “efficient market hypothesis” -- that the current share price told you all you needed to know about the value of a company. As it turns out, it tells you very little. The alternative; Old School is New School or as Matthew Bishop and Michael Green call it; “PHILANTHROCAPITALISM”; the better business practice of long termism and values~based business. The bottom line is the bottom line, but there is more than one way to get there. It is not just Warren Buffett and community banks that are role models for a new long-termism valuesbased capitalism. Nike, PepsiCo. and General Electric have all embraced a social mission with unexpected enthusiasm that is certainly more than just spin. Even those corporations who were at the bottom of the “best business practice” list are starting to take their responsibility to society more seriously. A vast number of firms are starting to realize that if they want to hire the best people, they will have to stand for something more than profit maximization.

If the current trend continues, by the year 2215 dwarves will outnumber “normal-sized” people.

For those of us not at the helm of the top 50 there are actions we can take to perpetuate the change. If you are a manager, sign a business oath. Move some of your company’s money to a community bank. Buy products that are green, or fair traded, or otherwise ethically produced. Above all, demand that the pension funds and mutual funds that manage your retirement savings invest your money in a way that rewards long-term responsible behavior, not shortterm profit-chasing. New York Times columnist David Brooks recently expressed the need to “remoralize the markets”. Management guru Rosabeth Moss Kanter, whose new book, “SuperCorp,” is all about how “out of the ashes of conventional business models arises a set of companies using their power not only for profits and sustainable growth but also social good.” And as written in “The Road From Ruin,” “if business leaders, shareholders, and consumers want a better capitalism, now may be the best time to remake the system.” Rather than dismissing this type of thinking as unrealistic, perhaps it is time to wake up and smell the (fair trade) coffee. Beer Dinners The title of this article might be a little off, because, let’s face it…any dinner can be a beer dinner. But for purposes of today’s discussion, we are going to focus on those dinners that are planned as beer dinners, usually at a nice restaurant or hotel ballroom. In a previous article, we discussed the concept of pairing food and beer, now we are going to get a little more in depth. What is a beer dinner? Great question and one that you might have if you have never attended one. A beer dinner is typically a four to eight course meal during which a different style of beer is served with each course. Each beer is specifically

paired by the chef to pair properly with the dish being served. In many cases, the chef will cook with the beer in question or another beer that will complement the meal. Many times the dinners focus on one brewery and feature commentary during the meal from the brewmaster or some other brewery representative. Other times the chef will use beers from everything at his disposal, with no thought to which brewery, just the best possible pairing. Either one can be enjoyable, and both have their merits. It is nice to have the brewer of a particular beer discussing the beer while you eat, but the larger variety offered at the latter style of dinner usually provides a better overall meal. And the good news is that just because beer dinners are “typically” held at

restaurants doesn’t mean you can’t put one together yourself using basic principles of food and beer pairing. How does a beer dinner get put together? Most chefs will start with a basic concept of what they want to do, perhaps a theme or event. Next they will taste beers that are available to them, and start narrowing down which beers they want to use and what type of dishes will go best with them. It’s a little like Iron Chef with beer as the secret ingredient. Finally they decide on the menu and the beer pairings and go to work. As they are preparing the dishes they will adjust the seasoning to provide the best complement to the beers. In other cases the chef will start with a Continued on Page 36...

Either way works, but the former tends to be a little more efficient and provide the best possible pairings. The chefs also tend to enjoy that more since it allows them to really exercise their creative muscles and do something a little different.

Beer dinners can be simple or extravagant, inexpensive or pricey. I have been to very enjoyable meals that have featured pizza and burgers at a cost of only $30 and I have had incredible dinners where the chef threw everything he had in to the meal at a cost of almost $100. Both were fun events for what they were and while the $100 meal was close to perfection, the pizza and burger meal was much more casual and included a bunch of fun people who really added to the event. It seems as if five courses at a cost around $50 seems to be the norm for these events.

There are even chefs that have made careers around beer dinners. Bruce Paton who bills himself as The Beer Chef is one of these people. His beer dinners, held until recently at the Cathedral Hotel in San Francisco are dinners of legend. In one of the most wine oriented cities in the country he has made a name for himself with beer. In fact, the owner of a company specializing in wine events had this to say about Chef Paton, “The magical way that Bruce pairs beer and food should have the wine industry very nervous.” If you recall, we have discussed in past articles the versatility beer brings to the table, literally, when matched with food, and how this can far exceed the abilities of wine. So, what make Paton so special? How about pairing Slow Poached Arctic Char with Artichoke Salad, Chipotle Aioli and MicroArugula and Oskar Blues Gordon. Or what about Butter Poached Gulf Prawns, Apple Wood Bacon Flan and Citrus Nage with Schneider Wiesse. For those of you that scoffed at previous articles talking about beer pairing with chocolate, Paton does an annual beer and chocolate event as part of San Francisco Beer Week. This year AZWeeklyMagazine.com

Molten Chocolate Cake with Caramel Sabayon and Fleur du Sel was paired with North Coast Old Rasputin. Still think beer and chocolate don’t pair? Another chef, Sean Paxton, who goes by the title, The Hombrew Chef, regularly plans and oversees preparation of the feast at the World Beer Cup awards dinner which always sets a new record for the largest beer dinner ever served now at well over 2,000 attendees. They hold Beer Blunches (kind of like brunch, I suppose) at the famed beer bar, The Toronado, in San Francisco and while it doesn’t rival the World Beer Cup for number of attendees, it was one of the largest in terms of courses. This event, also prepared by Chef Paxton, featured twelve courses, sixteen beers and lasted over five hours. However, locally, Chef Kevin Binkley prepared an amazing meal as part of a rare beer, wine and spirits dinner to benefit the Beer For Brains Foundation. His dinner came in at twenty courses, if you include the 16 amuse-bouche he prepared. Although there were not an equal number of beers, it was still an amazing gastronomic experience. How about the in-home beer dinner? You can hire a private chef, or prepare it yourself. The best way is to get a few friends together, decide what would be good dishes and pairings, and divide up the work. Everybody can be responsible for one of the courses, match the beers, prepare the food and discuss the pairing at the dinner. It’s a different type of dinner party, and one that should be a good time. In Arizona beer dinners have until recently been rather uncommon. A few places have ventured into this territory; most notably Boulders on Broadway and Cafe Zuzu at the Hotel Valley Ho regularly had very nice events. The first Arizona Beer Week held this past February seemed to signal a change. There were many special dinners going on that week, with particularly good ones at Atlas Bistro (co-hosted with AZ Wine) and La Bocca Urban Pizzeria. Tripel Karmeliet

This week let’s take a short trip to Belgium and chat about Tripel Karmeliet. Brewed by Bosteel’s Brewery in Belgium, Tripel Karmeliet is brewed with three different grains including wheat, oats and barley in a recipe dating back to 1679 and the original Carmelite Monastery. The name Triple Karmeliet refers to its origin as well as it’s in bottle fermentation and is one of many reasons this authentic Belgian beer is so robust and well balanced. Triple Fermentation provides for many delicate characteristics and nuances including big fruity ester type flavors balanced by an essence of bready, biscuit malt that does well to steady this high alcohol brew. At 8% ABV. you might imagine this little gem has a kick and although the mouth feel isquite full bodied there is a very refreshing characteristic that makes it perfect for Arizona weather. Indeed, high alcohol and drinkability. Robust, yet delicate. Having your cake and eating it too, no wonder this this beer scores a 99 out of 100 on ratebeer.com. All of the sudden I am quite thirsty! My pairing advice would include a wide array of dishes from smoked salmon with cream cheese to soft ripe goat cheeses with fig and an authentic Chicken Marsala. As I understand, many modern European brews made specifically for food pairing including Estrella Inedit are loosely basedon the Karmeliet recipe. Looking to entertain for the holiday season? On Friday, Oct. 28, Discovery premieres the second season of “Gold Rush” – known in season one as “Gold Rush: Alaska” – again following Oregon resident Todd Hoffman, his father, Jack, and their band of down-on-their-luck friends and neighbors as they seek to strike it rich in the gold fields of Alaska. The night kicks off with a special called “The Off-Season,” which shows what the group has been up to since leaving its mining camp on Porcupine Creek as winter closed in, with only a small amount of gold to show for months of effort and a $250,000 investment. Battlefield 3 X360, PC, PS3/$59.99/Oct. 25 It’s been more than six years of painful waiting as DICE labored over the next installment of its phenomenal “Battlefield” series. As far as first-person shooters go, the franchise has managed to do just about everything right, offering everything from massive environments to diverse vehicular combat. Unfortunately, during its hiatus, several companies built blockbuster shooters that have forced nearly every thought of “Battlefield” from consumers’ minds. But as the saying goes, It’s about quality, not quantity, and if you want quality, you want “Battlefield 3.” I could spend hours discussing single-player stories and gameplay, but as far as “Battlefield” is concerned, being excited over single-player is the same as being excited over the sound system in your new Porsche. Sure, it’s there and it’s great, but it’s not the real reason you spent all that money on the car. However, for those who want to know, there is a single-player campaign that places you on the Iran/Iraq border fighting against the People’s Liberation and Resistance. If the combat is just too tough for you, invite a friend and play it together in the game’s co-op mode.

‘Project runway’ finale The ninth season of Lifetime’s hit “Project Runway” crowns its winner Thursday, Oct. 27. “Hidden Gem” I love exploring downtown Phoenix because you never know what you are going to find. I came across a place called Switch, right next to Durant’s. On the outside you would probably never notice it and keep on driving, but thanks to a friends recommendation I stopped by. When you walk inside it has a casual/ modern feel. The happy hour is Monday-Friday 4pm-630p and it is half off their signature cocktails and half off their wine selection, leaving the cocktails to just under $4. The “bar nibbles” are quite tasty. My friend and I devoured the bacon jalapeno macaroni and cheese and an oatmeal chocolate chip cookie with ice cream for dessert for under $15. 2603 North Central Avenue “Bigger Is Not Always Better” A lot of times it is the staff that makes me want to come back to a restaurant, and that is exactly the case with New China Gate. At all times they have $1.50 budlights and $2.00 heinekens, along with $4 sake bombers. The bartender there referred to as “Cowboy” is definitely a treat. He will never forget your name and is always making the entire restaurant shots; he loves a good time. the food there is great with large portions.
