This New Year’s Eve weekend, experience Cirque du Soleil’s Michael Jackson THE IMMORTAL World Tour™. The show captures the essence, soul and inspiration of the King of Pop, celebrating a legacy that continues to transcend generations. According to show spokesperson Maxime Charbonneau, the show is “...a tribute to Michael Jackson’s music; a tribute to his legacy, his music and the artist he was. Not only the performer, but the singer and composer. We pay tribute to him through his music.” Michael Jackson THE IMMORTAL World Tour™ is unlike anything you have seen before. “The show is a blend between a traditional Cirque du Soleil show and a pop/rock concert. You get amazing dancing, amazing choreography and all the iconic Michael Jackson dance moves, in addition to all of the iconic songs. At the same time, you get the artistry of Cirque du Soleil,” says Charbonneau.

helped lay the groundwork for the touring production. One thing you will not see... a Michael Jackson impersonator. Instead, the show’s producers and Director Jamie King decided to focus on the music, Michael’s voice and of course, the Cirque performers. “The show is driven by Michael’s voice. You hear Michael’s voice through the entire show and the band plays along. For acrobatic numbers, the acrobats have to follow Michael’s lead. There is no room for error. They have to be on time, all the time,” says Charbonneau. Experience the spirit, passion and heart of the artistic genius who forever transformed global pop culture. Michael Jackson THE IMMORTAL World Tour™ arrives in Phoenix on December 30 and 31, 2011 at US Airways Center. Tickets range in price from $50 to $250 each. For additional information, visit www. cirquedusoleil.com/MichaelJackson.

The idea came long before Michael’s passing. “Michael Jackson was a huge Cirque du Soleil fan. He was a true admirer. He visited the Cirque du Soleil headquarters in Montreal.” His spirit, passion and love for the work

Winter in the Valley comes with bragging rights. While our east coast cousins are shivering in their puffy coats, it’s the Valley’s time to shine. The weather is perfect to enjoy one of the desert mountain hikes set conveniently at the Valley’s fringe. Take your pooch and pair the outing with breakfast after - and you’ve got the makings for a gorgeous winter’s day in the desert. Local Lily recommends hiking South Mountain followed by a bite at Morning Glory Café or the The Farm Kitchen. Both famed local restaurants are located at South Mountain and are pet friendly (6106 South 32nd Street Phoenix, 602-276-6360).

“We have a lot of Michael Jackson fans and a lot of Cirque fans coming. But you don’t have to be a fan of either to enjoy the show.” Fans will enjoy Michael’s classic and most familiar tunes while experiencing some lesser-known tracks. Michael Jackson THE IMMORTAL World Tour™ will be playing US Airways Center and other large arenas that are bigger than traditional Cirque venues. “It’s a massive production,” explains Charbonneau. “…one of the biggest we have on the road. There are 65 artists on stage at a time. There is also a live band playing the music.” Those artists include international dancers, musicians and acrobats.

slow for younger viewers.” Grade: C+ Joseph: “Since when did family films feature extreme drunkenness, storms of gunfire and a mean-spirited sense of humor? In the future, when someone asks that question, you can confidently proclaim 2011, as that is the year that ‘The Adventures of Tintin’ was released. Granted, the animation in the new movie directed by Steven Spielberg (who, quite frankly, should know better) – which employs the same motion-capture technique as ‘The Polar Express’ – is absolutely astonishing. However, after a charming beginning, the film evolves into a frantic mess that goes on for entirely too long.” Grade: C

Reviewers’ Roundtable The following quotes were pulled from AZ Weekly Entertainment Magazine’s film columnists’ full reviews in an effort to generate a well-rounded overview of each of this weekend’s new releases.

‘The Adventures of Tintin’ A young reporter (Jamie Bell) is kidnapped after he acquires a model ship that contains a clue about the location of a hidden treasure. Also featuring the voice talents of Daniel Craig, Andy Serkis, Simon Pegg and Nick Frost. Directed by Steven Spielberg. (PG – 117 minutes) Stan: “With the flair of the fantasy tales of old, the use of the motion capture technology of recent years brought to prominence by producer/director Robert Zemeckis, [by the way, we were interns at NBC-TV Chicago in the early 70s], and 3 D which maximizes the creation of the Belgian comics writer and artist Hergé, the Steven Spielberg directed big screen presentation of The Adventures of Tintin although rated PG and may go over the heads of the younger viewers, is a reminder for us older viewers of the wonder of imagination as it provides the essence of dreams of adventures!” Grade: B Randy: “The animation and 3D are superb! The music and score are fantastic. The first thirty minutes of the movie are a heck of a lot of fun. But, it seemed to go down hill from there. ‘Tin Tin’ starts off with a bang and sets itself up for a fun adventure as our young sleuth sets out to solve a mystery. The story drug on a bit and lost my interest. This good-looking animated film may prove too long and

‘The Artist’ The advent of sound in motion pictures signals the end of one superstar’s (Jean Dujardin) career, while a young ingénue (Bérénice Bejo) stands poised to hit the big time. In black and white without spoken dialogue. Playing exclusively at Harkins Camelview 5. (PG-13 – 100 minutes) Stan: “As ‘The Artist’ starts with the feel of the silent films of cinematic history, as well as a fond reminder of my studies in film school in the 70s, director Michael Hazavanicius presents a view in the tradition of that time through two extraordinary performances

Randy: “‘The Artist’ is my top choice for Best Film of 2011. Not only is it one of the best films of the year, it features some of the best performances, especially that of Jean Dujardin. The French actor is a comedic genius and proves that he can be just as funny in a silent role as he can be in a speaking one. He is perfectly cast and helps to make this creative, unique experience even better. A fun tribute to the golden age of Hollywood.” Grade: A+ Joseph: “If film is projected at 24 frames per second and a picture is worth a thousand words, then director Michael Hazavanicius’s 100-minute silent film ‘The Artist’ must be worth 144,000 words. On the other hand, that is a rather black and white way of complimenting a motion picture as transcendentally gorgeous as ‘The Artist’ (which, coincidentally, is in black and white). Instead, it is much more accurate to say that each and every magical moment of the movie is completely captivating, resulting in one of the richest cinematic experiences of 2011.” Grade: A

‘A Dangerous Method’ Dr. Carl Jung (Michael Fassbender) treats a beautiful and unbalanced patient (Keira Knightley) using the methods of his mentor Dr. Sigmund Freud (Viggo Mortensen) but a rivalry between the doctors forms as each falls under her spell. Directed by David Cronenberg. Playing exclusively at Harkins Camelview 5. (R – 99 minutes) Stan: “Director David Cronenberg once again presents his expected technique of psychologically intertwining the physical. In ‘A Dangerous Method’ the physical is the dialogue as the basic theories, which progress through the years there after, of psychiatry, as we know it today. Be forewarned, the film is quite cerebral with ‘skirmishes of words’ as weapons

An amnesiac woman (Sybil Temtchine) wanders around to various Hollywood landmarks after awakening on the sidewalk in front of Grauman’s Chinese Theatre. Playing exclusively at Harkins Valley Art. (NR – 80 minutes)

when two opposing philosophies clash in the form of an excellent performance by Viggo Mortensen (‘Lord of the Rings’ trilogy) as Dr. Sigmund Freud, who’s views are grounded in the imbalance of sensuality of human kind leading to mental instability, while Michael Fassbender as Dr. Carl Jung, presents the metaphysical instinctual human elements in disarray as the basis of mental disorders.” Grade: B Joseph: “In director David Cronenberg’s latest motion picture ‘A Dangerous Method,’ star Keira Knightley receives a hearty spanking from her costar Michael Fassbender. Considering her atrocious attempt at a Russian accent, the actress deserves much more than that. And do not mistake said spanking as evidence of a titillating experience. Instead, expect only long-winded, intellectual arguments about sexual repression. Speaking of which, I wish that I could repress having watched this boring movie whose original title – ‘The Talking Cure’ – tells you all that you need to know.” Grade: D

‘The Darkest Hour’* An alien attack sweeps up American tourists in Moscow. Starring Emile Hirsch, Olivia Thirlby, Max Minghella, Rachael Taylor and Joel Kinnaman. (PG13 – 89 minutes) *Screened after deadline.

Bet You Didn’t Know! by Stan Robinson

Joseph: “Writer/director Steven Peros’s fairy tale ‘Footprints’ is one of the most enigmatically entertaining motion pictures of the year. Granted, that is not really a good thing, seeing as it is inherently incoherent – especially as the movie’s mystery develops toward its conclusion. However, for some strange reason, the viewer cannot help but enjoy getting sucked into all of the intrigue. Of course, the simply luminescent Sybil Temtchine, who plays the project’s primary character, probably has something to do with that.” Grade: C

‘The Girl with the Dragon Tattoo’ A disgraced journalist (Daniel Craig) and a security-firm investigator (Rooney Mara) probe a 40-year-old murder. Directed by David Fincher. (R – 158 minutes) Randy: “Having seen all three of the Danish films in the trilogy, my excitement level was high for the English-language remake. The two films are almost identical, down to every graphic detail. The impressive production features an outstanding performance by Rooney Mara yet a so-so one by Daniel Craig. He seemed to have mumbled through many of the scenes and it’s not clear whether it was intentional or not. This is one intriguing mystery worth seeing.” Grade: B+ Joseph: “Save for star Rooney Mara’s performance, with which the actress truly transforms into her character, ‘The Girl with the Dragon Tattoo’ is not worth any of the hype. That is to say that director David Fincher’s thriller is average at best. And that is a generous statement considering the movie’s most memorable moments were much better when viewers saw them in a movie called ‘The Silence of the Lambs’ – which, by the way, even at 2 hours was 40 minutes shorter than this seemingly never-ending story.”

‘Mission: Impossible – Ghost Protocol’ When the IMF is implicated in a global terrorist plot and shut down, Ethan Hunt (Tom Cruise) and his team (Jeremy Renner, Paula Patton and Simon Pegg) must go under cover and off the grid to clear the organization’s name. (PG-13 – 133 minutes) Stan: “Admittedly an avid watcher in my youth of the original TV series of the late 60s-early 70s and even now in syndication from time to time with the intricate plots, the presentation of the big screen franchise by Cruise/Wagner Productions (Tom Cruise and Paula Wagner) of the hit TV series bywriter, creator, and executive producer Bruce Geller, has taken the basic theme to the next level. A prevalent psychological element, more so in this installment, is the episodic feel which ‘takes one along for the ride’ as each member of the IMF (Impossible Missions Force), is equally

‘Outrage’ After his men go too far in their confrontation with a rival gang, a yakuza henchman (Beat Takeshi) gets caught up in an escalating mob war. In Japanese with English subtitles. Playing exclusively at The Royale. (R – 109 minutes)

John Charles “Chuck” Carter is better known as Charlton Heston who starred as Moses in ‘The Ten Commandments’.

Joseph: “To call writer/director Takeshi Kitano’s latest motion picture ‘Outrage’ exceptionally violent would be an understatement. The graphic nature of this crime thriller, which spills more buckets of blood than even a hospital with the clumsiest staff in the entire world, goes above and beyond any description as mundane as that. Unfortunately, the movie never really escalates to anything other than a collection of cool killings. Then again, for some, that is more than enough.” Grade: C

adept [Tom Cruise, Jeremy Renner, Paula Patton, and Simon Pegg] with co-star status for all rather than the ‘star’ with supporting players, and the IMAX presentation with exceptional stunts doesn’t become the focal point but rather enhances the theme ofimpossible missions.” Grade: B+

Randy: “’Tinker Tailor Soldier Spy’ is a spy thriller without all of the big-budget thrills and chases. A story so complicated, with so many characters and code names, you may want to consider bringing a notepad and pen with you to the theatre. The intentional slow pace is a nice change of pace, but combined with an intricate plot, following along is a challenge.” Grade: B+ Joseph: “‘Tinker Tailor Soldier Spy’ is a cinematic sedative. That is to say that a nice, long nap is almost a guarantee during director Thomas Alfredson’s espionage thriller. Moreover, those unlucky few moviegoers who manage to remain awake throughout are extremely unlikely to have even the faintest clue as to what is transpiring on the screen. Needless to say, any film for which the viewer requires a dossier (which I in fact received from Focus Features) in order to have even a glimmer of hope in following its intricate web of a plot may be just a little too convoluted. Grade: D

Randy: “This mission is easily accepted and by far the most entertaining in the series. With so much action, you will forget all about hating Tom Cruise and sink right into the story. The supporting cast shines and in fact, almost overshadows Cruise’s performance. A thrill ride from start to finish! See it in IMAX or similar large-format presentation to further enhance the experience.” Grade: B+ Joseph: “Even though the movie feels somewhat episodic, ‘Mission: Impossible – Ghost Protocol’ is an exciting and eye-popping action extravaganza – especially in IMAX. That is to say that the fourth feature-length film based on Bruce Gellar’s television series, which originally ran from 1966 to 1973, will likely leave the viewer with fond memories of its special effects sequences but little recollection of its actual plot. However, when said sequences are as spectacular as those in this movie, one is less likely to care that the plot is simply an excuse to show off technical prowess.” Grade: B

Stan: “Reminded of one of my favorite classic cold war spy thrillers‘The Spy Who Came in From the Cold’ (1965) starring the late great Richard Burton and based on the novel by John le Carré who holds the distinction of being one of the finest writers of espionage fiction in 20th century literature, ‘Tinker Tailor Soldier Spy’ (another le Carré novel) directedThomas Alfredson sets the tone and the cold war pace of meticulously analyzing the slightest of clues is as challenging for viewers as it is for the veteran spy (a mesmerizing performance by Gary Oldman), presents a first rate psychological ‘cat and mouse’ thriller of the mind.” Grade: B+

‘Tinker Tailor Soldier Spy’ Veteran British spy George Smiley (Gary Oldman) is called back from retirement to ferret out a mole within MI6 who has been feeding vital information to the Soviets. Also starring Colin Firth, Tom Hardy, John Hurt, Toby Jones and Mark Strong. Playing exclusively at Harkins Camelview 5. (R – 127 minutes)

‘War Horse’ After forcibly parted from his beloved owner, a remarkable horse changes and inspires the lives of all he meets as he moves through the backdrop of World War I. Directed by Steven Spielberg. (PG-13 – 146 minutes) Stan: “Considered the consummate storyteller no matter what the genre, with presentations ranging from sci-fi (‘ET’ 82’, ‘Jurassic Park’ 1992), historical themes (‘Shindler’s List’1993,‘Amistad’ 1997), to fantasy adventures

(‘Hook’1991, ‘The Adventures of Tintin’ 2011), producer/director Steven Spielbergpresents a cinematic journey back in time to England of the early 1900s and World War I for a compelling story of friendship, family, and the power of convictions that’s beautifully captured by his favorite director of photography Janusz Kamiński [who I had the experience of working with on ‘The Adventures of Huck Finn’ 1993] is a time portal view of an era and lifestyle for 2 and ½ hours, that warms the heart while reinforcing the sometimes forgotten basic element of our humanity, compassion; even during the most devastating retrospective conflict of human kind on our planet – wars… Grade: B+ Joseph: “Director Steven Spielberg’s drama ‘War Horse’ takes moviegoers on an epic journey that is as beautiful as it is compelling. Having said that, the immediate bond that is established between the horse and his human is not as strong as it could have been, thereby limiting the movie’s sentimental potential. However, while that initial connection is kind of weak, each and every other relationship that the creature incurs over the course of his grand adventure is both powerful and poignant, resulting in a story that will sweep viewers off of their horseshoed hooves.” Grade: B

‘We Bought a Zoo’ A widower (Matt Damon) relocates his family to a dilapidated zoo and, with the help of its eclectic staff, works to restore the facility to its former glory. Also starring Scarlett Johansson and Thomas Haden Church. Directed by Cameron Crowe. (PG – 124 minutes) Randy: “The surprise hit of the holiday season! The trailer offered little hope for what looked to be a somewhat cheesy feel-good flick. Matt Damon and cast are extremely likable, the story upbeat and the message positive. ‘We Bought a Zoo’ is easily one of the best live action family films of 2011. You will be planning a trip to the zoo afterwards. Perfect fare for all ages young and old.” Grade: B+ Joseph: “If ‘We Bought a Zoo’s’ abhorrently annoying 7-year-old actress Maggie Elizabeth Jones had screeched the film’s title at the top of her lungs one

more time, I may have been compelled to march right out of this contrived mess of a movie then and there. Unfortunately, she only does so twice, therefore I had to grin and bear the corny clichés that director Cameron Crowe and screenwriter Aline Brosh McKenna – who also penned this year’s sitcom-ish ‘I Don’t Know How She Does It’ – attempt to pass off as genuine emotion. But you had better believe that as soon as the end-credits began to roll, my land speed as I exited the theater could have competed with that of a cheetah.” Grade: D

THE DEAD CELEBRITY COOKBOOK

Favorite Recipes of Hollywood’s Most Beloved Stars For anyone who loves Hollywood memorabilia, is an entertainment junkie, and loves to eat and cook – they will treasure Frank DeCaro’s The Dead Celebrity Cookbook: A Resurrection of Recipes from More Than 145 Stars of Stage and Screen (HCI Books). Frank compiled favorite recipes from some of Hollywood’s biggest names; including Lucille Ball, Elizabeth Taylor, Sonny Bono, Liberace, Michael Jackson, John Denver, Frank Sinatra, Rock Hudson, Humphrey Bogart, and Peter Falk, just to name a few. “I love these dead celebrities! They’re the stars I grew up watching, and they deserve to be remembered even if they were more talented on screen than they were in the kitchen. Frank clearly worships them as much as I do, and after reading The Dead Celebrity Cookbook you will, too.” -Rosie O’Donnell “Celebrities die--eventually--but their recipes live on, thanks to Frank DeCaro’s thorough and thoroughly delicious book. DeCaro’s dry wit is tasty, and judging from these yummy concoctions, most of these celebs died really happy!” --Michael Musto, Village Voice Inspired by a “Dead Celebrity Party” during his college years, DeCaro

STRESSbALL

mEATbALL

Stress less this holiday... leave your party to Buca thought the one thing missing from the event was the food of the dead. Since then, he’s been collecting recipes of the stars and lucky for us, he’s put them together in, THE DEAD CELEBRITY COOKBOOK: A Resurrection of Recipes from More Than 145 Stars of Stage and Screen (HCI Books – October 2011- $19.95). THE DEAD CELEBRITY COOKBOOK is here to remind you that before there were celebrity chefs, there were celebrities who fancied themselves as chefs. They were whipping up culinary delights, and sometimes sharing them with us on shows like Merv Griffin, Mike Douglas or even Johnny Carson. DeCaro gives us some entertaining and informative commentary before each section of recipes in chapters that include: “Talk Show Chow,” “An All-Night Oscar Buff,” and “I Lunch Lucy,” a whole section dedicated to the red-haired TV goddess.

This Holiday Season, think of Buca when planning office parties or family get-togethers. Whether you bring them to Buca, or bring Buca to them, we know how to feed a crowd.

Chevy Chase stars in “National Lampoon’s Christmas Vacation” Sunday on ABC Family.

28

December 22nd, 2011 - December 28th, 2011

Conventional wisdom among television programmers is that nobody is watching on major holidays such as Christmas, and if they are watching, they’re probably sick of the holiday hype by the time the day rolls around. What seems to slip their minds is that many people incorporate TV viewing into their household holiday routines. In fact, they might even be more in the mood for a little Christmas cheer on the tube now that the dust has settled, presents have been opened and dinner consumed. For those folks, here’s a rundown of holiday highlights airing around the dial on Sunday, Dec. 25: ABC, as usual, airs the annual Disney Parks Christmas Day Parade, with Mickey and the gang and assorted celebrity guests marking the holiday with music and spectacle. In the evening, the alphabet net presents a Seussome twosome: the 1966 cartoon and 2000 liveaction versions of “How the Grinch Stole Christmas.” Sister channel ABC Family devotes the entire day and evening to Christmas movies and specials, starting with “Mickey’s Christmas Carol” and concluding with “The Polar Express” and “National Lampoon’s Christmas Vacation.” Also in the lineup are “Frosty’s Winter Wonderland,” “Rudolph’s Shiny New Year” and “The Santa Clause.” Disney Channel has an assortment of Christmas-themed episodes of its regular series, including an encore of the “So Random!” episode from earlier this month that featured Justin Bieber performing music from his holiday album. TBS continues its tradition of airing a 24-hour marathon of the 1983 comedy classic “A Christmas Story.” The marathon began on Christmas Eve and continues through the day on Sunday. TV Land summons ghosts of Christmas past with holiday-themed episodes of “Roseanne,” “The Nanny,” “The Dick Van Dyke Show,” “Bewitched,” “The Jeffersons,” “Good Times” and more. Bring tissues for the “Andy Griffith Show” episode where Andy and Barney (Don Knotts) throw a Christmas party at the jail for a prisoner’s family. AZ WeeklyMagazine.com

One of my favorite places to go; El Hefe’s! They have happy hour every day from 3pm-7pm with live music on Thursdays. Chicas, you can get a three liter box of franzia red for $30 with a minimum of three of you. Fellas, you can get 32oz pacifico, tecate, and corona for $4. Indulging on their $2 tacos is also a great deal. If you go on a Sunday this place is a party all day long for Sunday Funday football. This is a Chicago Bears bar, so whenever they get a touchdown it’s free jello shots for everyone. This place is all about a good time, so get out and come play! 4425 N. BEER! HOMEBREW FOR CHRISTMAS As we are in the midst of the holiday season, a season for giving and receiving, a season for reflection and planning, my thoughts turn to…what else, beer. Anyway, many of you out there will be fortunate enough to receive the gift of beer this

Follow us on and www.worldclassbeverages.com The High-End Beer Division of Crescent Crown”

year. Perhaps some of you will receive individual, difficult to find bottles, like beers from Russian River, or maybe some of the fine offerings from Cigar City or perhaps the Smokestack Series from Boulevard Brewing. Others may even score the highly coveted Westvleteren beers. Still others will get beer of the month gifts. But there is a saying about giving fish and teaching how to fish… now I don’t really know what that means, but I think it also applies to beer. If you give a man a beer, he will be happy for the moment but if you teach him how to homebrew, then

he will waste many Saturdays making beer. So perhaps the perfect gift for the beer nut is a homebrewing kit. So, now you get up on Christmas morning and a beautiful new homebrewing setup is under the tree. What are you going to do with it… that’s truly the question? Here are some key tips pulled from various sources, all from those who should know, such as the people that publish Zymurgy magazine, the American Homebrewers Association 1. Keep it Simple The vast majority of new homebrewers start with extract brewing. The first tip is to take your brew pot off the heat when you add the malt extract, whether its syrup or dried extract. It can take a few minutes to get the extract in and leaving the heat on will more than likely scorch the bottom of your pot. You will naturally get caramelization on your brew pot but you don’t want a burnt sugar taste in your finished beer. 2. Boilovers

alaskanbeer.com

It will happen to you at some point, but try to prevent it anyway by being careful when bringing the wort to the boil. They are not fun to clean up and dangerous too. Eliminate boilovers by keeping a spray bottle with water to hand so

AZWeeklyMagazine.com

when the wort looks like it could boil over you can spray it and hopefully settle everything back down. Don’t be in a rush and moderate the heat to bring the wort to the boil slowly. 3. Get proper hop utilization by boiling properly It may seem like a long time but when a recipe or book says boil for 90 minutes or 60 minutes then do it. One of the reasons you are boiling for this length of time is to achieve the correct bitterness. 4. Keep Things Sterile This is job one and with good reason. All you need to worry about is keeping everything sterilized that comes into contact with the wort or beer after the boil. Having to pour a whole batch of home brew down the drain because it’s infected is the the last thing you want to do when you put so much time and effort into your beer. 5. Control your fermentation temperature correctly Continued on Page 38...

Your yeast will almost always state an optimum fermentation temperature range. Try to stick to this as much as possible. The temperature of the wort during fermentation will not only affect the viability and behavior of the yeast but also the taste and flavor of the finished beer. Big swings in temperature are a bad idea, for example if the room gets cold at night then warm during the day. A simple way to regulate temperature if your house temperature varies a lot is to keep the fermenter in a small space like a cupboard because it doesn’t take a lot of energy to keep a smaller area at fermentation temperature. Get a simple adhesive thermometer and stick it on your fermenter. 6. Boil Full Size Batches If you start out brewing part of a beer then diluting to the desired final volume then try to switch to full batch boiling as soon as possible. Switching to full boils as soon as can get a big enough brew kettle will be the best thing you can do, both in terms of the taste of your home brew and being able to brew far more different styles. 7. Practice Your Siphoning

38

Siphoning is a skill that takes time to master. You need to know how to siphon properly before you start siphoning your beer. If you let lots of air into the siphon and splash the beer around you can end up with oxidized beer. It might seem a trivial thing to do but December 22nd, 2011 - December 28th, 2011

practicingbeforehand without your hard crafted home brew is the best way. 8. Make a Yeast Starter Yeast starters are particularly good for decreasing the lag time (the time it takes between pitching the yeast and fermentation). Having your wort sitting in the fermenter for a long time before fermentation starts increases the risks of infection. A starter will mean this period is shortened and also mean healthier yeast. 9. Experiment There are so many different varieties of hops, malts and even fruits, vegetables and spices available to the home brewer. Use this diversity to the full and be creative actively seek out recipes that have vanilla in if you like vanilla. If you like a particular beer that uses a certain variety of hop substitute that hop into your beers instead of using something else. You can only improve as a home brewer by knowing your ingredients and testing them out. 10. Try Different Yeasts. Find the fridge in the home brew shop with all the Continued on Page 42...

Experiment and have fun. One way you can quickly build up an understanding of different ingredients is to split a brew in half and pitch 2 different yeasts in each one. You can even split batches and hop them differently and compare results between different hop varieties. Understanding what each ingredient brings to the table helps you design better beers. 12. Read. Read. Read. This point is vitally important. Go out and get books like Designing Great Beers by Ray Daniels, or The Complete Joy of Homebrewing by Charlie Papazian, go on the forums and listen to the Brewing podcasts. You can pick something up and learn more about home brewing every day. People are always developing new techniques all the time and being able to learn these things will make you brew better beers. 13. Have Patience Brewing takes time. Not only the length of time to brew and ferment your wort but also to carbonate and mature your

home brew. If you have ever opened a bottle of homebrew too early you will get the importance of this. Brewing big beers like Barley Wines and Old Ales need patience. The only thing you can do to stop this habit is to brew more, that way you have always got something to be drinking. 14. Develop Your Own Recipes Making a beer to a recipe is great, brewing a beer you have spent time working in and researching is awesome. To begin with you might want to take a recipe and make modifications, put something you like in there. Make a recipe from scratch because it’s quite possible nobody has done anything like it before. 15. Go off Style This is another one about experimentation. Just because a style dictates that a Mild has to have a maximum of 25 IBU’s and top out at 1.038 OG. Make a super Mild, don’t be constrained by styles, you are a home brewer and one of the things that makes home brewing great is you can do what you want. Push the limits. Finally, seek out others that can help you with your new hobby. Find a homebrew club. The largest in the country is located right here in the Phoenix Area. Contact the Arizona Society of Homerbrewers (ASH) at www. Azhomebrewers.org and get a membership. They offer advice, competitions and social events, all designed to maximize your enjoyment of brewing your own beer.

The Nut B4 Christmas Ale!

‘Twas the Nut B4 Christmas and all through pub not a creature was sober and all were in love with a nut brown ale, tasty and dark on every soul at the bar it would leave its mark. Rich, sweet and creamy always poured with care at Sun Up Brewing Company; head down if you dare, dare to drink a pint or three if you might. Perhaps one more before hitting the door? Perhaps one on cask? They will if you ask! The Beer Geeks all headed down to the bar with visions tapping handles to mark where they are. An aroma of caramel first hits your nose then blends with a hint of nut I suppose. An English style beer although it’s made here in Phoenix with love and help from above. Growlers are near full of Christmas cheer for sale just for you right down at Whole Foods. A nice brew for pairing with fine foods if you’re caring with holiday meals and happy hour deals.

Check out where to enjoy and purchase these local brands on “Beer Spy” at www.worldclassbeverages.com AZWeeklyMagazine.com

Then at the chimney who should appear? Why Sun Up’s brewer Uwe (pronounced “ouva”) with a glass full of beer! Merry and Nutty with stories of funny Yule Tide brews and lots of good news. “The Pub would be open On Christmas Eve” said Uwe “quite true” as he finished his brew. Then quick as he came he sprang to his sleigh and flew out of sight yet all through the night all we would hear was… “Happy Christmas to all and to all a Craft Beer!!!” As usual, keep sending those comments and questions to kingjamesswann@gmail.com I love to hear them. Until next week, Cheers! December 22nd, 2011 - December 28th, 2011

BASE is an acronym that stands for Buildings, Antennae, Spans (or bridges), and Earth (or cliffs), clearly detailing which structures are used for this extreme sport. While many people use the term BASE 4:15 PM jumping to loosely describe any number of activities that entail leaping from tall natural or man-made structures, the sport actually calls for the use of a parachute (one that is prepacked and then either affixed to a base so that the shoot opens as the participant jumps from the structure, or opened at low altitude). This gives you a decent idea of how tall the structure must be in order that your chute will stop you from hitting the ground with too much impact. Of course, most jumpers will never reach terminal velocity, but because of the significant reduction in fall-time (as opposed to say, skydiving), participants must open their shoots pretty quickly after jumping. And yet, despite the fringe nature

of such a dangerous sport, it has attracted the interest of extreme sports enthusiasts across the globe. Here are just a few awesome locations that have been used for jumps. 1. El Capitan, Yosemite National Park, California, USA. Not only can you marvel at the natural beauty of the landscape and wildlife spread across the valley below, you can also take a leap from the BASE-jumping site that is purported to have started the craze back in the ‘70s. 2. Christ the Redeemer Statue, Rio de Janeiro, Brazil. The statue, in and of itself, is not really tall enough for a BASE jump (coming in at only 130 feet tall). Luckily, it’s built atop Corcovado Mountain, a peak of approximately 2,300 feet overlooking the city and white sand beaches below. However, because the mountain doesn’t necessarily have a sheer cliff face, jumpers may want to opt for a paragliding chute to veer away and avoid hitting the mountainside on descent.

4. Mount Asgard, Baffin Island, Nunavut, Canada. Named for the Norse realm of the Gods (basically their version of Mount Olympus), this twin peak is over a mile

high. It was famously featured in the opening sequence of the 1976 film The Spy Who Loved Me when James Bond went over the edge on skis, introducing BASE jumping to a worldwide audience. In truth, the only way to reach the summit is with some hefty climbing gear, but the panoramic vista is well worth the effort. 5. Angel Falls, Bolivar State, Venezuela. This, the highest waterfall in the world, offers a drop of over 3,000 feet into the churning waters below. Although much of the water evaporates into mist before it hits the rocks at the base, the rapids of the Kerep River absorb whatever meager amount of water makes it down the cliffside.

3. The Eiffel Tower, Paris, France. While the famous landmark of Paris was initially used by Franz Reichelt in 1912 to test his parachute coat (which looked something like a modern-day squirrel suit) only to die tragically upon the failure of his invention, it doesn’t make the towering structure any less awesome in terms of a BASE jump location. Of course, you may not be able to get permission to leap off the spindly upper levels and into the bright lights of the city below, but since when has that stopped a BASE jumper?

Jonathan Butler started singing and playing guitar at age seven. Even before he reached age ten, he traveled cross-country to help support his family. After signing his first record deal as a teenager with Jive Records, Butler’s premiere single became the first by a black artist to be played on white radio stations in South Africa. The single won a Sarie Award, which is the South African equivalent to a Grammy award. His debut album put him on the map internationally and garnered two Grammy nominations. Celebrate the New Year together as one, as multi-platinum, multi-cultural recording group WAR is coming to town on Friday, January 20, 2012 at the intimate Celebrity Theatre. WAR: What is it good for? Some of the most memorable hits of all time to be

precise, including “Cisco Kid,” “Low Rider,” “Why Can’t We Be Friends,” “Slippin’ into Darkness” and “The World is a Ghetto.” WAR was the first successful musical crossover phenomenon that fused rock, jazz, Latin and R&B. Although WAR’S lyrics were sometimes political in nature (in keeping with their racially integrated lineup), their music almost always had a sunny, laid-back vibe emblematic of their Southern California roots, an enduring influence that has sold over 50 million

JohnDenver’s first Gibson is on display at the Musical Instrument Museum.

The Musical Instrument Museum (MIM, 4725 E. Mayo Blvd. in Phoenix) has a new John Denver exhibit on display, “This Old Guitar”. For the next two years, visitors will be able to see Denver’s first guitar, given to him by his grandmother when he was twelve years old. It sparked his interest in music and… well, we all know the rest of the story. This Gibson was particularly significant to Denver, partly because somewhere along the road he believed he had lost it. Overjoyed to be reunited with it some five years later, he wrote the hit song “This Old Guitar” both about it and on it. Visit www.themim.org for more information.

I’m with the Band at Copper Blues Obvious knowledge: everyone loves music and everyone loves to sing along to their favorite songs. Because of this reality, one can therefore put people in three different groups. The first group belongs to those who are gifted and who can harmonize to any genre of music (yay, good for you lucky bastards). The second group involves the majority of people who, like myself, have difficulties carrying a tune and accept their ill-fated singing voices. Finally, the third encompasses those special individuals who believe with all their hearts that their vocals are a precious and beautiful gift from the Gods and jump at any opportunity to share it with others when really, they suck so hard you start to feel pity forming in that emptied spot in your stomach that just released laughter whenever you hear one of them sing. I sincerely enjoy the third group of people and find a rare joy when I discover one from that group at karaoke. With eyes shut so tight it looks painful, and passionate hand gesturing that could rival a professional, it’s pure entertainment that’s both suspenseful and demands respect. It already takes some balls to get in front of people and share your singing skills, or lack of, but to sing and not catch any of the right notes and still think you’re the shizz— that’s some uncommon confidence levels right there and power to ya! There are many places one can go to see members of all three groups sing their favorite jams at karaoke, however, Copper Blues in downtown Phoenix may be the best one. After choosing a song from their extensive list, there will be no need to press play. Instead, signal your live band, The Instant Classics, and Boom—you’re part of a real rock band! If you don’t go to sing on stage, go to be entertained by those who do and be comforted by the knowledge that someone else sings far worse than you. Thursdays 6:30 – close. 50 W Jefferson St. www.copperblueslive.com. Free.

Alice Cooperstown The world of sports has regained its normalcy once again and our beloved NBA players will continue earning their millions so that they may provide a sense of pride to the cities they represent. Santa brings us basketball this year and we get a small peek of our Christmas present this week in the preseason. Phoenix is playing Denver this Thursday night at the US Airways Center and with all those people calling off work on Friday, expect some orange and purple cheer among those streets named after presidents. Watch the game at Alice Cooperstown downtown or stop in before (if you’re actually attending) to soak in some Phoenix pride as you sip on your favorite brew. The bartenders are friendly, the TVs are big, the patio is huge, and the food is way better than your average pub cuisine. They always have drink specials and if you have family from out of town in for the holidays, take them to this Phoenix-only joint and have them try “The Big Unit”, which was featured in Man vs. Food, for some kicks. 141 E. * July 16, 2004: Martha Stewart is sentenced to five months in prison (and five months of house arrest) for a stock sale. According to U.S. Securities and Exchange Commission (SEC), Stewart avoided a loss of $45,673 by selling all 3,928 shares of her ImClone Systems stock on December 27, 2001, after receiving material, nonpublic information from Peter Bacanovic, who was Stewart’s broker at Merrill Lynch. Martha Helen Stewart (née Kostyra), is an American business magnate, media personality, author, and magazine publisher and founder of Martha Stewart Living Omnimedia. She has gained success through her intelligence, perseverance, simply put; her pure resolve to bring to fruition her visions. On the cover of the May 1995 issue, New York Magazine declared her as “the definitive American woman of our time”.

Although the media widely speculated that the situation would effectively be the end of her media empire, Stewart began a comeback campaign in 2005, with her company returning to profitability the following year.
