Now there are the usual holiday productions and parties set just for the celebration of the season with fun, laughter and plenty of joy to spread around. However with Ib and his company of creative minds, this holiday classic has reached another level of adventure with fascinating performances. Leave it to Clara and her family of friends in the land of the Sugar Plum Fairy to dazzle and entertain with imaginative wonders. There is so much to like about this new magical production! Ok, let’s not rub it in on our neighbors to the east, but snow just makes the season a little unpredictable for everything. Ask Stacy Gordon (writer and director) and the cast of Home For The Holidays - their holiday storyline reads like the headlines from the Chicago Tribune this weekend, flights and trips cancelled. This leads us to a pretty funny and entertaining holiday show. You see, the Chicago Broadway Theatre company is headed to Los Angeles to perform for the holidays, but their bus breaks down in Snow, Arizona. Does it snow in Arizona? You bet, just not very often in Snow. Enter the mayor and principle of Snow with their Coyote pride and generous spirit, and you have big city meets country bumpkin for the holidays! This show is made for cute laughs, holiday music and scene stealing, which is led by the exuberant Eddie Maldonado as the mayor, and Geoff Belliston as the jovial mayor. These two host a Snow party for the CBT Company, and in the process discover a star for their company’s Christmas show, Kerry Wright, played by the beautiful and melodic Katrina Hagofsky. Kerry steals the show with her darling innocence and Broadway voice in “All I Want For Christmas”, “Winter Wonderland”, “Have Yourself A Merry Little Christmas” and “Home For The Holidays”. There’s dancing and singing and tap dancing too, with Santa and a funny reindeer to round out the holiday festivities. In Old-World Italian tradition, the Zoppe Italian Family Circus raises the tent and welcomes you into their intimate 500-seat one-ring circus on the Center’s West Lawn. “The Zoppé circus evokes something from a picture book: the clown, the trapeze, the dancing dogs, the ring and the tent. The show is frozen in time… exactly the way it’s supposed to be.” The New York Times ABOUT THE CIRCUS The Zoppè Family Circus emerged from humble beginnings more than 160 years ago to become one of the legendary circuses in all of Europe. And like many good legends, it began with a boy and a girl falling in love. In 1842, a young French street performer named Napoline Zoppè wandered into a plaza in Budapest, Hungary, looking for work. There, his eyes glanced upon a beautiful equestrian ballerina named Ermenegilda, who captured the hearts and minds of the crowd with her grace and showmanship. More important, this talented beauty captured Napoline’s

heart. However, since Napoline was a clown, Ermenegilda’s father saw him as beneath her and disapproved of their relationship. The two ran away to Venice, Italy, and founded the circus that still bears their name. Over the generations, the circus survived wars and political upheaval in Italy and the rest of Europe. Alberto Zoppè, Napoline’s greatgrandson, inherited the circus almost 100 years later. A grand equestrian in his own right, Alberto toured Europe with the circus since his youth, forging many unique friendships along the way, including one with famed actor/director Orson Welles. Welles, who was working in Rome at the time, persuaded Alberto to take a role in a small film about the circus being shot in London. Alberto was then offered a job by John Ringling North of Ringling Brothers fame, who was putting together the circus acts for Cecil B. Demille’s Oscar-winning film, The Greatest Show on Earth. was hesitant to leave his family circus in Italy for America, but North was persistent and offered to loan the family circus an elephant for the show as long as Alberto worked for him. He obliged and was prominently featured in the film.

In 1842, Napoleone and Ermengilda Zoppé founded Circo Zoppé near Venice, Italy and their vision lives on as Zoppé, a traditional one-ring European circus. Alberto would remain in America, producing circuses for Ringling and starting his own family. Together with his wife Sandra, Alberto has ushered in a new generation to continue the family tradition. Their children, Giovanni, Tosca and Carla, along with their spouses, have all been active at one time or another in the family business. Giovanni revived the Zoppè Family Circus in America three years ago, and has since been building its reputation with audiences and critics as an enchanting exhibition of traditional European circus. The show was created by Vanderbilt University professor Dr. Dorothy Marcic based on her book, RESPECT: Women and Popular Music, through which she analyzed all Top-40 female song lyrics since 1900. The show includes hits like “Boogie Woogie Bugle Boy,” “Diamonds Are A Girl’s Best Friend,” “Where The Boys Are,” “I Am Woman,” “At Seventeen” and dozens more right up to the present day. Also grating on your nerves is the performance by Melissa Leo. A lack of connection to the characters makes for a long two hours. More interesting than the central plot was how the HBO doc affected the family and the relationship of the numerous sisters. Bah humbug. (For Crust) 4 cups of graham cracker crumbs 16 oz. of unsalted butter, melted 3 tablespoons of sugar

PREPARATION: (For Crust)

In a small bowl, combine graham crackers, butter and sugar Press ¼ cup of mixture in each spring form pan Bake at 300 degrees for 8 minutes Cool and reserve (For Filling) 1. In a mixer, beat sour cream, cream cheese and sugar for 30 seconds on low 2. Then, turn up to medium. Scrape sides of bowl 3. In a separate container, combine vanilla, eggs, yolks, and heavy cream and whisk together 4. On medium speed, slowly add egg mixture to mixer. Scrape after half mixture is poured 5. Continue adding the rest of the egg mixture. Once all of its incorporated, pour 6 oz. of mixture into a spring form pan 6. Drizzle Huckleberry puree into cheesecake mixture and swirl it with a skewer 7. Wrap outside of each pan with aluminum foil 8. Pour hot water into spring form pans until its filled half way up 9. Place spring form pans into a preheated oven at 250 degrees 10. Bake for one hour. Then crack the door open for one minute and turn off oven. Close oven and let stand in oven for one more hour 11. Let’s get into Beer Styles this week by starting with a unique style, the lambic. Incredibly tart and complex from spontaneous fermentation, this is one of those beers that you either love or hate. Lambics - Unblended Lambic - A tart and sour, golden, wheat-based Belgian farmhouse ale that is traditionally brewed through spontaneous fermentation from wild yeasts and bacteria. Straight lambics are tart and acidic in character with full attenuation and no carbonation. Hop levels are quite low and aging tends to soften the sharp tart character of “young” lambics. Lambics - Faro - A blended lambic with added sugar, faros are sweeter

Lambics - Fruit Lambic - A tart and sour, fruity, wheat-based Belgian farmhouse ale that is brewed through spontaneous fermentation from wild yeasts and bacteria with fruit normally added during the aging process. Typical fruits used are framboise (raspberries), kriek (cherries), peche (peach), and cassis (courant) and the beer takes on varying shades of the fruit used. In many of the classic examples, the fruit plays a secondary role in the flavor to the traditional tart, sour, and wild lambic flavors, although there are examples of highly fruited and sweet versions (which are typically made with the addition of artificial sweeteners) available. Lambics - Gueuze - A tart and sour, golden, wheat-based Belgian farmhouse ale that is traditionally obtained by blending one, two, and three year old straight lambics. Because of the aging and blending, gueuze lambics are often more balanced and complex in aroma and flavor than straight lambics. Unlike their unblended counterpart, gueuze lambics are carbonated. Mild Ale - Mild Ales are lightly to moderately flavored and bodied English session drinking ales that are “mild” in their hop bitterness and flavor, generally low in alcohol content (<4% ABV), and of light to medium body. They can come in pale or dark (amber red to dark brown) varieties and both tend to emphasize a malty character with either a sweet or dry finish. The pale versions can be lightly fruity with a light sulfuric or buttery aftertaste, and they generally do not travel well. The dark versions often take on deeper flavors just short of an English porter (grainy, caramel,

toffee, toasty, roast, nutty, chocolate, dark fruity, molasses, or licorice) and do not make for much better travel. Several examples have adjunct sugars incorporated in their recipes, and stronger version mild ales are sometimes produced for special occasions. Old Ale - As their name implies, old ales are typically stocked or stored for long periods of time before consumption, upon which they were

traditionally served by blending the old ale with another “fresh” beer like a mild ale or bitter. Old ales could be viewed as strong mild ales that fall out somewhere in between strong bitters or brown porters and English barleywines (often overlapping the latter with only arbitrary distinctions). Additionally, these beers can often take on oak, oxidized, and sour or lactic flavors after aging. English Pale Ale - English pale ales are quite similar to and include the bitter sub-styles (ordinary bitter, special bitter and extra special bitters). In some classification systems the main distinction is whether the beer is bottled (English pale ale) or not (bitters are traditionally served on cask), although this is not universally agreed upon or consistently adhered to. Most examples of this style will be gold to copper in color with a mild, caramel-malt aroma. Hop and fruit notes are often noted in the aroma. The flavor will typically be bitter with caramel, noticeable fruity esters, and earthy or floral hops.

American Pale Ale - America’s spin on English pale ale, the American pale ale is similar to its English counterpart, but differs due to a brewer’s use of American hops, malt, yeast, and water. and covers a range of beers light brown to very dark brown/black in color. It originated in England as working class beer (appreciated, of course, literally by porters) and is believed to be the precursor to stouts. Porters range in malt, alcohol, and hop strength from mild to moderately strong. The earlier English versions were mild and highly drinkable, while the later “robust� versions can feature strong bodies, alcohol levels, and hop content. Generally, porters tend to be less burnt or roasted in flavor than stouts, although the distinction between porters and stouts can be gray. Higher alcohol strength porters (7% ABV and higher) are specifically classified as Imperial Porters. Porters - Baltic Porter - Baltic porters are a dark red-brown to dark brown-black style of beer that originated in the countries surrounding the Baltic Sea as a virtual hybrid of Russian imperial stouts and basic English porters. Most (but not all) Baltic porters are lagers and take on smooth lager-like qualities. They are typically rich in malt content, featuring in their flavors, light roasted notes, caramel, toffee, complex blends of dark fruits (plums, raisins, prunes, grapes, and cherries), molasses, chocolate, and / or coffee. Baltic porters are never burnt like an imperial stout or heavily roasted or strongly hopped like an imperial porter (hops are a minor component of the aroma and flavor of a Baltic porter, play-

ing only a complementary - if any at all - role to the rich maltiness). Baltic porters are full-bodied in mouthfeel, smooth, and can vary in carbonation levels from medium to high.

Porters - Imperial Porter - Imperial porters are a new and emerging American beer style, and are - as their name suggests - porters of higher malt, alcohol, and sometimes hop strength. They add to their base style qualities thicker mouthfeels, increased warmth from the alcohol content, and richer flavor. Many imperial porters are significantly hopped and can have alcohol levels of 10% ABV or even higher. They are distinguished from Baltic porters in that they are always ales (although some Baltic porters are ales), and are more intense in their roasted and bitter flavors.

Saisons - originated in Belgium as a summer seasonal beer, intending to be both refreshing and firm in flavor and body. The saison typically has a fruity (citrus is common) aroma that can be accompanied by a combination of spicy, hoppy, herbal, earthy, yeasty, even musty aspects. The flavor is moderately malty with an assertive hoppy balance and sometimes has peppery and spicy notes. Frequently, acidic and sour (Lactobacillus) aspects finish out the flavor profile of a saison, which can finish with a dry and highly carbonated finish. The appearance of a saison ranges from yellow-orange to deep amber and distinctively pours with a very generous and fluffy pillowy head that leaves behind some of the best Belgian lacing known to beer. Alcohol strengths are most often in the 5 8.5% ABV range, but some examples are stronger. Normally, the alcohol in

Rye Beer - As their name suggests, rye beers are brewed with at least 20% rye malt and varying degrees of bitterness, although moderate to high hopping levels tend to draw out the unique tart rye flavors in American rye ale. Their appearance can range from straw and amber to darker amber and brown colors when roasted malts are used. While rye is the most assertive malt that can be used in brewing, rye ales can still be comparable to an American wheat beer. A specific German sub-style of rye beers is the roggenbier, which originated in Regensburg, Bavaria. The roggenbier is normally brewed with less hops,

a saison fills out the flavor profile but is not warming or hot. More great styles for you to file away this week. Saisons in particular are extremely interesting beers and tend to pair very well with a variety of food. They are highly recommended for holiday meals. Next week we will try to finish up the Ale styles, maybe touch on a couple of hybrids and get ready to start on lagers. Although, something else may come up between now and then as well, so it could be completely different.

Nicole Scherzinger Breaks Down Pussycat Dolls Bickering Nicole Scherzinger says it was “inevitable” that she and her Pussycat Dolls bandmates would fight. The remaining original members of the group - Nicole, Ashley Roberts, Kimberly Wyatt, Jessica Sutta and Melody Thornton - have now gone their separate ways amid rumors of tension between the women, but the ‘Poison’ hitmaker insists they always handled their rows well. She said:” It’s inevitable that any girl group who are breathing the same airspace 24/7 are going to bicker. But I think we handled it well and were respectful towards each other.”

Nicole, the last member to depart the group, admits she has no idea why so many of the girls left the band but says she respects their choices and is glad they took the opportunity to “find” themselves. She said: “Girl power is about finding yourself as a woman. Obviously a lot of them then wanted to branch off and do their own thing and that’s wonderful.” Although the Pussycat Dolls originally started off as a lap dancing group in Los Angeles, Nicole thinks her talent and that of her bandmates helped fans to forget their roots. “The group had existed before as a dance group. Then they hired myself and Melody to come and record. I was really proud of my part in making the music. We wouldn’t have been able to sell tens of millions of albums if we didn’t have talent. We stood for fun girl power.”

Kylie Minogue Eager to Tour Kylie Minogue thinks performing live again will be “delicious”. The Australian singer, who battled breast cancer in 2005, is to embark on her ‘Aphrodite - Les Folies’ tour in March 2011 and plans to push herself harder than ever. She said: “The opportunity to perform songs from ‘Aphrodite’ is going to be delicious. It’s my favorite part of what I do. It’s gruelling, but I’d rather have that and the kind of reward it gives me. I’m not planning an interval this

time because we’re having a hard enough time choosing which songs to put in the two-hour show. And I’m breaking my three-day rule. It used to be that I could only do two shows in a row. Now we are doing three. I feel strong and ready.” As well as loving life on the road, Kylie also spoke about how much she enjoys wearing daring designer clothes. “I wore one of David Koma’s dresses in the video for ‘Get Outta My Way’. It’s black mesh with chains inside. I also love Mark Fast. I wore his frock on a show and it arrived so tiny I thought, ‘I didn’t order socks?’ His dresses are unforgiving, but hot.”
