Introduction Hi guys. I made this cookbook for those people interested in learning the recipes I use from my Instagram account. Thank you so much to my amazing followers who helped make this happen. I chose a few of my follower’s recipes to integrate into this cookbook. I am the girl behind the Instagram account bake up (@_bake_up_). I have always wanted to publish my very own cookbook, and here it is! Some of these bakes are from my lovely follower and I would love to extend thanks to those few followers. I would love to share with you my passion for baking all sorts of yummy goodies! Ready, set, bake!

Cakes, Cupcakes and Muffins These are some of my favourite things to bake, they are relatively easy and are great for a quick snack!

Simple vanilla Cake: Ingredients: 500g flour 500g caster sugar 500g butter, softened 1 Tablespoon baking powder 2 Tablespoons vanilla essence 8 eggs ½ cup milk

Method: 1. Preheat oven to 180°c fan forced. Sift Flour and baking powder together. 2. Beat eggs until smooth and add vanilla and mix in a separate bowl. 3. In a separate bowl, beat butter and sugar together until smooth and pale. 4. Add a small amount of egg mix to the cake mixture and beat well. Continue this until the egg mixture finishes. 5. Start adding flour and mixing. Add small amounts of milk and mix. Continue this until flour finishes and cake is small and creamy. 6. Pour cake mix into cake tin and bake for 45-60 mins. 7. Once out of the oven allow to cool in the cake tin before removing and placing on a cooling rack. Then you may decorate it or serve.

Luscious Lemon Cupcakes: Ingredients: For the cupcakes: 125g butter, softened 125g caster sugar 2 eggs 100g self-raising flour 1 tablespoon of milk 2 lemons For the icing: 175g butter, softened 350g icing sugar

Method: 1. Preheat the oven to 180°c fan forced. Line a muffin pan with 12 cases. 2. Using a whisk, sugar and butter until light and fluffy. 3. Sift flour into the mix. Add both eggs, milk and the zest and a squeeze of 2 lemons. 4. Mix well until smooth. 5. Spoon mixture evenly between the cases. 6. Bake in the preheated oven for 10-15 mins. 7. While they are baking, start making the icing. Whisk the butter in a bowl. Then add the icing sugar and mix. Add any leftover zest to the icing to give it more of a zingy taste. 8. Place the cupcakes on a cooling rack to cool. Once they are completely cool you can ice the cupcakes and serve.

Banana Bread Muffins: Ingredients: 1/4 teaspoon bicarbonate of soda 1/2 cup brown sugar 3 teaspoons cinnamon sugar 2 eggs, lightly beaten 1/3 cup extra virgin olive oil 1 teaspoon vanilla bean paste 1/3 cup plain natural yoghurt 1 cup mashed banana Extra 1 small banana, sliced

Method: 1. Preheat the oven to 180°c fan forced. Line a muffin pan with 12 cases. 2. Sift flour and bicarbonate of soda into a large bowl. Stir in brown sugar and 2 teaspoons of the cinnamon sugar. Make a well in the centre. 3. Whisk egg, oil and vanilla together. Add to flour mixture. Do not stir. Add yoghurt and mashed banana. Stir mixture until just combined. Divide mixture evenly among holes in prepared pan. Top each with 1 slice of banana. Sprinkle with remaining cinnamon sugar. 4. Bake for 15 to 20 minutes or until golden and just firm to touch. Stand in pan for 5 minutes. Transfer to a wire rack to cool completely. Serve.

Gooey Chocolate brownies Recipe by @bakinggalore (with their permission)

Ingredients: 1 cup sugar 1/2 cup flour 2 heaped spoons cocoa 1/4 teaspoon baking powder 125g melted butter Dash of vanilla Pinch of salt 2 eggs

Preheat oven to 180 degrees. Melt butter on medium heat on stove. Once melted turn off heat and add sugar, vanilla and eggs. Add in cocoa, flour and salt and mix Add vanilla. Place into a lined square tin. Bake until Skewer inserted comes out clean. Let cool in tin.

Biscuits and Cookies A crowd favourite since forever. These go so quickly so make lots!

Chocolate Chip Cookies: Ingredients: 125g butter, room temperature 200g firmly packed sugar 2 eggs 2 cups plain flour 1 Tablespoon baking powder 200g dark or milk chocolate chips

Method: 1. Preheat oven to 180°c fan forced. 2. Beat butter and brown sugar using electric beater until well combined. Add the eggs one by one and beat well after each addition. 3. Sift together flour and baking powder and mix into butter mixture. Stir in the chocolate chips carefully and gradually. 4. Roll spoonfuls of the mixture into balls and place on oven trays lined with non-stick baking paper slightly separated. Slightly flatten the balls until about 7cm in diameter and 5-8mm thick. 5. Bake in preheated oven for 18-25mins or until golden brown and cooked through. Remove from oven and let cool on trays. Store in an airtight container.

Traditional Cookies: Ingredients: 8 tablespoons soft butter 2/3 cup sugar 1 egg ½ teaspoon vanilla extract 1 ½ cup flour ½ teaspoon baking powder ½ teaspoon salt

Method: 1. Preheat oven to 180°c fan forced. 2. Combine flour, baking powder and salt, in a bowl, stirring thoroughly. 3. Separately, beat butter and sugar thoroughly with egg beater, then add egg and vanilla. 4. Add the dry ingredients from the first bowl gently to the butter and sugar mixture. 5. Dust both a roller and a rolling surface with flour, and roll out the dough to about 6mm thick. Use your choice of cookie cutters to create shapes. Gather up the scraps and roll out again for more cookies, repeat as necessary. 6. Place on an oven tray lined with non-stick baking paper. Bake for 8 to 12 minutes or until cookies are golden. 7. Once out of the oven allow to cool on the tray before removing and placing on a cooling rack. Then you may decorate it or serve.

Apple Roses: Ingredients: 1 ½ tablespoons lemon juice 1 apple 60g butter, melted 1 tablespoon brown sugar 1 teaspoon ground cinnamon 3 sheets of puff pastry

Method: 1. Preheat oven to 180°c fan forced. Grease a mini muffin tin. 2. Place lemon juice in a medium microwave safe bowl. Halve apple and remove the core. Cut 1mm thick slices placing them in the lemon juice as you go. Top up with water to cover slices. 3. Microwave, covered, on high for 2 mins. Drain well and place on a large plate to cool. (The apple must be keeping its shape but still be flexible) 4. Combine butter, sugar and cinnamon in a small bowl. 5. 1 sheet at a time, brush pastry with butter mixture. Fold lengthways in 2 and 2 again, to achieve a long strip. Cut on the folds so you have 4 long strips. Brush with butter mixture if needed. 6. Arrange 7-8 apple slices, overlapping along the top edge. Leave the slices slightly overhanging. Roll pastry to form a rose, place apple side up in prepared tin. 7. Repeat with remaining pastry, butter mixture and apple slices to form 10 roses. 8. Bake for 30 mins or until pastry is golden and cooked through. Dust with icing sugar to decorate (optional).

Cinnamon Rolls: Ingredients: ¾ cup milk ¼ cup butter or margarine, softened 3 ¼ cups plain flour 1 package instant yeast ¼ cup white sugar ½ teaspoon salt ¼ cup water 1 egg 1 cup brown sugar, tightly packed 1 tablespoon ground cinnamon ½ cup margarine, softened (this is separate to the other ¼ cup margarine)

Method: 1. Heat the milk in a small saucepan until it bubbles, then remove from heat. Mix in margarine; stir until melted. Let cool until lukewarm. 2. In a large mixing bowl, combine 2 1/4 cup flour, yeast, sugar and salt; mix well. Add water, egg and the milk mixture; beat well. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has just pulled together, turn it out onto a lightly floured surface and knead until smooth, about 5 minutes. 3. Cover the dough with a damp cloth and let rest for 10 minutes. Meanwhile, in a small bowl, mix together brown sugar, cinnamon, softened margarine. 4. Roll out dough into a 30x20 cm rectangle. Spread dough with margarine/sugar mixture. Sprinkle with raisins if desired. Roll up dough and pinch seam to seal. Cut into 12 equal size rolls and place cut side up in 12 lightly greased muffin cups. Cover and let rise until doubled, about 30 minutes. Preheat oven to 180°c fan forced. Bake in the preheated oven for 20 minutes, or until browned. Remove from muffin cups to cool. Serve warm. 14

Cheese Pastry Plaits: 15

Ingredients: 4 sheets of Puff Pastry 2 cups of your choice of grated cheese Dash of milk

Method: 1. Preheat oven to 180°c fan forced. 2. Cut 1 slice of pastry in half horizontally through the middle. 3. On each half cut 6 sections horizontally on each side leaving 2 ½ inches between each set of 6. Cut on the red lines show here: 4. Fill the centre section with no cuts with grated cheese. 5.

5. Start overlapping the strips of pastry starting at the bottom and crisscrossing until you have done all the strips. Don’t forget to squeeze the end so no cheese melts out. 6. Prepare a baking tray with baking paper and place the pastry on top. 7. Brush milk onto the top of the pastry so that when it cooks it becomes more golden. 16

8. Repeat previous steps until you have used all the pastry. If needed, grate more cheese. 9. Place in preheated oven for 10-15 minutes or until golden brown. 10.Let cool on a wire rack, serve when desired.

Cute Sheep Cupcakes These adorable cupcakes were first made by @craftbybridget

Ingredients: Your favourite cupcake recipe White Icing Marshmallows Black Icing Mini Marshmallows

Method: 1. Using a cupcake recipe of your choice, create 20 even sized cupcakes 2. Flatten the tops of the cupcake to create a smooth surface Sheep: 1. Cover 4 of the cupcakes with white icing 2. Place a large marshmallow on the edge of the cupcake to use as the face of the sheep. 3. Using mini marshmallows, cover the rest of the cupcake as wool for the sheep. 4. Draw eyes on the larger marshmallow.

Pumpkin Dog Treats These dog treats, made by @creatively_cooking are great for your furry friend

Ingredients: 2 cups plain flour 1/3 cup of peanut butter (make sure it has NO XYLOTIL in it so your dog doesn’t get sick) 1 egg

Method: 1. Preheat your oven to 180°c fan forced. 2. Add all your ingredients to a bowl, mix together until it forms a ball of dough. If it is too dry, add a little bit of water and if it is too wet, add a little bit of flour. 3. Sprinkle a little flour on the work surface. Then place your dough down. 4. Add a little flour to a rolling pin and on top of the dough. Then roll out to ½ inch thick. 5. Cut out shapes with your dough. 6. Place on a lined baking tray. 7. Poke holes in the middle of the treats with a fork. 8. Bake at 180°c fan forced 9. Remove from oven and allow to cool.
