Hi! I’m Rupy, the NHS GP who started ‘The Doctor’s Kitchen’. It’s a project to inspire my patients and medical colleagues about the beauty of food and the medicinal effects of eating well. I create delicious recipes and try to bring attention to the amazing clinical research behind the ingredients we all have access to up and down the country. I’m travelling the world and keeping a close eye on new nutrition research over the world, whilst juggling a job in Emergency Medicine and General Practice.

I never expected to be so passionate about natural, plant-based living. I’d always thought fruit and veg was pretty boring and left it as a side dish, somewhat of an afterthought until I overhauled my diet following an illness in 2011. I really struggled with the debilitating impact it had on my physical health, which in turn really affected my mental health.

My journey started, like many others, with my own health issues - acne to be precise. From the age of 11, it reached its peak and unfortunately no specialists were able to help me. It was by changing my diet and lifestyle that things began to improve, which got me hooked on the subject. Fast forward 25 years and I now have a BSC in Human Nutrition and a Post Graduate Degree in Nutritional Medicine. I have authored 13 books on the subject that are now in 19 languages across 22 territories. I am currently filming the second series of Eat Shop Save for ITV, which will air in summer.

My dream is to align both the culinary and medical industry. Food and health go hand in hand and it's up to people like myself to demonstrate the evidence base behind this concept and give everyone balanced, unbiased opinions on how to lead healthier happier lives using food and lifestyle medicine.

After about a year I hit rock bottom and started to look at what I could do to help myself. I became interested in health and wellness at this point and began exploring the space. It took a while to feel the impact of a big lifestyle shift, but after a few years I was able to come off my medication and have kept most symptoms at bay. Ever since, I’ve become passionate about sharing my love of plants with the world and am so excited to see the rise of natural products within the food industry.

My opinion of the current nutrition scene is a mixed one. The fact it’s become as mainstream as it has, means people are finally starting to take it seriously. However, with that comes vast swathes of fad, nonsense and uncredited advice. Thankfully it’s changing rapidly and people are demanding a more evidence-based approach, which I feel is where the future will continue to point.

Yeah, But How Do You Milk an Oat? BY EMILY BAIN | OZONE COFFEE ROASTERS Being a (self-diagnosed) lactose intolerant Kiwi Millennial working in the specialty coffee industry (who once had a ‘blog’ about hospitality) I have much authority to offer up my opinion when it comes to alternative milk products. Having now opened the door to a whole world of non-dairy possibilities (think chocolate flavoured coconut rice milk) we are now more aware than ever, of what exactly it is we are consuming, and where our products are coming from. The move to non-dairy is an obvious move for an industry, which is focused around the environment and sustainability. Ultimately, some alternative milks have less impact on our planet than dairy, and that’s something we certainly can’t argue with. From the origin of coffees and the care for our farmers, through to the London Living Wage and what we do with our leftover coffee grinds, our industry demands traceability and transparency. It’s no wonder someone gave up and just learnt how to milk an oat. The growing number (and varied range) of alternative milk products appearing on menus is proof that the world is learning more about what we are consuming. So, understanding the origin of our milks and the process they go through before hitting the cup is absolutely

paramount. We are demanding that they are locally sourced, free-range, organically fed oats with zero traces of fat, sugars and fibre. As a community and industry, we are in a place where we are all motivated to push each other (and ourselves) to be and do better, until the cows come home. At Ozone, we meet with people every day who are excited and eager to make a difference. The ever-growing alternative milk industry is one we are honoured to support and encourage (although I’m sure it’s only a matter of time before we get told that our coconut milk consumption is the reason we can’t afford houses).

What’s Intermittent Fasting? BY DR. ADAM COLLINS | FORM There has been much recent interest in the use of "fasting" as an eating strategy, either to be healthier, lose weight or even live longer. Fasting might be popular now, but it is not a new concept. In humans, much of our understanding of the effects of fasting have come from observations of religious practices (e.g. Ramadan) or individual protests (e.g. hunger strikes) or as a consequence of natural and man-made disasters, brought about by drought, famine and/or war. Coupled to this there has been a wealth of experimental insect, invertebrate and animal studies and a more recent array of human intervention trials.

The cumulative recent interest in fasting mainly stems from seminal work in the 1930s on rodents that demonstrated that energy (calorie) restricting animals leads to a longer lifespan in those animals, compared to those able to eat freely. This was reinforced through observations in other species and provided the basis for the hypothesis that energy restriction can relate to greater longevity.

Practically speaking, fasting manifests as individuals undertake periods of intermittent fasting, interspersed with periods of non-fasting or free (ad libitum) eating. The obvious inherent feature of fasting is the restriction of energy (calories). This may still be the case even if only fasting for brief periods (i.e. 2-3 days a week or a certain number of hours per day). Indeed, when looking across a whole week, intermittent fasting causes people to typically eat less calories overall even when eating anything they like during nonfast days or times. This has made intermittent fasting a popular weight loss diet, popularised by the 5:2 or fast diet.

An Interview with the Founder of Deliciously Ella

FROM FOOD BLOG TO THRIVING START-UP BUSINESS If you could best describe Deliciously Ella in three words, what would they be? COMMUNITY - Deliciously Ella started in a very personal way through sharing with people. It has always been a real two-way conversation and the community is what makes it what it is. DELICIOUS – I hope! It’s really my biggest aim because there’s a big misconception that healthy and plant-based food is boring. POSITIVE – I hope it’s a positive tool in peoples’ lives, that’s my real aim. How did the Deliciously Ella journey first begin? After my second year at University I got very unwell with something that affected my autonomic nervous system called postural tachycardia

syndrome. It was a pretty miserable time for me. Due to stomach and low-energy symptoms of my illness, I became very interested in diet and started researching it. I was really inspired by other peoples’ stories that I read online and decided to change the way I ate. In 2012, a friend of mine suggested that I should blog about my new diet. This was when blogging was still relatively new, so I started a Wordpress site and began to share the recipes that I cooked. At what point did things really begin to kick off for Deliciously Ella? The real game-changing moment was when my book came out; that was when I stopped being Deliciously Ella and became its guardian instead. I then met Matt who is now my husband and business partner. When we joined forces, the opportunity of things we could do together was

very exciting. He covered the more practical and operative side of the business, whereas I continued to look after the creative brand side of things. Off the back of that, together we decided to turbo charge Deliciously Ella and make it the best resource we could.

I want to inspire people to eat better and encourage them to eat their fivea-day, and most importantly, get excited about it.

How did it feel when you realised you were beginning to help other people and change their diets for the better?

I realised that by turning into a headless chicken and being frantic, I’m not helping anybody – it’s not a positive way to be. Every morning I do an hour of yoga - It’s the only time when I don’t have my phone and can switch off from everything else. It gives me a fresh head, mind and makes me ready for the day ahead!

It was surreal. I still don’t think I totally get it. Every now and then I see one of my energy ball wrappers on the street and think, ‘somebody ate that, and I made it.’ I don’t know if you ever get used to the fact that people are so connected with your brand. What real challenges have you faced so far? Learning to deal with vulnerability – my name and face are in everything we do and not everybody’s going to like you. Learning to be ok with that and continuing to put yourself out there has been quite challenging. Sometimes not knowing where my place is - finding a way to separate my ego from the greater mission is always a very big challenge. When Matt and I started working together, suddenly he was in control of half of the business. From day one, he said we needed to hire a team that made us the dumbest people in the room, by hiring people who were much more experienced than us. What do you believe separates Deliciously Ella from other start-ups? I think what differentiates us is it was a complete accident. It started out as a very personal blog where I had nothing better to do because I was on my own most of the time and would reply to everybody that engaged. I think because of its genuine intentions, it has a real soul.

How do you remain headstrong whilst managing your own business?

What advice would you give to somebody who wanted to turn their blog into a thriving business? Ensuring you or somebody you work with can really support it commercially. Make sure it’s feasible for the long term and don’t be afraid to ask for advice. Do something that feels authentic to you. Ask yourself: What can you really drive? How can you do something different to everybody else? You do see a lot of other things come out that are the same, and that’s because what already exists has done well. It’s about thinking how can you step this up even further. Live it – When you’re truly passionate about the industry your involved in and it becomes part of your life, you’ll be able to see the gaps. With the rise of so many female entrepreneurs, how do you feel to be a part of this movement? It’s really exciting! It’s amazing to witness the number of younger girls who get in touch who are very inspired by this. I believe that you can’t be what you can’t see – if you don’t have these people around you, inspiring and giving you ideas, it’s tough! I was initially very embarrassed to own the title of entrepreneur, however Matt

What I’m mostly excited about is our new book, coming out later this summer. I’ve spent so long writing this – it’s comprised of 15,000 words! It includes all our stories – all the ups and downs – highly requested recipes from our delis, plus much more! We’re also working on lots more new products which will be coming out later in the year, so definitely watch this space! What three pieces of advice would you give to somebody to be the best version of themselves? 1) Be optimistic – life can be quite stressful and it’s easy to focus on the negatives. As soon as you begin to focus on the negatives, that’s all you will see. 2) Be grateful – it helps you create happiness because there’s always things to be grateful for, no matter how challenging things can be. 3) Find time for yourself – as I said, yoga is my time. It makes me a better person as I’m in a better headspace for everybody else. It’s about finding those things that are right for you that refresh the mind.

Spending the first seven years of my career working on Harley Street, I made it my goal to bridge the gap between medicine and fitness. I believe exercise should be both prescriptive and performance driven, for optimum functioning of the body and mind. By surrounding myself with thought leaders and world class experts over the years, I have been able to take what I consider to be the best elements of many different approaches to wellness and implement them into my own personal approach. Over the years I have founded an international health retreat, consulted on many projects in the hospitality and corporate wellness space, become the resident wellness expert and trainer at Rosewood London and have been the fitness columnist at Esquire magazine since 2012.

My fitness journey started after I gained the Freshers’ Fifteen at University - the fifteen pounds you put on from living on a diet of vodka and deep pan pizza. From there on, it was a slow journey of education and growth. Ever since I have been working as a personal trainer for three years and in the fitness industry itself for five years.

When I first began my fitness journey, it was all about seeing how far I could push my body. I used to hang around with the stunt teams on film sets and watching them really made me wonder what my own body might be capable of. To this day, I still train to become the best version of myself and encourage others to do the same. This has led me into working as a trainer for Barry’s Bootcamp and Nike.

My life is wonderfully hectic: managing two businesses and a busy social life is hard. Plus, I now have a baby on the way! The one thing that keeps me focused above all others is my training. Being physically and mentally as strong as I can possibly be, makes every other life hurdle and challenge that much easier.

I currently combine bodyweight HIIT workouts with regular strength training as well as occasional runs, not forgetting some at-home stretching to support my recovery. I feel so lucky to be a part of the fitness industry today as it is incredibly diverse. There is something for everyone and the training methods are developing every day, I cannot wait to see where it goes! Fitness is my passion and not only benefits my physical health, but my mental health. It provides an outlet for me - a time when I can forget about everything else going on in my life and just focus on looking after my body – it’s my personal form of self-care.

Wellness is preventive medicine. We all have the ultimate power to heal ourselves. The paradigm is shifting, yet there is a lot of work to do in this great transition. We can certainly feel the room for change, with great views over the ocean of wellness. Our deeper nature has knocked at our door and we have finally let this dear friend of ours in.

I didn't always come to yoga for the reasons I do now, but over time it has been a great teacher. The more I learn about myself from the practice, the less it becomes about my physical body or fitness. I use it to connect to myself because that is at the heart of our wellbeing. There is so much inspiration around us, but the only way to truly serve yourself is to listen inwards. For me yoga is an opportunity to disconnect from external sources and tap in to the internal.

We’re constantly in search of a sweet spot where everything is just right: enough sleep, a calm mind, healthy diet and the right mix of work, life and love. But for me, I have a different definition. For me, I’ve always had many exciting opportunities in the wellness community and have grown into a place where I can teach, speak, write, present and be a part of our every growing community in many ways. Wellness is appearing more and more into traditional healthcare and our own beliefs. Through breathing, the elements of nature, cold exposure, good food and consciousness, I see the WimHofMethod (see page 32) getting to all corners of the world. Endorsed by research and non-speculative results, The WimHofMethod shows we are capable of so much more than we previously thought. Taking away stress, and bringing deep relaxation based on a new paradigm, the new wellness wave is already gaining terrain within our daily awareness, just as it should.

It’s all very well spending time working with the practice, but it doesn’t mean much if we can’t then apply it in the rest of our lives. So that is what I love to practice and share - getting in touch with ourselves through the practice of yoga so that we can be in the best position to deal with whatever it is that life throws at us. My favourite thing is working through challenges that I face on the mat, knowing that it’s equipping me to deal with whatever experiences I come up against off the mat. That is where the yoga counts.

Since the wellness boom, I’ve seen the landscape shift from parts unknown to the centrepiece of our culture and conscious evolution in this city. For those always in search of balance, it's understanding that there may be a different way to experience it. Rather than searching for a point where it all comes together, I believe that it’s an ongoing adjustment - a needle that shifts ever so slightly day to day, because that’s how life is. Balance is about adjusting to change as it comes and moving forward with the least amount of resistance.

Scoping Out The Wellness Trends of 2018 BY NATALIE BLOW 2017 saw it all – kombucha-based cocktails, protein-packed insect snacks and commuters on scooters - there’s no doubt more and more of us are starting to live healthier and more balanced lifestyles. So what does 2018 have up its sleeve? The wellness experts behind Balance Festival have laid out their predictions... 1. Sound Healing This year it’s all about sound healing. The ancient tool is said to use rhythm and frequency to shift our brainwaves into a state of perfect balance. It’s practice involves listening to percussive instruments such as gongs or tuning forks, which can place you into a meditative state - moving us from a normal waking state of consciousness (beta) to our relaxed consciousness (alpha).

2. Mainstream Meditation Meditation and mindfulness are buzzwords for 2018, for all the right reasons. Yogis have been practising meditation for millennia, but the rest of us are just starting to catch on. Apps like Headspace have really helped to make meditation mainstream, and we’re beginning to reap the benefits as a nation. In 2018, we’re going to see meditation classes, studios and events cropping up outside of London. 3. Plant-Based Beauty In 2018 we’re going to see plantbased beauty becoming more commonplace. Brands are embracing plant power when it comes to beauty products and treatments; from avocados for your face (not just your toast) in the form of oils, to apple cider vinegar toners, to hemp body

creams and turmeric natural skin glow, these are the new superfoods for the skin. 4. Corporate Wellness And Mindfulness Mental health awareness has exploded. With key CEOs recently opening-up about their own mental health, the workplace is increasingly becoming a judgement-free space. So much so, various companies are awakening to its huge prevalence and are looking for solutions to keep their staff healthy in mind and body. There’s no doubt 2018 will see an increase in corporate business mental health therapy programmes to aid today’s overwhelming levels of stress, anxiety and depression.

An Interview with the Iceman, Wim Hof

In between peaking Mount Everest in his underwear and desperately finding his way underneath arctic ice sheets, Wim Hof squeezed in some time to speak with us about Mental Health. You have 26 world records, what’s your most extreme record to date? To be honest, they all need full commitment – I never knew what the outcome would be. But I most impressed myself with my swim under the Arctic ice. Going under the water and getting lost under the ice was claustrophobic. I was under there so long that my retinas froze! The thing is, I never felt the agony of drowning or dying, and that is the most amazing part! How did you manage to survive getting lost under an Arctic ice sheet? The combination of my mind being very determined, together with the breathing, made my alchemy completely in control. In this moment, I found out that I was not experiencing agony, nor was I drowning, I was just fading away and going to sleep. It sounds like this was a near-death experience for you... Oh yes, without doubt. I conquered my fear of dying. I saw and experienced something else that has since stayed with me. There is a lot more knowledge than besides what the books are writing about. Nature has the answers of what we still see as questions. We still see impossibilities. What is your ice-cold method? A cold shower a day keeps the doctor away! It enables us to access the depth in our physiology of the way we were all built, that which makes us alive. Our wearing of clothes and comfort zone behaviours have stunted us - we don’t live by nature anymore, but our nature still lives within us and it wants to be fed. *We have found a specific way to stimulate this through breathing techniques that awaken our deep physiology it takes away the stress on cells on a biological level. The vascular system is stimulated and invigorated and this helps the heart rate go down by 20-30 beats per minute, ultimately the stress will go. *Check out Wim’s free course on his website. How should somebody approach their first ice-cold shower? Never get straight in there. First do the

breathing exercises that make your body alkaline and then your body can control and react directly. We are made up of 100,000km of capillaries, arteries and veins and their function is best stimulated by a cold shower. In turn, the heart becomes healthier because it does not need to pump as much - there is less cortisol in the body. Ultimately, we can live to the fullest and become spiritual beings. When we become optimised we become enlightened. How did you first discover healing through nature?

go up into the brain stem and activate the periaquaductal gray hemisphere – the most primitive part of the brain stem in which we had no control. However, now I have shown that we can control this entirely. These breathing techniques ultimately activate the opiates and cannabinoids in our brains. In effect, pain can be reduced and feelings of utter euphoria are created. Through simple breathwork techniques, people learn to control their pain and their brain activity and can beat mental disorders.

I was depressed for years due to emotional grief. My wife took her life in 1995 - she jumped from the 8th floor down and I was left alone with four kids afterwards. I lost the love of my life. I was not only heartbroken but it depressed everything. My kids made me survive but nature healed me.

What advice would you give somebody with anxiety/depression to keep headstrong?

Can the WimHofMethod help treat mental health, anxiety and depression?

Right now, we are battling and will change mental health care. Those are not my words, those are the words of the professors. We have now completed studies on inflammation, chronic pain and patient trials on rheumatic conditions that are inflammation based, with spectacular results. Presently, more studies are being completed and will be ready for publication soon, and then we will be able to get into mainstream and share our findings. Finally, we will be able to show people that we are all built to be happy, healthy and strong – we all have that innate capacity. That is much more exciting than climbing Mount Everest backwards in my shorts on my hands!

I am currently working alongside neuroscientists pioneering to beat conditions like bi-polar, depression, anxiety and trauma. It’s only a matter of time now. In brain scans I’ve showed how to activate certain parts of the brain which enable us to tackle such out of balance conditions. It’s all due to inflammation - coming from the gut and going up into our nervous system, through the blood, into the brain and through the brain barriers, and then we call it depression. Depression deregulates hormonal homeostasis and knocks us out of balance. We now have a way to rebalance that and reactivate those parts of the brain – the prefrontal cortex and insular. Whenever stress comes into the brain, we are able to look at the stress, be with it and make change - from stress to stress-less beings. What simple technique would you advise somebody with anxiety, depression or bipolar to incorporate into their every day? Whenever the condition is coming, you can feel it. You know at this certain moment – it’s the chemistry. If you do these specific breathing techniques, you will be able to manipulate the pressure rising and alkalise the blood. It helps you access the nervous system,
