The Mag was kindly invited by chef Raymond Saja of the cliff top located restaurant Di Mare to come over and experience an evening not soon to forget including fresh oysters, excellent wine and the unforgettable descent from a James Bond style elevator to Karma Kandara’s private beach club. As for those of you who have had their try of Western-style dining, including the popular fast-food outlets, this months ‘The Ten’ features ten authentic Balinese dishes you (most likely) haven’t tried yet, including a medieval looking pig on a spit called Babi Guling (and no, we cannot be held responsible for Bali Belly, more info on page 44). Our good friend Mr. Randy Wartold, who became instantly famous after his Ego Trippin’ feature of last month, will start to tell the story of how a single British man arrives in Bali in the first part of Welcome to Bali; The Arrival. Mannekepis or ‘Manneken Pis’ means ‘little boy peeing’. It’s a landmark of Brussels - Belgium. There you can find a tiny statue of a peeing boy and it serves as a fountain, where water is coming out of his ...you know what! The restaurant in Seminyak has a replica of it, so go check it out. There are several legends about this cute little boy, but maybe this a strange question... ever heard of Google...? 12

An interview with the Baru di Bali TV host Dawn TM: So Dawn, where exactly are you from? D: Depending on what you’re looking for, I can be from where ever you want me to be from, baby... TM: Um... OK... (we all looked at each other and realized this was NOT going to be an easy interview) Are your folks Indonesian or westerners? D: Both of them are mixed, Indonesian, Chinese, Dutch, Jewish... TM: Wow, that’s quite a mix... And do they live with you here in Bali? D: Well, it’s complicated... My mom lives in Jakarta and my dad was abducted by a UFO... I’m assuming he’s been a product of their testing since they took him... Poor guy... We pray every night before we go to bed that the Martians will return him to us one day... (We couldn’t tell if she was being serious or not but she definitely was not laughing. We needed to be very careful with what we said next)

Yeah, I love it, who wouldn’t really? Great hang out spots, an awesome range of restaurants to choose from, the beach is just a bike ride away... TM: We totally agree with you. So, you’re from Canada then? D: Well, I’m not really sure where I’m from.... (We were all sitting there looking at her expecting her to elaborate but instead realized 10 seconds later that, that was the end of her sentence. We decided to push a little further)
TM: What do you mean by that, Dawn? D: I’m sorry? What do I mean by what? TM: The thing about where you’re from. D: What thing? Sorry, I’m not sure I follow. (It’s too late, we lost her. It’s the most bizarre thing, during shoots she is so professional and seems so normal. I guess you never REALLY know the people you work with...)

Please making sure you collect all luggages (longer pause) from the overhead lockers and wait for the plane come to complete stop before ...”
By now it’s too late and the mad rush to jostle and queue in the aisles is underway. Lemmings. I never understood why people do that. It’s not like you get off the plane any quicker. She finishes. “Welcome to Bali!” Pan to the most luscious, brilliant white tooth smile exquisitely painted into the soft olive features of Venus herself. I smile back just knowing (more like hoping) she was looking at me and not the 150 other poor souls sentenced to the long haul economy class experience. I’m sure it’s a mad scientific

experiment to see just how much crap people can put up with. “Aha Dr. Plonker, your theory on the effects of neuron discomfort receptors is actually making the airline more money. Keep up the good work!” You’ve gotta smile. Such beautiful people on these long haul flights from the UK that they are forgiven for getting the welcome speech ever so slightly mixed up. Hey, I understood what she meant. Didn’t you? Anyway, she got the right mix for breakfast Bloody Marys this morning and they are surely the best way to fly.

32 degrees? Man. I left London yesterday, or was that the day after tomorrow, and it was a wet and miserable, bone sapping 6 degrees. The heat. That’s one of the first things you notice. Escaping from the cocoon of the 747-400’s air conditioning the wave of warm air almost takes you by surprise. 32 degrees? You don’t really know what that means until the oven door opens and with the blast of hot heavily humid air come the walls of smell and classic Vietnam war movie sound tracks. Some you recognize but a lot you don’t.
Why are people smiling at me? Still, it’s a relief after spending the last 16 hours squashed between Mr. and Mrs. Flatulent-Tolerant on one side and the always over enthusiastic and pathetically idealistic somewhere over the rainbow gap year students with the latest and improved edition of the Lonely Planet Guide to Bali and Lombok on the other. I wonder if the contributors to the latest and improved edition did what the South American guys did for their latest and improved edition and wrote it at home. They couldn’t afford the airfare from the pittance of pennies usually deemed acceptable for writers. Maybe they figured it best to spend what they did get on a sticky quarter and a few pints of Yorkshire’s best? Boot up, fire up, look at some postcards and dive into the Rough Guide for inspiration. Nobody will know the difference. So, this is what 32 degrees feels like at ten in the morning. Great! Now what? I’ve done my online research, blogged and chatted (I must remember to

I heard that a friend of mine’s sister’s boyfriend’s best mate once came on holiday here and never left! How could he do that? The tourist visa thing only lasts for a month. Anyway, I’ve got four weeks to explore, travel, immerse myself in the culture, see temples (there are millions of them apparently according to the most popular travel blogs) eat suckling pig (I’m thinking medieval style on a spit, crispy brown skin and an apple in its mouth) and of course, party (I hear there are a few clubs and bars and full moon beach raves are totally wild and last for two weeks). Strangely enough all thoughts escape when I see my name being held by a smiling neon Batik shirt. It’s like in slow motion. He smiles a warm and genuinely welcoming smile and a ridiculously attractive girl dressed in a figure hugging sarong gently places a garland of the most fragrant white frangipani flowers around my sweaty neck. And she smiles the same smile as the stewardess. Welcome to Bali! I am in love. Intoxicated with the frangipani perfume and the bombardment of sights, sounds and smells I literally float off to my waiting air conditioned SUV. Time already has a different meaning and maybe four weeks isn’t going to be long enough. I think I’m going to enjoy this holiday.

The Mag • Elsewhere Mosquitoes are always circling around your ankles. Gecko’s are in every corner and within the blink of an eye, they’re already gone. Little creatures are everywhere in Bali. They’re so common, that basically, nobody is really bothered by them (ok except for the bites). I guess that is what BAE systems, a British global defence company, had in mind when they came up with the idea to develop tiny robotic insects, which will be a great help when researching dangerous territory or complex terrains such as mountains and caves. The BAE is now in full development and the first prototypes robots will be flying or crawling for the US army by the end of this year. Those tiny invaders will be featured with minuscule cameras or sensors so they will be able to detect the presence of chemical, biological or radioactive weapons therefore, creating a ‘safer’ environment for the troops. BAE systems already signed a $38 million agreement, that will form an alliance for a duration of five years with an option to extend for another five years. When the developments are at full speed, one single RoboBug will not cost more than a mere 200 US bucks. So who knows, maybe within a few years you’ll have your own iBee with cam, so whenever your lover is telling you that he or she has to work another three hours, send iBee over and sting whenever necessary.

Di Mare
The Bukit (means Hill in English) is Bali’s current buzz-area for all sorts of highend real-estate developments. Now there are different types of developments; sole standing mansions and complete luxury holiday destinations perched high above the Indian Ocean, one of the latest additions to the growing number of Bukit-located holiday destinations is called Karma Kandara. To be clear; this time we’re not going to feature Karma Kandara as a holiday retreat, but its wonderful sidekick; the Di Mare restaurant envisioned by award winning New York chef Raymond Saja. Recently, The Mag was kindly invited by chef Raymond of Di Mare to come by and experience true cliff top fine dining. So about a week ago the four of us jumped in our car for a twenty minute ride up the hills of Jimbaran towards the area of Ungasan. Honestly the place was a little hard to find, as Bali yet has to introduce GPS navigation systems. And you know what? It’s good that way! We had a fabulous time at Di Mare and somehow I would be totally bummed if one day we decide to go back and have to wait for hours to get in. Definitely, Di Mare is one of the best and finest places in Bali we have been fortunate enough to visit lately.

Stepping down a pathway of Balinese limestone overgrown by tropical plants we arrived at the reception area of Di Mare where we were kindly invited into the intimate open bar area overlooking most likely one of the worlds most spectacular infinity pools. Presented with our first glass of wine, we had a chat with Raymond explaining to us the future direction of the new Di Mare restaurant and tonight’s wine dinner with speakers from Gravitas Wines of New Zealand. The main building of the Di Mare restaurant seems to be ovally shaped as one giant fish overlooking the Indian Ocean. Our suspicion that this Mediterranean restaurant might be seafood inspired appeared to be true when we were invited to the lower located terrace to come and taste the amazingly tasty oysters freshly flew in to Bali. Having a chat with some of the other guests we decided that we should find out where the massive inclinator leaded. Served with another fresh glass of the outstanding New Zealand produced Gravitas Sauvignon Blanc 2006 we stepped into the white inclinator and descended to the private beach club Namos, which is part of the Karma Kandara resort. Strolling around the intimate torch lit beach for a few minutes sipping our wine we decided it was time to go back up and discover tonight’s menu at Di Mare.
the Margret Duck Breast, lightly-smoked Celery Root and Pickled Cherry Gratin with Spinach Black Peppercorn and Vanilla Gastrique went perfectly with the 2006 Gravitas Pinot Noir. We finished off the dinner with the dessert, a study in Roquefort, Pears and Walnuts: Bavarois with Pear Chutney and Walnut Tuile, Terrine with Riesling Poached Pear and Walnut butter and finally a Soufflé with Roq-Honey Ice-Cream candled walnuts accompanied by the 2006 Gravitas “Hugo’s Delight” Late Harvest Riesling, which we continued to drink as the evening went by. Six entertaining hours after arriving at Di Mare we found it was time to return home. The thought of next day’s work seemed suddenly less appealing as the alternative; staying behind with the other guests at this new tremendous and luxurious resort. Who knows, maybe next time?
Served with another fresh glass of wine, we stepped into the inclinator and descended to the private beach of Karma Kandara, James Bond Style Back up the cliff, Raymond invited us to our table where we were served our amuse, consisting of a Tomato Sorbet, Parmesan Tuile and Warm Goat Cheese. While the night’s guest speaker from Gravitas explained to us about the 2004 Gravitas Reserve Chardonnay we were about to be served, we discussed the fact that an evening like this night should be a permanent fixture on Di Mare’s calendar of events. Calling out chef Raymond from his busy kitchen, he confirmed that he indeed planning to organizing a monthly wine appreciation dinner at Di Mare. (Information: Di Mare, 0361 708 800) Our second course served was a pan-roasted Alaskan Halibut with Potato, Pumpkin and Portabello Hash truffled Chicken Jus. By the time we were halfway through the course, tonight’s guest-speaker from Gravitas Wines got us up to speed and passionately told the story behind the wines of the night. A good choice of Chef Raymond to combine the New Zealand Gravitas wines with his culinary creations of the night as the third, the main course, The Mag

Surely you noticed that Bali has changed a lot in the past 30 years ya? “I think Bali has changed a lot since I first came here, good and bad changes. The good thing is a lot of people are making money in Bali now. The bad thing is, Bali is not so Bali anymore, there are many problems caused by too many bules here. Nowadays there is almost no land or businesses around Kuta owned by Balinese, and that is just sad.” I guess so… but there’s still something in Bali that hasn’t changed to make you keep coming here, right? Perhaps the beaches? Are they any different than the ones in Hawaii? “Well, Bali’s beaches are different with Hawaii’s. It’s like you’re looking at two beautiful girls and you know both of them are beautiful, they’re both beautiful in their own ways.”

Last month, on the 15th of April 2008 Will Goodman set a new Guinness world record™ for the ‘Longest open salt water scuba dive’ on the island of Gili Trawangan, Lombok, setting the unofficial new world record time on 33 hours and 34 minutes. The aim of Goodman’s dive was to raise awareness to the Gili islands whilst raising charity money in sponsorships for the children at the local school on Trawangan Island. This huge feat of endurance saw Will Goodman faced with strong currents, a long 12 hours overnight in the dark, while constantly facing the challenge of changing equipment to replenish his air supply and health risks like potential hyperthermia.

The coordinated support team for this world record included 32 divers, 8 official witnesses, numerous tank fillers, boat captains and crew, medical staff, and team leaders. A documentary to be released later this year was made by Red Pepper Productions showing an insight into why and how Will Goodman achieved this record and a unique view at the way of the life for the local children on the beautiful island of Gili Trawangan.

Bali Through a Lens Bali, a Perfect Instant In life there are magic moments; times when everything seems so right, so round, so balance, truly perfect instants. When we are lucky to experience that unique, inspiring second, it becomes part of ourselves, memories we cherish forever. To me Bali seems to be full of those awe, almost unreal moments and it has become a custom of mine to try to collect them. The secret, to keep eyes and heart open, to slow down and enjoy the Balinese at the simple fact of daily living. I took this picture in Padang – Padang beach, this fisherman seemed to really enjoy the trying, I was observing him, waiting for that perfect magic flash for a long time, he patiently waited, tried, waited and tried again. Richard Lewis, hero When the surf is up, Kuta Beach can be deadly…tourists drown there all the time, not realizing that wading out even to knee depth can get you into a vicious rip current that will sweep out to where the waves are breaking. Over the years of surfing there I’ve pulled in a few people. One day on a high tide I was walking down the steep part of the beach just at the water’s surging edge, my surfboard under my arm. A topless, big-chested European woman was only a few steps away in the water, trying to get back to the sand against the current. In just a few seconds, I could see her expression change from confusion to worry to fright as she struggled. “Help me!” she cried. “Somebody, help!” Well, I was right there and since she was so close I held out the nose of my surfboard for her to grab on to. Which she did, except she didn’t let me pull her out. She yanked me into the water and threw away the board to wrap her arms around my neck, still yelling “Help me, help me,” but her voice muffled as my ears were buried between her bosoms. I nearly drowned. In my own panic, I managed to extricate myself with some sort of judo move that flopped her onto the sand. And then I had to go swim after my board. After I retrieved it, her husband came up and thanked me. She did too, still topless, with arms spread wide to hug me, but I quickly backed away, saying it was fine, it was okay, glad to be of help.

Balinese Dishes you haven’t tried (yet)
1 Babi Guling / Suckling Pig
Babi Guling is the most iconic and famous dish from Bali. You can find Babi Guling restaurants (or stalls) almost everywhere in Bali, just look for the sign of an impaled pig from rear end to mouth. Babi Guling is made of a whole young pig stuffed with various spices and roll-roasted for 3-4 hours on top of a coconut husk fire. One serving of babi guling usually consists of the dry and crispy skins, diced babi guling meat and the spices from inside the babi guling.
2 Lawar Lawar is Babi Guling’s sidekick and is usually served during traditional Bali ceremonies. The main ingredients can be turtle meat, coconut or even mango (huh?), but the spices are of complex ingredients. The main ingredient is chopped into small pieces and then cooked with the spices. I heard one of the ingredients is blood, thus resulting in the red color that lawar usually is. But that is the traditional way, these days you can find the off-white colored lawar that is bloodless for those of you that are adventurous, but not quite ready to try a dish that consists of raw blood.

Urutan
Ngelawar (the skill to make lawar) is carried out proudly because not many Balinese men can do it, because mixing the right ingredients is a very difficult task.
Now you might be wondering if suckling pig has its inside stuffed with spices and vegetables, where do the insides go? Do they throw it away? Nah, they make urutan out of it. Urutan is sausage ala Bali made of chopped pork encased within pig’s intestines. Coconut fiber is used to fasten the ends of the intestines and then usually local Balinese would hang the urutan on a tree (to prevent dogs from stealing it) for approximately eight hours before frying and serving it. Rumor has it the drier it gets, the better it tastes.

4 Jukut Ares
Here in Bali we do eat trees, banana tree for example (even though we don’t eat the leafs). Jukut ares is made of young banana tree mixed with various meats such as (again) pork meat. The young banana tree trunk is chopped and boiled in spicy water resulting in a soup-like culinary experience.

Jukut Nangka
Jukut nangka is young jackfruit soup with coconut milk. Unlike most Balinese food, jukut nangka is not a very spicy soup, in fact it’s mainly salty. The soup is boiled for many hours, causing the soup to be concentrated, i.e. very salty but also very tasty. The jukut nangka is served in medium size slices and with a lot of kuah (soup).
6 Sate Lilit
Sate lilit is made of seafood, minced to a paste like state before being put back together around the katik sate (satay stick) creating an interesting seafood taste. As most of Balinese food, sate lilit is also hot and spicy because its spices are made of birds-eye chilies. The sour taste comes from lime leaves and lime juice mixed in the spices. A lot will agree if we say this is the best there is, perhaps the finest tasting satay in the world.
7 Rujak Kuah Pindang
Rujak is Balinese fruit salad, usually it consists of unripe mango, jilama, pineapple, cucumber, ambarella and star fruit (it can be any unripe fruit really...) sliced to thin pieces. The special sauce for rujak is called bumbu rujak; this gives a sweet sour and spicy fruit taste. The bumbu rujak consists of coconut sugar, tamarind (asem), shrimp paste (terasi), salt, small green and red chilis. Another type of rujak, that even most Indonesians outside of Bali don’t know of, is rujak kuah pindang. Pindang is a kind of fish, and the Kuah pindang means the broth of the fish that comes from the boiled fish. So yeah, if you haven’t tried rujak kuah pindang before, you should be prepared to taste a mixture of many different tastes all at once.

Plecing Kangkung
Kangkung is the Indonesian word for swamp cabbage, a very common vegetable consumed by locals. Swamp cabbages are hand-picked and sliced to small pieces, then boiled. The plecing kangkung is served with very spicy and hot sauce made of chili, shrimp paste, peanuts and lime juice. The fact that most girls like plecing kangkung (and rujak) is still a mystery yet to be solved.

Tum
Tum is made of various meats minced to very very small pieces mixed with spices and encased with banana leaf then steamed for two hours. Tum is served to accompany nasi, we have to peel the banana leaf first before we can enjoy the spicy tum (of course lah, did you think you were going to actually eat the banana leaf?)

Ayam Betutu
Ayam betutu is made of a whole chicken stuffed with spices and cassava leafs. Originally, the method of roasting the chicken was to wrap it with banana and coconut leaves, put it inside a hole in the dirt and then fire is set on top of the hole for 6-7 hours. But if you go to a Balinese restaurant today, don’t expect to see them using this method. After all, it’s 2008. There is also a different version: Bebek Betutu. In this dish the chicken is replaced by duck.

BONUS - Arak & Tuak
Arak is the wine of Bali, made from distilled Tuak. It’s the most common alcoholic beverage you can find in the villages of Bali. Arak is very strong, looks like clear water, smells like... rubbing alcohol and it doesn’t taste good. Drinking pure arak is a challenge for people, but for less of a challenged, people usually mix arak with other liquors such as brem (wine made of rice) and soft drinks. You’ll find that these days many restaurants and clubs use arak in their cocktails. Tuak is a signature beverage from Bali made from the sap of flower buds of many kinds of palms. The taste depends on how long the tuak has been kept. Tuak manis (sweet tuak) is the kind of tuak that is fresh from the palm tree; it tastes sweet and has less alcohol. Drinking a lot of Tuak manis has been said to cause many stomach problems such as flatulence and diarrhea. The tuak wayah is called wayah (old) because it’s kept for some time before it’s consumed, like wine, the longer you store it the better it tastes.

STAY
HEALTHY :) Great, you have finally arrived in Bali! Got all your plans sorted out? You probably know that there are many things you could do here on your holiday. If you are here for the culture, look no further. If you are looking for a quiet getaway, its probably not far from where you are now. So, go and enjoy your selves, but remember to stay heathy. Here is some information to keep in mind and a few tips on how to keep your health during your holiday:

Dengue Fever
Dengue fever is a kind of virus that is transmitted by the bite of an infected mosquito (the black tiger mosquito). During the raining season you have to be extra carefull because that is the time these mosquitoes breed. The symptoms of dengue are high fever, severe headache, backache, joint pains, nausea and vomiting, eye pain, and rash. (go to hospital if you have these symptoms). HOW TO AVOID: 1. AVOID any mosquitoes. 2. Put insect (mosquito) repellent lotion on your skin 3. Put mosquito coil in your or spray your room before you leave so when you’re back, it’s mosquito free! 4. Wear long sleeves and long pants, especially between 10AM 2PM and 4PM - 6PM (=that is when these guys are extra active)

Sounds all a bit scary but don’t worry too much. Dengue infections are rare, especially in tourist areas and your hotel probably smokes out their garden every few days to kill these mosquitos.
Bali Belly or Diarrhea
Running to the toilet every time can be a bit embarrassing and annoying. And next to that, the stomach cramps can be quite painful. Most diarrhea cases begin abruptly but will resolve in a few days without treatment. Make sure, when you’re suffering from diarrhea, that you drink enough liquids (i.e. water and juices, beers and liquors do not count guys!) to avoid dehydration. If the symptoms like nausea, vomitting, diarrhea, stomach cramps or fever continue for more than 3 days, seek some treatment. HOW TO AVOID: Drink purified water only. Avoid eating or drinking beverages from street vendors or other establishments where unhygienic conditions are present. Avoid eating raw or under cooked meat and seafood. Avoid eating raw fruits and vegetables unless peeling before eating. But don’t let this information stop you trying new types of food during your holiday, but just remember to be careful.
Severe Sunburn or Heat Stroke
Its great when you go back to your home country and show of your exquisite brown tan. But be careful you don’t burn to much of that skin of yours or let your body litteraly get overheated. Now you might have already heard all the warnings about skin cancer and that you should protect your skin with sunscreen. Well, here we are, warning you again; buy sunscreen, wear a hat, limit the tanning sessions and try to stay out of the sun at least from 11AM till 3PM. A heat stroke is caused by dehydration or a overheated body. Avoiding a heat 44

stroke is based on the same principals of avoiding a sunburn, plus, keep your body hydrated (again alcohol, tea or coffee don’t count) and be careful with vigorous physical activities in the sun. Symptoms of a heat stroke are: high body temperature, the absence of sweating (with hot red or flushed dry skin), rapid pulse, difficulty breathing, strange behavior, hallucinations, confusion, agitation, disorientation, seizure or even a coma. HOW TO TREAT A HEAT STROKE VICTIM: In severe cases, get medical assistance immedeately. The important thing to achieve is to cool the victim. Get him or her in a shady place, remove the clothes and apply cool or tepid water to the skin. Get some ice packs and place them under the armpits and groins. Fan the victim to promote the cooling. Monitor the body temperature and continue the cooling efforts untill the temperature drops to 101/102 F (38.5 C).
Traffic Safety
We are not proud of the traffic conditions in Bali. Most local drivers are used to it, but for first timers in Bali, it can be a total different experience then back home. For them we recommend to take a taxi instead of renting a motorbike. More expensive? Yes. Safer? Absolutely.
Hotel Safety
Whether you are staying in a five star hotel or a youth hostel, do take care of slippery floors, the pool, stairs etcetera. There are many cases of broken bones, severe bruises, cuts, and some need serious treatment for it, such as an operation. Most of these cases happen to the senior tourist, where their bones aren’t as strong as they used to be. So take things easy and don’t rush. Better safe than sorry!
Water Safety
Be careful where you swim, some beaches have strong currents, sea urchins and sharp corals. Diving and surfing is fun, but it can also be dangerous. Many accidents happen from lack of concentration and under-estimating the danger of the sea. Major injuries or even death can happen during these activities. So always be extra cautious when you are having fun surfing, diving, or just plain swimming. Make sure to swim with a good swimmer, never swim alone, and only swim in safety zones (= between the red/yellow flags, a one-colored red flag means danger, do not swim there). As for swimming in general (including swimming at your hotel’s pool) make sure you warm up, to avoid any cramps during your swim.
