Greetings to our Members and customers, Winter is over and spring is upon us. I love this time of year when flowers are beginning to open and tree leaves are green. This edition of The Healthy Alternative is all about “rejuvenation.” Everyone has a favorite practice that helps them to rejuvenate their mind and body. Mine is anything to do with the water such as boating, swimming, scuba diving and going to the beach with friends. What is your favorite rejuvenator? My wife and I recently took a road trip to Key Largo, Florida. We love to scuba dive around the coral reefs. We had a great time and were able to see some really cool creatures; we swam with a large sea turtle, a spotted eagle ray, several moray eels, a couple black tip sharks and even a huge goliath grouper that weighed nearly 200 lbs. It is so cool to see a whole other world under the surface of the water. I call this rejuvenator “Hydro Therapy.” For many of our members and customers, eating healthy and exercising is their rejuvenator. If this is your passion, Ever’man provides you with many ways of support. We have lots of healthy ingredients to help you create that great meal or snack. We also have several yoga classes each week to keep you in shape. We continue to offer many different classes in the educational center including chef-led cooking classes using fresh Ever’man ingredients. We are even growing a small community garden if you want to learn and help. Our recent expansion and remodel not only rejuvenated our Store, but it sparked a craving in Pensacola for the products we carry. We have seen a far better than projected response to all the store and service enhancements we made. More than ever before, we are better able to meet the needs of our members and customers. We are delivering on our promise of fresher products in Produce, Cafe, Dairy and Meat & Seafood. We have even had to add more outdoor seating to handle the Cafe lunch crowd. Our staff has worked very hard and we are very proud of the accomplishments they have made. In closing, I hope each of you can find that something that “rejuvenates” you. My team and I are ready to assist when needed. Please let us know how we can help. Have a great spring and I will see you in the Store.

BOARD NEWS DAVE DEBLANDER BOARD PRESIDENT The following article is the third in a series discussing co-ops and the cooperative business model. Ever’man is a not-for profit corporation operating under the cooperative principles. We are considering changing it to a state registered cooperative. We hope you find these articles informative and educational. Healthy Food, Healthy Communities What’s to love about food co-ops? So much! Co-ops have a cool way of doing things differently. They’re people working together for better food, stronger communities and a healthier world. And cooperative grocers are making a big impact. A new study, Healthy Foods Healthy Communities: The Social and Economic Impacts of Food Co-ops, quantifies the impact food co-ops have as compared to conventional grocery stores. The study’s compelling results demonstrate the many ways that food co-ops do well while doing good. Unlike their conventional counterparts, co-ops are owned and governed by member-shoppers and rooted in principles like community, voluntary and open membership, economic participation and cooperation. Because of these principles and practices, food co-ops inherently serve and benefit the communities where they are located. For example, the study finds that for every dollar spent at a food co-op, $0.38 is reinvested in the local economy compared to $0.24 at conventional grocers. Supporting Local Food Systems and Sustainable Foods Though “local” has popped up in conventional grocery stores in recent years, retail food co-ops are leaps and bounds ahead of the pack. Where conventional grocers work with an average of 65 local farmers and food producers, food co-ops work with an average of 157. Likewise, locally sourced products make up an average of 20 percent of co-op sales compared to 6 percent at conventional stores.

Local Economic Impact The economic impact that a grocery store has on its local economy is greater than just the sum of its local spending, because a portion of money spent locally recirculates. For example, food co-ops purchase from local farmers who, in turn, buy supplies from local sources, hire local technicians to repair equipment, and purchase goods and services from local retailers. To some extent, conventional grocers do too, but the gap is still significant. For every $1,000 a shopper spends at their local food co-op, $1,604 in economic activity is generated in their local economy—$239 more than if they had spent that same $1,000 at a conventional grocer. Employee Benefits The average co-op earning $10 million per year in revenue provides jobs for over 90 workers. In total, 68 percent of those workers are eligible for health insurance, compared to 56 percent of employees at conventional grocers. Co-op employees also earn an average of nearly $1.00 more per hour than conventional grocery workers when bonuses and profit sharing are taken into account. Environmental Stewardship Grocery stores—co-ops and conventional alike—generate a significant amount of waste. What sets retail food co-ops apart is what they do with that waste. Co-ops recycle 96 percent of cardboard, 74 percent of food waste and 81 percent of plastics compared to 91 percent, 36 percent and 29 percent, respectively, recycled by conventional grocers.

Now that the remodel is complete, what role will the store take in the community? For many years, our co-op has grown in both members and store square footage. With each step, we added more products and services. Education about those products and services became a priority. With the completion of the recent expansion, we now have some really great facilities to use in our quest to educate our community about health, nutrition and environmental issues. We will not only supply our members and customers with great products, we will also teach them why our products are better than the conventional products sold at other stores.

How do you see the role of Ever’man in our community? As a member of Ever’man, we have the privilege of electing a Board of Directors. To set a strategic direction for Ever’man, the Board wrote an Ends (Vision) Statement which guides our cooperative in everything we do. As General Manager, my job is to strive to fulfill all aspects of the Ends Statement. As we continue to work toward this daunting task, our future will be bright and we will help a lot of people in the process.

• 1 package Fresh Cut Herbs Organic Basil • 1/4 cup Woodstock Organic Pine Nuts • 1/2 cup Spectrum Organics Extra Virgin Olive Oil • 1/4 cup Sartori Shredded Parmesan Cheese • 3 large cloves garlic • Himalayan Pink Salt to taste • Simply Organic Black Pepper to taste • Fresh Baked Red Peppers & Onion Baguettine

Directions:

In a large food processor, combine first seven ingredients. Pulse slowly and thoroughly mix, pausing to scrape remnants off of the inside walls of the processor. You can serve immediately on the baguettine or store in a jar topped with a drizzle of olive oil to preserve its freshness. This pesto should be used within two weeks.

That’s why clean, natural, real foods are a good choice for you! Make new happy memories and get connected to others in the foodie community. Can you combine summer traditions with a new approach to how you eat? Yes, you can! Long gone are the days of warm and soggy peanut butter and jelly sandwiches with chips generously crushed in the middle (I can’t be the only one who did this.) cool cucumber & dill gazpacho ingredients •3 large organic cucumbers (washed, peeled, seeded) • 1 package Fresh Cut Herbs Organic Dill • 1 cup Fage Greek Yogurt • 1/2 organic red onion • 1 organic lemon (freshly squeezed) • 2 large cloves garlic • 1/4 cup Spectrum Organics Extra Virgin Olive Oil • Simply Organic Black Pepper to taste • sea salt to taste directions In a blender, combine the diced cucumber, yogurt, dill, lemon juice, garlic and olive oil. Blend to a creamy consistency and allow it to sit for 1-2 hours for fuller flavor. When ready, serve with a garnish of red onion, sea salt, cracked pepper and a drizzle of olive oil. Servings: 6

Freshly squeezed mint lemonade ingredients • 6 organic lemons (freshly squeezed) • 5 cups reverse osmosis water • 1/2 cup Woodstock Pure Cane Sugar • 1 package Fresh Cut Herbs Organic Mint directions Pour 1 cup of water and 1/2 cup cane sugar into a saucepan and bring to a gentle boil. Remove from heat and pour into a pitcher of ice. Add the remaining 4 cups of water and squeezed lemon juice. Mix thoroughly. Add fresh mint to the mixture and mix again. Pour over a mason jar full of ice. Servings: 10-12

Add olive oil, capers, apple cider vinegar and salt. Pulse the mixture again and set aside. For the sandwich: Cut the bread in half and drizzle olive oil on both sides. Generously smear the olive oil spread over one half of the sandwich. Layer the ham, salami, provolone and mozzarella over the spread and close the sandwich. Wrap the sandwich in parchment paper and with a sharp knife carefully cut into small 2” x 2” pieces and tie with string. Servings: 4

Ever’man recently redesigned its business cards. The Store business cards include five different Ever’man colors and each color displays one of the seven cooperative principles. Managers of each department have cards that name the cooperative values along with their specific e-mail and telephone numbers. All of the cards are produced using wind-power and are eco-friendly, printed on un-coated, smooth white paper that is Forest Stewardship Council (FSC) certified.

On April 18th, as part of the Ever’man Earth Day celebrations, local Girl Scout troops 540, 210, 937 and 221 helped plant herbs and vegetables in the community garden. Their work was rewarded with the very first Ever’man Earth Day patch for their vests and sashes. The garden is located behind the Store, near the electric car charging station. When these plants are ready to be harvested, community members are encouraged to pick anything they would like to use for their home cooking. We would like to thank the Girl Scouts, volunteers and plant donors, who also supply the Ever’man Store, for helping make our community garden grow!

Ryoko brings her passion for food to Ever’man Ryoko is passionate about helping to connect people to natural and healthy products. In the past month, she has found working at Ever’man exciting because every day she has the opportunity to learn about new items and to help members and customers with different needs find great products. She brings to her role broad experience from her years as a food editor, food product journalist and food preparation teacher. As the in-house demonstration coordinator, she cooks food and distributes samples. You may find her walking in the Store or standing by a demo cart near the Meat & Seafood Department. Ryoko likes to share knowledge that promotes healthy eating habits and enhances the quality of life in our communities.
