It’s the Law: Move Over or Slow Down

No Dieter’s Waffles

4 eggs

2 cups flour

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon baking powder

2 cups buttermilk, divided use 1 cup (2 sticks) butter, melted

1. In a large bowl, beat eggs slightly.

2. In a separate bowl, sift together dry ingredients.

3. Add half of dry ingredients and 1 cup buttermilk to eggs and mix with a wire whisk. Follow with remaining dry ingredients and remaining buttermilk. Mix again.

4. Add melted butter and mix until incorporated.

5. Drop by ⅓ cupfuls onto a waffle iron heated to a medium-high setting and coated with cooking spray. Reapply cooking spray after every 1–2 waffles cooked.

If you do not have an extra lane to move into, the law requires you to slow down 20 mph below the posted speed limit. A slower-moving vehicle is a safer vehicle. And keep in mind, significant fines give this law teeth.
