Chocolate brownies One of the first recipes I attempted were these choc brownies. They definitely satisfy and are very rich because of the cocoa. These babies are best with whipped cream Makes around 12 brownies 1/2 a cup of cocoa 1/2 a tsp of coffee 1/4 tsp baking powder 1/2 cup of macadamia butter 1/2 cup of coconut oil (liquid) 2 eggs 1tsp of vanilla ess xylitol for taste Mix all together, pour in a oven proof dish around 30x30 in size and bake at 160 for 20-25 mins.

2 min choc cake This is a classic and has been doing the rounds on the Banting pages for a while now. There's different variations but this is my fave. With a steamy cup of coffee this is a definite winner. In a large coffee mug mix together: 1 egg 1 tsp vanilla ess 1 tbsp melted butter 1 tbsp cocoa 2 tbsp desiccated coconut 2 tbsp xylitol Microwave for 2 mins and serve with whipped cream and strawberries

Chocolate dipped almond biscuits Like me, if you not prepared to wait 200 hours for rusks to dry out then these little gems will fix your craving in 15 minutes! They are perfect to dunk in your coffee and are simply delicious. Best part is there's minimal ingredients.... 1 cup almond flour 1 egg 1 tbsp of butter 1/2 tsp vanilla or almond ess some xylitol for taste. add as much or as little as you want. Caring candies chocolate (endorsed by Tim Noakes and can be found at Spar. If you not sure check out their website to find a retailer near to you) http://www.caringcandies.co.za/buy.htm Mix the dry goodies first then add the butter and egg. Make small balls and press them out onto a baking tray lined with baking paper. I just used a fork to press them down. This batch makes around 12 biscuits so if you want extra for tomorrow its best you double up. Bake at 160 for 15 mins. If you want the biscuits more crunchy bake longer but watch them so they don't burn. Take them out...cool for a few mins them dip them in the melted chocolate.

Berry frozen yogurt I made these ice cream/frozen yogurt guys and froze them overnight. 3 ingredients and bob's your uncle! So sweet and the taste of the coconut is a sure reminder that summer is on it's way. 1 tin of coconut cream 1 cup fresh raspberries or strawberries (i used both) xylitol In a blender mix the ingredients together, add some xylitol for sweetness and freeze in small tubs or those Popsicle things for the kids. Double up the ingredients if you want more - they delish! Serve with freshly sliced strawberries...

Baked lemon cheesecake Hello? Did someone say afternoon Tea? This cheesecake took me all of 3 minutes to whip up and 40 mins in the oven. It has no base so there's hardly any carbs in this creamy lemony baked piece of loveliness. I served it with the jam i made last week and it was just what the doctor ordered. 500g of cream cheese 3 eggs 3 tbsp of lemon juice (add more or less depending on how you like it) 1tbsp vanilla ess 1/2 cup of xylitol (caring candies=zero carbs) cocoa In a mixer blend the cream cheese, lemon, vanilla and xylitol. Add the eggs and mix until smooth. Pour into a greased dish and bake at 180 for 40 mins. Take it out and let it cool and dust with some cocoa powder. And that's it! Easy and peasy

Blueberry waffles with fresh cream Doesn't this sound like a winning combo? Well even if you not banting these waffles will go down a treat! They are very filling, light and took me 6 minutes to whip up - seriously. 3 minutes to mix all the goods together and 3 minutes in the waffle machine. If you don't have a waffle machine like me 2 days ago...I picked one up at Cash Crusaders for R50. Bargain! For the blueberry sauce: In a small pan or pot add a small punnet of blueberries with a tablespoon of water and a teaspoon of xylitol. Let it simmer while you make the waffle mix. This sauce goes dark purple and sticky! it's divine! Leave the berries whole or squash with a fork. For the waffles:

1 cup almond flour half a tsp of baking powder half a teaspoon of salt 1 cup of cream (250ml) 3 large eggs 1 tsp of vanilla ess Mix all the dry ingredients then the wet. Spray the waffle pan liberally and pour your mix in. Mine took 3 mins to cook and look golden brown. Serve with your sauce and fresh cream. In fact serve it with anything you like... (as long as it's from the green list ) This batch made 5 waffles so if you want more just double up. You can freeze them for up to a month or keep for a few days in the fridge.

Chocolate & cinnamon mini doughnuts This recipe was supposed to be for 'Churros' - a Spanish doughnut which is fried in oil. Instead I opted to use the mix in a mini doughnut maker and viola warm cinnamon doughnuts for the cold weather were having this weekend. If you dont have a doughnut maker the original way to make Churros is to put the mix in a piping bag and pipe a long string into hot oil. Fry for 8-10 mins turning half way though. Personally this process is way to long - I'de rather just take a spoonful of mix and drop it onto a baking sheet and bake at 180 for 10 mins. For the mix: half a cup of water 7 tbsp of melted butter half a tsp of salt 1/4 cup of coconut flour half a cup of arrowroot (for thickening) 3 eggs 1 tbsp of cinnamon Topping - optional Melted caring candies chocolate Xylitol and cinnamon mix for sprinkles Mix all the dry ingredients then the wet. If you find the batter is too runny just add some more flour. Once you've fried, baked or popped it in the doughnut machine melt some chocolate over and sprinkle with a xylitol and cinnamon mix! This batch made 12 mini doughnuts and were super light and fluffy. Best served warm with a nice cup of coffee...

Chocolate & cream cheese cake The weekend always calls for a treat of some sorts and this is mine! This cake is not light and fluffy but dense and moist so you only need 1 slice to satisfy that craving. Oh, and the best part is it takes about 10 minutes to mix and 25 to bake.... For the cake: 2.5 cups of almond flour - im sure coconut would work too 2 tbsp xylitol 2 tbsp cocoa powder 2 tsp baking powder 1/4 tsp salt 6 medium eggs 1 tsp vanilla ess Preheat the oven to 190C Mix the dry ingredients Lightly whisk eggs and add 1 tsp vanilla extract. Add whisked eggs to the flour mixture and blend well. Pour into a greased cake tin. I used a bread tin. Cooking time will depend on the size of your tin (and let’s face it, every oven is different). Mine took about 25 minutes.

Chocolate & cream cheese cake Cont... For the icing: 5 tbsp soft butter 200g cream cheese 3 tbsp cream 3 tbsp xylitol 2 tbsp cocoa powder 1 tsp vanilla ess pinch of cinnamon Mix softened butter with cream cheese, double cream and 1 tsp vanilla extract. Add the other half of cocoa powder (2 tbsp) and xylitol (2 tbsp) and blend well. Add a pinch of cinnamon. Once the cake is baked, take it out and let it cool. Cut into slices (depending on the size and shape of your tin) and assemble your cake, spreading icing between the layers (optional) and on top. I also decorated mine with some crushed walnuts. P.S: this could also be great as little muffin cakes with cream cheese topping. Let me know if you try it out...

Lemon cheesecake fat bombs If you're tired of the normal fat bombs then these babies will be a huge treat and a nice change from the norm. They are smooth and creamy with a hint of lemon.

For those of you who don't know or haven't tried a fat bomb yet then keep reading... If you are following any low carb diet like banting, paleo or sleekgeek then your primary source of food should come from fat - the good ones. For some of us that cant handle all the oils, creams and butter then fat bombs are your new best friend. Ok, finally...the recipe: 4 tbsp of coconut oil 4 tbsp of butter 4 tbsp of cream cheese 1 tbsp lemon juice 1 tbsp xylitol - optional 4 tbsp thick/whipping cream 1 tsp vanilla ess

Macadamia nut brittle If you anything like me sometimes i just need something sweet to satisfy that craving we get get sometimes. If I don't have fat bombs in the freezer then i have my quick fix macadamia brittle. This is so easy to make and takes about 10 minutes to set in the freezer.

Line a small baking tray with foil. Melt a couple of chunks of Caring Candies chocolate in the microwave for 2 mins. Pour onto the baking tray and smooth out so its thin. Blitz or crush some macadamia nuts and sprinkle on top. Freeze for 10 mins, break into pieces and store in the freezer until that craving hits.
