Christmas Cheer Beverages of the Season Spiked Spiced Apple Cider This semi-homemade spiked apple cider uses store-bought apple cider infused with cinnamon, cloves, star anise, and citrus. Right before serving it’s topped off with your favorite whisky or bourbon for the perfect comforting fall cocktail! INGREDIENTS 1 gallon apple cider 2 cinnamon sticks

4 star anise 4 tsp. whole cloves 2 oranges, sliced (plus more for garnish) 2 lemons, sliced (plus more for garnish) 1 liter of good whiskey or bourbon INSTRUCTIONS Add apple cider, cinnamon sticks, star anise, whole cloves, oranges, and lemons in to the slow-cooker. Turn the heat on low and cook for 6-7 hours. Before serving, take out all of the whole spices, oranges and lemons. Pour whiskey or bourbon in. Stir and serve.

Creamy Peppermint Hot Chocolate

Non-Alcoholic Sangria

Kiss those packets goodbye and make some EASY and lusciously creamy hot chocolate! Add some peppermint, or some alcohol for an adult version!

INGREDIENTS Fresh lemon slices Fresh lime slices Fresh orange slices Cranberries 2 cups cranberry juice 2 cups grape juice 1 cup orange juice ½ cup lemon juice 4 cups San Pellegrino sparkling mineral water OR lemon-lime soda

INGREDIENTS 1 1/2 cups whole milk 1 1/2 cups half and half 1 cup chocolate chips I used milk chocolate, but use your favorite variety 1 1/2 tsp cornstarch 1/2 - 1 tsp peppermint extract optional INSTRUCTIONS Add milk and half and half to a medium pan and heat over MED heat until simmering around the edges, but not boiling. Lower the heat slightly, and add in chocolate. Whisk continuously until chocolate is melted. Add in cornstarch and peppermint extract (if using) and continue whisking until smooth and velvety. Serve with whipped cream, drizzle of chocolate syrup, marshmallows, peppermint sticks or crushed candy canes.

Yield: 6-8 servings

INSTRUCTIONS 1. In a large pitcher, add the lemon slices, lime slices, orange slices, and cranberries. Add cranberry juice, grape juice, orange juice and lemon juice. Stir well. 2. Refrigerate until ready to use. 3. Just before serving, add the sparkling mineral water or lemon-lime soda. Mix well. **NOTE: For a sweeter drink, use soda. If you prefer a less sweet drink, use sparkling mineral water.

Santa’s Magic Potion (Eggnog and Baileys) Yield: 1 drink Time to take a break, use up the last of your eggnog, and put your feet up for a minute. The combo of Baileys and eggnog is a winner. Smooth, creamy, just sweet enough, and it hits the spot. I like to sprinkle mine with a pinch of nutmeg and cinnamon for added flavor. A perfect after dinner drink that Santa will enjoy. INGREDIENTS: 4 parts eggnog 2 to 4 parts Baileys, to taste ice cubes, optional nutmeg, for sprinkling cinnamon, for sprinkling DIRECTIONS: To a large glass add the eggnog, Baileys to taste, and optionally add ice. Stir to combine. Evenly and lightly sprinkle with nutmeg and cinnamon. Serve immediately. Recipe is intended for those for whom it’s legal and appropriate to drink alcohol, always drink responsibly.

Drinks for the holidays

Eating and drinking are an important part of the holidays for most of us. As so many parties are organized at this time of year, here are a few suggestions for cocktails which are sure to impress your family and friends. Start with a drink to match the colours of Christmas; the Tikka Dream, with its explosive mix of green and red. Put a few ice cubes in a gin glass and then pour in 60 ml of melon liqueur. Fill the glass with cranberry juice, add a quarter of lime or lemon and a cocktail stick and then listen to the gasps of admiration. However, if you don’t want to spend most of the evening making drinks for everyone instead of having fun with your friends, why not make it easy on yourself and concoct a bowl of punch from which everyone can serve themselves. To do this you will need the following ingredients: a quarter bottle of orange liqueur and rum, half a bottle of cognac, half a litre of pineapple juice, half a litre of grapefruit juice, a litre of orange juice, two teaspoons of sugar as well as two bottles of sparkling wine. Get out your biggest bowl, pour everything in except the sparkling wine and refrigerate the mixture for about two hours. When it’s time to serve the punch, add the chilled sparkling wine for a memorable punch. It’s so good people will be still talking about it next Christmas.

Pear and Cranberry Quinoa Salad

This easy-to-make recipe is a great way to enjoy the many benefits of quinoa, which contains more protein than any other grain as well as all eight amino acids essential to your health.

INGREDIENTS • 1 cup quinoa • 2 cups water • 1/2 tsp. salt • 1/4 olive oil • Juice of 1 lemon • 1 garlic clove, finely chopped • Salt and pepper, to taste • 2 pears, unpeeled, cored and thinly sliced • 2 cups spinach, washed • 1 cup fresh cranberries (washed), or frozen (thawed) • 1/2 cup nuts, your choice (pecans, walnuts, etc.) DIRECTIONS Rinse the quinoa under cold water and drain well. In a frying pan, bring water and salt to a boil. Add the quinoa. Cover and cook over low heat for 13 to 15 minutes, until the quinoa has absorbed the water and is transparent. Let sit, covered, for 5 minutes. Transfer to a large bowl and let cool to room temperature. In a small bowl, whip oil, lemon juice, garlic, salt and pepper to make the dressing. In a large salad bowl, gently mix the quinoa, pear slices, spinach leaves, cranberries and nuts. Add dressing, stir well and serve.

Orange and Rosemary Chicken Legs Prep time: 20 minutes Cook time: 2 hours Servings: 4 Tender and succulent with a slight hint of citrus, this surprising dish is a guaranteed hit with your guests. INGREDIENTS 1 tbsp. butter 3 tbsp. olive oil 4 big chicken legs 2 onions, finely chopped 1 tsp. curry powder 3 tbsp. maple syrup 4 garlic cloves, finely chopped 2 rosemary twigs 1 cup chicken broth 2 oranges, peeled (remove pith) and quartered

Salt and pepper, to taste Thinly sliced oranges, to serve DIRECTIONS Heat oven to 175 °C (350 °F). Melt butter in a large casserole. Add oil and brown chicken legs for about 5 minutes each side. Once golden, remove chicken from casserole and add onions, curry powder and maple syrup. Mix well and cook on low heat for a few minutes. Put chicken back in casserole, add garlic, rosemary, broth and quartered oranges. Add salt and pepper. Mix well. Cover and put in oven for 90 minutes. Stir occasionally, basting the chicken legs with the broth. Serve on thinly sliced oranges and drizzle with cooking juices.

Turkey and Mushroom Casserole Here’s an excellent way to put your turkey leftovers to good use! If you have peas or corn left over as well, throw them in the skillet along with the other ingredients. A hearty, delicious and affordable meal — what more could you ask for?

INGREDIENTS • 3 garlic cloves, crushed • 1 cup milk • 2 tbsps. vegetable oil • 1 onion, chopped • 2 tbsps. butter • 2 tbsps. flour • 1 (8 oz.) package of white or brown mushrooms, quartered • 4 cups cooked pasta or egg noodles • 1/2 cup diced turkey leftovers • Salt and pepper • 1-1/2 cups grated cheese (mozzarella, cheddar or Swiss)

DIRECTIONS 1. One hour before you start cooking, mix the garlic and milk together, then refrigerate. 2. Preheat the oven to 190 °C (375 °F). 3. In a large skillet, heat half of the vegetable oil and sauté the onions for five to seven minutes on low heat, but don’t let them brown. 4. At the same time, melt the butter over low heat in a small pot and add the flour. Cook for one to two minutes while stirring with a whisk. After removing and discarding the garlic from the refrigerated mixture, slowly add the milk and continue to whisk until you obtain a smooth béchamel-like sauce. 5. Remove the onions from the skillet and slightly increase the heat. Add the rest of the vegetable oil and the mushrooms. Sauté for five to seven minutes, until the mushrooms look golden brown. 6. Throw the onions back in the skillet. Add the noodles, turkey and béchamel sauce, and mix well. Remove from heat and season with salt and pepper, to taste. 7. Pour the contents into an oven-safe casserole dish and sprinkle cheese on top. 8. Place the dish in the oven for 15 to 20 minutes, or until the cheese has melted and browned, then serve!

Duck Leg Confit with Garlic Mashed Potatoes Brace yourself for the perfect blend of flavours: garlicky mashed potatoes, rich duck confit and a sweet, fruity sauce. You’ll definitely be asking for seconds. Prep time: 15 minutes Cook time: 35 minutes Servings: 4 INGREDIENTS • 1 head of garlic • 1 tbsp. vegetable oil • 4 confit duck legs (easily found at the grocery store) • 8 red potatoes, washed, diced, skin on • 1/2 cup butter • 1/3 cup table cream (15 % or 18 %) • Salt and pepper, to taste

FOR THE SAUCE • 1 small French shallot, finely chopped • 2 tbsp. jam, your choice (blueberry, raspberry, etc.) • 2 tbsp. maple syrup • Salt, to taste DIRECTIONS Heat oven according to duck leg package directions (usually 175 °C / 350 °F). Trim the top off the head of garlic to expose the tops of the cloves. Place the garlic on a square sheet of aluminum foil and drizzle with vegetable oil. Wrap the garlic, seal the pouch and place it in the oven. Put the duck legs in a shallow dish and then place it in the oven with the garlic for 20 to 25 minutes. Boil the potatoes in a large pot of salted water for about 10 minutes or until they become soft. Drain. Remove the garlic from the oven, open the foil and let cool. Add the butter and cream to the potatoes and beat until they become smooth and creamy. Press the garlic with your fingers to remove the centre cloves (they should be a nice golden hue and a paste-like consistency; crush if needed). Add to the potatoes, mix well, and season with salt and pepper to taste.

Spinach and Bacon Turkey Roll (Makes 8 servings as an appetizer or 4 servings as a main) INGREDIENTS • 1 boneless turkey breast (about 1 kg/2 lbs.) • 2 tbsps. vegetable oil • 12 bacon strips • 450 g (12 cups) fresh spinach • Salt and pepper DIRECTIONS 1. Preheat the oven to 190 °C (375 °F).

Here’s a recipe for a decadent meal to serve hot or cold, with or without gravy, as an appetizer or a main course… the choice is yours!

2. On a cutting board, use a rolling pin to flatten the turkey breast until it is approximately 1 cm (1/2 inch) thick. Cut off the sides to get a 30 x 30 cm (12 x 12 inch) cutlet. Chop up the excess meat and place everything in the fridge. 3. In a large skillet, heat the oil and fry eight slices of bacon until nice and crispy.

4. Remove the bacon (making sure to leave the cooking grease behind), coarsely chop and set aside. 5. Add the spinach to the reserved skillet and cook for two to three minutes, until wilted. 6. Remove the spinach with a pair of tongs or a slotted spoon to let the excess cooking grease drip, then set aside. 7. Cook the chopped turkey pieces in the skillet. Once done, remove with a pair of tongs or a slotted spoon, set aside and remove the pan from the heat. 8. On a cutting board, spread the remaining four slices of bacon and place the cutlet on top. Next, cover the cutlet with the spinach, chopped bacon and turkey pieces. 9. Season with pepper and a bit of salt (there’s already quite a bit in the bacon). Carefully roll the cutlet, using the bacon strips as a “blanket.â€? Use butcher’s string or toothpicks to keep everything in place. 10. SautĂŠ the cutlet on all sides for four to five minutes. Add a bit of vegetable oil as needed. 11. Finish cooking in the oven for 15 to 20 minutes, or until a meat thermometer inserted into the thickest part indicates 170 °C (338 °F). 12. Slice and serve.

Cranberry Bread (Makes 1 loaf) INGREDIENTS • 2 cups flour • 1 tsp. baking soda • 1 tsp. baking powder • 1 cup white sugar

5. Pour the mix in the loaf pan and bake for 65 to 70 minutes. Insert a toothpick to make sure the bread is fully cooked. Remove from the pan while the bread is still hot.

DIRECTIONS 1. Preheat the oven to 175 °C (350 °F). 2. Grease a regular 23 x 13 x 7.5 cm (9 x 5 x 3 inch) loaf pan. 3. In a large bowl, mix the flour, baking soda, baking powder, sugar and salt. 4. Add in the butter and lightly mix. Next, add the egg, orange zest, juice and cranberries, and mix until nice and smooth, without beating too hard.

Candy Cane Fudge Squares (Makes about 32 pieces) INGREDIENTS

There are many fudge recipes out there, but it’s hard to find one as simple and as delicious as this one!

• 600 g (about 5 cups) chopped semi-sweet chocolate • 1 can (300 ml/14 oz.) sweetened condensed milk

2. In a medium-sized casserole dish, warm the chocolate and condensed milk over low heat. Remove from heat once the mixture is nice and smooth. 3. Add the vanilla extract and salt. Mix well. 4. Pour the mixture into the square moulds and sprinkle pieces of candy cane on top. 5. Leave to harden in the fridge overnight. 6. Cut the fudge in each mould into roughly 16 squares, and enjoy!

Eggnog Fudge Makes 64 pieces • • • • • •

3 cups (750 ml) granulated sugar 1 cup (250 ml) eggnog 1 tbsp (15 ml) corn syrup 2 tbsp (25 ml) butter 1 tsp (5 ml) vanilla 1/2 cup (125 ml) chopped walnuts

GLAZE • 1/4 cup (50 ml) semisweet chocolate chips • 1 tsp (5 ml) butter PREPARATION: Grease sides of large heavy saucepan. Add sugar; stir in eggnog and corn syrup. Cook over medium heat, stirring constantly until boiling. Cook, stirring only if necessary to prevent sticking, until candy thermometer reaches soft-ball stage of 238°F (115°C), and when 1/2 tsp (2ml) syrup dropped into very cold water forms soft ball that flattens on removal from water.

Immediately remove from heat; let cool to lukewarm, 110°F (43°C), without stirring. Using wooden spoon, beat in butter and vanilla, beating until very thick and no longer shiny. Quickly stir in nuts. Spread in greased 8-inch (2 l) square cake pan. TIP: If fudge sets too quickly before spreading in pan, reheat gently over low heat just until soft enough to spread. Glaze: Melt together chocolate chips and butter. Drizzle over fudge. Score into 1-inch (2.5 cm) squares while warm; let cool completely and cut into squares. Fudge can be layered between waxed paper in airtight container and stored for up to two weeks.

Fruited Brazil Nut Loaves

Cut pineapple into chunks. Halve cherries.

Makes two loaves

In large bowl, mix together figs, apricots, pineapple, cherries, ginger, and Brazil nuts. Stir together flour, sugar, and baking powder; add to fruit mixture and toss to mix.

• 1 1/2 cups (375 ml) dried figs • 1 1/2 cups (375 ml) dried apricots • 1 cup (250 ml) candied pineapple • 1/2 cup (125 ml) candied cherries • 1/2 cup (125 ml) chopped preserved ginger • 1 cup (250 ml) all-purpose flour • 1 cup (250 ml) packed brown sugar • 1 tsp (5 ml) baking powder • 3 cups (750 ml) whole shelled Brazil nuts • 4 eggs • 1 tsp (5 ml) vanilla PREPARATION: Line two 8- x 4-inch (1.5 l) loaf pans with foil; grease well and set aside.

In separate bowl, beat eggs well; stir in vanilla. Add to fruit mixture and mix well; spoon into prepared pans. Bake in 350°F (180°C) oven for 1 hour or until cake tester inserted into centre comes out clean. Let cool in pans on racks for 10 minutes; remove from pans and let cool completely on racks.

Pour boiling water over figs and apricots; let stand for 5 minutes. Drain and chop into large pieces. Loaves can be wrapped well and refrigerated for up to two weeks. Your

Tips for a snag-free gift exchange Are you in charge of organizing the annual gift exchange this year? Here are a few tips to ensure everything goes smoothly! Ideally, you’ll want to start planning the gift exchange at least one month in advance to give everybody enough time to shop. You’ll also want to determine a price range (between $15 and $20, for example) to avoid any awkward situations the day of. Once done, decide on a format. Consider how you want to exchange gifts. Will you pick names or distribute the goodies at random? Are kids and adults included in the same exchange? Additionally, decide whether you want the gifts to relate to a specific theme (like something red or unusual, for example). Come up with a few ideas and discuss them with everyone involved. IF PICKING NAMES Determine whether or not each participant should make a few suggestions. You can ask everyone to make a list of five gift ideas or outline things they like (sports, books, movies, etc.). Suggestions can be useful when people don’t know each other well; however, they do take away from the element of surprise. Next, jot down everybody’s name on a piece of paper, and pick away! CROWN ROAST OF PORK Serves: 12-16 // Prep Time: 5 minutes // Cook Time: 2.5 hours (allow 15 minutes per pound for total cook time 1/2 Tbsp each dried thyme, oregano, rosemary, parsley 2 tsp kosher salt 2 tsp freshly cracked black pepper 1 12-rib pork loin rib crown roast (about 10lb.) 1. Preheat the oven to 350 F. Generously season roast with herbs, salt & pepper. 2. Put the pork (rib up) on rack in a roasting pan. Cover with foil and roast until the internal temperature is 54 C (130 F). 3. Remove foil nd turn oven temperature up to 400 F. Cook 12-15 minutes until the roast is brown and the internal temperature reaches 71 C (160 F). Use a digital thermometer for best results. 4. Remove from oven; tent with foil. Allow to rest 20 minutes before carving between the rib bones.
