Eggnog Fudge Makes 64 pieces • • • • • •

3 cups (750 ml) granulated sugar 1 cup (250 ml) eggnog 1 tbsp (15 ml) corn syrup 2 tbsp (25 ml) butter 1 tsp (5 ml) vanilla 1/2 cup (125 ml) chopped walnuts

GLAZE • 1/4 cup (50 ml) semisweet chocolate chips • 1 tsp (5 ml) butter

I m m e d i a t e l y remove from heat; let cool to lukewarm, 110°F (43°C), without stirring. Using wooden spoon, beat in butter and vanilla, beating until very thick and no longer shiny. Quickly stir in nuts. Spread in greased 8-inch (2 l) square cake pan.

PREPARATION:

TIP: If fudge sets too quickly before spreading in pan, Grease sides of large heavy saucepan. Add sugar; stir in reheat gently over low heat just until soft enough to spread. eggnog and corn syrup. ounces light cream cheese, softened cup shredded sharp cheddar cheese tablespoons drained, chopped pimentos teaspoon garlic powder teaspoon paprika Pinch kosher salt Pinch freshly ground black pepper cup crushed pecans cup chopped chives pretzel sticks

In a large bowl, stir together the cream cheese, cheddar, pimentos, garlic powder, paprika, salt, and pepper until well combined. Cover and refrigerate for at least 30 minutes. Place the crushed pecans and chives in a small bowl. Set aside. Roll the cheese mixture into twelve 1-inch balls. Evenly coat each ball with the pecan-chive mixture. Press a pretzel stick into the top of each cheese ball just before serving. Serve at room temperature or chilled.

Santa’s Magic Potion (Eggnog and Baileys) Yield: 1 drink Time to take a break, use up the last of your eggnog, and put your feet up for a minute. The combo of Baileys and eggnog is a winner. Smooth, creamy, just sweet enough, and it hits the spot. I like to sprinkle mine with a pinch of nutmeg and cinnamon for added flavor. A perfect after dinner drink that Santa will enjoy. INGREDIENTS: 4 parts eggnog 2 to 4 parts Baileys, to taste ice cubes, optional nutmeg, for sprinkling cinnamon, for sprinkling DIRECTIONS: To a large glass add the eggnog, Baileys to taste, and optionally add ice. Stir to combine. Evenly and lightly sprinkle with nutmeg and cinnamon. Serve immediately. Recipe is intended for those for whom it’s legal and appropriate to drink alcohol, always drink responsibly.

Drinks for the holidays

Eating and drinking are an important part of the holidays for most of us. As so many parties are organized at this time of year, here are a few suggestions for cocktails which are sure to impress your family and friends. Start with a drink to match the colours of Christmas; the Tikka Dream, with its explosive mix of green and red. Put a few ice cubes in a gin glass and then pour in 60 ml of melon liqueur. Fill the glass with cranberry juice, add a quarter of lime or lemon and a cocktail stick and then listen to the gasps of admiration. However, if you don’t want to spend most of the evening making drinks for everyone instead of having fun with your friends, why not make it easy on yourself and concoct a bowl of punch from which everyone can serve themselves. To do this you will need the following ingredients: a quarter bottle of orange liqueur and rum, half a bottle of cognac, half a litre of pineapple juice, half a litre of grapefruit juice, a litre of orange juice, two teaspoons of sugar as well as two bottles of sparkling wine. Get out your biggest bowl, pour everything in except the sparkling wine and refrigerate the mixture for about two hours. When it’s time to serve the punch, add the chilled sparkling wine for a memorable punch. It’s so good people will be still talking about it next Christmas.

The origins of some beloved holiday traditions Christmastime is here. The presents are being purchased and wrapped. The stockings will soon be hung on the fireplace mantle. Mistletoe is pinned above the front entryway, and poinsettias add rich color to home decor. Tradition is integral come the holiday season. Throughout the month of December, traditions fill people’s days and comprise the many reasons why individuals decorate, celebrate and dine the way they do this time of year. But few may know the origins of some of the most beloved holiday traditions. Christmas stockings The Christmas stockings of today may be a byproduct of various traditions. One such tradition dates back to a Dutch custom in which children would leave shoes full of food to feed St. Nicholas’ donkeys, and then St. Nicholas would leave small gifts in return. Another origin story of Christmas stockings can be traced to the 12th century, when nuns would leave socks full of nuts, fruit and tangerines for the poor. This is why some people still put tangerines in Christmas stockings.

The use of evergreen trees predates Christmas and is associated with the pagan festival of Saturnalia, which celebrated the agricultural god Saturn with partying and gift-giving. Santa Claus Santa Claus’ origin story can be traced to St. Nicholas, a Christian bishop who lived during the fourth century. St. Nicholas was very generous and gave away his fortune to help the needy. He also did various other good deeds. St. Nicholas became infamous and began to be known by various names around the world. The Dutch called him Sinter Klaas, which was eventually transformed to Santa Claus. The jolly persona came later when 20th century advertisers — especially the artists responsible for Coca-Cola ads — portrayed Santa in a red suit with a big smile.

Mistletoe Mistletoe is hung in doorways, and couples who stand beneath are encouraged to share a kiss. The tradition of hanging it in the house goes back to the times of the ancient Druids. Mistletoe was thought to bring good luck to a household and ward off evil spirits. The custom of kissing under mistletoe can be traced to England. Originally, a berry was picked from the sprig of mistletoe before the person could be kissed. When all the berries had gone, there could be no more kissing. Christmas bells Church bells ring for many special services, including Christmas mass. During Christmas midnight mass in the Catholic Church, the altar bells may be rung while the priest says the “Gloria.” Bells are part of caroling, and jingling bells are associated with sleighs and Santa’s reindeer. Christmas is rife with traditions that date back ages.

Spiritual Christmas traditions to embrace The holiday season is a special and spiritual time of year. It can sometimes be easy to get lost in the more commercial aspects of the holiday season, and there’s certainly nothing wrong with shopping for gifts that will show your loved ones how much you love and appreciate them. For those who want to focus back on the spiritual side of this special time of year, the following suggestions can help in those efforts.

Share the story of Christmas The Gospels of Mark and Luke offer differing accounts of the birth of Jesus Christ. Both indicate that Jesus was born to Mary, who was engaged to Joseph, a carpenter. Mary became pregnant through immaculate conception, as she was a virgin when visited by an angel who informed her that she was to carry God’s son. At the time of Christ’s birth, all Jewish people had to be counted by Roman soldiers for tax purposes. That required people to return to their places of birth. As a result, Mary and Joseph set out on an arduous journey to Bethlehem. Upon arriving in Bethlehem, inns had no vacancies, but Mary and Joseph were given shelter in a stable where Jesus was ultimately born.

Ingredients • 1 cup butter • 1/2 cup confectioners’ sugar • 1/4 teaspoon salt • 1 teaspoon vanilla extract • 2-1/4 cups all-purpose flour • 1 cup chopped pecans • 1/3⅓ cup confectioners’ sugar for dusting, or as needed • 1/4 cup finely crushed peppermint candy canes (Optional) Step 1 Preheat oven to 350 degrees F (175 degrees C). Step 2 Cream the butter with 1/2 cup of the confectioners’ sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.

Step 3 Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it’s better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners’ sugar. Once they have cooled, roll them in confectioners’ sugar once more.

Turkey and Mushroom Casserole Here’s an excellent way to put your turkey leftovers to good use! If you have peas or corn left over as well, throw them in the skillet along with the other ingredients. A hearty, delicious and affordable meal — what more could you ask for?

INGREDIENTS • 3 garlic cloves, crushed • 1 cup milk • 2 tbsps. vegetable oil • 1 onion, chopped • 2 tbsps. butter • 2 tbsps. flour • 1 (8 oz.) package of white or brown mushrooms, quartered • 4 cups cooked pasta or egg noodles • 1/2 cup diced turkey leftovers • Salt and pepper • 1-1/2 cups grated cheese (mozzarella, cheddar or Swiss)

DIRECTIONS 1. One hour before you start cooking, mix the garlic and milk together, then refrigerate. 2. Preheat the oven to 190 °C (375 °F). 3. In a large skillet, heat half of the vegetable oil and sauté the onions for five to seven minutes on low heat, but don’t let them brown. 4. At the same time, melt the butter over low heat in a small pot and add the flour. Cook for one to two minutes while stirring with a whisk. After removing and discarding the garlic from the refrigerated mixture, slowly add the milk and continue to whisk until you obtain a smooth béchamel-like sauce. 5. Remove the onions from the skillet and slightly increase the heat. Add the rest of the vegetable oil and the mushrooms. Sauté for five to seven minutes, until the mushrooms look golden brown. 6. Throw the onions back in the skillet. Add the noodles, turkey and béchamel sauce, and mix well. Remove from heat and season with salt and pepper, to taste. 7. Pour the contents into an oven-safe casserole dish and sprinkle cheese on top. 8. Place the dish in the oven for 15 to 20 minutes, or until the cheese has melted and browned, then serve!

Crustless pie a treat for those with gluten intolerance The holiday season is a popular time to entertain. Food is often a focal point of holiday season entertaining. Individuals who navigate food allergies or intolerances may shy away from certain celebrations out of fear that a nibble of this or a bite of that may trigger an allergic response. In such instances, concern about ingredients can cast a pall over normally festive occasions. Those with Celiac disease or gluten intolerances must be mindful of the foods they consume. Meals or desserts containing gluten, a protein found in grains like wheat, semolina, rye, barley, graham, spelt, farina, and more, can trigger intestinal distress and other symptoms. With delicious pies, cakes and cookies on the holiday serving table, gluten is likely to make an appearance. However, with careful planning, people who cannot stomach foods that contain gluten can still indulge in their favorite holiday flavors. “Crustless Libby’s® Famous Pumpkin Pie” is a variation on traditional pumpkin pie served at Thanksgiving and Christmas gatherings. How to create a durable gingerbread house Gingerbread cookies and houses are one of the many symbols of the holiday season, alongside Christmas trees and twinkling lights. In fact, few confections symbolize the holidays more so than gingerbread. Many a child (or a child at heart) has spent hours carefully trying to create decorative gingerbread houses. Although gingerbread recipes span various cultures, gingerbread houses originated in 16th century Germany. The fairy tale “Hansel and Gretel” helped solidify the popularity of gingerbread, which became part of Christmas traditions. Even though gingerbread houses can be fun to make, there’s no denying it can be exacting work — especially for those who strive for perfection. Prepackaged kits attempt to take some of the guesswork out of the equation, but those who are crafting from scratch can employ these tips as they build their gingerbread houses. • Go for form and not flavor. Few gingerbread houses ever get eaten, so focus on finding a dough that will bake up rock hard as opposed to one that tastes good. • Get the right icing texture. Pastry artist Catherine Beddall says royal icing is the preferred “glue” to adhere gingerbread pieces. Beddall says icing should be thick like peanut butter and not runny. • Mind the dough. Do not roll out the gingerbread dough too thin or it may become brittle after being cooked. Always cut out shapes before the gingerbread is baked. Let

the baked pieces sit overnight to cool completely before using them to build. • Patience is key. Allow the icing to dry for at least a couple of hours after adhering each piece and before moving and handling the house, says Beddall. Work in stages so that individual items can be decorated and allowed to dry. Then the walls can be put together, followed by the roof pieces. • Kids likely will need help. Children may not have the patience or steadiness to handle complete gingerbread construction. They can decorate the separate pieces of the house while the components are laying flat, which is easier for kids. Adults can do the main assembly later on. • Utilize a template. Free-handing may not be easy. Cut out templates using cardboard or posterboard for various gingerbread pieces. One of the most important tips is to have fun. Don’t take gingerbread house making too seriously as a novice. Rather, enjoy the experience and the centuries-old tradition.

How to make the perfect

snowman

Do you want to build a snowman? Here are a few tips for ma­king one that’ll be the envy of your neighbourhood. PREPARING Choose a flat and shady area so that your snowman will stand straight and won’t melt in the sun. Make sure the snow is sticky enough by making a small ball in your hand. If it holds together and doesn’t crumble between your fingers, you’re good to go. BUILDING First, shape three balls with your hands until they become too big to hold. Then roll them in the snow until they’re as big as you want them to be. Remember, the middle ball must be smaller than the bottom one, and the top one smaller than both of them. Flatten the top of each ball before placing another one on top. Finally, to keep everything together, pack snow around the base of the bottom ball and bet­ween each layer. After, all that’s left to do is decorate your creation.

Star cookies with crabapple jelly These cute cookies make the perfect holiday dessert, snack or treat to leave out for Santa Claus on Christmas Eve. INGREDIENTS • 150 grams unsalted butter, room temperature • 1/2 teaspoon vanilla extract Start to finish: • 1/2 cup powdered sugar 4 hours, 40 minutes • 1/2 teaspoon salt (30 minutes active) • 1-1/2 cups flour Servings: • 1/4 cup crabapple jelly 10 cookies DIRECTIONS 1. In a stand mixer, cream the butter and vanilla extract. Add the powdered sugar, and mix until well incorporated. Add the salt and flour and mix again, scraping down the sides of the bowl regularly, until the mixture has a sandy texture. 2. Pour the mixture onto plastic wrap placed on a flat surface. Fold the plastic wrap toward the centre, and press firmly with your hands to create a solid ball of dough. Make sure the plastic wrap is airtight, and refrigerate the dough for 1 to 4 hours. 3. Preheat the oven to 175 C (350 F). Roll out the dough until it’s about 5 millimetres (1/4 of an inch) thick. Using a star-shaped cookie cutter, shape 20 cookies and place them on a parchment-lined baking sheet, spacing them evenly. For half of the cookies, use a second, smaller cookie cutter to create a hole in the centre. Bake for 10 minutes, but make sure to rotate the pan 180 degrees at the 5-minute mark. 4. Let the cookies cool completely. Place 1 teaspoon of crabapple jelly on top of a full cookie, and top it with one that has a hole. Press lightly to seal the two cookies together.

Hedgehog Cookies

4 dozen cookies

INGREDIENTS • 4 cups all-purpose flour • 3/4 teaspoon baking powder • 1/2 teaspoon baking soda • 1/2 teaspoon salt • 1-1/4 cups white sugar • 1 cup butter-flavored shortening • 1/4 cup corn syrup • 2 eggs • 1 tablespoon vanilla extract • 1 cup pecans • 1 cup chocolate chips Step 1 Mix flour, baking powder, baking soda, and salt in a bowl. Whisk sugar, shortening, corn syrup, eggs, and vanilla extract in a separate bowl. Stir sugar mixture into flour mixture until just combined. Refrigerate dough until chilled, 30 minutes to 1 hour. Step 2 Preheat oven to 350 degrees F (175 degrees C). Step 3 Scoop cookie dough using a cookie scoop or 1 tablespoon so all the cookies are uniform; shape dough into teardrop-shaped cookies. Flatten the pointed side of each cookie to form the ‘face’. Arrange cookies on baking sheets.

Step 4 Bake in the preheated oven until golden, 10 to 12 minutes. Cool on the baking sheets for 10 minutes before removing to cool completely on a wire rack. Step 5 Pulse pecans in a food processor until finely chopped; transfer to a bowl. Step 6 Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Step 7 Dip the top of each cookie in the melted chocolate, spreading to fully coat the ‘body’ of each hedgehog. Press cookies, chocolate-side down, into the ground pecans forming the ‘fur’. Arrange cookies on a sheet of waxed paper to set, about 30 minutes. Step 8 Transfer the remaining melted chocolate to a piping bag or plastic bag with a corner snipped. Pipe chocolate onto the pointed end of each cookie for eyes and a nose.

Festive pomegranate cocktail This light and bubbly cocktail is sure to get you in the holiday spirit. Serve it at a Christmas brunch or as an aperitif before a sit-down dinner. INGREDIENTS • 2 tablespoons pomegranate juice • 1/2 cup sparkling wine • Sparkling lemon water • 1 tablespoon pomegranate seeds • 1 sprig fresh rosemary DIRECTIONS 1. In a champagne flute, pour the pomegranate juice and sparkling wine. Top off with sparkling water. 2. Garnish with pomegranate seeds and rosemary.

Remove foil nd turn oven temperature up to 400 F. Cook 12-15 minutes until the roast is brown and the internal temperature reaches 71 C (160 F). Use a digital thermometer for best results. 4. Remove from oven; tent with foil. Allow to rest 20 minutes before carving between the rib bones.
