Lychee PurĂŠe Yield: approx. 640g
180g water 105g granulated sugar 7g agar agar 315g lychee purĂŠe (10% sugar) 45g lemon juice
1. Combine water, sugar, and agar agar in a small saucepan. Gently bring to a boil; reduce heat while maintaining a simmer for two to three minutes. 2. Remove from heat and whisk in lychee puree and lemon juice. Chill, allowing to cool and set for a few hours. 3. Process in blender until smooth.
