OL IV ER EXPERIENCE THE BEST OF WHAT THE OKANAGAN HAS TO OFFER AT TINHORN CREEK JENNA HICKMAN
With its hot, arid climate and picturesque views, it’s no wonder the southern Okanagan is home to numerous outstanding wineries. Tinhorn Creek Vineyards is no exception. Established in 1993, Tinhorn Creek has been making award-winning wine for almost 30 years. They’ve grown from producing a couple of barrels in the basement of a house to becoming a flourishing winery and an industry leader. Located on the Golden Mile Bench in Oliver, BC, Tinhorn Creek overlooks the South Okanagan, providing unobstructed views of the desert-like landscape that makes this part of the country so distinctive.
EXPLORE THE AREA
When you visit Tinhorn Creek, you can really immerse yourself in the surrounding environment by exploring the Golden Mile Stamp Mill Trail, which backs onto the winery property. One of the only remaining access points to the Mount Kobau Range, the trail takes hikers to the ruins of a 100-year-old stamp mill. From there you’re able to see Tinhorn in two forms: Tinhorn Creek Vineyards, and its namesake, Tinhorn Creek itself. If you don’t have time for a hike, Tinhorn Creek offers an immersive vineyard experience so you can learn about the unique terroir of the region right on the winery estate. Off of their back patio, the winery has a demonstration vineyard with a few rows of the original vines from when the winery was founded, where guests can taste the grapes right off the vine. “We want to encourage guests to check out what’s currently happening in the vineyard and see the growth and development of the grapes for themselves,” said Mike Johnson, Tinhorn Creek’s retail and experience manager. “Guests can go from sipping on a glass of Cabernet Franc to actually sampling the grapes, exploring how similar or different the grapes taste before and after the winemaking process. We’re one of the only wineries in the region to offer this experience. It’s a great way to learn more about winemaking.”
BRING A PICNIC OR GET TAKEOUT
Guests can even pack a picnic and purchase a bottle of wine to go with it or stop by the estate’s restaurant Miradoro to order takeout and sit in the winery’s picnic area nestled in the demonstration vineyard. The winery even has a beautiful natural amphitheatre where kids are welcome to play on the grass and dogs are allowed on-leash. As Tinhorn’s guest, sit back and enjoy a relaxing afternoon sipping on delicious wine.

Miradoro has just released their seasonal summer menu highlighting local southern Okanagan ingredients. The menu changes frequently, so it always features the freshest produce and there is always something new. Award-winning chef Jeff Van Geest expertly combines the taste of the Okanagan with hints of the Mediterranean. With a panoramic view of the valley, Miradoro offers an idyllic dining experience. If you can’t stay for a meal or a tasting, Tinhorn Creek has you covered with their tasting-to-go package. The package includes stemware, a bottle of each wine Tinhorn is sampling, and information sheets to help guide you through your at-home tasting.

This summer, Tinhorn Creek is releasing two small-lot wines—the first of their new Barrel Lot series, available exclusively to their wine club members. “We only have about 40 cases of the one wine, and 90 cases of the other, so they’re super special,” said Johnson.

OLIVER KISMET WINERY – CULTIVATING COMPASSION KIM RHINDRESS
Kismet Winery is a well-known jewel in the South Okanagan, named for a Punjabi word meaning “destiny,” but the family-owned business may well add “karma” to their crest. With tasting fees set at only $1 each and waived with the purchase of a bottle, all proceeds are donated to the BC Children’s Hospital. “We have been donating there for a while,” Neelam Dhaliwal, Kismet’s operations manager, explained. “It is a charity near and dear to our hearts.” The family’s story began more than 30 years ago when brothers Sukhi and Balwinder Dhaliwal took fate into their own hands and immigrated to Canada with their wives Bhupinder and Sandeep. Sukhi worked a variety of agricultural jobs in the Oliver, BC area and could see the great opportunity in the region. He soon convinced his brother to join him.
A BRIEF HISTORY
While simultaneously working for other vineyards, the Dhaliwals were able to acquire large parcels of premium land and soon became the largest suppliers of grapes in the region. Today, the Dhaliwal brothers manage over 400 acres of vineyards and are one of the premier grape growers in the South Okanagan. It was inevitable that the family would start saving their best harvests to make their own wine. The first bottles were produced in 2009 to great acclaim, and wheels were set in motion. The tasting room followed in 2013 to showcase their award-winning wines, and the Masala Bistro was added in 2016 to offer authentic Indian food. “People are surprised how well our wines pair with Indian food,” says Neelam. “The bistro has become almost as famous as our wines.” An outdoor wedding venue has been added to the property and is a hidden gem in the region.

Summer 2021 brings the release of the highly prized Syrah Reserve, featuring a new family crest label whose symbols represent the Dhaliwals’ journey. Cultivating some of the best property in the South Okanagan for Syrah, Kismet regularly wins Platinum and International Gold for this varietal.
The Kismet wine club is a great way to explore. Two options are available: the Connection Club offers one customizable case per year at 10 per cent off with free shipping, while the Devotion Club offers two cases per year in May and October at a 15 per cent discount. Reservations at quintaferreira.com ensure a seating, but walk-ins are welcome as space allows. As bright as the season, refreshing Chardonnay offers light peach, apple, citrus and tropical aromas and flavour highlights with a sumptuous mouthfeel. To enhance your grilling season, Quinta Ferreira’s richly coloured reds provide an explosion of intense aromas and complex fruit flavours that linger on your palate. Merlot carries vanilla, black cherry, cinnamon and clove scents, with tangs of black pepper, plums, blackberries and chocolate. Mistura Tinto,
a blend of Merlot, Cabernet Sauvignon, Cabernet Franc and Syrah, teases your nostrils with raspberry jam, chocolate, black cherry, blackberry, vanilla and spices, with a symphony of fruit flavours on the finish. It’s summer, and that means wine tastings, picnics and getting together outside with friends and family. I love rosés because they usually have a low to medium alcohol level, which means you can enjoy more of it. The refreshing berry flavours and burst of acidity make it a superb choice for almost any occasion.
Every summer I look forward to the wide variety of rosés that our BC wineries produce. It’s such a perfect summer wine with its versatile flavour profiles that go with darn near anything.
Eve’s Original Moscow Mule
Everyone agrees rosés go great with seafood. Salmon in all its glorious forms is always a hit, whether it’s smoked, poached or baked with maple syrup. Try it with a paella or gumbo with lots of seafood. Throw some veggie skewers on the barbeque and add some chicken if you desire. A delicious charcuterie board and soft cheeses also pair well with rosé. My favourite pairing is with feta cheese, whether it’s in a Greek salad or on a pizza, like the recipe in this issue.

If you’re not hungry, no worries, as rosés are great to enjoy on their own as you bask in the summer sun. Don’t forget to try sparkling rosés too! 1 portion pizza dough 1 zucchini 1 400-g tub of ricotta 1 garlic clove, finely minced zest of 1 lemon salt olive oil chili flakes mint
METHOD
Preheat oven to 230°C/450°F. This is a very simple pizza, in essence, but there are a few critical steps to make it outstanding. Start by slicing the zucchini on a mandoline about 2 mm thick. You can use a sharp knife if you don’t have a mandoline. Place enough paper towel to cover a small cookie sheet and sprinkle with salt. Lay the zucchini on the salted paper towel and lay another paper towel on top. This will draw out the water so it won’t pool on your pizza. Season the ricotta with garlic, lemon zest and a pinch of salt. Place this mixture in a strainer and let the excess liquid drain for 30 minutes into a bowl. Once you have rolled out your pizza dough, lay out your zucchini on the dough so that it is evenly distributed from edge to edge. Drizzle the whole pie with olive oil and place in the oven. Bake for eight minutes, then take the pizza out of the oven and add spoonfuls of the lemon ricotta all over the pizza. Let this cook for another four to six minutes, or until the crust is golden and crisp.

To finish the pizza, sprinkle with as many or as few chili flakes as you like, and cover with fresh mint leaves.
1 cup bread flour
1 ½ Tbsp sugar
1 Tbsp instant yeast
2 cups water

1 ½ Tbsp salt
3 Tbsp olive oil
METHOD
Combine flours, yeast, salt and sugar and mix well. Make a well and add the water and olive oil. Using a fork, gently start mixing the wet ingredients into the dry. Once the dough comes together, knead it until it is supple and elastic, using flour as needed. Let the dough rise in an oiled bowl for a minimum of four hours on the counter and covered with plastic wrap, or overnight in the fridge. When you go to make your pizzas, knock down your dough and divide into three equal pieces. You can roll it out into circles or rectangles, whatever you feel like.

While visitors come for the wine, it is Red Rooster’s stunning views and hospitality that make people stay, sometimes for the entire day. Whether you’re at a table on the patio or in the shade under a tree by the vineyard, you’ll have a spectacular view while you sip on delectable wine. To pair with your wine, Red Rooster has partnered with Joy Road Catering this year to put together a handcrafted picnic box. You’ll be treated to a plethora of delicious foods, such as homemade artisan rye crisps, sheep’s milk Pecorino Romano cheese, soft-ripened Brie, 18-month-aged prosciutto, mild Milano salami, house-made pickled mustard seeds, fermented local turnips, and some sweet and salty almonds and cashews. While the picnic boxes may slightly differ from each other in their offerings, each will have two luxury cheeses and two meats, with a selection of accompaniments. The board for two also includes two wine pairings comprised of four two-ounce pours. For just $40, this experience will be a date night to remember. “We’ve put something truly special together with Joy Road,” said Ganton. “Guests can experiment with the picnic box too. I suggest trying each of the wines with the different components of the board and seeing what flavours are brought out. By experimenting with the different flavours and aromas, the picnic box can be as educational as it is enjoyable.”

Okanagan Spirits Craft Distillery was the first farm-to-flask distillery in North America since prohibition. Founded in 2004, it’s also North America’s only world-class-rated distillery.
Similar to wines, craft spirits taste unique as they are infused with local agricultural flavours. “Our raison d'être is really grabbing that expression of local, and that terroir-driven experience,” said Tyler Dyck,
Okanagan Spirits’ CEO. “That’s why we grow all of our own grains in the Okanagan Valley. All the fruit is grown here too. We’re a four-generation family in the Okanagan and we feel our story to tell is the story that’s all around us.”
TALLEST COPPER POT STILL IN NORTH AMERICA
At Okanagan Spirits locations in Kelowna and Vernon, you can see the craftsmanship that goes into creating distinct, award-winning drinks. Their flagship Vernon distillery is home to North America’s tallest copper pot still. They offer tours of the 1930s-style production facility. Both distilleries offer tastings. People generally don’t know how spirits are made, said Dyck. In total, Okanagan Spirits crushes about 750,000 pounds of fruit and mills 250 tons of grain every year, then makes fruit or grain wine out of it. The wine gets distilled down into a spirit as they concentrate the flavour.

“We want to invite people into our facility so they can experience the theatre and the aromas that are coming off the production site,” Dyck said. “They can see the steam coming off, the spirits coming off the still. After a tumultuous past year, Lake Country’s newest winery is eager to welcome guests this season. “We’re really proud of our community, and how we were able to keep going while keeping people safe,” said Heather Courtney, Peak Cellars’ general manager. “I’m so proud of our staff and how hard they worked. I think we’re all very excited for what this summer has to offer.”
VINEYARD BOOTCAMP
For those looking for a fun way to get their steps in this summer, Peak Cellars has partnered with TWP Fitness to host Vineyard Bootcamp. Every Thursday night until the end of August, starting at 6 pm, guests can participate in this outdoor fitness class. Guests will be shuttled to the winery’s 100-acre vineyard where they will be led by a fitness professional through a 45-minute workout. Following the workout, guests will be shuttled back to the winery where they will be treated to a nutritious post-workout dinner. With classes limited to nine people, and only $49 per person, you’d better sign up soon as availability is going to go quickly!
NEW WINES
Peak Cellars is adding a few new wines to their collection this summer, including their Goldie White and Goldie Red. A blend of Pinot Gris, Riesling and Gewürztraminer, the Goldie White is refreshing and fruit-forward on the nose, making it the perfect wine to sip on the patio. The Goldie Red is a combination of Gamay backed with Pinot Noir. This light-bodied red’s subtle earthy notes and delicate nose make it approachable for all wine drinkers. The Goldie collection is named after Lake Country’s historic Goldie family, who owned a lot of the land that is now Peak Cellars’ vineyards. To learn more about the Goldie collection, take the Goldie Block Tour, offered every day starting at 11 am. Guests will start with a glass of the Goldie White in the vineyard and wander through the rows learning about viticulture practices. They will then head over to the winery’s half-acre garden and return to the winery to taste the three wines that make up the blend. “The tour is a fantastic way to learn about viticulture, and a bit of the area’s history,” Courtney said. “It’s really interesting to taste the blend and then be able to break it down and see how different each varietal tastes on its own.”

Helping people enjoy fine food has always been part of Melanie Mulherin’s life. Her grandfather owned a grocery store, and her grandmother took joy in entertaining dinner guests. Mulherin founded Salt Spring Kitchen Co. in 2012 and since then has been proudly producing savoury, spicy and sweet jams, chutneys and sauces by hand on the artisan-rich Gulf Islands. The company’s small band of jam lovers are constantly inventing recipes that excite and delight, says Mulherin. She learned the art of preserving in the early 2000s from her mother-in-law and started experimenting with recipes in her family's restaurant. One of the earliest hits was a spicy tomato jam that is still one of Salt Spring Kitchen’s bestsellers today.
SALT SPRING KITCHEN FINDS A FOLLOWING “I started sharing the creations I made in my home kitchen at Salt Spring Island’s Saturday market in 2012 and found a loyal following right away,” Mulherin said. “Bit by bit, our little jam company grew until we moved it out of our home and into a commercial jam kitchen. Since then, I’ve been able to share my love of canning with jam aficionados in BC and across the country. We love the idea that everyone deserves a little bit of Salt Spring Island. The winery has been producing this celebrated red blend since 1999, and the 2019 vintage will mark two decades of tradition. “This will be Ross’s first Nota Bene vintage that he created from start to finish,” said Jesse Collins, Black Hills’ estate manager. “With Ross at the helm, Black Hills has really placed an emphasis on sustainability and organic viticulture. This holistic approach to winemaking truly makes a difference in the wine we produce. We’re really excited about it.”

This summer, Black Hills has partnered with renowned local chef Jeff Van Geest to create Tapas Gordito. The new tapas bar will be serving Spanish-inspired dishes like true Spanish conservas, tapas such as patatas bravas and grilled chorizo in cider, as well as a selection of both locally sourced and imported charcuterie and cheeses.
“Chef has really elevated our culinary offerings to put forward something that’s more unique, but still absolutely delicious,” said Collins. “Our goal is to offer exciting, shareable bites to pair with our portfolio of wines.”
