Although some people have mastered baked goods, others can benefit from a few tricks of the trade. Utilize these tips to make holiday baking that much easier. • OVERWORKED COOKIE DOUGH MAY RESULT IN DRY COOKIES. Try not to handle dough more than is necessary to roll it out to desired thickness. When rolling the dough, put it between two pieces of waxed paper to reduce flour usage on the rolling pin. • When baking brownies or other bar-type cookies, LINE THE INSIDE OF THE PAN WITH GREASED ALUMINUM FOIL. This way you can lift out the dessert and cut it neatly instead of risking sticking.
• DOUBLE-CHECK YOUR OVEN TEMPERATURE with a reliable thermometer to make sure it is accurate. This will help you bake more efficiently and adjust the time or temperature accordingly. • MANY COOKIE DOUGHS CAN BE REFRIGERATED OR EVEN FROZEN, so you can make a big batch and then spread out your baking as needed throughout the season.

tart, creamy and lovely … this recipe for Cranberry Honey Baked Brie is a delight to share at holiday parties. Warm, melty brie combines with warm cranberry sauce and sweet honey for a decadent appetizer that feels fancy. But really, it’s pretty simple. Just three ingredients that together to make something creamy, sweet and tart, perfect for enjoying with fresh apple slices, bread or whatever you want. Serve it with a knife to help folks get that cheesy goodness. It won’t take long to make. You can use homemade cranberry sauce, or store bought. And whatever honey you keep on hand. And enjoy. Wishing you the happiest of holidays, whatever holiday you celebrate.
CRANBERRY HONEY BAKED BRIE AUTHOR: SARAH WALKER CARON SERVES: 8-10 INGREDIENTS 8 oz wheel Brie cheese ½ cup whole berry cranberry sauce 1-2 tbsp honey FOR SERVING: Bread, crostini, crackers, sliced apples or a combination thereof INSTRUCTIONS Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and place the Brie on it. Top with cranberry sauce. Bake for 7-10 minutes until the Brie is soft. Transfer Brie to a serving plate. Drizzle with honey. Serve with your choice of dippers — like bread, crostini, crackers or sliced apples.

Chocolate Pistachio BISCOTTI BY SARAH WALKER CARON
years, I have been making a variety of Christmas treats to gift to our near and dear friends and family. And one of my very favorites to gift is biscotti. These little cookies are perfect served with a piping hot cup of coffee. This is the kind of food gift you give to the friend you love lingering over conversation with — because it’s perfect for that. Making biscotti is a process. You start with the dough. This isn’t as simple as tossing ingredients together though. It needs to be kneaded together with care — this will take a few minutes, and you must be patient. Keep working with it until it forms a cohesive ball. Then you roll it into a log and pat it down. Next comes the first bake (yes, biscotti has to bake twice). The first time you bake it, it cooks the ingredients so they meld together into a loaf. But it doesn’t become biscotti until you slice it into strips and re-bake it. Then it crisps into that delightful cookie that’s perfect to serve with coffee (be sure to dip it!). Dotted with chocolate chips and bits of green pistachios, it’s a treat. Package some biscotti in festive bags or boxes to give this holiday season.
CHOCOLATE PISTACHIO BISCOTTI AUTHOR: SARAH WALKER CARON RECIPE TYPE: Dessert SERVES: 24 pieces INGREDIENTS 2 cups all-purpose flour ½ cup sugar 1 tsp baking soda ½ tsp salt ½ cup mini chocolate chips ½ cup pistachio meats, chopped 3 large eggs 1 tsp vanilla extract INSTRUCTIONS Preheat oven to 350 degrees. Line a baking sheet with parchment paper. In a large bowl, sift together the flour, sugar, baking soda and salt until well combined. Stir in the chocolate chips and pistachios. In a small bowl, beat together the eggs and vanilla extract. Pour into the dry mixture and stir until

combined. The mixture will be crumbly but should be moistened. Turn the dough out onto a floured board and knead well for 2-3 minutes, until the dough comes together in a cohesive ball. Shape the dough into a 12-inch log and transfer to a parchment paperlined baking sheet. Flatten the dough to 1-inch-thick. Slide the baking sheet into the oven and bake for 30 minutes. Transfer to a wire rack and cool for 10 minutes. Reduce the oven to 325 degrees. Slice the biscotti into ½-inch thick pieces on the diagonal. Place on the baking sheet and bake for 7-8 minutes per side, flipping once. Transfer the biscotti pieces to a cooling rack and cool completely. Store in an airtight container and enjoy within a week.

something quick for your holiday festivities? Why not make some easy crostini. With so many options for topping them, crostini can be a tasty offering for any gathering. But, first, what is it? Crostini sounds impressive but really it’s a fancy word for something that’s just somewhere between toast and a crouton. If you like bread (and crackers), this is for you. And ultimately, crostini is a vessel for delicious toppings. It can be fancier like the Sage Ricotta Crostini with Sugared Cranberries I shared a few weeks back, or it can be simple like the ideas below. Ready to make some? This is a simple process of brushing slices of bread with oil, seasoning and baking.

HOW TO MAKE CROSTINI AUTHOR: SARAH WALKER CARON SERVES: 8-12 INGREDIENTS 1 French baguette, sliced into ¼-inch slices Olive oil Salt and pepper, to taste INSTRUCTIONS Preheat oven to 350 degrees. Arrange the bread slices on a baking sheet (or two, if necessary), and brush with olive oil. Sprinkle with salt and pepper. Bake for 10-12 minutes until just beginning to brown. Remove from the oven and let cool slightly before topping and serving.
Once you’ve made the crostini, it’s time for the fun part: topping it. Here are a few ideas to get you thinking.
EASY IDEAS FOR TOPPING CROSTINI QUICK BRUSCHETTA: Mix together
diced fresh tomatoes with chopped fresh basil, salt and pepper. Spoon onto crostini and drizzle with a touch of balsamic vinegar glaze CAPRESE: Spread basil pesto on

According to the Bureau of Transportation Statistics, during the Christmas/New Year holiday period, the number of long-distance trips (to and from a destination 50 miles or more away) increases by 23 percent compared to the rest of the year. While many of those traveling will stay in hotels, many more will enjoy the hospitality of loved ones. Holiday hosting can make an already hectic time of year that much busier, as hosts must prepare their homes for guests in the midst of holiday shopping excursions, office Christmas parties and social engagements around the neighborhood and at kids' schools. Holiday hosting does not have to run hosts ragged in the days leading up to guests' arrival. The following are a handful of ways to simplify holiday hosting. PLAN MENUS WELL IN ADVANCE OF GUESTS' ARRIVAL. One of the more timeconsuming tasks associated with holiday hosting is cooking. Hosts who plan their holiday menus in advance can get started on prep work several weeks before guests arrive. Choose dishes that can be prepared in advance and then frozen, so dishes need only be defrosted and cooked once guests arrive.

Festive Tree-trimming TIPS AND TECHNIQUES

People
have visited forests to select their Christmas trees for centuries. While tree sellers conveniently stationed in store parking lots and artificial trees displayed in various retailers have led fewer people to venture into the wilderness, the Christmas tree is still an important component of holiday celebrations. Long before the spread of Christianity, evergreen plants and trees held special meaning for people during the winter. Boughs and garlands were hung in homes and over doors and windows to repel evil spirits and illnesses. On the winter solstice, the greenery would represent that spring would once again arrive and banish winter's dreariness. Germans who decorated trees inside of their homes are credited with starting Christian Christmas tree traditions during the 16th century. Early Americans were late to adopt Christmas trees because early Puritan settlers thought the tradition — as well as carols and other concepts — were Pagan influences. It took the popularity of England's Queen Victoria and her German Prince Albert appearing around a decorated Christmas tree to eventually win over much of Europe, Canada and the United States. Trees are very popular today. According to StatisticsBrain, 10 million artificial trees are sold in the United States each year, while 34.5 million real tress are sold annually. Such trees require decorating, and the following secrets and tips can help celebrants do just that. PRUNE THE TREE FIRST. Be sure to shape the tree as desired, since natural trees will have branches sticking out. Wear gardening gloves to avoid being covered in sap. SAFETY FIRST. Position trees away from heat sources, such as fireplaces, vents or radiators, which can cause the tree to dry out prematurely and become a fire risk. For added safety, anchor a tree to a wall or ceiling, so it will not tumble over onto children or curious pets. Hang the most delicate pieces toward the top where they won't be disturbed. GO NATURAL. In homage of the first German Christmas trees, decorate with natural ingredients, such as berries and pinecones. Also, use apples, nuts and marzipan candies. FREE SPACE. To free up more space for presents, place a narrow tree stand inside of a waterproof planting container. Place the tree inside. This will provide a more streamlined look that's neater than a tree skirt. Tree trimming is one of the most enjoyable aspects of the holiday season, and there are no rules other than safety guidelines when it comes to decorating.

when the excitement of opening presents abates after the last of the packages under the Christmas tree have been torn open, children and adults alike may discover that there are more treats to be had nestled inside of stockings hung on the mantle. The hanging of Christmas stockings is a tradition with an extensive history. Several legends attribute the hanging of stockings to different people or events. Here is a look at some of the stories that have made Christmas stockings so popular. ST. NICHOLAS DAY Rather than hanging stockings on Christmas, many countries celebrate Saint Nicholas Day on December 6, and this is when stockings are proudly left out for treats. The small, inexpensive trinkets are later unwrapped and enjoyed on Christmas Day. MERCHANT'S FAMILY STORY A popular tale tells the story of a merchant, his wife and three daughters. After the wife falls ill and dies, the man becomes devastated and squanders all of his wealth on frivolous things to mask his sadness. When it comes time for the daughters to marry, the man does not have money for a dowry. St. Nicholas hears of the plight and
knows the man would be too proud to accept charity. Therefore, St. Nicholas anonymously tosses three bags of gold coins down the chimney. The man's daughters had done the laundry prior and left their stockings hanging by the fireplace to dry. The gold landed in the stockings, thus starting the Christmas stocking tradition. DUTCH HERITAGE One tradition says that, in 16th century Holland, children kept their clogs filled with straw in front of the hearth for Santa's reindeer to find. They also left treats for Santa Claus. In return, Santa would leave gifts in the clogs. Over time, stockings were swapped out for clogs.

ITALIAN GOOD WITCH One stocking story does not attribute the tradition to Santa, but to a kindhearted Italian witch named “La Befana.” La Befana arrives on a broomstick the night of January 5 and fills the stockings of good children with sweet treats and toys. Bad children are awarded lumps of coal. La Befana is also credited with being the old woman who the wise men ask for directions to Christ's manger in the Christ child's story. After turning down an offer to accompany them, La Befana later carried gifts in search of Christ.

all the holiday presents have been purchased, the task of wrapping can begin. Although some people find wrapping is relaxing and provides a chance to embrace one's artistic flair, many others find wrapping gift after gift becomes tedious quite fast. While there are no statistics on just how many gifts the average person purchases over the course of the holiday season, the National Retail Federation says the average consumer will spend around $800 on all things holiday. That means there will be a lot of gifts to wrap before the big exchange. Those who want to make gift-wrapping less tedious this holiday season can consider these ideas to streamline the process.
GATHER ALL SUPPLIES When the time comes to wrap gifts, there's nothing more frustrating than hunting for wrapping supplies. Have paper, bows, bags, tissue, pens, tape (double-sided tape streamlines the process), scissors, ribbon, and any other wrapping accoutrements at the ready. Set up a folding snack table near your wrapping area to hold the supplies so they don't get in the way. SQUARE IT UP If you are a master at wrapping rectangular or square gifts but fail when presents are oddly shaped, place misshapen gifts into boxes and then wrap the boxes. Gift bags also can be used for such gifts, but wrapped boxes may look more appealing under the tree. FABRIC OVER PAPER If you think gift wrap is wasteful, think about repurposing fabric into beautiful wrapping for presents. Craft a DIY stamp roller or handmade stamps to dress up plain brown bags. Or wrap the gift in twine and add a sprig of evergreen for a rustic look. During their second annual holiday debt survey, the financial resource MagnifyMoney found consumers who took on debt during the 2016 holiday season started the New Year an average of $1,003 in the red. That marks an increase of 1.7 percent over 2015. Rather than finding themselves in debt again next January, shoppers inclined to use their credit cards this holiday season must recognize the importance of budgeting for all holiday expenses —including those that may not immediately come to mind, such as gratuities for service providers. Gratuities are gestures of kindness and appreciation during the holiday season. Although gratuities are not entirely necessary, many etiquette experts say certain people, particularly those who provide year-round services, are worthy of a little extra money this time of year. Consider thank-you notes for those people who don't land on this year's gratuity list. The following is a list of service workers whose efforts throughout the year are typically worthy of gratuities come the holiday season.
POSTAL WORKERS: Postal workers face the elements each and every day to make sure letters and packages arrive on time. Their work is made even more challenging during the rush of the holiday season, when mail flow increases considerably. Today's families are increasingly blended, meaning they're a combination of families due to divorce or death. Even though the holidays are meant to be joyous, navigating traditions and accommodating the unique needs of all involved — including cultural traditions, visitation schedules, rituals, and religious beliefs — can be challenging. But blended families need not fret as they attempt to negotiate Christmas, Chanukah, Kwanzaa, or New Year's. LOGISTICS The first step to holiday planning is to keep in mind predetermined custody or visitation agreements. Although there can be hope for holiday flexibility and generosity, try to stick as close to existing arrangements as possible. Some families choose to divvy up
particular holidays throughout the year in advance. Others may do it as plans get arranged. As long as the arrangement is fair to everyone, the choice is up to the families. The plans should be made known to all involved. DISCUSS EXPECTATIONS The Stepfamily Association of America says that communication during the holiday season is vital, especially for children so they know what to expect. Writing down specific itineraries can help alleviate the stress of not knowing where they will be at a given time. All members of the family should vocalize how they feel about particular aspects of the holidays so that no one is disgruntled. Do not expect others to be mind readers. Perhaps one person is focusing a significant amount of energy on trimming the tree when that isn't as important to others. Discussing expectations can make planning that much easier.

CREATE NEW TRADITIONS The holidays without everyone under the same roof enjoying traditions that have been part of celebrations for years can contribute to feelings of anxiety for people accustomed to these annual traditions. Draw the focus away from how things used to be done and create new traditions that all can anticipate. An annual outing to see a concert or show or hosting a holiday movie night might be a new tradition the entire blended family can enjoy. DON'T EXPECT PERFECTION Putting too much emphasis on trying to make the holidays perfect can backfire. All families must recognize that holiday celebrations will change. It can take time to find a new celebratory rhythm, and comparisons always will be made. It's acceptable to have mixed feelings about new traditions, but each member should go into the season with a positive attitude.

This popular convention unveils the industry's hottest trends and toys, attracting more than 1,000 exhibitors. The Toy Fair, and recommendations by toy and game industry experts around the world, like Dr. Toy and The Toy Insider, help cement which toys are likely to end up on kids' holiday wish lists. For those shoppers who fell behind the curve and missed out on last year's break out "Hatchimal" hit, the following figure to be the most coveted items for this year of giving. • LEGO BOOST: Lego continues to reinvent itself, offering add-ons to its popular building brick model. Lego Boost takes advantage of the STEM trend by enabling children to build and code any of the five models of building sets. These include a cat, robot, guitar, rover, and building machine. Or, they can use the pieces to create their own designs. The models work with an app and can be coded to make different motions and sounds.
• NERF N-STRIKE ELITE: Nerf brand has been popular for decades, and the company continues to churn out popular items for boys and girls. The N-Strike Elite series has a number of incarnations to tempt sharpshooters. Nerf's new AccuStrike line is designed to improve accuracy with specially crafted darts that sail straighter than the original darts.

the tip of the North Pole resides a jolly man who collects letters from children asking him to deliver all of their hearts' desires. According to Smithsonian, the practice of writing to St. Nick dates back more than 150 years. Early depictions of Santa show him as a disciplinarian. The first Christmastime Santa letters were actually sent by Santa, rather than the other way around. Such letters encouraged children to be good boys and girls. Eventually, an illustration by Thomas Nast depicted "Santaclaussville, N.P." as Santa's address, providing children with a place where they could send their correspondences to the big guy in red. The Universal Postal Union indicates that Americans sent more than one million such letters in 2012, the most recent year from which figures are available. To account for the staggering number of letters sent, various post offices and postal programs were established to help Santa with the task of tackling children's wish lists. With so many letters, Santa Claus sometimes he needs assistance with reading and responding to the thousands upon thousands of letters sent to him each year. In 2016, the USPS instituted a new letter-writing option that enables parents or guardians to include a personalized response letter back to children who address letters to Santa. The package can be postmarked to: North Pole Postmark Postmaster, 4141 Postmark Drive, Anchorage, AK 99530-9998. Many other letters to Santa end up routing to various post offices where thousands of volunteer "elves" can adopt letters and make children's wishes come true. A "Letters to Santa" program enables children in serious need to get items that can help keep them safe and happy. Santa has even gone high-tech with personalized videos and pictures as well. A quick web search can yield the instructions on how prospective helpers can get started.
