Save Small’s Creek group hopes to stop cutting of area trees By Ali Raza, Local Initiative Reporter
Journalism
RESIDENTS ARE worried about Metrolinx plans that would remove 268 trees in the Small’s Creek Ravine, northeast of Coxwell Avenue and Gerrard Street East. As part of the new expansion of the rail corridor heading east along the Lakeshore East and Stouffville lines, Metrolinx is expanding its railway from three to four tracks in the segment in East Toronto. The proposed expansion and electrification of the railway is expected to deliver faster and more frequent GO trips along the corridor. But residents are raising concerns the project might have long lasting impacts to the environment. “We’re not opposed to Metrolinx expanding public transit, we think it’s a great idea,” said Paul Westbook. “The heavy handed way they’re doing this is what upsets us.” Westbrook and another resident, Cleo Buster, both have their backyards facing Small’s Creek ravine. In addition to their immediate stake in the project, they raise concerns as part of a community group called the Small’s Creek Crew, aimed at raising awareness to the tree removals in the ravine. “It feels like Metrolinx is not being transparent with information regarding this project,” Buster said.

“This is one little section of a huge project, but it has a significant impact on the Small’s Creek ravine, and the Williamson Park ravine.” The proposed tree removal and retaining wall “runs the risk of completely destroying a natural ecosystem,” Westbrook added. The group believes there are better solutions for the transit expansion, but further meaningful community consultation is needed. The number of trees to be removed was not shared with the community, they said, and it was only known to residents in late November. “As a community, we’ve had geotechnical engineers, civil engineers, architects, landscape architects, a forestry expert,” Buster said. “There’s a lot of skill and knowledge in the community that’s saying this is not right and can be done a better way.” The group has organized a campaign to “Save Small’s Creek” at www.lakeshoreeasttrains.com/ smalls-creek-more-information It includes a petition requesting Metrolinx to reconsider the tree removal that has received 2,485 signatures as of Jan. 10. The group has also hosted webinars for members of the community explaining the expansion project and the related risks. Members have also distributed flyers to 2,500 homes in the area informing other residents Continued on Page 3

Retail cannabis store on leased No action to be taken against bakery after complaint regarding alcohol in baked goods city site is not a permitted use By Alan Shackleton
THE ALCOHOL and Gaming Commission of Ontario (AGCO) will not be taking any action against a Leslieville bakery that was the focus of an investigation after a complaint by a member of the public regarding the sale of baked goods made with alcohol. In a letter sent to Lynda Paul, owner of It’s The Icing on the Cake bakery on Queen Street East, sent late on the afternoon of Jan. 8, the AGCO said “it will not be taking any further action” in relation to the complaint. In an interview with Beach Metro News on Jan. 9, Paul said she is happy to put the matter behind her. “It was so stupid to begin with, and couldn’t have come at a worse
time…during a pandemic and just before Christmas,” she said. Paul has been running the bakery for the past 16 years in Leslieville, and had never previously been visited by any government agency regarding alcohol content in baked goods. Beach Metro News first reported on the AGCO investigation on Dec. 18. At that time, Paul said she was visited by a compliance officer who said the complaint had been made regarding the alcohol content of baked goods she was selling such as Kahlua brownies, Cointreau fruit cake, and bourbon-peach cheesecake. “He said they had received a complaint by a person that I was selling alcohol illegally,” Paul said in an interview on Dec. 18.
Since the complaint had been made, the AGCO had to look into it. In the Dec. 18 story, Paul said the complaint was likely made as a vindictive act towards her and the bakery. Those vindictive intentions aimed at hurting her business ended up doing the opposite, said Paul on Jan. 9. “It backfired on them. I’ve never had so much attention. I was doing radio interviews, and received lots of support from other bakeries and the community.” Paul said she did not need the stress of the complaint hanging over her and her business these past few weeks and is glad it is over now. “I would be doing cartwheels right now if I could.”
THE CITY of Toronto has contacted the leaseholder of a property in Woodbine Beach Park to let them know that an application being made by a retail cannabis company for one of the building’s units is not a permitted use. The leaseholder has been told by the city to withdraw the authorization application being made to the Alcohol and Gaming Commission of Ontario (AGCO) by the Miss Jones company for a cannabis retail shop at 1681 Lake Shore Blvd. E., Unit 1, Beaches-East York Councillor Brad Bradford’s office told Beach Metro News. The full statement from the city’s legal department reads: “A cannabis retail outlet is not a permitted use of the Premises, Parkland and Licensed Area un-
der the Lease/License Agreement between the City and the Tenant. As per the terms of the Lease/Licensing Agreement, the license to use the Premises, Parkland and Licensed Area is limited to the Tenant’s food service business, sponsorship programs and activities. We have advised the tenant in writing and have requested they withdraw their application from the AGCO. The lease terms remain unchanged and the lease/license expires on September 14, 2028. There is no provision in the Lease/ Licence that permits the tenant to sub-lease.” The site is the subject of a longterm lease between the City of Toronto and Tuggs Inc. In 2007, the city entered into the lease which will run until September of 2028.

GREEKTOWN ON the Danforth BIA director and former Toronto city councillor Mary Fragedakis is seeking the Ontario Liberal nomination for the riding of Toronto-Danforth. She announced her candidacy on Jan. 6 with a vow to protect small businesses and local communities, especially following the aftermath of the COVID-19 pandemic. “We see students are suffering, small businesses are struggling, the elderly are dying in long-term care homes, all of these things are totally unacceptable to me and the people in this riding,” Fragedakis said. “I think leadership is impor-

tant and the issues are too important to sit on the sidelines.” The effects of the COVID-19 pandemic, and more importantly the Ford government’s response, is what prompted her to seek the nomination, Fragedakis explained. “Small business is closed, but the case numbers have exploded,” she said. “Yet the big box stores are still open.” Fragedakis cites the rise in case numbers despite small business closures as evidence that small business is not responsible for the primary spread of the virus in the community. “I see people are frustrated by the lack of leadership,” she said. “I see people frustrated with policies that are hurting them, and then people see, we’re closed down, but the numbers are still growing, obviously transmission not happening in small business.” Fragedakis was city councillor for Ward 29 TorontoDanforth from 2010 to 2018. In 2018, Premier Doug Ford
halved the number of wards in the city, removing her position alongside other councillors. Since then she’s served as executive director for the GreekTown on the Danforth BIA. During her time as councillor, she was an advocate of public transit and served on the board of TTC and helped introduce the two-hour TTC Transfer Policy to ease overcrowding. She has also served on the boards of the Toronto Public Library, Art Gallery of Ontario, Toronto Zoo, Harbourfront Centre, and the Sony Centre for the Performing Arts, and is a current board member of the Toronto Association of Business Improvement Areas. “The success of main street small business is fundamentally tied to the well-being and success of the community as a whole,” Fragedakis said. Fragedakis has a Master of Arts in Political Science from the University of Toronto and completed the Directors Education Program at the Rotman School of
Management. A lifelong progressive, Fragedakis believes Toronto residents want real solutions and joining the Liberals will help accomplish those goals. “The Ontario Liberal Party is the best party to represent the people of Ontario,” she said. “I’ve always been a progressive, and the issues are what matter to me.” Fragedakis’ main priorities focus on education and childcare, small business, and transit and transportation. The Toronto-Danforth Provincial Liberal Riding Association will announce nominees, and the nomination schedule later this year. The riding is held provincially by NDP MPP Peter Tabuns who was first elected to the seat in 2006. The next provincial election is expected in June of 2022. Metrolinx planning railway expansion Continued from Page 1 of the project. Their requests include justifying the need for the retaining wall and culvert in the ravine, and identifying which alternatives were considered and why they were rejected; conducting an ecological integrity assessment and publicizing the findings; and reducing the number of trees slated for removal by 75 per cent. In addition to the tree removal, residents are also concerned that construction work is slated to take place during overnight hours to avoid disrupting the daytime and evening transit trips. Regarding Metrolinx’s construction plans (yet to be finalized), residents are also requesting that the schedule avoid work between 1 a.m. and 5 a.m. to reduce neighbourhood disruption, and that noise barrier be installed between Coxwell Avenue and Woodbine Avenue and other noise mitigation solutions be sought. As residents raised concerns about the lack of community consultation, Metro-
linx responded by saying its staff has been consulting with the community in the Danforth-Woodbine area and that its current plan was the best choice. Beach Metro News asked Metrolinx to comment for this story, but was referred to a Q&A blog post that the agency made to answer several questions from the community regarding the project. “Recently, Metrolinx staff walked through the Small’s Creek ravine with community members to hear their feedback in advance of construction,” the post read. “Whether it’s in-person, over the phone, or digitally, the transit agency’s community relations team have been talking with many engaged citizens in the last few weeks,” it added. The project has two key components, and much of the construction will take place immediately north of Wildwood Crescent. The two components are the construction of a retaining wall and a culvert replacement under the track. The retaining wall is for the new, four-
track line, while the culvert replacement is for flood protection, as the current culvert is reaching the end of its use. These projects involve tree removal to accommodate a new slope, as “the flat portion on top of the current embankment is not wide enough before the ground slopes away,” Metrolinx said. According to Metrolinx, confirmed by the Toronto and Region Conservation Authority, a total of 268 trees will be removed. Of those, 210 trees are within Metrolinx’s property lines, while 58 are on city-owned lands. Metrolinx said it intends to plant an additional 188 trees, and once finished a total of 260 trees and 932 shrubs will be planted in the area to “support re-naturalization.” Trees must be removed from the slope and cannot be replanted on the slope, as it would be too close to the electrification infrastructure expected to be installed. Metrolinx has yet to award the contract, but “we’re being told that it could happen as early as late January,” Buster said.

Obituary
Gary Webb-Proctor remembered as dedicated journalist and musician GARY WEBB-PROCTOR, known as Gary 17, a wellknown music promoter, songwriter and journalist, passed away on Dec. 28, at the age of 70. Family and friends spread the word on Facebook, which quickly filled with tributes to the local impresario. Musician Julian Taylor said, “He was a legend and he was my friend. He was like a circus ring master and he knew the whole Toronto music scene like the back of his bicycle gloves. Everyone knows Gary 17. An odd duck, a real character and a one-ofa-kind individual who tried his best because at the end of the day he cared a lot about the music, the musicians and the scene. If there was ever

Musician and journalist Gary Webb-Proctor. an unsung hero for the Toronto Music Scene, he would certainly be one of them.” Webb-Proctor said he studied Survival at Hard Knocks University, but he certainly had a knack for publications. “Gary was your classic newspaperman, full of opinions, dogged in his determination to get the ads and the subscriber audience, and eager to embrace digital to maximize his content,” recalled Tina Novotny, a freelance writer. “Gary was a great supporter of neighbourhood initiatives, like the Danforth East Community Association’s programs and events. He was always out there tearing around on his yellow e-bike making sure he captured local stories that mattered.” Webb-Proctor created tonite magazine in the early 1990s, distributed in music venues from Oakville to Oshawa and up to Aurora, then sold it to a group that turned it into a daily news publication. That’s when he took his music coverage online as To-
ronto Moon starting in 2009. He also published The Danforth CentreTown News for four years, then started his monthly news magazine, The East York Chronicle, in January 2014. “I wrote a catch-all column for the Chronicle called East York Moments,” said Novotny. “Gary always wanted as many voices in the Chronicle as he could get. I know his first love was the Greater Toronto music scene, but Gary had a huge commitment to our Beaches-East York community, which he summed up in the Chronicle’s mission statement.” The mission statement read: “The very divergence of viewpoints, backgrounds, heritage and religious/political affiliations that you’ll find in this area is indeed part of what it makes it so unique. It is a human-scale community in which people who derive their origins from all over the globe live together if not in perfect harmony then at least for the most part in a passably peaceful way. This diverse microcosm within
the microcosm of multicultural Toronto, we believe is, in its own way, ‘Showing the World How to Live Together.’” Toronto-Danforth Councillor Paula Fletcher said Webb-Proctor will be missed. “I was very sad to hear about Gary’s passing and I know he will be missed by many. He was the founder of the East York Chronicle and loved writing about East York. He touched many lives and helped the community stay connected. He was also a titan in Toronto’s music scene and promoted and mentored many east end musicians. My sincere condolences to his family and friends,” she said. “Gary spent his lifetime tilting his lance against windmills, waging war on the people and ideas he knew to be cruel with his only goal to make the world a better place,” said his Gary’s brother Ric Proctor, who lives in Alberta. “Gary was also a lot of fun, the life of the party as we say and he had a way of making you feel that you were the most important part of the show.” Due to COVID-19, Ric Proctor said a celebration of Gary’s life is not currently possible. “At this time, there are no formal plans for a ceremony of remembrance, but if you have a song to sing, sing it out loud.” Information in this obituary was put together mostly by Tina Novotny.

Reel Beach: Movies in East Toronto
The real sleuths of Victorian Toronto Bernie Fletcher MYSTERY MONDAYS are back! Canada’s most popular drama, Murdoch Mysteries, returned to CBC on Jan. 4 for its 14th season. Our favourite detective, William Murdoch (Yannick Bisson), is a man ahead of his time, but who were the real sleuths of Victorian Toronto? In 1894 our city skyline was dominated by church spires. Toronto the Good was a bastion of morality. A glimpse of stocking was looked on as shocking. Police even padlocked the playground swings on Sundays. There was this nagging fear that someone, somewhere, might be having fun. Murdoch fans enjoy the period costumes, manners and inventions which re-create the look of a bygone era. The series is filmed on location around Ontario and at a Scarborough studio. Author Maureen Jennings was inspired to create her character by the investigative work of a real Toronto detective, John Wilson Murray (18401906). In 1894 the boss at Police Station #4 was, in fact, Insp. Thomas Brackenreid (1847-1919) who was born in Ireland. The station was located on what is now Dundas
Street East and policed to the eastern city limits. Brackenreid served the force from 1867 until 1909. His first wife, Mary Ann, died of TB in 1881. He remarried in 1886 and lived in Cabbagetown near the new Riverdale Zoo with his wife, Annie, son Tom and daughter Florence who attended dances at the Balmy Beach Canoe Club. The gruff Brackenreid on Murdoch is played by Thomas Craig. “Mrs. B.”, Margaret, is portrayed by Arwen Humphreys, who grew up in the Beach. One of the joys of the show is the appearance of real historical figures like Thomas Edison, Harry Houdini and Dr. Arthur Conan Doyle. The creator of Sherlock Holmes did visit Toronto in 1894 for a lecture at Massey Hall. Murders were sensational news. Many believed that the devil was behind such evil. In one episode, Det. Murdoch and Dr. Ogden discuss the motives behind “sequential killers” and mention Jack the Ripper and H.H. Holmes. “I was born with the devil in me.” H.H. Holmes A month before Doyle’s visit, the “devil” came to Toronto in the form of Dr. Herman W. Mudgett, alias H.H. Holmes, with two little girls in tow. The story of Holmes’ killing spree against the backdrop of the 1893 Chicago
World’s Fair is told in Erik Larson’s book, The Devil in the White City, set to be adapted into a mini-series by Leonardo DiCaprio and Martin Scorsese. Holmes murdered the children’s father, Benjamin Pitezel, in an insurance scam. The coroner in Philadelphia, Samuel H. Ashbridge, assigned Det. Frank Geyer to investigate the bizarre death and the disappearance of the Pitezel children. (Ashbridge is a cousin to our founding pioneer family who left Pennsylvania in 1793.) Geyer came to Toronto in July 1895 and enlisted the help of his friend, Det. Alf Cuddy (1862-1947) who tracked the children to a home on St. Vincent Street where they found two small bodies. Newspapers were filled with the gruesome discoveries. Holmes was called “A Wolf in Human Shape” and executed in 1896. On a Saturday in February 1901, Insp. Brackenreid led a raid on a home at 2 John St. owned by bartender Thomas Craig and his sister Maggie (Margaret) Craig. Maggie was charged with keeping a “disorderly house” and fined $20. Thomas was fined $10 as an “inmate” of a “disorderly house”. I won’t guess what Tom and Margaret were up to in Toronto the Good.

In My Opinion
Action needed for a better future in 2021 Rima Berns-McGown MPP Beaches—East York
H
appy New Year! May it be a better year for all of us. I hope that 2021 marks a rapid turnaround in our collective fortunes – and that you all experience only joy and fulfillment, health and happiness. 2020 was brutal. Let us hope that in 2021 we see the virus beaten back and that we can build back better and stronger. I will continue to work with
everything I’ve got to hold the provincial and federal governments accountable to you. In the first instance, that has got to mean a rapid and efficient vaccine rollout. We need schools to be open but safe, with adequate asymptomatic testing of the school communities, small classes, and good ventilation. We need a rapid, massive overhaul of long-term care in Ontario – and that means, most importantly, adequate staffing and a living wage for personal support workers, so that they don’t need to sleep in shelters, can afford rent, and can work in just one place. We need national standards for LTC. We need them enforced. We
need corporations to stop profiteering off our elders. We need, in the short term, a moratorium on evictions and rent relief for tenants who have lost income to covid so that mom-andpop landlords can afford to pay their bills as well. And in the medium and longer term, we need policy that views housing as a human right – and that ensures that our elders will not be pushed out of our community by corporate landlords looking to jack up the rents in their apartments. We need smart policy that rewards small businesses that have poured their hearts and souls – and spent a lot of money – making
themselves safe. There is no reason to close businesses by category as we did during the first lockdown. We should be allowing small businesses to keep open if they keep to strict safety protocols. We know more than we did in March. We now know, for instance, that dogs are unlikely to transmit COVID-19, so why are we closing groomers? Groomers can do curbside drop-off and pick-up of dogs. They can put safe grooming protocols in place. We need guaranteed sick pay so that workers can afford to stay home if they are sick and aren’t forced to work sick so that they can pay rent so that they don’t find
themselves homeless in the middle of a pandemic winter…. Above all, we need to understand the way that systemic racism and discrimination currently mean that Black, Indigenous, and communities of other people of colour face barriers in every aspect of society, which have ensured that they have fewer opportunities and less ability to keep themselves safe from the pandemic. Let’s build back an Ontario that is clean, green, safe, and equitable for all of us. One in which all of us can thrive and live our best lives. One in which all of us are respected and well served by our institutions. Here’s to a better future.

Build higher to increase affordable housing Re: ‘Height of proposed Housing Now building on Queen Street East a concern for residents,’ Beach Metro News, Dec. 15. A number of local-residents and affordable-housing supporters also took part in the recent City of Toronto consultations about the Housing Now buildings proposed for 1631 Queen St. E. While some residents on the call were concerned that the development would exceed six storeys – as defined in the Queen Street ‘Urban Design Guidelines’, our volunteers requested that the City should allow all affordable-housing projects to exceed those arbitrary heightlimits that were created for marketrate developments. As was suggested nearly a de-
cade ago when those ‘Urban Design Guidelines’ were being drafted – it is irresponsible for the City to create design-guidelines and heightlimits on Queen Street without including default waivers for notfor-profit developments. Toronto has an affordable-housing crisis. The residents in our community can choose to be part of the problem – or part of the solution. In reality, that solution requires much greater density than any of the current ‘Urban Design Guidelines’ allow on both of the Housing Now projects at Queen and Coxwell – and at the Danforth Garage site at Coxwell and Danforth. Our Danforth and Beaches neighbourhoods need to get denser, new rental-apartment develop-
ments near our transit stops need to be taller – and our priority as a community has to focus on more on the real-world costs of constructing new affordable-housing in the 2020s, than on shadow-policy and angular-plane designs that collude to make new affordable-housing project on those streets infeasible for not-for-profit developers. Saying that you support new affordable-housing or seniorshousing during City planning consultations is meaningless – if you are also asking the City to enforce design-constraints and parkingminimums that make the buildings impossible to construct under a not-for-profit model. On the site at 1631 Queen St. E., our Housing Now volunteers have
asked the City to consider a 10-storey frontage on the Queen Street side of the development – with zero step-back or angular plane, while maintaining the 17-storey tower on the Eastern Avenue side. This change alone would help to provide dozens of new affordablehousing units on the site – and increase the overall unit-count closer to 300 units with 150 units in the affordable-housing pool. We hope that more residents who are supportive of maximizing the affordable-housing opportunities on City-owned lands come-out to the next-round of consultations on these projects in 2021. Bike lanes have choked off Woodbine Ave. Re: ‘Bike lanes have caused gridlock,’ Letters, Beach Metro News, Dec. 15. I read the letter from J.Reistma and am in agreement despite being an avid cyclist. Unfortunately there are those in the cycling community who are too enthusiastic when it comes to cycling and want to impose their will on everyone. Woodbine Avenue is a major commuter link from east of downtown so to choke this route off only causes traffic gridlock and increases air pollution from idling cars. Bike lanes on Woodbine Avenue Continued on Page 7

Piano Bar shows help beat COVID blues By Ali Raza Local Journalism Initiative Reporter
PERHAPS A little jazz will help the COVID-19 blues. Canadian jazz musician and local resident Jim Clayton’s nightly online Piano Bar has attracted thousands of followers for just that reason. Since March of 2020 Clay-
ton’s has been livestreaming himself playing the piano (occasionally with his daughter Lenny) on the Jim Clayton Jazz Facebook page. On Dec. 28, he performed his 250th episode. His page has now has 27,000 followers. For his first 125 performances, Clayton included a virtual tip jar on his page, allowing viewers to donate
Happy medium needed Continued from Page 6 is a bad idea which should be rectified. I have rarely cycled on major streets as they are too dangerous. Old Toronto has a perfect street grid where other streets off the major ones can be used as cycling corridors so it would make sense to keep vehicles and bicycles apart as much as possible. The Jarvis Street bike lanes were also a mistake as that is a major auto route coming off Mount Pleasant Road. The time and money wasted on that was rectified when the Sherbourne lanes were put in, which is where they should have been in the
first place. Birchmount Road was the right street for a bike lane as Warden Avenue and Kennedy Road on either side of Birchmount are links to Hwy. 401. But the bike haters got those lanes removed many years ago. The bike haters also made a mistake by recently removing bike lanes from Brimley Road. The biking supporters want to get rid of cars and the bike haters want to get rid of bikes, but we need the happy medium so all concerned are satisfied. He has raised money for Glad Day Bookshop’s emergency fund, the New Orleans’ musicians’ clinic, the ACLU, and the Legacy of Hope Foundation to raise awareness of residential schools. Clayton takes two days off a week, performing five days a week online. “I’ve never had a Piano Bar where I wasn’t delighted at the end of it,” Clayton said. Queen Elizabeth II, Prime Minister Trudeau, the Governor General of Canada, the Premier of Ontario and the Mayor of Toronto all sent Della Certificates of Birthday Greetings which were much appreciated. Della was born on a homestead farm in south Saskatchewan in 1920 and, up until 2010, had lived in western Canada except for a brief time when she lived in Barrie. Della was married in Barrie in 1943 where her new husband was in training at Camp Borden and who was soon shipped overseas as part of Canada’s tank forces. A Source of Hope, Purpose and Pride

A client of Haven Toronto, Joseph spent most days inside the cozy library at the downtown drop-in centre. An avid reader and lover of literature, Joseph volunteered at Haven Toronto as Librarian, sorting through book donations, organizing the growing collection, and keeping track of the loans and returns. Joseph encouraged those around him to read more, he recommended his favourite novels, and worked with volunteers in the community to establish Haven Toronto’s first ever Book Club. It was a role Joseph took great pride in. Though he was homeless and living a rough life on the streets, Joseph began each day with a sense of purpose when he walked through Haven Toronto’s doors.

Surrounded by friends and those facing similar hardships, Joseph described the drop-in centre as a sanctuary, a place where clients were made to feel welcome – without judgement – a place to belong. In return, Joseph dedicated his time to making it a better place for others – clients, staff, volunteers and visitors alike. Almost a year ago now, with Haven Toronto’s nurse by his side, Joseph learned that he had cancer. He began treatment immediately while returning nightly to the cold streets. It was around this time when another significant event took place in his life. After several failed attempts to contact him, Joseph’s sister traveled from Ottawa to Toronto to visit. Independent and proud, Joseph had not reached out to his family for support during his struggles. During the first of what would be many visits, Joseph proudly shared with his sister Haven Toronto’s long history, taking her on a tour of the facility, introducing her to friends, and showing her his achievements in the library.
In a note to Haven Toronto, Joseph’s sister said, “I learned that Haven gave him a sense of purpose. It gave him a community, including people who became his close friends. Haven also helped meet basic needs such as food and clothing.” “At a time in Joseph’s life, when the turmoils of life were most fierce, when his independence and pride kept him from turning to family, Haven was there for him.” For elder men experiencing homelessness, it can be difficult to reach out to family for support and to share their struggles. “Sometimes, despite the presence of love,” wrote Joseph’s sister, “family members cannot directly help other family members.” “So, for whatever reason, when clients of Haven Toronto cannot turn to family, they can turn to Haven Toronto. We can trust that others are providing the care that we cannot. Haven lifts people up when they are most down.” When Joseph lost his battle with cancer, he was not alone. His sister was lovingly by his side, and by her side was Haven Toronto.

The Main Menu
January a good month for soup and chowder Jan Main is an author, cooking instructor and caterer janmainskitchen@ yahoo.ca
YOU KNOW Christmas is over when the turkey carcass is in the pot simmering away to make stock! This year, I opted for a large roasting chicken. As you can imagine, Christmas was downsized and the smaller bird made more sense. However, the technique to make stocks is the same for both turkey and chicken. It is the basis for hearty soup to weather the coldest winter day and chase away the blues - the final Christmas present! Basic Turkey or Chicken Stock (necessary for the soup) Remove any turkey (chicken) meat left on the bones; cover and refrigerate to be added to the soup after stock is completed. The turkey or chicken carcass can be broken in half at the rib cage to take up less space in the saucepan and allow better coverage with water. Be sure to use cold water not warm when covering the carcass. Cold water draws out the flavour from the bones. Only use enough water to cover the carcass. If you use too much; it will
make a watery soup, lacking in flavour. 1 carcass, turkey or chicken broken to fit into the saucepan cold water to cover (at least 4- 6 cups- /1- 1 1/2 L) more for a bigger carcass 1 large carrot, peeled and coarsely chopped 1 celery, coarsely chopped 1 large onion, peeled and coarsely chopped 1 bay leaf 1 tsp (5 mL) leaf thyme 1/4 cup (50 mL) fresh parsley with stalks In a large saucepan or Dutch oven, arrange carcass, cover with cold water. Add carrot, celery, onion, bay leaf, thyme and parsley sprigs. Bring to boil; reduce heat and simmer uncovered 1 to 1 ½ hours. Pour stock through sieve into large container or another saucepan. (Discard all the solids, veggies and bay leaf, their flavour is now in the stock.) Cover and refrigerate. When chilled, skim off fat and discard. Stock is now ready for soup. Stock may be used immediately or packed into plastic containers, labelled and frozen for up to three months for future use. Turkey or Chicken Soup Reserved turkey or chicken, cut into bite
size pieces 6 cups (1 1/2 L) turkey or chicken stock (more stock if you have it) 2 carrots, peeled and diced 2 celery stalks, finely diced 1 onion, chopped 1/2 cup (125mL) rice or barley 1 bay leaf 1 tsp (5 mL) each, thyme or tarragon and grated lemon rind (optional) 1/4 cup (50 mL) fresh chopped parsley 1 tsp (5 mL) salt 1/4 tsp (1 mL) fresh black pepper In large saucepan or Dutch oven add: turkey stock, carrots, celery, onion, rice, bay leaf, thyme, lemon if using. Bring to boil; reduce heat and simmer about 40 minutes or just until rice is tender. Stir in reserved turkey, parsley. salt and pepper. Taste. Add more salt and pepper if necessary. Serve at once. Serves 4. Haddock Mushroom Chowder A chowder is a robust soup usually with chunks of potato, other vegetables and in this case fresh or frozen haddock. It is substantial enough to serve as dinner if accompanied by a salad and crusty bread. This chowder was made with great success

over the holidays with delicious results. I hope you enjoy it too! 2 tbsp (25 mL) butter 1 leek, thinly sliced 1 clove of garlic, minced 2 cups (500mL) fresh, cleaned, sliced mushrooms, cremini or white 2 carrots, peeled and diced 2 celery, diced 2-3 potatoes, peeled and cubed (1/2 inch/1.2 cm) 1 L chicken stock 1-2 tsp (15 mL) finely chopped fresh tarragon 2 tsp (10 mL) grated lemon rind 1 cup (250 mL) dry white wine 1 bay leaf 1 lb (500 g) fresh or frozen haddock cut into 1- inch (2.5 cm) pieces 1/4 cup (50 mL) fresh chopped parsley In large saucepan or Dutch oven over medium high heat, melt butter. Stir in leek, garlic and mushrooms. Cook covered until leeks are wilted then stir in carrots, celery and potatoes. Cook stirring about 2 minutes. Stir in stock, tarragon, lemon rind, wine and bay leaf. Cook about 20 minutes or until vegetables are tender. Season with salt and pepper. Just before serving stir in fish. Cook about 3 minutes or until tender. Stir in parsley. Serve immediately. Makes 4 servings.

Teresa (Terrie) Marie Craig 1955 - 2020
Teresa (Terrie) Marie Craig was born in 1955. Sadly, on June 1, 2020 she passed away. She was affectionately known as “Too Tall with attitude” to her friends and co-workers. As a teenager she contracted cancer of the spine and medical science did its best but they could not get it all. The family was told Terrie would never walk again and they should start making memories. A while later Terrie got out of bed, and a follow up examination revealed that the remaining cancer was gone. Though disabled, Terrie devoted her whole life to helping others, most of that at Community Centre 55 where she worked with a great bunch of people. Her greatest love was Hamper, the supporters and the volunteers that helped all year make Christmas a little better and easier for those in need. Terrie brought smiles and love to many people and touched the hearts of multitudes. You could only meet her once and your heart would be changed. Gone but not forgotten.

From Quigley’s expansion to a dental office By David Van Dyke
Many Beachers will remember when this building was a Becker’s Milk store, on the southeast corner of Leuty Avenue and Queen Street East. I recall shooting the top image in 2006. Quigley’s, a very popular local bar, was looking to expand. They had secured this property and renovations had started. Needless to say, it never happened. For a short time a frozen yogurt store operated here, and today, ironically, it is a dental office. Do you have an old photo of the Beach that you’d like to share with our readership? Please contact me at gdvandyke61@gmail.com with your photos.

Jr. A Lacrosse team ‘workout’ helps out local businesses in need THE TORONTO Beaches Jr. A Lacrosse club raised more than $17,000 for local businesses at its recent Workout For Local event. Held virtually on Jan. 2, Workout For Local saw team members and officials take part in workouts in order to raise funds to help out East Toronto businesses that have been hard hit by the COVID-19 pandemic. The workout included a Zoom warmup with Grit Athletics, individual fivekilometre runs conducted under public health safety protocols, and a Zoom Joga session with Dr. Jo from Beaches Wellness Centre. In total, the event raised $17,113 through a Go Fund Me page that had been set up to collect donations. Toronto Beaches Jr. A Lacrosse has made out cheques to 17 lo-
cal businesses which it has already started to distribute. The recipients of most of the cheques will not be named and the fact they were selected to receive the donation from the lacrosse team was not known to them. Four gift packs purchased from local stores were also put together for those who made a donation early and registered for the contest, said Bliss Gatenby of Toronto Beaches Jr. A Lacrosse. Key contributors to the event were Bruno’s Fine Foods, Hooper’s Pharmacy, Beaches Wellness Centre, Grit Athletics, New Frontier Fitness, Joga, Beast Athletics and Bob Acton Sports. For more information on the Toronto Beaches Jr. A Lacrosse Team, please go to www.beachesjralacrosse. com

Visits with Santa Claus Santa was busy late last month visiting with local residents in ways that helped keep people safe from the COVID-19 virus. Above photos show the DriveBy Santa event at Variety Village in southwest Scarborough. Residents were invited to drive their cars through the Danforth Avenue facility’s parking lot, taking in Christmas lights displays and then visiting and chatting with Santa from the safety of their vehicles. Photo at left, the Songs and Santa Windows celebration was hosted by local realtor Shea Warrington at her Queen Street East offices in the Beach. Visitors were able to meet and talk to Santa as he sat in one of the windows of the office. There was also entertainment provided by Jesse Gold who was in another of the windows.
