Donations of sewn masks, protective equipment sought in COVID-19 fight Michael Garron Hospital appeals to community in drive to collect personal protective equipment By Cheska Lim
MICHAEL GARRON Hospital recently launched The PPE Drive asking the public to donate unopened, not expired, personal protective equipment to their facility in response to COVID-19. Created by medical leaders within the hospital community, the website states that the purpose of the campaign is to “support anticipated shortages of personal protective equipment (PPE) across the health system”. Please visit the PPE website at www.theppedrive.com for specific information on what items are needed and how to donate them. The hospital has also put out a request for sewn masks. In a tweet on Thursday March 26, @MGHFoundation wrote “#MichaelGarronHospital needs 1,000 masks a week and you can help! If you’re a sewist, or know someone who is, help us meet our challenge”. The challenge the Coxwell Avenue hospital is proposing to the East Toronto community is to sew 1,000 masks per week. On the website at www.mghf. ca/mgh1000masks are detailed instructions on how to make a fabric mask well as, the items needed in order to create them. The website states that fabric masks will not be given to healthcare providers. Instead, the masks will be given to “approved visitors who enter Michael Garron Hospital”, “discharged patients as they reintegrate into the community”, and
will be distributed to the “broader community” in an effort to stop the COVID-19 virus from spreading. “We want to see all east enders wearing a fabric mask when they need to be within six feet of other people,” Medical Director Dr. Jeff Powis said on the challenge’s website, “especially vulnerable populations and the elderly”. Although the hospital received a majority of positive comments upon the #mgh1000masks challenge, some questioned how effective the fabric masks were going to be against preventing the spread of the disease. The University of Sydney in Australia conducted a study in 2015 where they tested to see if cloth masks were just as protective as medical masks. The results came out as negative. In addressing concerns about the usefulness of the cloth masks, Michael Garron Hospital said, “It’s so important that our community follow the important safety advice of public health officials during this pandemic… the fabric masks being sewn in East Toronto are an additional safety measure to keep people safe.” Donated fabric masks can be dropped off at Michael Garron Hospital’s Coxwell lobby between the hours of 8 a.m. to 4 p.m. All other donated personal protective equipment can be dropped off at the hospital’s receiving dock on Knight Street, between the hours of 7:30 a.m. to 3 p.m. Social distancing rules will be applied in both situations.

BIAs call on area residents to help support local businesses By Alan Shackleton
LOCAL BUSINESS Improvement Associations (BIAs) are doing their part to remind East Toronto residents of the importance of continuing to support neighbourhood businesses as the economic impacts of the COVID-19 crisis start to sink in. “Shopping local is always important but right now it’s critical,” said Anna Sebert, Executive Director of the Beach Village BIA which serves businesses along Queen Street East between Neville Park Boulevard and Lockwood Road. “The businesses who chose to open in our neighbourhood, invest in our community and serve our residents, need support now more than ever. Keeping them alive is key to a vibrant and healthy local economy,” she said.
To help those businesses, Sebert said the Beach Village BIA is working hard to keep them up to date on the information coming from the federal, provincial and City of Toronto governments. The Beach Village BIA is also helping promote local businesses through social media and on its website which includes a map of all stores and restaurants offering online shopping and delivery options. That website can be accessed at www.thebeachvillage.com/support-local Sebert pointed out that local business owners are often also local residents. “They are our neighbours, our friends and our employers,” she said. “If you have the ability to support with your dollars, please do so by purchasing gift cards, shopping lo-
cally online, or ordering food from your favourite local restaurant. If money is tight, leave a 5 Star review on Google or Facebook for your favourite businesses, and make sure you are following, liking, and sharing them on social media. We will come out of this stronger if we all support each other.” Colin Johnson, Manager of the Danforth Mosaic BIA which serves businesses along Danforth Avenue between Westlake and Jones avenues, also stressed the importance of supporting local business during these extremely challenging times. “Local business is the backbone of Canadian society. Beaches Easter Parade joins list of cancelled events THE ANNUAL Toronto Beaches Lions Club Easter Parade and the celebrations around it including an Egg Hunt for children in Kew Gardens on Good Friday has been officially cancelled for this year due to COVID-19 virus concerns. “At the direction of Toronto Public Health, Public Health Agency of Canada and local officials in re-
sponse to COVID-19 concerns, we have made the difficult decision to cancel this year’s Beaches Easter Weekend celebration scheduled for April 10 – 12, 2020,” said a statement issued last Tuesday, March 24. “The safety and well being of our attendees, volunteers, staff and community remain our top priority and as such, we are choosing to
do our part to flatten the COVID-19 curve. We urge everyone to follow the guidelines and protocols put forth by public health officials,” said the statement. “Thank you for your continued support and we look forward to next year’s Annual Beaches Easter Weekend Celebration, April 2 – 4, 2021.”
Along with the parade itself on Easter Sunday (April 12) which would have run along Queen Street East in the Beach and regularly draws hundreds of participants and thousands of spectators, other events planned for this coming Easter Weekend in the Beach included a Good Friday Egg Hunt for children at Kew Gardens.
The Easter Parade has been taking place in the Beach since 1967. It was originally routed along the Boardwalk for its first seven years. The Beaches Lions Club became actively involved in 1973, and the next year the parade moved to Queen Street East. By 1981, the Lions had become the parade’s official organizer.

Small businesses will be crucial to Canada’s economic recovery after pandemic passes Continued from Page 1 small businesses get through the immediate COVID-19 crisis and the months following. “It is imperative that all three levels of government understand that if we do not protect small business, it’s going to be very difficult for Canada to economically recover after the COVID-19 pandemic passes,” he said. The Danforth Mosaic BIA is also helping its business owners with information from the various levels of government regarding the help that is available to them. Also, they have a website as well to help shoppers with information on their local businesses along Danforth Avenue and how they are dealing with the COVID-19 situation at https://linktr.ee/ thedannyBIA Johnson said these are scary times for everybody, and those who have put their lives into their small businesses are understandably very worried. Sometimes, he said, what those business owners are really needing right now is someone to talk to and share their fears with. “Business owners need a person that they can talk
with. I’ve had a lot of conversations with business owners in tears and they are understandably upset because of all the economic uncertainty,” he said. “Being a source of comfort, understanding and kindness is just as important as providing essential services in this crisis. Some empathy goes a long way.” The businesses in the Kingston Road Village area are among those making adjustments to deal with COVID-19. Businesses such as Somun Superstar sandwiches, The Great Escape Book Store, Sessions Cannabis store and Fearless Meat are used to operating in a vibrant neighbourhood. Since the measures needed to combat the virus have taken place, the area has been less busy. Like all other restaurants that have remained open, the Bosnian-inspired sandwich shop Somun Superstar is now offering only take-out. “We are serving takeout. We are fortunate that a large portion of our business is takeout, so we are prepared,” said owner Alen Zukanovic. “I can imagine that a lot of restaurants are having a
hard time adapting to only having take-out and delivery. Of course, our sales are suffering but we are still serving our wonderful customers.” Retail shops are also facing difficult times as many are shutting their doors for safety. Katya Nosko, owner of The Great Escape Book Store, said she will wait at least until the end of March to open the doors again to the public. “Yes, it hurts. To go without income is frightening. And for an indefinite amount of time, too,” she said in a statement. “I don’t have an online inventory but I am accessible by phone or by internet if people want to purchase a book. They can purchase remotely and pick up at a special time. But I’m not going to fixate on that. I’m going to use this time to regroup…I can’t expect people to shop for nonessentials when they’re worried about paying their rent or their bills.” Nosko said she’s been encouraged by messages on local social media encouraging people to shop locally and support the merchants in the community. “But in reality, the local businesses were
already precarious because of how consumers generally shop online or at big retailers,” she said. “This for some is the nail in the coffin. Not the first, but the last. My heart goes out to them. Will this do me in? I don’t know. Amazon is increasing sales as we speak. They are hiring. Their stock is soaring.” Nosko added that along with the community support, she also appreciates the efforts of local politicians who are backing small, neighbourhood businesses. “I’ve been very grateful for the support from our (BeachesEast York) Councillor Brad Bradford who has been trying to help the local businesses from the moment he stepped into office.” For Dave Brown at Fearless Meat, take-out orders and delivery are now what’s on offer. He said Fearless Meats is committed to helping those who are most vulnerable as the city deals with COVID-19. “We are Torontonians and Canadians who are going to show the world just how we come together and help each other in the face of any crisis.” -- With files from Alana Rayman

Local family seeks help to find accessible unit for son in need By Amanda Da Silva
IN JULY of last year, East Toronto area resident Patrick Kunkel suffered a massive stroke that affected his cerebellum. Despite the odds, he woke from a coma and was responsive after undergoing life-saving brain surgery. “They didn’t think he would come out of a vegetative state,” Valika, his mother, said of the stroke which took place on July 3, 2019. “For a while there they called him a ‘miracle baby’ because no one, the doctors and nurses up there, didn’t expect to get any response out of him and he was responding every day or every week and accomplishing something new,” she said in a recent interview with Beach Metro News. After spending about four months at St. Michael’s Hospital, Patrick, who is 28, was moved to the Toronto Rehabilitation Institute for what was supposed to be an eightweek program. Patrick has been making steady progress since then and is breathing on his own, eating on his own and has even started learning how to walk and talk again. When the eight-week program at Toronto Rehab was finished on Feb. 20, Patrick’s family struggled, as they
didn’t have a place for him to live. Toronto Rehab granted them more time until they found transitional housing, which is temporary as Patrick is expected to move out of the unit on April 20 of this year. At the transitional housing, he receives some physiotherapy and care but not as much as he had previously. He recently began his walking treatment but that was put on hold because of the COVID-19 restrictions, which are also having a severe impact on his family’s ability to find Patrick a suitable place to live. “He’s still in a wheelchair and everyone in the family has a place, we rent a place but all of our apartments have stairs unfortunately,” Valika said. According to Valika, Patrick’s situation for constant care is temporary and can change between two to five years from now. “None of us wants to give up the apartments we have in the city because it’s affordable for us,” Valika said. Even after applying to the Toronto Housing program, it is still a 10-year wait, she said. Valika and Patrick’s sister, Kayla, did happen to find an accessible unit but it is priced at $1,700 a month, and Patrick will be receiving
$1,200 a month from the government. Kayla has put her life on hold, working only weekends, to take care of Patrick during the week. Valika is retired and living on a fixed income, which makes it difficult for them both to not only pay the remaining $500 a month for rent but also for food and other supplies. They are still looking for suitable units for Patrick. Through this hard time, Valika said the support they have received from the community has been amazing. She used to work at St. Denis Catholic School on Balsam Avenue in the Beach, and for this past Christmas the staff had arranged a dinner for the Kunkel’s at the Toronto Rehabilitation Institute. Patrick’s friends also created a GoFundMe page and the money accumulated went to pay the remainder of his rent at his old apartment, movers to get his furniture out and a storage unit to place it all, said Valika. The Kunkel family is seeking help in finding an accessible and affordable unit for Patrick, and are hoping the community can be of assistance in this difficult and stressful time. Playgrounds, park amenities closed as city intensifies fight against COVID-19 THE CITY of Toronto has closed all city-owned playgrounds, sports fields, basketball and tennis courts, offleash dog parks, skateboard and BMX parks, picnic areas, outdoor exercise equipment and other parks amenities, as well as parking lots attached to its parks system in order to stop the spread of the COVID-19 virus. The announcement of the closures was made on March 25 and it was effective immediately. “While the public has been advised that fresh air and exercise is good if you are not
ill, and if so, you should stay home, it has been observed that individuals are using parks and their amenities to congregate,” said the City of Toronto’s announcement. “The public has also shared its concerns about how parks amenities are supporting that congregation. The City is urging all residents, who are not performing essential or critical services, to stay home.” People are still allowed to go outside, and get fresh air in local parks and in such places as the Boardwalk in the Beach. However, safe
social distancing practices must be observed at all times and people cannot gather in groups. While this past weekend’s weather was cool, grey and wet, the weekend before (March 21 and 22) saw noticeably large crowds in local playgrounds, parks and walking in groups along the Boardwalk. Those ignoring safety rules are a cause for concern, Beaches-East York Councillor Brad Bradford told Beach Metro News last week. “It’s good for our physical and mental health to get out-
doors occasionally. But, we have to keep our distance, stay with your immediate household, and not meet others, especially in groups.” He added that social (physical) distancing is crucial in the efforts to stop the virus. “We want to strongly encourage people to follow the advice before taking a more heavy-handed, enforcementbased approach,” said Bradford. USUALLY, RIGHT around now, gardeners would be thinking about what we want to grow this year. But nothing’s usual about this March and April of 2020. Garden centres and nurseries are closed for in-person visits. They aren’t included on the list of essential businesses the province released on March 24. But many plant/seed sources are still taking orders by phone, email and online. If you need a lift while you’re self-distancing, I’ve rounded up a few websites where you can indulge your garden craving. Please note that while we deal with COVID-19, things change quickly. This info was correct as of last week. Everyone in the gardening business is
scrambling right now, so try contacting them online first. Here are some suggestions in Toronto: East End Garden Centre is right here in the neighbourhood at Queen Street East and Greenwood Avenue. They’ve locked their doors to protect the health of their staff and customers, but they’ll happily take your phone order and deliver all kinds of soil, fertilizer, mulch, seeds and selected plants. They do not have a website, but their Facebook page has photos of what they have in stock. You can call 416-469-4925 or direct message through their Facebook. The Beachwood Flower Shop, near Queen Street East and Woodbine Avenue, is taking orders for delivery of flowers and small container plantings. Their tabletop plantings of mixed spring bulbs are fabulous – and you can take them apart and plant them outside when

Plants in the City is a new business here in Toronto offering online ordering of perennials – including a great selection of native plants. Federal government offers help during this pandemic
T
he impact of the COVID-19 pandemic is unprecedented, and we need to work together to stop the spread of the virus and to address its serious and negative economic impact. As individuals, we need to listen to the advice of public health experts. That means staying home, keeping our physical distance, and regularly washing our hands. It is our responsibility to our fellow citizens, and especially to our incredible healthcare workers on the front-line of this crisis. For the most up-to-date information, visit canada. ca/coronavirus. As a federal government, we pledged an immediate $1 billion to assist provincial health efforts and to further research and vaccine development. We have also closed all borders, including with the U.S., to non-essential travel. All travellers returning from outof-country are legally required to self-isolate for 14 days. Urgent consular services, including emergency travel loans, can be accessed at 613-996-8885 or sos@international.gc.ca. The provincial government has called a state of emergency, closed all non-essential businesses, and issued a moratorium on residential evictions. The city has closed playgrounds, and deferred property taxes.

We need to continue to work together to scale up testing and take aggressive actions to stop the pandemic. But we also need to address the serious economic fall-out of this crisis. With this in mind, our federal government quickly committed $52 billion in direct support to Canadian workers and businesses, and will defer both personal and corporate income tax payments until Aug. 31 to keep another $55 billion in the economy. The tax filing deadline for individuals will be deferred until June 1. For individuals and families, there will be a $2 billion temporary boost to the Canada Child Benefit, and a $5.5 billion special top-up to the GST tax credit. For affected workers and self-
employed Canadians who have lost income because of the pandemic, we are establishing the new Emergency Response Benefit. It is effectively a short-term basic income: $2,000 per month for 16 weeks. If you are eligible for EI, apply to Service Canada, and you will be automatically considered for the Response Benefit. For those who do not qualify for EI, the application portal will be open in early April. For small businesses, in addition to deferred income taxes, we will defer HST payments to June, provide a 75 per cent wage subsidy backdated to March 15, and establish new $40,000 loans (interest-free for the first year, with up to $10,000 forgivable). We are also activating billions in loans through BDC and EDC. For more vulnerable groups, additional funding has been committed to support students, Indigenous communities, women’s shelters and sexual assault centres, and the needs of homeless Canadians. And the Prime
Minister has announced that more support is coming. As we keep our physical distance from one another, we must stay calm and keep the needs of our family, friends, and community in mind. Check in on our neighbours, especially seniors, to make sure they have supplies and to guard against loneliness in isolation. Donate blood, if we can. Buy only what we need. Go out for fresh air but keep our distance. Wash our hands. It remains to be seen how long the serious and negative impact upon our economy will last, and additional measures may well be necessary. The sign of the times This sign in a Queen Street East business says it all as the community deals with the COVID-19 crisis. The Province of Ontario declared a state of emergency last week and ordered all non-essential businesses closed. Schools are also closed as are City of Toronto park amenities. All residents are reminded in the strongest possible terms to stay home as much as possible, observe safe social distancing and to stay safe.

Remembering a suit and an overcoat from Mealing’s tailors on Queen Street Re: Memories on the history of Queen Street East sought, Beach Memories, March 17. Soon after we married in the late 1960s, we decided to invest in a good suit for my husband as I was not happy with the cheap illfitting off-the-rack outfit from Kingston Road that he wore to our wedding. It would be an investment for the future as every man should have at least one good suit, I thought. We bought it before we even had the deposit for a house. We decided to go the bespoke route, i.e. custom made. We took our business to Mealing’s, the tailors on the north side of Queen Street between Balsam and MacLean. It was a quiet dignified place with dark wood panelling, polished wooden floors, an
antique oval chevalier mirror, and fitting rooms in the back. The shelves were neatly stacked with rolls of conservative wool suiting and more colourful linings. The staff, all slim, elegantly-dressed men, had cloth tape measures draped around their necks, and a pin cushion and note pad close at hand. A couple of dummies displayed the thoroughness of tailor’s art with jackets under construction turned inside out with several layers of cloth and interfacing basted together. We chose a dark brown wool for the suit and a grey tweed for the overcoat. The lining of the overcoat was royal blue with a discreet red paisley pattern. On the inside pocket of each coat was an embroidered la-
bel with both the names of Mealing’s and my husband. We made several visits to Mealing’s for fittings, then finally the clothes were ready. My husband wore them any time he needed to dress to impress until his death 30 years later. I passed them on to the Salvation Army. Mealing’s closed long ago, and the suit and overcoat became a distant memory. About 10 years ago a friend’s son bought an overcoat at a sale of theatrical clothing that was no longer needed on stage but was still in good condition. He purchased the grey tweed overcoat with my husband and Mealings’ names sewn into the lining. If that overcoat could speak, I wonder what stories it could tell. Sheila Blinoff

he newspaper you are reading today is the result of the extra efforts of a lot of people over the past two weeks. Beach Metro News has had to make a number of adjustments to the way we are operating in order to deal with the COVID-19 situation. As has everyone else over the past month, we’ve seen what we do and how we are able to do it go through some massive changes. One thing that has not changed is our committment to delivering the news to the community during this ongoing crisis and beyond.
You can count on us, and you will be able to continue to count on us, to provide residents with as much information as possible not only about the fight to stop the spread of the COVID-19 virus but also on all of the other important issues to the community. That information will come to you through the print edition of the Beach Metro News and also on our website at www.beachmetro. com. Information about COVID-19 and its impacts changes rapidly, so please do visit us online on a regular basis. We are grateful that when the Province of Ontario ordered non-essential businesses closed, it recognized the importance of the news media and the “essential service” we provide. We’re also grateful the province recognized
that printing presses, truckers and delivery people play an essential role in providing the newspaper you are now reading. We cannot say a big enough thank you to our volunteer delivery people who are getting the paper out to you in a safe manner which follows all hygiene and social distancing guidelines. Since 1972, Beach Metro News has depended on the dedication of our volunteers and the strong support of our readers. That continues more than ever through this current crisis. The way we’ve created this paper has been far from normal to say the least, and will be that way for the foreseeable future. Work is now being done from home by staff members, and we’re communicating, sharing and creating online. I’m sure many other people are
now working from home as well, and are also finding it to be a very different reality from what they are used to. We too have transformed our basements or dining room tables into our new offices, and are holding video meetings and group chats as opposed to person-to-person contact. One of the things I’ve loved about Beach Metro News since I arrived here in late 2018 is how we are such a hub in the life of the community. We’re situated right near Main and Gerrard, and folks are always walking in the door -- be it to take out a classified or retail ad, to let us know about an event they are hosting for our Community Calendar page, to tell us about an important news story people need to know about, or just for a chat as they are passing by.
That’s one of the things I’m really missing right now. However, this is all a result of what must be done to stop the spread of COVID-19. We’re doing our part, and I urge everyone else to do the same. If we want to get back to our normal lives, we must make every effort possible to stop the spread of this virus now. Unfortunately, though, there are still people who don’t seem to be getting the message about the vital importance of social distancing and staying home except for nonessential reasons. What they are not understanding about this deadly virus and how quickly it spreads is beyond me. They need to smarten up fast as their actions are putting other people in serious danger. At this point, that’s inexcusable.

Obituary
Vivien Young remembered for her dedication to community VIVIEN YOUNG, long-time resident of the Beach community and wife of former area MP Neil Young, died on March 22 at the age of 78. She had been diagnosed with a brain tumour in August of last year, and had undergone brain surgery and had a pacemaker installed in September, the family said. Born on June 15, 1941, Vivien grew up in Aberdeen in northeast Scotland with her brothers Gordon, Kenneth and younger twin sisters Margaret and Maureen. She moved to Canada in June of 1960 and soon met and married her husband Neil. They were married 53 years before his death in 2015. The couple raised their four children (Neil, Leslie, Moira and Fraser) in the Beach neighbourhood and called the community home for more than 50 years. Both Vivien and Neil were proud members of the local NDP, and Neil served as the community’s MP from 1980 to 1993 representing the ridings of Beaches and then Beaches-Woodbine. Vivien is remembered by all who knew her as a hard worker in support of the NDP and the work Neil did as MP for the community. “Viv was well known for her E-Day (Election Day) organizing skills and could always be found in the back of any committee room during a campaign throughout the span of an election,” the family said. She applied that same work ethic to everything she did. “Viv worked hard in many aspects of her career. As she raised her children, not only did she volunteer in various elections and campaigns, she worked as a volunteer at her children’s schools as a valued member of the Home and School associations,” the family said. “As her children moved on to high school, she moved to roles outside of the home. Viv worked at the New Democratic Party’s Provincial Office in Toronto,

Vivien Young died on March 22 at the age of 78. and later as an Executive Assistant at the Law Society of Upper Canada.” Eleanor O’Connor first met Vivien while working for the Beaches NDP in the 1970s. “After the ’72 campaign, she became the membership secretary because her record keeping was terrific. She knew the members, not just their names and addresses, but their circumstances and personalities,” wrote O’Connor in a tribute. “Viv didn’t simply rely on her memory; she also kept the records from each campaign. “Before campaigns were computerized, Viv could go up to the third floor and retrieve the lists of workers, sign locations, and supporters from any previous campaign since 1972. Viv’s talents were soon recognized by others, but her main focus was always in the Beaches NDP. Viv was one of a kind.
She leaves a legacy in the Beaches through many campaigns and in the NDP and in the hearts of all who know her.” Vivien was also proud of her Scottish roots. “Viv loved Scotland and all things Scottish,” the family said. “She taught her children and grandchildren how to be independent from an early age. She encouraged us all to cook, learn to do laundry, and save our money to travel to Scotland one day.” Vivien also enjoyed reading, her collection of old movies and going out to neighbourhood restaurants for a meal and glass of pinot grigio, the family said. “She loved to sing and listen to a wide range of music. Viv loved crosswords and a challenging jigsaw puzzle (heaven help you if you touched a puzzle she was working on). She loved discussing politics at all levels of government and always wanted to know your thoughts or take on the week’s events.” She was remembered by her family for her tough but quiet demeanor. “Viv was an introvert who loved to sit back, listen and take it all in. She was tough as nails but with a quiet demeanor. Watch out if you crossed her or anyone she cared about, or a cause she was passionate about.” Vivien is survived by her four children and six grandchildren. A celebration of her life will be held at a later date.

THIS EASTER will have a different flavour from all others. A celebration with distance – how does that work? Indeed, we need a celebration more than ever. Something to distract us from the nightmare of this virus and the horrible isolation. However, this Easter will not be the usual large family around the dining room table or shared with friends. Instead, it must be a creative, caring one with an awareness of community and family. When there are challenges and uncertainty, I find comfort in the kitchen, in particular baking. In this instance, cooking for others, while not entertaining for them directly, makes it feel companionable. You can share the results - wrap and drop the packages off at the door – from the Easter Bunny! For this special occasion, there is the traditional hot cross buns served first on Good Friday and always on Easter Sunday. However, these are so good, they can be eaten with pleasure for the entire month (they freeze well!). Buns are delicious for breakfast, snacks and with cheddar cheese (my favourite) a quick lunch. Yes, it’s a yeast bread but easy to do and fun to do with children. With children out of school, you may be looking for activities to involve them. Cooking with yeast is particularly good because it’s foolproof. It seems so magical to have this “thing” rising in a bowl to be punched down and shaped into the spicy, hot cross buns. Nothing better warm from the oven! Although you cannot en-
tertain this Easter the same way as in the past, the hot cross buns make an ideal and edible gift to take to friends and family. You will be the welcome Easter Rabbit! Hot Cross Buns Don’t be afraid of cooking with yeast, it is truly child’s play! Hopefully these instructions are clear to debunk any mystery. All you need is time in your kitchen – perfect for isolation! (A companion to help you, especially a child, is welcome! Otherwise, put on the music and get going.) Note: I prefer traditional active yeast to fast acting because it gives a better, yeast taste. Yeast works well in a warm environment with sugar – don’t we all? Roll up your sleeves and wear an apron – you need to get involved! To Get the Yeast Growing (proofing) 1/4 cup (50 mL) warm water 1 pkg (1 tbsp/15 mL) traditional active yeast 1 tsp (5 mL) granulated sugar Ingredients for the Buns 1 cup (250 mL) milk 1/2 cup (125 mL) butter 1/2 cup (125 mL) granulated sugar 2 well beaten eggs 4 cups (1 L) all-purpose flour (about 1 cup (250 mL) extra for kneading 2 tbsp (25 mL) cinnamon 1 1/2 tsp (7 mL) nutmeg 1/2 tsp (2 mL) each, ground cloves and salt 1 cup (250 mL) raisins or currants 1 tbsp (15 mL) each, grated orange and grated lemon rind Glaze: 2 tbsp (25 mL) liquid honey Icing for Crosses (optional): 1/2 cup (125 mL) icing sugar. 1 tbsp (15 mL) water
Rinse a large mixing bowl with warm water and discard. (Remember, yeast likes warmth, thus, the warmed bowl.) Pour in water, sprinkle yeast and sugar over. Let stand for 10 minutes. This allows the yeast to grow – it should be foamy and smell of beer. (Some like the smell, others say, “Yuk!”) Meanwhile, in a small saucepan heat milk over medium heat until bubbles form around the edge. Remove from heat, stir in the butter and sugar. Let the butter melt and the milk become warm to the touch but not burning hot. When it reaches this temperature, beat in the eggs and stir this mixture into the yeast mixture. In a separate bowl, combine flour, cinnamon, nutmeg, cloves, and salt until well blended. Set aside. Wash the raisins, currants in a sieve with warm water and dry thoroughly on a clean tea towel. This plumps up the fruit. Using whisk or electric mixer, gradually beat flour mixture by cups into the warm milk –yeast mixture together with the raisins and grated orange and lemon rind. When the batter becomes heavy switch to a wooden spoon to beat in the remaining flour until you have a smooth, moist dough. Lightly flour hands (with the additional flour) and knead dough using a folding motion with your hands to create smooth, elastic dough. It will feel springy to the touch and may take about 5
minutes of kneading. Dough will be moist. Now you are ready to let dough rest and double in size. Wipe another bowl with vegetable oil; using a spatula scrape the dough into this bowl. Cover with plastic wrap or a clean tea towel and let it rise in a warm spot (I use another big mixing bowl filled with warm water (about bath water temperature; float the bowl with the dough on top or use oven with the light on) until dough is double in size about 45 to 60 minutes. Once it has doubled in size, flour your hands; punch down dough until there are no large air bubbles. (Children love doing this!) Divide dough into 12 equal portions and shape into balls. Arrange balls on a parchment paper lined baking sheet leaving 2 inches (10 mL) apart. Cover buns loosely with a tea towel; place in a warm spot and let double in size about 30 minutes. Meanwhile, pre-heat oven to 375 (190 C). Once buns have doubled in size, bake 20 minutes or until golden brown. Cool on rack. Brush with honey to give a shiny finish. In small mixing bowl, stir icing sugar and water together until smooth. Pipe this icing into a cross on the surface of buns or use small spoon to drizzle the icing into cross on top of buns. Makes 12 hot cross buns. Serve within a day or wrap individually and freeze for up to 3 weeks. You did it!! Enjoy and Happy Easter!
