Popular live-music venue SHE Leads Conference Salty Dog closes its doors set for March 8 in Beach By Alan Shackleton
THE LIVE music scene in the Beach appears to have taken a serious hit with news that the Salty Dog Bar & Grill on Queen Street East has closed. The popular bar at 1980 Queen St. E., at Waverley Road, held a closing night party on Sunday, March 1. Owners Danny and Larry Papas announced the closure on the Salty Dog’s Facebook page on Feb. 22. The Facebook post read: “As the page boy whispered in the conqueror’s ear, ‘All glory is fleeting.’ “Yes indeed. ‘All good things must come to an end’ to coin another common bromide. “Thank you. We love you, one
and all.” At Sunday night’s closing party, Danny Papas did not want to get into details on the closure or upcoming plans, but promised to talk more with Beach Metro News later this month on what the future might hold. The Salty Dog’s closure will leave a large hole in the live-music scene on Queen Street East. The bar, which opened in 2009, would host numerous music events and had jazz nights and blues nights as regular features for more than a decade. THE FOX Theatre in the Beach will host the SHE Leads panel discussion on Sunday, March 8, to celebrate International Women’s Day. The event will have four successful female speakers from the community and discussion topics will include achieving work-life integration (versus work-life balance); facing fear and anxiety; and embracing mistakes and having the courage to take chances. Moderator for the event, which takes place between 11 a.m. and 12:30 p.m., will be Maureen Adamson who is president of Fleming College in Peterborough. THE NOODLE Feed installation that was part of Winter Stations 2020 on Woodbine Beach was removed last week due to a combination of safety reasons and unintentional damage that was beyond repair. The installation, designed by iheartblob from Austria, had proved extremely popular with visitors to Winter Stations this year as they were encouraged to climb on the structure and move its pieces into different shapes such as chairs, beds and shelters. The usage caused damage to the recycled sailcloth material, stuffed with straw, that compromised safety of the users and could not be repaired, Winter Stations said in a statement on its Facebook page. “Earlier this week Winter Stations Noodle Feed, was unfortunately removed from Woodbine Beach. While Winter Stations strives to build the vision of all of the winning artists who participate in our design competition, we prioritize the safety of our guests and the environmental impact on the beach,” said the Facebook statement. “The popularity of this installation caused tears in the fabric and the filling that was used to stuff each noodle had begun to spread. It was advised by our fabricators that the damage was beyond repair, and to remove the installation for the remaining duration of the exhibition. We extend our gratitude and sincerest apologies to the winning team, iheartblob. Their design captured the spirit of Winter Stations as well as the imagination of our visitors, especially the young. Thank you for understanding.” The number of Winter Stations art installations on Woodbine Beach is now at three. Winter Stations will continue until April 1. Visitors to the site of the installation noticed its removal on Wednesday, Feb. 26. In its description, Noodle Feed said it had created a shared augmented reality environment where people can interact in new ways and consider “that the world is much more than we perceive.” The “noodles” were designed to attract attention and the “rough Continued on Page 12

Legion to host St. Patrick’s Day party THE ROYAL Canadian Legion Branch 11 will be hosting a pair of upcoming events including a St. Patrick’s Day party this month. On Sunday March 8, there will be Funday featuring entertainer David Wildsmith from 2 to 6 p.m. The event is free and all are welcome. For a cost of
$9, however, those attending can enjoy a meal that will be served at 4 p.m. On the menu will be peameal bacon on a bun, salad and dessert. We had a great run here with the jazz,” he said. “This was one of the best gigs I’ve ever had in Toronto.” Pilo said working the Papas brothers and the staff at the Salty Dog was always a pleasure, and he thanked them for their support of live music in the Beach. “They have the best staff and great owners,” he said. “They stayed out of our way
and let us do our thing and it was a great run.” Pilo said he’s not sure where, or if, the Tuesday night jazz sessions in the Beach will take place in the future. The equally popular Friday Night Blues Jam, organized by Michael Sedgewick and Robin Hutchinson, will also be sad to see the Salty Dog go. Sedgewick said in a Facebook post that he was also grateful to Larry and Danny for their support, and also to the music fans in the Beach who came out for the jam. “This is not the end of
the Friday Night Blues Jam, merely a transition into the next phase of our unique event,” he wrote. The announcement of the Salty Dog’s closure comes on the heels of the closing of the Big Bruce Public House at 1963 Queen St. E. earlier in February. Also, PetSmart At The Beach has announced it will be closing on April 12, raising concerns about what Queen Street East will look like in the future. “Right now I think it’s all about the costs and the condos,” said Pilo on Sunday night. “It’s going to be condoville down here.”

Need for urgent roof repairs closes Scarborough Arena Gardens By Amanda Da Silva
SCARBOROUGH ARENA Gardens has been closed since Feb. 5 due to repair work needed on the roof. It was during a routine assessment that the problem was identified. The arena will be closed for the rest of the season for repairs “The safety of the public is our utmost priority, which is why we regularly conduct assessments to identify issues and prioritize necessary work,” said Jaclyn Carlisle, a City of Toronto spokesperson. “We still have to assess what the actual problems
are, we’re in the process of installing temporary shoring,” said Scarborough Southwest Councillor Gary Crawford. “From there a structural engineering consultant will make evaluations and determine the scope of what needs to be done. That will be happening fairly soon and once we’ve made that determination, we will get a sense of what the timeline, what the budget for repairs are but we don’t know that at this point.” Carlisle said there will be updates of the progress of the arena posted online at www.toronto.ca/data/parks/
alerts/centres/index.html For now the city is working with Scarborough Gardens permit holders by providing them with alternative ice time wherever possible and credits or refunds can be issued where alternatives are not possible. “We’re working hard to accommodate as many people as possible,” Crawford said. Local robotics team earns Ontario honours A GROUP of Glen Ames Senior Public School students are continuing their robotics excellence with a recent win
at the Ontario Innovation Celebration. Team 458 X-Sighted DC is now taking part in robotics
competitions in the FIRST Lego League (FLL) as an independent team due to the work-to-rule by the Elementary Teachers Federation of Ontario. The team is now being coached by former Glen Ames student Olivia Terenzio, who was a member of the school’s team in 2012. The Ontario Innovation Celebration was on Feb. 22 at Seneca College. Team XSighted qualified to take part in due to their strong showing at the provincial robotics championships in January in Oshawa. The second-place finish at the Oshawa competition also qualified the team to compete internationally at Legoland in California this May against more than 40 other teams from around the world. The team’s project is called ISight 360 and it helps make navigating cities easier for people who are visually impaired. The ISight 360 uses a 360-degree camera, a speaker, a virtual reality headset, ultrasonic glasses and a “smart cane” that includes a touch sensor to help the visually impaired make their way through a city. The team’s success at the Ontario Innovation Celebration means their project is tied with two others as the best FLL projects in the province. Along with qualifying for the California competition, Team X-Sighted can also now apply for the Global Innovation Awards in Orlando, Florida. If the team were to win one of those awards, it would receive a $20,000 prize to go towards further developing the ISight 360 project into a reality. Long and McQuade music store opens its doors in southwest Scarborough THE NEW Long and McQuade music store in southwest Scarborough opened on the afternoon of Friday, Feb. 28 after a brief delay while waiting for a final approval from the City of Toronto. The store at 3313 Danforth Ave., just east of Pharmacy Avenue, was slated to open at 10 a.m. but did not actually open the doors until 1:30 p.m. while waiting for a final signoff from the city. The two-storey store is one of the largest Long and McQuade music stores in Canada, and has been in the making for five years. “Thanks to the efforts of city staff working together with the great team at Long and McQuade, the store opened earlier this afternoon,” Scarborough Southwest Councillor Gary Crawford told Beach Metro News on Friday afternoon. “We are looking forward to the grand opening this spring,” he added. Eager customers were waiting in their cars or lining up outside in anticipation of the store’s opening. “We are fully open for
business and we have everything available when it comes to music, from instruments; to rentals to lessons,” said store manager Neil Guise. The brand new store is 13,500 square feet and has all kinds of audio and recording equipment, and DJ equipment. “We are excited and happy to be in the Danforth area and be in the community,” said Guise. “There will also be an official grand opening on May 23 featuring free snacks, drinks and entertainment.” Councillor Crawford added, “Long and McQuade have a long history in Toronto, and I’m pleased that a new chapter in their history is unfolding in Scarborough Southwest. The good and bad news on music and Winter Stations Alan Shackleton Beach Metro News Editor
S
ome of the stories we’ve been covering this week and last here at Beach Metro News have me reflecting on good news and bad news. The two are constantly balancing each other off, and that’s certainly shown in the pages of this edition of our paper. On the one hand, we have the good news of a big and new music store opening up in the Danforth and Pharmacy avenues area. Long and McQuade officially opened its doors for customers last Friday afternoon, and the
store looks beautiful. There’s lots of optimism that this two-storey, 13,500-square-foot store will be a boon to the surrounding community’s businesses and also to local musicians and others in that industry. However, there was also bad news last week when it comes to the local business climate, and also for those who love and perform live music. The Salty Dog Bar & Grill on Queen Street East in the Beach announced it would be closing at the beginning of this month. A final party was held on the night of March 1. The bar was a hugely popular spot with live music fans and it hosted blues jams and jazz nights for years. The Salty Dog was also a great place for local rock bands and others to perform.
For years, it was considered one of the “go-to spots” in the Beach to enjoy live music. Its closure will leave a hole, but organizers of the popular Friday Night Blues Jam are looking for alternatives. Tuesday Night Jazz organizer Gregory Pilo told me on Sunday at the Salty Dog that he’d be “scouting” around the area, but was not entirely sure what the future would hold. “This was one of the best gigs I’ve ever had in Toronto,” said Pilo. The announcement that the Salty Dog was closing its doors came on the heels of the closure of the Big Bruce Public House which also offered a venue for live music on Queen Street East. Personally, I believe the live music scene will continue strongly in the Beach and along Queen Street
East in particular. I believe there will be other venues in the near future which will make it a priority and offer space for such popular events as the Friday Night Blues Jam and the Tuesday Night Jazz sessions. Let’s hope so. Continuing the good and bad news trend was Winter Stations 2020. Its opening day on Feb. 17 (Family Day) saw beautiful weather and big crowds swarming the four art installations set up on Woodbine Beach. Two of those installations, Noodle Feed and The Beach’s Percussion Ensemble, were designed to be interactive and encouraged visitors to climb on them. Family Day saw both installations covered with playing kids, dogs and adults (as our photos on Page 12 and 13 show).
Unfortunately, the bad news is that the Noodle Feed exhibit was so popular and so well used that it was damaged beyond repair and had to be removed last week. Noodle Feed was “loved to death” in the words of BeachesEast York Councillor Brad Bradford. Some are looking upon this year’s Winter Stations as a disappointment. I think, though, that the positives far outweigh the negatives. One of those positives, a final bit of good news for this column, is that the free Art Pop-Ups presented by East End Arts will continue for the next three Sundays at 1961 Queen St. E. They are great way to have fun, learn and get involved. There’s more info on them on Pages 12 and 13.

Build bike lanes on the Danforth

As an east-end Toronto resident, I want to say how supportive I am of building a bike lane along Danforth Avenue. Such a lane would have many benefits. It would give motorists and cyclists their own separate space – which would make the road much safer for everyone. It would be popular with local residents. An EKOS poll done in January of 2020 found nearly eight in 10 Torontonians (79 per cent) support the building of protected bike lanes. The lane could also offer a boost to local businesses. Research published by
Toronto’s Centre for Active Transportation found that, when bike lanes were built on Bloor Street, the number of customers served by merchants went up. Finally, given the climate
emergency, we all need to find low-carbon means of travel. What better vehicle than the humble bicycle. Mary Ann Neary

WINTER WEARY and hoping for spring – any signs are optimistic – the first call of the crow, longer days and the first taste of maple syrup, all herald a new season. For those of you lucky enough to escape to a winter holiday over March Break – enjoy. For those of you left behind, make your own local escape to a sugaring off festival – there are numerous ones across the province (listed on line.) The Farmer’s Market at the St. Lawrence Market is a fine place to buy maple syrup. My favourite is the dark maple syrup rather than the amber. It has a richer maple taste which makes it ideal for recipes. When I think of maple syrup, I automatically think of pancakes and its sophisticated cousin, the crepe. Now crepes are a fun way of entertaining both children and adults with delicious results. Try your own cooking class. The equipment is simple – a Teflon pan, mixing bowl and whisk. The recipe is child’s play and the re-
sults yummy! Happy March Break with a Maple Syrup Getaway! Basic Crepe Recipe Crepes, unlike pancakes, should have a smooth batter. Thus, whisk the egg-flourmilk mixture until smooth. For best results, assemble; cover and refrigerate overnight. This means the flour in the batter has a chance to absorb the liquid from eggs and milk to create a stronger crepe. 3 large eggs 1 1/2 cups (365 mL) milk 2 tbsp (25 mL) melted butter or vegetable oil 1 cup (250 mL) all-purpose flour 1 tbsp (15 mL) granulated sugar 1/4 tsp (1 mL) salt In a medium mixing bowl, whisk together eggs, milk and butter or oil until smooth. Gradually whisk in flour sugar and salt until smooth. Cover and refrigerate at least 2 hours or overnight. To cook crepes: Spray pan with baking spray or brush lightly with vegetable oil. Heat pan over medium –high heat. For a 7-8 inch (18-20 cm) pan use ¼ cup (50 mL) batter tilting pan so batter covers
the bottom of pan with a thin layer of batter. Do not make it too thick. Cook about 1 minute or until lightly browned. Turn crepe quickly. I use my fingers but you have to be fast or use tongs. Continue cooking about 30 seconds until other side is browned. Stack crepes on a plate separating with a piece of waxed paper or parchment paper. Tent with foil at room temperature to use within hours or wrap and store in the refrigerator for up to 3 days. For longer storage, wrap in foil and freeze for up to 2 months. Makes 12- 16, 7-8 inch (1820 cm crepes) ideal for main course or dessert. Smaller Teflon pans are ideal for appetizer crepes. Make Your Own Crepe Bar Crepes are versatile: • They can be filled with sliced fresh fruit such as strawberries, blueberries and raspberries (try frozen they are cheaper at this time of year) then rolled or folded in quarters then drizzled with maple syrup and served with a dollop of whipped cream or ice-cream for a simple yet scrumptious dessert. • Spread with hummus
and topped with shredded fresh vegetables or grilled vegetables then rolled up as a crepe sandwich. • Spread crepe with mild goat cheese, sprinkle with walnuts, roll up, warm and drizzle with maple syrup. • On the sophisticated side, crepes can be filled with a creamed chicken or shellfish mixture, rolled then covered with a cheese sauce and baked in the oven as a main course — absolutely divine! Apples, Walnuts and Maple Syrup Crepes 4 apples, peeled, quartered and thinly sliced 2 tbsp (25 mL) butter Sprinkle of cinnamon 1/4 cup (50 mL) toasted walnuts (optional) 1/4 cup (50 mL) maple syrup Crepes In a saucepan or skillet over medium heat melt butter; stir in apples and sprinkle with cinnamon and walnuts (if using) then drizzle with maple syrup and cook about 2 -3 minutes or just until apples are tender. Spoon some of apple mixture onto crepe and fold into quarters. Arrange on a serving plate and serve with ice cream if desired. Makes 4 servings.

Beaches-East York Councillor Brad Bradford told Beach Metro News it was basically a case of Noodle Feed being “loved to death” by visitors to it. “It was designed and built to be interactive,” Bradford said of the installation. “We really wanted people to engage with it – sit, climb, lay down and play with it. That happened and it was fun. Getting people active in the depth of the cold dark months is part of the whole philosophy of Winter Stations.” He said that the creators of the installations aim to build works that can survive the harsh weather conditions and intended usage for the length of the Winter Stations exhibit. “It looks like there was some cutting open of the fabric and the materials filling the ‘noodles’ was being
taken out. Ideally, we would have loved to replace the installation but there’s a timing and cost reality for doing that and it just wasn’t possible.” The remaining three Winter Stations installations are Mirage, from Madrid, Spain; Kaleidoscope of the Senses, from Scotland; and The Beach’s Percussion Ensemble from Centennial College. Bradford encouraged residents to continue coming out view and enjoy the remaining installations. “There’s still a lot to see and do with the remaining three installations, so I’m encouraging everyone to get down to the beach,” he said. Also, Bradford reminded residents that Noodle Feed’s augmented reality app can still be accessed, even though the physical installation no longer exists. The Art Pop-Up Workshops presented by East End Arts will also be taking place on most Sundays this month as part of Winter Stations. The Art Pop-Ups are free events and will take place every Sunday until March 22 at 1961

IN THE last few months I have been attending community meetings in order to learn and write about what groups in the East End are doing in relation to Climate Change. Many residents are anxious about climate change and want to take action. But doing it solo is hard and many have recognized that more can be done as a group – as Ron Fitton of the Beach United Church’s Environmental Action Group said, “ Together we can accomplish much more than individually possible.” Community green groups are supplying collaborative and supportive arenas for political action, awareness building and sustainable living initiatives and actions. These groups are in a position to have considerable influence. Beaches-East York MP Nathaniel Erskine Smith acknowledged the

Green Neighbours 24 (Ward 24 Scarborough-Guildwood) GN24 had their first meeting in January and was started by two residents: Mark Takefman, an environmental consultant with more than 30 years experience, and John Doleweerd, a teacher and a local community garden co-ordinator. Both have collaborated in the past with groups such as Climate Fast and
Climate Action Network, and have held climate documentary nights and workshops. Their mission is to work with the Ward 24 community to “establish an environmentally sustainable and regenerative lifestyle “by collaborating with all members of the ward including youth, seniors and politicians.” As Mark stated in the first meeting, “Now is the time – I don’t want to do things by myself.” The aim of the groups is to also to stimulate idea generation and take immediate action on projects. The attendees expressed their concern about the slow pace of change and the inertia of our politicians. But they want to be participants not bystanders in effecting change. After a group assessment of various interests and project ideas the attendees divided into sub committees to focus on their choices - waste workshops, eco film nights and neighbourhood plastic waste. Recently, two of the GN24 members met with Scarborough Southwest MP Bill Blair regarding climate change and the elimination of plastics. GN 24 meets the

impact of community climate action groups as an impetus for change and said, “We need more visible climate action in our community.” The City of Toronto is also very interested in encouraging and building awareness of the community green groups. They have created a Toronto Community Climate Action website – including an interactive map and searchable list of groups across the area. In this week’s article I am reporting on three groups – two in Scarborough – GN24 and the Guildwood Village Community Association (GVCA) ‘s Climate Change Conversation, and in the Beach area – Treemobile.

For information, please contact Mark Takefman takefman@gmail.com Guildwood Village Community Association (GVCA) Climate Change Conversation On Jan. 26, the GVCA hosted a Climate Change Conversation with more than 40 residents. The GVCA held this meeting to stimulate climate change action and to discover, as Allison Murray stated, “What we as individuals can do in our community this year.“ The meeting started with a presentation from city staff (Transform TO) on the City’s Climate Action Strategy and the Environics City-wide Climate Perceptions study. After the presentation, the attendees were divided into seven study groups to discuss local actionable ideas and projects that can be done now. The discussion groups included transit, buildings energy use, recycling, waste and biodiversity support. These discussions will continue online and in future meetings.
One major outcome was the formation of a new action oriented group – Green Guildwood. “Through education opportunities, knowledge sharing, special events and advocacy efforts, Green Guildwood strives to inspire and empower everyone to take action through small changes, big ideas and everything in between,” said Murray. TreeMobile Treemobile is a volunteer driven notfor-profit group that encourages foodscaping as a way to build more sustainability in our communities. It was started by Upper Beach resident Virginie Gysel who brought on board Andrew Knox of Transition Toronto. Over their 10 years they have supported the planting of more than 10,000 food bearing shrubs, bushes and trees in the GTA. Treemobile makes it easier to grow food at great prices They supply climate appropriate food-bearing trees and
plants. Participants can select from an online catalogue, and they will set up delivery or pickup times. All profits go towards their Edible Community Garden Grant. This grant is their way to encourage community groups to get together and grow foodbearing plants. Treemobile stocks everything from apple trees to asparagus. Toronto Open action set for Beaches Disc Golf Course on March 21 and 22 By Alana Rayman
THE BEACHES Disc Golf Course will be hosting the Toronto Open disc golf tournament on the weekend of March 21 and 22 at Ashbridges Bay Park. The tournament will also take place on the same weekend at the disc golf course in

Marilyn Bell Park in Toronto’s west end. Disc golf players of all skill levels are welcome to take part in the Toronto Open, though organizers recommend participants be age 13 or older. Cost to enter the event is $65 per player. The tourney will consist of two half days of disc golf, from 9 a.m. to noon, with closing ceremonies set for The Docks at Polson Pier. “Our goal is to bring the Marilyn Bell Park and Beaches courses communities together,’ said Jeff MacKeigan of the Beaches Disc Golf Course. MacKeigan and his partner Cara Hovius teamed up
with the city to build the nine-hole Beaches Disc Golf Course in November of 2018. Last year, they also built another nine-hole course at Marilyn Bell Park, 1095 Lake Shore Blvd. W. “Our vision is to showcase the great parks of the City of Toronto and let people know about these new free courses. We also have some disc golf pros coming out to the tournament to support the new players.” The Toronto Open will see players take part in three consecutive rounds at either the Ashbridges Bay or Marilyn Bell courses on Saturday. For Sunday’s competition, players will be divided into three divisions based on their
scores and they will compete on the opposite course to the one they played on Saturday. Scores from both days will be combined to determine division winners. Those wishing to play can register online at www.dgscene.com/TorontoOpen Registrations will also be taken on March 21 starting at 8 a.m. at either the Ashbridges Bay course, 10 Ashbridges Bay Park Road, or the Marilyn Bell Park Disc Golf Course. A players meeting will take place at 8:45 a.m. at both courses prior to the tournament’s start. MacKeigan said spectators are welcome to come to either course to cheer on the players during the Toronto Open.

Friends and community are key for Beach artist Baldwin By Alexander Sauve
AS WE age, our family and social circles tend to get smaller which can rattle our physical and mental health. For many seniors, remaining socially and physically active is an important step to good health and long term longevity. Carole Baldwin is many things to many people. She is an active member of her community, former educator, talented artist, mother and friend. She also knows a thing or two about living her best possible life on her terms. Although Baldwin has lived in her current home since 1983, she is a lifelong resident of the Beach community. After graduating from teacher’s college, she started her career at Secord Elementary School in East York for eight years. Although Baldwin enjoyed teaching, she later switched gears opting for a completely different career path and never looked back. “I didn’t really want to go back to teaching after the birth of my son, so I thought this is the best of both worlds. I worked at the dentist’s office and it was parttime. I shared the job with someone else, so it was suitable for me,” she said. Baldwin continues to lead a healthy and active lifestyle and believes that it is extremely important for seniors to remain socially active in their community. She attends regular fitness

Carole Baldwin, a member of the Beach Guild of Fine Art, finds strength in a group of long-time friends and by being involved in the community. classes specifically designed for seniors that focus on stability and balance called Omni-Fitt. There is also Neighbourhood Link, a non-profit support agency that provides a wide range of services for residents of the Beach and East York community. These services and programs promote physical, mental and emotional support for seniors. For Baldwin, it’s friends that really make a difference. In 1953, she met four young women in her East York Collegiate art class. They became close friends and remain so today. According to Baldwin, the group of former teachers would meet approximately 10 times a year to support each other and their families. “We would get together in each other’s homes. When
we got married and had children, we would invite our husbands to picnics and other outings. We have been through marriages, children, divorce, illness and death. We all continue to support each other,” she said. Baldwin is also a member of the Beach Guild of Fine Art. The guild was founded in 1994, by a group of local artists from the Beach community. Baldwin is an oil-based painter. She illustrates paintings of various cityscapes, buildings, landscapes and people. She has her artwork showcased throughout the year at various venues throughout the city. “I drink Champagne when I’m happy and when I’m sad. Sometimes I drink it when I’m alone. When I have company, I consider it obligatory. I trifle with it if I’m not hungry and drink it when I am. Otherwise, I never touch it unless I’m thirsty.” Lily Bollinger, House of Bollinger hat a fabulous quote! Yes, Veuve Bollinger, I couldn’t agree more: Champagne is for every occasion and not just for christening ships or toasting the bride. Dom Pérignon, while important in his own right to wine history, didn’t invent champagne as is often believed. Rather, he detested the annoying, pesky nuisances (the bubbles) that were forming in his wine and did everything to try and rid himself of these dastardly things. It was actu-
ally Veuve Clicquot (veuve = widow) who put the Champagne region on the global map. In fact it was a number of women who made Champagne what it is today, but unfortunately history has not recorded their story in any great detail or clarity. As 19th-century France was a chauvinistic society (c’est terrible!), women were to concern themselves only with homemaking and childbearing, you know, being so fragile and all. (Sounds a bit like Mad Men.) But, if you were a widow, then these rules didn’t apply. After all, what possible harm could you do? Drum roll please! Barbe-Nicole Ponsardin a.k.a. Veuve Clicquot — invented the riddling rack making it possible to extract spent lees (a.k.a. dead yeasts) from the neck of the bottle in order for ease of removal from its bottled prison. The “Brut” style is accredited to the ingenuity of Veuve Pommery. Marie-Louise Lanson de Nonancourt - While you may be familiar with the Lanson name, this champagne house was not her crowning glory. She saw the Napoleonic Laws writing on the wall and decided to buy a company that was on the verge of bankruptcy, none other than Laurent Perrier. And so we end off where we began, at the House of Bollinger. In 1961 Lily aged a small portion of her vintage champagne on their lees for an additional 10 years, which added depth and complexity. Thus the R.D. line was created. R.D. is the initial-
ism for récemment dégorgé, or “recently disgorged” (the spent yeast cells are expelled just prior to shipping). I’ve barely scratched the surface of the many accomplishments of these fine women and others of this region whose stories have not been told. The next time you pick up a bottle of Veuve Clicquot, look a little closer, and you will see her handwritten signature wrapping around the bottle’s label. Her signature, and her signature style, are a reminder of the influence and impact of women in the history of Champagne and its wines. “IT’S TIME to get serious,” says Kostadin Demirov, who has spent years building fine custom homes in the eastern Beach area. His latest move is to act as developer of a 68-unit rental apartment project at Main Street and Kingston Road. And this time he will also retain ownership and become the operating manager of the property. Nineteen of the units will be affordable rentals and the remainder, market rate units. “I have a daughter and I want to leave something for her,” he says, and explains that she expects him to apply everything he has learned over the years and create a modern residence that befits a great home community and also reflects the times. “The time is right for clean building systems.” The building will be heated and cooled using a ground source system, the installation of which was the first major work on the site last
year. He says that he is looking at the project’s heating and cooling systems differently than typical developers have in the past. “Geothermal is a long-term investment.” The technology has been proven in thousands of installations for about 60 years, and is based on the simple principle that below ground temperatures are warmer in the winter than the above ground air, and in summer they’re cooler than the above-ground air. A ground source heat pump is fuelled by a small amount of electricity, is well known to deliver a high level of indoor air quality and comfort, and costs about 60 per cent less to operate than an equivalent fossil fuel system. It pays for itself quickly and has a long useful life, delivering big savings for decades. More and more Toronto project developers are choosing geothermal. In this case a central Mitsubishi heat pump with variable refrigerant flow will condense and intensify prewarmed geothermal water through a heat exchanger

The HVAC load required 35 geothermal boreholes, each 600 feet deep. “We will also have solar PV on the roof - 62 panels, 150 square metres, 23 kilowatts,” says Demirov. “The system should handle all the power needs of the building, including the entire HVAC load of about 100 tons. We may add a battery later.” He explains that tomorrow’s builders will have to make the numbers and the Toronto Green Standard work, and in that part of the Beach a certain quality level is also a modern-day consideration. Solar and ground source systems fit the bill. By adding a large solar array Demirov is ensuring that the building will not cost
very much to operate, and it will create almost no greenhouse gas emissions. The Toronto Green Standard is a set of guidelines used by the planning department when approving developments. For the city it is a tool to move developers gradually into decarbonization. Evolving voluntary tiers become mandatory every five years. The expectation is that by 2030 fossil fuels will not be specified in new Toronto construction projects. Meeting on plans for Summerville Apartments slated THE CITY of Toronto will hold a Community Consultation Meeting regarding redevelopment plans for the Don Summerville Apartments’ land in the Queen Street East and Coxwell Avenue area on the evening of Tuesday, March 3. The meeting will take place at S. H. Armstrong Community Centre, 56 Woodfield Rd. at 6:30 p.m. The meeting is an open invitation for residents to learn more about the planning application for 1555-1575 Queen St. E. by asking questions and sharing comments. The redevelopment plan will see the two Toronto Community Housing (TCHC) apartment buildings on the land at 1555 and 1575 Queen St. E., replaced with a 10-storey residential building and a 17-storey and 15-storey mixed-use building. The development will include retail uses at-grade and 771 residential units, which has 120 rent-gearedto-income units, 100 affordable retail units, 188 market rental units and 363 market condominium units. Tenants who live in the existing buildings will be moved to other TCHC properties during construction of the new development. They will have the right to return once it is finished.
