Disc golf course expansion to be removed from beach THE NINE-HOLE expansion of the Beaches Disc Golf Course located at the west end of Woodbine Beach has been removed as of late last week. The course’s location was a source of controversy as many in the environmental and bird-watching community said the site should have been left a natural area for migrating birds, other wildlife and plants. It also set off disagreements between those who said the City of Toronto needs to provide more spaces for recreational opportunities in its parks, and those who wanted the area to be deemed natural and protected from any uses. The disc golf course expansion opened in November of 2021, and was an addition to the existing nine-hole Beaches Disc Golf Course already located in the north end of Ashbridges Bay Park. The location of the course expansion was decided upon by the City
of Toronto last year, but once the course opened on the west end of Woodbine Beach there were numerous complaints about the site since it was being used by migrating birds. Beaches-East York Councillor Brad Bradford said those concerns had been heard and the course expansion was being paused for the spring migration season. He said the parks department and the Toronto Regional Conservation Authority (TRCA) will monitor the area this spring and summer. The baskets on metal poles that disc golfers use as targets have been removed from the site and players will not be there. “At this time, removing the baskets is a temporary measure, and staff are continuing to analyze the area and look into all options for reinstallation or re-location options for all-season use,” said Bradford. Beaches Easter parade set for Sunday, April 17 THE 2022 version of the Beaches Lions Easter Parade will take place on Easter Sunday (April 17) along Queen Street East in the Beach starting at 2 p.m. The parade did not take place in 2020 or 2021 due to the COVID-19 pandemic, so there is great excitement to have it return this year. The Neighbourhood Watch moderator becomes the contact person with police and city departments such as bylaw and parking enforcement. The moderator reports the problems, offers community input and also possible solutions. Cass said putting a Neighbourhood Watch together involves the following steps: • Identifying the location of the area to be covered by the Neighbourhood Watch. • Setting up a structure, including a moderator as well as street captains. • Setting up a private social media page, such as on Facebook, and allowing people in the neighbourhood to join. • Street captains talk to the community about and take note of problems that need to be resolved. RESIDENTS IN East Toronto can help to increase community safety by forming a Neighbourhood Watch program. That has been the experience for those living in the Beach community known as ‘Pleasantville’, said resident and local Neighbourhood Watch co-ordinator Cindy Cass. She said the Neighbourhood Watch has drastically reduced criminal behaviour in the area which is bounded by Woodbine Park to the west, Woodbine Avenue to the east, Queen Street East to the north, and Lake Shore Boulevard East to the south. “It really prevented a lot that was going on,” said Cass. The Pleasantville Neighbourhood Watch has connected residents to become a unified group, working together to deal with problematic behaviour in the area that has included large, out-of-con-
trol gatherings in Woodbine Park and some violent, dangerous and destructive late-night behaviour by huge crowds partying in the Woodbine Beach area last summer The Neighbourhood Watch was able to organize online community meetings with the local councillor and 55 Division police representatives which helped deal with those situations and other concerns related mostly to the large crowds, late-night parties in the park and illegal parking. Building on that success, Cass who is now a member of the 55 Division Community Police Liaison Committee (CPLC), wants to help other residents within the division form their own Neighbourhood Watch programs. A Neighbourhood Watch program allows community residents to work together with police to identify problems, spread awareness regarding crimes and develop specific solutions.

POLICE HAVE arrested a 20-year-old man and charged him with second degree murder in connection with the discovery of a woman’s body in Leslieville last week. The body of Tien Ly, 46, was located near Eastern and Berkshire avenues on the afternoon of Monday, March 28. Police said her body was found in a plastic bag and there were obvious signs of trauma, including some dismemberment. Police were initially unable to identify Ly and released some photos of her nail polish design and a red shirt she was wearing in an effort to seek information from the public to help with her identification.
The identity of Ly, who lived in the Leslieville area, was announced by police in a March 30 news release. In that news release, police also said they were asking for the public’s help in locating her 20-year-old son Dallas Ly. It was not indicated at that time that he was a suspect, but rather that police were concerned for his safety. Police said Dallas Ly was arrested on April 2 and charged with second degree murder in connection with the death of his mother. People tend to think that having a Neighbourhood Watch is time consuming. But that is not the case. It takes time to get it started. But once it’s going, the time commitment is low, said Cass. “We have had full support of Beaches-East York Councilor Brad Bradford and a lot
of help from (55 Division police officers) Norman Leung and Jonathan Little. Without them and the volunteers, we would not be successful,” said Cass. Little, a Crime Prevention Officer who works with the Pleasantville Neighbourhood Watch, said massive parties in and near the area during the warm weather months is an ongoing concern identified by residents. He said police plan to use social media to keep residents aware of any upcoming issues in the area. Parking Enforcement Officers and the City of Toronto will also be working to man-
age large crowds of people, increased traffic and illegal parking this spring and summer. “Officer presence for these events is always important to try to deal with problems before they get out of control,” said Little. Along with keeping residents safe, Cass said a stronger sense of community can emerge from a Neighbourhood Watch. This happens in particular when there are informal programs set up such as book clubs, dinner gatherings and events on holidays. A result of these programs is that neighbours get to know each other better, she said,
and also start identifying other issues that need local attention such as community clean-ups of trash in parks and supporting charities. Bake sale through local Mennonite church supports organization helping people escape human trafficking By Jesse Gault
AURORA HOUSE is holding a Spring Treats Bake Sale to raise funds for the organization that works to provide people with an escape route from situations of human trafficking and exploitation. In particular, the organization helps exploited pregnant women and exploited women with children. While the location of the house is not revealed for safety reasons, the organization is linked to the Toronto United Mennonite Church and the Mennonite New Life Centre of Toronto (MNLCT) which are located on Queen Street East in the Beach.
The organization’s mission statement is “To provide community-based housing and support services with the aim of empowering people who have been trafficked and exploited in Canada to thrive in society.” Aurora House provides housing and flexible services based on the individual needs of the survivors, and offers support for trafficking victims in a transition to independent living. The fundraising bake sale will feature food creations available for sale online. One of several bakers for the sale is Ginny Lepp, a former contestant on the Food Network Canada show Great Chocolate Showdown.
Options for purchase of baked goods are mostly $30 and one package is $50. Delivery fee for ordered items in Toronto is $5. Beacher creates Peace Doves and flag pins to raise funds for people of Ukraine By Ahmed Dirie
TOULA VOIKOS is using her skill in design and love of sewing to raise money for Ukraine by creating Peace Doves and flag pins in the colour of the Ukrainian flag. Voikos runs LazyBonesCozy, where she creates various products including cushions, phone stands, meditation eye pillows, bowl cozies, sachets, door stoppers, in addition to the Peace Doves and flag pins. Voikos, who has lived in the Beach for the last 19 years and studied graphic design, started LazyBonesCozy during the COVID-19 pandemic following the success of masks she made for friends, family, and donated to Michael Garron Hospital and the Toronto Humane Society, where she also worked as a part time adoption agent. “I just sort of really tapped into my love of sewing, which I’d always dabbled with before but never really taken it much further and then I started creating other products,” said Voikos. One of the tenets of her business is to minimize waste of fabrics that are piling up in landfills. Conversely, Voikos makes many of her products out of recycled, or upcycled, material she can

Obituary
Layton A. Stewart remembered as The Mayor of Lockwood LAYTON A. Stewart, a founding member and past president of the Beach Triangle Residents Association, passed away last month at the age of 101. Born on Oct. 4, 1920, Layton Steward died at the Sunnybrook Veterans Centre on Friday, March 4. He was predeceased by his beloved wife June (nee Ross) of 65 years. Layton and June were active members of the Beach Triangle Residents Association until they moved away from what had been June’s childhood home on Lockwood Road. He was known
LAYTON A. STEWART to many in the community as The Mayor of Lockwood. “We remember his wry wit and the many stories. They were part of every neighbourhood function,
sleeves rolled up and pitched right in,” said a notice from the Beach Triangle Residents Association. “The BTRA has never been quite the same since their departure. We send condolences to family and friends at this time of great loss.” Layton was born and raised in French River, PEI. He moved to Ontario to enlist and served in the Canadian military in the Second World War for three years in England, France, Belgium, the Netherlands and Germany. After the war, Layton married June and lived in the
Beach area of Toronto where he was a longtime member of Bellefair United Church. Layton will be remembered by the many people whose lives he touched as a caring and compassionate friend. He is sadly missed by his children Wendy (Ken) and Kevin (Donna); and was cherished grandfather to Zoe (Steve), Jessie, Anna and Christina. A funeral service for Layton was held on March 10 at St. John Norway Cemetery. Donations may be made in memory of Layton, to a charity of choice.
Tree cutting on Blantyre under investigation THE CITY of Toronto confirmed last week that it is continuing an investigation into allegations of the illegal removal of at least one mature tree from a property on Blantyre Avenue in southwest Scarborough. “As this issue is currently under investigation, the City is unable to provide specific detail at this time,” said Dan-
iel Boven, Manager, Tree Protection and Plan Review with the City of Toronto. The allegations are related to a residential property on Blantyre Avenue . An Urban Forestry Standards Officer has completed an inspection of the property in regards to the alleged removal of a tree, or trees, from the backyard of the property.
The allegations of the removal of protected oak trees has been an ongoing issue in the area for almost a year. While not referring to the allegations on Blantyre, Boven said the City of Toronto can lay charges under the Provincial Offences Act for violations under the Municipal Code that can result in fines or settlements levied

New types of treatment for chronic overuse injuries Dr. Jihad abouali

I
n my work as an orthopaedic surgeon at Michael Garron Hospital, I’ve had the privilege of treating a wide variety of injuries, from ligament tears of the knee to fractures of bones in the forearm. While some ailments require surgery to fix, most can in fact be treated with conservative measures.
Some of the most challenging problems to manage, however, are chronic overuse injuries. Chronic overuse injuries are injuries that occur when there is continual physical stress on a joint or muscle that does not have time to heal. Common examples include tennis elbow, runner’s knee, plantar fasciitis, rotator cuff syndrome, and osteoarthritis. Despite the numerous benefits of sports and exercise on physical and mental health, chronic overuse injuries can be extremely debilitating. The body’s natural response to injury is to create inflammation.
Initially, this process is helpful as it provides damaged tissue with important cells that promote healing and recovery. However, chronic inflammation, as seen in overuse injuries, can perpetuate tissue damage and cause ongoing pain. Medications including muscle relaxants or non-steroidal anti-inflammatories (NSAIDs) can reduce injury symptoms, and physical rehabilitation or athletic therapy can help restore function. When these conservative treatments fail, people often turn to surgery. But now a new type of treatment
is making a difference. Plateletrich plasma (PRP) is a form of regenerative medicine currently being used by orthopaedic surgeons and making a big difference to patients. To develop PRP, a sample of a patient’s own blood is taken and placed in a centrifuge, a process know as blood spinning, to concentrate the platelets. The PRP preparation is then carefully injected into the site of injury, often with the aid of ultrasound guidance. Once in the body, the platelets will release growth factors that can improve and even accelerate the healing process. In chronic
ailments, such as osteoarthritis, it can even slow down or halt the progression of the disease. Ultimately, each patient and injury needs to be treated individually, as there are many factors that will ensure an optimal outcome. As our knowledge of these cutting-edge biologic therapies expands, these treatments will hopefully provide an effective treatment option for challenging chronic overuse injuries. Re: “Open letter to disc golfers regarding the Beach course’, Letters, Beach Metro Community News, March 22. Let me start by saying I have lived and worked in the Beach for more than 40 years and walk or jog on the Boardwalk almost on a daily basis. I am not a disc golf player but am in total agreement that the disc golf course on the western beaches is misplaced. But I believe a far greater threat to bird habitat and the natural wildlife of this beach area are the dozens of off leash dogs and their owners. ‘Pausing’ of disc golf course on Woodbine Beach welcomed by number of Toronto nature groups Late last month our nature minded community received two letters, one from Beaches-East York Councillor Brad Bradford and the other from Brock Rochus our Park Supervisor. Those letters informed us that the baskets from the Beaches Disc Golf Course on Woodbine Beach would be removed by March 31 (which they have been). The Toronto Ornithological Club, the Toronto Field Naturalists, the Ontario
Field Ornithologists, the Toronto Entomologists Association, Nature Canada’s Bird Friendly Team of the City-Toronto Team, nature minded individuals of Toronto and the constituents of Ward 19, applaud and thank both the councillor’s office and Toronto Parks, Forestry and Recreation for reconsidering the impact of having this disc golf course take over this dune habitat on Woodbine Beach.
WoodGreen needs volunteers for Meals on Wheels program By Qiting Wang
WHILE THE demand for WoodGreen Community Services Meals on Wheels program has gone up, the number of volunteers to deliver meals has gone down. Meals on Wheels provides nutritious meals to seniors, people with physical disabilities and cognitive impairments, individuals suffering from illnesses and recovering from surgeries, and those who need special dietary planning and assistance. The WoodGreen Meals on Wheels program served more than 54,000 meals to more than 570 people in 2021. “The service helps me a lot, and it kind of cuts down on my expenses,” said Ivor Gwinnett, 65, a four-year client of the program. Richard Pitter, Manager of Transportation and Food Services at WoodGreen, said one of the most immediate and pervasive issues WoodGreen had to address was high levels of food insecurity among community members when COVID-19 emerged. Meals on Wheels were able to meet the demand by reallocating staff from transportation, child care and adult programs teams to help distribute the meals. But WoodGreen also saw the pandemic lead to a significant drop in the number of volunteers available to deliver meals. “We went from over 50 active volunteers pre-COVID-19 to currently 20 volunteers,” said Pitter. Volunteer teams are made up of a driver and a runner.
The driver will drive their own car to the locations and stay with the car while the runner distributes the meals. “Basically, the volunteers will be picking up meals at from our food source and delivering them along a predetermined route directly to the seniors homes within the area,” said Pitter. Volunteer schedules can be set based on availability. There are 10 to 12 routes per day, so WoodGreen needs 20 to 24 volunteers per day to cover these routes. The meals are delivered Monday to Friday from 11 a.m. for about 90 minutes. Meals on Wheels volunteers deliver more than hot and frozen meals to seniors and adults living with a disability, they also provide security and wellness checks and help individuals access other community-based services. Elizabeth Ritchie, 73, a four-year volunteer at Meals on Wheel who is a retired WoodGreen social worker, said the program provides an important safety check for people. “Because if nobody answers the door, we have to report back to the office,” said Ritchie. “Then it will follow up and as a safety check if somebody by chance has an accident....The important thing for people to know is that volunteering is not taking out your entire day, it is really just a short time in your day.” To volunteer with WoodGreen Meals on Wheels, please email foodsecurity@ woodgreen.org or call 416645-6000, ext. 6697.

The golf course will be “paused” for the spring and summer months during the breeding and nesting season of our migratory birds and insects. Monitoring by the City of Toronto and TRCA will continue. Further to this, the Toronto Nature Stewards will be removing invasive plants in this dune habitat. The ongoing naturalization of this dune habitat has provided more than 271 sightings on the INaturalist app since 2017, some rare including a plant identified in 2020 that had not been seen in Toronto for 100 years. I’m curious to see the affects of the new No Dog’s on the Beach signs from April 1-Nov. 1. Nature can’t protect itself and it is greatly appreciated that Toronto’s nature minded community with their amalgamated viewpoint has been taken into consideration. We offer as we have from Oct. 2021 to engage in transparent and all-inclusive consultation and are looking forward in doing so. The nature community is thrilled to hear that Mayor John Tory’s abbreviated quote of July 13, 2021 “Now is the time to renew our commitment to the design and protection of our green spaces” is being heard. ho gets to tell their stories? Books and movies help us to look at the world through different eyes and feel empathy for others. Two new films give us a vision of Toronto’s diverse communities. Scarborough is centred around three children who attend a literacy program run by a wonderful social worker in the Kingston and Galloway roads area which is relatively close to the Beach, yet a world away. The screenplay is by Catherine Hernandez who adapted her acclaimed 2017 novel about marginalized families struggling just to get by in a cycle of poverty, inadequate housing, addiction, abuse and lack of transit. These are faces we seldom see in mainstream films. We can all hope that children are resilient in the face of trauma. Scarborough shares the heartbreaking stories of three young friends who just want the same chance at happiness as everyone else. The film has a documentary feel of harsh reality. We’re there, worried, as a very young girl wanders alone around Warden Subway Station. There’s hope in the kindness of strangers and in the bright eyes of an Indigenous girl whose family lives in a shelter. (Who remembers when there more than 30 motels along the Kingston Road strip

in the 1960s heyday of the automobile?) The Galloway area often gets stereotyped for gangs and violence. Scarborough looks past the strip malls to celebrate the diversity and resilience of the people. Hernandez has said, “The characters from the book were borne out of love for my community.” Scarborough is nominated for 11 Canadian Screen Awards (on CBC this Sunday, April 10 at 8 p.m.). Last year at TIFF it was the first Runner-up for the People’s Choice Award and won the Changemaker Award for a film that tackles issues of social change. Oscar-winning filmmaker Domee Shi (Bao) grew up in Scarborough. She sets her wonderful animated Pixar film Turning Red (streaming on Disney) in the Toronto of 2002 complete with old streetcars, the SkyDome and Chinatown.
The story of her overprotective mother (voiced by Sandra Oh) hiding behind a tree outside Meilin’s middle school is actually true. “There wasn’t a lot of representation of myself and my family growing up and I didn’t get to see a lot of myself in media,” said Domee Shi. At Toronto City Council Mayor John Tory was proud to say, “We can actually celebrate a film where Toronto is able to be itself.” Shi replied, “This is a universal story about growing up for all Canadians, but I’m especially proud to be part of an all-woman filmmaking team and hope to inspire other women filmmakers and immigrants to embrace their inner beasts. Thank you again and I hope you enjoy this love letter to Toronto.” Watch out for the gifted Sheridan College grad at the Academy Awards next year!

Winter Stations extended until April 10

THE 2022 Winter Stations art installation exhibit will be remaining on Woodbine Beach for some extra time this year. Originally slated to end and be dismantled on March 31, the six installations will now remain on display until April 10. The installations on display along Woodbine Beach this year are: ENTER-FACE (from Turkey); Wildlife-guard Chair (from Canada and France); THE HIVE (from Canada); S’winter Station (Ryerson University); Introspection (University of Toronto); and One Canada (University of Guelph). The 2022 installations were officially unveiled on Family Day, Monday, Feb. 21. Winter Stations began in 2015 as a way to highlight the beauty of the Eastern Beaches and make them a destina-
tion point for outdoor art installations during the winter. The artworks are set up at the lifeguard stations along Woodbine Beach, and each year an international competition receives entries connected to that year’s Winter Stations’ theme. The theme for this year was Resilience. Winter Stations was first launched by RAW Design, Ferris + Associates and Curio in 2015. Over the years it has become immensely popular with both local residents and visitors to the Beach. Sponsors for Winter Stations 2022 are The Beach BIA, Minto Communities, Sali Tabacchi Branding and Design, Meevo Digital, RioCan, Demirov, Bara Group, Urban Capital and Waterfront Shores Partners, consisting of Cityzen Group, Tercot Communities, Greybrook Realty and the City of Hamilton.

T
he African Methodist Episcopal Church has a rich history and legacy in mission, outreach, education, spiritual empowerment and growth for 235 years worldwide and for over 180 years in Canada. We believe our mission and advocate for the social, physical and spiritual improvement of people’s life regardless of the tide that we are in. As the doors have begun to open; the community and the people are emerging from two years of lockdown, solitude and isolation. Many are still hesitant, fearful and worried for their loved ones safety. Some persons are excited and anticipate long needed vacations, to see and embrace family members and friends and some want just to be able to travel outside
of the country. As we look forward to a post-pandemic life and move into celebrating Easter, the sacrifice of our Lord and Saviour, Jesus Christ and His defeat and triumph over death, we must take this journey during Lent to a place of renewal, transformation and expectation. We cannot and do not want to go back to what we have considered to be prepandemic normal. New doors have been open, new horizons, we have stepped into a new way to do and perceive everything around us. At Grant AME, this year we are focusing on ‘Being Intentional’ in this Lenten season. We are intentional about forgiveness, intentional about resisting temptations, intentional about loving, intentional about giving and intentional about community stewardship. If it’s one thing we have learnt during this pandemic is the uncertainty of life, human frailty and the need
for togetherness, connection and relationships. We have been engaging in daily tasks where we are called upon to be good stewards of what God has given unto us. So our daily tasks require us to be intentional in how we care for the environment, how we use our gifts and talents to help and show love to others. Other daily tasks also include using our time wisely in prioritizing our daily activities, spending time in prayer, time to pause and breath, and meditate. We also will be intentional in taking care of our mental and physical well-being, and giving of our resources and of course sharing the love of Christ with others. The time is now for us to be intentional about wanting renewal, transformation and raising the expectation in our lives and community. BEACH RESIDENTS can be forgiven if they did a double take while walking along Leuty Avenue and thought they saw a Canadian Men’s National Soccer Team player standing on the front porch of a house this week. It’s all part of local resident Les Jones’ celebration of the fact that the Canadian men have qualified for the 2022 World Cup. Several years ago Jones purchased the six-foot tall polystyrene figure of a standing soccer player to be used to celebrate a friend’s birthday party. He has used it for other celebrations over the years as well, and thought the occasion of the Canadian men qualifying their first World Cup since 1986 was the perfect time to update the figure’s uniform. He said he was thinking about modernizing what had been a fairly dated soccer uniform on the figure, but as the Canadian men’s team got closer to qualifying for the World Cup he decided it needed to be wearing the current Canadian kit.
So Jones reached out to the community to see if anyone knew an artist who could paint the figure in the red uniform of the Canadian men’s team. He was put in touch with local artist Marie Gosling who was able to take on the assignment, and she was actually finishing the work on Sunday, March 27, as Canada qualified with its 4-0 win over Jamaica at BMO Field in Toronto. Jones said the figure has been a big hit in the neighbourhood. He said people have been stopping as they walk by his house to look at it and take photos. “Our living room window faces the porch and we can see people stop on the street, and then come over for a closer look and take photos. It’s a great way to get talking with all the neighbours and helps build community.” For Gosling, it was many hours of work researching the Canadian men’s team uniform so she would get the details exactly right. It was also an almost seven-hour paint job painting the figure as it also required some repairs to its nose. Jones and Gosling decided the figure would have number 22 since it is the 2022 World Cup. They have also given it the name “Moose” on the back of the jersey as opposed to honouring a specific team member. She said the figure is very life-like. “I would jump sometimes when I walked into the room and saw its reflection in the mirror.” Gosling said she happy to be helping to spread the pride the entire country is feeling regarding the team’s accomplishment. “I think it’s an amazing thing about the World Cup. I saw the game on TV and it really sunk in. We are so very proud of the Canadian team,” said Gosling who lives in the Main Street and Gerrard Street East area. Jones has a long history

with soccer, and attended the World Cup in Mexico the last and only time the Canadian men have competed in the tourney. He also remembers being in St. John’s, Newfoundland in 1985 to watch the game in which Canada qualified for that World Cup. He was a photographer for the Canadian Soccer Association for decades and also created the book Soccer: Canada’s National Sport. Jones has also been a director with the Robbie International Soccer Tournament that’s been taking place in Scarborough for more than 50 years and also served as the chair of The Soccer Hall of Fame and Museum in Vaughan.
Jones said that at this time he is not planning to go to Qatar in November of 2022 for this World Cup though given travel concerns and the hot temperatures. The Canadian men qualified for the 2022 World Cup as the top team in CONCACAF, which includes teams from North and Central America and the Caribbean. Also qualifying directly out of CONCACAF were Mexico and the United States. The draw to determine the eight groups the 32 teams in the 2022 World Cup will play in was held on Friday, April 1, in Doha, Qatar. Canada’s name was the very last one drawn, and our team will be playing in Group F with Belgium, Morocco and Croatia.

CHOUX PASTRY is one crazy dough! It is different from our familiar pastry. This unique dough produces steam as it cooks in a hot oven and puffs into a ball leaving a cavity for either a savory or sweet filling. The sweet filling is usually sweetened whipped cream or custard. Thus, it automatically becomes a cream puff or, when cigar shaped, filled with whipped cream and coated in rich chocolate becomes the delectable éclair. Small versions are called profiteroles while a pyramid of custard filled profiteroles coated in caramel are called croquembouche. If we add Swiss and Parmesan cheese to the choux pastry we can make a savoury version of profiterole called bouchées which can be served warm or filled with a savoury filling such as curried chicken. Both are delicious appetizers. Finally, if shredded Parmesan and Swiss cheese are added to the dough and it is shaped in a circle to produce a cheese and herb wreath, this savoury is called gougère, a very delicious bread just right for April celebrations. Choux pastry, pâte aux choux, or cream puff pastry is made differently than any other dough. Water and butter are boiled together until the butter melts. Then allpurpose flour (all-purpose flour must be used in order for it to rise) is beaten either with an electric hand mixer or by beating vigorously with a wooden spoon. The dough should pull away from the sides of the saucepan and thicken. While still warm, four eggs are added in one at a time, beating vigorously after the addition of each one to produce a thick, glossy dough which stands in peaks. At this point, the dough can be shaped into any one of the shapes above, or refrigerated overnight then shaped and baked to produce profiteroles, bouchées, cream puffs or gougère when needed. Once in the hot oven, steam is produced and this
sweetened whipped cream and if you wish, dip the top into melted chocolate. For bouchées, spoon desired savoury filling, such as curried chicken, into the cavity. Makes about 24. For cream puffs, sweet or savoury – Arrange 2 tbsp (25 mL) dough in a circular mound on a pan, leaving 1 ½ inch (3.7 cm) between each pastry. Bake for about 2025 minutes or until golden brown and firm to touch. Turn the oven off and let stand for about 5-10 minutes in the cooling oven. Then transfer to a rack to cool completely. Meanwhile, prepare whipped cream to fill the cream puff and add icing sugar to a sieve to shake over the cream puff. Once cool, slice cream puff horizontally and spoon whipped cream into cream puff. Sieve icing sugar over puff or you can drizzle melted chocolate over puff. Makes about 12. For Éclairs- Arrange 3 tbsp (45 mL) dough in a cigar
shape on parchment paper, leaving 1 ½ “/ 3.7 cm) space between each. Bake for about 20-25 minutes or until golden brown and firm to touch. Turn the oven off; let eclairs stand in the oven for 5 minutes then remove and cool on a rack. Meanwhile, prepare whipped cream to fill the cooled cavity and dip the top exterior into melted chocolate. Makes about 9 eclairs For Gougères – savoury cheese bread made from choux pastry. Stir 1 cup (250 mL) grated Swiss cheese and ¼ cup (50 mL) grated Parmesan cheese into full choux pastry dough; draw a 9- inch (23 cm) circle on the parchment paper and place about 2 tbsp (25 mL) dough in adjoining mounds on the drawn line to form a wreath shape. Bake in the oven or refrigerate dough overnight to bake fresh and serve hot the next day - ideal for Easter Brunch! Makes 6-8 servings.

dough rises miraculously into any one of the shapes described. As you can see choux pastry is versatile and is easy to produce too, once you understand the method. It’s also the perfect ‘eggy’ concoction for Easter, sweet and/or savoury, whatever you choose. Follow these guidelines for success! Choux Pastry Once you master the simple technique of making this “crazy” dough, you are on your way to such fancies as profiteroles (whipped cream or custard filled) balls, bouchées (savoury balls you can serve warm as is or with a filling such as chicken curry), cream puffs (larger balls baked and filled with whipped cream or custard) or the gougère; a wreath shaped cheese bread. 1 cup (250 mL) water 1/2 cup (125 mL) butter 1 cup (250 mL) allpurpose flour (you must use all-purpose flour) 4 large eggs 1/4 tsp (1 mL) salt In a medium size saucepan over medium-high heat, combine water and butter. Bring to a boil. Once butter has melted, remove from heat. Immediately, using an electric mixer, beat in flour and salt until thick and well combined. (You can do this by hand but it has to be done vigorously.) Continue beating until dough pulls away from the side of the pan. Add in eggs one at a time, beating well after each addition to produce a smooth, glossy dough that stands in peaks. If time is tight, you can cover this and refrigerate until the next day to use or bake immediately. Preheat oven to 375F (190 C). Line a baking sheet with parchment paper. For bouchées or profiteroles: Spoon 1 tablespoon of mixture onto a parchment lined baking sheet. Shape into a round mound leaving 1 ½ (3.7 cm) space between each pastry mound. Bake for about 20 -25 minutes until golden brown and firm to touch. Turn the oven off and let stand for about 5 minutes then place on a rack to cool. Meanwhile make fillings, prepare whipped cream for the profiterole or savoury for the bouchée. Once cool; slice horizontally almost through the profiterole; fill with
