Triple-Cheese Mashed Potato Casserole Mashed potatoes are always a popular dinner choice, and when you add three kinds of cheese to the mix, no one can resist a second helping. 5 pounds all-purpose potatoes, peeled and cut into 1-inch chunks 1 tablespoon salt 2 teaspoons salt 5 tablespoons margarine or butter 3/4 cup finely grated Parmesan cheese 3/4 cup plain dried breadcrumbs 2 cups reduced-fat milk (2%) 4 ounces Cheddar cheese, shredded (1 cup) 4 ounces Neufchatel cheese, cut up 1. In a 6-quart saucepot, heat potatoes, 1 tablespoon salt and enough water to cover to boiling over high heat. Reduce heat to medium-low; cover and cook 10 minutes or until potatoes are tender. 2. Meanwhile, in a small bowl, heat 3 tablespoons margarine in microwave oven on high 30 seconds or until margarine melts. Stir in Parmesan and breadcrumbs; set aside. 3. Preheat oven to 325 F. Drain potatoes well; return to saucepot. With potato masher, mash potatoes with 2 teaspoons salt. Stir in milk, then Cheddar, Neufchatel and remaining margarine until cheese melts. 4. Grease 13- by 9-inch glass or ceramic baking dish. Spoon potato mixture into dish. Sprinkle breadcrumb mixture evenly over potatoes. Bake, uncovered, 15 minutes or until top is lightly browned. 5. Optional for storage: Follow recipe through step 3. Spread potato mixture into greased 13- by 9-inch glass or ceramic baking dish; cover with foil and refrigerate overnight. Refrigerate crumb mixture in a sealed plastic bag. To serve, let dish stand at room temperature for 30 minutes. Bake, covered, in preheated 325 F oven for 1 hour and 15 minutes; uncover, sprinkle with crumb mixture, and bake until browned, 15 minutes. Serves 20. • Each serving: About 190 calories, 8g total fat (4g saturated), 14mg cholesterol, 465 sodium, 25g carbohydrate, 2g dietary fiber, 6g protein. Bake Super-Easy Soft Pretzels Enjoy the smell and feel the warmth of something special baking in your oven this week. These Austrian-style soft pretzels are a healthy and satisfying snack dipped in yummy mustard or as a unique accompaniment to a big bowl of soup. They also can be sliced in half while still warm for a tasty slider-style Reuben sandwich. Making them is so easy, even your preschoolers can get in on the action, twisting and turning the soft dough. If you provide daycare in your home, the kids will keep busy creating their own shape or design for a unique treat fresh from their imagination. They are fun to make and bake at a birthday party or a sleepover, too. My shortcut method uses prepared bread dough from the freezer section of your grocery store.
EASY SOFT PRETZELS (Makes 12) All-purpose flour for flouring work surface 1 pound frozen white or wholewheat bread dough, thawed 1 slightly beaten egg white Coarse salt, sesame seeds, caraway seeds or cinnamon sugar for toppings Mustard, for dipping (optional) 1. Place the thawed dough on a floured cutting board or kitchen count-
er. Cut it into 12 equal pieces, and let the creativity begin. 2. Sprinkle flour on your hands and roll the pieces into a 1/2-inch thick by 18-inch-long rope. Hold the ends with two hands and flip it around and around like a jump rope to help lengthen it. For a standard pretzel design, make a U shape with the rope and set it on the surface. Hold each end of the U, cross the rope over and twist the ends around each other one time, leaving about 2 inches from the crossing point to the tips. Lift and press the ends onto the curved bottom of the U to form the pretzel. For a variation, make alphabet letter shapes or simple designs like a heart.
Get creative when shaping these soft pretzels. Even preschoolers can join in the fun. 3. Transfer pretzels to a greased or parchment paper-lined cookie sheet. Cover and allow to rise for about 20 minutes. 3. Preheat oven to 400 F. Let your child brush each pretzel with egg white and top with salt or other toppings. 4. HOLLYWOOD — We thought it was unusual that Bruce Willis had seven films that went straight to video last year. Even stranger, nine more are going straight to video this year, starting with “Fortress: Sniper’s Eye” this month. Best guess is that Willis was diagnosed with aphasia two years ago. Aphasia robs you of the ability to communicate, speak, write and understand language, both verbal and written. It’s often caused by a stroke or head injury. In our column last July, we wrote, “Willis must have hit the pandemic running.” At the time, he’d already had five films completed and was shooting four more simultaneously. We now realize he must have known his diagnosis. Since then, he’s completed eight more films going directly to video. Willis has had great hits like the “Moonlighting” TV series and the “Die Hard” movie franchise. *** Was “West Side Story” on Steven Spielberg’s bucket list? He revealed, “Over the last 40 years of my career, if not longer, I’ve always said a musical was the one thing I haven’t done.” However, Spielberg admitted that the musical numbers were harder to shoot than the beach landing in “Saving Private Ryan,” which may have colored his decision. But there’s still another genre on his bucket list ... “One genre I haven’t tackled yet is a Western. So, who knows, maybe I’ll be putting on spurs one day.” He then added, “I have a few in development right now!” Spielberg says he’ll never direct another musical, even though he’ll be producing, with Oprah Winfrey and Quincy Jones, the musical version of “The Color Purple,” the 1985 film he directed that made Oprah a movie star. Surely you can sell it yourself and save some money. All you have to do is put a sign on the front lawn, put it on a for sale by owner web site and wait for buyers to come with offers. Seems easy enough. As a full-time Realtor, of course I will advise you to seek professional service in any situation, and especially in an extreme market whether it favored for seller’s or buyer’s. If your home is in decent condition, in a desirable location and priced within fair market value, buyers will be coming through quickly and aggressively hoping to beat the crowd and those multiple offer situations. There is little doubt you will have buyers and offers. What do you do next? How do you organize the offers to properly analyze them and decide which is the best one? Are the buyers qualified, what type of financing is the buyer pre approved for, what are the contingencies, is the buyer represented, who prepares the sale agreement, what content do you need in the agreement to protect you as the seller? Where do you go from here? Will you be able to keep your emotions out of your decision making? Although it is a fact that buyers are plentiful and willing to pay full price or more for your home, once their offer is accepted, they realize they are paying a high price and now expect to get their money’s worth. A buyer has several opportunities throughout the transaction to back out of the deal and get their initial deposit back. How you manage the intricacies of the transaction can determine if you get to the closing table successfully or not. When you work with a professional to sell your home, your Realtor will... • Represent you and assist in making difficult decisions that are in your best interest, keeping your personal information confidential. • Prepare a plan to reach your specific end goal. • If you are purchasing another property, it is important to have assistance with that purchase process, making sure there are proper contingencies protecting you from closing your current home before finding a new place. Managing timeframes for your transition requires strategic planning and coordination. • Assess your property’s space and condition to advise how best to prepare the property for sale, and where your money is best spent to get a return on your investment.
• Prepare all list documents, property disclosures and marketing material. • Take professional photos and video’ of the property • Submit the property to MLS and all buyer search websites for the best exposure to maximize your buyer pool. • Install a professional for sale sign at the property. • Organize incoming requests for showings and ensure those who are coming through your home are qualified to purchase. • Provide property flyers and disclosure packets for showings. • Show the property pointing out the high points and monitoring buyers to protect your personal items and keeping everyone safe. • Follow up with buyer’s agents for feedback from showings and keep you informed. • Receive offers ( in most cases multiple offers} and organize to review and analyze with you to determine which one will get you to the closing table successfully. • Contact lenders who provided pre approvals to ensure the buyer is still qualified to purchase your home. • Expedite purchase and sale agreement, receive deposit check, and plan for the pending phase of the transaction. • Be present for all inspections and negotiate requests for repairs from the buyer. • Be present for the appraiser and deal with any potential issues from under value or condition contingencies. • Assist you with getting the property ready for closing, providing resources for any repairs to be done, removing unwanted items in the home and the moving process. • Coordinate smoke detector inspection with local fire department and be sure all units are in compliance with updated codes. • Follow up with all parties involved with the closing process…lender, attorney’s etc. • Be present for final walk through and closing. t the onset of the COVID-19 pandemic, many homeowners suddenly found themselves in need of more usable square footage in their homes. Required to work from home due to social distancing recommendations, millions of working professionals suddenly found themselves setting up shop at kitchen tables or islands, in alcoves, garages, or even walk-in closets. Those makeshift offices were never supposed to be permanent, but as companies loosen workplace policies and embrace full remote or hybrid working arrangements, professionals are seeking more permanent home office solutions. Home additions are a possibility for homeowners who need more usable square footage, but add-ons may not be the right option for everyone. If adding on won’t work, homeowners may want to look up ... at their attics. Attics with ample space can make for ideal home offices, as they’re away from the hustle and bustle of a home’s main floor. That can make it easier to concentrate when everyone is in the house and reduce the likelihood that video calls with colleagues and clients will be interrupted by kids and pets. Attic conversions are not always possible, and the following are three important factors homeowners may need to consider before they can go forward with such projects. 1. Dimensions: Both the renovation experts at This Old House and the real estate experts at UpNest indicate that at least half of a finished attic must be a minimum of seven feet high and seven feet wide and 70 square feet. Requirements may differ depending on where homeowners live, but that 7-7-70 guideline is generally the mini-
mum requirement. An attic that fails to meet such requirements won’t necessarily be a lost cause, but it might be costly to make adjustments that ulti-

Climate control: Attics are converted to provide residents with more livable space. Converted space is only livable if the climate within the attic can be controlled so it’s cool in the summer and warm in the winter. An existing HVAC unit needs to efficiently heat and cool an extra room. If it can’t, bills might spike because the rest of the home likely won’t be as comfortable, forcing homeowners to adjust thermostats to offset that discomfort. That also could affect the unit’s life expectancy. Before going forward with an attic renovation, homeowners should contact HVAC professionals to determine if attic spaces can be serviced with the existing units and ductwork, or if an alternative arrangement must be worked out to make the spaces livable. Attic conversions can be great ways to make existing spaces more livable. I just finished watching “Severance” on Apple TV+. I was glued to the show the whole time. Who played Helly? I’ve never seen her before, and she was terrific. — K.W. Britt Lower is the actress who played Helly in “Severance,” a new streaming series on Apple TV+ that is gaining traction with viewers. It quietly debuted in February with the season finale in April. All 10 episodes are available on Apple TV+ to binge or space out however you’d like. All the performers were compelling, but Lower in particular caught viewers’ eyes ever since she appeared sprawled on a conference desk in the opening scene. She started out doing improv before landing primetime guest-starring roles on shows like “Law & Order: SVU.” Her first series regular job was as Tanya in “Unforgettable,” which starred Poppy Montgomery as a woman who solves crimes using her miraculous recall of memory. Lower’s other credits include multiple episodes of short-lived series like “Man Seeking Woman” and “High Maintenance.” “Severance” is definitely the project that’s put her on the map. It stars Adam Scott (“Parks and Recreation”), Patricia Arquette, John Turturro and Christopher Walken, and the less of the premise I give away, the better. It’s a nail-biting thriller that has achieved critical acclaim and will likely be a presence at the next awards season, and has already been renewed for a second season. *** Is the NBC series “La Brea” ever returning with more new episodes? — R.W. “La Brea” is about a group of people who fall into a sinkhole in Los Angeles and are transported 12,000 years into the past. It stars Natalie Zea (“Justified”) and Eoin Macken (“The Night Shift”) and was a big hit for its short 10-episode run. However, the season finale aired back in November 2021, so it’s really tested the patience of fans eager for the story to continue. Sometimes a reproduction of an antique is worth almost as much as the original antique. Wallace Nutting (1861-1941) was a collector, expert, photographer, furniture maker, author and an important part of the Colonial Revival in the U.S. He went to Harvard, married and started taking photographs of the New England scenery. Soon he furnished his home with authentic antique American furniture, using the furnishings as props in pictures he staged with men and women dressed in Colonial clothes. The pictures were black and white, but he hired colorists to turn the pictures into color photos. He sold millions of copies that soon hung in the average home. The furniture was admired, and he soon made accurate copies to sell to the public. This, too, was a success. He also wrote books about New England, furniture and history. A 20th-century reproduction Nutting tavern table was sold by Garths Auctioneers and Appraisers a few years ago for $469. It is short, has an apron, turned legs and a box stretcher. This type of table was used as a serving table in the tap room of Colonial taverns. *** Are old milk bottles worth much? I have a half-pint glass milk bottle from Kinnett’s Dairies in Columbus, Georgia. It’s embossed “sealed 01-11-14,” which is Jan. 11, 1914, and means it’s 107 years old. I’ve had it about 20 years, and it’s in very good condition. What do you think it’s worth? The numbers on your milk bottle aren’t the date it was made. Kinnett’s Dairies was not founded until the 1920s. However, the numbers identify the manufacturer of the bottle, Thatcher Glass Manufacturing Co. of Elmira, New York. States required milk bottles to be labeled with the manufacturer’s name, trademark or an identifying number. Numbers were assigned by the states, but not all states used the same numbers. Thatcher Glass Manufacturing Co. was given the number “1” in Wisconsin, “11” in Maine, and “14” in Michigan. The

This is the time of year when the air is sweet with the aroma of blossoms and the familiar hum of insects can be heard all around. Not all “bugs” are the same this time of year. While you probably won’t want ants invading your backyard grill fest, the presence of bees nearby can be a good thing — even if those curious yellow-and-black critters get a little close for comfort from time to time. That’s because almost 90 percent of wild plants and 75 percent of the leading global crops depend on animal pollination, indicates the World Wildlife Federation. Bees are remarkable creatures in small packages. The following are some bee facts to buzz about, courtesy of the WWF, Save the Bees™, NASA, and the Texas A&M University Honey Bee Information Site. • There are roughly 20,000 species of bees around the world. Most of them are solitary bees. • Bees have five eyes. Two of the eyes are large compound eyes with hexagonal facets. The other three are small, simple eyes. • Honeybees have a move called the “waggle dance.” It is a clever way of communicating to tell them where to go to find the best sources of food. • Bees can carry up to 122 times their body weight in pollen and nectar. • Bumblebees leave footprint scents behind. They are able to distinguish between their own scents, the scent of a relative and the scent of a stranger as they look for food. They also can avoid flowers already visited. • Should a queen bee perish, the hive workers will select a new young larva and feed it a special food called “royal jelly.” The larva will develop into a fertile queen. • Bees flap their wings 190 to 200 times per second. They can fly up to 15 miles per hour. • Female bees can sting; males do not. Losing the singer will cause the bee to die. The honeybee only can sting once because its stinger is barbed. Bumblebees and hornets can sting multiple times because they have smooth stingers. • It can require nectar from two million flowers to make one pound of honey. • Many bees are not aggressive. Simply moving away from them can prevent a person from being stung. Generally, bumblebees and honey bees will only sting by accident or if a nest is being disrupted. • Wasps are different from bees in that they are mostly known to be predators. They eat other insects and often food that people eat, which is why wasps are more likely to be found around your cookout. Bees tend to be covered in hair, while wasps (which include yellow jackets) are smooth. Bees are remarkable creatures and should be celebrated as the weather warms up.

Is it time to go through your pantry and look for any expired food items that might have been purchased over the past two years? You might be surprised. I sure was. I’d been careful, with new items lined up behind old ones in my cabinets. The problem I just discovered, after picking up a load of curbside items, is the expiration dates of newer items aren’t necessarily better than items that have been in the cabinet for a while. They might be worse. Why, I inquired of our store manager, was a box of crackers due to expire sooner than the box I bought two months ago? With a sigh, he admitted the problem: The warehouse is having a terrible time getting in anything. And managers have set up their own grocery swap with other nearby stores in the chain, basically bidding on items another store might have. “I’ll give you six boxes of crackers for six half-gallons of whole milk!” Additionally, he said, he’s having a heck of a time getting trained people to work the night shift to stock the shelves correctly. Then, when the curbside pickup people race through the aisles to select items for each order, they grab from the front ... without looking at expiration dates. Which is a long way of saying: Check your groceries. Either when you pick them up curbside and bring them home or when you take something out of your cabinets, look at the expiration dates and store them accordingly. A helpful note in seeing those expiration dates at home: A black marker is very handy to write expiration dates on packages and cans that can be seen at a glance. Thinly Sliced Vegetables Star in Colorful Tart Spring has sprung! When I saw these beautiful multi-hued rainbow carrots as I was wandering the produce department, I immediately started pondering recipes to exploit those vibrant colors.

A vegetable peeler is key to this zesty spiral tart. Here's a zesty spiral tart using ultrathin ribbons of carrot and zucchini nestled in a savory cheesecake-like base. Honestly, the best part about this tart is that it's beautiful. But make no mistake, it's also delicious. It's a perfect appetizer, side dish or a colorful main dish served alongside a salad. Regarding rainbow carrots, they're lovely, but no need to purchase them unless they're on sale. You can use this spiral technique with zucchini,
1. Preheat oven to 400 F. To make the crust, crumble the crackers into a fine meal and blend with melted butter until all the crumbs are evenly moistened. Press the mixture firmly into a 9-inch tart pan, ideally with a removable bottom. Bake the tart shell for 10 minutes. Leave the oven on. 2. Meanwhile, make the filling. In a small bowl, whisk the cream, egg and salt. In another bowl, stir the cream cheese to soften. Add 4 tablespoons of the egg mixture and stir to completely combine. Set aside. Reserve the remainder of the egg mixture. 3. To prepare the vegetables, cut both ends off the carrot. Using a vegetable peeler, peel the skin off the carrots and discard. Using the peeler, continue to slice long, wide, lengthwise layers from the carrots until it's a lovely pile of strips. Repeat with remaining carrots. Peel the zucchini in the same manner as the carrots. It's important that the strips of veggies be similar in width. I sliced some of the

SPIRAL VEGETABLE TART Yield: one (9-inch) tart Servings: 8 appetizers 1½ cups rich buttery cracker crumbs 1/3 cup melted butter 1/2 cup heavy cream or half-andhalf 1 egg 1/4 teaspoon salt 1 (8-ounce) tub whipped cream cheese (garden vegetable flavor) 1 pound (about 4 large) carrots 1 large zucchini Drizzle of olive oil
zucchini in half to match the carrots. 4. When you have your veggies sliced, place them in a big bowl and toss with a drizzle of olive oil. Microwave the veggies for 2 minutes to soften. (This is the secret to making this technique work. You are now a keeper of the secret. Shhhh.) 5. To assemble the tart, using an offset spatula or back of a spoon, carefully spread the cream cheese mixture on the bottom of the tart shell. There will be some rogue crumbs, but don't worry. The spiral will cover a multitude of sins. 6. Roll a strip of zucchini into a tight spiral, followed by a strip of carrot. Continue adding slices, alternating colors, forming a tight spiral. When this becomes too big to hold in your hand, you can carefully place it in the center of the tart. Continue arranging alternating layers of vegetables around the spiral until you reach the outer edge of the crust. 7. Spoon the remaining egg mixture over the spiral, encouraging the mixture to sink in between the layers of veggies. 8. Place the tart pan on a baking sheet and bake for 25 minutes. Test for temperature of 140 F to ensure the egg has cooked. Cool and serve. It slices nicely with a serrated knife. Pets Wearing Pants? How About No!
DEAR PAW’S CORNER: I saw something on social media about a town in New York state that passed an ordinance requiring pets to “cover their genitals” by wearing pants. This is ridiculous! Is it for real? — Clark G. DEAR CLARK: It’s a wild idea, but no, the photo circulating on social media is fake. Pet owners, you can put away those doggy pants. (Unless your dog enjoys wearing them, of course.) Officials with the city of Auburn, New York, were unpleasantly surprised to find their city’s letterhead going viral on social media just a couple of weeks ago. A fake letter said that residents’ pets would be required to wear pants outside so that their genitals would not be in view. “It is an uncomfortable and difficult situation for a parent, grandparent or guardian to have to explain to their ward when they are questioned about canine and feline genitals,” the letter said. It also claimed that many towns in New England have made pet pants mandatory — also not true. It’s probably no accident that the fake letter started circulating just before April Fool’s Day. And while it seems like a funny prank, the city of Auburn isn’t laughing. “The intentional misrepresentation of the law and the forgery of the signature of an elected official are illegal acts and should be taken seriously,” City Clerk Chuck Mason told The Citizen.
