Crepes are so versatile — they are tasty and nutritious for breakfast or a snack, or roll them up and heat briefly with leftovers or other items in your refrigerator and pantry such as goat cheese and honey, or salsa and grated Cheddar cheese. You might want to double the batch of 12 crepes and refrigerate or freeze with wax paper between them for additional snacking and meals. Or, think dessert, and coax a tantalizing stack into a divine “crepe cake to brighten spirits. Stack a dozen or more with whipped cream and sliced strawberries in between the layers. FRENCH CREPES 1Ÿ 1/4 1½ 3 2
cups all-purpose flour teaspoon salt cups milk eggs tablespoons butter, melted plus more for cooking To Make Batter: In a medium bowl, combine flour, salt, milk, eggs and melted butter. Whisk until smooth. Or, place in a blender and blend until smooth, about 30 seconds. Refrigerate for at least 30 minutes. To Cook Crepes: Remove batter from refrigerator. Stir. Lightly butter flat large skillet or crepe pan. Heat over medium-high heat. Pour a scant 1/4 cup batter in center of skillet and swirl batter around to form an 8-inch round crepe. Cook until underside is golden brown. (Note: Lift up corner to check color.) Using a narrow spatula, flip crepe. Cook until other side is lightly brown, about 30 seconds. To Serve: Set on a plate. Roll up with fruit or applesauce inside. Or, fold in half or quarters. Add favorite toppings or simply squeeze some fresh lemon juice and dust with confectioners’ sugar. Makes 12 eight-inch crepes. *** Donna Erickson’s award-winning series “Donna’s Day is airing on public television nationwide. POTVIN - QUINN FUNERAL HOME Family Owned and Operated Since 1857
1. Which Rolling Stones song did Keith Richards partially write in his sleep? 2. Who wrote and sang the theme song to the television show “Welcome Back, Kotter? 3. Who was “KC in KC & the Sunshine Band? 4. Which band released “Be-Bop-ALula? 5. Name the song that contains this lyric: “People always told me be careful of what you do, And don’t go around breaking young girls’ hearts. Answers 1. “(I Can’t Get No) Satisfaction in 1965. Richards recorded a few minutes of the riff on a cassette tape player while he was asleep. Next morning the tape contained the music, followed by 40 minutes of snoring. 2. John Sebastian, formerly of the Lovin’ Spoonful, wrote “Welcome Back. The show’s name had to be changed from just “Kotter because Sebastian couldn’t find a rhyme for the name. 3. The “KC was taken from the last name of Harry Wayne Casey, who formed the group in Florida in 1973. 4. Gene Vincent and His Blue Caps, in 1956. 5. “Billie Jean, by Michael Jackson, in 1983. Although producer Quincy Jones felt the song was “weak and wanted to leave it off the “Thriller album, “Billie Jean became one of the best-selling songs of all time. • “I use curbside pickup for my groceries these days. I keep two large laundry baskets in the hatchback of my vehicle. Any bags go in the baskets, so it’s easy to transport them into the house and keep contact to a minimum. When I’m done unloading and wiping down, I can spray out the laundry baskets and let them dry in the sun for next time. Can’t be too careful.” — T.E. in Virginia • “Stay ahead of the drain: Pour a tea kettle of boiling water down the drain once a month, or if you notice the drain slowing. The hot water can break up material collecting inside the drain. Half a cup of baking soda added to the water will absorb any odors that are building.” — Colepepper Plumbing in California • “I color code my plants by their light needs. The closer the pot color is to red, the more light it needs. For instance, my lavender is in a red pot — full sun. I have a nice potted citronella that likes part sun, so it’s in a lime-colored pot (yellow-green) and my indoor pots are plum. I have a lovely rainbow of plants!” — Y.S. in Arizona • A hanging shoe rack is a handy place to keep office supplies and school supplies for the whole family. Pencils, markers, assignment cards, and even papers. You can give each person a row, or label the pockets. • There’s a lot of decluttering going on across the country right now. Here’s a pro tip: For seasonal items, if you didn’t wear it last season, consider selling or donating. Same applies if it’s a specialty item (skiwear, hiking boots, formalwear) that hasn’t been used for more than two years. Many people keep items that are on the expensive side, even though season after season goes by without the item being used. If you rationalize keeping the scuba suit, plan a scuba trip! What noisy brakes may be telling you The only noises many drivers ever want to hear coming from their vehicles are the sounds of their favorite songs blasting from their car stereos. But cars sometimes make noises that aren’t nearly as inviting as music. Noises that seem to pop up when applying the brakes can be especially scary for motorists. No one wants to drive a vehicle with faltering or suspect brakes, so learning to distinguish between the two most common brake noises can be a wise move for drivers. Grinding brakes The automotive retailer Pep Boys® notes that grinding noises indicate a serious problem with the braking system. According to CarsDirect. com, there are two major causes behind the grinding noise made by brakes. If the grinding sound is audible when pressing on the brake pedal, this likely because the rotor disc is coming into contact with part of the caliper. This typically occurs because the brake pads or rotors are extremely worn down, causing the steel backing of the worn out pad to grind against the rotor. In such instances, Pep Boys® recommends replacing the brake pads immediately. If the grinding noise is audible while the vehicle is in motion, debris might be stuck inside the brakes. Drivers might be able to dislodge this debris by repeatedly moving their cars forward
and backward in a safe place, such as a driveway. If that does not work, have the brakes serviced by a qualified mechanic. Squealing Many drivers are familiar with the high-pitched squealing sound that comes from their vehicles or those of fellow motorists. That squeal, while certainly not music to the ears, might be a good thing. That’s because Pep Boys® notes that some brake pads are equipped with small steel clips that serve as wear indicators. When brake pads have worn down, these devices produce a squealing sound to let drivers know it’s time to get new brake pads. But squealing can be indicative of other things as well. Squealing noises are sometimes heard immediately after brake pads or rotors have been replaced. In such instances, the noise typically subsides within a day or two once the pads have been broken in. Glazed pads also can create a squealing sound. When calipers stick, the brakes stay partially applied, producing excessive friction or heat. The heat causes the brake pads to glaze. No one wants to hear noises coming from their brakes. However, such noises are often a car’s way of telling drivers that brakes need to be serviced.

enjoy immense popularity, particularly during colder months, as a staple of chili. Although not as popular in the U.S. as other varieties, black beans are a main ingredient in many international dishes. Try using canned black beans for dinner to create this easy recipe for Tex-Mex Chicken, Black Bean and Corn Soup. It’s a bowl full of comfort during this stressful time. Stay safe!
TEX-MEX CHICKEN, BLACK BEAN AND CORN SOUP You can use leftover cooked chicken or purchase a rotisserie chicken (skin and bones removed, and the white and/or dark meat cut into 1-inch cubes) in this recipe. Just skip the instructions for seasoning and searing the raw chicken for 1 minute. Instead, add 1 tablespoon of oil to the pot. Add the cooked chicken and spices to the oil over medium heat, stirring for 1 minute to allow the spices to bloom.

I’ve always been a firm believer in the power of a well-stocked pantry, and one of the main staples in my pantry has always been a variety of canned beans. Although researchers haven’t come up with a foolproof way to avoid the more “musical” and indelicate side effect of beans, they have found yet another reason why you should eat more of them. In addition to their high protein and fiber content, a new study finds that beans, particularly black beans, are a rich but overlooked source of antioxidants and may provide health benefits similar to some common fruits, including grapes, apples and cranberries. In a study that appeared in The Journal of Agricultural and Food Chemistry, researchers tested the antioxidant activity of flavonoids — plant pigments — found in the skin of 12 common varieties of dry beans. Antioxidants destroy free radicals, which are highly active chemicals whose excess has been linked to heart disease, cancer and aging. Black beans came out on top, having more antioxidant activity, gram for gram, than other beans, followed by red, brown, yellow and white beans, in that order. In general, darker-colored seed coats were associated with higher levels of flavonoids, and therefore higher antioxidant activity, says Dr. Clifford W. Beninger, who has done research for the USDA’s Sugarbeet and Bean Research Unit. “Black beans are really loaded with antioxidant compounds. We didn’t know they were that potent until now,” says Beninger.
Then, proceed with the rest of the recipe as directed. 3– 4 boneless skinless chicken breasts or thighs, cubed into 1-inch pieces 2 tablespoons vegetable oil 1 tablespoon poultry seasoning 1 tablespoon chili powder 1/2 tablespoon cumin 1 teaspoon salt 1 teaspoon ground black pepper 1 can (14-1/2 ounces) chicken broth 1¾ cups water 1 (15-ounce) can black beans, rinsed and drained 1 cup frozen corn 2 cups salsa, mild, medium or hot 1/2 tablespoon fresh lime juice 1/2 cup shredded Monterey Jack cheese or Pepper Jack cheese, optional Garnish — tortilla chips, avocado slices or sour cream, optional 1. Coat the chicken with 1 tablespoon of the oil. Season the chicken with the poultry seasoning, chili powder, cumin, salt and pepper. 2. Place the remaining tablespoon of the oil in a large pot. Turn the heat to medium high. Sear the chicken for 1 minute, and then turn the pieces over to sear for 1 minute on the other side. 3. Stir in the broth and water. Bring the mixture to a boil. Reduce heat; cover and simmer for 5 minutes. Add the beans, corn and salsa; return heat to high and bring mixture to a boil. Reduce heat and simmer, uncovered, for 3-5 minutes or until the chicken is no longer pink on the inside and the corn is tender. 4. Stir in the fresh lime juice. Garnish with the cheese, tortilla chips, avocado slices and sour cream, if desired. Serves 6. *** Angela Shelf Medearis is an award-winning children’s author, culinary historian and the author of seven cookbooks. Black Beans Packed With Antioxidants
Beninger acknowledges that some of the healthy antioxidants in beans will be lost in water upon cooking, but says antioxidant levels will still remain high. Although dry beans were used in this study, frozen or canned beans may have similar antioxidant activity, he adds. The study adds antioxidants to a growing list of healthy chemicals found in beans, which also are rich in protein, carbohydrates, folate, calcium and fiber. Researchers hope to use information gleaned from this study to help develop new varieties of beans that pack even more disease-fighting power. Meanwhile, U.S. consumers gobble up an estimated 8 pounds of beans per person each year, with pinto beans and navy beans being the most popular. Red beans also

Did you know? Outdoor living is wildly popular, as more and more homeowners are bringing elements once reserved for home interiors into their backyards. When designing outdoor living spaces, homeowners may learn about biophilic design, an architectural concept that aims to incorporate natural elements into outdoor living spaces. Proponents of biophilic design say it satisfies an innate human need to affiliate with nature, thereby helping to reduce stress that people may experience after being
stuck indoors for much of their days. Biophilic design is often part of a home interior design, but many homeowners also embrace it when designing their outdoor living spaces. For example, surrounding outdoor living areas with noninvasive plants, flowers and trees and using natural materials like wood and stone when building such spaces are great ways to embrace biophilic design and create a tension-free ambiance in outdoor living spaces.

Store and use leftovers safely F ew meals are created and then eaten in their entirety. That’s especially true of holiday meals or other special events. Leftovers are to be expected, and in many cases, leftovers are eagerly anticipated. Sometimes leftovers can be even more delicious than when the meal was originally served. Storing leftovers may not be so simple, as poorly stored foods may end up causing illness when eaten later. Learn the basics of leftovers and how to prolong the shelf life of foods left behind. Foodborne illness, also known as food poisoning, is caused by harmful bacteria growing in food. Few people can detect changes in the taste or texture of contaminated food, so it can be difficult to know if an item is dangerous to eat, says The Mayo Clinic. Bacteria grow well in what is termed “the danger zone.” This is between 40 F and 140 F. Many instances of foodborne illness can be prevented through proper food handling, which begins when food is purchased and continues during the cooking process, culminating in the safe storage of leftovers. The U.S. Department of Agriculture’s Food Safety and Inspection Service recommends refrigerating leftovers within two hours of cooking food or holding it hot. All food that has been left out for more than two hours should be discarded
if it is perishable.
The Mayo Clinic advises that most leftovers can be kept between three to four days in the refrigerator. If they will not be eaten in that time frame, it’s best to freeze the food for a later time. When frozen, some foods can last between three and four months.
Safely store leftovers in the refrigerator for up to four days.
To cool food rapidly and deter the growth of bacteria, separate food into small, shallow containers. Cut large items of food into smaller portions to cool. Do not allow foods to cool on the counter before storing them in the refrigerator. Thawing out leftovers presents another possible safety issue. Use a cold water bath, the refrigerator or the microwave to defrost frozen leftovers. Refrigerated foods can simply be reheated. When reheating leftovers, make sure they reach 165 F. Gravies, soups and sauces should be brought to a rolling boil. The USDA also recommends covering leftovers to reheat them. This retains moisture and ensures that food will heat all the way through. When cooking foods in the microwave, check for cold spots in the food, and reheat accordingly. Safe handling of leftovers can help prevent illness and ensure that leftover food does not go to waste.

by Jennifer Coates Peter Caswell, a native Rhode Islander and the owner of Rhode Island Shellfish, Co. is passionate about a lot of things ~ first and foremost, he loves his wife Jeanine and his boys Brayden and Jase. His second love is spending time in the kitchen where he once learned to cook alongside his mother. He is even enthusiastic about his longtime job as an offshore tugboat captain off Staten Island. No matter where Peter Caswell sets his feet, however, his heart is ~ and always will be ~ with the sea. From the time he was a young boy, Peter has loved digging for quahogs off the Rhode Island shore and in the plentiful waters of Narragansett Bay. Today, that passion is still fulfilled as he is drawn to the coastline to dig with his own sons and father, David. Harnessing his lifelong love of digging for quahogs led Peter to a new venture in 2016 ~ one that is seeing great returns now, even in the midst of a pandemic ~ the founding of RI Shellfish Co. What started in 2016 as a way to bring Peter’s culinary talents to life and to satisfy his love of cooking has evolved into this exciting and enduring business. Peter built a commercial kitchen which he affectionately named Annie’s Kitchen (after his beloved mother) and received a USDA “grant of inspection so he can sell his homemade shellfish dishes wholesale. It is here where he creates gourmet masterpieces with shellfish of all kinds, with a special emphasis on his favorite, locally- sourced quahogs. Peter has long felt that Rhode Island’s lowly quahog has taken a proverbial “back seat to the increasingly popular oyster. It has become one of Caswell’s personal missions to revitalize the quahog and to showcase its many varied preparations, including
These irresistible “Stuffies and golden-brown Fish & Chips are available every Friday and Saturday night at RI Shellfish, Co. in West Warwick. Owner Peter Caswell lives by the motto: “It’s all about the Quahog and he proves it every day with his fresh shellfish dishes!
his famous “Stuffies. As a proud Rhode Islander, Peter wholly supports local quahog harvesters. He uses the freshest ingredients and “straight-offthe docks clams for all his dishes. Using longheld secret family recipes, including his late mother’s well-guarded Stuffies recipe, he makes some of the best, most authentic shellfish dishes around. One might say they have to be tasted to be believed! Peter’s Stuffies join a diverse and mouth-watering array of shellfish options. These include Fish & Chips, Clam Chowders, Clams Casino, Lobster Mac & Cheese, Oysters Rockefeller and Clam cakes as well as dishes such as his fresh Crab-stuffed Cod.

Did you know? When planning spring landscapes, homeowners should always group plants with similar water needs together. According to the U.S. Department of Energy, grouping plants with similar water needs together helps to conserve water, which can be an especially useful strategy if or when drought restrictions go into effect in summer. Homeowners also can embrace additional strategies to landscape with water conservation in mind. For example, aerating soil helps to improve water flow to plants’ roots and reduces water runoff, helping to ensure that plants get all of the water they need while reducing the likelihood that homeowners will have to use excessive amounts of water to keep plants healthy. In addition, using low-water-using types of grass can help homeowners who live in areas prone to drought conserve water while still maintaining lush, green lawns.

Problems that can lead to lawn damage
A
beautiful lawn is a goal for many homeowners. Some homeowners may find that lovely lawns may last momentarily, only to disappear when damage — be it pest-, weather- or child-related — sets in. While well-established turf can be resilient, even the most wellmaintained lawns can be vulnerable. reventing lawn damage first involves getting to the root of the problem. Lack of sunlight: All plants need the proper ratio of sunlight to grow. Too much sunlight and plant blades can scorch. Too little sunlight and grass may turn brown and die. Although there are shade-tolerant varieties of grass, homeowners also can explore alternative landscapes. Work in a garden bed or create a design that utilizes gravel or mulch. Avoid aggressively pruning back trees to give the lawn more sunlight in that area, as this may just damage the trees. Chemical spills: Gasoline and fertilizer spills and pesticide applications in high concentrations can cause the lawn to yellow or brown in spots. are ully refill lawn gas tanks and fertilizer spreaders on the sidewalk or driveway to avoid overflow onto the lawn. If spills occur, flood the area promptly with water to dilute. oot tra c awns can take a pounding rom oot tra c, leading to compaction and spots of dead lawn. Try to redirect the tra c elsewhere to give worn down areas a break. Aeration
can relieve soil compaction. If a certain area has become the de facto pathway, install a paver, gravel or concrete walkway in that spot. Debris: Leaving a tool, kids’ toys, piece of wood, or any debris on the lawn can quickly suffocate the grass beneath and cause the lawn to die quickly. Make sure that no items are left on the lawn for an extended period of time. Mowing patterns: Running the mower in the same pattern over and over can cause ruts in the grass that lead to damage, so avoid mowing in the same direction on consecutive cuts. Avoid mowing on very hot days or when the lawn is soggy. Both can cause tracks to form in the lawn. Mowers: Dull lawn mower blades can damage lawns, as can mowing too fast. Grass blades can be torn, snapped and more, resulting in brown spots. Wildlife: Animals and insects can destroy turf roots. Animals or insects may feed on the grass from underneath its surface, compromising the lawn’s ability to procure nutrients and water. Animals like moles or raccoons may feed on grubs in the lawn, and treating for grubs can alleviate torn-up turf. Lawns can be hearty, but they’re also highly susceptible to damage. Even seemingly harmless things can compromise the integrity of a lawn. Understanding the causes of lawn damage can help homeowners protect their lawns.

Post-winter garden prep
RIVERS LAWNCARE
L
awns and gardens can bear the brunt of winter weather and are often in need of tender loving care by the time spring arrives. Preparing a garden for spring and summer involves assessing any damage that harsh weather might have caused. As temperatures climb, gardeners can heed the following post-winter garden preparation tips in an effort to ensure some successful gardening in the months ahead. Assess the damage. Even if winter was mild, gardens might still have suffered
some damage. Inspect garden beds and any fencing or barriers designed to keep wildlife from getting into the garden. Before planting anew, fix any damage that Mother Nature or local wildlife might have caused over the past several months. Clear debris. Garden beds and surrounding landscapes that survived winter without being damaged might still be littered with debris. Remove fallen leaves, branches and even litter that blew about on windy winter days before planting season. Make sure
to discard any debris effectively so it does not find its way back into the garden. Turn the greenhouse into a clean house. Spring cleaning is not just for the interior of a home. Cleaning a greenhouse in advance of spring can help gardeners evict any overwintering pests that can threaten plant life once spring gardening season arrives. A thorough cleaning, which should include cleaning the inside of greenhouse glass and washing flower pots and plant trays, also can prevent plant diseases from
surviving into spring. Check for pests. Speak with a local gardening professional to determine if there are any local pests to look out for and how to recognize and remove these pets from gardens. Pests may hibernate in the soil over the winter, and such unwelcome visitors can make it difficult for gardens to thrive come spring and summer.

Assess plant location. If plants, flowers or gardens have struggled in recent years or never grew especially vibrant, then gardeners may want to assess the location of their plant life before spring gardening season begins. Some plants may not be getting enough sunlight in certain locations on a property, while others might be overexposed to the sun during spring and summer. Moving plants that are not thriving prior to the start of spring gardening season may be just what gardens need to flourish in the coming weeks. Spring gardening season is right around the corner, so now is an ideal time to prepare gardens for the warmer seasons ahead.

Plan ahead for eco-friendly
landscapes
E
co-friendly landscapes can protect the environment and help homeowners save money. While it’s possible to alter landscapes during summer, it’s easier and more cost-effective to plan ahead for eco-friendly landscapes.
Planning ahead can ensure homeowners that their lawns and gardens conserve water throughout the spring and summer. Such planning can save homeowners substantial amounts of money when summer temperatures rise and put a strain on lawns, plants and gardens that need more water than usual. Homeowners who want their landscapes to thrive while beneďŹ tting the environment can take the following steps as lawn and
garden season approaches.
• Research native plants. Native plants typically require considerably less water than exotic plants that do not naturally grow in particular areas. In addition, the U.S. Environmental Protection Agency notes that native plants have adapted to local soil conditions, making them less likely to need fertilizer and more resistant to pests and diseases than nonnative plants. That resistance saves homeowners from having to use potentially harmful pesticides. • Design smart. When designing your landscape layout, group plants according to how much or how little water they need. This prevents overwatering plants that do

not need much water, which can harm the plant and lead to unnecessary water waste, and ensures plants that do need substantial amounts of water have those needs met.
• Consider the elements. When planting, consider how much natural sunlight each area of the yard gets before planting. Plants planted in areas that are especially exposed to the sun may require extra watering, as the hot summer sun can cause water to evaporate, depriving plants of the water they need to thrive. In addition to the sun, wind can divert water meant for plants and grass, so plant appropriately in areas that are exposed to sun and wind.
• Work with a professional. Professional landscapers and landscape architects can be invaluable resources for homeowners who want their properties to be as eco-friendly as possible. The desire for eco-friendly landscapes has risen in recent years, and many professional landscapers and architects are familiar with various ways to make lawns and gardens more environmentally friendly. Eco-friendly landscaping is a wise investment for homeowners who want to help the planet and save money at the same time. Planning to make such an investment in advance of spring and summer is a great way to produce a beautiful and eco-friendly landscape.
