Thanksgiving Pumpkin Torte You take care of the rest of the meal, and I’ll take care of dessert. Now if we could just find someone else to take care of the dishes, we’d have something else to be thankful for! 18 (2 1/2-inch) graham cracker squares 1 (15-ounce) can solid packed pumpkin 1 (4-serving) package sugarfree instant butterscotch pudding mix 2/3 cup nonfat dry milk powder 1½ teaspoons pumpkin pie spice 3/4 cup water 1 cup reduced-calorie whipped topping 2 tablespoons chopped pecans 1. Evenly arrange 9 graham crackers in a 9-by-9-inch cake pan. In a large bowl, combine pumpkin, dry pudding mix, dry milk powder, pumpkin pie spice and water. Mix well using a wire whisk. Blend in 1/4 cup whipped topping. Spread half of pumpkin mixture evenly over graham crackers. 2. Top with remaining 9 graham crackers. Spread remaining pumpkin mixture over top. Evenly spread remaining 3/4 cup whipped topping over pumpkin mixture. Sprinkle pecans evenly over top. Cover and refrigerate for at least 2 hours. Is Anna Faris coming back to the show “Mom�? I hope she’s not off it permanently. I love the dynamic between her and Allison Janney. — U.C. Faris made the sudden announcement in September that she was leaving the hit sitcom “Mom� just before its eighth season began. The fate of her character, Christy, was explained on the season premiere this month. I won’t spoil it for anyone who hasn’t seen it and plans to, but it’s a positive direction for the character. “Mom� airs on Thursdays at 9 p.m. ET on CBS. Faris’ exit was unexpected, as her contract was supposed to commit her through the eighth season. Jaime Pressly, who plays Kendall on the show, stated that Janney’s character will still speak to Christy on the phone and give updates to viewers about her on-screen daughter. Off-screen, Faris is set to play twins in the comedy film “Summer Madness.� According to Deadline.com, the twins consist of “the flat-broke and foulmouthed Georgie Cole and her successful, elegant twin sister. Disowned by her wealthy and conniving mother, Georgie must rally her dysfunctional family to appear picture perfect in order to win a large cash prize at her mother’s annual gala.� It’s written and directed by Fred Wolf of “House Bunny,� which also starred Faris. *** What’s next for the actors of “The Good Place?� I’m sad the show ended so soon, but I guess that’s better than it dragging on and becoming stale. — P.B. “The Good Place� was a very clever NBC comedy that wrapped up its story about the afterlife after four seasons. Its main star, Kristen Bell (who played Eleanor), has a couple of projects lined up. The one I’m most excited about is a live-action musical “Molly and the Moon,� co-starring Jonathan Groff (“Frozen 2� and “Mindhunter�). William Jackson Harper (who played Chidi) will star in the second season of HBO Max’s “Love Life,� in which he plays a single New Yorker wading through the dating pool after a

Holiday baking gets even sweeter with brownies

hat would the holidays be without delicious foods to share with loved ones? In fact, crafting elaborate meals and baking goodies is par for the course once the weather begins to cool and decorations turn up on businesses and homes.

Meanwhile, put the egg whites in the bowl of a stand mixer ďŹ tted with the whip attachment. Scrape the seeds from the vanilla bean into the bowl. When the sugar syrup reaches 240 F, start to beat the egg whites on medium speed. When the whites form very soft peaks, add the remaining 1 cup sugar and continue beating.

There are so many tantalizing desserts to tickle the tongue, but this recipe for “Rocky Recchiuti Brownies� from “Chocolate Obsession� (Stewart, Tabori & Chang) by Michael Recchiuti and Fran Gage yields rich and chewy brownies that no holiday celebrant will be able to resist.

it evenly with a small offset spatula. Scatter the marshmallow pieces evenly over the surface and push them halfway into the batter. The tops should remain uncovered. Bake on the middle shelf of the oven until the marshmallows are browned and a skewer inserted into the center of the brownie sheet comes out with some batter clinging to it, about 45 minutes. Let cool completely in the pan on a wire rack, then cover with plastic wrap and refrigerate until cold.

When the sugar syrup reaches 250 F, remove it from the heat and stir in the softened gelatin. The syrup will foam up and triple in volume. Switch the mixer to high speed and slowly pour the syrup into the beaten egg

whites, aiming for the side of the bowl. The whites will almost double in volume. Reduce the speed to medium-high and beat until the whites (not the outside of the bowl) are lukewarm to the touch, about 114 F, about 15 minutes. Scrape the marshmallow mixture into the prepared pan and, using a small offset spatula, spread it evenly to the sides. Let cool completely at room temperature. To cut the marshmallows, sift about 1â „2 cup of the powdered sugar onto a work surface in a rectangle the size of a sheet pan. Sift another 2 cups powdered sugar into a large bowl. Run a thin-bladed knife around the edge of the pan to loosen the marshmallow. Invert the pan onto the sugared surface to unmold, then lift off the pan and peel off the parchment paper. Sift about 1â „2 cup powdered sugar evenly over the top. Using a ruler to guide you and a lightly oiled sharp knife, cut the marshmallow sheet into 11â „2-inch squares. It is easier if you use a pressing motion, rather than pull the knife. After cutting, toss the marshmallows, a few at a time, in the bowl of powdered sugar, coating them lightly.

Run a table knife around the edge of the pan to loosen the sides of the brownie, and then slide the brownie, still on the paper, onto a work surface. Using a ruler to guide you and a sharp knife, cut into sixteen 2-inch squares. Store in an airtight container in the refrigerator for up to 3 weeks.

Preheat the oven to 325 F. Line the bottom of an 8-inch square baking pan with parchment paper and liberally coat the paper and the pan sides with avorless vegetable oil. Put 3 ounces of the chocolate and the butter in a medium stainless-steel bowl and set over a pot of simmering water. Heat, stirring occasionally, until the chocolate and butter melt and are fully combined and the mixture is smooth. Lift the bowl from the pot. Set aside. Sift the our and salt together into a bowl. In another bowl, combine the eggs and vanilla extract and whisk together by hand until blended. Whisk in the sugar. Whisk the egg mixture into the chocolate. Add the our and the remaining 21⠄2 ounces chocolate to the batter and, using a rubber spatula, mix well. Then mix in the walnuts. Pour the batter into the prepared pan. Spread

Start new caroling traditions

C

aroling is a symbol of community that once was a wildly popular holiday tradition but has largely fallen by the wayside. According to the Pew Research Center, about 16 percent of Americans reported caroling in 2017. However, this once-beloved tradition can be brought back with vigor.

History of caroling

Caroling evolved from the practice of wassailing. The word “wassail� is derived from the Old Norse phrase “ves heill,� which translates to “be well and in good health.� As early as the 13th century, people in England would travel between houses to go wassailing and wish their neighbors well during the winter months. In some places, the word “wassail� referred to a hot and thick spiced beverage given to travelers to help them stay warm. It is the precursor to modern-day mulled wines, cider and eggnog. Caroling largely remained separate from Christmas until Saint Francis of Assisi incorporated similar well wishes

and songs into his Christmas services. Music was embraced as part of liturgical services during the holiday season.

Caroling today

Many caroling sessions now take place inside of churches or schools as part of choral performances. However, with social distancing limitations in place, it may be the ideal time to once again implement door-to-door caroling. This can help bring cheer to people who may be missing loved ones who can’t travel, and may even buoy the spirits of those who have been spending more time alone in their homes. These tips can make caroling more successful.

• Find someone with some musical knowledge to guide the group. While everyone needn’t be the next star singer, it helps if one person can help keep the group in time and in tune. • Choose familiar songs. Select a

body of music that is familiar to all. Songs such as “Silent Night,â€? “Joy to the World,â€? “Deck the Halls,â€? and “The 12 Days of Christmasâ€? are easily recognizable. The more familiar the song, the easier it is for carolers to follow the tune. Have roughly 10 songs and rotate as needed when visiting homes. • Map out your course. Caroling can take place over several days as carolers visit various parts of their communities. A caroling session may last about an hour or two. • Dress for weather. Layer clothing and agree on some festive trimmings that unite the caroling group. Wear comfortable shoes for walking.

• Advertise your intentions. Let others know that carolers will be stopping by on particular dates so they can come out on their front porches or doorsteps. Follow social distancing guidelines if necessary and urge spectators to avoid congregating too closely in one place. Caroling is a great way to enjoy the holiday season responsibly.

T

he end of the year marks a period of heightened festivity. Come the holiday season, homes and businesses are decorated and everyone seems to have an extra spring in their step. The sight of snowakes, candy canes, evergreen wreaths, and Christmas trees can elicit nostalgia for happy holidays of the past, as well as excitement for what is yet to come. When it comes to decorating for the holidays, there are certain items that set the scene. • Christmas trees: Germany is credited with starting the modern Christmas tree tradition. It dates back to the 16th century when devout Christians brought trees into their homes and decorated them. German settlers brought Christmas tree traditions to America upon their arrival in Pennsylvania in the 19th century. • Mistletoe: Mistletoe is known as the “kissing plantâ€? and it is customary for couples to kiss while standing beneath the plant, typically hung in doorways and arches. Mistletoe was once hung to drive off evil spirts and ensure fertility. Kissing under the mistletoe was ďŹ rst found associated with the Greek festival of Saturnalia and later with primitive marriage rites. • Lights: Lights are commonly seen during the holiday season. The custom of having holiday lights dates back to when Christmas trees were decorated with candles, which symbolized Christ being the light of the world. These traditions evolved from pagan rituals that would celebrate the return of light of the sun as the days grow longer after the winter solstice. • Yule log: Many families burn a yule log in the ďŹ replace and watch it burn while listening to Christmas carols. t begins to look a lot like Christmas when twinkling lights brighten up homes inside and out. Few things liven up the season more than holiday decorations, particularly clear and colored lights. Prior to taking out the lights, ladder and thermos of coffee to get you through the job, it’s important to note that there are right and wrong ways to hang holiday lights. • Sketch out your plan. Start by taking a few photos of your home from various vantage points. Print out the photos on regular paper so that you can draw your lighting arrangement and decoration placement right on the photos to see how things will look. • Measure the area. Use a measuring tape to roughly measure the width and height of eaves or other areas of the home where you plan to hang light strands. Calculate how much overall footage you will need so you can purchase all of the lights in one shopping trip. • Test the lights first. Plug in the lights to be sure all strands are operational. • Begin where the lights will be plugged in. Start where the lights will be plugged in and then work your way around the house.

• Add to shrubs and trees. Lights also can adorn shrubs and trees. Lowes Home Improvement says a good rule of thumb is 100 lights for every 11⁄2-feet of tree or shrub to cover. A 6-foot evergreen needs at least 400 lights for a basic level of lighting. • Exercise extreme caution. Accidents can happen when stringing lights. While many professionals use harnesses, homeowners are not always so cautious. Utilize a spotter to hold the ladder and make sure things are safe. Never set foot on a wet or icy roof. Do not attempt to string lights in inclement weather. • Know the wattage. Each outlet can generally hold about 17 amps or 1,870 watts if the lights are not sharing a circuit with another outlet, says Parrish. Plan accordingly to ensure you have enough power to handle your lights. • Use plastic clips. Plastic light clips hang strands along eaves and gables. They’re specially designed for hanging lights over the gutters. Some slip under the edges of roof shingles. Lights can be hung without staples or nails, which can damage exterior surfaces. Plastic zip-ties or deck clips also can attach lights along a handrail. • Use only outdoor extension cords. Be sure the extension cords you use are designed specifically for outdoor use. • Use a timer. Timers can make sure the lights turn on and off even if homeowners forget. Once lights have been safely strung, sit back and enjoy the splendor of a welldecorated house.

The meaning of the menorah

M

enorahs are a prominent symbol of Chanukah. Menorahs are seven-branched candelabras that have been used in Jewish worship since ancient times. The seven branches refer to the seven days of creation. The menorah is the traditional symbol of Judaism and the emblem of the state of Israel. For Chanukah, a nine-branched candelabra called a hanukkiah is used, but the word “menorah” has become interchangeable. The Chanukah menorah consists of nine

candles. The center and ninth candle are referred to as the Shamash. It is used to light all the other candles. The Shamash is raised above the other candles to make it kosher. The lighting of the menorah over the eight days of Chanukah symbolizes the miracle that occurred during the rededication of the Second Temple in Jerusalem at the time of the Maccabean revolt. The sacred oil, of which there was only enough for one day’s lighting, miraculously lasted for eight days.

Another way of keeping warm is building up fat as an insulator and energy source. The Audubon Society says more than 10 percent of some birds’ winter body weight may be fat. That can be challenging to maintain when common sources of food, such as insects and berries, disappear as winter wears on. This is when some human intervention can prove handy, advise ornithologists. A few simple efforts may benefit birds and other wildlife that may not hibernate winter away or escape to the tropics. • Have a supply of food, bird feeders, houses, and any other bird-related gear at the ready before the storms really rev up.

• Invest in nutritious food, such as black oil sunflower seeds or blends that are high in black oil sunflower seeds. You also can make available more foods that are high in fat, such as suet, peanut butter or even whole peanuts. Mother Nature Network also suggests adding meal worms if they can be found. • Choose feeders that will keep seed dry; otherwise, it will be prone to bacterial and fungal growth. • Don’t discard fallen leaves or any downed twigs or pruned boughs from trees. This will give birds material for creating shelter or hiding away when the weather gets especially brutal. When the Christmas tree is finished for the season, place it in the yard as a windbreak for birds. • Put shallow water sources around so birds can drink. Replace them frequently if water freezes. Wild birds can benefit from some help when the temperatures start to drop in winter.

DEAR PAW’S CORNER: This summer, when we thought the pandemic was easing up, my husband and I made plans to visit his family in Georgia for Thanksgiving. Now, we’ve canceled those plans due to the new wave of infections. I was quite sad about it for a while, but I realized that this is an opportunity to spend time with our pets, something we rarely get to do during a busy holiday. For the first time in a decade, I will not be boarding our two Golden Retrievers, Arlo and Woody, so we can fly south to visit my mother-inlaw, who’s allergic to pets. Our two cats, Jinx and Star, won’t have to stay at my friend’s house across town. Our house will not be filled with visitors and guests in the days after Thanksgiving. The annual post-Thanksgiving cookout that my husband hosts the weekend afterward, when I’m out shopping for Christmas gifts, is canceled, as well. Instead, we’ll be snuggled up on the sofa, with our dear pets all around. I will do most of my shopping online. We’ll visit with friends and relatives on FaceTime and Zoom. I realize that for the first time, instead of dreading the holiday season with all of the stress of catering to family and friends, we will be focusing on simple joys. I am thankful for that. These are difficult times, but in the midst of it all, we can stop and just hug our pets and feel love and joy. Modifications can make driving safer for seniors Driving provides an almost unrivaled level of independence. The ability to travel beyond a neighborhood or even one’s hometown without a chaperone is probably what excites new drivers so much and makes them eager to get their licenses and cars. Senior drivers also may define their independence by their ability to drive. Few things diminish senior dignity and independence faster than losing the ability to drive. Despite popular misconceptions, seniors are some of the safest drivers around. The experts at Hartford Auto Insurance indicate that the number of accidents involving older drivers actually decreases as age increases. It’s the risk factors like medical conditions, medication usage and reduced physical function that increase the risk for accidents and injuries involving older drivers. Thanks to technology and some other well-designed devices, seniors may be able to continue driving longer than the aging drivers of years past. The AAA Foundation for Traffic Safety, a nonprofit research and education association, says roughly 90 percent of seniors don’t take advantage of simple, often inexpensive features that can greatly improve safety and extend their time behind the wheel. Here are some considerations. • Cushions and seat pads: Cushions do more than just alleviate hip and back pain while sitting. Cushions and pads can raise drivers up and improve their line of sight over the dashboard. Swivel pads can make it easier to enter and exit the car as well. • Adaptive cruise control: This feature can adjust speed automatically to maintain a consistent space between vehicles. • Adaptive headlights: These headlights, also known as steerable head-

lights, can improve visibility by changing the direction of the light beam with the movement of the steering wheel. • Pedal extenders: Extenders help short drivers reach the pedals while maintaining a safe distance from the steering wheel and potential airbag deployment. • Hand controls: Whether one has sensory changes in the feet from surgery or a medical condition, adaptive hand controls can move the “pedalsâ€? up to the steering column. • Blind spot warning and other sensors: Today’s cars can be equipped with any number of sensors that can detect oncoming traffic, cars to the left or right of the vehicle, items or cars behind the vehicle when reversing, and even if the vehicle has drifted out of the lane. These are all great safety features for any driver, but may be especially helpful to seniors. • Parking assist: Parking assist technology can steer the vehicle into a space with little input from the driver. • Voice control: Avoiding distractions and keeping hands on the wheel is enhanced by voice controls, which can be set up to do things like turn on the radio or adjust climate control. • Convex mirrors: Special mirrors increase the field of vision. Seniors have many tools available to make driving safer and more comfortable, which can prolong their years behind the wheel.

How to winterize a vacant home A vast migration takes place when the temperatures begin to drop in the northernmost areas of the United States and even parts of Canada. No, it has nothing to do with feathered friends finding new roosts or certain mammals getting ready to hibernate. This migration involves the thousands upon thousands of people who retreat from one residence to head to another. Snowbirds, as these migratory people are often called, are primarily retirees who split their living arrangements based on weather. Many spend the spring and summer months in one residence, generally in the northern portion of the country. Once the mercury begins to drop there, they trade that home for another in a more temperate locale, such as Florida, Louisiana, Texas, or even overseas. The Palm Beach Post reports that about 145,000 snowbirds flock to Palm Beach County alone each winter, raising the population by around 11 percent, according to the county’s official figures. Across Florida, an estimated 900,000 to one million seasonal residents stay a month or more every winter. When snowbirds or other people leave their homes for extended periods of time, it is essential that they winterize properties that will sit vacant for months. Protect against home damage • Consider turning off the water supply completely if you will be away for an extended period of time; otherwise, a burst pipe may result in significant damage. • Drain all water in pipes by opening the faucets and flushing the toilets to clear the water from the tanks and bowls. Place non-toxic antifreeze in the toilet bowls to prevent any remaining water from freezing. • If you will not be draining pipes and turning off the water, set the heating system to 55 F or higher to help keep the interior and wall cavities warm. • Keep room and cabinet doors open to allow

I became an official Covid-19 statistic In late October, I became an official statistic. I was diagnosed as one of 10 million (and still counting) Americans who had been infected by the COVID-19 virus. After reading the test results, I was left with the inevitable question. Where did I contract the disease? My wife Kathy and I had attended a couple of outside summer gatherings, a birthday celebration at a local restaurant, (both with a limited number of family and friends), and throughout the summer, I had golfed with the same two friends. We had carefully observed social distancing and mask protocols.. In the end, we couldn’t identify the source for the infection, so it was time to concentrate on recovery. In the 10 days or so before deciding to get tested, I had experienced symptoms such as minor body aches, fatigue, and a general feeling of being “under the weather.” What convinced me to get a COVID-19 test was a marked loss of taste and smell and a slight difficulty in catching my breath after any physical exertion. I was not surprised when the test (arranged after a three-day wait and another two-day lag in notification) came back positive. A hospital emergency room visit confirmed the diagnosis. Since I was not having severe breathing problems, the hospital discharged me with instructions to monitor my temperature, take medication to alleviate my body aches, get plenty of rest, stay hydrated, and make sure to keep walking and moving around the house to stave off serious respiratory problems. I was cautioned to return to the hospital if my breathing issues worsened. The day after my test result, I received a phone call from the Rhode Island Department of Health. I filled them in on my symptoms, listed the persons who I had been in contact with, and where I been in the last two weeks or so. The

Health Department gave me directions about the quarantine protocol. Three days later, Kathy also had symptoms of body and muscle aches, a cough, and some loss of taste and smell. While she tested negative, the Health Department advised her to consider herself asymptomatic and also voluntarily quarantine. Health also advised us to use separate bedrooms and bathrooms while under quarantine. I contacted family members and friends that I had been in contact with to notify them of my positive COVID-19 test. While my family members have not tested positive, my two golfing companions tested positive and were quarantined. One of Kathy’s golfing companions also contracted the virus. I am pleased to report that we have both recovered and are back to living what passes for a normal life in these challenging times. Having been infected by COVID-19, we pay extra attention to the common-sense measures designed to slow the spread of the virus while the search for the vaccine and treatments continues. We listen to the health experts and limit our social contacts, maintain social distancing, wash our hands frequently, use sanitizers, and wear our masks. As more than 10 million Americans attest, COVID-19 is not a hoax. The effects of the pandemic began reverberating across the national landscape in late 2019 and they continue echoing into this year. We were lucky. We survived-with a little help from our friends and family. During our three-week recovery, my daughter and son-in-law did the grocery shopping, delivered the provisions to our doorstep, and sent over some meals already cooked. My sister sent over soup (chicken, of course), and we received daily wellness calls from our son Benjamin on New Jersey and Matthew on Las Vegas. It’s obvious that this year’s holiday celebrations will have a very different

look and feel. Out of abundance of caution, we have cancelled a family trip that included my daughter Kate and her husband Ray, their three children, and our son Ben and his wife Renee and Benjamin, Jr. to spend Thanksgiving with our son Matt. Our traditional Christmas Eve Feast of the Seven Fishes will be pared down only to include only our children and grandchildren. And for the first time in more than four decades, Kathy’s annual family Christmas gathering won’t be held. Her six brothers and sisters have their own families and the clan now stretches from Rhode Island to Maine, south to Virginia and west to Pennsylvania. Last year, the LaVoice (Kathy’s maiden name) Family Christmas extravaganza included more than 75 people. We look forward to resuming the tradition at a later date…maybe Christmas in July! We are still planning to spend the winter in Florida, depending on COVID-19 situation in that state in early January. There is an amusing footnote to our personal “Who could have predicted this” saga. Kathy and I celebrated our 50th wedding anniversary in quarantine on November 7. Earlier that day, our children and grandchildren festooned our front lawn with balloons, streamers, and 50th anniversary signs. Although we had to cancel our anniversary dinner and night out, we had an Italian take-out feast in our dining room table, toasted our years together, and looked through our wedding album. No matter how many anniversaries we celebrate from here on in, this one will always have a special place in our memory bank. Life is unpredictable, isn’t it? Surprise Pandemic Birthday Party Robin threw her mother a surprise 80th birthday party. And over two dozen people showed up. They social distanced, but did not wear masks. Joyce was able to see her children, grandchildren and other relatives from Rhode Island, Connecticut, Massachusetts, Tennessee and Florida through the magic of a Video Conferencing Program. Robin arranged the surprise “party” by e-mailing everyone with her Web Ex code, getting them all on line at the same time, and then calling me to get Joyce in front of the computer for the big “SURPRISE!” What a joy to see our family together, most of whom we had not seen in over eight months, in living color in a dozen small boxes on our computer. Sure, we missed those family gatherings, whether surprise parties, planned picnics, or chicken dinners at Wrights Farm, but the modern marvels of videoconferencing made for a wonderful alternative.

All you need to pull off the surprise is a computer knowledgeable family member with Zoom, Web Ex, or one of the other video conferencing programs. The result is similar to that being used on a larger scale by sports venues, the America’s Got Talent audience, and dozens of TV programs, distant learning, and business conferencing. My daughter uses it both at work and for personal use, connecting with her UConn students and faculty and her friends and relatives from Connecticut to California. For over an hour we caught up with everyone, chatting about children, pets, work, hobbies, and how we were all coping with Covid-19. Like most family gatherings, we found it difficult to say “Goodbye”. With the holidays upon us and traditional gatherings out of the question, video conferencing is a possibility for many families to come together.

get ready now to file 2020 federal income tax returns

The Internal Revenue Service encouraged taxpayers to take necessary actions to help them file their federal tax returns timely and accurately in 2021, including special steps related to Economic Impact Payments. Steps taxpayers can take now to make tax filing easier in 2021 Taxpayers should gather Forms W-2, Wage and Tax Statement, Forms 1099Misc, Miscellaneous Income, and other income documents to help determine if they’re eligible for deductions or credits. They’ll also need their Notice 1444, Your Economic Impact Payment, to calculate any Recovery Rebate Credit they may be eligible for on their 2020 Federal income tax return. Most income is taxable, including unemployment compensation, refund interest and income from the gig economy and virtual currencies. Taxpayers with an Individual Tax Identification Number should ensure it hasn’t expired before they file their 2020 federal tax return. If it has, IRS recommends they submit a Form W-7, Application for IRS Individual Taxpayer Identification Number, now to renew their ITIN. Taxpayers who fail to renew an ITIN before filing a tax return next year could face a delayed refund and may be ineligible for certain tax credits.

Taxpayers who received non-wage income like selfemployment income, investment income, taxable Social Security benefits and in some instances, pension and annuity income, may have to make estimated tax payments. Payment options can be found at IRS.gov/payments. New in 2021: Those who didn’t receive an EIP may be able to claim the Recovery Rebate Credit Taxpayers may be able to claim the Recovery Rebate Credit if they met the eligibility criteria in 2020 and: * They didn’t receive an Economic Impact Payment this year, or * Their Economic Impact Payment was less than $1,200 ($2,400 if married filing jointly for 2019 or 2018) plus $500 for each qualifying child. * For additional information about the Economic Impact Payment, taxpayers can visit the Economic Impact Payment Information Center. Received interest on a federal tax refund? Remember these are taxable; include when filing Taxpayers who received a federal tax refund in 2020 may have been paid interest. The IRS sent interest payments to individual taxpayers who timely filed their 2019 federal income tax returns and received refunds. Most interest payments were

received separately from tax refunds. Interest payments are taxable and must be reported on 2020 federal income tax returns. In January 2021, the IRS will send a Form 1099-INT, Interest Income, to anyone who received interest totaling at least $10. Although the IRS issues most refunds in less than 21 days, the IRS cautions taxpayers not to rely on receiving a 2020 federal tax refund by a certain date, especially when making major purchases or paying bills. Some returns may require additional review and may take longer. EITC/ACTC-related refunds should be available by first week of March By law, the IRS cannot issue refunds for people claiming the Earned Income Tax Credit or Additional Child Tax Credit before mid-February. The law requires the IRS to hold the entire refund ? even the portion not associated with EITC or ACTC. The IRS expects most EITC/ ACTC related refunds to be available in taxpayer bank accounts or on debit cards by the first week of March, if they chose direct deposit and there are no other issues with their tax return. Taxpayers should visit “Where’s My Refund?” for their personalized refund date. For additional information visit irs.gov.

If you’re not going to stuff your bird, there’s no need to truss the legs, so remove the plastic or metal bracket and discard it. Trussing an unstuffed bird hinders the hot oven air from circulating inside and around the legs. This means that the dark meat will take longer to cook, and the breast meat will cook faster and dry out before the legs ever get completely done.

After 45 years of cooking, I’ve had my share of Thanksgiving Day disasters! I’ll never forget the Thanksgiving when the turkey wasn’t done, and my family and friends were starving. Thankfully, no pun intended, I had defrosted a package of pork chops for dinner the next day. That year we had fried pork chops, cornbread dressing with cranberry sauce, roasted vegetables, mac and cheese, dinner rolls and a vast array of desserts. One of the many things that I learned that year, and during this stressful and unusual year, is to be thankful for the good things in life, while preparing as much as you can for the unexpected. Here are some secrets to saving your sanity and your Thanksgiving dinner if your turkey isn’t done, or other unexpected challenges arise: HOW TO DEFROST A TURKEY: You’ll need at least 24 to 48 hours (about five hours per pound) to thaw a frozen turkey in the refrigerator. If you need to do a quick thaw, place the wrapped, frozen turkey in your kitchen sink or a large container like an ice chest. Cover the turkey with cold water. Drain and refill the water every halfhour because as the bird thaws out, the water will get warmer. Using this method, the turkey will thaw at the rate of about a half-hour for each pound. PREPARING THE BIRD FOR COOKING: Remove the giblet package (neck, livers, heart, and gizzards) from inside the cavity of the bird AND check the neck cavity. THE TURKEY ISN’T DONE: Don’t rely on the “pop-up” timer in the turkey, as it usually means that the breast is overcooked, and the dark meat isn’t done. If the dark meat isn’t done, remove the wings and breast meat from the rest of the turkey, in one piece, if possible. Cover the breast and wing portion with foil and set it aside. Put the drumsticks and thigh portion of the turkey back into the oven to continue cooking until done. You can re-assemble the whole turkey and garnish it, or just cut it into serving portions and arrange it on a platter. STUFFING SAVERS: If the stuffing/dressing is too wet, spread it out in a thin layer on a sheet pan so that it will dry quickly. Place it back into the oven for 5 to 7 minutes. If it’s too dry, add more pan drippings or chicken broth to the mixture. If you don’t have any more drippings or broth, you can combine a chicken bouillon cube (if you have one), along with a teaspoon of poultry seasoning, three tablespoons of butter and 1 cup of water. Cook the mixture in the microwave for 3 to 5 minutes or until

it comes to a boil. Stir to combine and then add it, a little at a time, to the dressing until it’s moist. SOUPY MASHED POTATOES: You can add unseasoned dry breadcrumbs to soupy mashed potatoes to absorb any excess liquid. You can also microwave raw potatoes until soft, spoon out the potato, mash it and add it to your mashed potatoes along with some additional butter, salt and butter. GRAVY RESCUE TIPS: If the gravy is lumpy, pour it through a strainer into a new pan and bring it to a simmer, stirring gently. If it’s too thin, in a separate bowl, mix a tablespoon of melted butter with a tablespoon of flour. Bring the gravy up to a boil and whisk in the butter mixture to thicken your gravy. If the gravy is too thick, add a little more chicken broth, pan drippings, milk or a little water and butter to thin it out. BURNT OFFERINGS: If the turkey begins to burn while it’s roasting, flip the bird over immediately and continue to cook it. After the turkey is done, you can remove and discard any blackened skin and about half an inch of the meat below any burnt area. Slice the remaining breast meat, arrange it on a platter and ladle gravy over it. If your vegetables or gravy burn on the bottom, carefully remove the layer that isn’t burned into another pot or serving dish. Don’t scrape the bottom of the pan! If the dinner rolls are burned on the bottom, just cut off as much as you can, butter them, and fold them in half to cover the missing ends. Whipped cream is the perfect “make-up” for desserts that aren’t quite up to par. You can cut the top layer off a burnt pie and cover it with whipped cream. Hopefully, these tips will rescue you from any Thanksgiving Day disasters, but remember, it’s about gathering to give thanks with the people you love — not the perfect meal! Hobbies can help people escape the daily grind. Though it’s easy to view hobbies as enjoyable ways to pass the time, they also can be vehicles that enrich your life. Literacy Volunteers of Kent County is pleased to announce a new Program Director to its Kent County office located in the Coventry Public Library. The new director is Dymond Bush and the following is the press release announcing her appointment: Dymond Bush recently joined the Literacy Volunteers of Kent County as the new Program Director. The Literacy Volunteers of Kent County (LVKC) is a nationally accredited adult literacy program that has been serving the families of Kent County and its surrounding communities since 1980. It is sponsored by the Coventry Public Library and is a non-profit organization affiliated with ProLiteracy, Inc. LVKC provides free one-to-one tutoring to adults whose low English literacy skills prevent them from functioning effectively in their homes, workplaces, communities, or as citizens of the United States. Dymond, an East Providence resident earned her bachelor’s degree in Sports Management from Hampton University and a master’s degree in Kinesiology with a County enrolled in the Master of Library and Information Science program at Simmons University. She most recently was a Program Manager at Scholar Athletes in Boston where she oversaw programming and partnerships at 5 Boston Public Schools. Prior to Scholar Athletes, she served as a High School Advisor at the College Crusade of Rhode Island in Providence where she supported underresourced students in getting to college. In her spare time, she likes to travel (pre Covid), do genealogy research, and serve the community as a member of the Daughters of the American Revolution and Alpha Kappa Alpha Sorority, Inc. She is excited to become more familiar with the Kent County community and get to know everyone.
