Soba Noodles with Shrimp and Vegetables 1/4 2

cup creamy peanut butter teaspoons peeled, grated fresh ginger 2 tablespoons low-sodium soy sauce 1 tablespoon distilled white vinegar 1 teaspoon Asian sesame oil 1/2 teaspoon cayenne pepper sauce Salt 1 package (8 ounces) soba noo dles (100% buckwheat) 1/2 bag (10 ounces) shredded or matchstick carrots (about 1 1/2 cups) 1 pound large shrimp, shelled and deveined, with tail part of shell left on if you like 4 ounces snow peas, strings removed 1/2 cup (packed) fresh cilantro leaves, chopped, plus additional sprigs for garnish 1. In small bowl, combine peanut butter, ginger, soy sauce, vinegar, sesame oil and cayenne pepper sauce; set aside. 2. Heat covered 5- to 6-quart saucepot of water and 1 teaspoon salt to boiling over high heat. Add noodles and cook 4 minutes. Add carrots and cook 1 minute. Add shrimp and snow peas and cook 2 minutes more. Reserve 1/2 cup pasta cooking water. Drain noodles, shrimp and vegetables into large colander. Transfer noodle mixture to large bowl. 3. With whisk, beat reserved cooking water into peanut-butter mixture until well blended. Add peanut sauce and chopped cilantro leaves to noodle mixture in bowl and toss until evenly coated. 4. To serve, spoon into 4 large bowls; garnish each serving with a cilantro sprig. Makes 4 (2 cups each) servings. • Each serving: About 430 calories, 12g total fat (2g saturated), 140mg cholesterol, 960mg sodium, 53g total carbohydrate, 6g dietary fiber, 33g protein. Steps for hanging holiday lights outdoors It begins to look a lot like Christmas when twinkling lights brighten up homes inside and out. Few things liven up the season more than holiday decorations, particularly clear and colored lights. Prior to taking out the lights, ladder and thermos of coffee to get you through the job, it’s important to note that there are right and wrong ways to hang holiday lights. • Sketch out your plan. Start by taking a few photos of your home from various vantage points. Print out the photos on regular paper so that you can draw your lighting arrangement and decoration placement right on the photos to see how things will look. • Measure the area. Use a measuring tape to roughly measure the width and height of eaves or other areas of the home where you plan to hang light strands. Calculate how much overall footage you will need so you can purchase all of the lights in one shopping trip. • Test the lights first. Plug in the lights to be sure all strands are operational. • Begin where the lights will be plugged in. Start where the lights will be plugged in and then work your way around the house. • Add to shrubs and trees. Lights also can adorn shrubs and trees. Lowes Home Improvement says a good rule of thumb is 100 lights for every 11⁄2-feet of tree or shrub to cover. A 6-foot evergreen needs at least 400 lights for a basic level of lighting. • Exercise extreme caution. Accidents can happen when stringing lights. While many professionals use harnesses, homeowners are not always so cautious. Utilize a spotter to hold the ladder and make sure things are safe. Never set foot on a wet or icy roof. Do not attempt to string lights in inclement weather. • Know the wattage. Each outlet can generally hold about 17 amps or 1,870 watts if the lights are not sharing a circuit with another outlet, says Parrish. Plan accordingly to ensure you have enough power to handle your lights.

When you admire the flowers and plants growing in your garden and neighborhood, have you ever thought of them as a rainbow of color? For fun, name the colors you observe, take a photo and display it in a natural frame.

• Use plastic clips. Plastic light clips hang strands along eaves and gables. They’re specially designed for hanging lights over the gutters. Some slip under the edges of roof shingles. Lights can be hung without staples or nails, which can damage exterior surfaces. Plastic zipties or deck clips also can attach lights along a handrail. • Use only outdoor extension cords. Be sure the extension cords you use are designed specifically for outdoor use. • Use a timer. Timers can make sure the lights turn on and off even if homeowners forget. Once lights have been safely strung, sit back and enjoy the splendor of a well-decorated house.

Put them together, and you have the potential for awesome adventures in your neighborhood and beyond. When you get home, keep the memory alive with these two hands-on activities using found materials — free from nature.

Preserve the last of your garden flowers in bookmarks. Gather a colorful assortment of small blooms and leaves. Spread them between sheets of wax paper and press them flat by topping with heavy books. Let them dry for about a week. Cut several 6-inch-by-2-inch pieces of poster board. Arrange the pressed flowers and leaves on one side of each one. Glue in place using a paintbrush dipped in household glue. When dry, cover the decorated side only with a piece of clear Con-Tact self-adhesive covering. Trim overlapping edges. Punch a hole in the top, and tie a ribbon or tassel through it to finish the bookmark. Turn it over and use a ruler and a marker to make 10 lines. Every time your child reads a book, write down the title on one line.

Create a natural frame using tree bark, sticks and stems. Cut out the front side of a medium-size cereal box, or cut a piece of corrugated cardboard from a packing box the size you wish your frame to be. Using a sharp pair of scissors, an adult should cut out a rectangular shape in the middle, slightly smaller than the size of the photo or drawing you are framing. Put a few globs of glue on the cardboard and affix strips of found tree bark all over until completely covered. Glue four thin sticks or woody stems to the outside edges to frame the frame, then add decorations such as moss and pinecones. Let dry. Affix the photo to a piece of cardboard cut slightly larger than the cutout portion of the frame. Tape it to the back. To hang on a bulletin board or wall, glue or tape a metal flip tab from a soda can to the back of the frame.
