This may seem like a strange passage of God’s word for our city to draw wisdom from, but in this month’s 4Memphis #MemphisLoveChallenge” we are spotlighting a unique prison ministry called Jonah’s Journey. Jonah’s Journey cares for children whose mothers are in prison. Enoch was arguably the child of the most famous murderer of all times. Cain murdered his brother Abel and God condemned him to be a “restless wanderer on the earth.” In recent months, Memphis has made headline news of young people in trouble and we have heard much about the failure of parents to be parents. Many believe that the children whose parents who have failed to pass on responsible living can’t possibly succeed in life and are destined to follow in their parents’ footsteps. Jonah’s Journey is partnering with these mothers in prison because these mothers don’t want to see their children follow in their footsteps. Every month 4Memphis is sharing the work of ministries that are striving to give the young people of Memphis an opportunity to break the generational curse their parents are offering them. On Saturday, January 31st, Jonah’s Journey will hold a benefit dinner featuring Dr. Benjamin Carson. Dr. Carson’s mother was originally from Tennessee and was a single mother raising two boys in the Detroit housing projects. Ms. Carson was determined that her boys would be successful despite being abandoned by their father at a very early age. With the constant encouragement of his mother, Dr. Carson was accepted into Yale School of Medicine, went on Medical School and at the age of 33 became the Director of Pediatric Neurosurgery at Johns Hopkins Hospital. In 1987, Dr. Carson led the first successful separation of conjoined twins. His 50-member surgical team separated the Binder twins, who had been joined at

This Midtown burger extravaganza took place for its third year at Minglewood Hall, and the Best Memphis Burger Fest just keeps getting better. The invitational hamburger cooking and music festival featured competitions for Bloody Marys, veggie burgers, a pickle eating contest for kids, as well as crowning the Pirates of the Grillibbean as the Best Memphis Burger winner. The proceeds benefit the Fayette County Animal Rescue, Tunica Humane Society, and Memphis’ Streetdog Foundation.

Lighting the Way The Lantern Clinic By Sandi Butler Hughes Photography by Brice Media
E
asy answers are hard to come by, especially in the business of health care in the State of Mississippi, one of the poorest states in America. Despite measures and efforts, the working poor are often the ones who fall through the cracks in the system. It is these individuals who are being served by a grassroots group of doctors, dentists, nurses, and volunteers at the Lantern Medical Clinic in Pearl, Mississippi. The numbers can be daunting. The number of working uninsured in Mississippi is over 22% of the state’s total workforce, and that number equals over 300,000 people. Almost 11% of Mississippi’s children are uninsured. And a majority of the uninsured - a whopping 78.4% - live in families where one person is working. It is this last statistic where the Lantern Medical Clinic (LMC) finds their call to service. While income figures are not compiled, patients cannot exceed 2.5 times the national poverty level, which equates to an annual average income between $15,000-$20,000 per person. Many patients are only working parttime, but they are working and this qualifies them for services. The parttime workers earn significantly less. Patients cannot be receiving Medicare, Medicaid, or disability benefits, but as long as a patient is receiving a paycheck, they are eligible for free medical and dental care. Lantern Medical Center was opened in August 2010, by Dr. Holt Crews. He serves as an active physician in the rotation of volunteers, as well as being the board chairman of the non-profit medical ministry. The mission of LMC seeks to “glorify Christ by sharing the Gospel while providing quality healthcare to those

in need.” The clinic name is based on the scripture, Matthew 5:16, “Let your light shine before others, so that they may see your good works and give glory to your Father who is in heaven.” While medical care is given for a patient’s physical wellbeing, emotional and spiritual needs are also part of the regimen of care. The after-hours clinic not only serves those who are working, it is served by those who are working. Most all of the doctors, dentists, nurses, physician assistants, and dental assistants/hygienists are volunteers, and they have already worked a full day at their respective clinics. These dedicated groups of medical professionals believe in the importance of the work being done at LMC and are dedicated to the mission. Not only is the LMC staffed by volunteers, many of the additional services needed are donated. Specialized care such as major surgeries has been completed at no charge. Additionally, the Baptist Hospital provides free analysis of all lab work, and donates services such as MRIs, ultrasounds, and mammograms at no charge. “Without the financial commitment from individuals and churches, as well as the dedicated service of our volunteer doctors, nurses, dentists, dental assistants, clerical staff, and waiting room volunteers, we would cease to exist as a ministry,” according to LMC Administrator Steve Morris. “Many thanks to these wonderful folks! A
s a graduate of the prestigious University of Pacific School of Law, and representing Gov. Reagan and other important clients, Ford set about expanding his law practice, thinking he had the world by the tail. Happy, married to Vickilyn with three children, but soon after their fourth child Trina was born, he says “the train suddenly came off the track.” Two year old Trina was diagnosed with Type 1 diabetes, and she was unusually skinny and brittle, plus having frequent seizures. Her Daddy watched helplessly as the disease quickly stole his child’s health and happiness. Driven by a new passion to help Trina, Ford made a rare choice: he turned from his law practice, picked up medical books, hired tutors, and prepared for medical school. His engineering and law educations did not supply many prerequisites so he charted his own course. Relying on his faith and driven by the frustration of seeing how all people with diabetes suffer, Ford founded a non-profit medical research institute with the lofty goal of conquering diabetes...and bringing health back to his daughter. “Diabetes is not a disease of improper blood glucose, it’s a disease of improper metabolism,” Ford smiles as he makes this statement. He knows that what he
is saying is beyond just blood sugar, and different from the common misconceptions about diabetes. He says it was an “accident” of how he made the pump that he is able to expose the simple truth, that until after his work, scientists did not even know how the pancreas “talks” to the liver, and that proper liver stimulation can address metabolism deficiencies, and stop the complications of diabetes. “I used to go around telling colleagues that I am tricking the liver into restoring missing enzymes,” says Ford. But now science realizes and his team created a pump and a method of therapy that actually “mimics the way God made man.” Ford points back to the 60s when science shifted toward focusing more on individual cells and chemical pathways, and less on the “whole organ” approach. But the answer to diabetes was right there, just waiting to be discovered, as he did. “We almost mapped the entire human genomes before we bothered to look at the way the liver was stimulated by the pancreas.” He goes on to say, “This would be hilarious if it didn’t mean that our system of treating was delayed for almost 35 years. Trina was five years old by the time his pump (Bionica) was cleared for human use, and she had spent numerous days in and out of hospitals. She was a “black box” diabetic; there are just some who go up and down with no apparent rules or reasons. Trying to manage her disease was a full time job for Vicki (an RN by education). At the University of California-Davis, she received her first treatment from the pump developed by her loving dad. Within one month Ford was getting back his daughter, healthy, not brittle, and happy for the first known time. Her seizures ceased, a playful spirit emerged and her cheeks were again pink. That was 25 years ago! According to the Center for Disease Control, 29.1 million people in the United States have Type 1 or Type 2 diabetes. Of those, 21.0 million are diagnosed, and 8.1 million are undiagnosed. That statistic equates to almost 10% of the US population! The cost of diabetes is just as staggering. The American Diabetes Association reports $176 billion in direct medical costs plus $69 billion in reduced productivity. That totals an enormous $245 billion annual cost of this disease. Diabetics suffer with serious and life-long complications such as the loss of kidney

You make fat from carbohydrates that you eat in the presence of extra insulin. And all these people make extra insulin. A Perfect Pairing Ashley & Michael Robilio By Sandi Butler Hughes; photography by Jay Adkins
What began as a chance meeting in Mexico led to a marriage of two of the foodiest families in Memphis. Michael Robilio, co-owner of Lucchesi’s Ravioli & Pasta Company, won a trip through food wholesale supplier US Foods. Ashley Boggs, Huey’s heir/co-owner and VP of Operations, also won the same trip. Once back in Memphis, they ran into each other around town, began dating, and in 2013 they tied the pasta knot. This union joins together two people who share a pedigree in the family business of food as well as the legacy of feeding legions of Mid-Southerners. For both Ashley and Michael, food is not only their livelihood but a way of life since they were children.

As vice president of Huey’s Operations, Ashley can be found from the home office in Midtown to any of the eight restaurant locations. She might be managing human resources issues and working with food vendors, just as easily as she might be found in the kitchen or working on the restaurant floor. She is handson in the Huey’s business that was built by her dad, the late Thomas Boggs. It’s a place where she not only grew into the business, she grew up there. When Ashley was about 10 years old, her dad, then a manager at the Midtown fixture, would bring his girls to work with him. “Then, when I was probably 13 or 14, I was in the kitchen. I would prep,” Ashley recounts, as Michael laughingly interjects: “child labor!” While she started her vocational training at an early age, she followed that with a degree from the University of Alabama in Restaurant and Hospitality Management. In 1991, when Huey’s opened a second location, Huey’s EastAppletree, Ashley was tapped to be the general manager. She remembers her dad being on site frequently and working closely with her. He also trained his other children, grooming and training them to build a family dream-team for restaurant success. In the early 2000s, Ashley joined her dad and her sister, Lauren, in the home office as vice president. Thomas was their leader and constant positive influence until his death in 2008. Ashley says, “He was there for the big decisions; we loved having him there for that.” Just as Ashley was trained in a family environment, Michael grew into his career through a similar familial path. As a co-owner and chef at Lucchesi’s Ravioli & Pasta, the market on Sanderlin is bustling at lunch time offering a menu of fresh sandwiches, daily soups, and house-made pasta specials, many that Michael created. But that is just a part of the business that is Lucchesi’s. Coolers and cases line the walls with frozen pastas, sauces, pestos, pizzas, a cheese selection that is extraordinary, and buttery, scrumptious desserts tempting patrons at the check-out counter. Serving Memphians quality foods has also been a way of life for Michael since he was very young. The Robilio-Sarno grocery stores were from an era when you knew your grocer. Before the chains gobbled up the local market, the Robilio-Sarno Big Star stores were a shopping staple for your food staples. Michael grew up working in the stores, and after attending Memphis State University he became a co-owner with his brother and late father, Raymond. It was in the early years Michael began learning the business of food that is a big influence and in his blood. Michael’s grandfather John S. Robilio was the founder of Ronco Pasta, a perennial pasta standard in the familiar red, green, and white packaging. The elder Robilio

emigrated from the small village of Bassignana in northern Italy, and brought his talents and knowledge of Italian spaghetti to Memphis. “I’ve always thought that was the neatest thing. To think that man could come over to this country and start a company like that; Ronco grew to be in 32 states,” Michael proudly states. The Robilios were not the only Italians from Bassignana to make a difference in the food culture in Memphis. “From that one small village came the Barzizza, Canale, and Gaia families also. It’s been said that if you took all the Italians from Bassignana out of Memphis, you wouldn’t have any Italians left!” Michael bought Lucchesi’s in 1999, and while he is an owner and general manager, he is always in the kitchen. He likes to cook, and is often trying new recipes to serve in addition to management duties and sales. The wholesale faction supplies the bulk Italian Spinach sold at Whole Foods on the hot food bar and also at Miss Cordelia’s. An enormous quantity of the veggie concoction is made fresh for distribution, and Michael is often the chef cooking 100+ pounds of the leafy greens. While Michael and Ashley both like to cook and have known their way around the kitchen since childhood, they laugh that they do not cook well together. Ashley’s cooking style seems to follow her professional persona because “she’s such a boss,” Michael laughs. “She goes strictly by the recipe and doesn’t fudge a bit!” Michael, on the other hand, is a little more creative and tosses in a dash of this, a pinch of that, and doesn’t measure...much to Ashley’s dismay. That is about the only thing they do not do well together. They are dedicated to raising a happy, healthy blended family, and have recently moved into a beautiful home in East Memphis. It is a hub for family gatherings, game-day parties, and the patio and pool are poised for summer soirees. Even Shorty, the basset mix, is a gregarious host. They also devote time to community service. Michael serves on the Memphis Goodwill board of directors and for the past three years has chaired the Taste of CBHS culinary event at his alma mater Christian Brothers High School. Ashley serves as the Secretary of Project Green Fork and is on the board of the Levitt Shell, in addition to being an owner in the prime steakhouse Folk’s Folly. The Robilios nod as they both recount their birthright and in unison they say “work ethic” is what they each received from their fathers. The food-businessDNA was passed to Michael and Ashley, and the value of hard work was instilled early. For Memphis diners, it is simply a culinary pleasure to enjoy authentic Italian foods and best burgers in town.

*Spices are to personal taste, with chili flakes adding the heat. Spices can be found at Penzey’s Spices. In a large mixing bowl, add your ingredients (beginners: use chili flakes sparingly). Mix well by hand. Using a hot greased cast iron skillet, add the meat and mix constantly, evenly browning the meat. Cook through and the add to your favorite sauce or on top of cheesy grits.

Broad’s newest addition to their neighborhood revival is Jackson Kramer’s restaurant and butcher shop Bounty. Jackson, Interim’s former executive chef, designed the new restaurant’s concept from his own tastes. “Memphis has wonderful food that should be nationally appreciated, but my personal tastes [in food and aesthetics] are more similar to what you see in places like New York, San Francisco and Portland.” Jackson’s food is simple in that he allows his fresh ingredients do the talking with minimal interference from pomp and circumstance. His restaurant’s design and décor follows suit with uncomplicated details like refurbished wood paneling, bronze detailing, and clean lines. Jackson serves his food on a “family style” sized platter. And while the portions are regular-sized portions, the platters allow folks to share easily and enjoy his wide range of eclectic food, including lamb tartar, beef bavette, and stuffed
mountain trout. Bounty celebrates local vegetables in all of its offerings, but the restaurant is truly a carnivore’s paradise. Jackson will be opening the butcher portion of Bounty in mid-November, just in time for holiday party planning. As an expert in both beef and pork butchering, Jackson has personally sourced his meat selections from providers that are both environmentally sustainable and top-notch quality. In addition to carrying cuts of beef, pork and poultry, Bounty will carry some killer sausage. Staying true to the ideals of “waste not, want not,” Jackson turns food preservation into a supreme culinary comfort food. Olive Encrusted Rack of Lamb with Pesto Tagliatelle Pasta and Pine Nut Puree Erling Jensens For lamb: 1 frenched rack of lamb 2 large garlic cloves, minced
1 tbl thyme ½ cup chopped olives ½ cup bread crumbs Salt and white pepper
Season lamb with Salt, white pepper, garlic, and thyme. Roast at 450 degrees until cool red center. Remove from oven and add olives and bread crumb mixture. Continue roasting until medium rare.

Over medium, heat toast pine nuts until golden brown. Place in food processor on high until smooth. Add salt and nutmeg to taste.

Wild Mushroom Pasta 3 tbl butter 1 lb assorted wild mushrooms (Portobello, Crimini, Shitake) roughly chopped 1 sprig rosemary 1 tsp fresh thyme leaves
Kosher salt & black pepper 1/4 c brandy 1 cup heavy cream 1 tbs fresh grated parmesan
Melt butter in a heavy bottom skillet over medium heat. Add the mushrooms, rosemary, thyme and good pinch of salt and pepper. Allow ingredients to saute for 5-6 minutes until mushrooms begin to brown. Remove the skillet from the heat and add the brandy to deglaze the bottom of the pan. Add heavy cream and parmesan and cook until sauce becomes creamy. Add your favorite pasta and serve. November 2014 / 91
Lobster Pasta with Vodka Tomato Cream Itta Beana
1/2 lb lobster knuckle meat 1 lb cooked linguini (or pasta of your choice) 1/2 C vodka 1 C chicken stock 1/2 C heavy cream 1 32 oz can crushed tomatoes
1 yellow onion diced 2 cloves garlic minced 2 T butter 10 to 12 large basil leaves chopped Fresh lemon juice Salt and pepper
In a large saute pan, melt 1 T butter. Once melted add onions and garlic. Saute 1 or 2 minutes or until translucent. Add vodka and reduce by half. Add chicken stock and tomatoes and bring to a boil. Add heavy cream and reduce heat to a simmer. Cook 5 or 6 minutes, or until slightly thickened. Season to taste with salt and pepper. Bring 1 gallon water to a boil. Once boiling add lobster meat and cook 2 to 3 minutes. While lobster is cooking, melt 1 T butter in a sautÊ pan. Once lobster is done, toss in melted butter and the juice of half a lemon. Toss cooked pasta, lobster, and basil leaves in vodka cream, and serve with a crispy baguette. (Don’t toss pasta together until ready to serve. Otherwise lobster may over cook.)

8 oz Fresh Chilean seabass, lightly seasoned with Jim’s Dry Fish Rub Seasoning Baby Bok Choy Bean Sprouts Fresh Colossal Lump Crab Wild Portabello, Cremini, and/or Porcini store bought mushroom ravioli Plum Teriyaki Glaze ¼ cup Plum Sauce 2 Tbl spn. Teriyaki Sauce. Pan Sear SeaBass with 1 tsp salted butter, 3 min on each side. Add Colossal Crab for 1 min. In separate pan, sautee baby bok choy, bean sprouts and ravioli. Dress with Plum Teriyaki Glaze.

Chicken Penne Pasta Local on the Square
2 oz. Roasted Red Pepper cream Salt and freshly ground pepper ¼ to ½ cup heavy cream, 1 tsp. Shallots or to taste 2 oz. Bacon Drizzle of Truffle oil. 4 oz. Chicken ¼ cup halved cherry tomatoes 1 jar roasted red peppers, drained 94 / 4Memphis
Sautee cooked chicken and shallots together, then add to cooked penne. In a separate saucepan, add peppers, salt and pepper to heated saucepan and cook, stirring occasionally, for 5 minutes. Transfer to a processor or blender and puree. Return sauce to pan, add cream and bring to a simmer, stirring. Toss penne and chicken in red pepper cream. Add rest as garnish and enjoy.
Bolognese Sauce Recipe Lucchesi’s
6 tablespoons xtra virgin olive oil 1 red onion, chopped 3 carrots, chopped 3 stalks of celery chopped 4 cloves of garlic minced 2 handfuls of parsley chopped 5 ounces of pancetta cut into small cubes
1 pound each of ground beef, pork, lamb (or veal) 1 cup of red wine 5-15.5 ounce cans of diced tomatoes Salt and pepper for seasoning Tagliatelle pasta
In a large pot, sautee onions, carrots, celery, garlic and salt and pepper in olive oil until soft. Add pancetta and cook on medium high heat for 10 minutes. Add all the meat and cook for 30 minutes. Break the meat up with a spoon while cooking. Add the parsley, wine and tomatoes, cook on low heat for 2 hours. Finish sauce with milk. Stir well. Add over your favorite tagliatelle pasta and enjoy!

Butternut Squash Pasta with Browned Butter, Sage & Mizithra Whole Foods Serves 4 1 large butternut squash, peeled and seeded, cut into 4 inch pieces 6 Tbsp unsalted butter 1 Tbsp olive oil 1 medium onion, julienned 2 cloves garlic, minced
1 Tbsp sage, minced ¼ c. mizithra cheese, grated (divided) ½ box whole wheat spaghetti, cooked and drained Salt and pepper to taste
Using a wide vegetable peeler or grater, slice/shred butternut squash into thin ribbons. Set aside. In a small sauté pan, melt butter over low heat, swirling the pan occasionally until lightly browned and fragrant. Should smell like toasted nuts. Set aside and keep warm. In a large sauté pan heat olive oil and onions. Sauté over medium high heat until translucent. Add in shredded butternut squash and garlic, tossing to coat well. Continue to sauté until the squash is cooked through. In a large bowl combine squash mixture with cooked pasta. Add in reserved browned butter, sage and half of the mizithra cheese. Toss well and season to taste with salt and pepper. Garnish with remaining cheese and sage, if desired. Serve immediately.

3 lbs butter 4 cups sugar 9 eggs 4 cups brown sugar 16 cups all-purpose flour 8 cups Nestle chocolate chip morsels Mix together butter and sugars. Add the eggs, one at a time, being careful not to over-beat. Add flour. Blend in morsels. Drop by the spoonful onto a baking sheet. Bake at 350 degrees until lightly brown. This batch will make 10 dozen cookies - perfect for holiday baking and sharing!
Makeda’s family began the business in 1999. The co-founders are the husband and wife team, Maurice and Pamela Hill, along with Makeda’s dad and Maurice’s brother Morris. Makeda lost her battle with leukemia in 1997 at the age of six, and it is in her memory that this business is named. Makeda’s Homemade Butter Cookies honors this beloved child and to keep her precious memory alive. “Makeda was the Queen of Sheba in the Holy Bible. In Memphis, Makeda is the Queen of Cookies,” Maurice smiles. For the Hill family, Makeda was the first child, the first grandchild, and the first great-grandchild. And today, she also holds the distinction of being first in scrumptious cookies in the Bluff City. Since the business has grown, more members of the HIll family have joined in the baking operation. Brother-in-law, Charles came aboard, then Maurice’s mom Teresa Ann Hill, and now Maurice Hill Jr. is donning a baker’s hat. “Working with your family is priceless. Do you have Cankles or Heavy Leg Syndrome? You may have Venous Reflux/Vein Disease. By Kishore K. Arcot, MD, FACC, FSCAI, RPVI
WHAT CAUSES CANKLES? There are a few common things that can cause cankles, but some are more worrisome than others. First, weight gain can lead to cankles by increasing fat stores in the leg, which are then pulled downward by gravity. Secondly, if your body is retaining too much fluid, then the tissues in the lower calf and the ankle may swell, making the ankles appear wider. Other causes could be due to kidney disease, heart failure, a blood clot or a blockage in the lymphatic system, or other various medical problems. In some cases, people may simply be genetically predisposed to having thicker ankles.
WHEN SHOULD I WORRY? Most cankles are not a sign of serious disease and are simply due to genetics or weight gain. However, if your
cankles appeared over a short period of time, are progressively worsening, are painful or swollen, or if the overlying skin is red, then you should see a doctor. In addition, this simple test can help you decide if your cankles might be a sign of something more serious: Take a finger and push into your cankle. Fat and normal fluids will usually bounce right back, but if your finger leaves a dent or an imprint in your skin, then that suggests that you have abnormal fluid buildup (medically termed "pitting edema") and should see a doctor.

Giving Memphis’ Children a Chance to Grow A Look into the Courageous Efforts of Jonah’s Journey By Stephanie Beliles, photography courtesy of Jonah’s Journey
Roughly 22 percent of Tennessee’s female inmates have children. Prior to their mothers’ arrests, these children are involved in circumstances so dysfunctional that society finds it impossible to relate. Many of them are being raised by women who are addicted to drugs, commit theft and are convicted of aggravated assault. Some of these children have their innocence robbed of them for a drug fix or quick cash, all at the hands of the one who gave them life. Terrified and often alone, these children are left to physically and emotionally fend for themselves until Mommy is eventually taken away by the state. During their most formidable years, thousands of local children lose their mothers to incarceration. When the state determines that no next-of-kin is available to raise the children of these women, foster families are called upon to provide for the kids. With state-funded foster care, the emotional rehabilitation (if any) is directed to the child while the mother is left to whatever the correctional facility feels appropriate. In most cases, the mothers do not see the child while they are in prison. In fact, most do not see one visitor during their sentence. A general consensus is that the wayward mothers should never see their children again. However, a child losing a mother, no matter how debilitated, can have a severe negative impact. Armed with that consideration, LeAllison Whittinghill and Lisa Herrin started a crusade in Tennessee for these children in hopes that their idea

of a family unit is restored, and that includes their mother. “I could have just as easily been that mother.” Lisa states this plainly and in full earnest. It should be noted that Lisa Herrin is extremely active within her church community in Nashville, Tennessee. She has no prior felonies, no addictions overcame, and she exists in a warm and friendly home atmosphere. Still, Lisa understands the implications one’s environment can have on their life. In other words, the ideas of family value, moral duty and self-worth are subject to how a child is raised. Lisa considers herself not only blessed, but called on by God to facilitate positive impact for children who may otherwise end up in situations
similar to their mothers. So when LeAllison Whittinghill, a fellow church member of Lisa’s, started ministering to incarcerated women and fostering their children, Lisa knew she was being called to be a “funnel” for these children. Funnel is an interesting descriptive, but it is accurate in explaining foster care: foster families live a life of uncertainty. They take innocent children from dangerous situations. They clothe them and love them as any biological parent. They, in essence, rescue these children. In turn, they build a relationship and develop strong bonds of love with the children knowing that when the mother is released, the children may go home with her. LeAllison fostered her first child, Jonah, who was born of an imprisoned mother seeking a Christian home to watch over her child. LeAllison made her way to the Tennessee Prison for Women on a muggy July day in 2007 to pick up her family’s new foster child, and she knew immediately Jonah “was going to change the world.” Jonah did, in fact, change everything for what LeAllison, Lisa and many other Tennesseans know
about foster care. LeAllison did not just want to rescue Jonah, she wanted to rescue Jonah’s mother from herself. About 95 percent of incarcerated mothers grew up in foster care homes themselves. The harsh reality is something in traditional state-facilitated foster care is missing the mark. LeAllison believes that it is as important for the caregivers to have a relationship with the child’s mother as it is to form a bond with the child. It was important to her that she took Jonah on regular visits to his mother, where they would pray together, talk about forgiveness and share in each other’s hardships. That started a foster revolution. With the encouragement of LeAllison and the motivation of seeing her son, Jonah’s mother overcame her struggles, was released and then reunited with Jonah. LeAllison’s fostering of Jonah sparked a domino effect within the prison system. Inmates and prison volunteers were hearing of the women who wanted direct

Currently, there are about 9,020 children in foster care in the state of Tennessee according to census data. child in the Jonah’s Journey program, “I wanted my child to be taken care of, and not by state custody; I’ve been in state custody and foster homes, so I know what that is. I wanted something different for him.” Latasha had been arrested for her second time, and she was nearly nine months pregnant. At that point, she was floating in a sea of self-loathing and disparity, afraid to tell her family she failed again. She had already failed a young son, who refused to stay with her the first time she was released, saying “No, mama, I’m scared you’re going to leave again.” He had witnessed his mother abuse drugs and fail at being a parent so much, that at ten years old, he had already lost hope. That hurt motivated her to change.
A Jonah’s Journey fostering family and strong communication with the mother, and other pregnant inmates reached out for help. Unlike state foster placements, the mother has an option to voluntarily place her child with an alternative foster home. “We received a call about another woman in prison. Then another. The calls kept coming, and we realized there was a huge need for what we were doing,” said LeAllison. Lisa, who was at the time a neonatal nurse, prayed for countless hours then decided that fostering with LeAllison was something she needed to do. Lisa came on board and fostered Maddie Grace. Lisa’s nurse’s intuition told her something was not right with Maddie Grace’s development. A visit to the doctor revealed that Maddie Grace needed to have her skull reconstructed. Now fully recovered, Maddie Grace has been adopted by Lisa and her husband. Lisa and Maddie Grace continued to visit her biological mother in prison. Months later, when Lisa went to pick up Maddie Grace’s mother, Lisa received a lifealtering request: Maddie Grace’s mother wanted Lisa to adopt the child. “I was having a hard time thinking her mother wouldn’t succeed. It was difficult for me. But I knew in my heart God wanted me to adopt this child.” These situations were emotional yet thrilling rollercoaster rides for LeAllison and Lisa, and through the power of prayer and the notice of need, Jonah’s Journey was born. When asked if it is difficult to see a child return to a mother who previously abused drugs, Lisa drops a theological bomb: “It is important to learn to love the unloveable. I am not always loveable, but God has never left me and will always love me.” Selfless love and sacrifice is paramount to fostering for Jonah’s Journey, and it can be a mirrored ideology. It is a selfless act to recognize weakness and failure as a parent, addict or otherwise, and offer your child to adoption. Lisa has nothing but respect and empathy for Maddie Grace’s biological mother. “Maddie Grace’s mother had grown up in foster care, and it led to her leading a life of crime and addiction. Maddie Grace has two older siblings that were placed in traditional foster care and then later made poor life choices and entered juvenile detention. She didn’t want that for Maddie Grace. She was selfless enough to recognize she deserved to stay in the home we provided for her, one where she was safe.” The shuffling act of children from home to home that typically occurs in state foster care often leads to a child having mental instability, anger issues and a tendency to use illegal drugs. In trying to save these children, they feel unstable and unwanted, which is a recipe for failure. They end up being the next generation of incarcerated parents. Jonah’s Journey combines their Christian ministry to both the foster children and the imprisoned mother in order to create a holistic healing process. Former incarcerated mother Latasha Lee explains why she wanted her and her 108 / 4Memphis
Latasha hit her knees hard in prayer, begging that her unborn child avoid state foster care. She heard about Jonah’s Journey, and she knew that was the best choice for her and her child. “I stayed in church, I met with my son and his caregivers once a week, and I promised God I would stay by His side like He was staying by mine.” When Latasha was released in 2012, her baby, a son named Victor, was two years old. The state gave her 30 days to secure a job, and she hit the pavement hard and did just that. Latasha found a job at a local Chik-Fil-A where she works 50 hours a week and is saving money to give her children the home they deserve. Her oldest, now 14 years old, encourages her. Latasha gives him and the Christian family from Jonah’s Journey full credit for making her believe in herself. Jonah’s Journey has already fostered more than 100 children in its seven years. Lisa and LeAllison’s church in Nashville has nearly 40 families involved in fostering. There are dozens of success stories of mothers getting the help they need from the courageous caregivers and ministers. There are also success stories of mothers realizing that it is in the best interest of the child to let them go. The need for foster heroes in Jonah’s Journey is huge; many of the women in the Nashville penitentiary are Memphis mothers who relocate to that facility. In fact, most pregnant Memphis inmates are shipped to Nashville to give birth. The ladies of Jonah’s Journey recognized they could use some helping hands outside of their fostering circle: they have subsequently joined forces with Mississippi’s Palmer Home for Children in order to further meets the needs of children needing a home. The Palmer Home has is a well-oiled fostering machine that has been serving the Mississippi area for nearly 120 years. They have an aggressive board, a large fanbase and thousands of success stories. The Palmer Home is also helping Jonah’s Journey in a campaign that will be critical to the mission of this wonderful new organization. Due to the need of a presence in Memphis, the Palmer Home for Children is assiting in Jonah’s Journey launching their idX Memphis Campaign. For the children who have fallen through the cracks of our communities, awareness is not enough. To acknowledge the hurting children in our community is inconsequential if we continue to overlook them. idX Memphis is an evening event with Johns Hopkins neurosurgeon and political figure Dr. Ben Carson, who believes empowering underserved children through education leads to more complete and unified communities. As children are Memphis’ future, 4Memphis recognizes how imperative it is that we minister to the root of the issue. My God has never left my side.’ Now, today, I’m living life to the fullest.” Latasha and her story is a rare one now, because society forgets that when people fall, they can get back up. However, Jonah’s Journey is proof that even big spills can be recovered from when your village steps up to help raise a child. Ghost Town Blues Band’s Matt Isbell & Preston McEwen Interview by Stephanie Beliles, Photography by James Wessels
A group of Memphis natives are making big noise in the music industry, both with their down-home rock and blues music and their incredible handmade instruments. I was on hand at their show at the historical Lafayette’s and witnessed two men take the stage over as a dynamic force of entertainment that demands to be noticed. Take note, Memphis- these men will be a big deal. What are your Memphis backgrounds? Preston: Just about everyone in the band was born and raised in Memphis, yet we all seem to come from different backgrounds. That’s kind of just how Memphis is. Matt: After years of recording and producing music at Inside Sounds, a local blues record label and working as a music teacher, I created Memphiscigarbox.com where I make cigar box guitars, hand cut bottleneck slides and other traditional delta instruments for over five years now.
What do you do when you are not playing music? Preston: Nowadays, it’s getting to point where touring and playing live are becoming our primary day jobs. But when we’re back home, you can usually find Matt in the woodshed building guitars and me up at Ardent Studios trying to cut hit records.
How was GTBB started? Preston: Matt and I were introduced through a mutual friend and decided to start a blues band to earn extra cash on Beale Street. We began booking gigs downtown, and pretty soon, we decided to turn it into something more than just a Beale Street cover band. Playing on Beale, you’re bound to meet and play with several other Beale Street musicians. You become part of a family of grinding musicians that jump around from bar to bar, sitting in with each other, and eventually jamming with just about every regular musician on the street. That’s how Matt and I met our horn section and keyboard player.
Matt: To help translate the record to the live show, Preston and I ran into Suavo (horns) on Beale Street and automatically fell in love with his energy and infectious dance moves. His sidekicks may come and go but Suavo has proven himself to be a unique artist in his own right. We blow the audiences minds when I pull out the cigarbox guitar and all of the sudden Suavo begins to rap while swinging his trombone around like a pair of nunchucks!
What spawned the idea of using unique objects and crafting them into instruments? Matt: Necessity is the mother of invention. Once I started making all of these crazy cigarbox guitars, gas can, hubcap guitars and other interesting instruments, different festivals asked me to put on workshops to teach others to do the same. Most recently, a German filmmaker films my process and made a short film (Once There Was a Cigarbox) that has received invites to film festivals in a handful of countries and will be making its Memphis debut at the in the Memphis film festival on Saturday, November 1st.
What has drawn you to blues music as a genre? Matt: Here in Memphis, blues is in the water. It’s kind of hard not to play the blues being in such a culturally rich environment with iconic landmarks such as the Mighty Mississippi, Beale St and Hwy 61.
Preston: Every Sunday in high school, [my friends and I] drove down to a juke joint in Mississippi and back up guys like David Kimbrough, Cedric Burnside, or whoever else was there that night. It was a run-down place that sat in the middle of a trailer park. It was a firsthand view into what the real delta juke joint scene was all about.
What would you like to see happen with music in Memphis? Matt: Memphis Music has always been in the spotlight all around the world. Being from Memphis, when we travel to other cities, the people are always really excited and have high expectations from Memphis’ reputation. Personally, I would love to see Memphians embrace Memphis Music as much as the rest of the world has throughout the years! We are definitely on the right track with projects such as the Blues Music Hall of Fame that is the brainchild of the blues foundation here in town. Preston: I’m actually curious to see what Memphis bands can continue to blend multiple genres and create a unique sound, while still holding on to that Memphis soul.

Wine and design reign in Spain’s La Rioja By Sally Walker Davies
It’s a gorgeous November day in Elciego, a medieval Spanish village whose 16th-century church rises in the near distance, across an expanse of Tempranillo grapevines long bare of their fruit. Turning, the view shifts almost dizzily from medieval to modern, as glorious ribbons of colored titanium shimmer in the muted sunshine. Their flowing curves embrace the main building of the Hotel Marqués de Riscal, the small boutique hotel on the property of the historic bodega (winery) built in 1858, one of the Rioja region’s oldest wineries. Mixing modern architecture and wine isn’t an exception in La Rioja. It’s the rule. In Elciego, there’s Marqués de Riscal’s stunning, beribboned hotel and its adjacent, almost ancient cellars. In the village of Haro, the sprawling old stone buildings of R. López de Heredia offers a mod, space capsule-like tasting room. The long, undulating waves of the roof on relative newcomer Bodegas Ysios in Laguardia were the work of Spaniard Santiago Calatrava. Winemaking in La Rioja traces back to the Romans. It wasn’t until the late 19th century, when phylloxera ravaged the vineyards of France and winemakers in search of replacement grapes came calling, that Rioja’s small

bodegas became known as the producers of some of the world’s best red wines. Cuisine in La Rioja is equally blended. Traditional Basque Country cuisine including pinxtos – the Basque word for tapa, or small plate – is prevalent, as Rioja and Basque Country share some geography. These traditional bites range from a patatas bravas - fried chunks of potato in a rich aioli – to ham and cheese-filled croquettas, to a dish of Marcona almonds. But there are contemporary gems throughout the region, most notably chef Francis Paniego’s El Portal del Echaurren in Ezcaray, winner of two Michelin stars. His family has owned Hotel Echaurren for generations, and features a traditional restaurant run by Paniego’s mother Marisa Sánchez. Touring the bodegas of La Rioja is a pleasure; you’ll find no long lines or traffic, the drive from village to village is easy, the winemakers welcoming and their cellars – the older ones full of mold-covered bottles – spaces you wish you could spend hours exploring. You may not be able to spend hours in the cellars of La Rioja’s excellent wineries, but you can spend hours savoring its wines and gastronomic delights.

The Southern Pantry Cookbook By Jennifer Chandler

“I want people to feel empowered to cook,” Jennifer Chandler explains what she hopes readers will experience with her latest cookbook, The Southern Pantry Cookbook. She created this cookbook around Southern favorites, simple ingredients, and easy techniques that make it possible to have a successful, delicious dinner despite busy schedules. It was Jennifer’s own dinnertime crisis that was her inspiration for The Southern Pantry. “I came home one day and thought ‘I have nothing to cook.’ But I have a fridge and a pantry stocked full... surely I can cook something! So I whipped up some shrimp and grits with what I had on hand. I had frozen shrimp, a box of grits; I didn’t have tasso ham but I had bacon. So I used what I had and that was the beginning!” The busy-ness of life does not mean families have to sacrifice a home cooked meal or gathering together to share that meal. Apple Crumble Pie
The Southern Pantry Cookbook by Jennifer Chandler, photo by Justin Fox Burks This pie combines the best of two classic fruit desserts – a traditional apple pie with the nutty and cinnamon topping of a crumble. At Thanksgiving, I like to add dried cranberries to the apple filling for a holiday treat. 1 unbaked pie crust (9-inch), homemade or store-bought 3/4 cup all-purpose flour, divided 1 1/2 cups granulated sugar, divided 2 teaspoons ground cinnamon, divided 1/2 cup chopped pecans 1/4 cup unsalted butter, chilled and cut into pea-size pieces
6 Granny Smith apples (about 3 pounds), peeled, cored, and cut into thin slices, about 1/4-inch thick 2 tablespoons freshly squeezed lemon juice 1/2 teaspoon Kosher salt
Preheat the oven to 375 degrees. Place the pie crust in a deep-dish pie pan and flute the edges, if desired. Refrigerate the crust until ready to fill. In a large mixing bowl, stir together 1/2 cup flour, 1/2 cup sugar, 1/2 teaspoon cinnamon, and pecans. Using a fork or pastry cutter, cut in the butter until the mixture looks like pebbles. Refrigerate while preparing the filling. In a large mixing bowl combine the apples, lemon juice, salt, remaining 1 cup sugar, remaining 1/4 cup flour, and remaining 1 1/2 teaspoons cinnamon. Toss to coat. Fill the center of the pie crust with the apple mixture in an even layer. Crumble the topping evenly over the filling. In case of overflow, place the pie pan on a rimmed baking sheet. Bake the pie until the fruit juices bubble and the topping turns golden brown, about 50 to 60 minutes. Remove from the oven and let cool on a rack for 15 minutes before serving. Serve warm. Cooking Tip: Crumbles work well with all types of fruit. Consider using this topping on fillings made from berries, peaches, pears, or cherries. If using frozen fruits, be sure to drain well before adding the other ingredients. Do-Ahead: This crumble topping freezes well. My sister always has frozen fruit and prepared crumble topping in her freezer to serve dessert for impromptu guests. Store the topping in an airtight container for up to 3 months. You can also freeze the whole pie, unbaked for up to 1 month. Thaw in the refrigerator before baking.

Visible Music College Music Industry Underground Visible Music College celebrated the opening of their expanded space, the Music Industry Underground. The campus is housed in the former C&I Bank building downtown at 200 Madison Avenue, and the re-imagined basement space is complete with a bank vault. Dr. Bertice Berry shared her story of defying stereotypes; overcoming poverty; and emerging as a college professor, nationally televised talk show host, and best-selling author. Having once been told by a high
school teacher that she was “not college material”, Dr. Berry believed that she was destined for more. She not only graduated magna cum laude from Jacksonville, she subsequently earned a Ph.D. in Sociology from Kent State University at the age of 26. Dr. Berry believes that community involvement is not limited to just “writing a check” and has taken a very active role in supporting organizations that benefit those in need.
