HOW DID YOU GET INTO PROPERTY? Having had sales roles in senior management in and around London, I found myself in a property-based role in Chigwell and loved working with clients at the upper level – in fact they seemed to come to me directly once I had built a good client base. I then moved to cover country homes and prestigious properties in Hertfordshire and then central Essex where I am now based.

WHAT’S THE BEST PART OF THE JOB? The people without a doubt – seeing beautiful properties is a wonderful part of the job but the satisfaction of helping maybe an elderly couple in a large country home, downsize to be nearer their children and help ease the stresses of moving, that’s the best part for me.

WHATS YOUR FAVOURITE COUNTRY HOME STYLE/ FEATURE? I’d say a barn conversion, the open-plan feel, exposed beams and beauty of the rural architecture. WHAT ATTRACTED YOU TO THE HOUSE TO BEGIN WITH? The area. We were new to Chelmsford and wanted to move specifically to the old part of the city. We also wanted something we could renovate. It’s so rare to find a house that is done to a standard and taste that you like so we knew we wanted to start from scratch. There was very little on the market at the time so when this came up we made an offer immediately.

BOXING DAY FEAST WE’VE PUT TOGETHER OUR FAVOURITE BOXING DAY RECIPES FOR YOU TO TRY THIS FESTIVE SEASON After the big day, your house looks like it’s been shaken, you’re left with wrapping paper galore from presents torn open, mountains of cardboard but on the bright side, there is always lots of leftover food.

The days between Christmas and New Year’s Eve all seem to merge into one and we start eating chocolate for breakfast, snacking late into the night on turkey sandwiches but the most important things is that we make the most of leftovers and don’t let them go to waste!

RE-FRIED ROAST POTATOES These re-fried roasties are perfect for your Boxing Day buffet and ideal to snack on in the days leading up to the new year. These are lovely served with cold meats and pickles!

YOU WILL NEED: • 3 tbsp oil • 1 crushed clove of garlic • 2 tsps mixed herbs • Leftover roast potatoes or frozen roast potatoes

METHOD 1 Heat 1 tbsp of your oil in a large frying pan

over a medium heat.

2 Add the crushed garlic and fry for a couple

of minutes then add the herbs.

3 Add the roasties in with another 1 tbsp oil. 4 Leave them alone for around 4 minutes to

get crispy on one side, then toss them.

5 Add the last tbsp of oil and toss the

potatoes again.

6 Leave them to fry for another few minutes

for extra crispiness.

7 Season with cracked black pepper and sea

ALL THE TRIMMINGS (& LEFTOVERS!) TRAY BAKE This recipe really couldn’t be easier! It’s the perfect one pot, chuck it together dish.

YOU WILL NEED: • 1 tbsp olive oil • 3 tbsp caramelised onion chutney • Leftover potatoes • Leftover roast veg – carrots, parsnips, sprouts. • Pigs in blankets • 1tsp rosemary • 2 bay leaves.

METHOD 1 Heat your oven to 200C/180C fan. 2 Mix the oil and chutney together and

season with salt and pepper.

3 Divide all the veg and potatoes between

two large roasting tins and pour over the

roast for 20-25minutes.

4 Then add the sausages and the herbs to the

Stir in the garlic, ginger, Tabasco, sausages, turkey, cheese, bread sauce or mayonnaise and herbs, mix everything well until evenly combined. Put the flours in a second shallow bowl. Lightly oil your hands and mould handfuls of the patty mixture into burger-sized patties. If they
