As the Best Chef Competition fires up, it is essential to recognize the work of Beverly Bootstraps and the reason we have all come here tonight. Beverly Bootstraps relies on the generosity of our community so that we may provide critical resources to families and individuals in order for them to achieve self-sufficiency. Through our Food Assistance, Youth and Family, Adult Education and Client Support programs, we offer emergency and long-term assistance to those in need. We would like to extend a special thank you to all of our supporters and those that have helped make this night possible. We encourage you to sample the food delights from the many Taste of the North Shore vendors or simply sit back, relax and enjoy the entertainment ahead! Bon Appetit!

FOOD ASSISTANCE 2,807 individuals were served. 24,084 bags of food were distributed during 8,028 Food Pantry visits

1,575 Clients were supported by our Case Management team Distributed $25,928 of Utility Assistance

ADULT EDUCATION

191 students in all participated in GED Test Prep Class, ESOL, Adult Literacy program or Job Readiness program

YOUTH & FAMILY SERVICES 739 children received gifts through our 2014 Adopt-a-Family program

COMPETITION RULES All four chefs were presented with the Competition Expectations upon application to compete. They have all been made aware of the following rules and guidelines.

SHOPPING PARAMETERS: Each chef was given the opportunity to shop at the Food Pantry a week prior to the competition. 75% of the ingredients in their entrée must be from the Food Pantry; the remaining 25% of the ingredients may be from their own kitchens.

FOOD PREPARATION: § Chefs will have a total of 45 minutes to prepare their entrée. § Chefs are responsible for preparation of 1 presentation plate (how the dish would look if served at their restaurant) and 7 tastings for the judges’ table and audience tastings.* § Chefs may prep (chop, par cook, prepare sauce) prior to the event, but their entrée must be finished on site. § Chefs may bring one Sous Chef and are responsible for bringing their own prep tools (cutting boards, food processors, knives, pans, bowls, etc.) and cookware to the event.

JUDGING: § The three judges will choose a winning entrée based upon taste, plating of food and originality. § Each chef can earn up to 20 points for their creation and the one with the highest score will be declared the winner. *Tasting - 1/4 portion plate *Audience tastings will be distributed to guests with winning tickets.

OUR JUDGES MARY ANN MCCORMICK

Mary Ann McCormick, along with her daughter Nicole Nordensved, is a co-founder and owner of Lark Fine Foods. Since 2007 Lark, which has its wholesale bakery in Essex, MA, has produced a line of award-winning, sophisticated cookies that are marketed as Cookies for Grown-ups®. Their cookies were on the cutting edge of the salted and savory cookie trend, with their Salted Rosemary Shortbread and a savory olive wafer called Scourtins. Lark is the recipient of seven coveted sofi™ awards. The sofi is the highest honor given to the best of the best in specialty foods and beverages by the Specialty Food Association – the Oscars of the specialty food world!

ELIANA HUSSAIN

Eliana Hussain graduated from the Professional Chef’s Program at The Cambridge School of Culinary Arts (CSCA) in 2004. In the summer of 2004, Eliana earned her Certified Culinary Professional certificate from the International Association of Culinary Professionals (IACP). In addition to teaching in the Professional Chef’s Program at the Cambridge School of Culinary Arts, Eliana divides her time between teaching recreational classes, culinary research, and food related projects.

CHRIS TIGHE

Originally from St. Louis, Chris Tighe graduated top of his class from Robert Morris Culinary School in Chicago. Upon graduation, he went to Florence Italy to study at Apicius Culinary Institute of Florence and also worked at Cavalo Nero while there. When he returned to the U.S. he worked for award winning All Star Chef James Beard as a chef and consultant. Two years ago, Chris opened and co-created the Salt Kitchen and Rum Bar which has quickly become a North Shore favorite. Sourcing locally and an ever-changing blackboard has made Salt a success. They feature elevated comfort food with a 60+ rum list from down the road to around the world. Salt Kitchen and Rum Bar has won Bons award readers choice Best New Restaurant, been named a hidden jewel by Phantom Gourment, and was last year’s Best Chef winner!
