The first major mistake people make when they first start beer brewing is lack of proper sanitation. It's been said that good brewing is 75% proper sanitation. It is important during fermentation to provide a healthy environment for your yeast--this best allows yeast to do its job, which is to make you great beer. However, a healthy environment for yeast is also a healthy environment for bacteria and germs--things that can contaminate and ruin our beer. If you are not clean and do not properly sanitize everything, you make it much easier for the bacteria and germs to get into your beer. So, what do you need to do to avoid this? It is important that every time you brew, that you make sure you clean and sanitize all of your equipment thoroughly. Anything and everything that will come into contact with your beer must be properly cleaned and sanitized prior to use. Fortunately, this doesn't require any major expense. There are several inexpensive options for cleaning and sanitizing, from simple household goods to products designed especially for beer brewing. Another big mistake is not using the proper temperature to brew your beer. You want to ensure and follow whatever directions or recipe instructions advise you as far as the proper temperature (for fermentation) for that particular brew--the proper temperatures vary, but you need to have the right one for the beer you are brewing. It is also dependent upon the type of yeast strain you are using. Generally speaking, the temperature will be in the 60s or 70s. Failure to keep the fermentation temperature in this range can lead to bad results--either bad tasting beer, or a batch
of beer that you have to throw out.
