Do your best to leave a little sparkle everywhere you go. t’s the most wonderful time of the Year! Some of us will say this has been a long year and others will say the time just flew by. This year was unique in that it provided more opportunities for families to spend much more time together. I am truly grateful for this time spent with my family and loved ones. While December is the time that we receive gifts, it is also the month of giving to others. There are so many ways that we can do this whether it be volunteering, making monetary donations to various charities, or donating Christmas toys to local organizations like Toys For Tots (866) TFT-SLC1. The holidays are upon us and our families and communities will prepare to celebrate with religious and or cultural activities. We will gather as a family, exchange gifts, prepare special dishes, put up our trees, light candles, watch sports, sing carols, play board games, wear ugly sweaters and do all of the traditions that have been handed down for generations. Keep in mind that this month can also be a difficult time for many, especially our Veterans, first responders, social workers, or other emergency services personnel. Make sure that you smile a little more, provide encouragement to show them your support, and support them through the holiday season. Organizations like DDS4Vets.org do great work in the community and can use your support to provide services to our vets this holiday season. Be sure to read the Impact100 article in this issue. This organization is comprised of some amazing women in Saint Lucie County. Over the past several years, this

he Treasure Coast is known to many as the sailfish capital of the world, and for good reason. Predominantly out of St. Lucie and Fort Pierce inlets, this region sees a massive sailfish migration. Typically mid-November to mid-February, double-digit days are not uncommon for the experienced captain and crew. Sailfish have earned the title of Florida's most sought-after sport fish. With acrobatic jumps, long drag screaming runs, and often visual bites, the sailfish is at the top of many anglers lists. Sailfish frequent the entire state, and each region has its proven tactics. To the south of us most boats you will discover live-baiting for these fish. Florida has a shelf close to the mainland south of the St. Lucie Inlet and slopes north. That steep drop-off to the south, sometimes 80’ to 200’ in less than a mile, allows anglers to cover many more water depths than anglers to the north. If done correctly, a boat could be fishing a kite with each bait sitting in a different depth of water. To the north of the St. Lucie Inlet, anglers have to cover much more ground, so the preferred method is dredge fishing. A dredge is a large subsurface teaser with sometimes up to 30-40 artificial or natural baits. The goal is to resemble a fleeing school of bait fish to entice the sailfish. Once the sailfish is interested, the trick is to remove the dredge and replace it with a bait with a hook in it. To best ensure a safe release, most captains use dead ballyhoo rigged with a circle hook. The circle hook is designed to hook the

fish in the corner of the mouth, preventing the sailfish from being gut hooked. While in free spool with very light thumb pressure, the angler must drop the bait back to the fish. Once the sailfish has fully taken the bait, the angler must point the rod out sideways away from the boat, engage the drag, and it's game on! It is crucial to do what you can to help maintain this fishery so that future generations can also experience this remarkable migration. As an angler, there are specific steps that you can take to ensure a safe release and a healthy future for your trophy fish. Once boatside, grab the sailfish far down on the bill where it is thicker and more robust. Billfish fight till their last breath, and it is essential to understand that their most vulnerable point is immediately after the battle. Keeping the fish in the water, with the boat in gear to help flush some water through its gills, is vital to making sure the fish will recover from such a hard-fought battle. As the sail begins to gain its color back from a copper color to silver, you know he is almost ready to swim off. Once you feel like it’s ready, push its bill away from the boat and watch your fish swim away happy and healthy!

ord is out that Chuck’s Seafood, that cornerstone of the Fort Pierce dining community, has changed owners. But before everyone gets all nervous and worried, let me tell you the rest of the story. It truly is exciting and upbeat. Chuck’s Seafood, on the Seaway Drive Circle of South Hutchinson Island, has been a fixture on the Treasure Coast for over 60 years, featuring a quirky charm and excellent food. Peter Angelos took over ownership from Chuck and Elodie Tabor in 1984. This past April Peter retired and his daughter Georgette assumed ownership. Georgette literally grew up in the restaurant. She remembers as a toddler taking naps on two barstools pushed together. Georgette Angelos returned from a successful film making career in L.A. to take on the challenge and in just a few short months, under difficult circumstances what with a pandemic, supply issues and rising costs, has done a fabulous job. She just added an outside covered patio area, with a full bar, an oyster bar, beautiful high top tables, a corn hole court and live music on the newly constructed stage. The nighttime views of the crystal clear water are breathtaking, as you can see from the picture. My dinner started with succulent Steamed Clams and super fresh hush puppies. The entrée of Atlantic yellow
fin tuna, sesame seed crusted, and parsley potatoes was unbelievably delicious. Dessert was a fabulous slice of authentic Florida key lime pie, made by Mike’s Pies in Tampa and is delivered fresh several times a week. The biggest treat of the evening was owner Georgette, so poised and mature. It was obvious she is well liked and respected by her staff, some of whom followed her from L.A. There is a genuine aura of kindness, teamwork and engaging happiness among them all. She knows how to run the family business the Old School way, to keep quality up and prices down. To quote Georgette, “They wanted music. I gave it to them. They wanted an outside bar. I gave it to them. But the food will always remain quality! I will never give less than that.” “Life in Paradise,” she continued, “can’t beat it, can’t mess it up.” And she won’t. eorgette plans to continue her father’s legacy of philanthropy in the Fort Pierce community. She just completed producing a film documentary for the new Highwaymen’s Museum off of Avenue D, dedicated to Jackie Canyon. So, come on over to CHUCK’S SEAFOOD, the “Cheers” of Fort Pierce, where everybody knows your name.

lorida’s Workers’ Compensation law gives your Employer and their insurance company the right to select your healthcare providers. This means that you do not get to pick your treating doctor. You also do not have the ability to select your physical therapy facility, or the radiology facility where you get your diagnostic testing, like MRIs and CT scans. There is no entitlement to a “second opinion” from a different doctor when you are in the Workers’ Comp system. What happens if you don’t like the doctor who has been authorized by Workers’ Comp? The law does provide for a “onetime change” in treating doctors. Your request must be given to the adjuster in writing. The adjuster then has five (5) calendar days to pick your new doctor. That’s right…the adjuster also picks your new doctor. You can only have one, one-time change per accident. You do not get another “one-time change” doctor if you have multiple injuries, or if you are treating with multiple specialists for the same injury. If the adjuster fails to timely authorize your “one-time change” doctor, the law then allows you to select your new doctor. This is really the only time that an injured worker can select their treating doctor. You must be careful about asking for your “one-time change” doctor. If you are considering doing this, you should consult an attorney who practices Workers’ Compensation law. Using your “one-time change” at the wrong time or for the wrong reason could hurt your case. There are no co-pays or deductibles with a Workers’ Compensation case, until you reach Maximum Medical Improvement (MMI). After MMI, injured workers are charged a $10.00 co-pay for office visits. If your doctor or other medical facility is billing you for a balance remaining on your account after Workers’ Comp has paid (balance billing), you should consult a Workers’ Comp lawyer who can help you get this issue resolved. hose of us who live and work in St. Lucie County know that it is a wonderful community with extensive and diverse opportunities and amenities. However, for many, it is also a community of extensive and diverse needs. In 2017, a group of six forward-thinking and caring women (Cris Adams, Debbie Butler, Linda Chastain, Lisa Floyd, Ruth Stromak, and Bunny Webb) recognized this need and decided to combine their efforts to try to fill it. This desire led them to the Impact 100 organization. Impact 100 is a global organization with fifty chapters in the United States, as well as with chapters in London, New Zealand, and Australia. The purpose of each chapter is to encourage at least 100 women with ties to their community and a desire to better it to join an Impact 100 chapter and make a tax-deductible donation of $1100. This money is pooled to enable that Impact 100 chapter to offer an annual grant of $100,000 to a local non-profit to initiate a transformational and sustainable project for the benefit of the underserved. The goal of Impact 100 is to empower women through charitable giving to make an impactful difference in their community. In our case, the grants awarded by Impact 100 St. Lucie are voted on by the members of Impact 100 St. Lucie for new projects specifically in St. Lucie County. CONTINUED NEXT PAGE

W
ith the dedication and hard work of the six founding members, Impact 100 St. Lucie and its 121 members awarded its first $100,000 grant to Tykes and Teens in April 2019 to bring its counseling services for children and teens to St. Lucie County. The remaining $21,000 was divided between the two runners-up: The Inner Truth Project and In the Image of Christ. In 2020, as we were culling through the grant applications we had received, COVID struck, and our plans were derailed. Instead of awarding one large grant, our membership voted to join a St. Lucie County consortium and use our funds to provide COVID relief for several different organizations. This year, we returned to our original mission. Unfortunately, because of the COVID-related financial constraints that many of our members faced, we only had 71 members and a $70,000 grant to award. This year’s award went to Project LIFT, an excellent counseling and vocational training program for at-risk youth. This successful program has been in Martin County for many years, and our grant will enable it to bring its services to its new campus on Delaware Avenue in Fort Pierce. Impact 100 St. Lucie is proud to be part of this endeavor. In all, in its three years of existence, Impact 100 St. Lucie has awarded over $307,000 in grants to local non-profits and continues to follow its mission to make an impact in our community. The Executive Committee of Impact 100 St. Lucie is also striving to make our organization a more active and vital part of the community. We recently initiated a program called “Give Back Saturday” which encourages nonprofits to request volunteers for a specific project for which we supply the volunteers. In addition to giving our members an opportunity to get together for a worthwhile purpose, this program is giving us the opportunity to become better acquainted with the non-profits in our area and the important work they are doing.

Since its inception, Impact 100 St. Lucie has shown that its members are a reflection of the diversity of the county’s population. Our membership is comprised of women of all ages, races, religions, and socioeconomic backgrounds. They have a wealth of knowledge of the needs of our community and a strong desire to help fill those needs. We are so proud of our members, the work that they do, and the change that they are trying to bring to St. Lucie County, one grant at a time. njoying a delicious baked treat is one of life’s sweetest moments. Unfortunately, recent scientific studies have yielded some startling facts about sugar. Commonly linked to more than 70 health problems, sugar is causing a rise in diabetes, obesity, and hypoglycemia. Dietitians recommend a maximum daily consumption of 9.5 teaspoons of sugar a day. The average American consumes 22 teaspoons of sugar each day and 3,550 pounds in a lifetime – that’s almost two tons of sugar. A growing number of health professionals are stating that sugar is America’s sweetest addiction. Fortunately, xylitol is an excellent, health-conscious sugar alternative and can be baked into your favorite sweet treats. Xylitol is a natural, gluten-free, and low glycemic substance derived from many fruits, vegetables, and plant fibers. Very similar to sucrose sugar, it has a sweet flavor, granular texture and is white in color. Baking with xylitol has many health benefits aside from adding a sweet flavor to recipes and replacing sugar. Extensive research has proven that it improves overall health, boosts the immune system, and has anti-aging properties. In fact, our bodies already produce xylitol each day through the metabolic process. The Finns discovered decades ago that xylitol consumption could be correlated directly to a dramatic decrease in incidents of cavities and ear and throat infections. Because xylitol (unlike sugar and starch) is non-fermentable and has an alkaline reaction in the body it creates an inhospitable environment for Streptococcus mutans and other infectious organisms that tend to thrive in lower pH environments.
