The Horsham Toastie by Real Eating Company.

Real Eating Co. always believed in local food and supporting smaller likeminded independent businesses. Not just because that is a good thing to do – it’s also because it usually tastes better than anything mass produced. Earlier this year their teams were set with a little challenge – to come up with a local toastie, using ingredients from a local producer in their area, that they loved. The first success story has been in Horsham where the team have created the Sussex Charmer Cheese and Onion Marmalade toastie.

Ingredients:

• 2 slices of sourdough bread • 45g Sussex Charmer Cheese by

Bookham Harrison Farms • 25g Onion Marmalade Method: Take a spoonful of onion marmalade and spread it on one slice of sourdough bread. Top it up with Sussex Charmer cheese. We put 45g of grated cheese, but the amount can be according to your preference (we won’t tell anyone). Place the toastie in the grill for 4 minutes and voila, your toastie is ready to be cut in half and served! Handy tip: To avoid your grill getting messy, wrap the toastie up in baking paper before you put it on the grill. To re-create the full Real Eating Co. experience, don’t forget to pick up a bag of Kent crisps!

NUT ROAST

Grape Tree’s quick and easy nut roast with only 10 ingredients. All dry ingredients can be purchased at Grape Tree.

Ingredients:

• 1 ½ cups (220g) mixed nuts • 1 onion • 2 cloves garlic • 2 tbsp olive oil • 1 cup (100g) fine breadcrumbs • 2 tbsp soy sauce • 2 tsp dried herbs • 1 cup (240ml) vegetable stock • 1 tbsp chia seeds • 2 tbsp dried cranberries

Method:

Preheat your oven to 180°C / 360°F. In a frying pan, cook the diced onion and garlic with the olive oil, until translucent and just starting to brown. In a food processor, pulse the nuts until fine. If you are also making your own breadcrumbs now, process the bread separately from the nuts, as they will take longer to become fine. In a mixing bowl, combine all the ingredients - the ground nuts, breadcrumbs, fried onion and garlic, soy sauce, dried herbs, chia seeds, optional cranberries, and vegetable stock. Transfer the nut mixture into a loaf tin lined with parchment paper, and smooth the top with a silicone spatula. Bake the nut roast for 30-40 minutes until the top starts to brown. Remove from the oven, and leave to cool in the tin for 10 minutes. To remove from the tin, place a board on top of the tin, flip over and peel off the baking paper. Before serving, you can add some extra nuts on top for decoration.
